Taste of Elegance Local Chefs Turn Up the Heat at Culinary Competition

or 26 years, the Taste of Elegance culinary competition has challenged the skills of some of the area’s finest chefs to prepare delicious South Dakota pork. Stacey Sorlien, program and communications director of the South Dakota Pork Producers, says she doesn’t expect the popularity of the event to diminish any time soon. “I think that people are just becoming more interested in reality TV cooking shows and they like new and creative meals,” she says of the event, which has sold out for the past

two years. “They are being more inspired by new cuts of pork and other proteins, so an event like this is a great opportunity to try new things. I think our guests love having a chance to vote to see where their opinions stand compared to the ‘foodies’. ”
The competition pits 10 to 15 chefs against one another by challenging them to prepare an innovative meal with original recipes using any cut of pork. Their creations are tasted by three culinary judges, who determine the winner based on originality, appearance and taste. The winning chef receives an engraved plate, $1,000, and an invitation to the NPB Pork Summit at the Culinary Institute of America’s Greystone Campus in St. Helena, Calif. Taste of Elegance guests are encouraged to sample every chef ’s creation and to vote for their favorite dish. The chef who receives the most votes is awarded the People’s Choice Award. In addition, guests can participate in a silent auction to benefit The Banquet in Sioux Falls. sfw

A
s the air turns brisk and snow begins to fall, winter sports enthusiasts can’t wait to hit the slopes.And a highlight for such devotees in the area is the annual MediaOne FunSki hosted at Great Bear Recreation Park. What started out strictly as a cross-country ski race benefit in 1989 has grown exponentially over the years. This year, participants can enjoy and compete in snow sculpture design, tube races, skiing competitions, snowboarding events, Zipfy sled races, kickball, and, of course, the cross-country ski race. Many events are categorized from beginner to advanced, welcoming contestants of all skill levels and ages. And while the event promises a weekend full of outdoor fun, the cause couldn’t be more serious, as 100 percent of the proceeds go to fund

the operating expenses of Children’s Inn, a local nonprofit organization offering free services to victims of domestic violence. “Our first mission in coordinating this event has always been to raise awareness,” explains Greg Blomberg, event director. “Then, any money we can generate for Children’s Inn is icing on the cake.” During its 25 years, the event has raised more than $750,000 for the cause. Domestic violence is not discerning; it affects communities large and small, wealthy and impoverished, and victims young and old. National statistics show that 1 in 4 women will experience domestic violence in their lifetime. Since its inception in 1977, Children’s Inn has pro-
vided safe shelter to tens of thousands of victims and survivors when they needed it most, providing a warm bed to sleep in, trained staff to comfort, and time to heal. In 2013 alone, more than 2,800 people benefited from the vast services offered by Children’s Inn, whether the need was safe shelter, crisis intervention, or assistance in safety planning.
“The MediaOne FunSki has been an incredible event for Children’s Inn,” says Staci Kropuenske, Children’s Inn development coordinator. “The support it provides financially is only the beginning of how it impacts victims of domestic violence. It has helped raise awareness of a topic that is sometimes difficult to bring to the forefront. And it has helped victims find the help and support they need to break free from the violence.” Staci continues, “We are so honored to benefit from this event.” The organizers and staff at MediaOne feel equally as honored to be able to make a difference for Children’s Inn and the clients it serves. Greg agrees, “For a long-term commitment, we couldn’t have found a more-deserving organization to benefit.” FunSki begins Friday, January 23, and continues through Saturday afternoon. The Chalet will host live music Friday evening, as well as the awards ceremonies throughout the weekend. Great Bear Recreation Park will remain open to the public and spectators sfw are welcome!

obody wants to share their food at Macho Nacho on East 10th Street in Sioux Falls. That’s because every menu item tastes so great no one is willing to spare even a bite of the authentic goodness. Tami Smith, creator of Macho Nacho, says, “I wanted to do an authentic Mexican restaurant. I have an appreciation for the phenomenal culture of food in Mexico. Each region has their own flair for different foods.” There are a lot of Tex-Mex options in town, so Macho Nacho extended Sioux Falls’ Mexican dining options to items found south of Texas. For example, chili relleno is typically stuffed with cheese, but their recipe also has meat in it, replicating authentic south of the border tastes. The queso is something Tami worked especially hard on creating. “I tried a ton of recipes,” she says, “but nobody said that’s ‘craveable,’ so I came up with a

