lying into Phoenix in 1986, I got excited by my first view of Camelback Mountain through the airplane window. I decided, “That’s the peak I want to climb.” The next day, as I stood at the base gazing up the face, I felt ready to take on the challenge, no problem. About three quarters of the way up, however, I ran into a steep rock wall at least 40 feet high. With no ropes or guide at hand, the best course seemed to be climbing back down a little in order to try a freestyle ascent a few hundred feet to my right. Glancing down I could see that it was a 30-foot drop to the next comfortable spot to begin a descent. Sitting quietly for a bit, surveying the situation again, I eventually discovered a path that would lead me to the summit. Putting together this issue of Natural Awakenings has reminded me of that climbing experience. What began as excitement about publishing our first local Green Directory has presented unexpected challenges that have had me metaphorically staring at a sheer rock wall with no way to re-establish our ascent except altering our predetermined path. The answer this time was to save the submissions we received for our November issue, while relying on October’s Environment issue to serve as a powerful precursor. Thus, we explain some key actionable environmental issues this month that “set the table” for many more sustainable solutions to come. We will save the practical steps we can each take for our November Directory and Simple Living Issue. Bill McKibben urges us all to “Be a Climate Hero,” on page 26, explaining why climate change is the single most vital issue facing Earth’s environment today. On page 30, local clean water advocate Cathy Frankenberg explains the expanding damage to our local environment due to the fracking process (hydraulic fracturing of rock formations) that energy companies use to tap natural gas in the Marcellus Shale formation in Central and Western Pennsylvania. We are blessed with some local wisdom regarding the cumulative effects of exposure to agricultural toxins in our food, on page 40. wo new series of healing movement classes will be held throughout October and November at The Gentle Spirit in Hellertown beginning the week of Monday, October 4 and again the week of November 2. Harmonic Therapy Workshop and Demonstration
J
ourney Within, a center for massage therapy, will offer a free workshop and demonstration on harmonic therapy at 1 p.m. on Saturday, October 16. The workshop will be lead by Bob Bednar, a longtime student of Mitch Nur, PhD., an authority on singing bowls and other Tibetan and Himalayan metallophones. According to Bednar, in a harmonic therapy session, the client lays on a massage table with metal bowls placed around, under and sometimes on him or her. The bowls are rung in harmonic sequences, gently guiding the mind into a variety of sub-conscious states. From these coherent states, the mind has the space to accept and release mental and emotional triggers of stress, fear, anxiety and disease. As an independent therapy, he says it enhances relaxation, sharpens focus and can lead to a cessation of symptoms, and as an adjunct to other therapies it enhances and speeds the healing process. “It is common, in these sessions, for clients to fall into a deep and relaxing sleep, awakening at the end of the session alert and renewed,” notes Bednar. How Sugar Feeds Cancer
R
esearchers at Huntsman Cancer Institute at the University of Utah have uncovered new information about the notion that sugar “feeds” tumors. While it’s accepted that tumor cells use a lot more glucose (a simple sugar) than normal cells, the new study sheds light on how this process takes place and might be stopped. The researchers discovered that during both normal and cancerous cell growth, a cellular process takes place that involves both glucose and glutamine, a common amino acid found in many foods. Glucose and glutamine, both essential for cell growth, were thought to operate independently. This groundbreaking research now shows not only that they are interdependent, but that restricting glutamine works to stop the utilization of glucose. Essentially, if glutamine is absent, the cell is short-circuited, due to a lack of glucose; thus, it suggests a new way to halt the growth of tumor cells. The researchers hope that their findings will lead to more effective cancer treatment therapies.

An Apple A Day

here’s truth in the adage that an apple a day keeps the doctor away. Research published in the open access journal BMC Microbiology contributes to our understanding of why apples are good for us. Microbiologists from the National Food Institute at the Technical University of Denmark fed rats a diet rich in whole apples or apple juice, purée or pomace. Another group of lab animals was put on a control diet. The researchers then analyzed the animals’ digestive systems to see if eating apples had any impact on the amount of friendly bacteria in their gut. “We found that rats eating a diet high in pectin, a component of dietary fiber in apples, had increased amounts of certain bacteria that may improve intestinal health,” says co-researcher Andrea Wilcks. “It seems that when apples are eaten regularly and over a prolonged period of time, these bacteria help produce shortchain fatty acids that provide ideal pH conditions for ensuring a beneficial balance of microorganisms. They also produce a chemical called butyrate, which is an important fuel for the cells of the intestinal wall.” Ultimately, a healthy digestive tract translates into a stronger immune system. Now, new findings show that while antioxidant-rich foods are fine when eaten in large quantities, taking too many antioxidants in supplement form can put our health at risk. Researchers at Cedars-Sinai Heart Institute report that many people take way too many vitamins, believing that if a little is good, a lot must be better—but that is not the case. “If you are taking 10 or 100 times the amount in a daily multivitamin, you may be predisposing your cells to developing cancer,” warns institute Director Dr. Eduardo Marbán, who led the study.

