Sophie is a recent edition to the Junction family in her role of advertising, marketing, social media and stylist. She moved to Matakana in 2014, relocating her former handmade almond milk brand, Carew Kitchen to the area. “I am constantly impressed by the community support here. It is such a special part of the world and my family and I feel happy to call it home.” Sophie is looking forward to getting to know the locals, plans to plant a vegetable garden and increase her animal menagerie over the summer.

KATHY

HUNTER

Barry Torkington is the fourth of six generations of Torkingtons in and around Ti Point and Leigh. The Torkingtons have been well-known in this area since the 1880s and Barry is no exception. He’s often involved in community events, plays a mean guitar for bluegrass band the Pipi Pickers, and is kept busy with four grandchildren. He’s been in fishing most of his life in various roles, including management. Just over five years ago he became involved with the New Zealand Sport Fishing Council (NZSFC) and eventually joined a team creating a community brand that’s now becoming a force to be reckoned with: LegaSea. The NZSFC has 59 clubs and over 32,000 paid-up members nationally. It’s the largest national body representing the fishing public. But back then they’d realised there were thousands more people concerned about our marine environment who didn’t necessarily see themselves as sport fishing ‘types’. A team of enthusiasts worked out a simple way for the NZSFC to connect with these average Kiwis so they could gain information, enable research and education, and help raise funds to fight for the health of our seas. LegaSea supporters pay $10, $20 or $30 a month to become part of a group which has a committed vision of the big picture: rebuilding our inshore fisheries for ‘more fish in the water’. There’s always been a commercial bias on decisions made by fisheries management in New Zealand, of course – there has to be. Increasingly, however, people are calling for a change in the way big commercial fishing companies are calling the shots. Decreasing fish stocks show that change is essential and in some places, urgent. “Most people think that once big inshore fishing vessels reach their ‘quota’ they’ll just stop,” says Barry. “But that rarely happens, since commercial allocations are so large as to be virtually uncatchable.”

But now, thanks to funding through The New Zealand Marine Research Foundation and LegaSea, commissioned reports are showing that both smaller, local fishing vessels and recreational fisherfolk contribute significantly more to the local economy than previously thought (and of course, they’re much better for the environment). Money talks: the government and fisheries management are starting to sit up and take notice. “Non-commercial fishing spend is spread over bait, gear, engines, fuel, services… all bought locally and all with added GST that directly puts over $200 million into the government coffers. It makes it look a little less like easily-discounted ‘fun’ and more like something to take seriously, doesn’t it?” Sam Woolford, LegaSea’s fundraising lead, says new figures out show that the recreational fishing economy generates $1.6bn for the nation’s economy, versus the $2bn commercial fishing generates in exports. “What’s important to remember though, is that one takes about 6% of the catch and the other, around 90%. But it’s the tourism dollar that can add serious value – there are the flights, then local accommodation

and restaurants – not to mention the shopping, sightseeing and other activities for those family members who aren’t into fishing… it all adds up into a really sustainable business model.” Barry also gets excited about fishing tourism. “There’s so much we can do and the Matakana Coast is perfect for it. Waiheke has a good case study – there’s an outfit over there taking high-dollar tourists fly fishing for kahawai. They catch no more than a couple of nice fish a day and get them cooked by a top chef. They’ve worked out that over a few days these guys have contributed over $1,000 to the local economy per fish . Compare that to $1,500 per ton from exporting whole kahawai… it’s a bit of a no-brainer really. ‘NZ Inc.’,” Barry waggles quotation marks in the air, “is missing out on first-class non-commercial tourist fishing dollars. Who’s the minister for tourism anyway?” He grins, just a little wolfishly.

as many New Zealanders as possible on board with LegaSea to help us put the pressure on, and achieve something we can be proud of for our grandchildren. We have 42,000 supporters now – if we can get to 100,000 we’ll have a serious voice next year for the election.” www.legasea.co.nz | Find LegaSea on Facebook

Local business is starting to get a grip on the sheer wallet-power of recreational fishing and is scrambling for sponsorship: ITM, Rod and Reel, Hunting and Fishing NZ, Hutchwilco, Yamaha, Honda, Top Catch, Burnsco, Fishing News and DB Breweries are just some of the companies backing LegaSea. This enables employment of experts and professionals who keep the right kind of pressure on policy-makers, and ensure everyone stays informed with both serious information – and fun stuff. LegaSea supporters have access to real-time updates that can be helpful and fascinating. A recent ‘Friday Fry-up’ (online weekly news bulletin) from LegaSea looked at what’s happening on the Kaikoura coastline, the latest on seabed mining, and what fishing gear (and LegaSea merch!) to buy your loved ones for Christmas. Soon they’ll be launching a free webinar series where you can choose your topics (the pros and cons of marine reserves for example; or whether we should limit fishing during spawning season) for quality, up-to-date education. There’s plenty of potential for future good news though, according to Barry. “ ‘More fish in the water’ is doable,” he says. “Entire ecosystems do recover, and they will here, given half a chance. We just have to get