ingstop has hundreds of stores across the nation, but the new one in Sioux Falls is the first for South Dakota. Wingstop on Minnesota Avenue offers traditional and boneless wings tossed with 11 flavor choices. “Lemon pepper, garlic parmesan and mango habanero are the most popular,” says owner Claire Santos. The other mouthwatering flavors fit anyone’s taste in wing sauces and include hot, Cajun, atomic, mild, teriyaki, Hawaiian, hickory smoked barbecue, and Louisiana rub. Claire says people in the area will love Wingstop. “It’s not fast food. It takes a little time to get the wings. They are made with care and served piping hot.” Every order is made fresh when ordered and nothing sits under a heat lamp to keep it warm. Patrons can choose from seven side dishes made fresh daily, including hand-cut seasoned fries, which are Claire’s favorite; potato salad; coleslaw; rolls; bourbon baked beans; cheese fries; and veggie sticks.
Wingstop offers carryout and patrons can call ahead, order online or download Wingstop’s new app to streamline service. Dining inside is encouraged too, Claire says. The restaurant seats 52 and has TVs so nobody misses game time. A children’s menu is available, and chicken lovers can also get chicken strips to go with their beer and soft drinks.

There’s an ‘App’-itizer for that! Chinese Beef Pot Stickers with Quartet of Dipping Sauces
Ingredients: 1 lb. ground beef (95% lean) 1 Tbsp. sesame oil 1-1/3 cups finely chopped button mushrooms 1 Tbsp. minced garlic 1/4 cup chopped green onions 1 Tbsp. minced fresh ginger 1/2 tsp. pepper 1/4 cup reduced-sodium soy sauce 40 wonton wrappers (3-1/4” to 3-1/2” squares or 3-1/2” rounds) 2 cups water, divided

Directions: Prepare desired dipping sauce(s); set aside. Heat oil in 12-inch nonstick skillet over medium heat until hot. Add mushrooms and garlic; cook and stir 3 to 5 minutes or until tender and liquid has evaporated. Remove from heat. Transfer to large bowl; stir in green onions, ginger and pepper. Cool to room temperature. Add ground beef and soy sauce; mix lightly but thoroughly. Spoon 1 level tablespoon beef mixture in center of 1 wonton wrapper. (Keep remaining wonton wrappers covered with clean, damp kitchen towel to prevent drying out.) Moisten edges of wonton wrapper with fingertip dipped in water. Fold wrapper diagonally in half, sealing edges and pressing out air. Place on baking sheet lined with parchment or waxed paper. Repeat with remaining wonton wrappers and filling to form 40 pot stickers. Wipe out same 12-inch nonstick skillet; spray liberally with nonstick cooking spray. Heat over medium heat until hot. Arrange 10 pot stickers in single layer in skillet; pan-fry 4 minutes, turning once. Carefully add 1/2 cup water. Cover; cook 2 to 3 minutes. Remove pot stickers keep warm. Repeat with remaining pot stickers. (Wipe out skillet and spray with additional cooking spray between batches to prevent sticking.) Serve pot stickers with dipping sauce(s).
Pot Sticker Dipping Sauces: Maple-Wasabi Dipping Sauce: Combine 6 Tbsps. maple syrup, 1/4 cup reduced-sodium soy sauce, 1 Tbsp. wasabi paste and 2 tsps. minced fresh ginger in small bowl. Makes about 2/3 cup Citrus Dipping Sauce: Combine 1/2 cup fresh tangerine or orange juice, 1/4 cup mirin (sweet rice wine), 2 Tbsps. reduced-sodium soy sauce, 1 Tbsp. chopped green onion, 2 tsps. sesame seeds and 1 tsp. minced fresh ginger in small bowl. Makes about 1 cup Thai Peanut Dipping Sauce: Combine 1/3 cup light coconut milk, 1/4 cup creamy peanut butter, 2 tsps. fresh lime juice, 2 tsps. reduced-sodium 54

Makes about 2/3 cup Spicy Sweet-and-Sour Dipping Sauce: Combine 1/2 cup water, 1/4 cup sugar, 1 Tbsp. rice vinegar, 1 Tbsp. reduced-sodium soy sauce, 1 tsp. cornstarch, 1 tsp. minced fresh ginger and 1/2 tsp. chili garlic sauce in small saucepan; bring to a boil, stirring occasionally. Boil about 2 minutes or until slightly thickened; cool slightly before serving. Makes about 1/2 cup
Mini Taco Dip Bite Appetizer Ingredients: Two 8 oz. packages of cream cheese, softened 1 package of powdered taco seasoning mix 1 cup (or less) of sour cream Taco sauce Tortilla chips (scoop shaped) * Recipe from madiganmade.com
Directions: Using an electric mixer, beat the cream cheese and taco seasoning mix together. Slowly add enough sour cream (almost 1 cup) until at desired consistency (like a soft frosting). Fill a pastry bag (using a frosting tip) with the cheese mixture and pipe the cheese onto individual tortilla chips. Top each bite with a small dollop of taco sauce and serve.
Cheesy Caramelized Onion Flatbread Ingredients: 2 Tbsps. extra virgin olive oil, divided 1/2 large white onion, very thinly sliced 1/4 tsp. salt, divided 2 soft flatbreads (about 4 to 5 ozs. each) 1/2 cup fresh ricotta cheese 1 large garlic clove, minced 4 ozs. fresh mozzarella, thinly sliced (about 6 slices) 1/4 cup freshly grated Romano cheese 3/4 tsp. black sesame seeds 1 Tbsp. thinly sliced fresh basil 1/2 tsp. orange zest

