Amy Pham Amy Pham is an LA-based DJ, actor, and model. She grew up in California, raised by her Vietnamese mother and father. At 18, she learned how to DJ and started playing the LA night circuit at venues such as The Mondrian Sky Bar, The Standard Hotel, Thompson Hotel, and quickly moved onto playing shows in New York and London.

I enjoy DJing and hosting the most. I love music, and whenever I DJ the energy from the crowd is just addicting. And when I host, I love the camera crew that we work with because we always have so much fun together.

made you become a DJ? What Q3 What kind of music do you like?

My brother taught me how to DJ, and I’ve been DJing for 5 years now. I already love music, and I used to dance competitively, so DJing definitely came more easily to me. Personally as far as music goes, I think that a good, well written song is a good song no matter what the genre. So I love all types of music. My favorite to DJ, however, is hip hop (especially old school/ 90’s/ classics).

What do you like about living in LA? Where is your favorite spot in LA?

Naturally the first thing anyone says is the weather, but honestly to me LA is home. I was born and raised here and I couldn’t imagine living anywhere else. I love that so many people are pursuing and encouraging of creative careers.

My favorite spot in LA would have to be LA Cafe honestly because I go there way too often for my own good and I’ve never been disappointed (The Kitchen Sink sandwich on a croissant is killer).

is your favorite fashion? Do you Q5 What have a favorite brand?

I don’t have a favorite really, all things I’m drawn to fashion-wise is an accumulation of everything that inspires me. Music is a heavy influence on my style, because I’m always looking at old photos of punks, Teddy boys, mods, etc. and emulating their style in my own outfit choices. I always have a soft spot for vintage, pin-up, 50’s aesthetics, and also punk/ grunge elements. I don’t have a favorite brand! Anything that gets the job done really (and at the lowest price possible, I’m a big bargain shopper).

Q6 What All my life, the only goal I have is to make sure my family is financially stable. My family is everything to me.

Congratulations on the opening of

the new RING baked tofu donuts shop in Woodland Hills! What made you decide to open a donut shop?

I have worked in a restaurant in the past, but it didn’t feel like it was the best job for me. That’s when I came up with my “Baked Tofu Donuts”. With the help from people around me, I saw great potential for a new business.

Could you tell us the reason why you chose BTD as your main product?

I did think about opening a fresh sweets shop however it was financially smart to go with BTD because it doesn’t require any capital investment. Also since Los Angeles is a major car-society, I had to come up with something that could last through long delivery drives. After hours in the kitchen, I came up with the Baked Tofu Donuts.

I was hoping to create something people can bring as a gift or to share with friends. Since Japanese baked goods such as dorayaki is not very familiar in the US, I decided to go with baked donuts. At first, LA’s dry weather seemed to affect the texture of the donuts but when I baked it with tofu I was able to get the texture I wanted.

It was a great discovery because it added a healthy image and Japanese flavor to it.

This time we are going to put the spotlight on Ms.Aya Maeda, the owner of “RING Baked Tofu Donuts” which just opened this winter. She told us about her career, life and her store.

Your concept is very distinctive and the designs are very refined. How do you come up with your ideas?

The labels and the logo are all designed by my favorite designer, Yuko Okada. I always discuss and decide on the concept and direction together with my partner.

What were the challenges in opening your store?

I started trial productions in 2012 and came up with over 200 recipes. I still fine-tune ingredients so I still don’t have a final recipe. I think the donuts will keep evolving as the ingredients slightly change. BTD is my original recipe so it’s not available anywhere else. I’m learning from a lot from books about desserts in general and various cooking techniques. It feels like I’m having a science experiment in the kitchen, one gram at a time.

What is the most essential element in making RING baked tofu donuts?

If I have to choose then it comes down to the taste and ingredients. I always use local, organic and non-GMO ingredients as much as I can. I talk to the storeowners and gather ingredients that I can really trust. I love go-

ing to the Farmer’s Market, Cafes and bakeries and finding new flavors and ingredients; it’s so exciting to me.

