Rosemary tribute

Good mental health allows us to live life in a positive and meaningful way. It helps us to work or study to our full potential, cope with day-to-day life stresses and be involved in the community.

If a young person shows signs of developing a mental health concern it’s important they’re supported by their family, friends and health professionals early on.

When a young person experiences good mental health, it helps them be resilient, flexible, adaptable and socially connected.

Feeling down, tense, angry, anxious or moody are all normal emotions, but when these feelings persist for at least a few weeks, or begin to interfere with daily life, they may be part of a mental health concern.

There is no one cause for mental health concerns. Research shows there’s a number of overlapping factors that may increase the risk of a young person developing a mental health concern, such as: biological factors – family history of mental health concerns; adverse early life experiences –abuse, neglect, death or significant loss or trauma; individual psychological factors – self-esteem, perfectionism, coping skills or thinking style; current circumstances – stress from work or

school, money issues, difficult personal relationships, challenges within the family; serious illness or physical injury; alcohol and other drugs – use and experimentation.

The experts at Headspace recommend several general tips that can help promote good mental health, including connecting with people, staying active, eating well, cutting back on alcohol and other drugs, being involved in family, community or peer activities, getting enough sleep and learning new coping skills.

Caring for a loved one who is experiencing a hard time can impact on your own health and well-being. Looking after yourself is important as it can leave you better placed to provide support to your young person. Get some support by talking to someone you trust and seek professional help if you need it.

What was your relationship with food?

Before surgery I had a terrible relationship with food. I used to binge eat junk food after the kids went to bed and used food to cope with life. It was a terrible cycle, I was eating to feel better but getting more and more depressed the bigger I got.

What motivated you to go on your weight-loss journey?

My family were a big motivation. But mostly it was how I felt physically and mentally. I was struggling to get around. I had aches and pains and physical issues, I was struggling with depression, and I ended up with Gestational Diabetes with my third pregnancy, when I was at my heaviest, and struggled immensely with my pregnancy, labour and recovery. I was falling deeper into a hole I felt unable to get out of.

How long had you battled with weight issues?

My whole life. I have Polycystic ovary syndrome (PCOS), so weight has always been an issue for me. I lost weight after my first child and did really well. I dropped 25kgs in six months on my own. But I regained half of it when I was pregnant with my son and then regained all of the weight and more after he was born!

What health problems did you face as a result?

I started with PCOS. This was a lifelong issue I didn’t know I had till I started trying to have babies. It took five painful years to conceive our first baby. I was also struggling with a bulging disc in my lower back and suffered with sciatica for more than 10 years.

In more recent years I ended up with Gestational Diabetes in my third pregnancy and was pre-diabetic by the time I had surgery. For the six months before surgery, I also developed Plantar Fasciitis and Achilles Tendonitis and struggled to walk without pain.

What made you decide on weight-loss surgery and which procedure was the right one for you?

I knew a few people who had weight-loss surgery. I never thought it would be something I would be able to afford. I was initially booked in a year earlier with another doctor and cancelled prior to surgery for financial reasons. This was a huge blow.

A year later, I was desperate and struggling so much and a friend recommended a weight-loss surgeon. He’d had surgery with this surgeon and had experienced incredible success. When I was previously booked in, I was going to have the Gastric Sleeve. The surgeon gave me very little information about it, and I assumed it was the best procedure for me. When I met with my Doctor he suggested the SADI Procedure. He gave me information about all of the procedures and explained why he felt that the SADI was going to be the best procedure for me.

I had my surgery on 23 August 2021. I was terrified. It was the first surgery I’d ever had and I was very emotional. The anaesthetist was amazing explaining the process and calming my nerves.

Seeing the Doctor prior to surgery and knowing that I was in the best hands also helped to ease my anxiety. When I came out of surgery, I expected to feel a lot of pain. I didn’t. Granted I had some great pain meds, I’m sure. Within a few hours of surgery, I was up and slowly moving around. I was surprised that I felt so good and told the nurses that. They smiled and told me that everyone who has surgery with this team say the same thing.

I spent one night in hospital and was home by the next morning. My recovery, once I was home, far exceeded what my expectations. I took Panadol once or twice and that was it. I had the support of my husband and my mother-in-law and followed the recommended diet and the recommendations for getting moving to help with recovery.

I was fully committed to the process and the weight started to drop very quickly. My whole experience has been so amazing.

