very holiday season comes filled with a fresh batch of intriguing possibilities that demand our consideration. But it’s not just the holidays; we’re on call all year. Advertising media, traffic snarls, social networking babble and constant “breaking news” all beg for every moment of our attention. How can we break the cycle and regain our sanity? For me, getting out into nature, in all of its moods, serves as my primary personal escape. It rarely fails to turn me around as I reflect on what’s really important and reestablish a sense of balance. No longer intimidated by inclement weather, I now head out into the snow and rain any time daily stresses threaten to overwhelm. I’m delighted to have found some local bike trails that allow for a full-speed workout, one that gets oxygen flowing freely through my system. On one recent ride, I was privileged to ride alongside a herd of six deer as they ran for a few hundred yards before disappearing across a small stream. The magic of this oncein-a-lifetime encounter with the natural world struck deep and still brings a smile. Doubtless you’ve found your own way to take regular mental breaks. Perhaps you revel in walks in the park, gardening, rebuilding an old car engine, playing music or swapping stories with friends. In this month’s feature, “Everyday Grace,” on page 26, writer Lisa Marshall explores alternative ways to experience the majestic serenity of spirit-infused moments in everyday encounters. Local writer Sandy Rogovin also profiles Hellertowns’ own “Gentle Spirit,” on page 30, while local acupuncturist JL Collins discusses a Chinese medicine approach to treatment of stress and anxiety (page 34). ow many have had that sinking feeling, “How did my life turn out so differently than what I wanted?” Most people believe it’s too hard to change once they’ve reached a certain age. According to author, Carol Denker, M.S., M.Ed., that change in the second half of life is not only possible, but also incredibly rewarding. In her upcoming workshop at the Greenshire Arts Consortium on December 13 at 6:30 p.m., she will share seven components that successful life changes had in common, and using creative modalities and visualization, she will explore the paths to “Re-Inventing Your Life.” At 55, Denker changed careers and at 65, she published her first book, Autumn Romance: Stories and Portraits of Love after 50. While doing research for the book, Denker found that many individuals who found romance later in life were also those who had re-invented their life, giving them more meaning and fulfillment. hile the properties of cranberries for warding off urinary tract infections have been well documented, researchers at the Worcester Polytechnic Institute (WPI) are now reporting a surprise finding that expands the red berriesâ&#x20AC;&#x2122; healing characteristics. They discovered that cranberry juice cocktail evidently helps block a strain of the bacteria Staphylococcus aureus from bringing on staph infections, which can range from minor skin rashes to serious bloodstream problems. One particular strain, Methicillin-resistant S. aureus (MRSA), is a growing public health concern because it doesnâ&#x20AC;&#x2122;t respond to most antibiotics. To cause an infection, bacteria must first adhere to host tissue, and then gather in colonies to form a biofilm. In their study, the scientists found that in participants who had recently consumed cranberry juice, the ability of bacteria such as E. coli and S. aureus to form biofilms was significantly decreased, thus reducing the chance of contracting a urinary or staph infection. â&#x20AC;&#x153;We saw essentially no biofilm in the staph samples,â&#x20AC;? reports Terri Camesano, a WPI professor of chemical engineering.

he best gift of all can be as simple as an act of kindness, generosity and cooperation. Even better, we hope that our good acts may spread. Now, a study published in the online edition of Proceedings of the National Academy of Sciences provides the first laboratory evidence that kind behavior is indeed contagious and that it spreads from person to person. In short, the researchers found that when just a few people benefit from kindness, they pay it forward by helping others who were not originally involved. This cascade of cooperation can influence many known and unknown participants in a broadening social network. Here’s how researchers at the University of California, San Diego (UCSD), and Harvard University illustrated the principle: When one person gave money to help others in a publicgoods game where people had the opportunity to cooperate, the recipients were more likely to give away their own money to other people in subsequent games. This type of behavior created a domino effect, in which one person’s generosity spread first to three people, then to nine and then to others in subsequent waves of the experiment. Better yet, the effect of being part of such a kindness circle persists, observes James Fowler, associate professor at UCSD, who co-led the study, observing, “You don’t go back to being your old selfish self.”