nowmobiling isn’t a rambunctious, wild ride only for young people anymore. More and more couples and families are taking advantage of great snowmobiling packages and rental opportunities in the Black Hills. There are 350 miles of marked, mapped and groomed snowmobile trails in the Black Hills, making it one of the nation’s top snowmobiling destinations. Kassidi Smith, of Sioux Falls, says she was always interested in snowmobiling, but never had the opportunity until she and her husband, Lucas, spent their honeymoon in the Black Hills. “We stayed at Spearfish Canyon Lodge, where they offered snowmobile rentals. We knew we couldn’t pass up the opportunity to make an unforgettable memory on our honeymoon, especially when we’d been interested in trying it for years.”

There were several rental options for the Smiths, but they chose a double sled and rode together. “The staff made sure we were properly equipped and gave us a crash course in ‘Snowmobiling 101’ before sending us on our way,” Kassidi says. “Mad-dashing through Spearfish Canyon on a snowmobile is indescribable. We spent four straight hours snowmobiling and not a minute went by without noticing the absolute beauty surrounding us on all sides,” she shares. “I believe we traveled close to 50 miles and in that time, we saw so much—beautiful springs and rivers, vast areas of untouched snow, trails surrounded by wildlife and trees, cliffs with gorgeous colors mixed. We truly felt like we were exploring the unknown and it was amazing!”

Snowmobiling doesn’t have to be a long-distance arctictemp trek, either. Now, along those Black Hills trails, there are gas stations, warming shelters, trailheads and pit stops. And grooming makes travel easy; it’s done every night during the winter on the designated trails. Lee Harstad, director of the Deadwood Chamber of Commerce says, “The trailheads are well-marked and along roads with towns nearby, which makes for easier access. While on the trails, convenient stops allow for rest room breaks and catchyour-breath stops,” Lee says. “The trails take you through the heart of the most-rugged Black Hills, but there are ample conveniences, if needed, to make the trip more manageable.” Depending on snowfall, trails open around December 15 each year. “We were impressed by our experience and can’t wait to go sfw back,” Kassidi adds.

hether it’s the casual décor or soft textures, this grand, traditional two-story brick wonder manages to encapsulate modern-day family living in style. Deemed a “lived-in” look by homeowners Michelle and Shawn Poe, an open, curved staircase and a newly finished, contemporarydesigned lower level balance it all out. “We love people. And our goal is to have guests feel comfortable and relaxed in our home,” Michelle shares.

Decked out for the holidays, including a unique “Travel Tree,” the main level entryway and formal living room are true showstoppers. A large black lacquer grand piano rests in the corner, which complements the traditional style finishes of the tiger wood floors and rich trim. The eye immediately is drawn to a living space that is sectioned off by a unique transom ceiling accented with wood trim and contrasting olive-toned paint. The walls remain a neutral taupe keeping the space open and airy. A large, drystacked stone wall with built-in gas fireplace from Hebron Brick Supply is flanked by double windows simply covered by wood blinds, complementing the dark trim. To soften the space, a contemporary rug and accent pieces perfectly nestle the soft leather furniture. Originally designed to include a formal dining area, the family opted to modify the floor plans to adapt to their growing family needs and occupations. Both working out of their home, Michelle and Shawn wanted to keep the focus on the kitchen and create an open space that allows for better flow and gathering spaces. “No matter how big a kitchen is, everyone gathers in it,” Michelle says with a smile. The couple wanted to ensure the kitchen was not only large enough but could also be open to the rest of the space. To meet their dining needs, a casual dining area separates the kitchen and living room. Its elongated, distressed dining room table and matching high-back leather chairs highlight the bay window with custom window seat. The walls remain a neutral creamy tone, keeping the eye centered on statement pieces such as the large pendant light fixture from Mahlander’s Appliance & Lighting.

Avid cooks, the Poe family wanted to ensure the kitchen was as beautiful as it is functional. Having custom designed the home seven years ago, their traditional design choices and casual décor keep the home in style and useful. A double-tiered granite countertop from Syverson Tile & Stone includes an array of warm, rich tones perfectly accenting the dark-stained custom cabinets from Dakota Kitchen & Bath. For display, the tops are open and backlit with tempered glass. Tumbled creamy tile cover the backsplash and are accented with metallic medallions that blend with the stainless steel appliances also from Mahlander’s Appliance & Lighting. The tiger wood floors extend throughout the space making a seamless transition from one area to another.