Angelo Georgalli bounces into the Warkworth café and orders a soy flat white with an espresso on the side. It’s very early but he’s actually glowing, despite his claim of little sleep. It’s been a couple of years since I’ve seen him. “Oh my God,” I say. “You look about 30!” He’s 45. “I feel it,” he says, eschewing false modesty. “I’ve stopped eating sugar, gluten and dairy, and I’ve dropped 22 kilos. Never felt better in my life. I feel… rinsed out.” This is the ex-Matakana local who appeared last year on our screens in The Game Chef, a TV series set in and around Wanaka. It’s based on Angelo going out into the wild with a camera crew, hunting something, then cooking it pretty much on the spot, using nothing but a homemade charcoal barbecue and a little box oven that sits on an open fire. And unlike your run-of-the-mill TV chef, not only does he actually catch his main course, but he’s also an award-winning archer who often brings lunch via a huge, steel-compound bow that looks like some mad alien artifact. What could possibly go wrong? Amazingly, very little. “We had no script – we thought I’d hunt something then go and cook it in a beautiful kitchen, but we couldn’t find the right place. I said, ‘Look, why don’t

we try doing it outside?’ We shot a pilot by the lake at Glendhu Bay… Bang! it just worked. Twelve days, ten episodes, thirty dishes in multiple locations!” he says, and thumps the table – bah-dah dah (tish)! He does this a fair bit. “Still can’t quite believe it myself!” He orders another coffee. The series was picked up by a London media company who’s recently sold it to National Geographic; Angelo and the New Zealand wilderness will be showcased in 90+ countries. They’re now shooting a new series, Angelo’s Outdoor Kitchen, and the first five episodes have just been shot on the Matakana Coast. It’s all about seafood this time: he’ll be spearfishing and foraging for shellfish. Angelo is the youngest of four boys who are now scattered around the globe. He’s half Greek Cypriot, half Italian, born in Scotland, raised in London. His full name is Arcangelo, after his maternal grandfather, who was a musical entertainer in Naples. It would appear Angelo inherited more than the name – he’s also a musician, and he loves his new place in front of the camera. Angelo is dyslexic; he hated school but loved kitchens. He started work aged 14 at his uncle’s Greek deli in North London and worked his way up

through the ranks. He met his Kiwi wife Stephanie in London in 1993, and three years later they bought their first café in Auckland. Since then they’ve owned seven restaurants, including The Hobson St Deli, The Fridge in Kingsland and The Chiller in Parnell. “After we sold the last one, we went to Tuscany for a year,” Angelo says. “All I did was cook and practice archery 25 hours a week.” He represented NZ in Italy with his sport and once back here, set up an archery school at their idyllic Matakana property. For a few years they kicked back, but the snowy peaks of Wanaka called them in 2014. Jonathon Ulrich found him there. He’d filmed Angelo as a guest chef for a TV show, years before; he’d said to Angelo at the time that he liked his style and would be in touch. Four years later he tracked him down. “Angelo’s one of the most talented chefs I’ve ever met,” says Jonathon. “The best thing though, is that we’re actually just documenting his life. This is what he does.” So, seriously – how many times did they have to resort to the freezer in The Game Chef? “Never!” cries Angelo, horrified. “Rabbit, hare, red and fallow deer, wild sheep, tahr, pig, salmon, trout… we caught it all.” Bizarrely, the wild sheep was the worst. It was at Glen Dene Station, and involved hours of slog through tussock chasing the shy herd. The salmon was a pain too. “I just couldn’t bloody well catch one that day,” admits Angelo. “I was just about ready to walk. But it ended up being probably the best episode.”

In the new series you can expect kingfish, snapper, scallops, mussels, kahawai… the coast here has been kind to the crew. Top local spearfisherman Jackson Sheilds of Wettie Wetsuits (a sponsor of this series) found Angelo some exceptional fish. “Jackson knew where a particular school of kingfish often hung around. He came up out of the depths with all these huge kingis spiraling up after him – it was incredible. Within ten minutes of getting out of the boat I’d shot one; 25 kilos. And scallops for my risotto were just scattered around on the sand in 15m of water!” Angelo packs a basic spice kit that includes ginger, garlic, lemongrass, coriander seeds, turmeric, paprika plus fresh herbs. He tries to use the whole fish: “The heads and frames are just gold to me. I make a stock with these (often with seaweed too for its amazing minerals) and use it as a base for risottos, curries, soups, stews. It’s super healthy – and also packs a massive flavour punch.”

Future plans? Angelo’s keen to spend time back in Wanaka with the family: Stephanie, Luca (13) who’s big on hunting, Oscar (11) who loves fly fishing, and Lucia (9) who’s a great little archer. He’s modified a 4WD ‘kitchen camper’ to take tourists on hunting trips, he’ll be going to luxury lodges to teach workshops… and dreaming, presumably, about where to go for his next series. “Can’t say where yet, you’ll just have to wait and watch,” he grins. And bounces out. www.facebook.com/thegamechefnz | www.angeloswildkitchen.co.nz

Minty B is the newest and trendiest food truck on the block serving delicious soft-serve ice creams, but with a healthy twist. With coconut and fruit based flavours topped with guilt-free treats, it’s all dairy free, gluten free and vegan friendly.

The Circuit Room was created nine years ago in the Matakana Country Park but they were often asked what they do there. So owner Joy Earley felt it was time for some changes and a new name was at the top of the list. The fab team of instructors bring you the best of the Les Mills classes including BodyPump, BodyBalance, BodyCombat and CXWorx. Soon they will be adding the Les Mills RPM (cycling) classes along with their new name – Fitness Matakana. With short, long and casual rates, no joining fees and no contracts to sign, there’s an option for everyone. Matakana Country Park, 1151 Leigh Road, Matakana.

Warkworth is having an interesting time coping with the newly closed road on the way in to the town centre from the north. The council are giving it a shot to see if it results in less conflicted traffic, but some retailers are finding that northern ‘popin’ shoppers are giving up and heading south.