Second Patch of Plastic Soup Spotted in Atlantic A rising tide of consumer plastics, jettisoned into the oceans via rivers, storm drains, sewage overflows and windstorms, is devastating the environment across the world, says Charles Moore, the ocean researcher credited with discovering a vast, plasticsinfested area in the Pacific Ocean in 1997. Now, his Algalita Marine Research Foundation researchers have defined a second vortex of garbage in the Atlantic Ocean. The soup of confetti-like bits of plastics stretches over thousands of square miles of the western North Atlantic, with the densest concentrations between the latitudes of Virginia and Cuba, including the unique Sargasso Sea ecosystem. Sea Education Association (SEA) oceanography faculty member Kara Lavender Law, Ph.D., clarifies: “There’s no large patch, no solid mass of material. If it were an island, we could go get it. But we can’t; it’s a thin soup of plastic fragments.” SEA, in Woods Hole, Massachusetts, which has monitored the North Atlantic for 22 years, expects that several such areas exist in the world’s oceans. The plastic soup has essentially become a permanent part of the ecosystem, posing harm to the entire marine food chain. The only remedy is to halt the influx of consumer plastics by producing less of them and recycling them all. Public education is key.

A recent report by the World Economic Forum warns that half the worldâ&#x20AC;&#x2122;s population will be affected by water shortages within 20 years. Unsustainable conditions are headed toward what the researchers term, â&#x20AC;&#x153;water bankruptcy,â&#x20AC;? that could incite a crisis greater than the current global financial downturn. Crops and people are in danger, as geopolitical conflicts are expected to rise due to dwindling water resources. During the 20th century, world population increased fourfold, but the amount of fresh water that it used increased nine times over. Already, 2.8 billion people live in areas of high water stress, according to the analysis. A concurring UN World Water Development Report adds that shortages are already beginning to constrain economic growth in areas as diverse as California, China, Australia, India and Indonesia. The Associated Press reports that the pivotal Ogallala Aquifer, in Americaâ&#x20AC;&#x2122;s Great Plains breadbasket, stretching from South Dakota to North Texas, continues to be drained at alarming rates, while the natural recharge rate is considered negligible.

BE A CLIMATE HERO Act up. Act now. by Bill McKibben
A
t any given moment, there are a thousand things going wrong in the world. If we were to list just major environmental problems alone we could go on for a long time, citing everything from toxic contaminants in our food to the scarcity of safe drinking water. This past summer, we all stared in horror at the slowly blackening Gulf of Mexico as the Deepwater Horizon oil slick spread on and below the water’s surface. Making such a list is such a depressing exercise that the temptation is to just walk away from the task. We might feel like a surgeon at a wartime field hospital, forced to do major triage. Where do we turn first? The half-good news is that our planet’s mounting environmental troubles aren’t isolated, individual casualties. If we can figure out what the keystone is, then we can collectively start to work to cure a bunch of the most pressing problems at once. By the same token, if we guess wrong, we can labor for years to correct a particular woe, only to have our hard work over26

whelmed by the underlying infection. Based on the scientific evidence, I think it’s pretty clear that the most crucial of all the complex issues we face today revolve around the causeand-effect relationship of burning fossil fuels and the accelerating changes in Earth’s climate. In short: If we can’t deal with global warming, nothing else we do will really matter. To put it more positively: If we can remove the needle from our arm that feeds society’s addiction to petroleum products, many of our other troubles would begin to wane.
Signs of the Times Let’s start with the hard stuff: Global warming is the first crisis we’ve ever faced that has the potential to shake our civilization to its core. So far, human beings have burned enough coal, gas and oil to raise the temperature of the planet about one degree Fahrenheit. That’s already been enough to cause all manner of troubles: n The Arctic icecap is melting, and quickly. By summer’s end in 2007, a