The Poes spend a lot of time in their house. “We are here virtually 24/7 if we’re not traveling,” Michelle says. “So we definitely spend a lot of time here.” They also have two young daughters, so allowing their home to have a “lived-in” style is a plus. Their home office features a shag-style rug on wood floors for softness and pale lime walls. An accent wall in a rich spice tone adds contrast in addition to the darker olive ceiling. Contemporary glass and steel furniture keep things professional looking while staying traditional. Even a whimsical vintage sewing machine base is converted into a television stand by adding a simple glass top. The main level powder bath takes a turn with bold colors. Bright terra cotta walls are finished in a suede technique that blends with the neutral countertops and marble sink. A simple frameless mirror and traditional light blend contemporary flair with classic design. The dark wood custom cabinet adds contrast to the light tile and adds a spacious feel. Leading upstairs, the winding open staircase is adorned with festive garland, showing off the black wrought-iron spindles and rich wood tones. At the top, a small overlook gives the perfect snapshot of the lower level and is finished off with a classic bombe chest and wrought-iron wall sconces. Each a showcase of their personalities, the girls’ rooms are filled with character and charm thanks to the design expertise of Dawn Bures, owner of Dawn Bures Designs. The youngest daughter’s room even includes a custom stage, built by Shawn, a spotlight and curtain along with a colorful playhouse that includes a bed. Even the family cat enjoys sleeping in the quaint playhouse and may be a spectator for many dance recitals. Another modification from the original plan: the upper level includes a laundry room unlike any other. With chalkboard painted walls, there’s some serious fun scribbling along with a functional countertop and sink. Also included in the upper level is a full bath. Its coordinating dark wood custom cabinet and subtle tile and countertop tones add continuity to the home’s overall design while remaining functional for two young girls.

The spacious main sleeping area features classic carved wood furniture and rich jacquard bedding. A matching dresser and traditional armoire accompany the grand four-poster bed. With tiled floors and white walls, the custom dark trim, thick crown molding and columns designed by Quality Cabinets and More break up the light colors and section off the various areas of the open floor plan. A small gaming area features a table, bookcase and exercise equipment, while the main family room is a collaboration of contemporary design elements. A unique stainless steel floor lamp battles for attention against the bright red, white and black velvet-like upholstery and double slatted white metal blinds. Keeping things more traditional and elegant, crystallized wallpaper accents the media wall, which also features a unique wall-mounted fireplace. Ready for holiday entertaining or family relaxation, a traditional, familystyle tree is the perfect complement.

Bruce says that you can save energy in the winter by setting the thermostat to 68 degrees when you’re awake and lower the setting during the night or when you’re away from home. “By turning your thermostat back 10 to 15 degrees for eight hours, you can save 5 to 15 percent a year on your heating bill.”

Mark Lamb, HVAC department manager at Frisbees Plumbing, Heating, AC & Electrical, suggests a variety of ways to cut costs with proper maintenance. “It’s very important to have your unit condenser coil cleaned at least annually,” Mark says. “When your coil is dirty, it causes the unit to work much harder, which in return costs more to operate. Do You Hear What I Hear? Holiday Gatherings Often Bring Hearing Issues to Light By Jennifer Dumke
T
he holiday season appeals to all the senses—the smell of cookies, the sight of twinkling lights, and don’t forget taste. While all those may be obvious, what about hearing the sounds of the season? It’s often taken for granted unless it’s a struggle. A time of celebration can quickly turn into a time of frustration for those who suffer from hearing loss. Midwest Ear, Nose and Throat’s Kenneth M. Scott, MD and FACS, and Amanda Nordgren, Au.D., CCC-A and F-AAA, both say the holidays can be harrowing for the hard of hearing. “I think a lot of people start to notice that they have a hearing problem during the holiday season,” Nordgren says. “They may start to feel frustrated because they aren’t able to take part in conversations or they may avoid gatherings altogether.”

Like any type of health issue, admitting or sometimes noticing the problem, is the first step. Because of circumstances surrounding the season, it often comes to light through family members. “Seeing a loved one disengage from the group because they can’t hear well is concerning,” Dr. Scott adds. “Broaching the subject of hearing loss first by clarifying you care for them is the best way if they don’t admit to it themselves.” For those who know they have a hearing problem, they often will try to stay in a quieter area, invite others to sit one-on-one with them for conversations, make comments about loud background noise or even stay by people that have louder voices. Sometimes, people don’t know they have a hearing problem and rely on family members to take notice of subtle cues. “Some signs to look for would be disinterest in conversations, smiling and nodding while listening, and the more drastic, making comments that don’t relate to the topic,” Nordgren says. She adds that approaching the individual about getting their hearing tested can be extremely effective. “Simply state that you notice they are missing out and suggest they schedule a hearing screening. Maybe even offer to go with them,” she says. “If they aren’t quite ready yet, give them a gentle reminder of the trouble they are having, and how much you are helping them communicate.” For those ready to take charge of their hearing loss, hearing aids are the most common solution. “Many places offer free hearing screenings this time of year and are willing to discuss the various types of styles and level of technology that would best suit them,” she adds. And it’s good to be ready. “Now is the perfect time to look into getting a hearing aid,” Nordgren says. “Because they have time to give the hearing aid a ‘workout’ and see how sfw much they can benefit.”