With the support of my Dietitian, I’ve been able to continue to adjust my diet to ensure I had to best outcome. I really did have the best team I could have asked for.

Post-surgery, what have been some of the challenges?

I would say the biggest adjustment is getting used to smaller portion sizes and learning what your body can and can’t tolerate. I’m aware that some people experience dumping syndrome, reflux and other complications post-surgery. I’ve had very little of this.

I’ve had no reflux and only experience dumping very occasionally if I eat something my body can no longer tolerate, and I just learn to avoid that in the future. I don’t feel that I’ve had any challenges really.

Only adjustments. I’ve had to learn to listen to my body and trust that I don’t need a bigger portion. I’ve learned to nourish my body with food and not use food as a coping mechanism. The mental adjustment is really the biggest thing that people need to prepare for. I really prepared myself mentally before surgery. I invested a lot of money and effort into this procedure and I was determined not to waste this opportunity to change my life.

If I was to choose the hardest thing, however, I would say it’s getting used to my new body - including my loose skin. I don’t have as much loose skin as many others, but it’s definitely hard to get used to that part of it. I would absolutely rather have loose skin than be in my old body, however, and hopefully I can afford to have it removed one day.

Any regrets?

Not one! I sometimes say that my only regret was not doing it sooner. But my story is what it was meant to be. If I’d had the surgery sooner, I wouldn’t have had the same team, and I wouldn’t have had the SADI Procedure. I don’t believe I would have had the same success with another procedure or team. I’m so grateful for every part of my journey and wouldn’t change a thing!

SADI Procedure

The SADI procedure (Sleeve Gastrectomy plus Duodeno- Ileostomy) involves a sleeve gastrectomy with bypass of part of the small intestine. The weight-loss and resolution of medical disorders is much more than a sleeve gastrectomy alone. This procedure is preferred over Gastric Bypass as it avoids many of the long-term problems some patients with gastric bypass experience. Dr Free has pioneered this procedure in Australia and modified it to improve it’s long term safety whilst maintaining improved weight-loss. Roberts has a Broadway play, “Three Days of Rain” under her belt, and in 2018, she made the leap to TV by starring on the first season of the Amazon series “Homecoming”.

Roberts and Clooney reunited for their fifth film together in “Ticket to Paradise” – a film that was created specifically for them, according to writer and director Ol Parker, whose previous credits include “Mamma Mia! Here We Go Again”.

“It was only them,” he said at the film’s media preview in the US, referring to the film’s leading characters.

“I wrote to both of them. It was just very clear to me that it barely existed if it wasn’t them. I had no plan B,” he said. “We wouldn’t be sitting here today and we wouldn’t have made a film, if it wasn’t them. I’d still be writing letters, saying, ‘You don’t understand – this needs to be you’. I begged them to do it and they took mercy on me.”

The film follows the reunion of divorced couple David (Clooney) and Georgia (Roberts) who team up and travel to Bali to try to sabotage their daughter’s wedding – hoping they’ll stop her from making the same mistake they believe they made 25 years ago.

“I usually have breakfast and dinner with my kids every day. I think it really punctuates, you know, starting things together and sort of processing and winding it down together.”

For Roberts, the chance to act alongside Clooney was an offer too good to refuse. She told RadioTimes.com that “the chance to be snarky to George”, along with an effervescent storyline and tropical locations during Covid lockdown appealed to her.

“Ticket To Paradise” was filmed on location in Queensland and locals will instantly recognise the dazzling Whitsunday panoramas, Gold Coast hinterland vistas, the dolphins of Tangalooma and assorted beach backdrops. Carrara Markets were repurposed as the streets of Bali and Lily’s graduation was filmed in Brisbane City Hall!

The vehicle for Roberts’ return to rom-com was due in part to Ol Parker’s response to Covid.

“The world had completely changed,” he explained. “I thought about what I wanted to write and work on next, and I landed on writing something that would make people happy – something joyous and optimistic.

“Romantic comedies bring a large audience together to collectively laugh with each other, and after a few tough years, that seemed like a beautiful thing to bring to the big screen.”

Great friends on and off screen, Roberts and Clooney have a chemistry that clicked for their foray into comedy.

“George and I are both really motivated by making people laugh and it was our great joy whenever we would do something where we could hear all laughing across the set at the monitor and we thought ‘Okay, yeah, that’s great,” said Roberts, who admits living close to Clooney and his family during filming kept her sane, grounded and went some way to lessening her longing for her own family.

