First, take a moment to look at your beer. What are its qualities? Is it dark and cloudy or is your beer of the blond persuasion? Second, swirl it around a little… just a little, you don’t want to spill! Third, take a whiff! Half of what you taste is in what you smell so try taking two quick sniffs through your nose and then one through your mouth. Fourth and finally, take a sip! But don’t swallow right away. Allow your taste buds to pick up every single little flavor and texture!

First, a narrow-mouthed glass is best, but work with what you’ve got. Second, swirl the contents around and take a little sniff off the top, but don’t get too close because then you’ll be overwhelmed. Make sure to sniff more than once as each time could reveal new aromas. Third, have a taste! Make sure not to drink too fast, though. Take small sips and let your taste buds really soak in the different flavors. Once you’re beyond the initial shock, you’ll be able to truly enjoy all the flavors left behind. Fourth, the big question… Should you add water or ice? The answer is that it’s all up to you. It’s important to try things without water or ice first just to experience their natural flavors, but sometimes adding water can actually enhance the taste. Ice on the other hand can inhibit some of the characteristics.

First, empty your hands and arms of anything you might be carrying. Second fill your arms with as many bacon dishes that you can carry. Finally proceed to eat your weight in savory, delicious, crispy BACON!

travel Why did you pick Cambodia & Vietnam? Angkor Wat and the surrounding temples in Cambodia were a bucket list for me and Vietnam was on my travel companion’s list.

What is something you absolutely have to eat when in either Cambodia or Vietnam? Pho is probably the most famous of classic Vietnamese cuisine. I usually just stop when I’m hungry or something catches my eye. However, my recommendation for foodies is to definitely do some research before you go. Some of the French/Vietnamese fusion dishes had real potential.But you have to know what you’re looking for. Otherwise, ordering food can be overwhelming.

What’s your favorite thing about traveling? For me, it is an escape from obligations and anticipation. You can enjoy things as they come. You get to form entirely brand new experiences without any expectations. Without knowing any more than a name, you can depart and enjoy all that lies ahead.

What new things did you try that you maybe wouldn’t have otherwise tried outside the bounds of travel? We took an awesome bus ride between Hanoi and Sapa Valley. It had two levels of seats, but they fully reclined. New favorite method of travel.

What was your favorite moment or part of the trip? My favorite part of the trip was hiking through the rice terraces in Sapa Valley, Vietnam, but my favorite moments were staying on a boat in Ha Long Bay and receiving “room service” through the window of my room from an adjacent boat. Were there any misconceptions you had about either Cambodia or Vietnam prior to your trip that were proved wrong? I don’t know if I went in with too many preconceived notions of what either country would be like, but I certainly didn’t expect to be “Frogger-ing” my way through Ho Chi Minh City. It had the densest scooter traffic of anywhere I have ever been. We actually had to get tips from the locals just to feel comfortable as pedestrians. What is something interesting about Vietnam or Cambodia that the average person doesn’t already know? Maybe most people already know this and perhaps this was my actual misconception, but conversational English is very widely spoken in both countries. For whatever reason, I wasn’t expecting that.

Did you pick up any words or phrases while in either place? I learned a few words, but didn’t really retain much. One of the first words I learn when I travel is the word for ATM. Cambodian especially didn’t come off as a particularly easy language to learn. The Khmer characters looked similar to Thai, whereas Vietnamese is at least based off Roman characters. One of the English teachers who had been living there for nearly six months was still struggling with the basics. Ha Long Bay, Vietnam

I was particularly envious of one woman who moved to New Zealand, bought a van, and roamed about exploring for eight months.

Did you learn anything new about the history or culture? I think I had a fair bit of knowledge about the 60s and 70s, but I certainly learned more about the First Indochina War and the history of French/Vietnamese relations during a couple museum visits. Did you find any places on your trip that were more frequented by locals than tourists? I think our trip had an emphasis on tourist locations. Part of the draw of Sapa Valley for a tourist, other than the breathtaking views, is the open invitation from most of the villages to stay and share in the community.

What was your favorite meal? From a purely gastronomical perspective, I’m not sure it would win any awards, but my favorite meal was the dinner with a local host. Bottomless local dishes and the enthusiasm of our host definitely put this meal at the top.

Was there culture shock? The scooter traffic. No question.

