Defending the Caveman
Vigil brings together three multiple award-winning South African theatre luminaries. Starring Graham Hopkins as Kemp and Vanessa Cooke as Grace, this brilliant black comedy is directed by Fleur du Cap Life-Time Achievement Award-Winner, Christopher Weare. Defending the Caveman written by Rob Becker and starring Alan Committie (Tim Plewman adapted the script to give it a “South African” flavour) is a humorous exploration of the differences between men and women and how those differences make us misunderstand each other. Andy Fisher Trio plays live at the Hard Rock Cafe Hard Rock Cafe Johannesburg is the latest addition to the iconic Nelson Mandela Square. Stageworx School of Performing Arts is back with its hugely anticipated 2014 musical Tick Tock Boom. A group of scientist are asked to invent a time machine. This production, which has been running for the fourth consecutive year at the Roodepoort Theatre, has gained momentum, and as such Stéfan Louw has begun to achieve what he set out to do four years ago: to make opera accessible to everyone. The concert will follow Louw’s proven recipe for success: soloists that will perform arias, duets and ensembles; an opera chorus which is trained by Louw and a narrator to inform the audience of the story behind each work being performed.

HASHI - rosebank It’s a restaurant with a global spin. A Venezuelan one to tell the truth. A Japanese fusion restaurant owned by two Venezuelan entrepreneurs, named Denis and Santiago, Hashi Restaurant is situated in the heart of Rosebank. Denis came to South Africa in 2010, accompanying her husband on a new job. She considered starting something of her own, something different. Fellow Venezuelan Santiago was invited to the project to provide support and knowledge and joined Denis at the beginning of 2013. With their combined experience in the food industry, Denis having owned sushi restaurants in Venezuela and Santiago being a trained chef, it seemed like a no-brainer for these two business savvy people to give Hashi a bash.Denis handles the business side of things while Santiago is head chef. For a chef trained in Japanese, Spanish and Italian cuisine, you can’t go wrong with this menu.Chef Edwin, anther Venezuelan is also a sushi chef and member number three of this culinary team. Now for the really fun part. What to order? Considered their signature dish - what they call their salmon kizu. Thin slices of salmon filled with avocado and cream cheese, all covered with a thick layer of tempura and served with tartar sauce and, of course, Hashi’s house special sweet sauce. The Base on Burnsides If you’re looking for an understated, casual spot to meet a friend for a drink or to celebrate a birthday with a larger group, then The Base on Burnsides is perfect. It’s an open-air tapas café that serves a variety of small dishes, such as asparagus with salmon, cubed crispy potatoes and sliced rump. If you can’t decide for yourself, then go with the “tapas tasting” – they choose what to feed you! A small selection of pizzas are also on offer from the wood-fired oven, and as simple as it sounds, the margarita pizza with fresh rocket is fantastic! Lovely roasts are on offer for Sunday lunches. Ingredients 3 eggs 45ml Amarula Cream Juice of one lemon 250g butter cubed Salt and pepper 800g beef fillet or venison loin (cleaned of its sinew) Steamed seasonal vegetables, to serve Method Beef or venison Preheat the oven to 250˚C. Season the meat with salt and pepper. Heat a heavy-based griddle or frying pan on the stove until piping hot, oil the pan and wait until it begins to smoke. Add the meat to the pan and grill on all sides until it takes on a nice colour. Transfer the meat to an oven tray and place it in the preheated oven for around four minutes. Remove from the oven and let it rest at room temperature for five minutes before slicing. Sauce Hollandaise Whisk the egg yolks, lemon juice, Amarula Cream, salt and pepper together with a wire whisk in a medium-sized saucepan over high heat. Add the cubed butter and turn down the heat to medium. As the butter melts into the egg yolk mixture, whisk continuously. Once the butter has melted, continue to whisk the mixture until all the ingredients have been incorporated and the sauce begins to thicken. Serve immediately with slices of grilled beef fillet or venison and some steamed seasonal vegetables.

