De Papantla son los famosos Voladores, allí está uno de los sitios arqueológicos más grandes de México y, lo mejor: todo el ambiente huele a vainilla. ¡Es un lugar al que se antoja ir!

Un regalo de aromas Ciudad con valor milenario
Los hombres-pájaro
El Pueblo Mágico de Papantla está en la región del Totonacapan, a 270 kilómetros al norte de Xalapa, la capital de Veracruz; su nombre significa ‘La ciudad de los pájaros ruidosos’ y fue fundada en 1230. Como está entre los ríos Cazones y Tecolutla, las colinas que lo rodean son de color verde intenso; y de sus tradiciones totonacas, el cultivo de la vainilla es un motor económico e impregna con su aroma todos los pintorescos rincones. Los productores de la región generan 500 toneladas al año, de las cuales el 80 % es para exportación, y el precio va de 200 a 350 pesos el kilo, según la demanda. ¡Es la especia más cara, después del azafrán y el cardamomo! Existen 110 especies de vainilla, pero sólo tres son cultivadas porque requieren las condiciones de temperatura, altitud, luz y humedad que tiene Papantla. Las vainas maduran por nueve meses, son secadas durante 20 días bajo el sol; luego las calientan a fuego lento en una mezcla de alcohol y agua, se les agrega azúcar -aunque para obtener más pureza, puede omitirse ese paso- y añejan el producto por un año para potenciar su sabor y aroma antes de comercializarla. Por cierto, ¡la nieve de vainilla de Papantla es la mejor del país! A 12 kilómetros de Papantla está El Tajín, una de las ciudades más grandes del México antiguo. Fue construida allí porque la selva permitía tenerla semi-oculta, mientras que los cerros ayudaron a que los huracanes no la golpearan con fuerza. Su diseño arquitectónico es de proporciones armoniosas: tiene 165 edificios, 17 juegos de pelota y la Pirámide de los Nichos tiene 365 ventanas que, equivalen a los días del año.

El ritual de los Voladores de Papantla evoca el camino de los rayos solares para fecundar el Totonacapan. Un volador baila sobre el poste, dirigiéndose a los puntos cardinales; la flauta representa el canto de las aves, y el tambor la voz de Dios, mientras los otros cuatro voladores giran 13 veces, que da un total de 52 círculos y completan un ciclo solar. Para mantener viva la tradición, el Centro de las Artes Indígenas transmite a las nuevas generaciones el sentido social-espiritual que tiene el arte para el pueblo Totonaca.
The Bird-Men The ritual of the Papantla Flyers invokes the sunrays to fertilize Totonacapan. A flyer dances on a post directing towards the cardinal points; the flute represents the singing of the birds, the drum represents the voice of God and meanwhile, the other four flyers spin 13 times which gives a total of 52 circles and complete a solar cycle. To keep the tradition alive, the Center of Indigenous Arts transmits the social-spiritual sense which art has for the Totonaca town to it new generations.

The Majestic Town of Papantla is in the region of Totonacapan, 270 kilometers to the north of Xalapa, the capital of Veracruz; the name means ‘the city of noisy birds’ and was founded in 1230. Eat among the Cazones Rivers and Tecolutla, the surrounding hills are an intense green color; and from its Totonaca traditions, the cultivation of vanilla is an economic motor, which infuses all of the picturesque corners with its aroma. The producers of the region generate 500 tons a year, in which 80% is for export, and the price goes from 200 to 350 pesos a kilo, depending on the demand. It’s the most expensive spice following saffron and cardamom! There are 110 species of vanilla but only three are cultivated because they require the temperature, altitude, light and humidity conditions that Papantla has. The pods ripen every nine months, they are dried out for 20 days under the sun; then they are heated to simmer in a mixture of alcohol and water, they add sugar-though to obtain more purity, one can omit this step- and age the product for a year to potentiate the flavor and the aroma before commercializing it. By the way, Papantla’s vanilla ice cream is the best in the country! 12 kilometers from Papantla is El Tajin, it’s one of the biggest cities of ancient Mexico. It was built there because the jungle allowed it to be semi-hidden while the hills helped by not letting hurricanes hit forcefully. Its architectural design is of harmonious proportions: it has 165 buildings, 17 ball games and the Nichos Pyramid that has 365 windows equivalent to the days of the year.

