La montaña alcanza los 3,700 metros sobre el nivel del mar, por lo que hay nieve en diciembre y enero, aunque la nieve artificial llamada Dendix garantiza diversión todo el año. La decoración rústica y las chimeneas le dan un mood campirano que te hará sentir más relajado que nunca. También cuenta con jacuzzi, alberca techada, cancha de tenis, campo de golf y esquí. No importa si eres experto o es la primera vez que lo intentas, pues tiene pista de aprendizaje que mide 45 metros y un instructor experimentado; y la pista principal es de 230 metros con una pendiente de 20 grados, para los intrépidos.

It also has a restaurant and a pub; you can’t miss out on the delicious brick oven baked pizza! The spa has a sauna and we recommend the hot stone massage. The hotel is close to Barrancas del Cobre -a mountain system four times larger than the Grand Canyon in Colorado, and a depth of 1,700 meters- and offers tours to Arareko Lake and the Cusarare Waterfall.

Chef enamorado de la vida El creador del exitoso restaurante La Leche, en Puerto Vallarta, es un sonorense apasionado de su trabajo y, por su carácter optimista, siempre camina sonriente, con la cabeza en alto. “Estoy feliz y satisfecho con lo que hago; eso sí, soy muy inquieto por buscar cosas nuevas y los pequeños detalles son fundamentales en mi vida”, platica Nacho Cadena. Después de quebrar un negocio de alimentos, en Hermosillo, fundó un despacho de asesoría: “tuve un cliente que era un banco regional, formado por gente mayor y me enseñaron a respetarlos porque aportaron experiencias maravillosas. Después, fui a Puerto Vallarta unos días y encontré un paraíso terrenal: viví el contraste con el desierto; aquí hay colores, pesca, playas, un clima maravilloso y gente muy amigable. ¡Estuve seguro que sería feliz!”, recuerda. Los frutos de la tierra siempre han estado en su vida: “de niño recogía verdolagas para venderlas en el mercado. En casa de mi padre sembrábamos zanahorias, calabazas, pepinos y lechugas; vi el crecimiento de las alcachofas e imaginé cómo cocinarlas. ¡Es una belleza ver nacer diferentes tipos de hongos, con su carnosidad! A los 12 años manejé un gallinero con 150 gallinas y una bodega de embutidos. Me enamoré primero de los productos que de la cocina”, comparte. Este amor lo puso sobre la mesa, en el restaurante La Petite France, también en Puerto Vallarta, “de comida bourgeois, la que comen las familias francesas tradicionales. Luego abrí La Leche, buscando desarrollar la mejor comida del mundo, ser un restaurante diferente cambiando el menú cada día sin escribir la receta y provocar sorpresa para que los comensales se llevan recuerdos que llamamos ‘memoria gustativa’ ”, concluye.

A chef in love with life The creator of the successful restaurant La Leche, in Puerto Vallarta, is from Sonora and is passionate about his work, and because of his optimistic personality, he is always walking around with a smile on his face, his head high. “I am happy and satisfied with what I do; but also very active searching for new things, and small details are fundamental in my life” says Nacho Cadena. After going bankrupt with a food business in Hermosillo, he founded a consulting firm: “I had a client which was a regional bank made up of elderly people, and I got to respect them because they brought me wonderful experiences. After that, I went to Puerto Vallarta for a few days, and found heaven on earth: I experienced the contrast with the desert; here there are colors, fishing, beaches, a wonderful climate and very friendly people. I was sure to be happy here!” he remembers. Earth’s fruits have always been part of his life: “as a child, I would pick up purslanes from the ground to sell them at the market. At my father’s house, we would grow carrots, pumpkins, cucumbers and lettuce; I would see the artichokes growing and imagine how I could cook them. It is beautiful to see different kinds of mushrooms come to life, with their fleshiness! When I was 12 years old, I managed a henhouse with 150 hens and a cold meat warehouse. I fell in love with the produce before falling in love with cooking” he shares. He took this love to the table, at the Petite France restaurant, also in Puerto Vallarta, “with bourgeois cuisine, the one eaten by traditional French families. I then opened La Leche, trying to create the best cuisine in the world, being a different restaurant, changing the menu every day without writing down the recipe, and provoking surprise, so that the guests can take away memories that we call “taste memory”” he concludes.

