T
he role a concierge plays within a hotel is very important. Their services range from the very unusual and exotic to the mundane and can consist of anything, from booking a theatre show or restaurant for the night to arranging international flights for people with tight deadlines. Working as a concierge for the past 47 years, Archie Christodoulides is known as a kind of legend within the hotel business. Archie as he’s fondly become known, started out in the hotel industry at the age of 17, and worked at his first hotel in Egypt, The Nile Hilton. He then moved on to work in France, Beirut and finally settling in South Africa in 1970.
“ARCHIE AS HE’S FONDLY BECOME KNOWn, STARTED OUT IN THE HOTEL INDUSTRY AT THE AGE OF 17” In 1979 Archie became the first South African Head Concierge to be awarded the distinguished membership to Clefs d’Or International (Paris chapter), also known as The Golden Keys. Clefs d’Or or The Golden Keys is highly exclusive, and is for those who aim to serve. Having started in Paris with only 11 members, it has been in operation since 1929. Today it consists of 4000 members from 39 different countries and is governed by a committee and has an international president. Archie is one of the few members of this prestigious society in our country and has been for 34 years.
“CLEFS D’OR OR THE GOLDEN KEYS IS HIGHLY EXCLUSIVE” Since he has been in the business for so many years; he has extensively travelled and is fluent in seven languages making Archie a valuable asset to the hotel, welcoming guests in their native tongue and making them feel at home. Archie has been the warm and friendly face at The Michelangelo since opening in 1997 and will remain for many years to come. Having immigrated to South Africa over 43 years ago, and having extensive knowledge of this great city, Jozi, when asked what he would do in Johannesburg for 24 hours, Archie had this simple yet, interesting itinerary to offer:
09:00 I would start my day off with a delectable breakfast at the graceful Piccolo Mondo restaurant in the Michelangelo Hotel. Serving delectable pastries, the freshest of fruits and the best breakfast buffets. 10:00 I would then visit the National Museum of Military History, one of Johannesburg’s most undervalued attractions. Boasting some of the only remains of the World War 1 and of the South African Defence war in Angola.
“DELECTABLE BREAKFAST AT THE GRACEFUL PICCOLO MONDO RESTAURANT” 11:00 Constitution Hill is next on my list, which is rich in South African culture and history. 12:00 After so much walking, I surly would have built up a healthy appetite for some ‘Traditional’ African cuisine. For the best African dining experience on offer in Joburg, one can only choose Moyo in Melrose. Moyo is known for its vibrant atmosphere, beautiful African décor, face painting and of course not to mention the excellent food, awesome wine and superb service. I also love this restaurant for the live performances which they offer and the craft market, as you can browse through the numerous items they have available for purchase, all handcrafted by local South Africans.
“THE MICHELANGELO SPA IS THE PERFECT DESTINATION TO BE PAMPERED” 14:00 After such a decedent lunch, it’s now time for some retail therapy! Thus the Legacy Corner Mall will be
my next stop. Legacy Corner Mall, situated just off Nelson Mandela Square has a variety of boutique clothing stores showcasing the very best local and international brand on offer. 17:00 After an eventful day of sightseeing, dining, and shopping, which requires large amounts of walking, I would definitely welcome a relaxing massage, facial or pedicure. The Michelangelo Spa and Gym, conveniently situated in The Michelangelo Hotel is the perfect destination to be pampered like a king or queen for that matter. 19:30 I will then commence my evening with dinner at Wangthai restaurant, known as South Africa’s most authentic Thai restaurant, I will enjoy the most delicious authentic Thai cuisine. I would definitely recommend the chicken satay served with peanut sauce or a few of their delicious spring rolls. 21:00 After dinner I would head over to VIP Room situated in The Michelangelo Towers Mall where one can experience true African Nightlife at its best!

Seared beef fillet with chocolate chilli and Amarula sauce Ingredients 4 x 200 g beef fillet steaks 15 ml olive oil 1 onion, chopped 3 cloves garlic, coarsely chopped 10 ml finely chopped chilli 125 ml Amarula 60 ml tomato puree 250 ml beef stock 45 ml red wine or red vinegar 30 g dark chocolate Side salad, for serving Method Sauce Heat the oil in a heavy-based saucepan and sauté onion, garlic and chilli for about 2 minutes. Add the Amarula, tomato puree, beef stock, red wine or red vinegar and dark chocolate and stir well. Simmer over low heat for about 5 minutes and set aside. Beef fillet Cover a griddle pan with some olive oil and heat until piping hot. Grill the steaks for 3 to 4 minutes per side until medium-rare (depending on the thickness of the steaks). Serve covered with the chocolate chilli and Amarula sauce, with a side salad. Serves 4. s I was constructing my rant on how to waste beer this summer, I stumbled upon a lot of ways to use beer in food. Now, in my opinion, that doesn’t seem like such a waste, but there are still some weird ideas out there that I think deserve our attention. So without any further ado, here’s my list of ways to waste beer… in food:

Use beer as a marinade for your meat. Apparently the acid in the beer allows for the meat to be really tender. Using beer in a batter. So this is one I have actually done. I’m thinkingfried fish or onion rings. Garrett Oliver from Brooklyn Brewery says it’s the carbonation and the sugar in the beer that makes the batter lighter and helps it brown better. Amen to that. I’ve just read their book and I reckon these guys know what they are talking about.

Trust the Irish to come up with a bread that uses beer. Ironically, you’re not supposed to use Guinness, but rather a light lager like
Darling Slow Beer. To be honest, beer bread is something I’m unlikely to make, but I’d like to taste. It’s supposed to be dense, moist and chewy. Sounds like a good bar snack.

