ccording to a recent article on the website MarketWatch, approximately 62% of Americans have no emergency savings. The sudden loss of a job could result in being thrust into the job seeking arena unprepared, as living paycheck to paycheck often leaves workers lacking the career clothing that could provide a better edge in the competitive labor market. For these reasons, the Dress for Success Sioux Falls program empowers women to enter or return to the workforce by providing a network of support, professional attire and career development tools to achieve economic independence. In support of Dress for Success Sioux Falls is the 5th Annual In Her Shoes Empowerment Breakfast on Thursday, February 8, 2018 from 7:30am to 9:00am at the Sioux Falls Convention Center. Cris Linnares, international author, Psychologist and founder of womensimpact.org and FLAW Club will serve as keynote speaker for the event and will share her passionate message about women’s wellness and empowerment. This morning event brings together over 600+ women and encourages them to take on a greater role in changing the course of their own lives, as well as become a force of empowerment in the community. One of the most empowering moments during this morning happens when clients who have been directly impacted by Dress for Success Sioux Falls share their compelling stories and encourage women to reach their full potential and find inspiration in themselves. According to Angela Tewalt, passionate
community member and freelance writer, “The In Her Shoes Empowerment Breakfast is one of the most powerful gatherings of women I have experienced in my community. It is a wonderful opportunity to not only engage with like-minded women, but to feel inspired by stories of perseverance, bravery and empowerment.” Volunteers who work one-on-one with women to prepare them for interviews or new employment see first-hand the impact they’re making. It is evident by the boost of confidence given to each woman who walks into the Dress for Success doors, and is usually the first step forward in that woman entering or returning to the workforce. CHRISTMAS FOR TWO A Couple’s Guide to Starting Holiday Traditions By Chellee Unruh
T
he holidays are a magical time of year when family and friends get together and the city streets are filled with lights and warm scents. It’s also the time of year when couples and families will carry out traditions that have been passed through the years. Traditions are important for family bonding and they are equally important for couples and marital relationships. Taking time to create memories and traditions – as just the two of you - will do wonders for your relationship. It will also give you fond memories to look back on. If you are looking for a new tradition to start with your spouse, here are five ideas to inspire you. SIP AND SHOP – For this idea, spend the day with your spouse shopping for presents for your family and friends. Instead of going to the traditional box stores, try and buy all of your presents from local businesses. By doing this you are supporting other local families, spreading Christmas cheer and supporting your community. Downtown Sioux Falls or the Bridges on 57th would be great places to start. While you are shopping take a break at one of the many local bars or restaurants to share a cocktail and a dessert or end the day with dinner. Over dinner, you can talk about all of the unique gifts you were able to find. CHRISTMAS LIGHTS – Go on a date night with your spouse and pick a place that is special to you. Maybe it is the restaurant of your first date, the bar where you first met or the coffee shop where you introduced your spouse to your family for the first time. After your dinner/drink, embark on your own tour around Sioux Falls and look for the neighborhoods with the best lights while listening to a local radio station that plays non-stop Christmas tunes. There are many neighborhoods that have coordinated holiday themes such as candy cane lane. You can make it a game to discover the streets with the best lights or you can keep it simple and drive through the Winter Wonderland at Falls Park. OH, CHRISTMAS TREE – It wouldn’t feel quite like Christmas if you didn’t have a Christmas tree. Make it a tradition to pick out your tree together. You can go to a tree farm and chop down your own, or let someone else do the chopping and you browse their selection of pre-cut trees. After picking out your tree, take it home and decorate it together. If you happen to live in a place that doesn’t allow you to have a live tree, go out and buy one new ornament a year that signifies

something that happened during the year to place on your artificial tree. Soon you will have a collection of ornaments that tell a story of your relationship and the life you are building together. CLASSIC CHRISTMAS MOVIES – There is no shortage of wonderful movies to get you in the holiday spirit. Pick a meal that you make together and then each of you picks out your favorite Christmas movie and watch them together. Then each year make the same meal and watch the same movies. You can add creativity to each year by doing different variations on the same dish. For example, you can make a different soup and sandwich combination each year, but the tradition is you always make soup and sandwiches as your meal before you watch your holiday movies. Maybe instead of watching the same movies you can both pick a new holiday movie. THEMED STOCKING – This is a great way to show your spouse that you really do pay attention to what they like and what they are interested in. Pick a theme for each other’s stocking and then go to town making it personal and unique for each other. This can be such a fun tradition to start that it will take the worry and stress out of what you should buy for your significant other. SERVE OTHERS TO SERVE YOURSELF – What can really bring you closer together as a couple is not what you do for each other, but what you can do for others during this time of year. Find a volunteer opportunity that you can do together. Serve a meal at the banquet, ring bells together for Salvation Army, or adopt a family and buy Christmas presents for them instead of each other. Not only will you build beautiful memories with each other, but you will also brighten the light for someone else. After all, ‘tis the season for love and giving. Whatever tradition you start with your spouse make it personal, make it fun and make it about celebrating your relationship. Doing this will keep the magical holiday spirit going from year to year while you build lasting memories. It also serves as a great reminder of what this season is really all about. n

