The most beautiful restaurant is Mexican and it is called Ixi’im –which means ‘corn’ in Mayan- and it is in Chocholá, Yucatan.

Gastronomía y arquitectura Un deleite sensorial

Uno de los mejores restaurantes yucatecos está en medio de la selva, en una construcción histórica, y tiene como carta de presentación el refinado menú ideado por Jorge Vallejo –el chef creador del exitoso proyecto Quintonil, en CDMX-, lo que garantiza la excelencia en los platillos y en la vivencia del comensal.

Ixi’im retoma la cocina del sureste mexicano para darle un nuevo giro al combinar técnicas modernas y antiguas, logrando reinterpretar los sabores tradicionales. El restaurante usa muchos ingredientes cosechados en sus Ka’anche’s -una forma de agricultura tradicional maya, sustentable y orgánica-, lo que se refleja en los sabores frescos de cada platillo.

El restaurante es parte de Chablé Resort & Spa, está a media hora de Mérida y a 40 minutos de Uxmal, y vale la pena hacer un viaje para conocerlo, porque además de su cuidada gastronomía, el edificio es una auténtica belleza arquitectónica que siguió un proceso de arquitectura arqueológica; esto quiere decir, que se aplicó el método para restaurar patrimonio histórico, dándole nueva vida a la que fue una fábrica de cuerdas, textiles y costales durante el siglo XIX y parte del XX. El rediseño del lugar es todo un homenaje a la herencia cultural de Yucatán, pues utiliza maderas y piedras de la zona, uniéndolas a materiales como el metal y el vidrio, dando como resultado un espacio de extraordinaria armonía. El trabajo estuvo a cargo de la diseñadora Paulina Morán y del arquitecto Jorge Borja, lo cual permitió que Ixi’im obtuviera el Prix Versailles 2018, un exclusivo galardón que reconoce a lo mejor en diseño y arquitectura de tiendas, centros comerciales, hoteles y restaurantes.

En Ixi’im puede apreciarse la colección de botellas de tequila más grande que hay en el mundo; esto quedó registrado por los Récord Guinness.

Hospedaje de gran categoría La decoración, servicio y distinción que ofrece Chablé Resort & Spa le hizo recibir el Prix Versailles 2017 como El Mejor Hotel del Mundo. Las 38 Casitas y dos Villas ubicadas en unos jardines impresionantes llevan al huésped, prácticamente, al corazón de la selva yucateca. Los muros centenarios son el marco de cada Casita, a los que se añadieron acabados contemporáneos y arquitectura maya tradicional, haciendo del hotel una obra de gran estética.

The decoration, service and distinction offered by Chablé Resort & Spa made it receive the Prix Versailles 2017 award for Best Hotel in the World. The 38 Casitas and 2 Villas located inside impressive gardens take the guest practically into the heart of Yucatan’s rainforest. The centenary walls are the frame of each Casita, to which were added contemporary and traditional Mayan architecture finishing touches, making the hotel a work of great aesthetics.

Ixi’im revisits the Southeastern Mexican cuisine to give it a new twist, by mixing modern and old techniques, achieving to reinterpret the traditional flavors. The redesigning of the place is a whole tribute to Yucatan’s cultural heritage, as it uses woods and rocks from the area, mixing them with metal and glass, giving as a result a space of extraordinary harmony. The design work was given to the designer Pauilna Morán and to the architect Jorge Borja, which allowed Ixi’im to receive the Prix Versailles 2018, an exclusive award that recognizes the best in the design and architecture of stores, shopping malls, hotels and restaurants.

Besides this worldwide triumph, this year Ixi’im was recognized as the Most Beautiful Restaurant in the World by UNESCO, in association with the International Union of Architects.

Entonces, quedó registrada como: La cocina tradicional mexicana, cultura comunitaria, ancestral y viva. El paradigma de Michoacán, y abarca no sólo a la gastronomía michoacana, sino a toda la cocina tradicional de México.

Fue un trabajo largo y detallado: llevó cinco años recabar datos y evidencias que explicaran la antigüedad y vigencia de la gastronomía mexicana, para que quedara documentado el carácter comunitario de la cocina mexicana, la calidad nutricional -que ha alimentado a los mexicanos por miles de años- y la gran experiencia de las cocineras tradicionales de Michoacán.

For the cuisine of a country to be registered, it must come from a regional cuisine; nevertheless, to postulate Mexico’s gastronomic riches would have been too complex, so the decisive factor for UNESCO to approve the registry was with the presence of corn, chili peppers and beans in the rest of the Mexican regional cuisines.

So, it was registered as: Mexican Traditional Cuisine, community culture, ancestral and live. The Michoacan paradigm covers not only Michoacan gastronomy but all the Mexican traditional cuisine.

It was long and detailed work: it took five years to gather the information and evidence to explain the antiquity and validity of Mexican gastronomy, so that the community character of Mexican cuisine could be documented, nutritional quality- that has fed Mexicans for thousands of years-and the great experience of the traditional Michoacan Mexican cooks.