ou hear it everywhere: “Happy holidays! Season’s greetings! Merry Christmas!” Yet stress or emotional pain may leave you feeling that the holidays are anything but jolly. Some people are dealing with family conflict that keeps them from wanting to go home for the holidays. Others are staring at an empty chair, due to death, divorce, or the fact that a loved one is deployed in the military. Still others are stressed about having the perfect table setting, the perfect decorations, or the perfect gifts under the tree. How do you cope with all the hype and buildup? 90

Mary Ellen Smith, an LPC-MH and counselor with Avera Behavioral Health Outpatient Services, advises women to manage expectations. “Holiday preparations can become more like work than looking forward to gathering with family and friends,” she says. “Society puts a lot of pressure on us to create a Hallmark holiday when we can’t live up to the expectations, and really no one can.” Are there things you can cross off your list, and no one would mind? “If you feel like you have to do something, maybe that’s not such a good reason,” Mary Ellen says. Don’t try to do it all, and ask for help.
Remember to take care of yourself. “Don’t deprive yourself of sleep, healthy meals or exercise,” she adds. If going home for the holidays will mean dealing with unresolved family conflict, come up with a plan. “First, you need to decide if you are emotionally able to go,” Mary Ellen says. “Maybe it’s OK not to.” If you have decided to go, then plan ahead when to arrive and when to leave. Have an “escape plan” in mind to either go home early or at least get out of the house. “Plan to surround yourself with positive people and stay close to them,” she suggests. If your conflict is reconciled
over the holidays, that’s wonderful. But don’t put pressure on yourself to make it happen. “It might not even be possible, and you could set yourself up for a huge disappointment.” If there’s been a loss in your family, give yourself and others permission to be sad. “Realize that the holidays this year will be different. Maybe it would be too difficult to go through the same traditions. Maybe it’s a year to do something different—go on a trip, volunteer, or just have a quiet, relaxing, simple day.” Remember that a holiday is just one day. “Our society has us building up for it from early October on through January,” Mary Ellen says. “That day can mean whatever you want it to mean.” Beware of unhealthy coping mechanisms, such as too much alcohol or food intake, or abuse of prescription or illicit drugs. If you deal with depression or anxiety or another mental health condition, don’t pretend it isn’t there. “Hook into a support resource, whether that’s friends, family, a support group or counselor,” she says. “And remember that substances, other than your prescribed medications, will only add to the depression and anxiety.” As you’re doing special things for others to make their season bright, put yourself on the list, too. Give yourself a gift of whatever brings you joy or peace. “Read a book, take a day off or take a nap. Spend time with people who are important to you. Functional fitness exercise is beneficial for all women, whether you currently exercise or have done very little exercise in the past. Individualized fitness Women’s exercise needs vary, so Shelly and other certified fitness and wellness