United States Updates Rules for Green Marketing
Following three public hearings, a period for public comment on the proposed document that ended December 10 and 35 months of development, the U.S. Federal Trade Commission will publish a much anticipated update to its original Green Guides. First published in 1992, the last update appeared in 1998. The guides comprise a common sense set of rules defining required substantiation and disclaimers for the explosion of evolving green claims made by marketers. Like its predecessors, the new edition will represent a helpful, if low, bar, intended to eliminate outright misrepresentations and fabrications. (Ad is shown at actual size. The National Marketing Instituteâ&#x20AC;&#x2122;s in-depth query of 3,000 consumers from varied demographic groups in the 25 largest U.S. states (by population), reveals where demand is greatest for everything green. Leading states, while not without flaws, are known for pioneering new environmental policies, having avid enthusiasts of outdoor activities and driving the market for green products. Research questions focused on the proportion of consumers who have purchased carbon offsets, organic foods, renewable power and hybrid vehicles and those who compost, reuse grocery bags and donate money to environmental groups. Based on the prevalence of these characteristics, the top 10 greenest states are Washington, Colorado, Massachusetts, New York, California, Maryland, New Jersey, Minnesota, Michigan and Missouri. They are followed by Florida, Alabama, Wisconsin, Arizona and Texas.

Sustainable Toys are In With Walmart, the biggest toy seller, now stocking its store shelves with more toys made from natural or recycled materials, industry analysts expect other big retailers to follow. Reyne Rice, a trend specialist for the Toy Industry Association, told Reuters that about 25 percent of retail buyers at last yearâ&#x20AC;&#x2122;s American International Toy Fair wanted to see and consider more eco-friendly products. Thus, the Toy Fair earlier this year featured a green pavilion, exclusively showcasing such toys for the first time. Itâ&#x20AC;&#x2122;s a step toward propelling green toy sales toward an anticipated $1 billion market in the next five years, representing some 5 percent of overall toy sales. While sustainable toys tend to cost a bit more than traditional ones, many are priced at less than $25 retail. Meanwhile, even though many major manufacturers arenâ&#x20AC;&#x2122;t yet on board, several are making moves to green and reduce the amount of packaging they use.