Por cierto, Hyatt utiliza productos locales, como quesos, embutidos y mermeladas (éstas son endulzadas con miel de agave y pueden consumirlas los diabéticos).

Para comer o cenar, Cassola es una magnifica opción porque ofrece un oasis de tranquilidad en medio del bullicio del centro comercial, y es un restaurante que no es sólo para los huéspedes, sino que abre sus puertas a toda la gente para que disfruten del inmejorable servicio y platillos de magnifica calidad.

La Pizza con queso de cabra e higos o el Ceviche Negro con ceniza son un éxito; la Sopa Milpa lleva elote, calabaza, champiñones, chochoyotes, cilantro y aguacate, así que su sabor de campo causa una excelente impresión. Como plato fuerte es recomendable el Pollo al vacío con coliflor: crujiente por fuera y suave por dentro.

En cuanto a desayunos, tiene un delicioso buffet, platillos a la carta y el imperdible brunch dominical, ¡con una espectacular mesa de postres!, que se extiende hasta las 4:30 de la tarde.

El restaurante nació con la idea de dar un panorama diferente de la cocina del mar, ofreciendo la barra de ostras y mariscos más extensa y de la mejor calidad en Guadalajara.

Sal de Mar utiliza ingredientes que hacen sobresalir el sabor natural de las variedades de cangrejos, así como de langostinos, varios tipos de almeja y de ostión, erizo y abulón vivo, según la temporada. Entre las maravillas que ofrecen está la clásica torta ahogada de Guadalajara pero con chicharrón de atún, pulpo o camarón; la Totoaba se cocina con productos orgánicos; el Escolar es horneado con aceite de oliva, vino blanco y especies; la amplia oferta de aguachiles y ceviches abarca desde la cocina mexicana hasta la peruana, como el Ceviche Primavera y el Aguachile de Zanahoria; hay Crab cakes, Camarones Costa Azul y, para quien prefiere la carne, tiene Chicharrón de rib eye. Los postres son una obra maestra de la repostería: ¡es delicioso el Mousse de tres chocolates! The restaurant was born with the idea of giving a different view of the seafood kitchen, providing a more extent and best quality shellfish and seafood bar Guadalajara has to offer.

Sal de Mar uses ingredients that make the natural flavor of the varieties of crabs like prawns, various types of clams and oysters, sea urchin, live abalone, depending on the season stand out. Plus, they obtain excellent food. The shellfish and oysters are cultivated and all the seafood comes in twice a week by plane from Ensenada, Baja Caifornia.

As for drinks, the bar offers brands like Premium distillates and whiskeys, house cocktails created by mixologists and Mexican wines that people order more each time to accompany their meals.

Uno de los platillos mexicanos más famosos, antojables y con una historia larguísima es el mole poblano. No por nada es protagonista de bodas, aniversarios y festejos muy relevantes, apareciendo en la carta de los restaurantes que ofrecen la mejor cocina tradicional.

Su sabor ha fascinado a gente de todas las épocas: fray Bernardino de Sahagún cuenta que en la época prehispánica era preparada una rica salsa de chile y especias llamada chilmulli.

Una versión cuenta que el mole fue creado por la monja dominica Andrea de la Asunción, en el siglo XVII, para sorprender al Virrey Tomás Antonio de Serna, quien quedó fascinado por el exótico y picante sabor; mientras que una leyenda dice que nació por casualidad: el cocinero fray Pascual Bailón amontonó muchos ingredientes en un plato y, por la prisa, tropezó frente a la cazuela donde se cocinaban unos guajolotes, vaciando allí el contenido del plato, lo que creó un excepcional sabor.

Con el tiempo, el mole ha ido transformándose gracias a la mezcla de alrededor de 100 ingredientes, como: chiles frescos, jitomates molidos, hojas de epazote, masa de maíz, tortillas tostadas, cacahuates y chocolate; y hoy existen más o menos 50 tipos: blanco, amarillo, mancha manteles, almendrado, de olla, verde, negro, etc., y sigue conquistado a quien lo prueba.

Después de hacer una extensa investigación, creamos nuestra propia interpretación, por lo que estamos seguros de que el mejor mole no está en Puebla: está en Los Chilaquiles.

One of the most famous Mexican dishes, appetizing and with a long history is the poblano mole. Which is why it is the protagonist at weddings, anniversaries and relevant celebrations, appearing on restaurant menus that offer the best traditional cuisine.

Its flavor has fascinated people of all periods: Fray Bernardino de Sahagun says that in the prehispanic era a delicious chii pepper and spice sauce called chilmulli was prepared.

After an extensive research, we created our own interpretation, why we are sure that the best mole is not in Puebla: It’s at Los Chilaquiles.

