In this edition, we brought you to the highlights of “BaselWorld 2016” which you may have missed in Switzerland. The world renowned watch makers and jewellery designers all come together to the yearly most important exhibition. We are going to show you some of the participating top luxury brands' exclusive and feature products to be launched in the market.

Coming up, we have interviewed two young chefs, both earned their Michelin star status -Arnaud Bignon “The Greenhouse” in Mayfair and Tom Sellers “Restaurant Story” in Town Bridge, who shared with us their successful stories.

Horological Euphoria In an era where smartphones are used to do nearly everything including telling time, this is a place where people still take pride in the craftsmanship that goes into wrist watchmaking.

So although in some settings you might be seen as a person who is too forward or perhaps even rude for passing judgement on the make, provenance or price of a stranger’s wristwatch. At Baselworld that is simply the norm and if you go against it, you might be seen as aloof.

Luxury Jewellery One of the biggest events for stone exhibitors and jewellery designers, the trend for coloured gemstones was very much alive with several brands having incorporated vibrant stones into their high jewellery collections.

Brief History Baselworld has been taking place for the past 99 years. But it was not until 1986 that nonSwiss exhibitors were welcome to join the fair.

Today, luxury brands from various countries are present at Basel and it is an opportunity for retailers and collectors to see all the novelties for the coming year.

The Glitz and Glamour in Basel This glittering watch and jewelry show took place from 17th to 24th of March, attracting both designers and collectors to Basel in Switzerland. In their own little world using jargon only familiar to them, people from all over the globe come together to experience this unique exhibition.

ALT1-C/PB The ALT1-C/PW was Bremont’s first non-limited edition polished steel watch forming part of the core collection. As a natural extension of the line, the brand launched the ALT1-C/PB at Basel.

This visually stunning classic automatic chronograph is a new classic. It has a black alligator strap, polished stainless steel pin buckle and has a stainless steel and clear case back. Equally impressive inside as it is outside. Its functions are beautifully displayed on a black metal dial with polished numerals and nickel hands integrated with Super-LumiNova for legibility at night. Did I mention it is water resistant too?

MBII White The MB range of watches has become iconic for Bremont and it is no surprise that they released the MBII White. The timepiece available in a 43mm case comes in either a calf-skin leather strap or a temple island rubber strap. A must-have for any serious collector.

It features the distinctive knurled effect on the aluminium barrel inspired by components on the Martin-Baker designed ejection seats. Equally the yellow and black loop at the end of the second hand is a direct reference to the ejection pull handle.

The TAG Heuer Calibre Heuer-01 Symbolically christened the Heuer 01 in honour of the founder, Edouard Heuer.

Because 01 represents the marked horological development of the calibre 1887, the backbone of the new collection.

This design opens up a huge range of possibilities, with an infinite combination of materials, colours, treatments and finishes. The automatic chronograph features a black skeleton dial, visible skeleton date disc with a date window, polished and sand-blasted hour and minute hands with luminescent markers. The 45mm reference comes with red or white perforated rubber straps for a stylish, sporty look.

The TAG Heuer Calibre Heuer-01 计时机芯系列

The CARRERA Heuer-02T The Carrera Heuer-02T is developed directly from the DNA of the CH-80 chronograph, and forms part of the Heuer Carrera limited edition collection formed of 250 pieces. The 32mm movement is housed in a grade 5 titanium, lightweight and more shock-resistant latest generation case and offers a power reserve in excess of 65 hours.

With an infinite combination of materials, treatments and finishes, this assembly is complemented by a matte black alligator strap sewn onto rubber. This timepiece interprets TAG Heuer's tradition watchmaking's most famous complications, the chronograph and the aesthetically pleasing tourbillon.

We bet this special edition will bring a smile to many face.

Royal Warrants are granted by the Royal Family as a sign of commitment to the highest standards of service, quality and excellence. There are currently about 800 warrant holders in the UK. Only The Queen, The Duke of Edinburgh or The Prince of Wales can grant Royal Warrants. Each of them can grant only one warrant to any individual business, but a business may hold warrants from more than one member of the Royal Family. In the late 18th Century, Royal tradesmen began to display the Royal Arms on their premises and stationeries. But it was Queen Victoria who ensured that Royal Warrants gained the prestige they enjoy today.

A company must keep doing business with the Royal Household for at least five years to be considered on the warrant grant list. Then the company needs approval from the Lord Chamberlain, the head of the Royal Household and Chairman of the Royal Household Tradesmen’s Warrants Committee. M : MARQUESS 《爵》 F : Fiona Rae M : How did Fiona Rae go from start up to a Royal Warrant holder?