One of the new options to enjoy Puerto Vallarta’s Romantic District is Barrio Vallarta, a large and fun gastronomic alley hosting three food trucks with a delicious culinary offer for all tastes. ¿Qué nos mueve para ser socialmente responsables? Existen vertientes que te mueven hacia la responsabilidad social: la primera, es traerla en el ADN, tener la certeza de que su ‘misión’ es hacer algo por los demás, trabajan impulsados por la PASIÓN. A otras personas, en un momento les llega de manera involuntaria y sorpresiva ese acercamiento, ya sea por una enfermedad o por un acontecimiento que los marca para siempre, convirtiendo esa fuerte experiencia en fortaleza, basan su trabajo en el CORAJE. Y están quienes, bendecidos por la vida, empujados por sus creencias religiosas o valores, tienen la necesidad de retribuir algo de lo mucho que han recibido, por lo que su trabajo se basa en el AGRADECIMIENTO. Pero si no nacimos con la responsabilidad social en el ADN, ¿por qué esperar a ser exitosos para retribuirlo, a que un acontecimiento nos obligue a voltear a la responsabilidad social? Pensemos objetivamente: ¿Qué necesitamos para vivir con tranquilidad, seguridad, desarrollo y educación? La respuesta es mejorar las oportunidades y condiciones de vida de la sociedad en general. Y de ninguna manera considero que la solución total esté en la responsabilidad social, pero son muchos los ‘granos de arena’ con que podemos contribuir, fomentando la rehumanización que hemos perdido y que tanta falta nos hace. A ustedes, ¿qué los mueve: la PASIÓN, el CORAJE o el AGRADECIMIENTO?

What moves us to be socially responsible? There are slopes that push you towards social responsibility: the first one, is to have it in our DNA, have the assurance that our “mission” is to do something for others, we work driven by PASSION. For others, at a point, that approach arrives in an involuntary and surprising manner, it being because of an illness or an event that marks us forever, turning that strong experience into strength, they base their work on COURAGE. And there are those who blessed by life, pushed by their religious beliefs or values, have the need to give back some of what they’ve received, for which their work is based on GRATEFULNESS. But if we weren’t born with social responsibility in our DNA, Why wait to be successful to return it? Let’s think objectively: What do we need to live with tranquility, security, development and education? The answer is to improve the opportunities and living conditions of society in general. And in no way consider that the entire solution lies on social responsibility, but there are many “grains of sand” where we can contribute, fostering the humanization that we’ve lost and which is sorely lacking. What about you? What moves you? PASSION, COURAGE or GRATEFULNESS?

Es de las fuentes de proteína más magras que existen. ¡Procura que tu cena contenga más proteínas que carbohidratos! El azúcar en las noches no es buena, acompañado de una ensalada es la cena perfecta; además, tiene poco contenido de grasa y colesterol. 2.- Puré de papa. Muy típico en los platillos navideños, puedes sustituirlo por camote, pues es un carbohidrato que controla los niveles de azúcar en la sangre. ¡Una pequeña porción te ayudará a mantenerte satisfecho por más tiempo! 3.- Bacalao salado. Ayuda a enriquecer tu dieta con proteínas y grasas saludables. Procura cocinar con aceite de aguacate, que tolera más el calor y no cambia el sabor, y acompáñalo con tostadas horneadas. 4.- Ensalada. Es clave incluirla en el menú, pues le aportamos a nuestro organismo fibra, vitaminas y minerales. Entre más colorida sea, ¡mejor!, así que agrega las verduras frescas de tu preferencia.