record-setting year, the northernmost continent, which moderates air and water temperatures for the whole planet, contained 25 percent less ice than the year before. As of this writing, the 2010 melt was outpacing that of 2007. n The Earth’s hydrological cycles are undergoing a dramatic shift. Because warm air holds more water vapor than cold, the general atmosphere is about 5 percent moister than it was 40 years ago. This means more evaporation, hence more drought, in arid areas. But on the rest of a planet, where what goes up must come down—we’re witnessing extraordinary increases in flooding. This year, for example, we’ve seen record (and lethal) rainstorms in Tennessee, Oklahoma and Arkansas, just within the 1.5 percent of the planet’s surface comprised by the continental United States. n Overall, temperatures are rising to near unbearable levels as that single degree average increase on the thermometer reverberates in savage heat waves. This past spring, India experi-
enced weeks of record temperatures that beat anything recorded since the British started measuring them in the early 1800s. Early this summer, seven nations smashed all-time temperature records. In Burma, the mercury set a new alltime record for Southeast Asia, at 118 degrees. In June, Pakistan went on to establish a new benchmark for the highest temperature ever recorded at any time, anywhere in Asia, of 129 degrees. All of this is due to a single degree of global temperature increase. The climatologists have warned us that if the United States, China and other countries don’t make a super-swift transition from the use of coal and oil, the world’s collective temperature will climb something like five degrees before the century is out. If one degree melts the Arctic icecap, we don’t want to see what five degrees looks like. So, that’s the bad news. Here’s the good news.
Alternate Scenario Let’s imagine we took the most significant step we could to speed the worldwide transition off of fossil fuel. Let’s imagine that the U.S. Congress and the United Nations managed to agree on a national and international scheme to set stiff pricing on coal and oil that accurately reflects the damage these fossil fuels are wreaking in the atmosphere. If that happened, then many other things would follow. The most obvious is that we’d see lots more solar panels and wind turbines. Suddenly, anyone with a spreadsheet would be able to see that it no longer makes sense to invest in a coalfired power plant. Anyone building a new apartment complex would immediately understand that it’s in his or her best interest to install solar hot water tubes on the roof. In China, the world leader in total energy use, yet also in renewable energies, 250 million people now get their hot water this way. But, such a simple and effective solution still has to fight against the force of economic gravity there, as elsewhere. As long as coal-fired electricity is absurdly cheap, renewable energy sources will stay marginal. The effects of a widespread switch
to clean and renewable energies wouldn’t be confined to the energy sector. Think about farming. We’ve spent half a century building a giant agro-industrial complex that runs entirely on fossil fuel. Yet author Michael Pollan recently calculated that it takes 10 calories of fossil energy to produce one calorie of food. Because that growing complex is a machine, not really a farm, the food it produces is terrible in terms of taste and nutrition, and includes toxic residues from pesticides, herbicides and chemically synthesized fertilizers. The ultimate irony is that we now devote the best farmland on the planet, the American Midwest, to growing highfructose corn syrup. It’s a prime culprit in our country’s diabetes epidemic. The ripple effect goes on and on. On the other hand, consider what would happen if the price of oil went up high enough that this nation could no longer afford to farm in the manner preferred by agribusiness behemoths? What would happen is that we’d need more Americans engaged in healthier farming, with human labor and ingenuity replacing some of the fossil fuel. That would increase yields per acre and also increase the quality of the foods we eat. Research studies reported by Jules Pretty, pro-vice-chancellor of the University of Essex, UK, in his book, Agri-Culture, have proved that small farms around the world are routinely as productive as agro-industrial lands, and that low-input farming, too, can feed the world with a wholesale switchover. Again, this is already starting to
happen: Farmers’ markets continue to be the fastest growing part of our nation’s food economy; the last agricultural census found that the number of farms in the United States is increasing for the first time in a century-and-a-half. That’s good news and potentially great news, but small farming, co-ops and organic production will remain a small, marginal trend until the price of energy changes. The day that happens is the day that everyone finds their way to a local farmers’ market. Helpful changes roll out, from bus and train commutes replacing cars to the rising popularity of densely inhabited urban blocks, as cul-de-sac suburbia loses its appeal. Local storefronts naturally get the nod over big box chain stores, too, and so on.
The Key to Change How do we make it happen? How do we change the price of energy, which is what almost every observer thinks is the only way we can make a real change in the physics and chemistry of the current global warming phenomenon, and make an effective difference in the short time allowed before the harmful consequences explode exponentially? If only everyday people could do it solely by making personal energy improvements around the house, at work and in their communities—through such steps as switching to more energyefficient light bulbs and riding our bikes to work. Such changes are good to do, of course, and it all helps, but we don’t have a century to turn around our global situation. Which means we also