Un santuario sensacional es El Rosario, en la sierra del Campanario; allí puedes recorrer un kilómetro y medio rodeado de las mariposas. Otro santuario es Sierra Chincua, en Angangeo, donde caminas hasta 3.5 kilómetros en el bosque. Cuando los días son muy fríos las mariposas se quedan en las ramas, pero en días soleados despliegan sus alas y vuelan sin parar buscando flores o agua. ¡Es conmovedor verlas volar entre los árboles, pues cada santuario alberga hasta 20 millones de mariposas! Eso sí, acata las disposiciones: no lleves aparatos de sonido ni hagas ruido, ve bien abrigado y con zapatos adecuados porque es zona montañosa y, está estrictamente prohibido tocar a las mariposas. The balance of nature
Make Morelia your starting point to live an incomparable experience. When the days are colder the butterflies stay on the branches, but during sunny days, they open their wings and fly non-stop in search of flowers and water. It is touching to see them fly between the trees, since each sanctuary holds up to 20 million butterflies! Sube y baja las dunas a toda velocidad en vehículos 4x4. Hay lugares designados para hacerlo -como La Loma, en el camino a Cholla Bay- y los fines de semana hay competencias. Viviendo grandes momentos El corredor tapatío de F1, Sergio Pérez Mendoza, cariñosamente conocido en todo el mundo como Checo Pérez, vive momentos muy importantes en su vida profesional y personal.

omo creció en las pistas de carreras, y su papá y su hermano también son pilotos de automovilismo, la vocación le viene de familia, así que el hecho de que Fórmula 1 haya regresado a México es más que gratificante para él. “Correr en México fue siempre mi sueño. Al principio parecía muy remoto, pero todo se combinó para que fuera posible y por fin se dio en el 2015. Desde entonces es la carrera del año que más espero y ya vamos por la tercera. ¡Espero que me toque disfrutar de muchas más!”, comenta con emoción. Con 27 años de edad, el joven se ha hecho de un lugar sobresaliente en su profesión y, por supuesto, no hay desafío que no esté dispuesto a superar. “La F1 es un lugar privilegiado en el que sólo están los 20 mejores pilotos del mundo; llevo siete temporadas en la máxima categoría y eso me llena de orgullo. Con Force India es mi cuarta temporada y cada una ha sido mejor que la anterior, así que espero que este año no sea la excepción y superemos lo realizado el año pasado”, expresa, y habla del 2018: “Hay propuestas interesantes sobre la mesa, pero todo puede pasar. Estoy muy contento en Force India y voy a estar contento donde sea que corra el próximo año”, expresa.

En el área personal, para Checo es imposible disimular su alegría, pues “estoy pasando por un buen momento: voy a ser papá el próximo año y acabo de comprometerme con mi novia, así que vienen muchas cosas positivas, nuevas motivaciones y nuevos retos. ¡Estoy muy contento!”, comparte. Con respecto a su labor altruista, el tapatío platica que “la Fundación Checo Pérez es un proyecto que me da muchas satisfacciones y cada que puedo me doy el tiempo para visitar las casas hogar que apoyamos. Ver las sonrisas en los niños me llena de energía, quiero seguir apoyando a más niños y estamos trabajando en eso”. También comenta que la imagen de los mexicanos en el extranjero es más que buena porque “somos bien recibidos donde nos paramos y eso me llena de orgullo porque México es reconocido por la calidad de su gente. ¡Debemos sentirnos orgullosos de nuestras raíces y trabajar juntos por un mejor país!”. El 6 de septiembre, Checo Pérez recibió de manos de Jorge Aristóteles Sandoval, Gobernador de Jalisco, el Premio Estatal de la Juventud 2017, en la categoría de Ámbito Cívico, junto a otros seis jóvenes jaliscienses, por ser un buen ejemplo para las nuevas generaciones.