Steaming mussels in beer instead of white wine. Okay, I can see the connection. Again, use a light beer like Jack Black Lager. Serve the mussels with a stout like Guiness though. It’s not craft, but for a mainstream beer it is delicious.

something I am going to try as soon as I can. Buy a popsicle (ice lolly) maker from PnP and use different beers instead of juice or ice-cream. This.sounds.awesome. Imagine having an IPA ice lolly after your braai or a Blonde Beer popsicle when you get home from work today? In fact, if I can’t find a popsicle maker today, I will revert to the old school ice cube tray and toothpick method to try it out. Freezing and separating beer is also a method to extract high alcohol beers, so a whole lot of fun could be abound in these popsicles. Alright, so you caught me out. SILKY RED FROM DURBANVILLE HILLS FOR FATHER’S DAY If dad enjoys a fine bottle of wine, treat him this Father’s Day to the 2011 Durbanville Hills Bastion, an elegant 50/50 blend of Cabernet Sauvignon and Shiraz. The grapes for this wine were sourced from a number of vineyards, some higher up on the hills and others lower down on the valley floor. According to red winemaker Wilhelm Coetzee, this velvety, fruity blend is sure to impress any dad’s discerning palate. The vineyards of the Durbanville hills all benefit from the area’s cool climate which is particularly suited to the making of elegant, smooth Cabernet Sauvignon while spice and pepper is the trademark of the Shiraz. Blending these two cultivars combines the smoothness of the Cabernet Sauvignon and tones down the spiciness of the Shiraz to create the perfect balance of fruit and pepper aromas. The wine was matured for 12 months, using predominately French oak of which a small percentage was new wood to prevent wood domination and ensure that the elegance of the fruit is preserved. Being a new addition to the Stoneridge Shopping Centre, Watami is the ideal place for the whole family to enjoy scrumptious Asian Cuisine. The décor is outstanding, as it is elegantly decorate with traditional yet beautiful Chinese lantern lightfittings. A few tables are embellished with the most gorgeous cherry blossoms trees and the whole restaurant is fitted with stunning Oriental wallpaper. With two skilled sushi chefs on hand, you can expect a variety of freshly prepared sushi, all skilfully and beautifully presented. While the sushi is a favourite amongst numerous customers, Watami also has an extensive, Asian inspired menu to choose from. You can decide between the various soups or noodles dishes, or you can have one of their tasty salads, as they are interesting and not ones customary Greek salad. They also provide a selection of prawn, beef, chicken; pork and duck main meals and even vegetarians can enjoy the succulent cuisine. We would suggest that you choose the
Toza Tofu which is a deep fried bean curd with fish flake or perhaps even the Suno-Mono which is calamari with sweet vinegar and wakami seaweed. Children can also enjoy the flavoursome Asian cuisine, as they offer a yummy children’s menu, which include Jap Chicken Nuggets and Stir Fried Calamari, to name a few. Watami also has a variety of delectable desserts to choose from and we would strongly suggest that you try the Chocolate Chopsticks and Heart-So-Soft, so those with a sweet tooth definitely won’t feel left out. The staff is friendly, hands on and very attentive, catering to your every need. The overall atmosphere is welcoming, cosy and relaxed, yet it is a tasteful restaurant that the whole family can enjoy. We got the opportunity to catch up with him, find out where his favorite place to dine in Jozi is and see what’s in store for this A-List comedian in 2013… 1) Tell us and our Hello Joburgers what you love most about Jozi. One of the youngest and most vibrant cities in the world . . . anything goes!!! The fantastic climate, people and a seething cosmopolitan frenzy!!! The only city in the world where there is no source of natural water. 2) Where is your favorite place to eat in Johannesburg? Renato’s Greenside, Turn ‘n Tender Parktown North, Suzzanne Brenner and Richard van der Westhuizen’s house. 3) Tell us what makes you laugh. Many different things on different days. For example I laughed (loudly) to-day at a tow truck involved in an accident with another tow truck. Imitation Rhino horns (made in China) being sold to the Chinese here!!! Actor David Dennis and John Vlismas’s diving technique. 4) What inspires you and thus motivates your material? People mostly. The power of the spirit to rise above anything!! Laughter helps!!! Love listening to other people’s conversations, what people think, what scares them. . . . And what makes them laugh!! There aren’t many people who DON’T want to laugh. Comedian Dave Levinsohn tends to attract them. 5) Do you feel SA celebrities don’t get the gratitude and
grandeur they deserve, from the concept ‘fame?’ I think they get more than enough. SA celebrities are more than spoilt. Cars, sponsorships, clothing etc etc. A lot of them behave like naughty spoilt school children for doing very little. . . I don’t quite know how all that works, Branding I suppose. I Think I need to get branded. . . .There’s a place in Cyrildene that’s quite good apparently 6) What would you like to be remembered for? Apart from my beautiful singing voice, courteous driving probably, my extensive rescue works with the flamingoes at Joburg Zoo and hoping to take their plight to parliament. 7) What’s next for Mr. Banks? My Previous show for March was BANKSRUPT at Gold Reef City! I will also be doing an extensive national tour, festivals, one night here and there. In the pipeline. . .the much talked about ice-show, Mark Banks The Trial, a few movies, no soapies. One eisteddfod. No appearances in 7de Laan. A huge commercial under wraps, that’s the product UNDER WRAPS - the world’s first underwater edible biscuit that is also a shark repellent. . .and a concert work with The busy Johannesburg Philharmonic Orchestra - The Mark Banks Messiah Cycle Highveld 96.4 Other than that a quiet year ahead!