How did you work through the language barrier? There were enough casual English speakers that general meanings or requests could be easily conveyed. Just accept that occasional miscommunication is a certainty if you don’t speak the local language. That keeps it exciting.

travel People say travel can change your life - do you feel you experienced anything on your trips that changed your perspectives or attitudes about anything? I grew up traveling, so I think it has done more to shape my perspectives than to change them. Now that you’ve been to Cambodia & Vietnam what’s next on your travel bucket list? I have a trip to the Netherlands and the Philippines on the books. I have more of Mainland Japan, Thailand, and New Zealand that I want to explore before I leave, too. For bucket list purposes I still need to make it out to Taiwan. It has 286 mountains that breach the 3,000 meter mark… sign me up!

Be one of thousands to participate in this annual event that holds the record for world’s largest tug of war rope in the Guinness Book of World Records! 26.355˚; 127.74˚ are the precise coordinates of my very first East China Sea ocean dive. It was at a dive spot called Jam at the Sunabe Seawall. I always looked at the Seawall as beautiful, but certainly not the clearest water I’ve seen on the island. We did a walk-in entry, snorkeled out and did our five-point descent. The Seawall proved me incredibly wrong. It was figuratively jaw dropping...I would have literally dropped my jaw, but my regulator would have fallen out! I was in complete awe of the colors, movement and textures that were right in front of me. I floated for a moment taking it all in; it truly was spectacular. The beds of soft, multicolor coral swayed slowly and stretched as far as we could see. We spotted a lionfish, some Christmas Tree coral, and a clownfish protecting its anemone. I forgot for a moment that I still had to complete a few required exercises, but none of it really mattered anymore because I was completely lost in the experience; thrilled and wholly entertained. After our group successfully finished the same skills exercises that we practiced in the pool, we began our ascent back to the surface. If you could choose anywhere in the world to get SCUBA certified, where would you go? Many would say right here in Okinawa. It’s known as one of the best diving spots in the world, ranking highly among divers

because of its pristine waters and incredibly diverse sea life. It raises the question, why not get certified here? It’s the same question I heard time and time again after our arrival to Okinawa. I’m not going to lie, I was a bit apprehensive to start – between the equipment and its weight, the SCUBA jargon and learning how to breathe underwater, I was intimidated. But that’s natural. Before getting started, every time I saw a diver getting geared up, my first thought was always, “look at all that trouble people go through to be like fish!” After months of finding excuses, I finally gathered the courage to get started. I went down to Kadena Marina and enrolled in the class. Knowing next to nothing about the sport, I grabbed my dive packet and got studying. The PADI Open Water SCUBA certification class is generally a week long and consists of two pool dives and two days of open water diving, with two dives each day. I initially thought it would be hard to schedule around my workday, but the instructors are incredibly flexible. All of the dive masters at the Marina want the experience to be the best it possibly can for the students – they even worked with a few participants one-on-one. Their goal is to make sure participants are comfortable every step of the way. Once I completed the bookwork and DVD, I reviewed the knowledge checks with my instructor and had my first pool dive.

The pool dives are definitely the nitty gritty part of the class; they’re long and tiring but worth it. There are certain skills that you must know to be a safe diver and they have to be put to practice in a controlled environment where the instructor can give his undivided attention. We went over several different skills such as removing our masks underwater, proper weight distribution, buddy breathing, and emergency simulations. After the first night, I went home very tired but so proud of myself! After going through the motions a couple of times, everything that I learned in the book made much more sense and it started to feel natural. During the second pool dive, everyone must pass a swim test and complete a few critical exercises to graduate the course. After another pool dive night, we were one step away from getting into the ocean. We had one more class beforehand to learn about dive charts and eRDPML devices. These help determine the appropriate amount of time one should stay underwater to prevent decompression sickness. Once we all practiced and understood the process, we were ready for the ocean.

After my first ocean dive, I was full of adrenaline. I was so excited when we got to the top that we had done it; we had accomplished something so great! We waited the appropriate time for the surface interval and went right back down, this time feeling even more confident in our new abilities. After the dive, I completed my final exam and each of us had a photo taken for our new PADI certification card. The experience was well worth the time because now I have this certification for life! Of course, you can continue your certifications all the way up to Divemaster to conquer the seas with all of your SCUBA knowledge. I get it now – I get why people put on all of this heavy gear just to be like fish for a while. The underwater world is fascinating. People travel great distances to get to do the things that are right outside our front doors. Whenever I am out exploring the ocean or discovering a new part of the island, I pinch myself a little bit because this is normal life now, and that’s pretty awesome.

