Recipe: Left over Turkey?

This tasty Italian cheese and tomato bake is a great way to use up leftover

meat, especially good with Turkey. A true family favourite. Ingredients 2 small or 1 large onion, chopped 2 garlic cloves, crushed 3 tbsp olive oil 2 tsp dried oregano 3 x cans chopped tomatoes or cherry tomatoes 1 tbsp sugar Last years winner

little splash vinegar about 500g leftover turkey, shredded into chunks

The rules are simple: • High resolution images of local landscapes in or around Brecon, Talgarth or Hay-on-Wye • Images need to be landscape, not portrait

1 x 125g balls mozzarella 2 good handfuls fresh breadcrumbs Preparation method Fry the onion and garlic in the oil until softened. Add the tomatoes and sugar, a little splash of vinegar and some seasoning, then simmer for 20 mins until really thick. Stir in the turkey and transfer to a baking dish. Heat oven to 220C/200C fan/gas 7. Tear over the mozzarella in chunks, then scatter over the breadcrumbs with a bit more ground pepper. Bake for 20 mins until turkey is piping hot through, and the top is golden and bubbling. Eat with mash, jackets, rice or pasta

Orchestra Strings Brecknock Sinfonia’s January concert features its excellent string section in an attractive selection of lighter music. Popular conductor Michael Bell is again in charge, with Laurence Kempton leading the orchestra.The programme includes some much loved music for strings but opens with a rarely performed piece by Sibelius, the Andante Festivo.The normally gloomy Finn is seen here in a more relaxed mood. Percy Grainger’s ‘Molly on the Shore’ is a typically quirky and jovial arrangement of a folk tune. Even by Bach’s standards the Concerto for Two Violins is simply sublime, one of the greatest works ever written for the instrument. For this performance Laurence Kempton is joined by his gifted teenage son Elliot in the solo parts. One of the classics for string orchestra, Tchaikovsky’s Serenade for Strings, concludes the concert in the composer’s expansive style. Brecknock Sinfonia’s recent performances have been drawing enthusiastic responses from their audiences. Come and enjoy high quality approachable classical music from leading professional players and talented amateurs from across South Wales and the Marches!

Wild in January It is a dark and frosty night. Soon after sunset owls hoot and then you hear yelps and wailing barks or even screams. Not right for dogs, these eery noises sound like cries of pain. Foxes are calling to each other. This is mating time, females come into season for three weeks and are fertile for just three days. Soon a vixen will find a den for the litter of usually five cubs due in seven to eight weeks.

Protecting wildlife for the future

Foxes are most active at night, hunting for their favourite voles or rabbits, or scratching up earthworms. A few weeks ago they were scrumping blackberries. Brecknock Wildlife Trust with funding from The Cooperative seeks your help to find out more about foxes and other mammals in our area. If you hear or see any, please let the Trust know what, where and when. There is a survey sheet with pictures and tick boxes linked from the home page of the website, www.brecknockwildlifetrust.org.uk, or from the Office in Lion House, Bethel Square, 01874 625708. A few years ago, Helena taught herself Welsh and has since competed at eisteddfodau; she is active in choral singing, drama, the Women’s Institute, Brecon Speakers Club, the Political and Theological Discussion Group and Brecon Poets.

News from local W I s BrecKnock Federation of Women’s Institutes Powys Brecknock Federation has organised a variety of events recently. The Harvest Supper was a great success, the home made food being served by members of the board of Trustees. Morrisons PLC very kindly allowed members to “bag-pack” in the Brecon store enabling funds to be raised for the Federation. The Federation supported “White Ribbon Day” with a service held at Brecon Cathedral. Rose Morris organised a shopping trip to Birmingham where a“German Christmas Market” was being held. Shopping with a difference!

Several members competed at the RWS Winter Fair, with Lizzie Stephens being awarded third prize for her floral arrangement. The Federation and many W.Is decorated Christmas trees which formed part of the display at Brecon Cathedral. As usual our Christmas Fair was well supported. Items for the various stalls and raffle had been donated by the Federation members. Crickhowell W.I was responsible for making teas and coffee. The W.I year concluded with a mulled wine and mince pies morning. A warming end to the years activities.

The exceptionally well attended Bingo Evening was held at Bishops Meadow, with the caller Gomer Probert, ably assisted by his wife Lynda. On the first Sunday in December a Carol Service was held in Callwen Church, Glyntawe. The vicar and organist was the Rev. Allan Brookfield. The President of Abergrave W.I, Mrs Jane Pugh welcomed everyone to the service. Members read extracts from the Bible, also poetry with a Christmas theme. The choir conducted by Jennifer Thomas sang two carols, and Llangynidr W.I sang one, the accompanist was Linda Games.

Ieuan Evans will trace the history of the pottery industry in the Ewenny area and illustrate the subject with examples of the work of individual potteries and potters. Ieuan is a native of Carmarthenshire and has had a career in education in agriculture, becoming Head of Department of Agriculture, Horticulture, Construction and Engineering at Breconshire College of Further Education.