Freedoms Foster World Peace Human Rights Day on December 10 honors local and global activities working to initiate, strengthen and sustain the civil, political, social, economic and cultural rights and freedoms enumerated in the Universal Declaration of Human Rights of 1948. Such principles are considered the bedrock of peaceful and just societies. President Jimmy Carter sums up the need: “We can choose to alleviate suffering. We can choose to work together for peace. We can make these changes—and we must.” The United Nations Human Rights Council, created in 2006, comprises 47 member states responsible for promoting and protecting human rights around the world. The protection of fundamental human rights was a cornerstone in the establishment of the United States and remains a central goal of U.S. foreign policy. This country understands that the existence of human rights helps to secure peace, deter aggression, promote rule of law, combat crime and corruption, strengthen democracies and prevent humanitarian crises. In 2048: Humanity’s Agreement to Live Together, author Kirk Boyd maintains that “Peace and prosperity can be attained through the realization of five basic fundamental freedoms for all people: freedom of speech, freedom of religion, freedom from want, freedom for the environment and freedom from fear.” These establish a framework within which other necessary rights can flourish. “That struggle,” declared Robert F. “By 2020, or even a little before that, we’ll know if there are other Earths out there,” states Laurance Doyle, Ph.D. The astrophysicist is part of the NASA Kepler spacecraft science team monitoring 170,000 of the brightest stars in our galactic neighborhood based on the recent discovery of numerous planets around stars other than the Sun. Launched in 2009, they’re watching for a pattern of three small, annual reductions in brightness that would indicate an Earth-sized planet orbiting another star. “If we don’t find any Earths… then we can say, ‘Wow, Earth is really rare. We need to take care of it,’” says Doyle, who is also a principal investigator at the SETI Institute and president of the nonprofit Planet Quest. If the scientists do find another Earth-like planet, the next step would be to search for signs of biological life by checking to see if free oxygen is present in the atmosphere. Survey Shows Americans are Religio-Centric The role of religion as a social force of enduring significance in the modern world is recognized by American historians and sociologists, according to studies published by the American Historic Association and Social Science Research Council. Yet, a new survey by the Pew Research Center’s Forum on Religion & Public Life indicates that Americans are generally less than knowledgeable about the core teachings, history and leading figures of major world religions. On average, Americans correctly answered half of 32 questions in the survey. Atheists, agnostics, Jews and Mormons were among the highest-scoring groups, outperforming Catholics and both evangelical and mainline Protestants. At the same time, many Americans are devoted readers of scripture; 37 percent say they read the Bible or other holy scriptures at least once a week, not counting worship services. But Americans as a whole, or 70 percent, are much less inclined to read books or visit websites about other religions. Additional Pew data show that while most countries provide for religious freedom in their constitutions or laws, only a quarter actively respect this legal right. God in the Wilderness Raised in a devoutly Jewish family and ordained at the prestigious Hebrew Union College, Jamie Korngold was following a fairly typical rabbinical path in the 1990s. She presided over Saturday services at an ornate synagogue in Calgary, where she lead a large congregation in songs, chants and readings. Still, she often found herself thinking about the people who weren’t there. “No matter how great my sermons were, I knew I wasn’t going to reach beyond the pulpit,” she recalls, noting that 70 percent of Jews are not affiliated with a traditional congregation. “I needed to meet the people where they are.” Today, she has no synagogue at all. Instead, through her rapidly growing Boulder, Colorado-based Adventure
Rabbi program, she leads brief Shabbat services at a mountaintop warming house at the Copper Mountain ski resort, before spending “a holy day” carving turns on powder-filled slopes with her congregants. For the Jewish New Year, she leads them on a hike to a mountain top, where they unroll a giant Torah and toss snow into a rushing stream to bid farewell to past mistakes and welcome new beginnings. At Passover, they—like their Biblical ancestors—gather in the desert, where she tells the story of the Jewish Exodus from Egypt during their hike to a striking red-rock arch in Moab, Utah. “It was an experience like none that I had ever had,” says Lori Ropa, 45, a lifelong Jew who attended an Adventure Rabbi Rosh Hashanah retreat with her husband, a Christian. “The opportunity to have a peaceful connection with God and with myself amidst all of that beauty really creates an intense experience for me,” says Ropa, who now attends Korngold’s services regularly. “I go because I want to be there, not because I feel I need to.”
Korngold’s God in the Wilderness: Rediscovering the Spirituality of the Great Outdoors, includes a reminder that Moses had to hike across the desert and climb a mountain to receive the Ten Commandments. “The physical exertion of the desert climb, coupled with the stark desert beauty, helped Moses to arrive spiritually and emotionally in a place beyond internal chatter—a place often called awe,” she writes, suggesting that, regardless of one’s faith, the very act of experiencing awe (for example, over a beautiful sunrise or the life cycle of a tree in the yard) connects us with something bigger. “So, you spend much of your day in a cubicle… Get a spider plant, and watch the miracle of its growth on top of your file cabinet,” Korngold advises. “Change your route to work so that you can drive through a park.”
The Sacred Track For 58-year-old Warren Kay, Ph.D., a track coach and religious studies professor at Merrimack College, in Boston, the act of running represents a move-
able sanctuary where mental clutter falls away and time seems to bend to allow him to connect with himself and his higher power. Kay, author of Running: The Sacred Art, believes that, “Running is the new yoga,” and notes that spiritual traditions have embraced running as a sacred vessel for centuries. In the village of Mount Hiei, Japan, members of a small Buddhist sect, known as the Marathon Monks, engage in a grueling, seven-year challenge in which seekers run as many as 50 miles a day in 100day blocks in pursuit of enlightenment. In Tibet, the Lung-gom-pa runners use multi-day running journeys as their meditative practice. In Copper Canyon, Mexico, 50-mile barefoot races across the rugged desert comprise an integral part of the Tarahumara Indians’ spiritual fabric. For Kay’s sought-after class, The Spirituality of Running, students read scripture from the religious tradition of their choice, and then go for a run, using the time to reflect on what they read. Across the country, at the Shambhala Mountain Center, in Red Feather Lakes, Colorado, 51-year-old Marty Kibiloski, an Ironman veteran, combines Buddhist teachings with trail runs during a three-day running meditation retreat. â&#x20AC;&#x153;What we are trying to show is that you can overlay the practice of meditation onto so many aspects of your life, not just sitting on a cushion,â&#x20AC;? says Kibiloski. He once lived what he called, â&#x20AC;&#x153;â&#x20AC;Ś a high achievement, low satisfaction life,â&#x20AC;? as a competitive marathoner, but has evolved a less competitive, more thoughtful pace in both his running and personal life. ccording to the Centers for Disease Control, 23.6 million people in the United States, or 7.8 percent of the total population, have diabetes (5.7 million of these undiagnosed), and it remains the sixth leading cause of death in this country. The good news is that there are natural treatment alternatives.