I’m a waffle gal. Always have been, always will be. I grew up in a waffle house. No, not the actual restaurant, but in a house that preferred waffles to pancakes; one of time’s biggest rivalries. However, as much as I love waffles, bacon and especially coffee, breakfast was never my thing. But oddly enough, if you change the name and call it brunch, I’m there. It’s not that I’m not a morning person – I actually love the morning. It’s just that until about 10:30 am or so, coffee is sufficient for me. But, 10:30 am or so is also about when breakfast turns into brunch. As I sit here at my desk, drinking my morning coffee (because it’s not quite 10:30 am) and recounting the wonderful brunch I inhaled at the Kadena Officers’ Club, I can’t help but drool just a little bit. As I said, waffles are my thing. Especially with real maple syrup and (gasp!) real butter. Real butter is also my thing. And let me tell you, if you’re going to the brunch at the Kadena Officers’ Club, you may as well go straight for the real stuff. This is not the time to conserve calories, my friends. This particular buffet is special for many reasons, the first of which being that it’s not strictly a breakfast buffet. When I go to brunch, I tend to waffle between (ha!) wanting breakfast or lunch…or possibly both. I mean, I know thousands of years ago when the brunch nomenclature was carefully nomenclated, it was a simple mash up of the previously named events with the intention of serving both food genres and their respective groupies. And that’s the beauty of brunch isn’t it? It’s both breakfast and lunch. Fool proof, right? I know, I know, this is getting repetitive, but it bears repeating now.

food The Sunday Brunch at the Kadena Officers’ Club is Templeton’s dream come true – it is an endless smorgasbord of savory and sweet to satiate even the largest appetite in your family. There’s an omelette station with anything you could possibly want to put on an omelette and there are regular eggs, too, for those of you who want to stay classic. Or, there’s fried rice and yakisoba if you prefer more local flavors. I went for the waffles. Because with waffles you also get real maple syrup and real butter, but we went over that already. The waffles were delicious. The perfect combination of fluffy and filling. Just enough to keep you full for a while. At least until you visit the dessert spread. All washed down with coffee or mimosas if that’s your Sunday brunch style. There are waffles, pancakes and biscuits and gravy. Sushi, sashimi, wasabi and coffee. Bottomless crab legs and shrimp galore. Desserts, canapés, who could ask for more? If I’m spontaneously waxing poetic, you know it was good. But, do you want to know something else? That’s not the only place you can get a great breakfast or brunch on Kadena. The Kadena Officers’ Club also has a smaller breakfast buffet in the Weekender Lounge for the breakfast sticklers of the earth. And Café Latte serves breakfast all day if you’re like me and would prefer breakfast for lunch or dinner. Emery Lanes has some fantastic breakfast pizzas, too. I mean, breakfast pizza? Come on, that’s the dream right there. If you want breakfast with a side of ocean view, head over to Seaside Ristorante on the weekends. They’ve got some Eggs Benedict that you may actually want to write home about. The Banyan Tree Club also has a mini breakfast buffet on the weekends for a more quiet place to sit and enjoy coffee, your favorite breakfast food and the morning news. This October we are pitting two of your favorite restaurants in a friendly competition to win your hearts…or stomachs…hearts and stomachs. In this showdown, Café Latte will be putting their new month long specials up against Jack’s Place’s classic Teppanyaki. Written by • Ruben Zaldaña

Café Latte is swinging for the fences with two dishes for the month of October. First up is their homage to the upcoming Beer, Bourbon and Bacon (check it out on page 9!): a beer braised hot dog with braised sauerkraut. As if that is not enough to satisfy a hearty appetite, it’s served with a creamy beer and cheddar soup. Next up is a delectable treat that will plaster a smile on your face for the rest of the day. How could Jack’s Place possibly compete? With a touch of class, showmanship, and their Surf and Turf Teppanyaki, that’s how. These dishes not only satisfy a refined palate, but come with a show (onion volcanoes are not to be missed)! Steak and lobster tail are a classic combination for a reason. They are delicious separate, but when you put them together they are magical.