need to engage in… politics. We need to put the pressure on our leaders now to change the price of energy now. Remember—they’re getting plenty of pressure from lobbyists pocketing profits on the other side. Because of government subsidies and cartels, fossil fuel is the most profitable industry humans have ever engaged in; last year, Exxon Mobil Corporation made more money than any company in recorded history. That buys them a lot of power. We won’t be able to outspend them, so we will have to do what people have always done when they have found themselves needing to take charge of their future: We must build a movement. Politicians won’t change because scientists tell them we have a problem—they’ll change because enough people tell them they have to, or they’ll lose their jobs. Building just this kind of movement is entirely possible.
Citizen Action Plan
Scientific data shows the ocean becoming more acidic at an unprecedented rate as surface waters continue to absorb approximately a third of manmade atmospheric carbon dioxide emissions. ~ National Research Council, Ocean Acidification, 2010 the rallies were orchestrated by poor, black, brown, Asian and young people, because that’s what most of the world is made up of. Six weeks later, at the 2009 UN Climate Change Conference in Copenhagen, 117 nations endorsed that 350 target, which was good; except that they were 117 poor and vulnerable nations, not the richest and most addicted to fossil fuels. So, we fight on. This October, we’re holding a 10/10/10 Global Work Party. It’s set to spread around the world, too, with people in thousands of communities doing something practical: putting solar panels on local schools, harvesting community gardens and planting mangroves along rising shorelines. In Auckland, New Zealand, they aim to repair every bicycle in every garage. The intention will be twofold. Point one is that bikes are good. Ditto solar panels. We need both in our communities. Point two acknowledges that we know we can’t solve climate change one bike path at a time. So we’re also intent on sending a strong political message to our leaders: If we can get to work, so can you. Right now. If I can climb up on the roof of the school to hammer in a solar panel, you can climb to the floor of the Senate and hammer out some helpful legislation. It’s time to shame our government and corporate leaders a little, and maybe
Two years ago, a few concerned citizens joined me in launching 350.org, a wholly grassroots campaign that takes its name from a wonky scientific data point. NASA scientists led by James Hansen have published reams of data showing that, “Any value for carbon in the atmosphere greater than 350 parts per million [ppm] is not compatible with the planet on which civilization developed and to which life on Earth is adapted.” It sounds like an unpromising banner to rally people around—too serious and too depressing, because we’re already well past the 350 mark. The atmosphere is currently at 392 ppm carbon dioxide, which is why the Arctic is melting. So far, we’ve racked up some successes; in October 2009, we held an International Day of Action that created some 5,200 demonstrations in 181 countries. That’s a lot—in fact, CNN called it, “… the most widespread day of political action in the planet’s history.” Online images posted from those events banish wrong preconceptions people might have about who is and is not an environmentalist. inspire them, too. We all need to get to work addressing climate change right where we live, in our communities. We need to build towns and cities that make sense and create jobs for families. We also need to build a world that works, because the best organic gardener on Earth won’t be able to cope with 30 straight days of rain, or a month with no rain at all, without helpful policies. That means resorting to politics, which is another way of saying that we must work together as people for better solutions to climate change than what we have now. It can be beautiful. Natural Gas: The Ugly Truth

f you read the newspaper or watch the news, you have probably heard the words “natural gas,” “hydraulic fracturing,” and “Marcellus Shale.” Depending on your viewpoint or if you actually live here, natural gas is either the best or the worst thing that has ever
happened to Pennsylvania. The Marcellus Shale is a 400 million year-old deposit of natural gas trapped inside the shale level thousands of feet below the Earth’s surface. It spreads across the majority of Pennsylvania as well as parts of Ohio, New York, and West Virginia. People have extracted natural gas from the Marcellus for decades, but it has only recently gained widespread media attention as new technologies have made more natural gas accessible. Natural gas advocates say gas from the Marcellus Shale could meet our countries energy demands for 10 years or more and that natural gas is a clean-burning fuel that will bridge the gap between fossil fuels and clean energy like wind and solar. Advocates also suggest that it will solve the budget crisis and make landowners rich. Yet, as we drill for this resource under our farms, forests, and cities, ugly truths are bubbling to the surface. extract as much gas as quickly and as cheaply as possible utilize a mixture of sand, water, and chemicals to force the gas out. This process is called hydraulic fracturing, or fracking. The fracking solution is designed to open the porous rock substrate in the earth to allow the trapped gas to escape the formation and flow into the drilled pathway so that it can be captured at the wellhead at the surface. Unfortunately, the fracking solution also creates pathways for the gas and solution to travel laterally for miles or horizontally up into water wells, water aquifers or even to the surface where the methane gas and fracking solution chemicals are released into the atmosphere. Another unspoken truth about fracking is that it requires up to 7 million gallons of water to frack a well once. A well can be fracked multiple times, so with thousands of wells in Pennsylvania, and thousands more proposed, that means we will be redirecting our drinking water supply to the natural gas industry by billions of gallons. In addition, pollution from gas drilling is dangerous to public health. The fracking solution is considered proprietary and the exact chemical make-up is not available to the public. (See PA DEP compilation of chemical MSDS used in fracking operations). Some of the chemicals stated on the list may actually have no value to the fracking process. Dr. Theo Colburn, the president of the Endocrine Disruption Exchange and one of the foremost experts on the health and environmental effects of the toxic chemicals used in fracking, has done extensive research that shows numerous minerals in the fluid are endocrine disruptors and carcinogens, often causing residents who live near gas drilling operations to suffer with conditions such as headaches and dizziness to spinal neuropathy. When accidents occur, and they have, these chemicals spilled into our waterways. People like Norma Fiorentino of Dimock, Pennsylvania, have their water wells explode from leaking methane. And that’s just what happens on the surface.