Compassion Nano Nagle: The Lady of the Lantern By Natalie Slieter

ano Nagle founded the Sisters of the Presentation of the Blessed Virgin Mary in 1775. She was born in Ireland in 1718. While Nano finished her Catholic education in France, she spent her free time socializing and dancing. Early one morning, she saw poor people waiting outside the church. Nano was struck by how they were waiting in the cold to attend Mass while she had enjoyed an evening out and felt compassion for them. Her sister Ann also played a role in her learning of the trait. Nano was looking for some fabric set aside to make a party dress, but couldn’t find it so asked Ann about it. Ann told Nano she gave the fabric away to someone who needed it more than they did. Nano was amazed at her sister’s compassion.

Nano realized something needed to change in her life. In 1746, she joined a convent in Paris. She felt led to work directly with those in poverty so she left the convent and returned to Ireland at age 32. She opened schools in secrecy to teach Catholic children who weren’t allowed an education. After teaching
Sister Virginia McCall ministers to locals in Zambia, Africa. A local man asked her for assistance with covering the public school fees so his daughter could attend. Sister Virginia told him they would help and the man cried, saying, “I didn’t think my daughter would ever go to high school.”
The Presentation Sisters have looked to Nano as their example of compassion. In 1880, they arrived in Aberdeen to educate children. When a diphtheria epidemic hit the area, the sisters became nurses to care for the sick. The healthcare ministry they began, and now Co-sponsor with the Benedictine Sisters, is what is known today as Avera Health. Some ways the sisters have shown compassion to Sioux Falls in the last century is by operating an orphanage, caring for HIV and AIDS patients, and welcoming immigrants.
“Compassion is setting aside your personal needs to respond to the needs of others,” Sister Virginia defined. “It’s caring for the sick, suffering, neglected, isolated, and vulnerable.”

Third, experience the life of the homeless and refugees by traveling to other countries and forgoing the typical tourist experiences. Finally, volunteer with local organizations servicing those in need such as Caminando Juntos, Bishop Dudley Hospitality House, St. Francis House, Kids Against Hunger, Food Pantry and Salvation Army.

How to Cut the {Bad} Fats and Calories, Not the Flavor
M
ore times than not, those traditional holiday recipes we love this time of year are unfortunately filled with heavy, high calorie ingredients. We all know that nothing compares to Grandma’s recipes, yet the ingredients don’t typically fit into the healthy lifestyles we’ve been working so hard to maintain. This doesn’t mean we should give up our healthy lifestyles for the holidays, nor does it mean we should give up making these favorite recipes. Instead, I have some go-to substitutions that will turn those traditional “unhealthy” recipes into nutritious recipes, using real food substitutions. These delicious substitutions allow us to celebrate the holidays, without missing out on our favorite foods. Of course, it is all within moderation that we will enjoy these, while we live and encourage others to live a healthy, delicious and nutritious lifestyle! CREAM SUBSTITUTION Heavy cream is certainly delicious in all those holiday recipes, but the high saturated fat and high calorie content is far from comforting. My favorite go-to substitution for all those creamy and savory dishes that use cream: pureed white beans. Look for canned cannellini beans or another white bean that you can easily puree, just drain and puree. They have a very mild flavor, are the same color as cream and will provide the same consistency, while keeping our waistlines happy.

1 cup cream = 1 cup beans, pureed *Bonus tip: If beans aren’t your thing, try using pureed cauliflower. I’m not talking cauliflower mashed (which is delicious), but a pureed consistency that provides that creamy texture that works as a great cream substitute. OIL SUBSTITUTION A tried and true way to cut the fat while keeping baked goods moist and delicious is using applesauce. Make sure you are using unsweetened applesauce, as we are looking to make a healthier substitution for oil, not a substitution with added sugar! The amount of fat and calories you’ll save by making this simple swap may make you want to replace all of the oil in your baked recipes with applesauce. This substitution works best in bread and cake-like recipes and results in a very moist, dense product. 1 cup oil = 1 cup applesauce *Bonus tip: If you don’t have applesauce on hand, try using mashed bananas – this is one of my new favorite ways to use up bananas while saving calories and not sacrificing flavor or consistency!

