For those with the time and skill to hike at an extreme level, there is the ascent to the top of Cerro Punta, at 4,145 feet the island's highest peak. BOSQUES TROPICALES, MONTAÑAS Y TERRENOS PARA LOS AVENTUREROS Puerto Rico cuenta con un rico mundo interior natural de fácil acceso desde el área de San Juan. Para los que tengan el tiempo y la destreza necesarios para una caminata a nivel extremo, está el ascenso a la cumbre del Cerro Punta, que con sus casi 1.265 metros es el pico más alto de la isla. Además, hay una gran cantidad de reservas forestales que
vale la pena visitar si lo tuyo son las caminatas fuertes y el montañismo. Para los que puedan desviarse hacia el sur, hay un sendero en el Bosque Estatal Toro Negro, ubicado al norte de Ponce, que es todo un reto, donde puedes subir los 1.115 metros que te llevan a la cumbre del Pico Doña Juana. Para quienes prefieran quedarse un poco más cerca de la tierra, esta reserva de 28 km2 ofrece también una variedad de senderos de distintos grados de dificultad.

Rainforests, lagoons and ocean adventuring can be found at the Toro Negro Forest, located just north of Ponce, where hikers can climb 3,650 feet to the top of Pico Doña Juana. For those wanting to stay a little lower to the ground, this 7,000-acre reserve also offers a variety of hiking trails at varying levels of difficulty. For a different type of hiking experience filled with waterfalls and 26 varieties of animal species found nowhere else in the world, there is the El Yunque National Forest (Rio Grande, T.: 787 888-1880) in the northeastern Luquillo Mountains. The only tropical rainforest in the U.S. Forest Service, El Yunque is a very small geographic area which is home to a variety of distinct ecological zones and niches. The main characteristics that make El Yunque distinct: the presence of 150 fern species and 240 tree species of which 88 are found only in Puerto Rico
Beaches come in every size and color, from the pure white dunes of Isabela to the black volcanic sands near Punta Santiago and of those 23 are found only in this exceptional rainforest. There is also a varying level of physical challenge here, and the first point of encounter will probably be at the base of the spectacular Coca Falls. Thanks to its range of elevation, El Yunque is comprised of some four distinct climate and biological
zones, making its flora and fauna different at each ascending zone. Visitors often stop off at the main center just ahead of the park's entry, the El Portal Rain Forest Center. Beautifully integrated into the surrounding landscape, the Center features exhibits on the area's plant and animal life and is also an access point for guided tours.

Travelers on a short visit can easily reach locations such the sands of Isla Verde, which stretch for miles in front of luxury resorts and posh high-rise residential apartments, setting the beautiful backdrop for San Juan. A tranquil place during the week, Isla Verde is also ideal for such action as parasailing, bodysurfing, water skiing and jet skiing. Travel further east, and there is the beach at Luquillo which is also a diver's paradise as the average ocean temperature is 81ºF and underwater visibility averages from 60 to 75 feet, perfect for exploring the underwater wonders. Other diving sites which afford this degree of visibility up to 100 feet offshore include the areas of Aguadilla and Isabela, while the most impressive overall

Hay playas de cualquier tamaño y color, desde el blanco puro de las dunas de Isabela hasta el negro de las arenas volcánicas cercanas a Punta Santiago. La variedad de la costa brinda a los visitantes la oportunidad de participar en toda una escala de deportes acuáticos, desde el motociclismo acuático en aguas agitadas hasta el parasailing o paravelismo en mareas tranquilas.

Rainforests, lagoons and ocean adventuring dives are to be found near Desecheo Island off Rincón, near Mona Island, 50 miles west of Mayaguez, and also off the islands of Culebra and Vieques. When it comes to sport above the water, offshore and inland conditions are perfect for several activities across Puerto Rico. Traditional action such as sport fishing is best from October to early March when dorado, mahi-mahi, wahoo, white marlin and yellowfin are in season. The north side of Puerto Rico is known as 'Blue Marlin Alley' because of the large number of migrating fish that pass near its shores, especially in the summer. Charters are available from harbors in San Juan, Fajardo, Humacao and Mayaguez. Rigged fishing boats are available for charter in San Juan, Isla Verde, Humacao and Fajardo. Boats range in size

Finally, whether you have experience or just want to observe many of the best in their sport of surfing the west coast destination of Rincón Bay on the westernmost tip of the island is the place to visit. Rincón straddles the rough Atlantic and the gentle Caribbean, so its six beaches provide the best of both worlds. Since the late Sixties, this town has gained a reputation as the surfing capital of the Caribbean. A generation of international surfers has challenged the fast and furious offshore waves, and so many have settled in the village that it has developed an expatriate subculture. This too is part of the diverse dimension of outdoor action to be experienced around Puerto Rico today.

