A unos pasos de allí, está el Palacio de Gobierno, donde los coloridos murales relatan el origen de la cultura regional, pintados por el artista Desiderio Hernández Xochitiotzin.

l taxi moderno, una invención francesa de principios del siglo XX -aunque sus ancestros se remontan a la Edad Media-, ha ocupado un papel central respecto a la construcción del espacio urbano. En años recientes, producto de una creciente preocupación por la movilidad y el irreversible avance de las nuevas tecnologías, estos servicios, al menos en las grandes ciudades del mundo, continúan evolucionando y abriendo debates sobre el futuro del transporte público.

En México la historia ha sido un tanto distinta, aun cuando hayan proliferado los taxis ecológicos (bici y moto taxis) o servicios particulares previos a Uber, como las limusinas. De ahí que en 2006, 53% del total de los taxis en el Distrito Federal fuesen todavía ‘vochos’, siendo jubilados los últimos 3 mil 500 hasta 2012, un década después de que la firma alemana descatalogara al emblemático VW Sedán.

Sólo dos años más tarde, emulando a sus pares neoyorkinos, parisinos o de Nueva Delhi, el gremio taxista de la capital mexicana -sean individuales, de sitio, radio taxis o piratas- se hallaba inmerso en un gran embotellamiento, en medio de disculpas y publicidad gratuita para su contra partes. La razón: una simple app.

The Journey of a new Urban Warfare

T

he modern taxi, a French invention from the beginning of the twentieth century, although their ancestors date back to the Middle Ages, has occupied a central role in the construction of urban space. Los cenotes son el fenómeno natural más bello de Yucatán, fueron llamados “ts’onot” (que significa “hoyo en el suelo”) y sin ellos el pueblo maya hubiera carecido de agua, pues no existen ríos ni lagos de importancia en la zona. Así, fueron determinantes en el desarrollo cultural, pues en torno a estas cavidades crecieron ciudades mayas muy importantes; además, representaban la entrada al inframundo espiritual, por lo que en la profundidad de los cenotes han sido encontradas piezas de joyería, cerámica y utensilios destinados a ceremonias religiosas.

The cenotes are the most beautiful natural phenomenon of Yucatan. They were called “ts’onot” (which means “hole in the ground”) and without them the Mayan people would have lacked water, since there are no important rivers or lakes in the area, thus, they played a decisive role in the cultural development, because around these cavities very important Mayan cities grew. Furthermore, they represented the entrance to the spiritual underworld, and for this reason in the depth of the cenotes pieces of jewelry, ceramics and utensils aimed for religious ceremonies have been found.

on éxito total fue realizada la segunda edición de El Dîner en Blanc Guadalajara, que reunio a 1,250 invitados en la plaza del Templo Expiatorio del Santísimo Sacramento, considerada la máxima obra neogótica de Mexico.

A las 6:30 de la tarde, los invitados abordaron los autobuses, llevando sus mesas, sillas, manteles, vajillas, alimentos y, sobre todo, un inigualable espíritu de unidad. Durante la cena toco el grupo Jazz Troupe, de Mariana Vigueras; un momento significativo fue el encendido de las luces de bengala, iluminando la plaza y creando una atmósfera de unidad al son de la canción “Guadalajara”; otro momento emblemático fue la intervención de la soprano Zaira Soria y del tenor Emmanuel Zarazua quienes cantaron “Por ti, volare”, y despues

DJ Choco hizo bailar a todo el mundo.

Asimismo, Aymeric Pasquier, Director de la Organización Internacional, acudió para vivir el gran ambiente tapatío y reconocio la excelene organización de Eduardo Uribe y su equipo formado por Christina Canino, Cristina Coghlan y Andrea Ampudia; las Relaciones Públicas y el manejo de medios a cargo de Marcela Vizcaíno Servín, la producción de DREA y la logística de Verónica Guzmán y Alejandro Avendaño.

Como extra, el after party fue en el Vango, con el patrocinio de Cîroc y Hotel Presidente Intercontinental.

La organización agradece a Moët & Chandon, American Express, El Palacio de Hierro y el área de Grandes Eventos del Estado de Jalisco por ser los patrocinadores oficiales del evento.

he second edition of Dîner en Blanc Guadalajara was carried out in a complete success, bringing together 1.250 invitees at the plaza of the Templo Expiatorio del Santísimo Sacramento, considered the greatest work of neogothic in Mexico.

At 6:30 in the afternoon, the guests boarded the bus, taking their tables, chairs, tablecloths, tableware, food and, above all, an unbeatable spirit of unity. During the dinner the Jazz Troupe band of Mariana Vigueras played. A significant moment was the lighting of fireworks, illuminating the square and creating an atmosphere of unity with the song “Guadalajara”. Another emblematic moment was the intervention from the soprano Zaira Soria and the tenor Emmanuel Zarazua who sang “Por ti, Volare”, after that DJ Choco made everyone dance.