BUTTER SUBSTITUTION Mashed avocado has the same velvety texture of butter and although it does contain fat, it’s the good cholesterol-lowering fat that we want, along with a healthy dose of fiber. Not only will avocado lower the calorie content compared to butter, it will provide a softer, moister baked good. Choose a ripe (slightly soft) avocado and puree or mash to use in place of butter in any of your baked recipes. This substitution will make some rich and delicious baked goods and won’t change the flavor that we love. Keep in mind avocado is green in color, so it will be best to sub in dark batters/mixes. 1 cup butter = 1 cup avocado, mashed/ pureed *Bonus tip: Baby food works great and there’s a vast assortment of fruit and vegetable purees you can experiment using – my favorites to use are prunes, sweet potatoes, and carrots. Sweet Potato Bites (Servings: 4) INGREDIENTS • 1 1/2 pounds sweet potatoes, scrubbed and sliced 1/3-inch thick • 1/4 cup brown sugar • 1 tablespoon cinnamon • Salt • 80 mini marshmallows (approximately)
INSTRUCTIONS 1. Preheat oven to 425º F. 2. Line baking sheet with parchment paper. Place sweet potato slices on the sheet. 3. Sprinkle each sweet potato slice with brown sugar, cinnamon and salt. 4. Bake for 15 minutes. 5. Top each slice with 3-4 mini marshmallows. 6. Broil 1-2 minutes, or until marshmallows are toasted.
Honey Roasted Carrots in Tahini Sauce (Servings: 4) INGREDIENTS • 2 pounds carrots, cleaned and trimmed • 1 tablespoon vegetable oil • 2 tablespoons honey • 4 tablespoons tahini sauce • 3 tablespoons lemon juice, fresh squeezed • 1 teaspoon soy sauce • 1 teaspoon honey • 1 garlic clove small, minced • 2 tablespoons water • 2 tablespoons parsley, chopped
INSTRUCTIONS 1. Preheat oven to 400º F. 2. T oss carrots with oil and honey. Arrange in a single layer on a baking sheet and roast in oven until tender, about 20-30 minutes, making sure to turn carrots once. 3. Mix tahini, lemon juice, soy sauce, honey, garlic and enough water to get the sauce to desired consistency. 4. Drizzle tahini sauce on top of roasted carrots. Sprinkle with parsley.
Sparkling Ice Cream Drink (Servings: 1) INGREDIENTS • 1 scoop strawberry ice cream • 8 ounces sparkling grape juice or champagne for an adult version • Raspberries, fresh
INSTRUCTIONS 1. Scoop one healthy scoop of strawberry ice cream into festive glass. 2. Fill rest of glass with sparkling grape juice or champagne. 3. Top with a few fresh raspberries.

Caramel Thumbprint Cookies • Cream 1/2 cup softened butter, 1/2 cup butter Crisco, 1/2 cup brown sugar • Add 2 egg yolks (save egg whites), 1 teaspoon vanilla, 1/2 teaspoon salt • Mix in 2 cups flour • Lightly beat 2 egg whites • Finely chop 1/2 cup pecans 1. Roll dough into small balls. 2. Roll dough balls in egg whites and then roll into nuts. 3. Bake on pan lined with parchment paper at 375º for 10-12 minutes. 4. After removing from oven place a caramel Hershey’s Kiss into middle of each cookie.
Never-Fail Cut-Out Cookies • Cream 1 cup softened butter, 2 cups sugar and 4 eggs • Add 4 cups flour (one cup at a time) • 1/4 teaspoon cinnamon • 1/4 teaspoon nutmeg 1. Sprinkle 1⁄8 cup flour on dry surface. 2. Remove dough from bowl and place on flour. 3. Gently roll dough into flour until dough is evenly and lightly coated. Dough will be soft but not sticky. 4. Place dough into bowl covered tightly with plastic wrap and place into refrigerator for a few hours. Set dough out for 30 minutes before rolling. 5. Roll dough to 1⁄8 inch thick and cut with cookie cutters. 6. Bake on ungreased pans at 350º for 8-10 minutes.
Coconut Dream Cookies • Cream 1 cup softened butter, 2 Tablespoons corn starch, 1 cup powdered sugar • Add 1 cup flour
1. Chill dough for a few hours. 2. Roll into small balls and then roll in 1 1/2 cups sweetened coconut. 3. B ake on ungreased pan at 300 for 20-25 minutes. Will be toasty brown and moist.