In an interview with The New York Times, the two actors opened up about playing exes and quarantining together while filming in Australia.

“The Clooneys saved me from complete loneliness and despair,” said Roberts, who was “Aunt Juju” to the Clooneys’ kids during that time. “We were in a bubble, and it’s the longest I’ve ever been away from my family. I don’t think I’ve spent that much time by myself since I was 25.”

Back in the US her family, husband of 20 years Danny Moder and their three children, twins Hazel and Phinnaeus, 17, and Henry, 15, kept in touch through Zoom like millions of others separated by travel restrictions.

Once filming wrapped and international travel was again possible, Roberts was relieved to return to family life, which she says is key to “keeping it real, and winding down”, especially around filming and work commitments.

In an interview with InStyle Roberts revealed that family time over dinner reinforced the bonds with her kids. “It’s really meaningful, and that is the time that we have had some incredible conversations. I usually have breakfast and dinner with my kids every day. I think it really punctuates, you know, starting things together and sort of processing and winding it down together.”

Low key and low profile, cinematographer Danny is credited with keeping Roberts “grounded and grateful”.

“He makes me feel my most comfortable self,” she told Oprah Winfrey in 2003. “I don’t alter myself in any way.”

After two decades of marriage, she said, “I’m more interested in what he has to say or his point of view than anybody. Really, we’re so lucky in that way. We just really, really like each other and we just enjoy each other’s company.”

SLEVE GASTRECTOMY PLUS DUODENO - ILEOSTOMY PROCEDURE, KNOWN AS SADI PROCEDURE HAS THE GREATEST WEIGHT-LOSS OF ALL THE COMMONLY PERFORMED WEIGHT-LOSS PROCEDURES. IT HAS THE LONGEST LASTING EFFECTS, WITH LESS LATE WEIGHT REGAIN WHICH IS BECOMING NOTICEABLE IN PATIENTS WHO HAVE HAD SLEEVE GASTRECTOMY IN THE PAST.

The SADI procedure is an operation incorporating a sleeve gastrectomy with bypassing part of the intestine. It has the greatest effect on improving medical disorders associated with obesity such as diabetes, hypertension and high lipids and cholesterol.

As such it is generally reserved for patients with a very high BMI (BMI>45) and those with significant medical complications due to obesity.

As with all weight-loss procedures it is a laparoscopic (keyhole) procedure performed under a general anaesthetic.

The operation involves two parts: Firstly part of the stomach is removed making a smaller stomach similar to a sleeve gastrectomy. Then the first part of the intestine (duodenum) is divided just below the stomach and anastomosed (reattached) to a loop of intestine about 2 metres further downstream. This has the effect of decreasing appetite, restricting meal sizes, and bypassing food away from the metabolically active part of the intestine resulting in beneficial hormonal changes which have a positive influence on the body’s metabolism.

The important thing to know about this procedure is that the bowel is divided below the pylorus. The pyloric valve and its function are preserved, unlike in the gastric bypass or mini-gastric bypass.

The pyloric valve has an important role in regulating the rate at which food & acid enters the intestine from the stomach. It also prevents bile from refluxing from the duodenum back up into the stomach which can cause stomach irritation.

The preservation of the pylorus in the SADI procedure maintains it’s important function. The problem of bile entering the stomach which can occur with the mini-gastric bypass is therefore prevented in the duodenal bypass.

The preservation of the pyloric valve in the SADI procedure also eliminates the dumping syndrome which can occur with standard gastric bypass procedures. The glucose fluctuations after a meal do not occur after this procedure. There is also a dramatic reduction in the formation of ulcers forming at the anastomosis site which can happen in standard gastric bypass.

SADI procedure

The procedure is becoming increasingly useful for patients who have had a prior sleeve gastrectomy and either have not had as much weight-loss as expected, or have lost-weight and regained weight later on.

In the past these patients have often had their sleeve gastrectomy converted to a standard gastric bypass, however evidence shows that this also may not provide robust long term weight loss. The SADI procedure is showing extremely promising results after previously failed sleeve gastrectomy.

The SADI procedure has been developed to such an extent that it provides the most weight-loss, the longest lasting weight-loss, and the most beneficial effect on medical problems associated with obesity, compared to all other procedures. It has been refined to the point at which the long-term problematic issues have been minimalised making it an extremely safe and effective operation.