It’s no wonder that the President’s Cancer Panel Report recommends choosing foods grown or produced without pesticides. Genetically Modified Foods: An estimated 70 percent of common processed foods lining supermarkets shelves, including Halloween candy, contain at least one genetically modified (GM) ingredient. Yet, genetically modified crops and foods (GMOs) have never been tested for long-term safety. Since the introduction of GM crops 13 years ago, Benbrook says pesticide use has increased by more than 300 million pounds. Because GM crops are designed to withstand pesticide spray, over time, weeds and pests naturally develop resistance, requiring more and stronger chemicals. Mercury Rising: Recent U.S. Geological Survey research found mercury contamination in every fish sampled from 291 streams nationwide. More surprising, the Institute for Agriculture

Pregnant women, infants and children are most vulnerable, because expectant, young and growing bodies are less able to break down and excrete toxins. Pesticides: According to Charles Benbrook, Ph.D., chief scientist at the Boulder, Colorado-based Organic Center, more than 1 billion pounds of pesticides are used each year in the United States alone. More than half of the most widely applied pesticides are known endocrine disruptors, compounds that mimic natural hormones and interfere with normal development. Plastic Poisons: Like pesticides, plastics can release endocrine disruptors such as bisphenol A (BPA) into food and water. Even more scary, “These compounds are biologically active at extremely low and previously undetected levels,” says University of Missouri biologist Frederick vom Saal. Food Dyes: The Center for Science in the Public Interest reports that common food dyes can pose unnecessary risks for cancer, hyperactivity and
allergies. Each year, approximately 15 million pounds of synthetic food dyes are added to foods that are heavily marketed to children. Itâ&#x20AC;&#x2122;s frightening to think of our children as guinea pigs for profit, isnâ&#x20AC;&#x2122;t it? Hereâ&#x20AC;&#x2122;s how to keep family members safe: Buy Organic: Researchers at Washington State University found that switching children from a conventional to an organic diet resulted in a dramatic drop in pesticide exposure. By definition, organic foods cannot contain GMOs, synthetic pesticides, artificial hormones or antibiotics. Everywhere across North America, birds, insects, animals and sea life are repeating their annual rituals of migration, a vital call of the wild that has been enriching life on Earth since long before humans appeared on the scene. This outing doesn’t have to mean sacrifice, either; you can still visit Aunt Stella or go waterskiing. Planning ahead makes it possible to include unforgettable memories of wildlife in action, as adventurous observations of the animals create family lore, educate and perhaps, bring life lessons.

Plus, community and school librarians are sure to be helpful. Once you know where you are going and why, a strategy is in order. The best natural migration corridors are along mountain ridges, river valleys and coastlines, yet it’s possible to see migrating animals just about anywhere.

Every year, starting in October, a spectacular congregation of 25,000 monarch butterflies takes place in Pacific Grove, outside of San Francisco. The overwintering insectsâ&#x20AC;&#x2122; habits are so reliable that the city calls itself, â&#x20AC;&#x153;Butterfly Town, USA,â&#x20AC;? and levies a fine for bothering the bugs. Each fall in Ohio, huge flocks of southbound shorebirds put on a show in several areas along Lake Erie known for superior viewing. Observation points include the Magee Marsh State Wildlife Area and Ottawa Wildlife Refuge, both part of a national Regional Shorebird Reserve, as well the Kildeer Plains and Big Island wildlife areas further inland. Seasonal residents in Florida arenâ&#x20AC;&#x2122;t called â&#x20AC;&#x153;snowbirdsâ&#x20AC;? for nothing. This subtropical peninsula is either a destination or way station for hundreds of migrating species. Fish, too, perform their own annual odyssey. Down in the Florida Keys, sailfish, grouper, kingfish and cobia are around in the fall and winter, species that you wonâ&#x20AC;&#x2122;t catch in the summertime. Bison, which once numbered in the millions and roamed the central and western plains from Colorado to Texas before being hunted to near extinction, have recovered in managed herds in Yellowstone National Park and on private ranches. These splendid animals, along with elk, pronghorn antelope, mule deer and bighorn sheep, undergo an annual altitudinal migration among mountain foothills in the face of winterâ&#x20AC;&#x2122;s arrival. They do it not so much because of the temperature change, but the impending scarcity of food. Park rangers can tell you the best spots to observe this vanishing phenomenon. Look up over New York and Toronto to witness thousands of Canada geese making their seasonal pilgrimage in their signature, V-shaped formations marked by unmistakable honking. On their way from Hudson Bay to sunnier climes, migrating geese can become
an iconic symbol for young children, graphically pointing out the way that wild animals move about the Earth. Scores of them land for a pit stop in the Chesapeake Bay region and near Midwest lakes.

