ANCESTRAL ARCHITECTURE Hacienda Cocoyoc hotel combines modern conveniences with a gorgeous architectonical style that stands out thanks to wide gardens, swimmingpools, yards and arches. Por sus condiciones naturales, Villa de Álvarez tiene grandes atractivos a su alrededor, como El Agua Fría, que es un manantial de agua transparente; La Piedra de Juluapan es un lugar 100% ecoturístico y encierra una leyenda: Dice que detrás de ella el Rey de Colimán escondió sus tesoros; o La Campana, que es una fabulosa zona arqueológica del año 1500. Además, la fama de Villa de Álvarez le viene de sus sabrosos antojitos regionales, especialmente los pescados de El Mixcuate y los famosos Sopitos de la Villa, que se cocinan en las tradicionales cenadurías. ¡Tómate unos días para recorrer todo esto!
En julio de 2013, La Petatera fue nombrada Patrimonio Cultural del Estado de Colima.
Plenty to see… and tatse Because of its natural environment, Villa de Alvarez is surrounded by great attractions, such as Agua Fria (Cold Water), a clear-water natural spring; Juluapan’s Rock, a 100% Eco touristic place which holds a legend: it says that behind the rock, Coliman’s King hid his treasures; or the Campana, a fabulous archeological area dating back to 1500. Additionally, Villa Alvarez’s fame comes from its tasty regional antojitos (Mexican tapas), particularly Mixcuate fish and the famous Sopitos de la Villa, prepared in the traditional local restaurants. Take a few days to discover all of this!

La plaza de toros La Petatera está en Villa de Álvarez -una población que estaba en las afueras de Colima y hoy es parte de la ciudad- y es construida cada mes de febrero con madera, petate e ixtle. La construcción utiliza tecnología indígena -¡es cierto!- y es una obra arquitectónica inteligente, de estructura flexible, ingeniosa y eficiente para la zona sísmica. Es un “esqueleto” entretejido y amarrado en perfecta armonía, provisto de estabilidad estructural, con bajo costo de construcción. Está formada por un entramado de maderas de la región que son unidas entre si con cordeles y sogas de ixtle. Además de la plaza de toros, el conjunto arquitectónico se complementa con la zona de corrales, construida de acuerdo a los mismos principios de la plaza. Para hacer sombras, son preparados enjaules de otate del mismo ancho pero de diferentes

longitudes, que se conocen como sombras largas y sombras cortas, y sobre estos enjaules se cosen los petates con mecate y agujas de aria. Y las faldas son la cubierta de la plaza, que también están hechas de petate y son colocadas en la parte baja de las gradas y en las escaleras de cada uno de las plateas. La creación de la plaza es una obra maestra de logística y coordinación, por lo que la calidad y la seguridad están sobre de todas las cosas: El maestro de la obra define si la condición de los materiales es aceptable o no; y si no es así, solicita que los consigan de nuevo. Por su parte, el concesionario contrata a los tabladeros para que se hagan cargo del montaje, la terminación, el mantenimiento y el desmontaje final. ¡La mejor prueba de que es una obra maestra es que nunca se ha derrumbado!

AN INTELLIGENT AND SUSTAINABLE
La Petatera bullfighting ring is located in Villa de Alvarez- a town that used to be outside Colima but which is now part of the city- and is built each year in February, with wood, weaved palm leaves and fiber. The construction uses indigenous technology –that’s true!- and it is an intelligent architectonic construction, with a flexible, ingenious and efficient structure for this seismic region. It is a “skeleton” weaved together and tied up in perfect harmony, provided with structural stability, with a low building cost. It is made of a lattice of wood pieces from the region, tied up with fiber strings and ropes. In addition to the bullring, a corral area, built along the same principles used for the bullring, complements the architectonic ensemble. To provide shade, cages are prepared, made of cane
sticks of the same width but of different lengths, which are known as long shades and short shades, and on these cages the palm leaves are sewed with ropes and aria needles. And the “skirts” are the cover of the ring, which are also made of palm leaves and are placed in the lower part of the stands and in the stairs of each one of the stalls. The creation of the bullfighting ring is a masterpiece of logistics and coordination, this is why quality and security are above all things: the foreman decides if the materials condition is acceptable or not; if that’s not the case, he asks for new ones to be supplied. On his part, the licensee hires the workers in charge of the set-up, the finishing, the maintenance and the final dismantling. The best proof that it is a masterpiece construction is that it has never been knocked down!

