Henry’s House of Coffee

F

amous Armenians around the world always make us feel proud, and “TourInfo” magazine doesn’t loose any chance to interview them. This month famous Armenian coffee roaster Henry Kalebjian and his son Hrag Kalebjian living and working in the USA, San Francisco, agreed to find some free time and share the story regarding their path to success in coffee business with our readers. Mr. Henry, thank you for accepting our request on giving interview for “TourInfo” magazine. Can you tell us a bit about your Armenian roots and Armenian ancestors? Both my mother and father were very young when they had to flee Armenia to escape the genocide. My father, Boghos, was born in Hajn, Turkey and was the youngest of 7 children. His brothers hid him in tall grasses, and eventually sent him away to an orphanage. His mother and father were killed and he never got a chance to see them. My mother, Shnoreek, was born in Everek Turkey, and had one brother. She had a very similar experience as my father, and was sent to an orphanage to survive. I was born in Beirut, in the city of Hanj.

How did you decide to start this coffee business? Was the path to success difficult? My father owned a bakery in Hajn, Lebanon and we would serve coffee to our customers. Back then coffee wasn’t easily available, there were no stores like Costco where you could purchase coffee, so you had to roast it yourself. I learned to roast coffee at a young age, around 12 years old. When I moved to the United States, I became a drafter, designing large heating and venting systems. When I got laid off from that job, I decided I wanted to own my own business. There was an Armenian man named Antranik Devletian who was selling a coffee store called House of Coffee. I thought it was the perfect match, so my wife and I purchased the business in 1983 and we’ve been roasting coffee ever since. 10 TOURINFO MAGAZINE

What makes your coffee different from others? The biggest difference is the relationships that we have built with our suppliers and farmers over the past 30 years. We source the highest quality beans from around the world including countries like Kenya, Ethiopia, Colombia, and even Jamiaca. We also roast our own coffee on-site in our San Francisco store 6 days a week. That ensures that the coffee is always fresh. We know that your coffee is very famous among Americans and foreigners; would you like to bring your coffee into Armenian market? I am always open to exploring new ideas and business ventures, especially if they help support Armenians. As we see your son Hrag is also engaged in coffee roasting industry, did you have influence on his decision? When my son Hrag was younger I would bring him into the store and show him how to bag coffee, make drinks, and clean the roasting machine. He was around 12 or 13 years old, similar to me. However, I always wanted my children to have a higher education, so I stressed college, and made sure they had a good foundation. Upon graduation, Hrag went into corporate finance and was successfully leading a team of analysts at an insurance company. However, he realized that our coffee business was very special and 4 years ago made the switch to help me out the business. He has done an amazing job, and I am so proud of him. Have you ever been to Armenia? If no, would you like to come? Unfortunately, I have never been to Armenian but my goal is to visit my country in the near future. Will you please share one of your favorite coffee recipes with our readers to try every morning? My favorite coffee recipe is making Armenian Coffee. As a conclusion, what is your advice to Armenian young generation especially living abroad? The most important advice to the young Armenians is to make sure you do not lose your language and culture. Without those two, the Armenian heritage will be gone. Speak Armenian at home, to your children, and to each other, it is the most important tool we have to keep our ethnicity alive. Legends and myths of Armenia

UNESCO Intangible Heritage Armenian “Lavash” Bread

W

orld famous UNESCO has recently declared “Lavash” bread as Intangible Armenian Cultural Heritage of Humanity. Though the neighboring countries also submitted their applications for lavash to be announced as the integral part of their cuisine, nevertheless Armenia won… Lavash bread is inseparable part of every Armenian family’s everyday dish. Lavash is commonly served rolled around local cheeses, greens or meats, and can be preserved for up to six months. It plays a ritual role in weddings, where it is placed on the shoulders of newlyweds to bring fertility and prosperity. The group work in baking lavash strengthens family, community and social ties. As other cultural values, this one as well boasts with a list of legends, here is one of them. In the ancient times, there was a king Aram of Armenia. It so happened that during one battle, the Assyrian king Nosor captured him. There was a condition brought forward by the winner: “You will stay hungry, without bread for ten days. On the eleventh day we will compete in archery - if you win, I will let you go unharmed, you will return to your people with gifts, honorable for a king.’’ The next day Aram demanded to bring the most beautiful armature from the Armenian 14 TOURINFO MAGAZINE