Infertility affects one in six couples in Australia and is defined as the inability to conceive following six (woman >35 years old) or 12 months (woman is <35 years) of attempting to do so.

ACCORDING TO STATS FROM THE ALCOHOL AND DRUG FOUNDATION (ADF), VAPING IS ON THE RISE, PARTICULARLY WITH YOUNG PEOPLE, AGED 12 TO 17. BUT WHAT ARE THE HEALTH RISKS?

Quitting smoking is one of the best things you can do for your health. Smoking harms nearly every organ in your body, including your heart. Smoking damages the coronary arteries that supply blood to your heart. This can cause the artery to narrow. It can also increase your risk of a blood clot or blockage, which can lead to a heart attack.

You might be tempted to turn to e-cigarettes and vape pens as a way to ease the transition from traditional cigarettes to not smoking at all. But is vaping better for you than using tobacco products?

The short and long-term health effects and safety of e-cigarettes are still unknown.

E-cigarettes heat nicotine (extracted from tobacco), flavourings and other chemicals to create an aerosol that you inhale. Regular tobacco cigarettes contain 7,000 chemicals, many of which are toxic. While the exact chemicals in e-cigarettes vary from brand to brand, experts believe there’s almost no doubt that vaping exposes you to fewer toxic chemicals than smoking traditional cigarettes.

BUT, researchers at the National Centre for Epidemiology and Population Health at the Australian National University have delved into the available studies

on vaping and concluded e-cigarettes are harmful for non-smokers, especially youth, and when used for purposes other than smoking cessation.

There is strong evidence that nonsmokers who use e-cigarettes are three times as likely to go on to smoke combustible tobacco cigarettes as nonsmokers who do not use e-cigarettes, supportive of a “gateway” effect.

The researchers also state much is yet to be learned about the longer-term impacts of vaping.

Research from The Johns Hopkins University on vape ingredients published in October 2021 reveals thousands of chemical ingredients in vape products, most of which are not yet identified. Among those the team could identify were several potentially harmful substances, including caffeine, three chemicals never previously found in e-cigarettes, a pesticide and two flavourings linked with possible toxic effects and respiratory irritation.

Nicotine is the primary agent in regular cigarettes and e-cigarettes, and it is highly addictive. It causes you to crave a smoke and suffer withdrawal symptoms if you ignore the craving. Nicotine is a toxic substance. It raises your blood pressure and spikes your adrenaline,

which increases your heart rate and the likelihood of having a heart attack.

Several key Australian health organisations, such as the Australian Medical Association (AMA), Cancer Council Australia and the Australian Council on Smoking and Health (ACOSH) have published positions on e-cigarettes, sharing the following messages: There is insufficient evidence to promote the use of e-cigarettes for smoking cessation. There is increasing evidence of health harms. E-cigarettes may normalise the act of smoking and attract young people. E-cigarettes should be more properly regulated.

From 1 October 2021, all nicotine vaping products – including nicotine e-cigarettes, nicotine pods and liquid nicotine – can only be purchased with a doctor’s prescription. This includes both in Australia and from overseas.

So, is vaping bad for you? Emerging data suggests links to chronic lung disease and asthma, as well as associations between dual use of e-cigarettes and smoking with cardiovascular disease. You’re exposing yourself to all kinds of chemicals that we don’t yet understand and that are probably not safe.

It is estimated that two in three Caucasian Australians will develop skin cancer at some point in their lives. Skin cancers account for 80 percent of newly diagnosed cancers and melanoma is the third most common cancer in Australians, according to Cancer Council statistics.

Regular screening with skin checks by a trained doctor in Dermoscopy are important to find skin cancer early and treat.

Australia has a high level of UV radiation from the sun and combining this with a large population of lighter skin types, means we lead the world in skin cancer numbers.

Screening for both melanoma and non-melanoma skin cancers is very important to reduce local skin complications and metastatic spread. Other risk factors for development of skin cancers include; family or personal history of melanoma and non-melanoma skin cancers, previous severe sunburns with

blistering or peeling, solarium use and immunosuppression.

Sunlight is also a cause of premature skin ageing. UVA/UVB radiation causes pigmentation changes, premature wrinkling and visible small blood vessels in the skin (telangiectasia). Some of the cosmetic aspects of photoageing can be addressed in a skin check consultation.