Over the summer months you will find Minty B along the main roads of Matakana. It’s also available for wedding and event hire around the greater Auckland region. E: kakoworganics@gmail.com Instagram: @Minty_B_Icecreamery

The town and its many fantastic shopping options can still of course be reached via Neville Street from SH1. As our region’s largest centre, it’s magnificently equipped to cover any Christmas shopping scenario, as well as providing delectable options from a variety of cafés and restaurants to keep you sustained in your quest for Christmas perfection!

matakana river tours – summer cruising words

This December, a new river boat adventure will be launched. Omaha local Phil Morris is putting the finishing touches to his purpose-built, flat-bottom barge, and will run cruises up and down the Matakana River. Back in the 1800s, this waterway was the arterial lifeline of the district, with Maori and settlers transporting their goods to Auckland. “I want to see the river back in action, to experience a presence on the river like in the past,” says Phil. Phil hit on the idea earlier this year while sitting at the Matakana Wharf: “Why not utilise this wonderful feature?” He and his brother Steve immediately got to work on building a scow-style barge which he will christen the Kotiti (translation: straying from a direct course), after the Northern Steamship Company vessel that serviced Matakana last century. Sadly it went down in heavy seas between Westport and Foxton in 1931. But never fear. The flat-bottom design makes Phil’s Maritime NZcompliant boat extremely stable and ideal for shallow water, plus Cap’n Phil has over 100,000 sea miles of experience from his many years with Kawau Cruises, the America’s Cup and super yachts.

m ue l l er

The skipper welcomes passengers aboard at the Matakana Wharf for a one or two-hour tour, and serves a selection of local wines and beers. On private two-hour cruises, delicious platters are prepared by Sarah and Kerri from Ravish. As the Kotiti glides along the tidal estuary past mangroves, farmland and pretty stands of native bush, Phil shares some history of the region and explains a little about the flora and fauna. Be sure to take a camera to capture the runcible of royal spoonbills (yes, this is a collective noun for royal spoonbills – canteen is another) that are currently nesting in a tree along the river. Out near the mouth that spills into Kawau Bay, passengers may even spot various ray and fish species. Matakana River Tours is an exciting new addition to our region and a great activity to combine with our markets, a movie or a stop at one the many bars, cafés and restaurants in Matakana. Tours are tide dependent so check the website for departure times and prices. www.matakanarivertours.co.nz | T: 021 046 9426 E: phil@matakanarivertours.co.nz

Spearfishing is the sport of underwater hunting that became popular in the early 1930s, and the weaponry has seen a vast array of developments since. Whilst many use the sport to provide food for the table, sad as it maybe, there is an element that still trophy hunt; this continues to raise heated debates. One thing there is no question about, spearfishing is the only true method of sustainable fishing: one-on-one with your prey and in an environment where you are at a disadvantage. Here the spearo is selective when it comes to the fish he takes. This ability to size up the fish before it is shot is why spearfishing has no by-catch. By-catch is the non-targeted fish that are caught as a result of other fishing methods. An example of by-catch is when fishing with a rod and reel and catching a fish that is too small. These fish can be injured enough to die shortly after they are released. The spearo only takes what will be consumed. It’s safe to say if you want to go spearfishing then you will certainly benefit by learning how to use freediving techniques, especially breath-holding to increase your confidence for depth and duration. In addition, this will increase the opportunity to access species or specimens that would otherwise be out of reach. Just duck diving in the water and chasing anything you happen to see won’t get you to the top of the predator list! You need to understand your prey, where it is likely to be, at what depth and how to stalk it. You will need a variety of hunting techniques in your armoury too. One method won’t suit every kind of fish. Building freediving techniques will increase your bottom time and reduce the feeling of ‘discomfort’ during your dives that signals when you should swim for the surface. It will certainly increase the opportunity for you to find and select the prey you want rather than an opportunistic approach of shooting whatever happens to present itself.

There is no doubt it can be an alternative experience to scuba diving. I can recommend it. There is no better way of exorcising the stresses of the day and relaxing the mind and body. Whilst there is a cross-over between freediving and spearfishing equipment, there are some fundamental differences. Understanding the equipment that is needed is essential if you want any chance of successfully catching something, otherwise you will be just wasting time and energy, endlessly chasing the one that got away. New Zealand’s spearfishing conditions are unique in every aspect, from water quality through to fish species. We need to be vigilant when selecting the most appropriate equipment to maximise

our potential catch. This can change between any given environment, the conditions you are hunting, and the species you are targeting. With exception of the islands in our extremities, New Zealand waters are usually relatively cool, and of low or medium visibility. Species like kingfish or snapper will require you to have the right type of gun if you are to experience success at hunting them. Blue water species will mean that your skills and proficiency of diving will need to be good too, as depths and currents are likely to be a factor. Adopting the skills of freediving makes perfect sense in improving your ability at this very popular sport. These skills will increase your success rate and safety. Everyone has their personalised tricks to best achieving their longest breath-hold or bringing in their biggest fish. But it’s applying the fundamentals of freediving techniques and adapting your equipment to best suit the territory and sea conditions that will eventually work for you. Come and see us at New Zealand Diving, talk to us about spearfishing and what will suit you. www.nzdiving.co.nz | T: 09 422 3599 | E: neil@nzdiving.co.nz

There’s a new kid on the block in the north Hauraki Gulf – a sleek launch that has both fun and sustainability on the agenda. It’s a new venture for skipper Kurt Salmond, a Matakana local who’s been in and around the water his whole life. Kurt, wife Clair and their two young kids live self-sustainably on their lifestyle block – they keep a few sheep and bees, grow fruit and veg, have solar power and compost madly. There’s even a bin on the boat in which guests are encouraged to leave food scraps – “for the chooks and worm farm.” Kurt’s had his own landscaping business for years, but is up for a sea-change while everything still works – it’s a job that’s pretty taxing on the body. But the thing he’s most passionate about right now is the ocean – in particular, about bringing a new kind of charter operation to the Gulf. One that incorporates conscious environmental choices and as much information as you like about the ecosystems, history and wildlife that’s out there.

