ETHAN BORTNICK 14-year-old pianist and Hollywood, Florida native Ethan Bortnick will be returning to the Broward Center as he performs his popular The Power of Music tour at the Amaturo Theater. NORMAN LOVE CONFECTIONS CHEF MOLLY COOK NAMED CHOCOLATIER OF THE YEAR Chef chocolatier Molly Cook of Norman Love Confections has won the coveted title of Chocolatier of the Year as well as the People’s Choice Award at the Pastry Live competition in Atlanta held Aug. 20-22. Cook, along with Norman Love Confections Chef Chris Botterman, competed with the most accomplished chocolate chefs in the country to showcase their expertise and abilities. Each competitor produced two different chocolates sold in their shop. Cook’s creations included a white chocolate molded piece, banana passion cheesecake and a hand-dipped piece of almond raspberry made with 49 percent milk chocolate. Botterman’s molded entry was coconut, and his hand-dipped piece was Snickers-inspired, with peanuts and caramel. “I am extremely proud of the dedication to excellence that Molly and Chris demonstrated in this competition,” said Norman Love, founder and CEO of Norman Love Confections. “They are both artistic and passionate in their craft, and work tirelessly to be the very best in our industry.”

NICKLAUS CHILDREN’S HOSPITAL ANNOUNCES NEW LEADER Michael L. Harrington has joined Nicklaus Children’s Hospital as president and chief operating officer. In this role, he will oversee day-to-day operations of the 289-bed pediatric specialty hospital, the flagship of Miami Children’s Health System. Mr. Harrington brings to the position more than 20 years of experience in healthcare leadership. Most recently he served as president of Christus Health Louisiana, where he provided operational leadership for a 284-bed medical center, 84-bed rehabilitation center and a 130-bed long-term-care facility. Mr. Harrington’s experience includes developing and opening a pediatric emergency department, and general acute pediatric inpatient services in several facilities as well as a pediatric intensive care unit and perinatology services. His pediatric experience also includes overseeing mental health services for children and adolescents, as well as developing and managing physician practices and leading outpatient rehabilitation services.

WATER WELL SYSTEM PROFESSIONALS PROMOTE “PROTECT YOUR GROUNDWATER DAY” Private household water well owners can do much to protect their drinking water from contamination, and there’s no better time to begin than following national Protect Your Groundwater Day September 6, thanks to the Florida Groundwater Association and the National Groundwater Association (NGWA). Here are four steps well owners can take to protect their drinking water: • Water testing by a drinking water testing lab can reveal whether there is anything that presents a health risk in the water. This is the first step toward taking appropriate action. • Proper handling of hazardous household substances can prevent certain contaminants from getting into groundwater in the first place through inadequate containment in storage, improper use, and ineffective disposal. • Regular well system maintenance can prevent system deterioration or failures that allow bacteria, for instance, to get into the water. • The use of qualified water well system professionals is a protection against well owners inadvertently introducing bacterial, chemical, or other types of contamination into the well. NGWA does not recommend well owners service their own wells because often this not only creates contamination issues but also can result in mechanical problems or physical danger to the well owner.