The lynchpin of diabetes is insulin, a key hormone that allows glucose (sugar) to be converted into energy. The onset of diabetes indicates that the body is experiencing a shortage of insulin and/or decreased ability to use it. Type 1 diabetes, which is caused by the inability of the pancreas to produce insulin, usually manifests in children and adults under 30. It accounts for only five percent of cases. Type 2 diabetes, in which the body fails to respond appropriately to the presence of insulin and to properly absorb glucose from the blood, accounts for 95 percent of incidences, generally occurring after age 40. If left untreated over time, either type can lead to further health complications, including diseases of the heart, eyes and kidneys, plus blindness, nerve damage and kidney failure. Today’s conventional medical treatment of Type 2 diabetes typically starts with lifestyle and dietary changes, including aerobic and resis-

Following a diet based on low glycemic carbohydrates, adequate protein and good fats is key. Examples of good carbs include: legumes and beans, whole wheat, barley, brown rice, quinoa, apples, apricots, grapefruit, cherries, plums, pears and berries. High glycemic carbs to be avoided include (but are not limited to) donuts, white rice and white flour products, cake, cookies and dried dates. Healthy proteins include lean chicken and turkey, wild salmon, grassfed beef and buffalo, tofu, tempeh and eggs. Good sources of healthy fats are olive, flax seed and hemp seed oils. A high-fiber diet is also vital in improving blood sugar and insulin response, because low fiber diets have been associated with increased risk for diabetes. Foods to include are whole grains, nuts, seeds and dark green, leafy vegetables. Research from the University of Helsinki, Finland, further suggests that limiting cow’s milk may be beneficial, especially for infants and children. A study of children born to a diabetic parent found that they were susceptible to diabetes later in life after exposure to cow’s milk as youngsters. Chromium may help lower blood glucose levels in cases of Type 2 diabetes, with the most recent study from the Pennington Biomedical Research Center. A typical dose is 200 micrograms daily.
Magnesium is also important, as Harvard University scientists discovered a significant inverse association between magnesium intake and diabetes risk. A large population-based study in Taiwan, published in Magnesium Research, showed that adding magnesium to drinking water led to a lower risk of death from Type 2 diabetes. The best sources of magnesium are amaranth, sunflower seeds, quinoa, spinach, wild rice, tofu, almonds, halibut, brown rice, white beans and avocado. If these foods are not regularly on the menu, consider a magnesium supplement. A typical daily dose begins with 500 to 750 milligrams (mg), although this may be reduced in the event of diarrhea or loose stools. Zinc also may assist the bodyâ&#x20AC;&#x2122;s use of insulin. Suggested dosage is 30 mg a day, balanced with 2 mg copper. Antioxidant vitamins (A, C, E, betacarotene) and B complex vitamins, as well as other antioxidant nutrients from superfoods such as green tea, blueber-