To take it up notch, Shelly suggests following these five steps: • Start with bodyweight exercises: In these movements, the whole body works with your own body’s weight as resistance. This will help you improve control, core stability and good posture. Begin with yoga, Pilates, squats and planks. • Practice balance: As your core gets stronger, you can branch out and work on balance challenges. Use a stability ball to engage your core or try balancing on one leg with total control. • Add resistance: As you progress, start adding in weights or resistance bands to your routine. This will improve your strength and stability. Start small with lightweight dumbbells or the easiest resistance band. • Choose exercises that will make your life easier: Conditioning your body for daily tasks reduces stress on your joints and muscles, such as your knees and lower back. Incorporating lunges into your workout will condition your body for vacuuming and squats will condition you to lift groceries or pick up the little ones in your life. Pick exercises that will help you achieve the goals you set. • Stick with it by finding the fun: Come to class with a friend, mark it on your calendar and make it part of your routine. hether you are a trained or recreational athlete, reaching the next level can be hindered by plateau frustration or injury. According to Brad Pfeifle, vice president of Sports Medicine & Rehab Services with Orthopedic Institute, many people struggle or fail, not because of where they are strong, but because of where they are weak. Enhancing performance to achieve faster and stronger results could be as simple as identifying a weakness with the assistance of a biomechanist. Paul Keizer, biomechanist and physical performance specialist for Orthopedic Institute, is sharing his expertise to launch a new program at Orthopedic Institute. “Orthopedic Institute takes pride in offering a complete program for the injured,” Paul says. “Now we are reaching out to the healthy population as well. Scientific assessment and correction can help boost performance and prevent injury. “When you consider biomechanics, a lunge viewed by an untrained biomechanical eye is very different than a lunge viewed by a trained biomechanical eye,” Brad illustrates. “You look at core stabilization and pelvic neutral position. Where’s the foot? Where’s the knee? If I do a lunge
improperly, I am strengthening those muscles that create dysfunction. Every rep, in every set, needs to be tweaked until the body is functioning at a high level.” Paul adds, “The goal is to get people moving with quality by identifying the dysfunction and weakness and putting together a complete picture.” Just as each athlete has unique training needs, women potentially have different biomechanical issues than men. “Biomechanical issues would be hip function, core stability, pelvic stability, hamstring strength,” Paul says. “Physiologically, the female may respond dif-
ferently to training intensities and volumes than a male would.” However, input from a professional biomechanist can minimize downtime and maximize performance for any gender.
“By maintaining focus, a better balance will be created so the individual can achieve optimal performance, safer performance and healthier performance,” Brad says. Is It Really Asthma? Symptoms Might be Acid Reflux
A
sthma is a serious condition. A combination of airway constriction and inflammation can be both frightening and potentially disastrous for asthma sufferers. Common symptoms include wheezing, coughing, chest tightness and shortness of breath. Surprisingly, however, these issues aren’t always caused by asthma. According to Denton Combs, nurse practitioner and founder of Denton Combs Center for Excellence in Care, “I frequently see patients who are seeking relief from asthma symptoms when their asthma medications don’t seem to be helping them, such as when their inhaler isn’t working like it should or if they are experiencing an uncontrollable cough. Many times we discover that they aren’t suffering from asthma at all but are experiencing problems caused by acid reflux.” Acid reflux is caused when acid from your stomach flows up through your esophagus. In some cases, that acid can flow from the esophagus into the windpipe causing individuals to suffer from asthmalike symptoms. Denton notes, “When you have acid spill into your windpipe it induces trauma and swelling, which in turn causes you to wheeze and cough.”
Because the conditions it can cause often Denton Combs mask the true problem, acid reflux is often difficult to diagnose. According to Denton, “Once I’ve had a chance to examine a patient’s throat the real culprit is often revealed by the damage acid has done, and then we can discuss the options that can help their condition. We’ve taken patients off of asthma medication if we’ve determined that it isn’t their problem.” Denton continues, “If we can pinpoint what the cause of acid reflux is; whether that’s stress, allergy, dietary management or a hiatal hernia, we can potentially eliminate the issue or manage it.” Treatment doesn’t offer a quick fix, however. He cautions, “It’s very important that you seek treatment quickly because the longer you wait to take care of it, the longer it will take to heal. If you live with this for six months, you can expect it to take at least six months to heal.”

ettling for status quo has never been an option for Sarah J. Pepper. In fact, always looking for more defines her. Growing up near Platte, South Dakota, she had two brothers who steered her toward Legos and Star Wars as opposed to Barbie dolls. Sarah shares, “I grew up 10 miles outside of town so my two brothers and I had to find intriguing ways to get to town or play with each other. You had to use your imagination to stay out of trouble, but we did plenty of that too!” A fairly new dynamo on the paranormal romance novel scene, Sarah has been writing in overdrive for 104

the past four years, completing 10 books. “I’ve been contracted with three publishing companies as well as releasing novels as an independent author since 2011,” she says. And although writing has become an intensely spiritual experience for her, what she receives back from her fans has filled a void in her life she never knew she had. “I pour pieces of my soul into each of my characters and there’s a bit of me in each one of them, so my books are really an extension of who I am,” Sarah says. “Finances aren’t driving me. I want to share my writing passion and I don’t care if I make it big. I just want people to read my books.”

