ROCKY ROAD
Ingredients
• 500 grams dark chocolate, chopped (50% cocoa)
• ½ cup shelled pistachios
• ½ cup coconut threads
• 200 gram packet macroon biscuits, roughly chopped
• 1 cup turkish delight, roughly chopped
• ½ cup loosely crushed meringues
• ½ cup small chocolate eggs, halved or quartered
Method
Line the base and sides of a 20-23cm square tin with baking paper.
Melt the chocolate in a bowl over a pot of simmering water. Remove from the heat and set aside.
In a bowl, combine the remaining ingredients, and reserve a little of each for on top. Once the melted chocolate has cooled to room temperature, add to the bowl and stir to combine.
Pour the rocky road mixture into the tin. Scatter over the reserved ingredients and chill for 3 hours or until completely solid.
Use a sharp knife to cut the rocky road into small squares.

THE JOURNEY OF SUMMERVILLE HOUSE
1. What inspired you to undertake such a large project?
I have always had a great love for early colonial architecture and had previously restored two historic homes overseas. I love the provenance and depth of character that these homes have, and there is something about the design integrity, scale and craftsmanship from that era that just can’t be replicated from new. People just don’t build homes with soaring 3.8metre high ceilings anymore! When I moved back to New Zealand in 2020 I was looking for another project and decided that I would like to do a relocatable, and find something to relocate on to a rural site. These large old homes were designed to be surrounded by space and expansive landscape. I was lucky enough to find bare land in the area (which is exceptionally hard to come by) and after an extensive and lengthy search (relocatable homes from this era are incredibly hard to find now), I found a large home on Spring Street in Onehunga that was uninhabitable and had been left to degrade but had great bones and a beautiful hand carved Rosewood wrap around staircase. It couldn’t be demolished and could only be moved off the site. It was something that was screaming to be restored and bought back to its former glory.
The restoration of the original home, together with the extensive extensions (including the addition of the wrap around verandahs) and renovation, was a huge job but I’ve got this thing inside me that likes to bring faded things back to life and restore them to their former beauty. Seeing new life and love breathed into something faded just brings me joy. It is somewhat in my DNA having grown up with parents that regularly took us to demolition homes as children to source materials and joinery for our own family home built by my Father.
We have called the home ‘Summerville House’ in recognition of the family, Archibald and Louisa Sommerville, who commissioned the home originally - we believe in the late 1800s. The name pays homage to the original owners but has a slight revision to it which embodies the long balmy summers that we enjoy and so love at the property. I like to think that the Sommervilles would be pleased to see their much loved home restored and standing proud once again in its new environment and with modern amenity.
2. What initially drew you to this location, and what makes it so special to you now?
I spent my childhood in the countryside surrounded by big open skies and space. The early imprint of a rural upbringing never really leaves you. It is where I feel the most grounded. I also love the beach and the coast so the blend of countryside and coastal living that the Matakana and Omaha region provides appealed to me, and all within an hours drive (45 mins on a good day) from the city. I’ve also spent time in the Hamptons and love that part of upstate New York. Matakana and Omaha remind me of that part of the world and the region has always evoked the same feeling and lifestyle proposition for me.
It is a rarity to find a site of this size where you can enjoy the best of coastal and country living on your doorstep and feel completely removed from it all but still be proximate to the city.
I love the proximity that the area has to other surrounding beaches, outer islands and world class golf courses. It is an area that really does offer the best of everything!
I also love popping in to the many roadside stalls in the region for fresh fruit, flowers and vegetables and to the Matakana village - from the wonderful and abundant Farmers Markets, to the lovely cinema and the delicious Polish Bakery for fresh bread. It is real soul food!
3. What do you love most about living here?
The quiet enjoyment, the beautiful and expansive sunsets, the view of Mt Tamahunga, the afternoon light which has the most beautiful golden hue, watching nature at play, that every room in the home (even the scullery and laundry) has a large window and is flooded with natural light, open fires by the alfresco dining area at night, Summers spent enjoying the company of family and friends in the pool, the pool house or on the tennis court, Winters spent having cosy evenings by the fire or dinner parties in the formal dining room, hearing the laughter of children as they run round the verandahs, and picking fresh flowers from the gardens and figs, limes and other citrus from the fruit trees. It is just one of those happy places where the days are long and peaceful, and the noise of the world fades away.
4. What is it about this property that makes it feel so special?
It is a very gracious looking home and you feel the energy and warmth of that sense of grace the moment you enter the property. It is also a happy home that was conceptualised and built with a lot of love, care, thought and attention to detail.
When you are sitting looking out over the pool to the mature olive trees and gardens, and the sun setting over Mt Tamahunga, you really could be anywhere in the world.
I also worked on this project with my Father, an architectural Draughtsman, who carefully designed and conceptualised the extensions and renovations to the main home, and the design for the pool house and garage, in a way that was synergetic with the era and design of the original home. It was critical to us both that the new aspects had design integrity and were so cohesive that no one would know what had been part of the original footprint and what hadn’t. He was a special and talented man and unfortunately for our family this project proved to be his last job. We got to enjoy it together and he got to have the creative reward of not just seeing the project finished but to also enjoy some very happy family time in the home, and that will always make it a very special place as it had his special touch.
