Por comida no vas a sufrir, pues el pilar de la gastronomía campechana son los productos del mar, el pavo, el venado y el jabalí; además, los navegantes europeos trajeron nuevos ingredientes y formas de cocinar, así que vas a conocer recetas que expresan la diversidad culinaria de la región. En los restaurantes pide Cochinita Pibil, Relleno Negro, Mucbil-Pollo y salsas preparadas con chile habanero, achiote y especias. LET’S EAT LIKE BEFORE Regarding food you won’t suffer, as the pillar of Campeche’s gastronomy is sea food, turkey, deer and wild boar. Also, the European sailors brought new ingredients and cooking techniques, therefore you will discover recipes that show the region’s culinary diversity. In the restaurants, order Cochinita Pibil, Relleno Negro, MucbilPollo, and sauces prepared with habanero pepper, annatto and spices.

Dice la leyenda que en una cueva, a la orilla de la ciudad, vivía un toro que podía convertirse en humano y, aunque un grupo de hombres lo mató, a veces se escuchan sus gritos.
A legend says that, in a cave located on the edge of the city, was living a bull that could transform itself into a human, and that although it was killed by a group of men, you can still hear its cry from time to time.
El chile X´Catic es preparado desde el siglo XVI y nació al combinar los ingredientes de la cocina maya y de la gastronomía española, con otros que los piratas llevaron a la ciudad amurallada. De color amarillo o verde claro, el chile se rellena con jitomate, cebolla, huevo, hierbas de olor, orégano, laurel y cazón, antes de ser capeado. El secreto para resaltar su sabor agridulce está en los alimentos que lo acompañan: Frijoles, rebanadas de aguacate y epazote. Es un platillo que dejó una tradición increíble en Campeche: Que los hombres vayan al mercado a comprar alimentos, pues las mujeres no salían a la calle por temor a que los piratas las secuestraran.
The dish that changed costums The X’Catic chili pepper is prepared since the 16th century and rose from the mixing of Mayan cuisine and Spanish gastronomy, and from others brought to the fortified city by pirates. Yellow or light green, the pepper is filed with tomato, onion, egg, scented herbs, oregano, laurel and dogfish, before being battered. The secret to make its sweet and sour flavor stand out, are the ingredients that accompany it: beans, sliced avocado and epazote herb. It is a dish that has created an amazing tradition in Campeche: the men going to the market to purchase food supplies, whereas women wouldn’t go out because of the fear of being kidnapped by pirates.

CLOSE TO THE BATTLE The bastions and forts are reminders of the city’s defense from invasions, therefore you should visit the Historical Museum of San Jose El Alto: it was built during the 18th century over the hill of Vigia Vieja, which was an observation post. It is surrounded by a trench and its rooms were used as accommodation for the troops, food storage, a kitchen and a chapel. You will access it through a steep and curved path, made like this on purpose to avoid assaults on the door. It is opened from Tuesday to Sunday, between 8 A.M. and 5 P.M.

Tiempo de cruceros Además de ser un lugar turístico muy buscado durante décadas por los viajeros, las nuevas opciones de gastronomía, hospedaje, diversión y, sobre todo, seguridad, han permitido reactivar la industria de los cruceros en Puerto Vallarta. La tendencia a la alza en este segmento de viajes por mar es clara desde hace tres años: En 2013 se registraron 81 cruceros que arribaron al puerto; en 2015 la cifra superó las 135 llegadas, y lo que va de este año, 150 cruceros han llegado a Puerto Vallarta. Esto se atribuye a las inversiones destinada a promoción hechas por las autoridades de Turismo en Jalisco, en colaboración con el sector privado de servicios.

Darren Walsh UN ARTISTA DE LA COCINA “Lo bonito de ser chef es cambiar el estado de ánimo de alguien: He visto a comensales estresados y, después de probar un sabor que les recuerda algo de su vida, se van con otro semblante”, comparte Darren Walsh, originario de Irlanda y chef de los restaurantes Lula Bistro y Curanto, ambos en Guadalajara.
Él desarrolló su talento desde niño: “Mi papá es arquitecto, de él aprendí a dibujar y a ser detallista. Y el papá de mi mamá es panadero, ella le decía ‘hermosas manos’, ya que eran mágicas, y verlo extender la masa, hacer el doblés y volver a amasar me fascinaba”, comenta Walsh. “Mi papá pensaba que yo sería arquitecto, pero a los 15 años me revelé y decidí irme a trabajar con el chef francés Thierry Delcross, del Restaurant Castle Murray House, en el condado de Donegal, Irlanda. Luego me fui a Londres y mi papá no me habló por diez años... fue lo más duro de mi vida”, recuerda, y añade: “Mis amigos me dijeron que desarrollara mis habilidades, así que me mandaron con el chef irlandés Puflin, del restaurante Chinico, con tres estrellas Michelin (¡ni siquiera sabía qué era una estrella Michelin en aquel entonces!); trabajé seis meses gratis, un día llegue tarde y me regañó, le dijeron que no me pagaban, se disculpó, me dijo que veía pasión por lo que hacía y me envió con otro chef para seguir creciendo. También trabajé en el restaurante Daniel´s, en Nueva York, y una empresa irlandesa