hen we think of gathering around the table with friends and family for holiday meals, many of us begin to think about the wine that is going to be shared amongst the group. When choosing holiday bests of white, red and rosÊs, it’s important to keep one word in mind; versatility. Not only in the aspect of how versatile the wine should be to pair well with the assortment of dishes on our tables, but also the palates of all of your guests. A common rule of thumb when pairing food and wine is: White and light wine with lighter and brighter dishes; Red and bold wine with rich and heavy dishes.
• BUBBLES are always nice to consider as an “ice-breaker beverage” when your guests are first arriving and mingling. Not only are the bubbles lively and will help influence and carry social interactions amongst friends or new family, but the bubbles are also waking up your palate and preparing it for the wine and food that is about to be consumed at the table. A bottle of Santa Margarita Sparkling Rosé would be a lovely starter as well as a very traditional and classy bottle to display on the table. This rosé is a bright and aromatic blend of three different grapes; Chardonnay, Glera and Malbec. • PINOT NOIR is my “go-to” selection for a bottle of red for holiday dinners. The wine itself is typically light bodied, higher in acidity and holds softer tannins that don’t leave your mouth with such a puckering sense of dryness. Lighter bodied reds pair very nicely with turkey and ham while the high acidity is able to cut through a rich gravy or roasted flavor component of your dish. To explore a different style of wine that is a cousin of Pinot Noir, I’m recommending a bottle of Domaine Pral Morgon which is made from 100% Gamay grapes. • DRY RIESLINGS are my favorite selection for a bottle of white wine for the holidays. Rieslings are often misconstrued as being overly sweet, but it’s important to know that there are not only sweet styles of Riesling, but also off-dry and completely dry styles as well. Rieslings are intensely aromatic, highly acidic and dangerously easy-drinking, in the best way possible, of course. The high acidity balances out with the level of sweetness that your wine holds and makes it very easy to pair with not only sweet foods, but also any type of dish that holds spice. Bright acidity slices through fat found in potatoes, gravy or stuffing while also cutting through and enhancing baking spices found in cranberry sauce, maple roasted squash or glazed carrots. I have personally fallen in love with this style of wine and can assure you that a bottle of Trefethen Dry Riesling from Napa Valley, California will do the trick. Fifth-generation farmers Josh and Kara Kayser grow soybeans in Emery, South Dakota, which means a lot of cold days inside with their four kids. Create a frosty masterpiece Let their imagination run wild as they “paint” the snow with diluted food coloring. “The kids will brave the cold temperatures outside and scoop up a big bowl of snow,” said Kara. “They love using different food colorings to make their own unique artwork in the snow. It’s an easy and fun activity they only get to do in the snowy months.”

Share a special recipe Kara and her kids enjoy baking her grandmother’s classic peanut butter cookies. The kids love pressing the signature crisscross design on the tops of the cookies, just as Kara did at their age. Cooking together is a great opportunity to talk about where food comes from. “I talk to the older kids about how dairy cows need food that’s rich in protein to grow strong and healthy, so the protein-packed soybeans we grow are an important part of their diet,” she said. “This helps them produce the milk we use to make these delicious cookies.”
Teach them a valuable skill Like most moms, Kara pays attention to labels when she shops to make sure the food they eat is healthy and safe. You can help your kids understand how to read food labels, so they can grow up to be savvy shoppers.

or over twenty years, Clark and Connie Sinclair have enjoyed living in their twostory water front home located on Lake Madison. The breathtaking views of glistening water, aromatic breezes and of course the recreational family fun, makes their dwelling a top gathering spot. But after many years of living in their traditional style home, the Sinclairs decided it was time for a facelift. Owners of Montgomery’s Home Fashion: Furniture, Flooring, Mattresses and Lighting, they knew exactly where to turn when it came time to remodel. “We removed walls, painted trim and completely redecorated to give a more nature-inspired, modern look,” adds Connie. Upon entering, the oversized front door with ample glass opens to an expansive space that resonates clean lines, natural sunlight and large spans of windows overlooking the sparkling, blue waters. With the walls painted a subtle cream tone and wide plank hickory floors stained a smoky brown, the stage was set for beauty and contemporary refinement. Flowing into the main level great room, the sturdy fireplace provides the perfect focal point with nearly three tons of limestone
slabs used to create the two-story high fireplace wall. To add contrast and additional dimension, the fireplace wall is coated in a muted olive tone that blends with the darker accent pieces and upholstery. As sunlight flows into the space, the monochromatic colors all work together and are given depth with added touches of charcoal fabrics and accessories. A mercury glass coffee table lends a touch of metallic shimmer which is seen throughout the home.