Having grown on racing tracks, and his dad and brother being also car racing pilots, the calling comes from the family, so the fact that Formula 1 racing is back in Mexico is more than gratifying for him. “Racing in Mexico has always been my dream. At the beginning it seemed very far away from happening, but everything coincided to become a reality, and it finally happened in 2015. Since then, it is the race that I anticipate the most on the calendar, and we are going for the 3rd one. I wish I will be able to enjoy many more!” he comments with emotion. At the age of 27, the young pilot has obtained an outstanding place in his profession, and of course, there isn’t any challenge he isn’t up to. “F1 is a privileged place where only the 20 best pilots in the world are; it is my 7th season in the top racing category and this makes me very proud. It is my 4th season with Force India, and each has been better than the previous one, so I hope that this year won’t be the exception, and that we can surpass what we achieved last year”, he expresses, and talking about 2018: “there are interesting offers at the table, but everything can happen. I am very happy in Force India and will be happy wherever I will be racing next year” he expresses.
In the personal field, it is impossible for Checo to hide his joy, as “I am going through a good moment: I am going to become a dad next year, and I just got engaged with my girlfriend, so many positive things are coming along, new motivations and new challenges. I am very happy!” he shares Regarding his altruist labor, the tapatío (inhabitant of Guadalajara) tells us that “the Checo Pérez Foundation is a project that gives me a lot of satisfaction, and I every time I can I take the time to visit the orphanages we support. Seeing the smiles on the children’s faces fills me with energy. I’d like to keep on supporting more children, and we are working on it”. He also comments that Mexicans’ image abroad is more than good because “we are well received anywhere we go, and that fills me with proud since Mexico is rectognized for the quality of its people. We need to feel proud of our roots and work together for a better country!” On September 6th, Checo Pérez received from the hands of Jorge Aristóteles Sandoval, Governor of Jalisco, the State Prize of Youth 2017, in the Civic Field category, along with other six young people from Jalisco, for being a good example for the new generations.

La espirulina era conocida por los aztecas como tecuitlatl, la cosechaban en las aguas del Lago de Texcoco y la vendían en el mercado de Tlatelolco a los reinos aledaños, mientras que los mayas pudieron alimentar a varios millones de habitantes aun en condiciones difíciles para la siembra de otros alimentos. Es una cianobacteria en forma de espiral -por eso se llama así-, y contiene clorofila y ficocianina, de donde viene su color verde-azulado, y es de sabor agradable Debe cultivarse en estanques, teniendo como factores favorables la luz solar, el viento y una temperatura ambiente de 21 a 37ºC. Sus proteínas son más digeribles que las de la carne, tiene vitaminas, minerales, ácidos grasos esenciales, beta-caroteno, hierro, fósforo y magnesio, por lo que es eficaz contra la desmineralización. Es también un potente regenerador de la flora intestinal, activa los mecanismos de desintoxicación, estimula el sistema inmunológico, y protege al hígado y riñones. Por su naturaleza, la forma más práctica de tomarla es en pastillas, mezclarla con guacamole o hummus, o añadirla a las salsas o a un licuado.
Spirulina was known by the Aztecs as tecuitlatl, which they used to harvest in Lake Texcoco and sell to neighboring kingdoms at Tlatelolco’s market, whereas the Mayas could feed millions of inhabitants where there were difficult conditions for the cultivation of other foods. It is a cyanobacteria in the form of a spiral –this is how it got its name- , and contains chlorophyll and phycocyanin, which is where its green-blue color comes from, and has a pleasant taste. It needs to be cultivated in tanks, having favorable factors such as sunlight, wind, and a room temperature of 21 to 37°C. Its proteins are easier to digest than those of meat, it possesses vitamins, minerals, essential fatty acids, beta-carotene, iron, phosphor and magnesium, for which it is efficient against demineralization. It is also a powerful regenerator of the intestinal flora, activates the detox mechanisms, stimulates the immunological system, and protects the liver and the kidneys. Given its nature, the most practical way to consume it is in the form of pills, mixed with guacamole or hummus, or adding it to sauces or to smoothies.