Even before her successful writing career, fate dealt Sarah a lucky card. As a freshman in high school, Sarah let her friend “drag” her to a rival school’s basketball game in Geddes. It was there that she discovered her soulmate Dustin. She laughs, “I snagged him when I was just 15. I used to write Mrs. Dustin Pepper on my notebook!” Now 15 years later, Sarah and Dustin have been married for seven years. They have served in the Army National Guard together as combat engineers, earned their college degrees, and moved from Platte to Boise, Idaho, and back to Sioux Falls. “I didn’t want the same life as everyone around me so I talked Dustin into moving,” Sarah smiles. “He is absolutely my better half because he is everything that I am not, and I am the same (for him). … He’s a soft-spoken guy but when he talks, people listen. He really is my prince charming. Who else would ride a mountain bike down a ski slope in Breckenridge (Colorado) or skydive with me? I can always count on him.” A self-professed adrenaline junkie, pet lover, foodie and exercise fanatic, Sarah holds an Exercise Science degree and was a college pole vaulter. “I’m only 5’3,” so it was challenging. I looked like a gymnast compared to the other athletes!” she laughs. Today, Sarah works for a chiropractor writing exercise programs and marketing materials for the clinic. Her true passion and calling, however, has become her writing. Although she was blessed with a creative and imaginative mind, Sarah has never been confident about her abilities as an author. However, she has always loved reading and immersing herself into other worlds. She notes, “When I was growing up, I loved to read. My mom was a teacher and we would read anything we could get our grubby little hands on, but my grammar has never been good. If you can’t spell and if your sentence doesn’t make sense, that’s a problem. But my imagination gets the best of me and that’s what allows me to write.” Not expecting to launch a career as an author, Sarah penned her first story in secrecy. She laughs, “I really didn’t want to shovel the driveway for the second time that night. Also, all the authors I was following weren’t coming out with any books soon, so I cracked open my college laptop and started writing!”

I create a bucket list that has 20 things on it every year and I trychecking at least half of the things off. After completing her “monstrosity of a novel” in just four months—it was nearly 90,000 words more than the average—she was ready to share her work. “I queried over 300 publishers and agents but offers didn’t come via snail mail or in my spam folder.” Disenchanted, Sarah was nearly ready to give up. “Dustin and I went on vacation to New Orleans and while we were there we came upon a palm reader. The entire time he said, ‘Ask her, ask her,’ so I did. When I asked if my book would get published, she told me it would be within eight months. Then I laughed it off and went home.” But the experience gave her the nudge to revamp her query letter and send it out one more time. Incredibly, fate intervened again and eight months later, her book was published.
Exhilarated by her first success, Sarah plunged into the world of writing and committed to multiple books represented by established publishing houses. Ready for more, she decided to try to self-publish her work. Wanting her first solo attempt to be perfect, she was devastated when one of her fans noticed “a typo or two.” Heartsick, Sarah took a leap of faith and agreed to send her fan the original manuscript to re-edit.

She remembers, “It was difficult to swallow that a book I’d already put out was in dire need of a re-edit, but I accepted her offer. Over the course of a few months we became quite close and she revealed to me that she had no passion in life until we met,” Sarah shares. “She had been considering committing suicide until I asked her to be my editor! It turned out my monstrosity of a novel saved a girl’s life, my friend’s life. That’s what really started to fuel my desire to give back. I may not sell millions. I may not be the next J.K. Rowling, but if my words can bring hope to the hopeless, then I’ll never stop scribbling down my thoughts.” To that end, Sarah chooses at least one charity to support every year with proceeds from her writing. This year, she is working in collaboration with the Stewart School in Sioux Falls to raise money for individuals fighting cancer. “Every year I like to donate to a cause or some kind of effort to help other individuals and this year I wanted to do something for breast cancer. My grandmother passed away from it recently and in addition, my college roommate was diagnosed with breast cancer this spring. When you lose your hair and your breasts you can also feel like you’re loosing your femininity. Since my newest novel ‘Locks Remixed’ is about my take on Rapunzel, I thought it would work great to use (it) for this charity event.” She notes, “Last Christmas I gave away over 2,000 online copies of ‘Fallen Tears,’ which was a romance about a fallen angel. For me growing up, holidays were a bit stressful because my parents didn’t have a lot of money. This is my way to give a lift to people and I enjoy doing it.” Also close to her heart is the opportunity to empower others through sharing her knowledge and passion for her work. Having discovered the key to success on her own, Sarah has committed herself to sharing that wisdom with others through teaching writing classes at the University Center as well as mentoring high school writers. “My family, friends and readers push me to keep going. They’ve honestly molded me into the writer I am. I can give no one person credit for that. With that being said, I would love to have that type of influence in another writer’s life.” Sarah adds, “When I was 7, my mom asked me what I wanted to be and I said I wanted to change the world. She wanted to know if I wanted to be a doctor or a scientist but I knew that wasn’t for me. What I’ve discovered is that you can change the world simply by inspiring others.” sfw

T
he fact that she is a female groundbreaker in an industry dominated by men is not lost on Darla Erb, CEO of Voyage Federal Credit Union, but it isn’t her focus either. “There are unique hurdles being a female in the financial industry, but I tend to build from them to become a stronger person,” she explains, further pointing out, “We can accomplish so much more working together than allowing our differences to create opposition.” Perhaps that teamwork seed was planted while Darla grew up as one of five children in a farming community. Her work ethic is woven into her everyday life, braided alongside faith, family and friends. Dedicating herself as a lifelong student and volunteering at nearly every opportunity further steers Darla’s focus and personal mission of helping others in need.