army standing at the borders of Assyria. Assyrian soldiers hurried off. Armenians immediately guessed that their king hinted at something, and to gain the time to think, they detained soldiers throughout the night. At dawn, the Assyrians rushed back to the king Aram and gave the armature to him. They did not know that thin bread (Lavash) was hidden in the armor. In those days no one knew anything about Lavash and couldn’t even guess that the bread could be hidden in armature. Aram took the armature, and then suddenly said that it was not the most beautiful onr, and the soldiers had to go back again to bring another. But Armenian king did not like any of them making the soldiers bring new armatures every day till the expiry of the stated date. On the eleventh day Nosor and Aram went on a shooting range. Nosor was sure that Aram, left without bread, lost courage, strength and keenness of vision. But what a surprise! Aram came off victorious in the competition and returned to his country with honor through the help of Armenian bread which saved him. After returning to Armenia, the king ordered to announce across the country: “Henceforth, Armenians must bake only Lavash instead of other breads…’’

Where to go this month? Kasagh canyon This historical-natural monument is situated in Aragatsotn region (marz) in Saghmosavan village. The canyon is unique especially with its caves, ancient church, and petroglyphs to observe. The sight is especially attractive for those who seek for adventures.

Hovhannavank Monastery Built in the 13th century; the sight is situated in Aragatsotn region (marz). The monastery stands on the edge of the Kasagh River canyon. The centerpiece of the monastery is the Cathedral built between 1216 and 1221 through the donation of Prince Vache Vachutian.

Mother See of Holy Etchmiadzin Mother Cathedral is situated in Armavir region (marz). The original church was built in the early fourth century. The Mother See of Holy Etchmiadzin is the spiritual and administrative headquarter of the worldwide Armenian Church. Especially in the ongoing Great Lent period this is a must see sight.

Ruben Sevak Museum Located south of the Mother Cathedral is a long building extending out as a wall. It was built in the XVIII century under the direction of Catholicos Ghazar of Djahook (1737- 1751) and was named after him - being referred to as the Ghazar wall (Ghazarapat). The primary purpose of the building was to house and feed the residents of the Mother See on the first floor, and serve as housing for seminarians and visiting pilgrims to the Mother See on the second floor.

Dashtadem Fortress Substantial fortress of the 10th to 19th centuries is situated in Aragatsotn region (marz). In a cemetery 1.7 km (1.1 mi) south of Dashtadem, lies the restored 7th-century Kristapori Vank which may be viewed in the distance from the fortress. Really nice travel choice for March.

What to taste in Armenia?

Great Lent Dish “Rice Pilaf with Eggplant”

G

reat Lent period has just started. The church’s rules state that for 40 days preceding Palm Sunday we abstain from all animal products: meat, poultry, eggs, and milk. So, this month “TouInfo” offers “Rice Pilaf with Eggplant” as typical Lenten dish to try.

Ingredients About 1 kg unpeeled eggplant 1/4 cup olive oil 1/2 cup coarsely chopped onion 2 cloves of mashed garlic 1 teaspoon minced, fresh oregano (or basil) 1 cup crushed canned tomatoes 1/2 cup long grain rice 3/4 cup boiling water Salt and black pepper

Cooking instructions Trim off eggplant ends. Cut eggplant into 3/4-inch chunks. Set aside.

Heat olive oil in a wide saucepan; add onion and sauté until wilted, about 5 minutes. Add garlic and remaining ingredients. Stir, then add eggplant and stir again. Bring to the boil, lower heat to simmer 10 minutes, taste to adjust seasonings, and then cook additional 10 minutes, or until rice is done. Remove from heat and let rest 5 to 10 minutes. Stir gently, and then serve. Don’t forget to cook with love and serve with smile.
