s always we welcome all tourists to Joburg and welcome back those Joburgers who took a well deserved holiday. We look forward to continue bringing you all relevant, up-to-date and exciting news about our city in 2015. We kick start the year with a bang, interviewing the man behind CliffCentral. The infamous and always charismatic Joburg personality, Gareth Cliff, admits that when CliffCentral launched in May 2014, he didn’t anticipate just how big it would become in the past nine months and is looking forward to grow and consolidate this media platform in 2015. If you’re still in the holiday spirit head down to Parkhurst’s 4th Avenue, where you will find the legendary Cape Town burger joint, Hudsons. It opened in Joburg in December and has been a popular addition to the Avenue. Grab an ‘11 Shillings Ale’, a plate of triple cheese chili poppers and watch the pavement traffic pass you by. However, if you’re wanting to start your new year’s resolutions with healthy eating, we recommend banting- and paleo-friendly restaurants around Joburg, as give you salad and cupcake recipes to try out at home. Although Gareth won’t be making any new year’s resolutions (he doesn’t believe in those), we would like to know what you, our readers, have resolved to do this year. Gareth had enrolled into university to do law at Tuks and with long gaps between classes he killed time at the campus radio station. He had learned early on at school that he could make people laugh – it was a powerful weapon. The more time he spent at the radio mic, the more comfortable he became with the space. Well not that actual campus radio space to be exact – considering he was fired following a series of controversial shows. Between penis competitions and recording management meetings to play back to listeners, his then station manager sent him packing. Although hell-bent on finishing his law degree, broadcasting had burrowed into Gareth’s veins.

what is going to happen and that makes it so exciting. No two days are ever the same.” The oldest of three children, he was born and bred in Pretoria. A kid who liked school mostly, Gareth admits to being a primary school bully at age seven. But he realised that wasn’t nice and oscillated between being a nerd and a tad jocky for the rest of his school days. He played a bit of cricket and rugby but says he wasn’t particularly good at either. He tried his hand at some school theatre and of course he was a member of the debate team. He recalls a school show of Joseph and his Technicolor Dream Coat but reckons he wasn’t Jewish enough to play Joseph so he had some or other minor role. Clearly that had no impact on his life anyway. Gareth is a Jozi advocate. “It’s the hub of Africa and its where things happen.” He wouldn’t mind a home in New York, London and Cape Town (who would) but when it comes to living and working, he’s staying put. But if there’s one thing that drives him mad it’s the traffic. “I don’t get angry easily. I get passionate about things sure, but what pisses me off is traffic. I don’t understand why people can’t keep it together on the road. If people could drive properly that would really help.” And if he ran Johannesburg he would clamp down on the road rubbish? “I would make people work on roads at night and only allow trucks on the roads between 12 and 4am. No trucks during the day. Chatting to Hello Joburg in December and reflecting on the CliffCentral journey since May 2014, Gareth couldn’t be more pleased, or surprised for that matter on the results. “CliffCentral is bigger than I anticipated. It has morphed into this thing where we can re-invent the media and marketing business. And to be able to create a platform and opportunity for other people is priceless.” Gareth understands that today’s consumer is channel agnostic. People don’t care where they get their information – as long as it reflects the experience and relays the messages they want. With today’s deluge of information and as more people opt out of traditional media platforms and jump down the new content rabbit-hole, the opportunity for real engagement has never been purer. After a chat with head of WeChat Africa, Brett Loubser, the online offering extended to include a CliffCentral official account on WeChat providing new and unique ways of engaging with subscribers. Possibly the most exciting and daunting move of his career, Gareth believes that while 2014 was the year of change, 2015 will be one of growth and consolidation. “We have broken so much ground in six months that I can’t and almost don’t want to predict what will happen next. We are keeping an open mind and sailing into unchartered water.” Having coined the term #unradio, a lot of traditional media were left scratching their heads. In Gareth’s own words “It’s really a new world of media opportunities and a new way of communicating and sharing ideas. It’s a new medium and it’s hard to define which makes it so exciting.” As for any resolutions for the year, screw that. For anyone who knows or has followed Gareth’s career, you’ll know that come any given new year, he is the one presenter who thankfully won’t be talking about new diet fads or ways to re-invent yourself. “People hype them up and end up feeling bad about themselves. In a series of meeting the right people at the exact time it was supposed to happen, Gareth started producing Kate Turkington’s show on 702. “I was a very bad producer. It was boring for me.” Gareth then went on to produce John Robbie’s show. It was certainly no easy task either. “He was a hard task master with a very limited sense of humour. The only thing that made him laugh were puns.” The truth is he wouldn’t change his career. Of course parts of him imagine what it would have been like to have a stable and regular career like law or architecture but Gareth knows it would not have given him the satisfaction that broadcasting has created. “Radio is so unpredictable. t a dinner table, overlooking the snazzy streets of Parkhurst, I take a sip of my 11 Shillings Ale (specific to Parkhurst Hudsons only) and dig my paws into my triple cheese chili poppers and remind myself that this is not a fairytale, it is indeed real life. Served with homemade tomato relish and a punch of awesomeness, the poppers are poppin! Delicious, crunchy, fresh and crispy I could have eaten about nine in a row. I also indulged in a Calzoncini. What is a Calzoncini? Well the definition should be a piece of ecstasy (just sayin’). A Calzoncini is a little fried pastry turnover made from pizza dough, filled with spinach and feta, it is a kind of savory pie. Now it probably won’t come as a surprise that the main course was on par with starters. Can we all just take a moment to discuss Hudson’s Disco Fries, cheesy, yummy, gooey goodness. And they also serve sweet potato fries, crisps and wedges. A triple whammy! So lets get down to the boss, the burger. All Hudson’s burgers come from selected cuts of beef and are made from scratch. There are four options: beef, chicken, ostrich or veggie patties and they range from R40 to R86. The mustard mayo smothered on the buns changes the game and the battered onion rings are a must. What’s also cool is they come served in 180g or 250g of wholesomeness. The truth is that every single thing about Hudsons screams cool. It is also time to reflect on new resolutions and goals, and if one of them is to live a more healthy life, I might just have the answer. I will give you a head start with this amazing salad of peach, feta and pecan nuts with honey. It is everything and more you could ask for on a plate. Sweet caramelized peaches with creamy feta cheese, crunchy pecan nuts and decadent honey on a bed of fresh watercress. Salads don’t have to be boring you know, it is also kind of easy to master. Like the new year? Now make this year the best one yet! Ingredients • 2 tablespoons butter • four ripe dessert peaches, washed and cut into segments • 2 cups fresh watercress • 1 cup danish feta • a handful of chopped pecan nuts • salt and black pepper to season • honey to serve Method • In a saucepan, heat the butter and gently fry the peaches until it starts to color and caramelize. Set aside. • On a salad plate, arrange the fresh watercress, top with peaches, crumbled feta cheese, nuts and drizzle with honey. Season. Serves two as a main.