Pines Welcomes First Honorary Firefighter BY ANDREA CARNEIRO
S
TANDING BEFORE FAMILY, INCLUDING his great grandma and 50 plus Pembroke Pines Firefighters, 16-year-old David Frey was sworn in as Pembroke Pines First Honorary Firefighter (HFF) by Fire Chief John Picarello. David was presented his own custom Firefighter uniform and gear by Pembroke Pines Officials Mayor Frank Ortis, Vice Mayor Carl Shechter, Commissioners Angelo Castillo, Jay Schwartz and Fire Division Chiefs Ruben Troncoso, Jorge Hernandez, Sandra Lluis and John Penick. Frey, who is battling Acute Lymphocytic Leukemia, participated in a variety of activities at the station. “The morning ceremony was made more meaningful when David’s sisters and grandfather pinned on his honorary firefighter badge to his Class B shirt,” said Division Chief Sandra Lluis, Pembroke Pines Fire Marshal, who was involved with helping execute David’s dream come true day. Following nine months of treatments, the most recent just three days prior, the men and women of the Pembroke Pines Fire Department were especially watchful of David as he embarked on a highly physical, outdoor, action packed day with temperatures in the ‘90s. Newly sworn in HFF Frey reported for duty to Station 69, located at Pembroke Pines Fire Department Headquarters, complete with PPFD badge, ID card, helmet, bunker coat and gear bag. He participated in crew line-up and received his first assignment, to Rescue 269, where he was welcomed into the PPFD brother and sisterhood of fire service. At Station 33/Perry Airport, HFF Frey had hands on experience operating the controls and discharging water from the Aircraft Rescue Firefighting (ARFF) truck. Upon completion of the ARFF assignment he boarded Engine 99 and was briefed on his next assignment and rode out to the Pines Fire Training Facility. At the Pines Fire Training Facility Frey responded to multiple fire scenarios: he extinguished an LP Gas fire, was raised 125 feet in the bucket of Ladder truck # 99 and used the water cannon to extinguish a fire on a tanker and storage container. The HFF honed his hose line skills by knocking down orange cones using the hose water stream. “David performed exceptionally well at these skills in spite of the heat from the fires and the heat of the day,” said Lluis. Having worked up an appetite for lunch, HFF Frey was reassigned to Engine 79 where he enjoyed lunch at the station, with his family. The last assignment of the day saw HFF Frey reassigned to Ladder Truck/Platform 99 and depart for Station 69 where he was recognized for his courage and optimism. He was presented with a plaque, farewell tones and officially relieved of duty. “David, you are now one of us,” said Division Chief of Operations Ruben Troncoso. “We are proud to know you and we all welcome you to visit us anytime.”

No one took this more seriously than retired Police Officer and Animal Advocate Michael Hones, who passed away earlier this year. On August 11, 2016 Officer Hones’ family was invited by Pembroke Pines City and Police Officials and Pooches in Pines members to officially open the Animal Assistance Program/Pooches in Pines Kennel in memory of Officer Michael Hones. The goal of Pooches in Pines is to reunite dogs found by Pembroke Pines Police Officers, with their owners and in the case of animals who are not claimed, find them a forever home. “Mike was an outstanding animal advocate, who consistently went above and beyond caring for the many dogs and cats in need of a home and protection,” said Pines Police Chief Dan Guistino. “Mike was known as the ‘go-to guy’ by his fellow officers for accessing veterinarian or other resources that could assist an animal in need of services. Pines Resident Graduates From FEMA’s National Emergency Management Advanced Academy