The Gulf Eco Charters launch seats 12 comfortably and you can basically do whatever you like: equipment is complimentary for snorkeling, a spot of fishing or kayaking. You can stay close to shore with an evening cruise, including beer, wine and nibbles, or head further out to dive the islands with full catering – Little Barrier Island, the Hen and Chickens or even Great Barrier Island.

Some of those ecosystems are pristine - just as you can imagine they were like 200 years ago

When Junction cruises out with Kurt on the Kokomo from Sandspit, we power north to Goat Island on a sparkling day; there are gannets arrowing into the water around us as we explore the extraordinary rock formations around Ti Point and Leigh. Lunch is a tasty, filling wrap and a superb muffin made by Clair. We chat about how much the Gulf has changed, and not for the better – but Kurt lights up as he describes places around Great Barrier Island. “Some of those ecosystems are pristine - just as you can imagine they were like 200 years ago.” “All of us who use this incredible area need to work together and acknowledge the challenges – it’s easy to get defensive, but once we start finding solutions it has the potential to be great again. After all, this used to be the worst whaling nation on the planet.” He gazes out to the islands bathed in afternoon sunshine. “But now it’s a sanctuary.” www.gulfecocharters.nz

Accommodation? You can stay at ‘Matakana Outback’ just up the hill from the village. It’s a funky little self-contained cabin run by the Salmond family – there’s fresh new ply, crisp cotton and big views of hills and bush. www.matakanaoutback.nz

From far left: Kurt gives the eco talk; Kokomo sits happily in the marina; comfy deck on board; the shiny blue gulf from the back deck.

STAYING SAFE THIS SUMMER Omaha Beach Surf Life Saving Club has been preventing drowning and injury through lifeguard services and education since 1988. Our lifeguards are on call 24/7, providing volunteer patrols from Labour Weekend through to Easter. During peak season, the beach will see up to 3,000 visitors on any given day. Our club plays a vital role in supporting the community. Since 2011 our dedicated lifeguards have prevented 3,389 people from drowning or injury, gifted 12,640 volunteer hours to Surf Life Saving and provided direct assistance to nearly 15,000 beachgoers. We ask people to be vigilant and follow some simple guidelines to ensure a happy, safe summer: Take your family to swim at a patrolled beach. Keep a close eye on all children. Always swim or surf with a friend. Watch out for rips – if you are not sure, ask a lifeguard or a local. Be smart around rocks. If you’re away from home, check with the locals first and if in doubt, stay out! If you spot someone in trouble at an unpatrolled beach, ensure your own safety first and then ring 111 and ask for the police. Omaha Beach Surf Club memberships are now open and we encourage locals to join the growing number of families enjoying the benefits of club membership. Details can be found at www.omahasurf.co.nz. Please support our local Surf Life Saving Club – you never know when you may need them to help you or your loved ones out! Our summer raffle is open and $5.00 tickets can be purchased or donations made by contacting fundraising@omahasurf.co.nz www.omahasurf.co.nz

master craftsman allan harkin – a hidden treasure words

+

p hotos

c ath

l ew i s

If an X was to mark the heart of Matakana, it would be well placed here. Allan Harkin doesn’t just live at the geographical centre of Matakana, he’s lived at the heart of the community for the past 20 years.

Allan has no training in woodwork or model making. He comes from a boat building family but he trained as a butcher learning more how to dissemble than assemble. He just decided one day that he wanted a model sailing ship and that he’d have a go at making one.

Allan is a self-proclaimed ‘Nautical Nut’ whose love of collecting all things marine began during his 14 years working on the Auckland docks.

Eight months and eight hundred hours later, he completed Matakana Lady, a triple-masted tall ship. I marvel at the hand-knotted rigging, miniature pulleys and canvas sails, all beautifully crafted by a man who just ‘saw it in his head’.

In 1991, Allan and his partner Lynn sailed to Kawau on a 40ft motor sailer and soon found themselves managing the Kawau Yacht Club. From Kawau they would often visit Matakana, which at the time was devoid of espresso machines and 30-minute parking spots. On a visit in 1996, Allan determined to buy the old post office and convert it into backpackers accommodation, which he duly did. For ten years, Allan took tea each morning out on the main street, a practice that saw him casually dubbed ‘The Mayor of Matakana’. A beer at the pub with a few fellow locals spilled into the idea of a ‘Matakana Mayoral Election’ as a fundraising event. Having raised $8,000 for hospice and winning the election, (there was never any doubt), Allan has continued to serve as the unofficial mayor. These days Allan drives a school bus mornings and afternoons, leaving him time to build large model boats. These maritime masterpieces are not replicas; he doesn’t use or make plans. He simply imagines them and then builds them – and they are startling.

Allan went on to build the Matakana Bell, a coastal trader which floats and motors down the Matakana River. The third in the fleet, Matakana Girl, is a scow of the type that used to be built in Whangateau and land supplies at Big Omaha and Matakana wharves. Other masterpieces in the collection include Matakana, a passenger ferry similar to the Toroa currently being restored in West Auckland and Matakana II, a 1930s vehicle ferry. Allan has created a small gallery in which he displays various vessels against painted backdrops all at the end of his drive – the one with the lighthouse letterbox next to the Matakana Motel. It didn’t take too much digging to find him but there is no doubt that he is a local treasure. Contact Allan if you’d like to arrange to view the collection (gold coin donation to hospice appreciated). Allan Harkin: T: 021 791 624

Earthspot's Festive season lamb & halloumi salad salad 1 red onion 1 lemon 2 to 3 large orange kumara peeled and chopped 2 tbsp rice malt syrup 2 bunches asparagus 200g halloumi 1 orange, peeled and segmented 3/4 cup pine nuts, toasted Seeds from half pomegranate 1 avocado Small bag rocket or spinach Himalayan pink salt Ground black pepper 3-4 lamb rumps