Un encuentro moderno e incluyente Donde tecnología y tradición se unen
Este evento distingue a los jaliscienses, quienes han demostrado su capacidad de reinventarse, por lo que el tema de este año es la innovación mediante el uso de la tecnología, y que en ediciones futuras tendrá mayor fuerza. La edición 2017 implicó un reto que fue superado en sólo en cuatro meses gracias al trabajo de un renovado equipo de colaboradores, al manejo acertado de un limitado presupuesto y a la solución oportuna de situaciones, procesos e innumerables detalles que surgieron en el camino. Así, las Fiestas de Octubre han definido su rumbo al cubrir expectativas para todos los gustos y edades, atrayendo nuevos visitantes y haciendo de la feria un encuentro más diverso. Por ejemplo, están las Ruta del Café, la Ruta del Tequila y Ruta Turistica integradas en un novedoso corredor que muestra sitios imprescindibles para conocer en México y el mundo, nuevas y exquisitas opciones en la Zona Gastronómica VIP, un área de comida típica, foros artísticos y, desde luego, WiFi gratuito. Un objetivo primordial del evento es divulgar la ciencia y la tecnología, por lo que tiene exposiciones, conferencias y actividades lúdicas; otro aspecto importante es llegar a nuevos públicos mediante la música, el arte, el deporte y la cultura, así que la Canica Azul, con una diversidad de talleres, temas y actividades para todas las edades, es una visita obligada. También tiene presencia la antigua tradición de los Voladores de Papantla, presentándose cada 30 minutos. Entre las novedades están la rueda de la fortuna Voyager: la más alta en la historia del evento, con 32 metros de altura, diseñada con una canastilla especial para personas con capacidades diferentes; así como la Fun Factory: una casa de la risa de cuatro pisos, con 50 trucos interactivos, y es la primera de su tipo en América. En cuanto a seguridad, las instalaciones son las más limpias y ordenadas en mucho tiempo, para que los visitantes tengan confianza de que el inmueble y los montajes siguen a cabalidad las especificaciones señaladas por Protección Civil.
Jóvenes y tecnología El proyecto Canica Azul: ciencia, tecnología y sociedad, maneja un concepto de museos para que niños y jóvenes interactúen, investiguen, descubran y se diviertan. Este espacio se compone del Pabellón Principal, Miniauditorio, Momento Azul, Espacio de Entretenimiento, Un Giro a la Canica y Talleres Especiales. La idea es unir el corazón de las culturas del mundo mediante la comunicación, por lo que los visitantes usan los dispositivos TIC. Y como la verdadera tecnología se basa en la sustentabilidad, los elementos museográficos -como el transbordador El Centella- son de materiales reciclados.

This event distinguishes Jalisco people, who have proven their capacity of reinventing themselves, which is why this year’s theme is innovation through the use of technology and in future editions will be stronger. The 2017 edition implied a challenge that was overcome in just four months thanks to the work of a completely renovated team of collaborators, the proper management of a limited budget and the timely solution of situations, processes and innumerable details that emerged along the way. So, the Fiestas de Octubre has defined its course by covering expectations for all tastes and ages, attracting new visitors and making the fair a more diverse encounter. For example, there are the Coffee Routes, the Tequila Routes and the Tourist Route integrated in a new run that shows essential sites to know Mexico and the world, new and exquisite options in the Gastronomic VIP Zone, a typical food area, artistic forums and of course free WiFi. The main objective of the event is to divulge science and technology, which is why it has expositions, conferences and playful activities; another important aspect is getting to new audiences through music, art, sport and culture, so Canica Azul (Blue Marble), with its diverse workshops, topics and activities for all ages, is an obligated view. There is also a presence of the Voladores de Papantla (The Papantla Flyers), presenting every 30 minutes. Among the novelties is the ferris wheel Voyager: the highest in the history of the event, with 32 meters in height, designed with a special basket for people with different handicaps; like the Fun Factory; a four-story laughter house with 50 interactive tricks, it’s the first of its kind in America. Security wise, the installations are the cleanest and most orderly in a long time, so visitors can have the confidence that the structure and the assemblies fully follow the specifications indicated by Civil Protection.