DE LA PLANTACIÓN A LA MESA SABOR DESDE LA ANTIGUEDAD
El chocolate viene del cacao, una semilla que se cultiva desde hace 2,500 años -en ese tiempo los granos del cacao eran utilizados como moneda- en la región que hoy conocemos como Tabasco, así que en La Ruta del Cacao puedes ver el proceso de elaboración del chocolate: Desde la fermentación de la semilla verde, el lavado y el tostado, hasta probar el delicioso producto terminado.
En la antigüedad era bien visto que el chocolate se sirviera con bastante espuma al llegar de visita a una casa, de lo contrario se pensaba que no no te recibían con mucho cariño.
En honor al chocolate Villahermosa también es sede de grandes eventos, así que cada año hace un festejo culinario-cultural para rendir homenaje al cacao y a sus productos: Es el Festival del Chocolate, que reúne a participantes nacionales e internacionales de la gastronomía. La fecha de la edición de este año está por confirmarse, pero es seguro que nadie va a faltar al encuentro, que ofrece platillos, postres y bebidas preparadas a base de chocolate, además de recorridos por plantaciones de cacao, catas de cerveza, vino y mezcal, y un espacio interactivo para los niños que les muestra la historia del cacao y cómo es transformado en chocolate.

Villahermosa is also a venue for great events, so it organizes every year a culinary-cultural celebration to pay tribute to cacao and to its products: the Festival of Chocolate, which gathers domestic and international gastronomic participants. The date of this year’s event is to be confirmed, but it is a fact that no one will miss the gathering, which offers dishes, desserts and beverages made out of chocolate, as well as cacao plantations tours, beer, wine and mescal tastings, and an interactive space for children which shows them the history of cacao and how it is transformed into chocolate.

cacao criollo El lugar está a 58 kilómetros de Villahermosa y conserva esa parte romántica que de seguro te va a encantar, pues tiene como misión rescatar y dar a conocer el valor cultural, folclórico y artesanal, así como cuidar el medio ambiente al regenerar las plantaciones del cacao criollo. Por ejemplo, se hizo un injerto de cacao forastero para que sea más fuerte, pero conservando la calidad y sabor del cacao criollo de Tabasco, además que los árboles de pimienta y los árboles de canela son usados para proteger a los del cacao de las inclemencias del tiempo.

Chocolate comes from cacao, a seed grown since 2,500 years ago –at that time cacao beans were used as a currency- in the region nowadays known as Tabasco. So, the Cacao Route allows you to see the making process of chocolate: from the green seed fermentation, to the cleaning and roasting, until the tasting of the delicious final product. We suggest you visit one of the most important cacao estate in the state: Hacienda Jesus Maria maintains the original way of growing cacao and making homemade chocolate, and in order to keep up with world trade, it also produces it on an industrial scale. So, on the property you can see how the beans are dried, roasted and ground.

ENCHILANDO AL MUNDO Latinoamérica es la cuna del fruto más picante: El chile. Existen cientos de variedades de colores, tamaños, formas y picor. Indiscutiblemente es uno de los sabores omnipresentes en la gastronomía mexicana, pero también se utiliza en muchas cocinas del mundo. El chile, junto con el maíz, el frijol y la calabaza, fueron los ingredientes base de la dieta de los aztecas, y después éstos viajaron al Viejo Mundo, donde los cultivaron y adaptaron en sus platillos típicos.