Clean-eating does not mean deprivation – it means keeping things simple, and switching up ingredients by selecting healthier alternatives. In so doing, we can still enjoy our favourite indulgences without feeling guilty! Packed with protein, and low in carbohydrates, this ultra-decadent guilt-free treat is perfect for satisfying just about any sweet-tooth craving. Total Preparation Time: 30 mins (including icing) Baking Time: 25 mins (at 180°C) Serving Size: Makes approximately 12 cupcakes Health Benefits: Low carb, packed with metabolism-boosting healthy fats, high in protein, great source of potassium, and rich in anti-oxidants. You will need: Large mixing bowl; electric egg beater; blender / food processor; cupcake rack (to hold 12 cupcakes); cupcake holders; measuring cups wooden spoon CUPCAKE BASE Ingredients 1 cup (250ml) almond flour 1/8 cup (30ml) protein powder 1 ½ tsp. baking powder 2 tsp. vanilla extract 1 tbsp. macadamia nut butter 1 tbsp. natural peanut butter 4 tsp. xylitol 2 large free range eggs ½ cup rice milk 2 bananas (mashed) 2 tbsp. melted coconut oil 2 tbsp. desiccated coconut (toasted) 1/3 cup (80ml) raw almond flakes 1 tbsp. cacao nibs 1 tsp. cinnamon ½ tsp. nutmeg Pinch of salt

COCONUT-CHAI BUTTERCREAM ICING Ingredients 3 cups activated raw cashew nuts (soak cashews in water and refrigerate overnight) 1 cup (250ml) coconut cream 2 tsp. cinnamon 1 tsp. ground cloves 1 tsp. nutmeg 2 tbsp. xylitol 2 tsp. vanilla extract 1 ½ tbsp. coconut oil Pinch of salt All wholefoods ingredients listed above can be found in the health foods section at Dischem and most health stores nationwide.

Method Preheat oven to 180°C STEP 1: Prepare coconut-chai buttercream • Place activated cashews, melted coconut oil and salt in blender / food processor and blend thoroughly for 3-4 minutes until thick cashew paste forms. • Add coconut milk, cinnamon, cloves, nutmeg, xylitol and vanilla extract to cashew paste and blend further for 4 minutes until all ingredients are nicely combined and thick buttercream forms. • Place in refrigerator as is until ready to use. STEP 2: Prepare cupcake batter • Place bananas in large mixing bowl and mash until smooth. • Add sieved coconut flour, almond flour, baking powder and protein powder to mashed banana and stir thoroughly. • Add eggs, macadamia nut butter, peanut butter,

BY CARA-LISA SHAM vanilla essence, xylitol, rice milk, cinnamon, nutmeg, melted coconut oil and salt to mixture and stir until all ingredients are combined. • Using an electric egg beater, beat mixture at medium speed for 3-4 minutes to incorporate air. Batter consistency should be that of a thick pouring liquid. • Using a large non-stick frying pan, toast desiccated coconut on medium heat until lightly brown. Once lightly browned remove from heat. • Add toasted coconut, almond flakes and cacao nibs to batter and stir thoroughly. STEP 3: Bake cupcakes • Place cupcake holders in cupcake tray compartments. • Place spoonfuls of batter into each cupcake holder until ¾’s way full (do not fill right up to the top). • Bake at 180°C for 25 minutes until golden brown. • Remove from heat and insert fork into each cupcake to test if cooked (fork should come out clean when removed). • Allow to cool at room temperature for 20 minutes. STEP 4: Ice cupcakes • Remove coconut-chai icing from refrigerator. • Coat each cupcake with generous spoonfuls of the buttercream icing. • Garnish with sliced fresh strawberries, cacao nibs and a sprinkle of cinnamon. The south african flag

T

he South African national flag was first flown in April 1994, after the first free election in South Africa. It is designed by Frederick G Brownell and is the only flag in the world with six colours. The flag means different things to different people. According to the flag’s designer, the red symbolizes the blood that was shed during the various wars and conflicts in the country. It is also suggested that the blue represents the sky and the two oceans that flank the country. The green symbolises the farms and the rich, natural environment of the country, while the yellow represents the natural resources, particularly gold.