Un fin relax en Hyatt Regency Andares A relaxing weekend at the Hyatt Regency Andares
Atmósfera exclusiva Cuando el trabajo es mucho, llega un momento en que necesitas desconectarte y, por eso, me fui a pasar un fin de semana al hotel Hyatt de Andares. Me recibieron en su hermosa recepción, con el trato amable y ameno de su personal; después me dirigí a mi habitación, que tiene un diseño súper moderno y cómodo. Pero lo que más me encantó fue el baño, el cual es muy grande y funcional. También disfruté de su alberca y de las instalaciones del Regency Club, donde puedes degustar de un bocadillo, un vino o una buena taza de café en un ambiente súper exclusivo. En la parte de gastronomía, los cocteles del Andares Lounge son espectaculares, y por las noches es el lugar para disfrutar de buena música y ambiente. Para el domingo, te despiertas tarde y disfrutas del brunch de Cassola, con sus mimosas y su amplia oferta de cocina. Lo mejor es que ambos lugares son experiencias para vivirlas, aunque no estés hospedado en el hotel. No cabe duda que disfrutar de un fin de semana en la ciudad es una forma de relajarte y cargar pila, y mejor si es en un Hyatt. ¡Ah, y el shopping en la plaza es un must!

FTI @curiogastro Exclusive atmosphere When there is a lot of work, there is a moment when you need to disconnect, and for that reason I went to spend one weekend at the Hyatt Andares hotel.
I was received in their beautiful lobby, with the kind and pleasant manners of their staff; I then headed to my room, which has a very modern and comfortable design. But I loved the most was the bathroom, which is very spacious and functional. I also enjoyed their swimming pool and the facilities of the Regency Club, where you can taste a snack, some wine or a good cup of coffee in a very exclusive atmosphere. On the gastronomic side, the Andares Lounge’s cocktails are spectacular, and at night it is the place to be to enjoy good music and atmosphere. On Sunday, you wake up late and enjoy Cassola’s brunch and its mimosas and its wide range of foods. The best is that both places are experiences to be lived, even if you are not staying at the hotel. There is no doubt that enjoying a weekend in the city is a way to relax and reload energy, and even better if it’s at a Hyatt. Oh, and the shopping at the mall is a must!

Con espíritu mexicano Jaime Argamasilla, Managing Director de Campari México, es cubano y desde niño tuvo indicios de que viviría en este país. “Uno de los mejores amigos de mi papá nació aquí, le llamábamos ‘el mexicano’, entraba a la casa cantando rancheras y se formaba la rumba”, recuerda con aprecio.