invirtió en mi primer restaurante, llamado Papion. Yo tenía 25 años”. Después de este recorrido, Walsh es un artista de la cocina que guía a su personal “hasta que les pueda decir: ‘Felicidades, ya te di todo lo que tengo por enseñarte; ahora te enviaré con otro chef para que sigas aprendiendo. Es hermoso ver a un chico en su primer día de trabajo, que ni siquiera sabe agarrar el cuchillo, y que seis meses después cocina una receta que le enseñé, pero mucho mejor que yo”, comenta. Como parte de su forma de trabajo, mejora todo el tiempo “sin ser perfeccionista; más bien renuevo mi sistema de trabajo y mis técnicas, porque necesito estar conectado para no quedar fuera”, así que entre sus planes inmediatos, Darren Walsh firmó un contrato para Central Park: “Allí está Lorenza Dip´s House; la gente de Guadalajara quiere saber qué es, ya que casi nadie puede entrar, y tengo ese lugar para abrir mi nuevo restaurante, llamado Casa de Piedra. ¡Es el proyecto más grande que he hecho! Por eso indago viejas recetas mexicanas, para darles mi toque y poner en el menú dónde las obtuve. ¡Me encanta cómo Frida Kalo cocinaba para Diego Rivera!, era muy buena cocinera, por lo que estamos buscando sus recetas. Y quiero publicar mis dibujos a lápiz de cómo se decorara un plato”, concluye.

AN ARTIST IN THE KITCHEN “What is lovely about being a chef, is to be able to change somebody’s mood. I have seen stressed out dinner guests, and after trying a flavor that reminds them of something in their life, their facial expression changes”, shared Darren Walsh, a native of Ireland and chef at Lula Bistro and Curanto restaurants, both in Guadalajara. He developed his talent since he was a child: “My dad was an architect, from him I learned how to draw and pay attention to detail. And my mom’s dad is a baker, she used to call him “beautiful hands”, as they were magical, and watching him lay out the dough, split it and mix it again, amazed me”, commented Walsh. “My dad thought I would become an architect, but when I was 15 years old I revealed myself and decided to go working with French chef Thierry Delcross, from the restaurant Castle Murray House, in Donegal County, Ireland. After that, I went to London and my dad stopped talking to me for ten years… that was the toughest time in my life” he remembered, and added: “My friends told me to develop my skills, so they sent me with the Irish chef Puflin, from Chinico restaurant, with three Michelin stars (I didn’t even know what a Michelin star was back then!); I worked there six months for free, one day I arrived late, and he yelled at me, they told him I wasn’t paid, he said he was sorry, he told me he was seeing passion in what I was doing and he sent me with another chef to keep on growing. I also worked at Daniel’s restaurant in New York, and an Irish company invested in my first restaurant, called Papion. I was 25 years old”. After this journey, Walsh is a cooking artist who guides his staff “until he can tell them: congratulations, I have given you everything I can teach; now I will send you with another chef so you can keep on learning. It’s beautiful to watch a kid on his first day on the job, who doesn’t even know how to grab a knife, and six months later prepares a recipe I taught him, but much better than I do it myself”, he commented. As part of his job, he gets each time better “without being a perfectionist; I rather renew my work system and my techniques, because I need to be connected so I don’t fall behind”. Therefore, as one of his short-term plans, Darren Walsh signed a contract with Central Park: “this is where Lorenza Dip’s House is; people in Guadalajara want to know what it is, as almost no one can get in, and I have that place to open my new restaurant, called Casa de Piedras. It is the largest project I have ever had! For the same reason I am looking into old Mexican recipes to give them a touch of my own, and add on the menu where I found them. I love how Frida Kalo was cooking for Diego Rivera! She was a very good cook, that’s why we are looking for her recipes. And I want to publish my pencil drawings of how a dish is decorated”, he concluded.

He ventured into the English, Italian and Thai gastronomy where he acquired experience to innovate in the North American West coast kitchen. His dishes have an Asian influence with a base of fish and seafood, complimented with local ingredients offering one of the best culinary experiences in the city. Séptima Certificación de Caballos Frisón Caballos Pura Sangre Vino Campero, Rancho El Descanso y Grupo Ceica organizaron la Séptima Certificación de Caballos Frisón, logrando reunir alrededor de 2 mil tapatíos; acudieron jueces desde Holanda para valorar la morfología, movimientos al paso y trote, y pureza de los 50 caballos participantes. Además, el lugar fue decorado con obra de artistas plásticos como Jorge de la Peña y Álvaro Cuevas.

Con los valores de Confianza, Respeto, Equipo, Compromiso, Entusiasmo y Responsabilidad, se inauguró el Colegio GAP Los Cabos -que beca a 360 niños en el período 2016-2022-, y que tiene como meta ingresar cada año 60 alumnos hasta completar los seis grados de primaria. Su modelo académico es el Knowledge is Power Program (KIPP). Es un programa probado en Estados Unidos, que forma su carácter y asegura el estudio de una carrera universitaria al 80% de los niños. Quienes trabajan para la Fundación y sus Colegios afirman que los llena de orgullo ayudar a construir un mejor país.
El primer Colegio GAP se fundó en Guadalajara, en 2014, y el segundo Colegio GAP inició operaciones en 2016, en Los Cabos.
