As the festive season unfolds, the charming villages and lively cities of Goa come alive with a kaleidoscope of decorations, filling the air with the infectious spirit of Christmas. Thousands of tourists have already started descending in the state to partake in the festivities, and preparations for midnight parties during Christmas and New Year are in full swing.

However, her passion and love for baking led her to take up the art as a hobby. She used to observe her mother Arpita preparing various types of cakes and pastries and decided to try her hand at it too.

She started baking cakes for a few individuals from her close circle and received a lot of positive reviews from them. This made her realise that she was blessed with the skill to dish out delectable baked goods and could convert her passion into a business venture. This led to the birth of "Wake n Bake'' in 2016.

From managing household responsibilities to convincing customers of the value in homemade products, Raina navigated hurdles with determination. She invested in efficient equipment to streamline operations and focused on building a brand that stood for quality, hygiene, and a personalised touch.

However, her passion for baking eventually took centre stage. Her foray into the culinary world began with attending various baking and decorating courses, honing her skills and discovering the secrets of crafting the perfect cake. She attended courses in basic baking, frosting, wedding cake decoration and even did a course with established home chef Mrs. Fatima Moniz to learn how to bake a proper Goan plum cake.

A random purchase of an oven during a Diwali offer set the stage for her culinary adventure. The thrill of baking her first cake, inspired by a YouTube recipe, opened a world of possibilities. Raina's desire to share her creations with friends and family eventually led to the decision to pursue baking professionally.

There is a whirlwind of celebrations everywhere. It’s time for friends and family to come together at those big fat dinner spreads and fill the air with laughter and cheer.

It has no added sugar and is low in fat.

We all like to flaunt our best crockery and the yummiest food at the dinner table during the joyous season of Christmas.

So, to keep up with the endless parties without the guilt, we need to come up with some healthy, yet delicious food.

Here is something that you won’t regret serving to your health-conscious besties. This Strawberry Christmas Trifle is stunning to look at, is beautifully luscious, and its flavours are spot on.

The sweet and sour taste of the fresh, juicy strawberries complements the cream cheese, which is delicately sweetened by the perfect amount of maple syrup. Combined with the crunch of the roasted nuts and the softness of the whipped cream.

Not to forget the bottom layer of the rich couverture chocolate cookie crumble.

Ingredients used in the preparation of the Strawberry Celebration Trifle

Strawberry Celebration Trifle

Approx 180 calories per serving

(Serves two)

Ingredients

Fresh Strawberries – 1 cup

Low-Fat Cream Cheese – 1 cup

Maple Syrup – 2 tbsps

Sugar-free Chocolate Cookies – 2 nos

Roasted Almonds and Pistachios – 2 tbsps

Low-Fat Whipped Cream – 2 tbsps

Metho Start by lightly whipping the cream cheese with 2 tbsp of maple syrup.

Wash and pat dry the strawberries and chop them into medium-sized piece Finely crumble the cookies in a mixer ja Finely chop the roasted almonds and pistachios Now, take two wine glasses or serving bowls.

Into them layer, the celebration trifle in the following order : First Layer - Cookie Crumble Second Layer - Low Fat Cream Cheese Third Layer - Chopped Strawberrie Fourth Layer – Dollop of whipped cream Fifth Layer – Finely chopped nut Next, put them to chill in the refrigerator for a couple of hours.

And Voila! Your Strawberry Celebration Trifle is ready to be served to your guests this Christmas.

Add the remaining ginger-garlic paste, and cook till the raw smell disappears Add chopped tomatoes and cooked meat, and toss well.

Deglaze the pan with chicken stock and allow to cook. Add green peas and mix well.