Also, Aymeric Pasquier, Director of the International Organization, came to experience the great atmosphere in Jalisco and recognized the excellent organization of Eduardo Uribe and his team formed by Christina Canino, Cristina Coghlan and Andrea Ampudia; public relations and media management in charge of Marcela Vizcaino Servín, and the production of DREA and the logistics of Veronica Guzmán and Alejandro Avendaño.

El sabor argentino: Calidad sobre todas las cosas

no de los restaurantes con más arraigo entre el gusto de los tapatíos es La Estancia Gaucha, que con 37 años de existencia mantiene su éxito original gracias a la visión de Gerardo y Diego Maschiarelli propietarios del lugar. “Tenemos 50 años como restauranteros, La Estancia Gaucha de Niños Héroes fue un parteaguas porque lo pusimos en una zona virgen comercialmente, casi en el borde de Guadalajara y la respuesta de la gente fue importante”, recuerdan.

“En 1978 abrimos la prmiera sucursal”, relata Gerardo, “cuando mi padre Roberto Maschirelli supo cubrir una necesidad de la clientela tapatía, y mi tío Orlando Maschirelli con su gran experiencia en carnes, fue una gran combinacion, dándole a los comensales la experiencia de lo argentino con un poco de sabor mexicano. Eso despertó a los tapatíos el apetito por los cortes gruesos”.

Dicha experiencia les dio la pauta para buscar a los clientes “con un servicio que esté dando cosas nuevas, pues progresamos gracias a que ofrecemos la mejor carne que se vende en el mercado internacional y que el cliente sepa que va a encotrar un restaurante bien surtido: Tenemos un stock impresionante de vinos y licores, y pueden encontrar con mucha

posibilidad lo que les gusta, además del servicio personalizado; también nuestras instalaciones han mejorado mediante remodelaciones esas son nuestras prioridades: Servicio, calidad y cantidad porque somos un restaurante basto”, señala el restaurantero. Y este nivel se debe también a un equipo sólido: No hay tanta rotacion de personal, mucha gente ya fue jubilada y hoy contamos con muchos parientes de ellos.

Así, frente a la llegada de nuevas opciones gastronómicas, La Estancia Gaucha sigue ocupando un lugar preponderante, ya que las nuevas tendencias culinarias son en su mayoría conceptos que pasan de moda. Y aunque de dos décadas para acá el giro que más restaurantes ha abierto es el italo-argentino “estamos donde estamos porque somos un restaurante de tradición, aquí es posible comer los mismos platillos que hace veinte años”, remarca Maschiarelli.

Ahora bien, a mediano plazo, contemplan abrir una tercera sucursal al sur de la ciudad para atender a la gente que vive en dicha zona y que “por petición de los clientes, estamos decididos a hacerlo, ya que somos una familia dedicada a servir la mesa con mucha calidad, orgullo y, sobre todo, felicidad”, concluye.

ne of the restaurants with more popularity within the taste of the Tapatios is the Estancia Gaucha, which with 37 years of existence still maintains its original success thanks to the vision of its owners Gerardo and Diego Maschiarelli. “We have 50 years experience as restaurateurs. The Estancia Gaucha of Niños Heroes was a breakthrough because we built it in a commercially deserted area, almost on the outer skirts of Guadalajara and the response of the people was important,” they recall.

“In 1978 we opened the first branch,” says Gerardo, “when my father Roberto Maschirelli knew how to cover the need of the Tapatio customers, and with my uncle Orlando Maschirelli´s great experience in meats, it was a great combination, giving our guests the experience of the Argentinean with a little Mexican flavor. This awoke the Tapatios´ appetite for cuts of meat”.

This experience gave them the guidelines to search for customers “with a service that is providing new things, because we are making progress thanks to the fact that we offer the best meat that is sold in the international market and that the client knows they are going to find a well-stocked restaurant. We have an impressive stock of wines and spirits from which with much possibility what is liked can be found. In addition to personalized service, our facilities have also been improved by renovations. These are our priorities: service, quality and quantity because we are a plentiful restaurant,” says the restaurant businessman. And this level is also due to a solid team. There is not much staff turnover and many people have already been retired. Today we have many relatives descending from them.

Thus, in the face of the arrival of new dining options, the Estancia Gaucha continues to occupy a prominent place, since the new culinary trends are mostly concepts that go out of fashion. And although in the last two decades the type of restaurants that have opened the most are Argentinean-Italian “we are where we are because we are a restaurant of tradition, it is possible to eat here the same dishes than twenty years ago”, emphasizes Maschiarelli.

However, in the medium term, they are considering opening a third branch in the south of the city, in order to provide service to the people who live in that area and that “at the request of the customers, we are determined to do so, since we are a family dedicated to serve at the table with a lot of quality, pride and, above all, happiness,” he concludes.