Argamasilla estuvo en Rusia, donde estudió la preparatoria y la carrera de ingeniero piloto en una escuela militar; regresó a Cuba y “de Teniente pasé a mesero y crecí hasta ser gerente de una unidad de negocios”. Y la oportunidad de venir a México tuvo buen augurio: “Llegué con 500 dólares, invitado por un primo a quien conocía por correo; estoy infinitamente agradecido con él y su familia”, platica. Los aspectos que admira de México son “la unidad familiar, la solidaridad, los valores, la cultura y la gastronomía. En el entorno laboral y social destaca la camaradería y el respeto al comunicarse. Y México me dio lo más preciado que tengo: mis dos hijos”, comparte con una sonrisa. “Llegar a Campari hace casi cuatro años ha sido maravilloso porque la empresa tiene valores excelentes, estoy muy agradecido. Mis aportaciones son la pasión para trabajar, crear un equipo excelente y dar la guía hacia dónde vamos pues Campari México creció más del 30% frente al año anterior. Hay que tener estrategias claras, ejecutarlas correctamente y tener apoyo de los distribuidores”, comenta el ejecutivo, y le dice a las nuevas generaciones: “Toma riesgos para alcanzar tus cometidos, trabaja duro y esfuérzate. With Mexican Spirit Jaime Argamasilla, Managing director of Campari Mexico, is Cuban and since childhood, had indications of living in this country. Argamasilla was in Russia where he studied high school and the career of pilot engineer at a military school, returned to Cuba and “from being a Lieutenant went to being a waiter, and moved up to being manager of the business units”. Then, the opportunity of coming to Mexico was a good omen: “I arrived with 500 dollars, invited by a cousin whom I met by mail, and I am infinitely grateful with him and his family!”, he tells us. the most precious thing I have: my two children”, he shares with a smile. “Arriving to Campari almost four years ago has been marvelous because the company has excellent values, I am very thankful. er dueño de tu tiempo y tener tu empresa más que un sueño es un trabajo de disciplina diaria. Llevamos tiempo escuchando “haz lo que amas y serás feliz” o “si no te gusta tu trabajo, renuncia y ve en busca de tus sueños”. O sea, sí, peeero... hay mucho más que sólo arriesgarse y después arrepentirnos por no haberlo pensado dos veces. Ser “freelance” es más complicado de lo que creemos. En un trabajo de oficina no te enteras de los gastos hasta el día que salen de tu bolsillo. Cuando eres Godín hay seguridad y una zona de confort deliciosa; sólo debes hacer muy bien tu trabajo, recibes tu sueldo seguro y, con esfuerzo extra, algunas comisiones que te dan más energía para levantarte cada mañana. Hay trabajos Godínez sin comodidad, sales más tarde de lo normal y ni te gusta lo que haces. Y existe tener tu empresa, pagar renta, sueldos, impuestos, contador, papelería y a veces no alcanza para ti. A lo que voy es que es increíble tomar riesgos y aunque no salgan bien las cosas, es una oportunidad para crecer; si quieres emprender necesitas saber cómo funciona una empresa, cuáles son los gastos e inversión, planear y animarte con la certeza de que si no sale bien, te faltaba más prepararte. Como empresaria creativa, freelance y Godín de mi empresa, te recomiendo que trabajes en oficina, aprendas a tener disciplina, horarios y organización, que te guste lo que haces y eso te encamine al trabajo de tus sueños; observa, aprende y visualiza cómo funciona un corporativo, esas experiencias van a llevarte a tu meta. Tu propia empresa Your own company Owning your time and business more than being a dream is a job of daily discipline. For a while now, we have heard “do what you love the most and you’ll be happy” or “ if you don’t like your job, then quit and follow your dreams”. Well, yeah; but...There is much more than just taking a risk and then regretting not having thought twice about it. Being “freelance” is more complicated than we think. It’s an office job where you don’t realize the expenses until they come out of your pocket. When you are an office employee there is security and a delicious comfort zone; you just have to do your job well, you receive a secure paycheck and with some extra effort, some commissions which give you more energy to get up every morning. There are office jobs without comfort, you get out later than normal and you don’t even like what you do. And there is having your own company, paying rent, salaries, taxes, an
accountant, office supplies and sometimes there is not enough for yourself. What I am getting at is that taking risks is incredible and even though things don’t turn out well, it’s an opportunity to grow; if you want to undertake a business, you have to know how the business works, what the expenses and investments are, plan and go for it with the certainty that if it didn’t go well, you needed more preparation. As a creative entrepreneur, freelance and office employee of my company, I recommend you work at the office, learn to be disciplined, scheduled and organized, that you like what you do and that will lead you to the job of your dreams; observe, learn and visualize how a corporation works, these experiences will take you to the goal. Vanguardia inmobiliaria en México Luis Guillermo Méndez Trillo, Presidente y Director General de Coldwell Banker Commercial, y Presidente del Instituto Comercial E Industrial (ICEI) en el período 2017-2018, tiene como reto consolidar el medio inmobiliario en México. “Con 26 años en el sector, veo gran profesionalización; por eso, en octubre trajimos los cursos CCIM: una sofisticada certificación que imparte el CCM Investment Advisers, de Chicago. Participaron 40 personas de Guadalajara, CDMX, Monterrey, León, San Luis Potosí y Cancún”, indica el empresario. También formalizó acuerdos con la Asociación de Desarrolladores Inmobiliarios, integrada por los 60 grupos más importantes de México, que “construyen el 80% de los consorcios hoteleros, residenciales-turísticos, centros comerciales, parques industriales, oficinas y conjuntos de usos mixtos; la idea es establecer un código de ética y una normatividad”, señala. Otro compromiso es activar los capítulos Guadalajara y Monterrey para que el ICEI comparta las operaciones realizadas, el valor al que cerraron, y llevar censos y estadísticas, “pues en la medida en que el mercado es informado y los clientes poseen más datos, México tiene un sector inmobiliario maduro”, expresa Méndez Trillo, además que “nuestros desarrollos tienen la funcionalidad, estética y calidad de las capitales del mundo. La evolución del sector nos puso a la vanguardia con edificios sustentables, certificación LEED Oro y Platino, y proyectos con eficiencia del 92% de área útil contra la rentable en edificios comerciales, residenciales y turísticos”, concluye.