Having started her career in the financial industry, Darla jumped at the chance to work at a credit union when the opportunity arose 32 years ago because she was excited to be a part of the social mission that is a large component of the credit union framework. She worked her way through the organization, learning—and earning—positions from receptionist, to sales training, to branch management, before being presented the opportunity to take the helm at Voyage Federal Credit Union in 1998. Darla’s leadership style lives and breathes teamwork. “I’m fortunate to be surrounded by very smart people who are good at what they specialize in,” she says, explaining her appreciation of employee input in order to come to decisions that will most benefit the credit union’s members. Staff engagement is essential in her team-building efforts to create a well-rounded and fun work environment. Giving back to the community plays a large role in her team building and in the organization as a whole. As Voyage celebrates its 75th anniversary this year, the credit union will host 75 days of various charitable efforts throughout the year, benefiting a wide array of local organizations. “It’s exciting to be here now, 75 years later, and see all that we’ve accomplished,” Darla says. While her strong work ethic is evident in all that she has achieved, her kind and caring personality has also clearly contributed to her success in an industry otherwise driven by numbers. Quoting Luke 12:48, “to whom much is given, much will be required,” Darla explains, “I try to live by that verse. It’s a good foundation to have—both as a human being and in the workplace.”

Living a Motivated Life Anyeth Aluong By Jody Gust

“A
s a woman, I feel like I am finding myself more as I age than when I was younger,” shares Anyeth Aluong. The soft-spoken woman, with aspirations that straddle the United States and South Sudan, explains the roots of her strength: “A lot of my inspiration comes from my mom and my younger siblings. All my siblings have grown up to be such genuine, intelligent people.” She adds, “My mom really does look up to me, being that I’m her only daughter. In a way it motivates me for the better because she is always watching.” Through her motivation and perseverance, Anyeth received her associate’s degree as a pharmacy technician. She also was named Miss Sudan Sioux Falls in 2010 and has earned modeling opportunities for charity events such as Books for Africa. “You become somewhat of a public figure,” she says, referring to her responsibilities as Miss Sudan. “I did some outings to community gatherings and interviews with local news stations.” Though Anyeth has lived the majority of her life in South Dakota, South Sudan is her homeland. Her heritage is weaved within her character and respectfully plays a role in her life decisions. “I feel like a lot of my memories of Africa are fading,” she says. “It’s been almost 18 years since I’ve last seen Africa. The trip back is well overdue. If I went back, it would be a journey filled with lots of excitement. I would have to re-adapt. With all it took to migrate to the U.S., the best I can do is live up to be a good person. If I can go back and make a difference— whether it’s little or big—I think that would make my mother proud.” Anyeth says the challenges she has faced and the absence of extended family, especially her grandmother, fuel her desire to help others. “So many amazing ideas yet so little time, it feels,” she says with a smile. “I hope to go to nursing school soon. If not, I would love to get more involved with the community and see if there is anyplace I can lend a hand. I may start a youth women’s group to help empower and educate young women.” Anyeth explains that while she is grateful to have her mother, transitioning into adulthood and making choices for the future would be easier with the wisdom of a circle of women. “It’s always nice to have someone to share stories and ideas with,” she says. “It may be the basics—a career, work or family. We’re all working toward goals to help us grow successfully.”

Re:Balance’s holistic view also goes hand-in-hand with its biofeedback training service. This technique in self-regulation skills is beneficial for everyone, especially individuals under a lot of pressure such as athletes, students and people in highstress careers. Biofeedback information is gathered through a training program and delivered through the use of sensors that detect heart rate variability, breathing rate and rhythm, body temperature, sweat conduction and muscle tension. From that information, a client can learn what their body is trying to tell them and how to regulate responses to mental and physical stress. The center also features the Photon Genius, a light-energy infrared sauna. It delivers different bands of light to the body at a specific cadence for healing. The infrared sauna promotes balance and detoxification at the cellular level, but that’s just one of its multiple benefits, Nicole says. Other services at Re:Balance include colon hydrotherapy, massage, ionic detox footbaths, Tera Mai Reiki, health coaching and health-care advocacy. ometimes we don’t need advice, we just need somebody to listen.” This seemingly simple quote by Nishan Panwar is a powerful truth that led Deb Beukelman to start her professional listening company for women, You Talk. I Listen. After 30 years working in accounting, including 17 years owning and operating a business with her husband, Deb decided to make a career change. She believed her business concept for a professional listening service would meet a need in Sioux Falls that she could uniquely fill, and the support she received from women in the community convinced her to take the leap. Deb provides an empathetic, listening ear at You Talk. I Listen. She is not a licensed therapist and does not diagnose, judge, or give unsolicited advice. “Many people have friends and family that they may talk to, but are worried of being a burden to those they love.