Basil Vinaigrette 1/4 cup olive oil 2 tbsp balsamic vinegar Half cup basil leaves Juice of 1 orange Tbsp rice malt syrup (or honey) 1 clove garlic grated finely

28

METHOD Preheat oven to 200 degrees. Scrub or peel kumara, cut into small cubes, arrange on tray, drizzle with a little olive oil, salt and pepper and about 1-2 tbsp of rice malt syrup, roast for about 40 min till soft and slightly caramelized. Whizz up all the vinaigrette ingredients in a small blender, season with salt. Finely slice red onion, season with salt and half the lemon juice, set aside. (Don’t use a metallic bowl for this). Squeeze out excess moisture before adding to salad. Cut woody ends off asparagus, steam for a couple of minutes until tender, blanch in cold iced water, set aside. Heat a pan with a little olive oil, season lamb rumps with salt and pepper, sear off until browned, finish in the oven for about 10min until medium-medium rare. Set aside to rest and slice before serving. Slice halloumi in cubes and fry off in a little olive oil until golden. Toast pine nuts in a dry pan with a little salt and pepper. Peel orange and slice into segments, put aside. Cut pomegranate and pull apart over a bowl of water, rub seeds into water, they should fall to the bottom and papery membrane will float to the top. Arrange greens on a platter or individual bowls, layer kumara, lamb, red onion, halloumi, orange slices, asparagus, avo, garnish with pomegranate seeds, pinenuts and some fresh basil leaves. Drizzle over dressing. A delicious festive summer lunch.

Note: You could omit the lamb to make it vegetarian or have sliced chicken breast or smoked salmon instead.

house of fun words

What is it about chooks that is so appealing to Mark Lewington? “I guess it’s just that they’re such classic rural icons,” says the graphic designer and artist from his home in rural Warkworth. “When I lived in Matakana there was this rogue street chicken that came with the house. I called her Mr Chicken. I took her under my wing… she was great company, I even taught her a few tricks. She soon became my muse.” Since then Mark, his partner Tabea and four year old Max have moved 10km outside Warkworth to a small bush block on the flanks of a large and imposingly pointy hill. There are glow worms and kauri snails in the bush, native fish in the stream. Tabea is German, from near Cologne. They met here in New Zealand – at the Leigh Sawmill in fact. She had come to the Leigh Marine Laboratory on a marine biology scholarship (she’s just finishing her PhD). But she always was a creative and crafty type as well as a scientist; she sews, knits and paints delicate watercolours in exquisite detail. Tabea was responsible also for the screeds of spreadsheets that saw the couple come in under budget when designing and building their own cedar weatherboard home. “We found this free online design software and just drew up our own plans,” she says. “We thought – hey, we are both creative people who

are reasonably technically minded, how hard can it be? And it was actually relatively easy.” The pair got some great advice from a local engineer who told them if they stayed within the NZS 3604 building standard to avoid heavy engineering they’d significantly cut costs. So they set about designing with this in mind. The house was designed in harmony with its surroundings and to capture the bush and mountain views. The best part of their budget was spent on beautiful windows with deep-framed sills, and dark-stained, solid cedar cladding. They did other clever things too, like ensuring that all the plumbing was in one place to cut down on expensive pipework. “We decided that because it’s a fairly compact build anyway, we didn’t actually need an ensuite, it’s just an unnecessary expense,” says Mark. “I mean, why do we need ensuites everywhere anyway? When did we become so… needy!?” The ply walls are practical for many reasons: they’re fairly bomb-proof for a four year old hurtling round on a bike, they’re a good neutral backdrop for art, they’re strong enough for screws to go in, you can hang anything anywhere, and there’s little or no maintenance involved. Mark is a self-proclaimed ‘registered master hoarder’; Tabea rolls her eyes behind his back. “I can’t wait for the big shed outside to be

finished,” she says. “He can unpack all his collections and set them up out there!” She flaps a hand in the general direction. “My vintage skateboard collection is up to about 70,” says Mark, “and I’ve got enough old road works signs to divert traffic. Tabea busted me unloading them so I pretended I was going to use them as windbreaks for her veggie garden – and I did.” Mark is hotly in demand as a sign writer and graphic designer but he’s keen to make more time for art. Chooks do indeed feature highly – painted on old ironing boards, table tops or fridge doors. But there’s also a Warhol-esque box of Beehive matches on an old fire-hose reel door; a feisty gull on a piece of worn blue driftwood. He’s committed to never again painting on to canvas. “There are just so many other things that are more interesting,” he says. “Painting on found objects can sometimes add that nostalgic connection to the work. Often the surface inspires the subject.” A recent project involves defacing a series of vintage portraits with animal masks. We like a 1980s portrait of the Queen wearing a corgi mask. Mark also loves industrial hospital stuff – his latest acquisition is a 1970s optometrist’s chair. His favourite blue wheelchair sits at the table; he leans

back in it while drinking coffee. The cabinets above the kitchen bench are from a hospital, and he’s added a little strip light under each. Household light fittings are generally larger than life, often modified. Many have been found at local vintage stores, the Hospice garage sale in Warkworth or on TradeMe. Or simply, right place, right time. He’s also very handy. He made the laundry and bathroom shelving from galvanised piping and slabs of lovingly sanded old wood. He’s made loo roll holders from concrete and steel pipe, and embedded vintage Dinky cars in them, towel hooks from vintage taps, drawer handles from the heads of All Blacks action dolls. There are still plenty of things to do – a ‘proper’ deck is yet to appear, but Mark has set up an admirable multi-level outdoor area using a mix of wooden pallets, old scaffolding planks, which young Max loves. He especially loves it when they light a fire in the big old digger bucket and gaze over the flames at the silhouette of their mountain against a dark sky full of stars. There are no chickens yet to share their little piece of paradise with, but they’re working on it. www.only.co.nz