F : I received a loan from The Prince's Trust in 1992 which helped me start my businesses. Shortly after that The Prince of Wales awarded me with a gold medal for 'Best Product' at the International Trade Fair exhibition which was sponsored by The Trust. Since then we kept growing to the successful business we are today.

F : It has been fantastic to be recognised in this way, highlighting our dedication to our craftsmanship. As part of this journey I'm thrilled to have had the chance to meet His Royal Highness on several ocassions including when he visited our workshop last year, where he was able to see where our jewellery is made.

F : I look at natures different colours, patterns and textures and I try to capture certain qualities of it in my work. Sometimes I design around rare and unusual gem stones. F : I am currently working on the ‘Sacred Lotus’ collection. It is considered an example of divine beauty and I want my pieces to reflect this. I am making a ring encrusted with diamonds inspired by the delicate form of the flower and will also include enamelled pieces to this collection.

M : Tell us about the nature of your bespoke products and what service that offers a customer? What is the most popular bespoke product?

F : When a customer commissions a bespoke piece, it allows them to be involved in all aspects of the process, from the conception of idea to the realisation of it. For example they can select the stones to be incorporated in the design. Some of the commisions My customers are assured of quality, I’m currently working on range from personalised value and provenance of stones supplied enamelled gold and diamond locket to a gold enamelled necklace incorporating rare Paraiba tourmalines. F : We work closely with our customers regardless of where they are in the world. And I have been fortunate to work with a diverse range of customers, each with their own requirements. Communicating via email or by phone allows us to discuss clients' requirements at length and keep them closely involved with the progress of any commission. And we use secure specialist couriers allow us to deliver high value items.

The social custom of Afternoon Tea was originated in the 19th Century with Anna, Duchess of Bedford. She would invite ladies in her society for four O’clock tea and cakes. And the practice quickly became famous among the British aristocrats, the Royal Palaces and Woburn Abbey.

Different Tea Parties Royal Tea is for those extra special occasions adding a glass of champagne to the traditional Afternoon Tea. Afternoon Tea also known as "low tea", is served around four O'clock. It is taken at a low table like a coffee table that is placed beside an armchair or sofa. Afternoon tea is generally comprised of fresh baked scones with cream, butter and preserves, sandwiches, a variety of cakes and tea.

High Tea also known as “meat tea”, was what servants ate around six O'clock after the upstairs had their Afternoon Tea. The menu consists of savoury hot dishes like roasted ham, slices of thick bread and a big cake to share. Served at a proper table.

The upper classes developed their own variation of High Tea – a meal eaten when their servants were away or not available. It was the standard Afternoon Tea with pigeon, veal, salmon and fruit.

Gloves are taken off and placed on your lap with your napkin going over the top. Hat comes off after six O’clock.

Where to Start If a waiter places a teapot on the table without pouring the tea, then the person who is nearest to the pot should pour for everyone.

Milk is added last and each person pours for his/her own. Stir the tea back and forth in a 6 to 12 motion like a clock and NOT round and round to avoid creating an awful racket and splashing.

How to Eat and Drink

The correct way to hold your fine bone is by making your thumb and index finger meet in the handle. Support the handle by resting it on your middle finger. NEVER hook your finger through or raise the little finger.

If you are using tea bags, do NOT twist the teabag string around the spoon, place it on an empty sauce. Place the small teaspoon on the saucer, behind the cup. Do NOT slurp even if the tea is piping hot. Saucer is NEVER raised when the cup is lifted unless you are away from the table.

To prevent saucer spills, fill the teacup threequarters full or slip a folded paper napkin under the cup. Do not forget to remove the soggy napkin and place it on another empty saucer.

M : Born in Barcelona, now married to a Swede and based in London. Do you think your multicultural background has influenced your brand?

ML : I believe my background corresponds to the diverse multicultural approach and taste in London.

And I channelled this to create a brand that blends in European taste with a touch of British essence.

Mixing the heritage of contemporary designs with great Spanish craftsmanship.

M : Why did you name the handbags after cities?

How many cities are represented so far?

ML : Our brand typifies an international ethos, representing a client who just like me, born in one city but living in another. A person who likes to travel and experience different lifestyles and cultures. Each city inspires a new style and collection, so far we have about 70 different cities.

A collection can range anywhere between four bags to eighteen bags, depending on the styles, colours and our creativity.

M : What do you say gives you an edge compared to other British luxury brands?