Real Estate Vanguard in Mexico Luis Guillermo Mendez Trillo, President and Managing Director of Commercial Coldwell Banker and President of the Commercial and Industrial Institute (ICEI in Spanish) for the 2017-2018 term, has as a challenge which is to consolidate the real estate environment in Mexico.
“With 26 years in the sector, I see great professionalism; that’s why, in October we brought the courses of CCIM: a sophisticated certification that CCM Investment Advisers from Chicago teaches. 40 people from Guadalajara, Mexico City, Monterrey, Leon, San Luis Potosi and Cancun participated”, indicates the entrepreneur. They also formalized agreements with the Real Estate Developers Association, integrated by the 60 most important groups in Mexico,
which “make up 80% of the hotel, tourist residence, shopping centers, industrial parks, offices and mixed use set consortiums; the idea is to establish a code of ethics and regulations”, he points out. Another commitment is to activate the areas of Guadalajara and Monterrey so that the ICEI could share the performed operations, the values which they were closed at, and carry out censuses and statistics, “ since to the extent that the market
is informed and clients have more data, Mexico has a mature real estate sector”, expresses Mendez Trillo, plus “our real estate developments have functionality, esthetics and the quality from the capitals around the world. The evolution of the sector put us at vanguard with sustainable buildings, LEED Gold and Platinum certification, and projects with an efficiency of 92% of floor space versus profit in commercial buildings, residential and tourist areas”, he adds.

Santo Coyote Da el segundo paso Durante 19 años el restaurante Santo Coyote ha sido un punto de referencia en México y en el extranjero, así que con la apertura del segundo establecimiento busca superar la fórmula original.
“En la última década el tema de los restaurantes evolucionó, hay una colección de propuestas y me atrevo a decir que Guadalajara tiene la mejor gastronomía del país; entonces, decidimos crecer con Santo Coyote porque es nuestro concepto más mexicano y singular”, relata Miguel Monroy, Director General del restaurante. Con altas expectativas, el lanzamiento será este año en la zona de Real Center, “donde la economía es muy activa, hay corporativos de primer mundo y casas increíbles. Nuestra columna vertebral han sido los visitantes que vienen de negocios, de vacaciones y el propio tapatío como anfitrión. ¡Tenemos un reto porque la clientela local es la más exigente de México!”, dice el empresario. El restaurante será para 1,200 personas, al concluir sus dos fases; tendrá un área infantil con ludoteca para que los niños desde un año y medio hasta cinco les pidan a sus papás ir a sentir la magia del lugar, y van a participar artistas jaliscienses que hacen clic con el proyecto. “Contaremos con una amplia colección de arte wixárika, así como murales de Enrique Monraz y de Karla de Lara, y esculturas de Paco de la Peña”, indica Monroy. Y hay más: el nuevo restaurante es parte de un largo camino, pues “nuestro fundador, mi papá, empezó Santo Coyote a partir de un sueño y dio el primer paso; ahora estamos a punto de dar el paso dos, el tercer paso será en CDMX, donde encontramos una locación que va a ser una locura, y los siguientes pasos serán fuera de México: en San Diego, Las Vegas o Chicago”, concluye.