AMBER rose A rich and fruity Christmas plum pudding This fruity pudding is a delightful version of a pudding my Grandma used to make. It will result in a traditional, long life, Christmas plum pudding that is dark, rich and sticky with fruity, spice-infused notes of pure Christmas heaven. Serves 6 to 8 85g spelt flour (or plain flour) 1 teaspoon of baking powder 1 teaspoon of mixed spice 140g shredded suet (or cold butter) 85g breadcrumbs – fresh white ones are best for this 140g dark muscovado sugar (or 160g coconut sugar) 120g raisins 140g currants 160g sultanas 20g mixed candied peel, roughly chopped 1 small carrot, grated Finely grated zest and juice of 1 small lemon Finely grated zest and juice of 1 small orange 2 teaspoons of black treacle (or dark honey) 3 tablespoon of sweet stout Optional: pomegranate seeds to decorate Brandy or marsala to feed In a large bowl stir together the flour, spice, suet or butter, breadcrumbs and sugar. Next tip in the fruit, mixed peel and carrot and stir thoroughly. Add remaining ingredients and mix well. Spoon into a well-buttered 1.2 litre ceramic pudding bowl (with a buttered disc of greaseproof paper in the bottom) and press down well, leaving enough room for the pudding to rise a little during steaming. Cover with another circle of buttered greaseproof paper, then with pudding cloth or foil and tie securely with string. Carefully stand the bowl on an upturned saucer in a saucepan and half-fill saucepan with boiling water. Cover tightly and steam for 8 hours, topping up the water as necessary, if the water starts to run low. Leave the pudding to cool in the pan. Remove the pudding from the pan and discard coverings. Then cover with fresh greaseproof paper and cloth. Store your pudding in a cool, dry place until required – you can feed it with a few tablespoons of brandy or marsala once in a while. Before serving, steam again for 2-3 hours. To serve, turn the pudding upside down onto a serving platter and decorate with flowers and optional pomegranate seeds for festive colour. Serve with lashings of hot, home-made vanilla custard.

Mormor’s apricot cream cheese scone

Junction popped into Mormor’s on the way back from up north this month and partook of exceptional scones and damned fine coffee as we browsed the funky vintage bric-a-brac. We asked owner and baker Lia de Koster (above) to tell us her story… “Mormor’s is named in honour of women, especially my grandmother, Rona Gabrielson. Growing up, we knew her as Mormor because her father was Norwegian and Mormor means ‘mother’s mother’ in Scandinavia. My mum, Suzanne, raised my sister and I in Sydney. Mormor would send love parcels wrapped in brown paper and string. Inside were hand crafted gifts. Shiny little treasures girls love: knitted multistriped vests, long, girly tiered dresses (it was the seventies), ribbons and Buzz Bars. When Mormor visited it was farm cooking, butter, meat and veg and of course, scones. For years I made hard little rocks which I called scones. My question to Mormor – “How do you rub the butter into the scones?” “Simple, honey: roll it in the flour and grate it.” The secret is out.

Vintage crockery and silverware for sale.

“My professional background is teaching. I loved it. The students taught me to give life a go, to be gentle and to take risks. But in 2009 I too became an Oma/Mormor. It made me want to take charge of my own life. Hence in 2012 Mormor’s was born. And now I love my own learning time. I want to learn to be gracious and kind to all people. I want to slow down, enjoy my age, practice one thing at a time. Mormor’s gives me a place to learn these things. “I run Mormor’s alone, but nothing here happens without a community full of great support. When driving four minutes to work and being caught in a two-minute traffic jam, I reflect on what I love about Kaiwaka. I love all the eclectic people doing their own things to bring the community together – local business people and volunteers who give and give – there’s so much energy here. What I especially love in Kaiwaka is no McDonald’s, KFC, Warehouse or any other chain. We’re real people doing our best. You just have to love it.” Colourful coffee cups.

Plume’s new Summer Tasting Menu is better than Christmas because each and every one of the courses is like an exquisitely wrapped gift – and you get to unwrap six of them. Plume’s head chef, Atesh Ram, (below right) has designed a classic menu with some clever twists, presented as a series of dishes painted onto the plate in summery colours. Prior to coming to Plume, Atesh worked with many internationally renowned chefs in the kitchens of the Stamford, Langham and Heritage hotels. It’s a short distance but a great leap from being one of many in a large hotel kitchen in Auckland to being responsible for every aspect of the intimate dining experience offered at Plume in Matakana and Atesh is has clearly excited by the opportunity. He’s unleashed his creativity on the Summer Tasting Menu. The experience begins with a goat’s cheese terrine with a pistachio crumb base, served with a savoury berry compote, red pepper coulis and preserved lemon chutney. The Runner Duck Estate 2014 Chardonnay was the perfect companion with this and in fact, as promised by our very helpful waitress, good company throughout the meal. The grape sorbet, made with the Syrah and Sangiovese grapes from Runner Duck Estate vines, provided a refreshing resting point before we moved on. The pork tenderloin (right) was perfectly cooked, perfectly tender; complemented by the rich Calvados sauce and horseradish cream, and served on warm, mustardy pickled savoy cabbage, reminiscent of mum’s piccalilli. The final gift from Atesh’s kitchen was a passionfruit torte with mascarpone. Take someone you love and languish in luxury, far from the madding Christmas crowd. what’s new at the stables + smiths bar

Woody Richards and the team at The Stables and Smiths Bar have a whole lot of changes going on. Over the last 18 months, various transformations have been instigated which are now coming to fruition just in time for summer. Smiths Bar has become a bit of an institution for locals and visitors, who love its relaxed vibe, ‘vintage industrial’ interior and varied menu of small plates and platters. In fact, they love the small plate options so much that this style of dining will be part of the new menu at The Stables. You’ll soon be able to sample them in a couple of different ways here: as entrées or sharing plates.

