All countries and regions of the world have a certain cuisine that is held dear by its people. Since food is an intricate part of the cultural makeup that defines a country, people fight hard to protect the integrity and uniqueness of what originates with them. Food is the great unifier. It is oftentimes the first thing visitors encounter and it generally leaves a lasting impression. People even go on food pilgrimages in search of the best or most unique food a country has to offer. Food isn’t just food in many places – food is culture. In France or Italy, this means cheese, pasta or wine while in the United States it’s apple pie and barbecue. On Okinawa however, sushi and Okinawan soba take the cake. There are many ways in which Okinawa distinguishes itself from mainland Japan, one of the foremost being through slight changes to traditional Japanese cuisine, maintaining its own identity within Japan. This is primarily seen in Okinawan soba and sushi. There is a deep history surrounding these two delectable items and how they took root in Okinawa differently than mainland Japan.

Initially when you think of sushi, you may think of California, Rainbow or Spider rolls with combinations of fish, vegetables, rice and sauces forming one colorful roll, but that’s not the common sushi roll on Okinawa. You can certainly find those intricate rolls, but it is more common to have sashimi style sushi Historically, sushi was not as popular on Okinawa as on mainland Japan because the hot temperatures and lack of refrigeration made it hard to keep the raw fish fresh. But as time went on, it grew in popularity and is now commonly found around the island.

Recently, I was given the opportunity to attend the Cooking 101: Sushi tour through Kadena Information, Tickets & Travel and learned firsthand how to make different varieties of sushi. The instructor explained every step of sushi making from perfecting the rice to fileting fresh Yellowfin tuna. We made California rolls along with a variety of nigiri with tuna, salmon and shrimp. Once we completed the rolls, we taste tested our creations while the tour guide explained more about the types of fish that are found off the coast of Okinawa and the surrounding region. We concluded our Cooking 101: Suishi trip at the Awase Fish Market where you can find a wide variety of the freshest fish and seafood available on island. A couple people on the tour even bought more fish to continue working on their sushi making skills at home! VENTURE 11

Next on our Okinawan foodie adventure, we explored the history of Okinawan Soba. Can you believe there is a Japanese Fair Trade Commission that had to sanction the Okinawan soba noodle? Up until 1978, it was widely accpeted that Okinawan Soba was not true soba. On October 17, 1978 all of that changed and the commission conceded that the noodles everyone in this prefecture eats on a practically daily basis can be called soba. Mainland Japan hesitated to name Okinawa’s version of soba legitimate because it contradicted the technicalities of their own definition of the noodle.

Originally, soba noodles were made from a type of buckwheat called sobako, which gives it a bit of a gray tinge. The noodles are then stretched and cut thin. Okinawa’s version of soba contains no buckwheat at all and is made wholly of flour, which is why Japan was disinclined to allow it into the soba hall of fame. Understandably so, Mainland Japan fought hard to maintain their technical definition as the standard. But Okinawans wanted the recognition for their unique version of the dish and continued to prove their soba worthy of the title.

What is the FootBowl League? The Kadena FootBowl League is a unique bowling league that can be enjoyed by bowlers of all skill levels ages 18 and over. This league is compiled of up to 32 teams of four and each team carrying the name of their favorite professional football team. Every week, each bowling team bowls three games against the team that their assigned professional team played that week. So, if the Cleveland Browns played against the Pittsburg Steelers in real life, then those bowling teams would play against each other that week in the league.

How are teams assigned? Teams are assigned at the draft during the annual Tailgate Party held at Emery Lanes prior to the beginning of the season. The choosing teams are selected in order of which their franchise fee is received, so you want to pay early so you have a better chance at choosing first! Franchise fees will be accepted until the day of the Tailgate party on Saturday, 20 August. A member from each bowling team must attend the draft to claim the professional team they wish to represent. 22 WWW.KADENAFSS.COM

Who can play? Anyone! As long as you’re over 18 and have base access, you can play!

I’m not a very good bowler, can I play? What’s nice about this league is that it provides you with a handicap, so even if you aren’t very skilled you have a chance at your team doing well. What’s also nice is that after playing three games a week for six months straight, your skills are bound to get better. Need convincing? In my experience, my average score went up from 75 per game, to 125 per game.

Are there prizes? Of course! Every week the game is briefly interrupted by the Lucky Train and one league participant will win an awesome prize! Prizes range all the way from practical housewares to one-night stays at fancy resorts. At the end of the league, the top teams will also get a portion of their invested funds back. VENTURE 23

Last but definitely not least, one of the best things about the FootBowl League, in this foodie’s opinion, is having easy access to the delicious Burgers of the Month at Strikers Café. Last year, I was never completely on my game until I had a burger. It was the fuel I needed to really play well. August’s Burger of the Month is the Crispy Salami Burger. There’s nothing like a juicy beef patty topped with Mozzarella cheese, crispy baked salami, lettuce and a homemade sun dried tomato pesto to get your bowling game up to par.