In addition, studies of calcium and vitamin D have shown some initial promise in middle-aged and older women in warding off metabolic syndrome, a known diabetes precursor. Finally, a host of scientific journals support the helpfulness of certain herbs. Bilberry and Gingko biloba may help prevent or delay diabetic-related eye damage. Gymnema sylvestre, fenugreek and bitter melon have been shown to help control blood sugar levels. Physical activity, which certainly helps reduce weight, may also help in regulating overall blood glucose. Exercise facilitates circulation, while working to prevent some of the complications associated with diabetes, including peripheral vascular and heart disease. Itâ&#x20AC;&#x2122;s recommended that diabetes sufferers have a snack just prior to and immediately following exercising to help maintain stable blood sugar levels. T
he treatment of stress and anxiety with Chinese Medicine is unique. This treatment requires the recognition of the existence of spirit. In this context, spirit is the outward manifestations that are seen in the patient including the tone and clarity of the person’s voice; the carriage and movement of the body; clarity of the eyes; free movement of the bowels; and the luster of the complexion. This spirit is vitality, like the spirited racehorse that is prancing, stomping and ready to run. It is our consciousness–our thinking and feeling. In Chinese medicine, spirit is not “spiritual” spirit. The spiritual spirit, which is part of Native American, Christian, and other faiths, is not what is being identified in this treatment of stress and anxiety. No dualism exists between the body and the mind. No prejudice saying one is more important
than another. In this instance, spirit is the accumulation of chi, or energy, in the heart. So, what affects this spirit? One factor is malnourishment and non-construction, which leads to insufficient blood. Pathological heat is another can also have adverse affects. Here, heat accumulates in the heart, causing the heart to stir and disrupt. The heart should be calm, quiet and stable. Finally, because spirit is chi, chi must move and the flow must be uninhibited. If anything blocks free flow, then spirit loses function and is not quiet. The underlying disease mechanism and the most common cause of the above three symptoms is Liver Depression Chi stagnation. When chi doesn’t move freely, it changes the heart spirit. Chi stagnation leads to blood stasis, which leads to phlegm. This also affects the heart spirit. In
Chinese medicine the spirit of the heart is seen as the spirit of the wild horse. What exactly is liver depression? The cause of liver depression, or chi stagnation, is unfulfilled desires. Chi moves toward what we want or away from what we don’t want. This affects the liver. For instance, children gratify impulse. They grab for or run for whatever they want. They react in the moment. Adults, however, cannot gratify all impulse. They will wind up in jail or a mental hospital if they do everything they desire to do. Outbursts of explosive anger can cause damage the liver, allowing it to become more depressed. Blood vacuity, a Chinese medical concept meaning not enough blood, will affect the whole body. The liver supplies blood to the organs, the whole body. Therefore, if you do not have enough blood or moist blood then tissues are not moistened. Since the liver flows blood to the whole body, including organs, tendons, ligaments, eyes, etc., a diminished capacity will affect the whole body/mind/spirit. There are things we can do for a healthier functioning liver, including exercise; proper nourishment such as healthy diet, including Chinese herbs, and good clean water; avoid excess indulgence in alcohol, caffeine and any liver toxic drugs; avoid excess anger in yourself and in others; practice yoga, meditation, prayer, group support systems or other calming modalities; get acupuncture treatment to support the liver and calm the liver; and most importantly, learn forgiveness. new movement is afoot to reclaim and refocus the holidays. Part of it stems from a desire to cut back on the wastefulness that comes from accumulating mountains of store-bought gifts and wrappings. Another is the growing desire to generate more meaningful memories during the holidays. One answer is to embrace a do-it-yourself, or DIY, mentality that makes everything—from decorating to tree trimming, cooking and gift giving—personal. There is no better time to join in activities as a family than Christmastime. Subtract the frenzied consumerism and there is little for a child not to love: being with loved ones in the kitchen, measuring flour, rolling dough and cutting cookies; happily sitting around a table, pasting, stamping and glittering; decorating a tree that magically transforms with each addition; and the scents of cookies, candles and cinnamon-dotted wreaths.

Holiday craft projects can transform much of this “waste” by making the most of its decorative potential. Shellie Wilson, the founder of Craftbits. com, a site that provides thousands of free, do-it-yourself craft ideas, says she and her mother Rita are craft hoarders. “We never throw anything out that we think can be turned into something wonderful,” comments Wilson. Her favorites include a T-shirt pillow that maintains the shirt’s shape and a nosew baby overalls purse, using glue in place of thread. Instructables.com is the kind of user-submitted, DIY, bake it, fix it and tweak it website that invites hours of surfing. Developed at the Massachusetts Institute of Technology, it has become a massive platform for idea sharing, including a page called “Have a DIY Christmas!” that organizes ideas by category. Options range from origami ball decorations and a homemade book clock to gift boxes and tags made from cereal boxes and junk mail. “With the state of the economy lately, people are looking for more ways to stretch their budgets and repurpose used objects,” remarks Sarah James, editor of Instructables’ Living and Food website sections. Along with the benefits of minimizing waste, spending less money and reclaiming quality time with loved ones, making our own gifts and decorations is also fun. The process of discovering, attempting and creating can help unlock our inner artist at any age.