Por ejemplo, en Hungría encontramos la famosa páprika: Polvo de chiles secos que se utiliza en los guisados, especialmente en el famoso Goulash, el cual es un caldo de res con verduras y ligeramente picante gracias al pimentón o páprika. La páprika ya es parte de la identidad de Hungría y es uno de los souvenirs más buscados por los turistas. El sabor que da el chile a los platillos es único y los mexicanos sabemos que podemos comerlo hasta en forma dulce, porque: ¿Quién puede resistirse a un tamarindo con chile?
BURNING THE WORLD Latin America is the birthplace of the spiciest fruit: chili pepper. Hundreds of kinds of colors, sizes, shapes and spiciness can be found. It is undoubtedly one of the omnipresent flavors of Mexican cuisine, but it is also used in many other world cuisines. Chili pepper, along with corn, beans and pumpkin, where the prime ingredients used by the Aztecs in their diet, ingredients which then travelled to the Old World, where they were grown and adapted to their typical dishes. For instance, in Hungary is found the well-known paprika: a dry chili powder used in stews, especially in the famous Goulash, which is a beef and vegetable soup, slightly spicy thanks to the sweet pepper or paprika. Paprika is now part of Hungarian identity and is one of the most popular souvenir among tourists. The flavor given by chili pepper to dishes is unique, and us Mexicans know that it can even be eaten in its sweet version, because who can resist to a tamarind with chili?

1 El festival Lollapalooza nació con la idea de recorrer Estados Unidos, y ha sido tan concurrido que se decidió hacerlo en todo el mundo, por lo que el evento llegó a Chile en 2011, al año siguiente se hizo en Brasil, luego en Argentina y hasta 2015 llegó a Europa, con su primera edición en Alemania. Para este 2017, en octubre, Lollapalooza tendrá como sede la capital tapatía. El lugar y la fecha precisa aún están por definirse. www.lollapaloozaar.com
BEISBOL MUNDIAL / WORLD BASEBALL
Lollapalooza festival was founded with the idea of holding venues across the United States, and it has been so popular that it was decided to expand it to the rest of the world. As a result, the event was held in Chile in 2011, the following year in Brazil, then in Argentina, and until 2015 it was held in Europe, the first festival there being in Germany. In October of 2017, Lollapalooza’s venue will be the capital of Jalisco. The exact place and date haven’t been settled yet.
The Charros of Jalisco’s stadium will be hosting Group D of the World Baseball Classic – including the teams of Puerto Rico, Italy and Venezuela- and the games being scheduled from March 9th to March 12th. Support your favorite team!

Pascual Orozco ROPA, ARTE Y ALTA COSTURA Un motivo de celebración en el mundo fashion en México es el reciente logro del diseñador de modas Pascual Orozco al participar en el concurso People’s Choice en la edición México Diseña by ELLE -un importante evento en el que participaron talentosos diseñadores mexicanos- y del cual él fue el ganador. Nacido en Tangancícuaro, Michoacán, Orozco llama la atención en la industria de la moda mexicana gracias a su ingenio y buen gusto, por lo que la prenda que lo hizo ganar el certamen es una verdadera obra de arte textil: un abrigo de formas orgánicas cubre a un top color blanco -éste lleva estampado un corazón y venas en color negro, haciendo un guiño a la obra de Frida Khalo-, y una impresionante falda de formas asimétricas, logrando un conjunto funcional y 100% atemporal que puede ser utilizado en cualquier ciudad cosmopolita, ya sea para salir a cenar, ir a un coctel o para visitar un museo. CLOTHING, ART AND HAUTE-COUTURE A reason to celebrate in Mexico’s fashion world is the recent success obtained by the fashion designer Pascual Orozco for his participation in People’s Choice contest in the issue Mexico Designs by ELLEan important event in which participated talented Mexican designers- for which he was the winner.
Born in Tangancícuaro, Michoacán, Orozco draws the attention of Mexican fashion industry thanks to his ingenuity and good taste, as the garment that made him win the contest is a real work of textile art: a coat with organic shapes covers a white color top - this top has a heart and black colored veins printed on it, as a tribute to Frida Kahlo’s work-, and an impressive skirt with asymmetric shapes, achieving a functional and 100 % timeless attire that can be used in any cosmopolitan city, either to go out to have dinner, to go to a cocktail or to visit a museum. His success is also influenced by the addingups of his vocational and labor training, since he studied fashion design at the Modstil Institute, creative photography, jewelry trends at Peñoles Group; he took part in a workshop on traditional suits and embroidery of Michoacán as an inspiration in the digital age, studied fashion sociology, trends in contemporary design and fashion digital marketing; since 2009, he is a creative designer in the Pascual Orozco company, he was a fashion illustrator at Class Clothing 2010, took part in ELLE’s Mexico Designs 2013 Haute Couture en Blanc, was a stylist for ASVOFF's short film Mexico Fashion Film 2014, presented the autumn- winter collection 2015-2016 at Glamazon Runways, in Mexico City, and was a creative designer at SKOLKA Boutique, among his numerous experiences.