A skin check involves taking a thorough skin history including, sun and occupational exposure, family history and lesions of concern. Patients are asked to strip down to underwear (a modesty sheet is provided), Then, using a Dermatoscope (skin surface microscopy) the entirety of the skin surface (including the scalp, mouth, between the toes and under the feet) is examined looking for clues to skin cancer.

If you develop a new, changed or bleeding mole, a sore that won’t heal, a rapidly growing pink nodule, or a crusty skin lesion these need to be reviewed as soon as possible.

If there’s a man in your life that you’re worried about, there are some simple things that help to make talking it over easier for him. Here are a few tips from Mensline for more effective conversations with someone you care about.

Talk while ‘on task’

Many men find it easier to bond and talk when engaged in another activity. There are many theories about why this is the case, but an easy way to understand it is that an activity allows for an ‘escape route’ if things get too intense or challenging. He may not need to use the escape route, but knowing it’s there takes the pressure off the conversation. Knowing this, you can change the conversation setting to include something that you both enjoy – go for a drive, a hike, go fishing, play or watch some sport or even work on a mini project. You can then discuss your concerns in a far more casual and relaxed way that is less likely to encounter resistance.

Sit or stand side by side

One of the reasons that activities or tasks can be more effective is they encourage a ‘shoulder to shoulder’ stance that tends to be less confrontational. Think about some of the situations that seem to work best for a good chat – sitting around a

campfire, watching sport or going on a road trip – they all tend to minimise direct eye contact. This is also known as ‘sideways listening’, which has been shown to work well with men, teenagers and children.

Don’t make it a big deal

This applies equally to conversations with men about physical health issues – keep it casual and low intensity. Putting too much emphasis on ‘the talk’ by putting it in a formal setting or over-emphasising its importance builds pressure and it may mean that the man you care about becomes more withdrawn, uncooperative or avoidant. If needed, be flexible and consider having a few short talks, rather than one big conversation, to get the conversation moving. Keep an eye out for signs of discomfort and alter your approach – sometimes a gentler approach is better.

Language is important

Mental health is often discussed in victim-oriented language like ‘suffering from depression’ or ‘feeling sad and lonely’. Attempting to turn this around with different phrasing can produce better results. Talking about ‘taking control’ or ‘getting things back on track’ re-casts emotional health issues in a more action-oriented light that empowers and encourages people and is less likely to create a feeling of weakness or shame.

Engage ‘the fixer’ mindset

Setting a clear goal or purpose for conversations with men about emotional issues tends to work best. In general, men don’t respond well to long, drawn out conversations about how they are feeling – they prefer to get to the point and take tangible actions. Framing conversations as ‘fixing’ or ‘tackling’ a problem helps to leverage the ‘fixer’ mindset that many men feel more comfortable with.  It evokes feelings of control and camaraderie that are familiar and empowering.

The offer is most important

Don’t let the above advice deter or worry you out of reaching out to someone you care about. These tips are just some ideas for how you can make conversations more effective. But having a chat about how someone is feeling, even if it’s a bit awkward, is better than not having the chat at all. The single most important thing you can do is to offer a friendly ear, show that you are listening and keep it clear of judgement – that alone can make an enormous difference to how someone is feeling. Roast potatoes with garlic and rosemary. Horta (boiled leafy greens). Serve thickly sliced in a crusty hot ciabatta-style role with simple soused cabbage. An even mix of finely chopped Granny Smith apple and finely diced mustard fruits. Mustard or Salsa verde.

INGREDIENTS

SERVES 8

• 3kg pork loin, belly attached, or 2.8–3.2kg butterflied boneless pork shoulder

• 40g salt flakes

• 2½ tablespoons fennel seeds

• 1 tablespoon black peppercorns

• 6 garlic cloves, peeled

• 1 branch of fresh bay leaves (or a good handful if not on the stem), 3 leaves shredded

• 5 rosemary sprigs, leaves chopped

• 5 oregano sprigs, leaves chopped

• ½ bunch of flat-leaf (Italian) parsley, leaves finely chopped

• 3 onions, cut into 3 fat slices each

• salt flakes and freshly ground black pepper

METHOD

Place the pork in a colander and pour a whole kettle of boiling water over the skin. Dry with paper towel, then score the skin at 1cm intervals. Place on a tray and rub all over with the salt, getting into all the incisions. Flip the pork over so the skin is facing up, then refrigerate, uncovered, overnight to dry out the skin and lightly cure the meat.