They also build a three-sided shelter structure with no roof, called a Sukkah, to symbolize the story of an arduous journey of an ancient people who had no food or shelter, while celebrating their spirit and strength to survive. This festival eloquently involves children and teaches them their responsibility for taking care of everyone in the community. Local Business Brings a Gentle Revolution in Healing
“T
here is only one disease: Qi stagnation,” explains Jay Bartholomew. “Getting harmonious flow back” restores the body to its natural state of wellness. To this end, Jay, with his wife and business partner Jennifer, opened The Gentle Spirit in 2007 on Main Street in Hellertown. They and a handful of carefully selected practitioners offer, in their words, “Healing Arts for Inner Peace.” The centerpiece of their offerings is an amalgam of body and energy work techniques they call Qi Healing. Jennifer and Jay practice it individually, but on occasion combine their skills. They suggest reserving an hour for the session, although it can take anywhere from twenty minutes to two hours. “We know it’s done when the body is peaceful,” Jennifer says. An exact description of Qi Healing is equally difficult to pin down. The problem: they use any elements of their twenty years of learning and teaching a pan-global combination of healing methods that might be called for by the specific person at the specific moment he or she is on the table. Backtracking along Jennifer’s and Jay’s timelines, before they met and after, sheds some light on the dilemma. In childhood, Jennifer daydreamed herself a doctor. Not many years later, she became a student of yoga and ayurvedic health practices. She graduated college with a degree in biology and traveled the career track to a job in pharmaceuticals, where she soon found herself overworked and stressed out. To help fellow employees manage stress, she initiated after-work yoga classes. After teaching class, she would have to return to work! She began to wonder if the American health industry was the best place for her. And she continued to nourish her mind-body connection with new philosophies and techniques. center, studying martial arts and physical healing methods. His background was in another type of discipline: law enforcement. He trained police dogs and worked as a corrections officer. He learned and taught various martial forms and was in Thailand on a Thai Boxing intensive when he developed terrible leg and foot pain. On local recommendation, but with a doubtful mind, he tried a massage. “A tiny Thai lady laid me on the floor,” he recalls. “When I got up, I was brand new.” Intrigued by his body’s powerful response to her technique, he followed his curiosity, eventually quitting his prison job and trekking through Thailand and Nepal on his quest to understand and share his experience, and to bring it home to America. Once Jennifer and Jay met, their relationship—both in work and their eventual marriage—was marked by a constant interchange of ideas. Their first creation together was a course based in Thai Massage, which Jennifer had also studied, in the U.S. In combining their areas of knowledge and adding new pieces, they realized: “Everything seemed to have its own rules, but they all had similarities. If we followed the similarities, we could get back to the simplest way . . . get back to the source.” At this point in their journey, Jennifer and Jay find the most direct way to that source to be the Chinese Metaphysical Arts, including familiar ones like qi gong, feng shui and acupuncture. At the core, Five Arts combine movement practices, dietary recommendations and herbal medicine, philosophy from classic texts, understanding of the structures of the physical world, and spirituality, to bring each person inner harmony, which contributes to similar harmony in the larger world. The Bartholomews have studied with three Daoist masters. Currently they are studying under Master Zhongxian Wu, learning and experiencing the Five Arts and sharing that knowledge at The Gentle Spirit. Besides Qi Healing, clients can receive bodywork, take movement classes, or study Chinese texts that are thousands of years old, all in the interest of inner peace and wellness. The Bartholomews have seen improvements in allergies, blood pressure, head colds, and lactose intolerance, and many more conditions. Jennifer and Jay and the other practitioners and instructors who share their specialties at The Gentle Spirit work under a similar philosophy. “For every person, every time [they visit] . . . we’ll give [them] something to help, to guide and support their process,” explains Jennifer. “People come to us when they’ve tried everything else, when they’re on 50 pills and want to get off, when they don’t know what else to do,” she continues. “We hope to empower them, to remind them of who they are. Really Good Raw Desserts Over indulging in sweets during the winter festivities can produce unwanted weight gain and a general feeling of sluggishness—a notso-wonderful gift for anyone. But adding a raw food dessert to our holiday repertoire could introduce a new, healthier tradition to holiday occasions that’s welcomed by everyone. by Judith Fertig