For easy entertaining, the open space also includes a formal dining area. Cues from nature are seen everywhere from the Belgium linen side panels to the metallic gold branch accents on the drum chandelier. “It was important for us to use as many natural products in our home as we could,” adds Connie in reference to her use of wood, stone, wool and organic pieces. The dining room continues with a neutral setting and is given pops of metallic tones through the use of accent pieces and art. The kitchen, the heart of the home, remains functional yet features a myriad of natural materials such as wood, steel, porcelain and granite. The cabinets, made from rift sawn oak, are left smooth-faced with only minimalistic stainless steel hardware. A blend of mixed metal and glass cabinets are used to offset the dark wood and complement the stainless steel appliances. A large center island with cream and charcoal marbled granite countertop also includes an induction stovetop for added convenience. Bringing in a touch of tradition, frosted glass subway tile are used for the backlash and blends with the stone countertops. Perfect for hosting gatherings or just regular weekends at the lake, dual eating spaces offer plenty of options both for efficiency and design. The casual dining space features a round, bleached wood table that is softened with neutral fabric chairs and is complete with a pewter accented drum chandelier. Meanwhile, the dual tiered peninsula with granite countertops and upholstered seating is perfect for casual conversation and serving guests.

But when it comes to the true jewel of this home, the sunroom rises to the top as one of the Sinclairs’ favorite spaces. Encased in windows, the sprawling view of the lake is a work of art that is enjoyed while sitting in the soft fabric furniture surrounded by minimal accessories. To continue the open, flowing feel of the space, a painted vaulted ceiling and arch top window are reminiscent of the open air feel of lakeside living. “This is one of our favorite spaces in the home,” says Connie. “We just love to sit and have our coffee.” Taking unique cues from contemporary design blended with heritage, the family room is where this group gathers to truly kick back and relax. The vaulted ceiling with beams is painted a creamy white and is accented with rope lighting for added dimension. The floors feature wool carpet that is accented with an authentic cowhide rug. “This is a unique

Additional tribalthemed fabrics accompany this transitional room for added interest. “When it comes to our home, we want people to just come in and be comfortable.� This statement holds true with the durable yet classic leather sectional, a family favorite that features optional modes for positioning to allow optimal relaxation. sophistication. Finishing off the main level is the master bedroom and bath. With a comfortable and casual feel, the master bedroom makes a statement with minimal accessories but dramatic tones. Dark, gray Mica wallpaper adds drama to the statement wall and makes the creamy upholstered headboard stand out while blending with the darker toned bedding. A walk-in bay window allows for ample natural sunlight while a drum chandelier offers additional lighting overhead. Additional hand-scraped wood beams, slate tile and faux finished rust toned walls are distressed for the perfect balance of time traveled elegance meets modern convenience. Meanwhile, tumbled travertine oversized tile floors add a lighter touch. Finishing off the lower level is an exercise room and storage space that has been converted for additional recreational activities. An octagon tray ceiling is faux finished in tones of muted brown and gray while faux finished brick walls are the perfect backdrop for a shadowbox display of Native American artifacts. long a mantle, framing a window or door, or as table center piece, a pine cone garland is an easy and inexpensive way to bring the outdoors inside this holiday season. Whether left as simple pine cones or combined with embellishments, the best part of this garland is its use beyond the holiday season. This Christmas add some fresh or faux greenery and berries, then switch them out to “frosted” winter floral pics in January. Bring the garland back out to use earlier next year in the fall and add in leaves, gourds or cinnamon sticks. For table top or shelf use, glass votives or candlesticks can be staggered throughout for a cozy glow. Begin by determining the length for the garland. Cut a piece of craft wire that is 12 inches longer than the desired length. Thin craft wire is recommended for its ability to easily thread through the pine cones

while still allowing for movement in the finished garland. I recommend using a drill bit that creates a hole just large enough for the wire to pass through easily. If you are having a difficult time inserting the wire without it bending, increase the bit size. It is important to drill on roughly a 45 degree angle. The angle will allow the pine cones to partially overlap, creating a fuller look rather than them being end-to-end if connected through the centers. Thread the wire through the first pine cone by inserting the wire at the bottom. Pull 6 inches of extra wire through. Wrap the excess 6 inches around the cone, hiding it close to the core. This pine cone is your first end