EMBROKE PINES RESIDENT GEORGE Navarini graduated from FEMA’s National Emergency Management Advanced Academy at the Emergency Management Institute in Emmitsburg, MD in mid-July. Navarini, an Internationally accredited Certified Emergency Manager (CEM) through the International Association of Emergency Managers (IAEM) is a PhD student at Oklahoma State University. He currently serves locally as the Emergency Management Director for the Council of the Archdiocese of Miami as well as a nationally as the Student Region President of the IAEM. Navarini was awarded the honor after completing a full curriculum that provides strategic level training, education and essential skills needed to manage dynamic and resilient emergency management programs. A native of South Florida, Navarini completed the four one-week resident courses in the Advanced Academy including: A Survey of Advanced Concepts in Emergency Management, Assessment and Application of Professional Style in Emergency Management, Advanced Concepts and Issues in the Emergency Management Organization and Advanced Concepts and Issues in the Emergency Management Community and Profession. The National Emergency Management Advanced Academy reinforces the qualities
needed to manage emergency management programs, provides relevant management theories and concepts, and utilizes appropriate case studies. Advanced Academy participants work within a collaborative environment on projects and establish a network of their peers. The Academy is designed for Emergency Management mid-level managers wanting to advance their skillset. Students learn skills critical to performing emergency management responsibilities, such as: program management and oversight, effective communication at all levels, integrated collaboration, and strategic thinking, along with completing a Research Project one month prior to attending the final course. The Advanced Academy provides students the opportunity to demonstrate their critical thinking ability through a guided research project. Healthy Eyes for Back to School BY DR. LINDA CHOUS, CHIEF EYE CARE OFFICER, UNITEDHEALTHCARE
A
UGUST WAS CHILDREN'S EYE HEALTH AND SAFETY MONTH, MAKING now an ideal time to get your child’s eyes checked as the new school year begins. Children face unique eye health challenges, including injury, infection, reading difficulties and nearsightedness. According to the American Optometric Association, 80 percent of what a child learns is through his or her eyes. The inability to see clearly can affect a child’s physical, mental and social development, which in turn can affect academic and athletic performance and, ultimately, self-esteem. Many times a child is unaware and won’t complain if vision isn’t normal. Early detection of vision problems is crucial, as untreated vision problems can impair development, affect learning, and possibly lead to permanent vision loss. As your child heads back to the classroom, schedule an appointment for a comprehensive eye examination. It’s also important to look for these signs of possible vision problems: »» 3D movies: 3D movies require eyes to process information as a team, so difficulty viewing 3D content can be a sign of underlying vision issues. After watching a 3D movie, look for these “3D” signs of vision problems: discomfort, dizziness and the inability to appreciate 3D content. If your child shows or talks about any of these signs, head to the eye doctor. »» Squinting while reading or watching television: Ask your child if the text or screen is blurry or if reading gives them a headache. A “yes” answer could be an indication of an underlying vision problem. »» Difficulty hitting or catching a ball: If your child regularly misses or drops the ball, schedule an eye exam. Vision impairment might be affecting hand-eye coordination. This could also be due to a lazy eye, otherwise known as amblyopia. Amblyopia is when one eye is favored over the other, which can affect depth perception, making it difficult to assess objects in front of you. Another factor that can affect your child’s eye health – and adult eye health – is digital eye strain, which is caused by frequent or prolonged use of computers, smartphones or tablets. Help your child practice healthy vision habits by keeping computer screens and tablets about 30 inches away from their eyes, resting their eyes every 20 minutes; and blinking frequently. Also, it’s good to practice the 20/20/20 rule: every 20 minutes, take 20 seconds and look at something 20 feet away. Remember that a school’s vision screening does not look for the same problems that a comprehensive eye exam does. A child’s first comprehensive eye exam should occur between 6 months and 12 months, again at age three and before entering school at age five or six. A visit to an eye health professional can help detect conditions such as crossed eyes (strabismus), lazy eye, nearsightedness, farsightedness and astigmatism early, before visual development and learning is affected. Treatment may include glasses, patching and/or eye exercises. For adults and children, a comprehensive eye exam also can uncover other health conditions not usually associated with the eyes, including multiple sclerosis, diabetes, high blood pressure, rheumatoid arthritis, elevated cholesterol and Crohn’s disease. A recent study by UnitedHealthcare found that six percent of these chronic conditions were first identified by eye care doctors. For some diseases, including multiple sclerosis and diabetes, eye care professionals identified 15 percent of study participants diagnosed with those chronic conditions. Make an appointment for your child now as part of this year’s back-to-school routine. In partnership with your child’s eye doctor, you can make sure your child is ready for school and ready to learn.