raw dessert no longer means only a simple piece of fruit or a handful of nuts. While a traditional holiday story conjures sleeping children with “visions of sugarplums” dancing in their heads, the dreams of raw dessert chefs more likely spring from Medjool dates, cacao nibs and exotic fruits. That’s because raw desserts are made from uncooked, minimally processed and generally plant-based foods. Raw foods aficionados say they are usually first attracted to this type of food preparation because the recipes do not contain wheat, refined sugar, eggs or dairy products, which eliminates the need to work around food sensitivities. Plus, they feel better after they’ve eaten a raw foods dessert, which might feature nuts, fresh and dried fruits, agave nectar and/or chocolate. When these raw foods are ground or puréed in a food processor or blender, they contribute mightily to dessert crusts, fillings, sauces and frostings to grace tarts, cakes, cookies, puddings and ice creams—all of which can be made without cooking. Sometimes, dessert recipes call for using a dehydrator, a simple appliance that dries foods slowly at around 112° to 118° F, to avoid the enzyme changes that occur when foods are cooked at higher temperatures. teristic that raw foods enthusiast Nathalie Lussier describes as “...a warm, chewy, comfort food feeling, so that you can make cookies that come out slightly warm from the dehydrator.” With raw desserts, “You really can have your cake and eat it too, because the recipes are packed with nutrients and fiber,” advises raw desserts chef Heather Pace, the author of four raw dessert e-books, including Just Desserts and Raw Party Parfait. Most raw foods desserts, like most exceptional sweets, involve several steps to make each part. “While at first glance, a raw dessert might appear to be complicated and time-consuming,” notes Pace, “it’s really very simple. Each component can be thrown together quickly and easily and can be made ahead.” The benefits of raw desserts extend beyond the simply nutritional, affirm devoted adherents. Rose Lee Calabro, author of Living in the Raw and Living in the Raw Desserts, had experienced a host of personal health issues that virtually disappeared when she began to eat a mainly raw foods diet a decade ago. But more than that, she says, “Eating raw foods has contributed to a career change and a dramatic shift in my life.” According to eco-lifestylist and raw foods author Ani Phyo, “Eating more organic, fresh, whole foods helps us maintain an ideal weight, lowers cholesterol, boosts the immune system and helps us look and feel our best.” But for her, as well, raw foods are more than a diet. She remarks, “It affects the way I live and interact with planet Earth and all other living beings.” Phyo is the author of Ani’s Raw Food Essentials, Ani’s Raw Food Desserts and Ani’s Raw Food Kitchen. Incredibly Decadent Chocolate Cake This recipe from Rose Lee Calabro’s Living in the Raw Desserts gets its body from almonds, its sweetness from dates and agave nectar, and its scrumptious chocolateyness from cacao nibs—all available at better grocery or health food stores. Plan ahead several days to allow time to soak and then dehydrate the almonds. Makes 8 to 10 servings For the cake: 2 cups almonds; soak for 12 to 48 hours, then dehydrate for 18 hours 2 cups pitted Medjool dates 1 /3 cup raw almond butter ¼ cup raw cacao nibs, ground super fine; or cacao powder ¼ cup agave nectar 2 tsp vanilla extract For the filling: 2 large ripe bananas, thinly sliced For the frosting: 1 ripe avocado 1 ripe banana 5 pitted Medjool dates ½ cup water 1 /3 cup pine nuts; soak in water 1 hour, then drain 2 tbsp raw cacao nibs, ground super fine; or cacao powder 1 tsp vanilla extract 1. For the cake, place the almonds in a food processor fitted with a steel blade and process into a fine meal. Gradually add the dates, almond butter, cacao, agave nectar and vanilla extract, then continue processing until the mixture is well blended and forms a ball. If the mixture isn’t blending, add a small amount of water, as needed, to achieve the desired consistency. Divide the mixture into two equal parts (for two layers), and form each part into a round cake layer about 8 inches in diameter. Place each layer on a plate. 2. For the filling, arrange the sliced bananas on top of the bottom layer and place the second layer on top of the bananas. 3. For the frosting, combine all of the ingredients in a blender and process until smooth, thick and creamy. Frost the top and sides of the cake. Decorate with fresh strawberries or other seasonal fruit. Refrigerate for 2 to 3 hours before serving.