Chef en evolución Un icono de la gastronomía mexicana contemporánea es Jorge Vallejo, quien en 2012 inauguró, junto con Alejandra Flores -su esposa-, Quintonil en CDMX. Gracias a su sencillez y talento, Vallejo puede jactarse de tener uno de los restaurantes más premiados del país y famoso en todo el mundo, lo que implica “gran responsabilidad, compromiso y determinación por hacer mejor las cosas en cada aspecto que involucra esta profesión. Quintonil es mi proyecto de vida: me veo a futuro aquí, con mi familia, en un restaurante mejor al que tenemos y vinculando nuestro trabajo de manera significativa, profunda, con consideraciones de responsabilidad social y sustentabilidad”, relata.

Cuando no está de viaje, “un día normal transcurre entre mi casa y el restaurante, espacios que comparto con mi esposa, nuestra hija Estela, y nuestras perritas Almendra y Chía; procuro hacer ejercicio y, si me sobra tiempo, leer”, comparte el famoso chef.

Dicen que lo simple es lo mejor, así que entre los platillos y experiencias que inspiran a Vallejo, “disfruté mucho los sabores de casa, sobre todo de mi abuela, una gran cocinera. También las cosas sencillas, como el sabor reconfortante de un taco de aguacate con sal; las pizzas de Nabuccos, los tacos de gaonera y el pollo rostizado; eran mis favoritos en la infancia, pues más que el sabor, tenían que ver con la ocasión en que los comía”.

Acerca de Jorge Vallejo

Nacido en CDMX, en 1981, trabajó en los cruceros Princess; se integró al restaurante Pujol; fue chef corporativo de Grupo Habita; creó la iniciativa Orígenes, junto con los chefs Mauro Colagreco y Virgilio Martínez, para conservar técnicas y costumbres culinarias latinoamericanas. Fue nombrado Rising Star por FOUR Magazine, en 2014; fue Chef del Año, en lo premios GQ Hombres del Año, en 2015; y entró a la lista de Los 300 líderes más influyentes de México, en 2016.

Profile

Chef in evolution Jorge Vallejo is a Mexican Contemporary Gastronomy icon, who in 2012 with Alejandra Flores -his wife- inaugurated Quintonil in Mexico City.

Thanks to his simplicity and talent, Vallejo can brag about having one of the most awarded restaurants in the country and famous around the world, which implies “great responsibility, commitment and determination for doing things better in every aspect that this profession involves. Quintonil is my life project: I see myself in the future here, with my family, with a better restaurant than we have now and binding our work in a significant and profound manner with considerations of social responsibility and sustainability“, he states.

When he is not travelling, “a normal day elapses between my house and the restaurant, time I share with my wife, our daughter Estela and our dogs Almendra and Chia; I try to work out and if I have spare time, read”, shares the famous chef.

They say that simple is the best, so, between the dishes and experiences that inspire Vallejo, “I enjoyed many flavors from home, mostly from my grandmother, a great cook. Also the simple things like the comforting taste of an avocado taco with salt; Nabuccos’ pizzas, Gaonera tacos and roasted chicken; they were my favorite during my childhood, more than the flavor, they had to do with the occasion when I ate them”.

Los momentos culminantes incluyen a un contorsionista torciendo su cuerpo en posiciones inimaginables.

LUZIA was written and directed by Daniele Finzi Pasca in association with Brigitte Poupart and shows multiple places, faces and sounds taken from the traditional and modern Mexico; plus, the impressive show takes the traditional and contemporary circus disciplines to a whole new level: the Simple Wheel number acrobats perform feats without precedents by rolling and twirling under the rain, while an airbrush artist suspended from a trapeze flys and twirls through the torrential rain. The Hoop Dives are performed on enourmous running belts exponentially expanding the speed and quantity of daring jumps. 2.- Los condimentos serán tus mejores aliados: existen sin gluten, sin azúcar, ni conservadores, muy naturales y llenos de sabor.

3.- Un platillo seco o sin sabor cambia totalmente con una salsa y, ¿qué crees? Las salsas caseras son muy bajas en calorías.

4.- ¿Horno, plancha, vapor o grill? Cambia la forma de cocinar, existen muchos métodos para preparar tu comida y cada uno le da un toque distinto.

5.- Basa tu dieta en proteínas bajas en grasa como pescados y pollo; elimina alimentos procesados y enlatados; agrega al menos una taza de fruta al día, de preferencia por las mañanas y, mínimo, dos tazas de verduras al día.

BASIC TIPS 1.- You must become friends with food. Look for new recipes, try new things,

always relying on natural and low fat food.

2.- Condiments will be your best allies: they are found gluten free, sugar free, preservatives free, very natural and full of flavor.

3.- A dish that is dry or without flavor changes completely with a sauce, and believe it or not, homemade sauces have very few calories.

4.- Baked, broiled, steamed, or grilled? Change the way you cook, there are many techniques to prepare food, and each one of them gives a distinctive touch.

5.- Base your diet on low-fat proteins such as fish and chicken; eliminate transformed and canned foods; add at least one cup of fruit per day, preferably in the morning, and at least two cups of vegetables per day.