ence fair project. Scouts can work on assignments for merit badges, too. Afterward, back at home, review what each child thinks was the best part of the experience and discuss where they might want to go next. Youâ&#x20AC;&#x2122;ll discover that for nurturing a meaningful bond with Earthâ&#x20AC;&#x2122;s creatures, nothing can replace witnessing nature in the wild. showing the growing connection between diet and health. Since WWII three major factors have negatively impacted our health and environment: large quantities of highly refined sugar have been added to our diet, harmful chemicals have been added to our methods of farming and raising animals, and in addition to chemicals in our food, we ingest chemicals used in other areas of production. According to the U.S. Department of Health and Human Services, unhealthy eating and physical inactivity are leading causes of death in the United States, contributing to 310,000 to 580,000 deaths each year. Believing that food plays little to no role in our health is a grave falsehood. In fact, a healthy diet will give the body what it needs to stay healthy â&#x20AC;&#x201C; the right amount of energy, raw materials, phytochemicals, antioxidants and other nutrients. The Center for Disease Control and Prevention in the U.S. has identified 148 toxic chemicals present in the blood and urine of Americans of all ages. In the name of convenience, our food is genetically modified, x-rayed, sprayed with pesticides and herbicides, demineralized, hormone and antibiotic injected, and highly over-processed all in an effort to make our foods better for us. We fail to account for the â&#x20AC;&#x153;cocktailâ&#x20AC;? effect of these processes and substances in our bodies and the links to disease. In an extensive study by Cornell University professor, T. Collin Campbell PhD, linking cancer and the diet, he found that if a tumor is provided with a healthy environment and devoid of the inflammatory conditions needed to grow, it will not succeed in spreading. To get started, first you must not be overwhelmed. Every step you make, no matter how small, will bring you closer to better health. Begin by reading labels. Eliminate anything that has artificial flavors, then preservatives, then artificial coloring and so on. In the beginning, reading every label is time consuming but you will find yourself quickly navigating through the pitfalls of the store aisles like a pro. Next, try not to microwave. It can zap the nutrition out of foods and changes its chemistry, rendering it not only nutritionally devoid, but also harmful. If microwaving is a must, never microwave anything in plastic. When storing or cooking food, avoid using plastic containers. Plastics are fat-soluble, are easily absorbed in high fat foods and are hormone disrupting. Use only glass or ceramic bowls, wooden spoons, stainless steel utensils and cookware. Genetically Modified Organisms (GMOs) are often in the news, and issues surrounding their safety are a source of ongoing debate. GMOs are crop plants created for human or animal consumption using the latest molecular biology techniques. These plants have been modified in the laboratory to enhance desired traits such as increased resistance to herbicides. Crops such as soy, corn, cotton, and tomatoes have all been altered with this technology, despite the growing concern that introducing foreign genes into food plants may have an unexpected and negative impact on human health. The prevalence of GMOs in supermarkets is more widespread than commonly thought. Currently, genetically modified products do not have to be labeled as such. Buying and eating organic foods is more important than ever. When a food is labeled certified organic it is free of
hormones, antibiotics, pesticides, herbicides and genetically modified organisms. Studies are proving the nutritional values to be much higher in organically grown foods. Eating more cultured products is also recommended. Live cultures as we know them today are found in milk products (yogurt, kefir), soy products (soy sauce, miso, tempeh), vegetable products (sauerkraut, kim-chi), and certain starches (sake). Fermentation occurs in beverages such as beer and wine, as well as grains, herbs and modern antibiotics. Culturing foods has been done for over 5,000 years worldwide and was utilized not only for storing and preserving foods but also as a good way of building proteins and vitamins from low-grade starchy foods to render them more nutritious. The good bacteria supplied by this special class of foods are very beneficial to balancing our entire digestive tract, which in turn enhances our health and immune system. Eating a colorful rainbow of foods is also beneficial. Not only does the color of a variety of fruits and vegetables appeal to the eye but it is also indicative of the endless sources of antioxidants, vitamins, nutrients and fiber they possess–making them cancer fighting and cancer protective. Red foods are rich in caratenoids, lycopene and anthocyanins. Orange and yellow foods are rich in caratenoids, flavanoids, vitamin c, fiber, and complex carbohydrates. Green foods are rich in caratonoids, folic acid, minerals, fiber and chlorophyll. Blue and purple are rich in antioxidants, anthocyanins and phenoloics. The indole and sulfur compounds found in cruciferous vegetables (broccoli, cauliflower, kale, cabbage, brussel sprouts, and collard greens) make them especially worth mentioning. These compounds fight cancer and are full of nutrients. Hydrogenated or partially hydrogenated oils made from trans fatty acids of vegetable oils are very damaging and could negatively impact the heart. An abundance of Omega-6’s found in many oils including corn, sunflower and cottonseed, can increase inflammation in the body. Saturated animal fats are high in cholesterol. Organic, cold pressed, extra virgin olive oil, an omega 9, is a good choice to use in cooking.
Ghee, or clarified butter, is a healthy alternative to butter. It contains no transfatty acids or oxidized cholesterol, is lactose and casein free and is nonhydrogenated. Omega-3 and Omega-6 are two important essential fatty acids (EFA). Essential fatty acids are essential to life and health. Scientific research continues to link an impressive list of health problems to EFA deficiency and imbalance. According to the American Heart Association, Omega-3 and Omega-6 imbalance is responsible for many chronic heart conditions. Omega-3 is found in fresh cold-water fish, flax, wild game, sea vegetables, pumpkin seeds, hemp seeds, walnuts, free-range organic poultry and their eggs. Refined sugar and white flour should be avoided not only for their empty nutritional values and calories but also for the devastation they perform on the body. Immune, endocrine and hormonal disturbances created by these substances provide the perfect environment for disease and cancer to grow. Unfortunately, they are found in most prepared and packaged foods making up the majority of the American diet today. In the book Ph Miracle, Robert O. Young PhD and Shelly Redford Young, describe that the measure of the Ph level in the blood can also reflect proper functioning inside the body. According to Young, cancer as well as many other diseases, thrive in acidic conditions. Eating Alkaline refers to eating a diet which enables the body to maintain an optimum Ph level between 7.3 and 7.4. Alkaline foods are fruits and vegetables. Acidic foods are fats, grains, sugar, pasta, meat, dairy, poultry and eggs. Grains and beans on their own are not a complete protein but when you combine any whole grain with any dried bean you get a complete protein. By using this combination your body receives essential fatty acids (EFA’s) and protein as well as fiber and complex carbohydrates. Nuts and seeds are also a great source for essential fatty acids and protein. They are high in fiber and complex carbohydrates. It is especially important that they are fresh. The oils found in nuts and seeds can easily spoil if left un-refrigerated for too long.
Almost all spices offer the special gift of life along with flavor. Not only are they flavorful and fragrant but also they are rich in antioxidants, anti-microbials and cancer protective properties. To curb your sweet tooth, try tooth with organic dark chocolate without added refined sugars. Not only will you benefit from its high antioxidant content but it will also satisfy your cravings. As is with everything, it should be eaten in moderation. Drinking one cup of organically grown coffee without cream and sugar has been shown in studies to have some health benefits, but anything beyond this should be avoided. Sodas, including regular, diet and caffeinefree, have no nutritional or caloric value and should be avoided. including the body. From this perspective, while we feel individual, we are actually connected to all of existence. It is from this perspective of non-duality that emotional healing through energy work begins. Most are accustomed to thinking of the world as solid and largely unchanging, with definite rules that keep it functioning in a certain way. Our daily lives still rely mostly on this view of the world and this is generally comforting. We experience our physical bodies in a mechanical way. Our experiences are defined in terms of the absolute, threedimensional space and linear time. As a result, it is easy to see ourselves as mechanical and lose sight of the deeper human experience that lies within each of us, but there is another level of reality, another level of being human that we are not always aware of or connected with. In her book, Hands of Light, wellknown energy healer Barbara Brennan says our emotions and experiences are reflected in our aura, or energy field. Consider this. It’s as if the body is the riverbed, and the energy moving