Aruba HISTORY Continuing north up the coast from the bridges you find the Bushiribana Ruins - a former gold smelting mine overlooking the Caribbean Sea. Built by the Aruba Island Gold Mining Company in 1825, the facility only operated for 10 years. Enough of the structure still stands to appreciate the back-breaking work performed here.
MAKE A WISH While you explore Bushiribana, you can't miss the thousands of stones, stacked in small piles as far as the eye can see. Although some feel this is a spiritual place, this modern 'tradition' was actually initiated by tourists. Try your hand at balancing several stones and make a wish for each stone before they are toppled by the strong Caribbean winds.
COOL OFF By this point you will be ready for a cool dip in the sea to conclude your trek to the wilder side of Aruba. Head to the Natural Pool, and descend a rough stairway to find a hidden, sea-
water bath, called a conchi, enclosed by rocks which form a shield against the waves. Floating among these rugged shores, where most visitors never venture, you can now say you have experienced the real Aruba!

Quedan suficientes restos de la estructura para poder imaginarse la ardua labor que aquí se llevaba a cabo.

Curaçao RECIPE GRILLED LIONFISH IN BANANA LEAVES Grilling fish in banana leave parcels seals in the moisture, flavor and infuses the fish with a subtle, grassy aroma. If you don't have banana leaves, you can use aluminum foil.
INGREDIENTS (SERVES 4)
In a bowl, make a marinade with the olive oil, zest and jalapeño. Season to taste with salt and pepper. To make the banana leaves flexible for folding, pass them briefly over a low flame on the stove until glossy, about 15-20 seconds. Wipe with a damp kitchen cloth or paper towel.

Meanwhile, heat a BBQ or griddle pan. Grill the fish parcels on medium-high heat until the fish is just done, about 3-4 minutes on each side.
The story goes that a lionfish escaped from a sea-aquarium in Florida. This marked the start of the lionfish explosively spreading itself throughout the entire Caribbean. This beautiful but highly unwelcome fish has no natural predators and poses a real threat to our coral reefs and fish. This led to lionfish hunting by professional divers, but also as a recreational activity with friends. The filet of the lionfish is tasty and tender. Eating this delicious tropical ingredient actually serves a good cause; the environment!
To serve, place the fish in the center of a plate and remove the toothpick, exposing the fish.
Please be careful when handling and cleaning lionfish, because its sharp spines inject a poison that is very painful.
Spread the leaves on a cutting board, put a piece of fish in the lower middle of each leave and spoon on the marinade. Top with a slice of lime, then wrap the fish in the banana leaves and close the parcel with a toothpick.

Suriname SIMPLICITY, SYMMETRY, HARMONY If you take a walk through the old city centre of Paramaribo, you will discover the typical, unique, mainly wooden building tradition, which originated centuries ago in Suriname. The historic architecture is characterised by its simplicity, symmetry and harmony with attention to detail. It is a creation of different European and North American architectural influences during the 17th, 18th, 19th and early 20th century in combination with Creole craftsmanship. In UNESCO's wording "Paramaribo is an exceptional example of the gradual fusion of European and North American architecture and construction techniques with indigenous South American materials and crafts to create a new architectural idiom".

Almost all wooden houses, both large and small, are built after one and the same basic design: a rectangular layout, plain symmetrical walls, high roof, brick foundation, white façades and green doors and windows. The bigger mansions have a wide front porch or balcony. The much smaller houses which can be found mostly outside the historic inner city, e.g. in the older neighbourhoods of Paramaribo and the districts, exhibit a strong correlation with the major historic buildings in the city in terms of structure, material and form. As a whole, both the larger buildings in the city as the smaller houses in the old neighbourhoods and districts form a beautiful sight.
LANDMARKS The Presidential Palace (1730) and the Ministry of Finance (1841) both at the

Independence Square, the St. Peter and Paul Cathedral Basilica (1885) at the Henck Arronstraat, the Reformed Church (1837) at the Church Square, 'De Waag' (Weighing House, 1824) along the Waterfront, and the synagogue at the Keizerstraat (1842) are important landmarks within the old town of Paramaribo. The oldest section of Paramaribo is the fortress of Zeelandia (1667), from which the capital Paramaribo originated. The fortress, as well as the former houses for officers close by, are popular tourist attractions. Besides Paramaribo, of special interests are also the large wooden plantation houses in the rural district of Commewijne. Plantations such as Peperpot, Frederiksdorp and MariĂŤnbosch, are definitely worth a visit.

his year, amateurs, professionals and plane spotters are once again expected to dust off their cameras and descend upon St. Maarten, the island known for its spectacular landings. This was also the theme for last year's ToppiX competition, which was attended by local and visiting photographers of all backgrounds and abilities. This year's theme will not be revealed until the opening briefing on November 4, when participants meet at the airport before taking up position around the runway, which famously extends all the way up to Sunset Beach. This location makes for the spectacular approach of aircraft so low over the beach, that tourists feel as if they can almost touch the incoming aircraft, before taking position near the fence to experience the jet blast of departing planes.