W
ould we keep wearing a hat that gave us a headache or a belt that fractured our ribs? The answer is, probably not. Yet, most of us wear shoes that have multiple negative impacts on the health of our entire body. Studies in leading scientific journals show that these reverberating effects start with painful and deformed feet and can migrate up to impaired bone density and a weakened pelvic floor. According to The Journal of Gerontology, for example, a study examining senior populations showed that a history of wearing ill-fitting and high-heeled footwear was specifically associated with poor balance, hammer toes, bunions and foot pain. Once thought to be genetic or age-related, researchers are now beginning to look at the impact that shoes have on the body.
Identifying the Culprits The most detrimental part of the shoe to overall body structure seems to be heel height, which both increases tension in the plantar fascia (the thick connective tissue that supports the arch of the foot) and alters the position of the knees and lower back. The higher the heel, the tighter the muscles and fascia in the arch become, until walking feels painful. A heel of any height also projects 46

When researchers at the Institute for Aging Research recently analyzed foot examination data from 3,300 older men and women, they found that 64 percent of the women who reported heel and ankle pain regularly wore pumps or high heels at some time in the past. They found no significant link between foot pain and the types of shoes men wear. Source: Arthritis Care and Research oneâ&#x20AC;&#x2122;s body mass forward, increasing the pressure on the front of the foot, which can lead to soreness there and increase the risk for bunions. Other harmful footwear characteristics also need to be evaluated. The narrow toe spaces of many fashion favorites not only limit the footâ&#x20AC;&#x2122;s natural range of motion, they diminish the strength of the toes. Weakened foot and toe muscles, resulting from years of cramping toes into a too-small space, provide insufficient strength for
proper balancing and, according to the American Journal of Epidemiology, the situation can even increase the risk of knee osteoarthritis.
Taking a Healthy Stride Forward A lifetime of excessive shoe wearing and poor shoe choices means we need to make foot fitness a priority. It is possible to undo much footwear damage if we modify our habits. Try making the most of these foot exercises and shoe selection tips:

Foot Stretch Stand with your hands on a wall or a chair. Put one leg back behind the torso and tuck these toes under, in order to stretch the muscles in the toes and feet. Cramping is normal, so take a break when needed, and then return to the stretch. Work up to holding the tucked position for a minute, repeating on each foot two to three times daily.
Toe Spreading Everyone’s toes should be able to spread apart from each other, just as we can spread our fingers. Practice toe spreading every day to increase strength and flexibility in the feet, as well as circulation and nerve health. For faster results, slip toe spacers between the toes (available at local nail salons and drug stores) or wear toe alignment socks (e.g., MyHappyFeetColors.com) while watching TV or sleeping.
Shoe Closet Makeover The second part of our foot makeover occurs at the shoe store when we select a flat or negative-heeled shoe (with the heel lower than the ball of the foot). Also make sure the width of the shoe fits well. A woman should always be able to spread her toes comfortably inside a shoe, paying close attention to the big and pinkie toes. Fortunately, more shoe designers are offering colorful, fun and sexy options these days in sandals, ballet flats and other stylish looks. It’s also important to minimize the use of sandals or flip-flops that require the toes to grip onto the shoe when walking. The toe-gripping habit can lead to hammer toes, a problem that can

When you have a new trend for humans, this appeals to the pet industry, as well,â&#x20AC;? observes Steven King, president of the Pet Industry Distributors Association. Just this year, Americans will have spent an estimated $47 billion on pet products and services, according to the American Pet Products Association. Categories include food, pet supplies, over-the-counter medicines and vet care services and products, many of them incorporating natural materials. The industry reports that, on average, pet owners annually spend $40 per dog and $19 per cat on toys alone. One more fur-raising fact: American Pet Association statistics reveal that of the nationâ&#x20AC;&#x2122;s 140 million household cats and dogs, 31 million dogs and 39 million cats will have presents waiting for them under the tree on Christmas morning. Also, people will celebrate the birthdays of as many as 13.5 million cats and 9.8 million dogs with parties and pet gifts.

Canine Wisdom Dogs need toys to fight boredom when left alone for any length of time, according to the Humane Society. They also recommend four types of toys for dogs: at least one to carry, one to shake,
one to roll and one to “baby,” for play and to release stress. Many dog toys should be interactive, to increase time with people. By focusing on a specific task—such as repeatedly returning a ball or playing hide-and-seek with treats or toys—dogs can take advantage of the opportunity to expend pent-up mental and physical energy. Healthy and organic presents for pets are now widely available in neighborhood natural pet stores, as well as online. At such shops, people and pets can check out the choices firsthand and seek advice from the staff. If there’s a toss-up between products, ask if a portion of the product sales goes to benefit animal causes, making it a gift that gives again. That could be the tiebreaker.