This dining option will work well in the newly refreshed outdoor venue at The Stables – The Garden Bar. This is out back, by the horse arena – new seating and macrocarpa slab tables, plus a few leaners dotted around to provide a chilled place to hang with your mates on a Friday evening. You can rent the area out for a private party, too. Which brings us to the very latest, brand new venue-to-hire at the complex – The Saddlery. This is a separate room which was indeed once home to a horse tack business, but now houses a cosy private room, which just happens to have a huge AV setup. It seats 40 for private dining and is also a great space for conferences. Its most popular use

however may well be as a spill-over for Smiths for those big game nights – that screen really is enormous… Summer’s coming, so it’s good that both places are perfectly set up for long warm evenings under the stars. The huge lawn in front of the Stables will be open for business – your little darlings can hurtle about till their heart’s content. Woody is even thinking of getting some kid wranglers in for the early evenings to set up some particularly exhausting games, while Mum and Dad have a drink and a bite to eat in peace. And round the corner at Smiths, that expansive deck is just raring to go – with exciting new small plates and fresh summer cocktails.

Woody is also extremely happy that wedding stylist and floral genius Annie Oxborough has moved in recently just over the road. He’ll be recommending her for all your wedding requirements at The Stables, and she’ll be able to pop over to work closely with the bride and groom. Too easy. It’s a bit of an ongoing motif for everything about The Stables and Smiths really. Eating, drinking, team building, getting hitched or just relaxing with mates – with so many options, it’s all just too easy. www.stablesmatakana.co.nz

Left to right: Terry Nuthall (left) and Joe Koppens; food rescue boxes at the ready; regulars on the roster, Lois and Clive Burton head out with today’s donations.

Housed in the old Courthouse in Warkworth (rent-free, thanks to support from the Justice Department and MP Mark Mitchell) is a fine new initiative which a number of local families are already benefitting from. Food Rescue is a joint venture between the Rotary and Lions Club, and representatives of the initiative Joe Koppens and Terry Nutthall are keen to let people know about it. Joe’s an ex-barrister with a penchant for big motorcycles and old wine; Terry is an ex-banker who represented NZ in orienteering and is involved in the upcoming World Masters Games. Unlikely candidates for sorting food parcels, but the pleasure they derive from helping others is unmistakable. Food Rescue picks up surplus food, which would otherwise go to piggeries or landfill, and gets it to those who need it. The main contributors are New World and Countdown supermarkets at this stage. It’s only been going since August and they’re already averaging around two tonnes of food a month. Food Rescue is keen to hear of good food that would otherwise go to waste – it needs to be within its use-by date of course, and it can’t have been offered on a plate to others. “But if you’ve over-catered for a function, or you have excess fruit or veges in your garden, let us know. We can even come and harvest it for you!” says Joe. Food Rescue uses an existing church system to distribute goods. Volunteers collect, check and store the food overnight and the next day it’s delivered to Roger Mackay at Mahurangi Presbyterian Church who heads a team with ties to many community projects. One is a group called

Food Link, which is supported by all other major churches in the area. Food Link sends out its own non-perishable food collections, plus the new, fresh Food Rescue donations, to around 12 local outlets: the Women’s Centre, the Warkworth RSA, and Papa’s Kitchen in Wellsford (who do a free meal on a Monday night) to name a few. From there the distribution fans out to those directly involved in the community who know well where it can best be used. Roger Mackay says that Food Link usually sends out up to 160 Christmas boxes a year to families in need, but this year they’re doing it a bit differently. “We’re inviting the community – businesses, individuals, families or groups of families perhaps, to take a more hands-on role. Anyone can email us for a box and a basic list of what needs to go in them (you can add special treats if you like!). If you fill the box and bring it back by the December 16, we’ll make sure it gets to the right people.” E: warkworthfoodrescue@gmail.com - to organise pickup of donated food E: admin@mahu.org.nz - to pick up a Christmas box and food list from Roger FB: Warkworth Rotary/Lions Food Rescue

Somewhere amongst the tacky tinsel decorations, malls packed with desperate shoppers stacking trolleys with cheap, plastic junk and the unexpectedly speedy arrival of the end of the year, the true meaning of Christmas gets lost. Christmas is a time for family fun (or feuds), and presents covered in glorious wrapping paper (we use more than 27,000km of the stuff over the festive season) don’t have to be the focus. Here’s how: MAKE: Chutneys, crafts, body scrubs – the internet is stuffed with recipes for handmade treats. Invite a friend over, drink some mulled wine and make a day of it! CREATE: Now is the chance to print off those photos languishing in your computer. Pop them in a secondhand-store frame for the perfect gift. FAMILY CHALLENGE: Handmade presents? Secret Santa for just one family member? Op-shop-gift challenge? Get the whanau onboard! EXPERIENCES: A meal out, a boat trip to Tiritiri Matangi, a wine tasting... These gifts won’t end up rotting in a landfill!