2017: POSITIVE GOALS
Empezando el año con toda la actitud de bajar por los menos los últimos kilos de Guadalupe-Reyes y sin proponerme metas extraordinarias, porque esas ya sé que no las cumplo; llevo un par de años proponiéndome hacer sólo un poco mejor lo que ya estoy haciendo.
I am beginning the year with the full intention of losing at least the last pounds gained during the winter holidays, without setting extraordinary goals, knowing that I don’t achieve them; in the last couple of years, I have resolved myself to do just a little better than what I am already doing.
Siempre lo escribo, aunque mis propósitos son continuar lo que ya empecé y tratar de siempre mejorarlo. Me parece que siempre hay cosas que queremos cambiar y mejorar, pero cambiar es un proceso que no sólo implica tener ganas de cambiar, sino saber por qué queremos cambiar eso y cómo le haremos para lograrlo, incluso si tenemos la fuerza de voluntad que necesitamos. Y por esta razón, este año les propongo que tengamos metas más amorosas. Sí, metas positivas, como sonreír más, quererme más, recordarme todos los días lo linda que estoy y lo mucho que valgo, cuidarme y hacer más cosas que me gustan, más cosas que disfruto, sea esto lo que sea; si es ir al cine, hacerlo más seguido; si es ver el atardecer, proponerme a hacerlo; si es convivir con mi familia, hacer algo que me impulse a crear esos hábitos positivos. Entonces este año, más que bajar esos cinco kilos, comer saludable e ir al gym todos los días, estaría bien hacer una lista de propósitos de amor, propósitos que nos hagan disfrutar más de la vida, de este año, estoy segura que con tres que logremos de verdad vamos a hacer de este año uno de los más felices. Yo les deseo un 2017 lleno de bendiciones disfrazadas, de esas que no vemos más que con el tiempo y los ojos que ven magia. Love, Ch.
I always write about it, although my resolutions are to continue what I have already started and always try to make it better. I believe there are always things we would like to change and improve, but change is a process that not only involves the will of changing, but also to know why we want to change it and how we will make it happen, including if we actually have the will power we need. This is why, this year, I suggest we have more loving goals. Yes, positive goals, such as smile more, like myself more, remind myself how pretty I am and how much valuable I am, take care of myself and do the things I like to do, more things that I enjoy, whatever they are; if it’s going to the movies, do it more often; if it’s watching the sunset, make sure you do it; if it’s spend time with my family, do something that will trigger the acquisition of these positive habits. So this year, more than losing those 10 pounds, eat healthy and go to the gym every day, it would be a good idea to do a list of loving resolution, resolutions that allow us to enjoy life and this year more. I am sure that with three resolutions that we truly achieve, we will make this year one of the happiest ever. And I wish you a year 2017 full of hidden blessings, the kind of blessings we only see over time and with eyes that see magic. Love, Ch.

When we think of this country, it is inevitable that the words tradition, celebration and perpetuity come up.