ML : We create luxurious handbags that are practical, have beautiful contemporary designs and from part of our sales we fund a charity. Our brand ticks these boxes and that sets us apart from our competitors.

Our day bags are unique as they feature five different compartments where you can fit your laptops, iPad, notebook, phone and stationery.

M : What are you lining up for SS16? And where is your factory based?

ML : We have an exciting collection lined up for SS16. We have used contemporary shapes, bright colours and experimented with different contrasts of suede material. Our factory is in a small town in Spain the middle of nowhere, which produces leather goods for brands like Lowe and Christian Dior.

ML : Yes, we do. Clients get to choose which of our existing bags they like and we customise them to match their personal style. You can change the handle length, have it monogrammed or change the leather material. The product will take anywhere between one to four months. At the moment, the service is only available at our studio. But in future, the service will be available online.

Interview with Jeremy Morris 董事总经理兼首席设计师访谈 M : MARQUESS 《爵》 J : Jeremy Morris, Managing Director and Principal Designer of David Morris M : How have you continued to grow the company since taking over from your father?

J : Since I took over the company from my father I have worked with a few selected stores around the world and opened boutiques internationally. I think Asia will be the one that will continue to develop as the number one market and we have two stores in Hong Kong. We are also opening a new boutique in Paris this Autumn which is really exciting for the brand.

M : 在接手您父亲的事业後，您是如何继续壮大公司的？ J : 在继承父亲的事业以後，我开始跟世界各地的一些精选店家合作，并以国际化的方式在各地驻点，开 设品牌精品店。我认为亚洲将是未来我们首先锁定的发展市场，而我们也已经在香港开设了两家分店。另 外，我们也将在今年秋天在巴黎多设一家精品店，为此我感到相当兴奋。

M : How do you feel about your daughter Phoebe's involvement in the business? What are the pros and cons of being a family run business?

J : The name over the door is not only my name, or my father’s, it’s my family name. Phoebe has been involved in the business previously, which I believe is fantastic. She has a real passion for the brand and really enjoys the family business aspect but she has now left to pursue her dream career.

M : 您对女儿 Phoebe 在家族企业中的角色有何看法？一个家族企业的好处与坏处又是什麽？ J : 对我来说，这个品牌所代表的不仅仅是我自己的名字，抑或是我父亲的名字，它代表的是我们一整个 家族的名字。 我认为非常棒的一点便是，Phoebe 在之前就已经参与过品牌的工作，并且对家族品牌充满 热情，又非常享受家族企业的概念。不过她现在已经离开，转而追求属於她自己的梦想事业了。

M : Since succession, to what extent is your father involved in the running of the company? Have you worked together to create any pieces or are there plans to do so?

J : My father has no involvement in the business anymore. He and my mother are enjoying a welldeserved break! Having grown up watching them work together as such a good family team, I really enjoyed it. And I value having my wife Erin supporting me. It is amazing, I really like the idea that she is working here like my mother did.

M : Tell us about your relationship with the James Bond films?

J : My parents are friends of Roger Moore and they knew Maurice Pinder who did the titles for the Bond films. It was through Maurice that David Morris jewellery ended up featuring in Diamonds are Forever, The Man with the Golden Gun, The World is Not Enough and we also designed a special necklace for Teri Hatcher in Tomorrow Never Dies. We may have been the first jeweller to work with the producers of James Bond.

M : Your greatest inspiration as a designer?

J : My greatest inspiration is the stones that I find. Opening the packet of paper to find, yet again, the most amazing stone you’ve ever seen is such an amazing feeling and to be able to imagine the piece you are going to make straight away is so fantastic. I sometimes want to go straight back to the workshop and start drawing up the design instantly.

M : 作为一位设计师，您最大的创意灵感来源为何 ?

M : What is more important to you, to be a big brand name or to sell fine jewellery?

J : I want to keep control of the business and would like to ensure that it continues to grow and develop in line with my concept of a family jeweller. I do not see us as a 20 or 30-store company or a massive conglomerate. Our aim is to keep creating and producing high quality, unique pieces of jewellery. Apart from our signature collections, most of our pieces are one-off, handcrafted pieces for the individual.

M : 什麽对您来说更加重要，是打造伟大的品牌，还是销售精致珠宝珍品 ?

J : 我想要有控制地以自己对家族珠宝商的概念，经营我们的家族品牌并确保它持续壮大，而不是一个拥 有 20 到 30 间分店的公司或是一个庞大的集团。我们的目的是持续创设并生产高品质丶独特的珠宝饰品。 除了我们的招牌系列以外，我们大部分的珠宝都是为个人特制的独一无二手工款。

M : Describe the David Morris Jewellery style? And how is it changing to fit the contemporary style and trend?