In response to stress, the human body is perfectly set up to provide a constant feedback messenger system from the brain to the adrenal gland. Since adrenal glands help us cope with stress by secreting numerous hormones such as cortisol, DHEA, aldosterone, epinephrine, and norepinephrine, the body’s ability to deal with stressful situations is greatly affected if the adrenal gland is not functioning properly. When called upon in stressful situations, the nervous system (NS) innervates the adrenal gland and changes heart rate, breathing, digestion, and blood pressure. Commonly called “the fight or flight response,” the sympathetic nervous system (SNS) is the body’s alarm clock for rapid thinking and acting. This is of great use to us if were running from harm, in a car accident, or even preparing for a presentation. This response prepares our body to fight, to be able to withstand injury and to be able to flee with enough energy and ability to run from a dangerous situation. However, modern scientific research suggests that factors moving us away from our normal life expectations trigger this same stress response. The bottom line is that we overuse the adrenals. Everyone is affected by stress, yet it is how we perceive and respond to the stressors in our lives that can have a big impact on our health. If the adrenal gland and the SNS are
in constant use, there will be eventual health consequences, which are manifested differently for each individual. Three main states that can occur: adrenal over-functioning, adrenal resistance, and then adrenal exhaustion. To determine how you respond to stress, answer the following: • Are you easily overwhelmed by everyday tasks that once were a breeze? • Do you get angry over things that never used to bother you? • Have you gained weight around your middle? • Is your sleep not as regular or as restful as it once was? • Is it difficult for you to concentrate on important tasks? • Do you crave foods that you know are unhealthy for you? • Are you catching more colds than before? • Has your libido decreased? • Are you easily irritated? • Do you feel as if you have no energy by the middle of the afternoon? • Are you using coffee or chocolate to make it through the day? • Are you drinking more alcohol to relieve stress? • Do aches and pains linger longer than they once did? If you identify with several of these questions, your body’s system for adapting to stress is not responding optimally. If you identify with more than three or four of these statements, your body is sending signals that life’s stresses are overwhelming its ability to keep up. Taking the steps to eliminate stress and following an adrenal recovery program can be very beneficial. For instance, did you realize that eating habits also activate the adrenals? Blood sugar and inflammation control is very important. Avoid excessive fats and carbs, and when possible eat organic foods, especially vegetables, as much as possible. a Buddha statue Broughton admired in a friend’s garden. “It was surrounded by frangipani (plumeria) trees, and some of the fallen blossoms had gathered at the feet of the sleeping Buddha,” she recalls.