Forming Healthy Habits This Holiday Season
I
f you are looking for a way to spend some quality time with your children during the rush-rush times between Thanksgiving and New Year’s, many experts think cooking with them could provide that time, along with many additional benefits. We’d all like our children to be more adventurous eaters, and we know we need to encourage healthy eating habits. Cooking with them can do that. There are many positives that may come with parent/child cooking experiences, especially during the gathering of family in this special time of year:
START WITH SAFETY For young children, provide a sturdy stool to help them reach the work surface. Avoid loose clothing and tie back long hair. Think about utensils that are safe for children to use. For spreading, you can substitute wooden craft sticks for knives and use plastic bowls and measuring cups instead of glass. A plastic knife or cheese knife will work to cut things like soft fruits and vegetables. KEEP THEM BUSY
• Children feel a sense of accomplishment when they cook • Children feel they are contributing to the family • Children may be more likely to eat food that they have helped prepare • Cooking provides time away from screens • Cooking can instill self-confidence in children
Always match cooking activities with your child’s age and abilities. Make sure to choose a recipe that has enough things for the child to actually do; kids get bored when they have to stand and watch. Supervision is essential. Adults should handle the use of knives and other sharp utensils, stove tops, ovens and microwave ovens.
Before you embark on a parent/child cooking adventure, remember that you will need an appropriate amount of time, a good deal of patience and a tad more effort in the clean-up department. Turn off the screens, turn on some music and get ready for some fun.

Toddlers can dump, stir, fill, and tear. Let them dump the eggs into the batter, stir the grapes into the fruit salad, fill a measuring cup with strawberries, and tear lettuce.
Preschoolers can do all of those things plus measure with help, mix, spread, grate, whisk, cut and sprinkle. Encourage them to do things like mix the pancake batter with a spatula, spread frosting onto cookies, whisk eggs, cut tomatoes or sprinkle cheese on a pizzas or breakfast eggbake casseroles. School-aged kids can do all of those things plus chop with supervision, use equipment like a blender or microwave (after they have a safety lesson), plan a cooking activity by searching for recipes, make shopping lists, gather ingredients and supplies and read and follow directions. Kids love to give their opinions. Let them choose a recipe, or choose an unusual fruit, vegetable, herb or spice to try. Let them choose the cookiecutter shapes or help you find a recipe for a “Wow!” dessert for the family. After the cooking activity, let kids rate the finished product: younger kids can give a thumbs up or thumbs down while older kids can give a dish a “star” rating from one to five. Older kids might enjoy filling out “comment cards” like ones they have seen in restaurants. You can have them create those cards, too. WHAT KIDS WILL LEARN Cooking activities give kids experience with math, science and language and help them develop fine motor skills. Here are some examples: • Fractions: ¼ cup, ½ teaspoon • Measuring: Cup, tablespoon, pound • Counting: 3 cups of flour • Volume: full, empty • States of matter: water is a liquid, ice is a solid and steam is a gas • Temperature and state-of-matter changes: gelatin solidifies when cold, butter melts when heated • Cooking techniques have names: mix, whisk, chop, fold and blend • Colors and color change: shrimp turn pink when we sauté them, grapes are different colors Cooking with kids has endless opportunities for fun and learning. Give it a try – your child may not end up on Chopped Junior, but he/she will reap many benefits from this activity. It could also be a place where a new holiday tradition comes to life, one that starts young and may be a heartwarming part of many Christmases to come across generations. n

LOCAL DOCTOR CONTRIBUTING TO MULTI-MILLION DOLLAR GRANT By Natalie Slieter | Photo courtesy of Orthopedic Institute
O
ne of Sioux Falls’ own doctors will be part of a Vanderbilt University study for the next five years. The study, The Arthroscopic Rotator Cuff (ARC) Trial, is a $7.5 million grant sponsored by the Patient Centered Outcome Research Initiative (PCORI), a branch of the federal government. Dr. Keith Baumgarten of Orthopedic Institute will be part of the study focusing on whether non-operative treatment can be as effective as surgery for chronic rotator cuff tears. Orthopedic Institute is one of two private practices contributing to the ARC trial along with ten universities in the country.
Since 2007, Dr. Baumgarten has been working with the shoulder research group Multi-Center Orthopedic Outcome Network (MOON) to find improvements in shoulder care. To be accepted, he applied and showed he would be a productive member. The group found success in their research on nonsurgical treatment for chronic rotator cuff tears so they submitted a grant to the federal government to compare their method of nonsurgical treatment to that of surgical treatment, which was approved. “We want to see if we can prove there is value in the treatments we do and continue to make medicine better,” Dr. Baumgarten said.
The first three and a half years of the ARC Trial will consist of finding 700 willing participants with rotator cuff tears of partial thickness or full thickness. These tears will be chronic, meaning they have developed due to the aging process. None of the participating doctors will know what treatment each patient will receive until they open the randomized envelope. “It really comes down to how much people are interested in finding the best treatments for chronic rotator cuff tears,” Dr. Baumgarten explained. “If they feel like they want to change [treatments], we cannot tell them they can’t, but ask if they would be willing to stick with the treatment intervention so we can see if it actually works.” Once participants are found, the patients’ respective treatment of surgery or physical therapy will begin. The next year will be follow-up to see how participants are responding to treatment and comparing the two groups. The hope is more grant money will be received so follow-up can continue past the five-year mark.