J : My father’s taste is for classical French style jewellery but when he was studying at the Central School of Art and Design (now Central St. Martins) he was introduced to more avant-garde, abstract jewellery. I also have a love for French designs, and I am also inspired by Parisian jewellers. There is such an interesting design heritage and a real passion for fabulous craftsmanship over there.

To Arnaud, achieving the perfect balance between ingredients is the most important thing when creating a dish. He adds that sometimes it might take over two weeks to find exactly the right combination. Unlike traditional French cooking, Arnaud refrains from using cream or butter in his dishes.

“Fat masks the other flavours - and it is not always healthy,” says The Greenhouse chef.

His love for his grandfather's garden led him to discover his passion for food and cooking. Arnaud worked at a local French kitchen where he gained experience of working in a kitchen and for the next couple of years he worked across various kitchens in Paris, including Restaurant Drouant at Le Meridien Montparnasse, and iconic Michelin three-star Hotel Le Bristol.

Chef Arnaud Bignon grew up in Le Mans, France. His grandfather had a garden where he grew all of the fresh produce for the house and he taught Arnaud how to select the very best ingredients from a young age. This was where Arnaud developed his respect for the seasons and discovered his obsession for quality and freshness.

From Greece to Britain Arnaud took up his first Head Chef position at Spondi in Greece. The change of ingredients and climate pushed him to come up with more creative cooking techniques and recipes. While working in this kitchen he also discovered his passion for fish, specifically shellfish. After working at the restaurant for three years Spondi gained its second Michelin star: this was a first for Greece.

Soon it was time for change and as he was looking for a new challenge he met international restauranteur Marlon Abela, who invited him to London. Renowned for his passion to delivering epicurean excellence Arnaud was excited to visit Marlon and his restaurants in London. Arnaud describes the capital as a fascinating city when it comes to fine dining. At The Greenhouse, guest feedback is of paramount importance and first-time and regular diners can often be found in the kitchen with the chef and his team.

In Greece, he had to travel a lot to find the best ingredients and great suppliers, therefore he is pleased that things in London things are different. “Food suppliers make contact with the restaurant directly and the chef can pick and choose what they like,” says Arnaud.

"Just one spoon is an explosion in your mouth," says the cheerful Chef.

This Spring, The Greenhouse’s menu features Scottish langoustines. Arnaud’s classic meets avantgarde food philosophy ensures his customers can enjoy this local delicacy without the accompanying flavours masking the subtle flavour.

Located on the south of the Thames in Bermondsey, the restaurant received its first Michelin star only 5 months after opening. At this time Tom was only 26 years old. During opening week the beautiful kitchen inside the giant glass walled timbered structure gained the applause of restaurant critics and bloggers alike.

The menu is inspired by Chef Tom Sellers' culinary career and the history of British food. The dishes are an edible story and each one is inspired by a nostalgic memory from Tom's past.

Tom tries to recreate them through the different senses, sight, taste and smell for his guests to enjoy. Learn from the World's Best Chef Tom Sellers has worked with some of the world's best chefs. When he was 16, he managed to get a job in the kitchen of Tom Aikens. It was under Tom Aikens that the chef learned how to cook Michelin star standard food. He later worked for two years at Per Se in New York under Thomas Keller. Then at Noma in Copenhagen with chef René Redzepi.

Tom's seasonal menu is known as a “British fare” or “Story” as it lays reference to stories from his childhood and also well-known fairy tales. A dish of burnt onion, apple, gin and thyme is inspired by a fond childhood memory of eating hot dogs and onions at the Goose Fair.

The restaurant not only shares stories with you, but they also invite you to participate in their narrative by bringing a novel with you when you dine there. At the end of your meal, leave your book at the library and let it become part of their growing story collection.

T : There is no magic formula to any type of success. Restaurant Story has required a lot of hard work, dedication and attention to details to get to where it is. I have a brilliant team at Story who are committed to bettering the restaurant every day, from perfecting the folds in our napkins to sourcing the best ingredients for our dishes.

T : I got a job as a pot wash at a local pub when I was 15. It was there that I experienced a kitchen for the first time and fell in love with cooking. At 16, I decided to move to London to seek professional training.

T : Tom's influence on my cooking can be seen every day. It goes from the way I imagine food to believing in myself and knowing I can achieve anything if I push myself. It was a privilege to learn from someone so accomplished.