What are your future plans for the shop?

I want more people to know about my RING baked tofu donuts and have them stop by my shop. I also plan on experimenting even more with flavors. Trying different flavors are so much fun for me, like Japanese style such as soy sauce, miso, yomogi, spinach and also trying gluten-free donuts.

Can you leave a message or advice for the JPy readers and JOBOT users?

I’m the one who should be asking for advice, really [laughs]. I’m still learning but I feel blessed because I’m surrounded by wonderful people and opportunities, so I think it’s important to keep doing my best and not let any chances slip through.

Aya Maeda Inspired by her mother, Aya started baking sweets & desserts at a young age. During her study abroad in San Francisco, her craving for Japanese sweets led her to start baking her own. After she got accepted to California Culinary Academy (today: Le Cordon Bleu College of Culinary Arts) she studied Baking and Pastry arts.

After working as a patisserie in a Japanese restaurant, she moved to Los Angeles to open her own shop. She started RING Baked Tofu Donuts in 2012 with her partner. What started as a made-to-order business turned into their first brick & mortar store in Woodland Hills in November 2014.

Aya Maeda 子供の頃から母親の影響でお菓子作りに目覚める。サンフランシスコ留学時代、日本のお 菓子が食べたくて、色々なお菓子を作り始めることに。 その後、California Culinary Academy （現Le Cordon Bleu Collage of Culinary Arts）に入学、Baking and Pastry Artsを学ぶ。卒業 後は日本食レストランでパティシエとして勤務し、店舗展開に伴いロサンゼルスへ。2012年 より現在のパートナーと共にRING Baked Tofu Donutsをスタート。発注生産の形でビジネス を開始し、2014年11月、 ウッドランドヒルズに第一号店をオープンした。

ドーナツ屋さんをオープンされたきっかけは？

お店を開店するにあたって苦労したことは？

[Directions] 1. Put the egg yolk in a bowl and mix gently with a whisk. Add the millet sugar and mix well until the mixture turns slightly white. Add flour, baking powder and green tea and combine well (Photo 1).

2. In a different bowl, put the egg whites and beat with a whisk.

Add half of the sugar and mix well and add the rest and beat until very stiff (Photo 2).

3. Add 1/3 of the beaten egg whites to the mixture (Step 1) and combine well with a whisk. Add the rest of the egg whites in two additions and fold them into the mixture (Photo 3).

［作り方］ 1. ボウルに卵黄を入れて泡だて器でほぐし、 きび砂糖を加え てやや白っぽくなるまでよく混ぜる。 なたね油、牛乳を少しずつ 加えて混ぜ、 さらに、薄力粉、 ベーキングパウダー、抹茶を加え て、 粉っぽさがなくなるまで泡だて器で混ぜ合わせる。 （写真①） 2. 別のボウルに （A） の卵白を入れ、泡だて器で泡立てる。 き び砂糖を2回に分けて加え、 ツノがぴんと立つまでしっかりと 泡立てる。 （写真②） 3. 1.に2.の1/3量を加えて泡だて器でよく混ぜ、残りを2回 に分けてゴムベラで切るように混ぜる。 （写真③） 4. 生地が均一になったら、一気に型に流し入れる。 その際、 中の空気を抜くために型を台の上でトントンと軽くたたき落と す。 （写真④） 5. 356℉ （180℃） のオーブンで約28~30分焼く。

2. In a different bowl, put (B) and mix well to make black sesame sauce.

3. Boil water in a pan and place the mochi balls from (1) 4. When mochi start floating, wait for 3 minutes. Take them out and place them in ice water.

5. Drain well and remove excess water and place them on a plate. Drizzle the sauce from (2).

4. Add the walnuts and sprinkle soybean powder on top and divide the batch into 6.

5. Wrap them with the red bean paste and shape them.