“We want to make certain the surgery remains successful from a structural standpoint and for patients who have non-operative treatment, that their tears don’t continue to enlarge,” Dr. Baumgarten said. In the non-operative treatment group, it would be considered a success if physical therapy allowed the patient to have full function and no pain without finding evidence of tear enlargement over time. The ARC Trial will look at the results to see if non-operative treatment will benefit everyone with chronic tears or certain subsets of the population. The two subsets they will be looking at are age and size of the tear and seeing what the results are. “Many people think they have to have surgery and that is not always true,” Dr. Baumgarten explained. “We’re doing our best to help guide patients to what treatment is best for them.” n

bout 75 percent of people who suffer from insomnia can identify the cause. During the holiday season, this number is likely to rise. Deemed the most wonderful time of the year, even those who do not typically suffer from insomnia may experience disruptions in their sleep patterns. Often overlooked as a cause for daytime symptoms such as memory loss, fatigue and lack of concentration, sleep plays a major role in one’s overall well-being and can get in the way of holiday festivities. But there are ways to improve sleep quality during the holiday season. Dr. Scott at Midwest Ear, Nose and Throat is a trained sleep specialist who has treated countless patients who suffer from chronic to seasonal insomnia. But if all the tinsel and holiday hustle and bustle aren’t the only things keeping you up at night, then Dr. Scott suggests looking into the common causes for chronic insomnia. “The holidays can bring additional stress which can be treated with short-term solutions,” he says. “But there are times when patients must take a deeper look into their insomnia.” More chronic factors include sleep apnea, depression, chronic pain or physical disruptions

adies all across the world want to look good in stylish shoes, but does the style also have the comfort. Over the past couple decades women in the workplace have increased significantly. Ladies are on their feet walking and standing more than ever before. One of the most talked about in the fashion industry is comfort-fit shoes with style. Does comfort and having no foot pain outweigh style? Can you buy a pair of high heels and still have no foot pain? Let’s dive into the comfort and fit first. Most good shoe companies strive to offer business women an option of a heel, wedge or flat that will give exceptional arch support and fit. Does the shoe have a shank in the midsole to help with support? If the consumer is suffering from instability a heel is probably not the best choice. Having a solid wedge or a lower heel with a wider base will give the back of the ankle and foot more support. Although many of the shoes that center themselves around support lack modern style. You may sacrifice looks for comfort. For now finding shoes with style, color and class maybe a little more difficult. There are a few more brands these days to choose from that offer a more appealing look. S
tephanie Spader appears to be your typical working mother. She has five beautiful children who never cease to keep her busy: Maasa and AJ, both in high school, Catherine in middle school, Teresa in elementary school, and Rebekah. She has been married to her husband Tony for almost 20 years. Stephanie is also a top leader with the global sales company, Norwex, where she educates people on how to clean their homes without the use of toxic chemicals. But if you look beyond that, you see a woman who has dealt with problems that no one wishes to face: children with health problems and ultimately, losing one of them due to the effects of environmental toxins. The passion she has for her work with Norwex comes from the journey she went on with her daughter Rebekah. Stephanie’s first born, Maasa, was diagnosed with Hereditary Sensory Autonomic Neuropathy (HSAN), an inherited disorder that causes sensory dysfunction, such as depressed reflexes, altered pain, and temperature perception. The challenges of caring for a medically fragile child meant leaving her job as an office manager. Over the next few years, she brought AJ and Catherine into the world. When Stephanie was pregnant with Rebekah, fourth in the lineup, she knew something was off. It was similar to her first pregnancy and once Rebekah was born, Stephanie knew Rebekah also had HSAN. Even though the symptoms were present, it wasn’t officially diagnosed until Rebekah was two years old.