M : What are the must-have dishes you recommend for Restaurant Story guests this Spring season?

T : Lamb in springtime is not a new idea though our new main course, Herdwick Lamb, comes from a rare and particularly hardy breed. It comes in three parts: to begin with there is a fried brain and little gem salad, then there is a main dish of lamb cooked in four ways, followed by a pie. It is a real work of craftsmanship.

Award-Winning Cast Derek Jacobi plays Mercutio, an Olivier Award winner for Best Actor. Derek is also a successful television actor as seen in ITV's comedy Vicious. Besides winning several prestigious theatre awards, Derek is a founder member of Royal National Theatre.

Our Juliet is played by Lily James, an actress on theatre stages and TV screens too who gained her international fame by playing Lady Rose in Downton Abbey. Lily recently featured on BBC's and The Weinstein Company's production of War and Peace. And the adaptation of Pride and Prejudice and Zombies in which she stars alongside Sam Riley.

And finally, Richard Madden will act our handsome Romeo. You might know him from his compelling role as Robb Stark in the globally acclaimed HBO series Game of Thrones. He must be quite good because he previously took up this role in Shakespeare's Globe's adaptation of Romeo and Juliet.

The Red Hat was painted by Charles Buchel, who was responsible for more A-list celebrity portraits than any other artist of his day. The stars of the stage were his speciality and he claimed he painted more actors and actresses than any other artists of the late Victorian and Edwardian eras. He worked for the famous actor and theatre manager Sir Herbert Beerbohm Tree (1852-1917) for 16 years, and painted him in nearly all his Shakespearean stage character roles.

In this beautiful example, entitled The Red Hat, he has paid meticulous attention to colour balances, skin tone, fabrics and textures, but the identity of this captivating young model remains, so far, a tantalising Edwardian enigma.

Cheval Turc by Antoine-Louis Barye Cheval Turc is the most important single animal sculpture of the 19th century, which represents Antoine-Louis Barye’s work at its very finest.

Influenced by the power and romance of the paintings of Gericault and Delacroix, this superb bronze study has an exquisite deep autumnal patination of green, black, brown and orange.

Cheval Turc is generally regarded as the model which most powerfully epitomises Barye’s unique sculptural vision. Infused as it is with the romantic spirit of his age, the Cheval Turc also recalls the antique equestrian group of Marcus Aurelius and the Renaissance precedent of Leonardo’s drawings of a rearing horse.

Claridge’s Easter Egg is a long-standing tradition of the hotel and every year it produces a limited edition of only 100 eggs for the season. The pastry team led by Head Pastry Chef, Kimberly Lin, creates the luxury delights using the highest quality of Valrhona chocolate in three varieties – dark, milk and white.

Using the finest cacaos, two halves are created and filled with home-made chocolate quail eggs. The gourmet Easter eggs are closed with absolute precision and wrapped in bespoke black and white Art Deco foil, tied with a black satin bow and packaged in a glamorous pale greenish coloured box.

Distillery Tours in Scotland

The month long programme of events celebrating Scotland's world class food, drink, music and culture across Scotland will kick off on 28th April, with the popular and picturesque Spirit of Speyside Festival. The Speyside region is home to some of the biggest names in Scotch whisky, and the Festival is a 5 days celebration comprising more than 500 different events.

The art of whisky distilling has been perfected in Scotland for generations. Distillers take pure water from Scotland's crystal-clear streams and plump.

The golden barley from the fields and transform them into a precious spirit, which is then poured into oak casks and tucked away in warehouses to mature.

The programme has a wide range of different activities for aficionados and novices alike, including exclusive behind-the-scenes distillery tours, tastings of rare and vintage whiskies and the chance to meet people behind the production of some of the world's leading brands.

Located in West London as an affluent and densely populated area, Kensington is home to many of London's European embassies. It also contains the major museum district of South Kensington, which comprises the Royal Albert Hall as well as Victoria and Albert Museum. Restaurant Ours After Chef Tom Sellers successful run with Michelin-starred Restaurant Story, he is now opening a second restaurant in Kensington in the end of March. The restaurant is taking over the space formerly occupied by The Collection. It will be a 120seat restaurant, with a bar and upper mezzanine.

For Tom's second venture, he has partnered with Chef Daniel Phippard. Before this Daniel worked at Kensington Place and prior to that, he was the Executive Head Chef of Ernik in Moscow. One of the most beautiful features of the new restaurant is its open interior feel. With ceilings up to 10 metres high and three enormous trees planted inside the restaurant.
