LEMON & HERB COUSCOUS SALAD

Ingredients

• 1 ½ cup dried Israeli couscous

• Salt and fresh ground black pepper

• 1/4 cup extra-virgin olive oli

• 1 teaspoon dijon mustard

• 1/2 teaspoon honey

• 1 teaspoon finely grated lemon zest

• 2 - 4 tablespoons fresh squeexed lemon juice

• 1 medium cucumber, diced

• 1/2 cup coarsly chopped fresh herbs; parsley, cilantro, basil, dill or mint

• 1/4 cup chopped walnuts, toasted

• 1/4 cup raisins (optional)

Method

Bring a large saucepan of salted water to a boil. Add couscous and cook until tender, 8-10 minutes. Drain.

While the couscous cooks, in a large bowl, whisk the oil, mustard, honey, lemon zest, lemon juice, 1/2 teaspoon of salt, and 1/4 teaspoon pepper. Add the drained couscous to the dressing and mix well.

Stir in the cucumber, tomato, herbs, walnuts and raisins. Taste for seasoning and adjust with salt and/or pepper as needed. Enjoy warm or cover then refrigerate until cool, about 1 hour.

HOMEOWNER AND INTERIOR DESIGNER

1. As an interior designer what was your inspiration for the aesthetic of your home?

The moment we stepped onto the property and took in the sweeping 180-degree views of the harbour and surrounding hills, we were sold. The home’s architectural design immediately offered endless potential to create something truly distinctive. We envisioned the loggia as a central living and entertaining space, and it became the springboard for our entire design approach—a modern interpretation with a Spanish revival twist! A large outdoor fireplace, terracotta tiles and exposed trusses typical of this style created a solid foundation for us to extend this look and feel into the interior.

2. What about this property and its features that makes it feel so special?

It’s all about the views! I’ve always loved living in a home with a strong aspect, and Green Road delivers that in spades. From sunrise to sunset, the landscape constantly shifts, revealing new beauty every day. Beyond the incredible views, we were drawn to both the property’s rural location and its proximity to Matakana. Nestled between two working farms, the home feels incredibly private, yet it’s just a quick three-minute drive to town. The solid brick construction also brings peace of mind, as it requires far less maintenance than a typical weatherboard home. Throw in the pool and subtropical landscaping, every day feels like a holiday at home!

3. For any inspiring interior designers, what are your top three tips?

• Focus on Timeless Choices Over Trends. Trends come and go, so I always encourage clients to think deeply about what truly resonates with them. This way, the spaces we create will feel enduring and authentic.

• Respect Your Home’s Architecture. When designing, it’s essential to stay sympathetic to the architectural style of the home. Unless you’re doing a full renovation, building on the home’s existing character is the key to achieving a cohesive look that flows naturally and feels harmonious.

• Start with Functionality. How you live, work, entertain, and relax in a space is deeply personal. To make the most of any space, begin by considering its intended function—this will guide everything from layout to fabric choices. Vision boards can be a huge help throughout this process, keeping you inspired and focused on your design vision as things progress.

4. What’s the most important thing a client should know before starting a design project?

For many, hiring an interior designer can feel like a leap of faith, as the process and outcomes may feel unfamiliar. That’s why we believe in thoroughly educating our clients from the start— explaining each phase of our process, how we work, expected outcomes, and the projected costs for any upgrade or renovation.

Beyond enhancing the look of a home, working with a designer brings added functionality, creating spaces that clients can enjoy with friends and family. Importantly, thoughtful design adds resale value for those who may eventually decide to move on. It’s invaluable to start with a clear vision of what we’re designing and who it’s for. For us, the design journey is about building trust and understanding with our clients, so we’re all working together toward a shared vision— it’s a truly rewarding experience!