Like a Vincent Van Gogh (pronounced the right way) type of artistic? Are you? That’s amazing. I’m not. Well, no, I take that back, I’m more of a ‘hey, look at this burlap! I wonder how I can make my house even more like a shabby chic vintage country barn than it already is’ type of artistic. And sometimes I can draw. For our purposes, let’s call it crafty. I’m crafty and I’ll admit that. I’ve homemade plenty of decorations in my day and I like to think I have the proverbial eye for aesthetics. But there are those living among us who are truly artistic. They can take a blank canvas and turn it into the world’s next great masterpiece, sculpt their own version of Venus de Milo or even use technology to create beautiful digital art. You see that title up there at the top of the page? Yes, the one on this page…that’s hand drawn lettering turned into vector art. That definitely counts as art!

E

veryone has different levels of artistic capabilities. Some come by them naturally, others have to practice and others fall somewhere in between. My fine arts capabilities are definitely low on the totem pole but I have talents in other artistic areas. I love to draw, do hand lettering and decorate. That’s where my artsy side shows through. I may not be a painter, sculptor or a graphic artist – though I may try – but that’s okay. Sometimes in life, we have to realize that we are good at some things and maybe not as good at others. But play to your strengths and practice at the others. Any time you’re using your creativity, you’re an artist. Ever get in the kitchen and create a new recipe out of an old one or even rearrange your furniture? You may not feel like an artist with a raspberry beret and a paint palette but you used the right side (that’s the correct and right side) of your brain. You don’t have to be DaVinci, Leonardo, Michelangelo or even Donatello to create something beautiful. Beauty is, as we know, in the eye of the beholder and often comes from the sense of accomplishment that accompanies a finished project. Perhaps to another, the sketch of your dog that took hours isn’t classically beautiful and maybe she looks more like a horse than anything else. But to you? To you she’s perfect.

S Create Your Calm Down time… Two words that rarely make their way into the description of my everyday. Being at the Mud Factory inside Arts & Crafts, I was able to pick up a brush and press the imaginary pause button on my life. While I was painting the rabbit, I silenced all of the little thoughts that constantly run through my head. Life’s demands seemed to float away for just a little while and I was able to put the proverbial pen to paper and create something. In this case it was brush to ceramic, but once I finished I felt relaxed, as if just a tiny bit of weight lifted off of my shoulders. - Jana

Create, Then Change Sometimes in art you start not really knowing what you want to do. Part of what makes art exciting is the unknown. You don’t always know what your finished product will be or look like when you begin. You may start with one idea and end with a completely different concept. When I painted the Kokeshi doll at the Mud Factory, I started out with a pastel, mermaid-esque design. My finished product was darker with more red. It’s okay if you make mistakes or completely change your design in the middle. It’s normal, actually! There are no mistakes in art. It is about the creative process and being free in the moment. - Shelly

Create With Color I didn’t really start with a plan when I chose the hen I just knew I would be able to use a lot of color and, at the time, that was good enough. My style in décor, fashion and accessories does not really allow for beige, greige or taupe; neutrals are nice, they’re just not for me. So I used as many colors as I could find! Though the hen was more challenging than I had initially thought she would be and oddly enough, my usual attention to detail didn’t quite carry over to this project, I truly enjoyed myself. I put color on a blank canvas and created something…and there’s something to be said for that! - Rachel

Or perhaps mouthwatering braised beef atop a bed of white rice, smothered in a rich and buttery gravy topped with two sunny-side eggs better matches your ideal meal. Oki-Ohana Hawaiian Flavs will take Okinawa by storm this month with a menu made fresh daily and prepared to order. We will feature our signature Pork Belly Sandwich, as well as innovative twists on traditional Hawaiian favorites such as Loco Moco, Garlic Shrimp and Kalua pork. In Hawaii, “ono” is the popular term used describe delicious food, and therefore we pledge you’ll find Oki-Ohana to be “Onolicious!” Over the next several months, the 18th Force Support Squadron will roll out more gourmet mobile kitchens. Each of these food trucks will offer unique pairings such as KoreanMexican fusion. “These food trucks will allow us to kick start our culinary innovation and will, in turn, better the Force Support Squadron’s ability to meet the changing needs of our community,” says Mike Baker, Kadena’s Chief of Community Services. We are very excited about becoming a part of the Food Truck Nation, with these additions to Kadena’s food portfolio. The Oki-Ohana Food Truck will be posting a daily Twitter message on our location!