After Rebekah’s diagnosis, Stephanie and her husband were left caring for two medically fragile children. Much of their time was spent in and out of hospitals due to Maasa and Rebekah both having immune deficiency along with the HSAN. This lifestyle was emotionally and physically draining. While they did have challenges, her family was happy and relying on each other and their friends to face those challenges together. Family was and is the most important thing to Stephanie. Their fifth child, Teresa, was a surprise coming four years after Rebekah. They didn’t realize just how important her life would be. Before Rebekah turned six, she was hospitalized around Thanksgiving due to a respiratory infection. Stephanie remembers the family being antsy to leave so they could spend the holiday together outside of the hospital. But one of Rebekah’s doctors wouldn’t release her and Stephanie later learned it was because he saw an abnormality in her blood work.
Soon after, Rebekah was diagnosed with Myelodysplastic Syndrome, a precursor to Myloid Leukemia. To prevent the disease from turning into cancer, Rebekah needed a bone marrow transplant. All of Stephanie’s children were tested and the results showed Rebekah’s baby sister Teresa was a perfect match, something usually only seen in identical twins. When Rebekah was six and Teresa two, the bone marrow transplant took place in Minneapolis. A week before the transplant took place, Rebekah had to undergo chemotherapy. Stephanie and the rest of the family were hopeful the new cells would replace the old cells, a process called engraftment. However, the process worked on and off over the next three years; sometimes the new cells were present, but the next time a bone marrow biopsy was done, the old cells were back. By 2015, another bone marrow transplant was needed to avoid the diseased cells turning to cancer, as the engraftment was not happening. But Rebekah said no, she was done. The initial treatment resulted in her suffering from nausea, headaches, and overall, feeling horrible. “With Rebekah’s desire being taken into consideration, we chose not to do another transplant even though we knew the outcome,” Stephanie choked up. “We talked to her about Heaven and that she would have the opportunity to go see Jesus.” The decision to cease treatment was unimaginably difficult, but Stephanie knew they couldn’t put her through anymore. Stephanie and Tony had Rebekah make a bucket list prior to the decision to stop treatment, and she started checking things off her list, which included getting a puppy. Stephanie and Tony asked Rebekah if she wanted to meet Geoff Moore, a Christian singer the family often listened to at home, which she said yes to. Stephanie started contacting people to see if he would be willing to come to Sioux Falls to do a concert. Geoff Moore agreed to perform and before they knew it, the concert grew legs of its’ own, Stephanie remarked. Money from ticket sales, corporate sponsors, and donations started rolling in and by the time the concert happened, over $21,000 was raised. When Stephanie and Tony asked Rebekah what she wanted to do with the money, Rebekah said she wanted to give the money to the Make-A-Wish Foundation, which resulted in three children getting their wishes. “We were so proud of her, because a kid her age would probably say something like ‘go on a trip’ or ‘buy this or that,’” Stephanie said.
Rebekah’s health continued to deteriorate during 2016 and she told Stephanie something that blew her away with the maturity of her explanation. “She wasn’t afraid of dying, but she was scared of what it was going to feel like. She wasn’t afraid to go be with Jesus, but she just didn’t know how she

He knew she wouldn’t make it to her own high school winter formal and wanted to give his little sister the chance to dress up and dance the night away. Stephanie shared that it was a very special moment for the family.

After Rebekah passed away, Stephanie and family were inspired to continue the generosity Rebekah so easily showed to others. To honor Rebekah and her generosity, they started the Rebekah’s Legacy Foundation, rebekahslegacyfoundation.com, which became a 501(c)3 in December 2016. The foundation has been able to support other families and children going through difficult times in their own medical journey. Through word of mouth, they have been able to learn of families in need to send funds to so they can pay for medical bills and other bills.

Stephanie said it is still a work in progress, but it’s important for them to pay it forward. They received assistance from others when Rebekah was ill, like gas cards from an anonymous donor and having a complete stranger offer his home in Minneapolis to Stephanie and Rebekah while Rebekah underwent the bone marrow transplant and for some time after the transplant. Looking back, Stephanie sees that during the pain and grief and suffering, God was still showing grace and blessings to her and her family. Her faith has been her foundation. Losing her daughter was unfathomable, but through it all, she learned so much. “It’s not that God doesn’t give us more than we can handle; instead God helps us handle what we’ve been given,” Stephanie reflected. “I know that God can use hard situations for His good if we allow Him to do so.” n

or Lisa Bendt, life was good. Great even. Having a thriving career and being able to enjoy her love of travel, she enjoyed a comfortable lifestyle and seemed to have it all. However, a few years back she realized something was still missing.