VERY YEAR BROWARD COUNTY HOLDS A colorful and interactive celebration to honor those who have passed on, in a street party for the living. On November 2nd at 4 pm, thousands will gather for the festivities in downtown Fort Lauderdale for the Day of the Dead Festival and Parade in homage to a cultural tradition hundreds of years old. For this ancient Mexican tradition, the spirit lives on in South Florida thanks to promoters from Broward County’s Puppet Guild of South Florida. Revelers dress up in Mexican traditional garb and skeleton costumes, as well as many interpretations of famous Mexican artist Frida Kahlo with masks and other facial make up representing nocturnal artistry from beyond the grave. They drive out their homes heading into the city to participate in this larger than life walk through the streets, bask in a cultural experience and show their love for all those who have gone on before them, as well as celebrate in the process we call death. Exciting things happen during and leading up to the Day of Dead Festival. Several projects accumulate into one puppeteer-ed picture to represent this after-life sentiment. Attendees of the festival have the opportunity to literally craft their own personal festival experience by creating original works. Enthusiasts are able to work together in masterminding a giant puppet inspired by international characters related to the Day of the Dead celebration. With workshops for attendees to create masks from scratch, residents come prepared to parade in costume on November 2nd. If creating original puppets from scratch doesn’t jump start your imagination, then perhaps a clay animation project will be more your speed. You will work to create an original story line, and then use clay animation technology. Project leader Jerrod Bailey has recruited a industry experts to help with the claymation process, “I’m pleased to announce that multimedia professionals and educators Xander Snell and Dr. Amy Carlson will be returning as guest artists this year,” said Bailey. “Xander is a production engineer who spent many years lecturing on audio engineering; last year he contributed gear as well as his time and talent to the workshop. Amy is an artist, teacher, and administrator who founded the South Florida Stop Motion Animation Guild.” There will also be a rare opportunity to view life from the perspective of the early conquistadors, by emulating their armor and becoming a part of the annual Day of the Dead processional. According to Robert Feeney, helping to recreate the bygone era for attendees, one of the best possible ways to understand the culture of the people is to

experience it personally. Recipes for Pan de Muerto (Bread of the Dead), and Sopa de Muerto (Soup of the Dead,) will be given to participants to create at their homes. Using both New World (pumpkin and corn) and Old World traditional foods (flour, eggs, and spices). Those who come together will craft armor and other dress that conquistadors would have worn and then march with the processional on the day of the parade. Additionally there will be a series of classes in Mexican Folkloric Dance at the Holiday Park Community Center. Four classes will share in the style of traditional dancing, and those who attend will be able to dance on stage during the Day of the Dead celebration. It takes more than reading about traditions to understand the power in celebration. When it comes to the Day of the Dead, Broward County gives its community a celebration on a scale that no one will soon forget. Bailey states the importance of really becoming a part of the festival. “Engaging firsthand with any activity changes your view of it, makes it more meaningful,” he said. “When people create their own Day of the Dead themed stories, they connect with the holiday on a personal level.” Visit dayofthedeadflorida.com for more information.

The Basics on Zika Prevention

HERE’S A NEW FOUR LETTER WORD IN TOWN AND IT’S BEEN INESCAPable for the population of South Florida this summer: Zika. The virus that’s taken hold of the area (and the world) is transmitted by mosquitoes and causes only a brief, mild flu-like illness in most but is extremely dangerous to pregnant women; Zikarelated birth defects have now been declared an international public health emergency. So what to do? Here are the basics on Zika prevention courtesy of Nicklaus Children’s Hospital...
FOR ADULTS:
»» Pregnant women, men and women of reproductive age and their partners should avoid travel to the designated areas identified with active Zika virus transmission. »» Use insect repellent on yourself and all members of your family, including little ones, when going outdoors. Wearing long sleeves and pants are also recommended. »» Use Environmental Protection Agency (EPA)-registered insect repellents with one of the following active ingredients: DEET, picaridin, IR3535, or oil of lemon eucalyptus or para-menthane-diol. (children

Children under three years of age should not be given oil of lemon eucalyptus or para-menthanediol). »» The Zika Virus can be passed through sex from a person who has Zika to his or her partner. Condoms (and other barriers to protect against infection) can reduce the chance of transferring the virus to a partner. »» Ensure there is no standing water in and around your home. Even a capful of water is a breeding ground for hundreds of mosquitos. The Florida Department of Health in Miami-Dade County asks residents

to “spill the water” if you see standing water anywhere you go outdoors. »» Wear protective clothing, long sleeves and pants when traveling outdoors.
FOR CHILDREN:
»» Protect children from mosquito bites by dressing them in clothing that covers arms and legs. »» Use mosquito netting to cover the cribs, strollers and baby carriers.
»» Never spray insect repellent directly on a child’s face. Instead, spray it on your hands and then apply sparingly, taking care to avoid the eyes and mouth. In children older than two months, do not apply insect repellent onto a child’s hands, eyes, mouth, or to irritated or broken skin. (*Do not use insect repellent on babies under two months of age. Do not use products containing oil of lemon eucalyptus or paramenthanediol on children younger than three years old.) »» If your child has symptoms, take him or her to see a doctor or other healthcare provider. »» Fever (≥100.4° F) in a baby less than two months old always requires evaluation by a medical professional. If your baby is less than two months old and has a fever, call your healthcare provider or get medical care.