Straight from the garden freshness at Lacuna Bistro
E
very chef knows the value of fresh ingredients but executive chef Dallas Orr has taken this to a whole new level. Dallas, the executive chef at the Lacuna Bistro in Sun International’s prestigious Maslow Hotel, is so passionate about the quality of his ingredients that he has cultivated his very own herb garden… on the roof of the hotel. The herb garden, consisting of raised boxes and a variety of planters now provides garnish and produce for his innovative recipes. He has grown a variety of herbs including rosemary, sage, basil, coriander, dill, parsley and thyme as well as a selection of fresh chillies. The herbs play a starring role in the new autumn menu for Lacuna, which features dishes such as prawn spaghetti with chilli and lime and the signature Lacuna lamb shank. “The dishes we create are simple and wholesome – and they rely on high quality ingredients to do them justice. What better way to control the quality of our ingredients than to grow them ourselves? It doesn’t get any fresher. The food is 50 metres
away and it’s not even farm-to-table; it’s straight-to-the-plate,” he says. As a chef, Dallas says he is constantly trying to enhance the flavour of his dishes without increasing the food’s caloric, sugar, salt, and cholesterol contents. “Using herbs and spices is an excellent way to do this and herbs are therefore becoming more and more important in the culinary world,” he says. Dallas also strongly believes in sourcing locally and reducing one’s impact on the environment. “We all have a responsibility to be greener and more sustainable. For me, it’s about writing a menu that showcases the best of the ingredients that you have close by, not the thousands of things you could have. And in this case local just keeps getting more local!” he jokes, referring to his roof-top herb garden. The garden currently only grows herbs but Dallas plans to start incorporating some fruit and vegetables.

How to taste for different craft beer flavours
F
or the past three months, Rob Heyns, from League of Beers has introduced us to the idea of craft beer and has been educating us in how to taste the golden brew and sound like real beer sommeliers. Last month he discussed the aroma of craft beer. Today, he covers the flavour of craft beer - what to look out for and how to diagnose the different elements. After looking at and smelling a craft beer, you should already have an idea of what to expect when it comes to the flavour. That expectancy is one of the best things about beer tasting. Some flavours just take you by surprise. Step 1: Take a good swig and move it around in your mouth and let some air in. The way the beer actually feels in your mouth is a separate article all together (it’s called mouthfeel). For now, we’re just going to focus on the flavour you experience. Step 2: While you’re thinking about beer mouthwash, focus on the hoppy flavours that are present. Hops generally add the following flavours: • Bitterness • Richness (this refers to the depth of flavour – think of this as syrup vs honey) • Body and a dry sensation
•
A flavour knock-out (if it feels like the beer stood up and punched you in the tastebuds, you can usually bank on the hops being responsible for that).
Step 3: Before it disappears down the gullet, you need to try break up your flavours further. Try find the malt flavours. Malt flavours add: • Sweetness (think of any brown ale which has a lot of malt in it). • Common flavours like toast, dark fruit, caramel and toffee. • Most of the body and fullness. Step 4: Now go ahead and swallow. Then write down any other peculiar flavours that crossed your palate like pine, citrus or funky vegetables. There are so many craft beer flavours out there: you may find some overlap and certain styles have similar traits, but prepare yourself to experience some awesome and some weird flavours when you begin tasting craft. HJ: Advice to someone who wants to start their own business? AM: It is a path that requires massive determination! I’m still young at the game so I can’t preach too much. However, I will say, rejection is the hardest pill to swallow but you just got to keep going!

The Roodepoort Theatre has come a long way since its initial opening in February 1981. The Theatre was constructed in what would prove to be the last decade of Apartheid. The event saw riders of all levels take to the trails to explore the newly upgraded facilities, giving rise to a safe new way for Joburgers to enjoy the outdoors. The newly named, Tracker Ride Free Bike Park at Central Park Trails Modderfontein, caters to everyone, with four routes ranging from 10km fun rides for amateurs to the almost 50km of red trails to challenge the experts. The launch of Tracker’s RideFree safe cycling initiative could not have come at a better time, as three petitions are in motion in SA to improve the safety of cyclists. Virtually the entire ride is along singletrack footpaths, next to the Spruit, except where tar roads must be crossed or where palisade fences have been erected.