Italian cuisine - its ingredients, recipes and traditions - are something which obviously appeal to sophisticated Medellín diners, as we found out again at Spiga di Palermo located within the Dann Carlton Hotel. Here the regional cuisine of Sicily is the highlight on the lunch menu: for instance, you might savor a fresh antipasti of local cheese and fresh tomato with extra virgin olive oil, followed by a main course of either beef, chicken in cream sauces or pasta. Again, chefs are able to rely on regional staples to create tasteful and fresh courses. The ambiance at this ground floor restaurant in the El Poblado district is serene and calm - with wide vistas into the surrounding green park exterior.

or any meal of the day, expect to find an impressive range of Colombian favorites on the menu at most restaurants. A popular staple of many Colombian dishes is beef - and here in Medellín, it appears in such popular food as the arepas, a maize pancake that includes a variety of toppings - among them chicken, beef, vegetables, sauces. Another classic at breakfast time is a delicious bowl of santafareno, a hot chocolate accompanied by cheese and bread. These along with other traditional Antioquian dishes such as bandeja paisa are always worth trying on a Medellín visit.

So it is that both the imaginary and the real together come to shape the course of the lives of a collection of very different figures in this novel of contemporary Haiti, set in the period just before its horrendous earthquake.

Growing up with an early awareness of both traditional Jamaican food and the natural 'Ital' dishes of his own family's Rastafari culture, Marley delivers a book full of flavors that appeal to the taste buds but also to clean eating. This is all reflected in the fifty-four recipes suggested - many with eye-catching images of the final dish, and organized by meal time - or as he calls it, 'Rise', 'All Day', 'Midday', 'Evening' and 'Sweets'. This full-color volume is the first to present many of the most important Cuban paintings in the collection of the Museum of Arts and Sciences in Daytona Beach. Featuring highlights on permanent exhibition, it includes landscapes, still lifes, portraits, genre and abstract works by the most important Cuban painters active between 1725 and 1959. In the eighteenth and nineteenth centuries, these masters developed a unique tropical style based on European prototypes. After the First World War, Cuba blossomed with a new vision, full of the color and rhythms of a sophisticated modernism. This is all detailed in the essays by renowned art historians Gary Libby and Juan Martínez offer a general aesthetic, historical, social, and cultural overview of Cuban art. Especially interesting is the explanation of the convergence of cultural and political forces early in the twentieth century that made Havana and Cuba a center of modernism.

The service is okay and I start with Ravioli with Wild Mushroom and Truffle Oil, which is a dazzling dish and there is no need to add any seasoning as the flavors are perfectly balanced. The Parmentier of Duck Leg Confit with Pan-Fried Foie Gras is mind blowing and the apples served with this dish balance the flavors beautifully. Another ravishing dish is the Turbot with Marinated Foie Gras, which is marinated in Port and served with a creamy potato puree.

This is top of the bill food and even though the check is in Euros, believe me it's worth every euro-penny! All the desserts here are marvelous and an added bonus is that you can buy most of them in their pastry shop to go! I absolutely adore their Crème Brûlée and the Macaroons are certainly worth trying.

Bacchus was the Roman god of agriculture and wine. The owner of this venue is definitely a wine lover and knows plenty about it! This venue is located in the industrial part of St. Maarten, where there is plenty of space for this restaurant, wine and pastry shop in one. The location doesn't add a cozy French feeling to the ambiance, but the variety and creativity displayed on the menu is so stunning. I don't really mind where I am when I can taste dishes this divine!

In downtown Philipsburg there is a lovely place called Ocean Lounge. It has the 'lounge' atmosphere with a panoramic ocean view, which makes this place perfect for sunset drinks or dinner. Chef Raymond Kaper and manager Paul Melskens really make this place rock. They offer a 'kick ass' fusion menu with Italian, American, Indonesian and Japanese influences and classic dishes too like Dover Sole, Foie Gras, Steak Tartar and King Crab. These dishes can bring a smile to anyone's face! The wine list is extensive, all housed in the fabulous wine cellar they've created, and all well matched with the refined menu. I continue my meal with a smooth, full-bodied glass of Malbec to go with my order of Rib Eye with carrots and Truffle Mash. This is a purely magnificent dish. The meat is mind-blowing: flavorful and cooked to perfection. For dessert, I have a magnificent crème brûlée served with fresh pineapple and ice cream, all washed down with a glass of Scrubs Orange Rum. I can tell you, this venue has the potential to be near perfect and although the service was on the slow side, it was warm and hospitable.

After that I start with a small amuse, which is a gazpacho (cold soup). The wine list is simple but perfectly paired with the menu. Once again, I try the House Rose, which is very tasty! fresh from France. OMG what a divine dish! I often used to eat these in Spain but they taste even better here, where you wouldn't expected to find them. They are simply grilled with lots of garlic and lemon. Oh boy, what a marvelous dish! The Linguini Vongole is also a stunning dish served with grated Parmesan. I love the way they serve Dijon mustard in an old mason jar and, although the Hangar Steak and Asparagus are slightly overcooked, the flavors make perfect sense and the caramelized onions with bell peppers go very well with the meat.