S WE BEGIN THE NEW FISCAL YEAR IN MIRAMAR, it’s always a great time to take stock of what we have accomplished, review the past and look forward as we set goals for our great city. One of the best accomplishments this past fiscal year was the opening of the new police headquarters located at Town Center. After 10 years of protecting our residents and businesses from a temporary location, our police department has a state-ofthe-art new home. Another accomplishment is the Adult Day Care Center that is slated for completion this month. Our Social Services department began accepting applications in August for those residents who will benefit from the services in the new facility. One of the best accomplishments by the city is our ability to grow and attract new businesses. Over the past year, more than four major corporate relocations have come to our city bringing more than 100 high paying jobs. Miramar continues to move in the right direction. The Florida League of Cities presented Miramar with the coveted City Spirit Award during their annual conference in August at the Diplomat Hotel for our Disco Soup entry in which participants "chop to the beat" to promote awareness about reducing food waste. Held at the city’s Inter-generational Fruit & Vegetable Garden in Historic Miramar, it was a celebration where strangers came together to slice, dice, and boogie, transforming "ugly" or blemished veggies into a deliciously prepared meal. The initiative empowers participants to save money, energy, and our planet while having a lot of fun. Community and Economic Development continues to issue record number of permits as businesses and more residents see the possibilities in our city. BARBECUE CHICKEN NACHOS
Makes: 1 large serving »» 1 rotisserie chicken »» 1 cup barbecue sauce »» nacho chips »» 1 cup shredded Jarlsberg Cheese »» 1/4 cup chopped green onion »» sour cream (optional) Heat oven to 350 F. Pull white meat off rotisserie chicken and place in mixing bowl. Add barbecue sauce to pulled chicken and gently mix together. Scatter nacho chips on oven-safe dish and place pulled chicken on top. Shred cheese with grater and coat top of chicken. Place in oven for approximately 10 minutes. Sprinkle green onion on top and serve with sour cream, if desired.

JALAPENO POPPERS
Makes: 16 »» 16 whole jalapeno peppers, rinsed and drained »» 2 logs (4 ounces each) goat cheese »» 1 cup shredded Jarlsberg Cheese »» 1/4 cup grated Parmesan cheese »» 1/4 cup diced green onion (scallions) »» dash of hot sauce »» cilantro leaves »» mini hot red peppers (optional) Using small sharp knife, cut slit down one side of each pepper. Leave stem intact and remove seeds and veins. In bowl, mash all cheeses, onion and hot sauce. Divide among peppers, stuffing each generously. Refrigerate. (Note: Recipe can be made ahead to this point.) Arrange peppers in heavy aluminum foil packet. Grill 8-10 minutes, or until cheese begins to melt. Garnish with cilantro and, if desired, hot red peppers.
CHEESE AND MUSHROOM PIZZA
Makes: 1 pizza »» 1 premade pizza dough (14-16 ounces) »» 5 tablespoons tomato sauce »» 2 diced Roma tomatoes »» 8 ounces shredded Jarlsberg Cheese »» 2 ounces grated Parmesan cheese »» 8-10 sliced mushrooms »» 2 teaspoons oregano »» arugula (optional) Heat oven to 425 F. Follow premade pizza dough instructions on package. Spread thin layer of tomato sauce and fresh tomatoes on uncooked pizza dough, sprinkle with cheeses, top with mushrooms and finish with oregano. Bake pizza in oven for 15-20 minutes, or until golden brown. Garnish with arugula, if desired.