ed pigments and flowing curves are characteristic of Broughton’s contemporary style, as are the frangipanis, a beloved flower. “My favorite part of this artwork is the tranquility of the facial expression,” she advises. “The painting is really meditative. EXERCISE FOR SPINE HEALTH SMART TRAINING BEATS BACK PAIN by Michael Curran
A
s exercise reaches beyond the realm of pure athletics to include fitness fans everywhere, people have noticed that their efforts to stay in shape often are thwarted by back pain. That’s why knowledgeable trainers counsel that any well-designed workout must honor the health and mechanics of this important part of the body. Dr. Karen Erickson, a New York City-based chiropractor and spokesperson for the American Chiropractic Association, sees firsthand why alignment is crucial, especially if an individual has a history of back pain. “Good stability and good flexibility are the big factors for keeping the spine healthy,” she says. No matter what exercise modality one chooses to practice, Erickson advises beginning conservatively, as benefits can be achieved without pushing the level of difficulty.
Core Strength Counts Developing muscle strength throughout the torso is key to maintaining the correct spinal curvature for a strong back. In addition to the muscles that directly attach to the spine, the spine is also stabilized by deep stomach strength, strong pelvic floor support and the upper thigh muscles. Pilates is well-known for its focus on such core conditioning. “Pilates uses apparatus expressly designed for working the abdominals and the back,” explains Lolita San Miguel, from her studio in Palm Beach Gardens, Florida. “Most of our work is in the supine or prone positions [lying down], so that the vertical pull from gravity is lessened, and the body can be worked with a more correct alignment, and thus more effectively.” One of a small group of active practitioners who studied with Pilates method founder Joseph Pilates, San Miguel is a living testament to the benefits of the practice. Posture Matters Despite well-meaning parental advice, it turns out that good posture entails more than just pulling our shoulders back. Alignment practices like Restorative Exercise and the Alexander Technique were designed to develop an awareness of full-body mechanics as we go about daily activities. Annette Cantor-Groenfeldt teaches the Alexander Technique in Santa Fe, New Mexico. “The central theme of the technique is the spine, learning how to maintain length through the spine as you move,” she advises. “It is used extensively by actors, dancers, musicians and other high-performance people whose activities depend on postural alignment.” In 2008, the Alexander Technique was the subject of a yearlong study published in the British Medical Journal, where it was shown to be effective in relieving lowback pain. The system focuses on both mental and physical aspects of movement, and usually includes passive treatments on the massage table, where the