Salty-dog swimmers please flick to the next page because this article ain’t for the converted. This is for you post-Jaws generations who yearn to go in over your heads but are too afraid. Once you internalize that a) you’re more likely to be killed by a vending machine, and b) it’s just your mind messing with you, ocean swimming can become a moving meditation: Just you, gliding, coastline to the right, islands to the left, shafts of sunlight on rippled sand below, bubbles pearling off finger tips, humming on the out-breath, rhythmic, lulling, silent. Dive into your inner dauntlessness with these two swims. Omaha Ocean Swimmers meet at the Omaha Surf Club on Tuesdays 5pm and Sundays 9am. Swims run parallel to the beach so you can get out and wander home. Contact: Lee Georgetti 021 913129. Facebook: Omaha Ocean Swimmers Whangateau Harbour. Peter Panyoczki is in the final throes of preparation for his new exhibition when I visit him at his home in Kaiwaka on a sunny November morning. His calm studio is full of new works – twelve large portraits gaze with expressions of faint astonishment into my eyes. “I asked them all to think about the miracle of their own existence and then look at the world as if for the first time as I took the photo,” says Peter. Tall and elegant, with intense eyes behind eccentric scarlet spectacles, Peter has a strong European accent which sits well with his courtly demeanour. Hungarian-born, he and his parents escaped the revolution there in 1956. After a short stay in a refugee camp they were placed in Switzerland; he gained his Master of Arts at Zurich University. Kaiwaka has improbably become his second home – although he travels regularly to Europe to exhibit, he loves New Zealand and enjoys a sense of freshness here which impacts on his art. His new exhibition is called Origins. It’s on until January 22 at the TSB Bank Wallace Arts Centre at the Pah Homestead in Hillsborough, a

lovely old villa (with an excellent café) set in sculpture gardens. There are two parts to the show: one is the Wallace Trust’s complete collection of Peter’s works – sculpture, prints, lightboxes and the lovely mixedmedia textures which characterise much of his work. Sir James Wallace has been an enthusiastic patron of Peter’s since he came to New Zealand with his young wife in the early 1990s (Tatjana is also a creative; a jeweller now well-known in Australasia and Europe for her intelligent, original work). The second part of the show is Peter’s new project; it’s very topical in the wake of Brexit and the American election. It looks at culture, language and the nature of being. Each of his twelve subjects are from different backgrounds. Their portraits are printed onto a textured cement surface; their stories partially visible, set in type underneath. The prints have been further worked to appear old, degraded by time… and drilled right through each portrait is their story again – in Braille. The tiny pin-holes allow light from dimmable light boxes behind to flood through their faces like a sky full of stars. “Braille has often featured in my art,” says Peter. “I like the look of it, it makes me think of constellations, of interpreting patterns… but I also work with Braille because I feel that western culture is becoming a little blind – to the natural world and the spiritual.” Continuing with the theme of language, Peter has also built a threemetre tower as part of the exhibition. It’s a reference to the Tower of

Babel, which in the Bible was the catalyst for the beginnings of different languages. The book of Genesis has the story: after the Great Flood all people spoke the same language (which was also the language of birds). But God punished them for building the Tower of Babel by making them unable to understand one another, and scattering them far and wide over the earth. Peter’s tower is steel, embellished with many real bird’s nests supplied by helpful Kaiwaka friends and neighbours. Audio recordings issue from it: his subjects’ stories, in English and in their own languages; birdsong and also, hauntingly, recordings from NASA of the sounds made by radiowaves around planets in our solar system – which sound like the twitterings of birds. “I have always been interested in the miracle of existence,” Peter acknowledges. “Certain universal concepts can make us feel small, but we must never feel meaningless. I feel there’s joy in being part of a whole!” tsbbankwallaceartscentre.org.nz A beautiful new book on Peter’s work will be launched at the exhibition. Entitled ‘Surface and Beneath’, it will be available to buy there and on Amazon. Peter’s work is available locally through the Vivian Gallery. www.thevivian.co.nz

African beats at Leigh Sawmill café words

Visualize dancing warriors, barking guttural proclamations, with intimidating and frightening facial expressions and body language. The haka? Well, yes, but also Burundi’s ‘intore’. It’s a connection Burundian Nadine Nahimana identifies between distant cultures. She seeks to “cultivate, educate and refresh communities through shared cultural knowledge.” ORIKoL (her DJ handle) brings Z ə le’s Ambassadors’ Project , a compendium of artists from Burundi, Rwanda, Congo, Ghana, Zimbabwe, Zambia, Mali, Nigeria, Ivory Coast, Sudan, Uganda and Ethiopia to the Leigh Sawmill Café on Saturday 3 December. Promoting expression of this cultural heritage of artists is Nadine’s (right) mission. We broadly reference ‘African rhythms’, but Nadine points out that each African country, even each region, has its own beats, each with its own dance. She can pick out a particular Congolese beat that travelled 2,000km to Nigeria to surface in Afrobeat, which sprang from traditional Nigerian and Ghanaian music, highlife, and American funk and jazz. That synthesis, bouncing back and forth over mountains and oceans, embodies multiculturalism. Denizens of the South-South Pacific ‘a thousand miles from nowhere’, Kiwis roam the world, hunting and gathering culture. Intrepid New Zealand musicians, actors, dancers, and visual artists build their careers

overseas and bring cultural experience back, informing their local work, enriching our enjoyment. The natural charms of Kiwiland attract international artists seeking to expand their horizons and to enjoy a second summer. International music stars play New Zealand venues. There’s also the filter-down effect, with local bands playing blues, jazz, funk, soul, country, Latin and bluegrass… culture imported from afar. After all, OE veterans acquire exotic tastes when abroad. Back home their minds, eyes and ears still crave novel stimulation. One delight of cultural novelty is recognizing inter-cultural connections. Human evolution emanated from Africa; likewise, African culture deeply informed western art. Africans brought their music to the Americas, and it morphed into blues, bossa nova, salsa, samba, and tango, out of which sprang jazz, pop and rock, often by way of a feedback loop between Britain and the Americas. You’ll perceive the cross-pollination of R&B, Hip Hop, Afrobeat, and current African culture at this event. But, let’s not forget the delights of getting lost in propulsive and compelling rhythms…wear your dancing shoes! Leigh Sawmill Café | Sat 3 Dec, 9pm | Tickets $50 eventfinder.co.nz