When ready to cook, preheat the oven to 130°C fan-forced.

Toast the fennel seeds in a dry frying pan over a medium heat until fragrant, 1 minute. Tip into a mortar, add the peppercorns and a pinch of salt and grind to a rough powder. Add the garlic and crush to a paste. Add the shredded bay leaves, rosemary, oregano and parsley, and grind as finely as you can.

Spread the herb paste on the meat side only of the pork, massaging it into all the pockets. Roll up the pork as tightly as you can, securing tightly at regular intervals with butcher’s twine. Place in a roasting tin, using the onion slices and bay leaf branch as a trivet.

Transfer to the oven and roast for 3½ hours, or until the internal temperature is 71°C.

Remove the pork from the oven and turn the temperature up to 250°C fan-forced. Baste the whole roll of pork with the juices in the tray, then and roast for a further 10 minutes or so to finish the crackling. Watch carefully, as it can burn quickly.

Remove from the oven and rest for 20 minutes, then remove the string, slice the pork about 2cm thick and serve with the pan juices and the onion, if desired.

SEA URCHIN LINGUINI WITH ROASTED TOMATO PASSATA & BUTTER

3 tablespoons extra-virgin olive oil

4 garlic cloves, sliced

200ml Roasted tomato passata

2 red bird’s eye chillies, finely sliced

14 sea urchin lobes

140g butter, diced

400g Squid ink linguine

8 basil leaves

Lemon, Salt & Pepper

Sea urchin has a gently buttery and briny quality, which is stunning with the roasted tomato flavour, spike of chilli and savoury richness of the squid ink pasta. It’s also a strikingly dramatic dish visually. As said, this is special occasion stuff.

METHOD

Heat the oil in a frying pan over a medium heat. Fry the garlic until turning golden, about 2 minutes.

Add the passata and chilli and cook for a couple of minutes, then pull off the heat and add the sea urchin and butter. Stand, don’t stir. Season with salt and pepper.

Meanwhile, cook the pasta in boiling salted water for 3–3½ minutes, then tong directly into the pan, placing it back over a medium heat. Toss through for a minute, adding the basil – you just want to warm but not really cook the urchin.

Squeeze in some lemon and serve immediately.

WITH FIRE ICE

INGREDIENTS

METHOD

For the fire ice, cut 1.5kg very ripe tomatoes into 2cm dice. In a large heatproof bowl, toss the tomato with 5 finely sliced red bird’s eye chillies, 3 teaspoons salt flakes and 2 teaspoons caster (superfine) sugar. Tightly seal the bowl with foil, then set over a pan of just-simmering water for 2 hours, ensuring the bowl doesn’t touch the water. Strain the tomato mixture through a very fine-mesh sieve into a bowl; you should have 350–450ml of tomato water. Soak 3 leaves gold-strength gelatine in cold water for about 5 minutes. Warm about 100ml of the tomato water in a small saucepan. Squeeze the excess water out of the gelatine, then stir into the warmed tomato water to dissolve. Combine with the remaining tomato water, strain into a shallow container and freeze for 3–4 hours, until solid. Just before serving, scrape the fire ice with a fork to make ice shards, then scatter over the oysters. Great served with a pile of rye bread, butter and watercress sandwiches, alongside a little pile of freshly cooked potato chips.

Broccoli and mint soup with spicyfried chickpeas

INGREDIENTS

SERVES 4

• extra-virgin olive oil

• 1 eschalot or small brown onion, finely diced

• 4 garlic cloves, finely chopped

• 1 large head of broccoli (about 450g), cut into florets, stalk peeled and sliced

• 500g cooked chickpeas (about 2 × 400g cans, drained)

METHOD

• 1.25 litres vegetable stock

• 2 cups baby spinach leaves

• ½ cup mint leaves, plus extra to serve

• sea salt and black pepper

• 2 tablespoons capers, rinsed and drained

• ¼ cup flaked almonds

• 1 long red chilli, nely sliced

• ½ cup parsley leaves

• 1 lemon, halved

Heat a large saucepan over medium heat. Add 1 tablespoon of olive oil, the eschalot or onion and half the garlic. Sauté for 2–3 minutes, until softened. Add the broccoli, half the chickpeas and the vegetable stock. Increase the heat to medium–high and cover with a lid, leaving it slightly ajar to let steam escape. Cook for 8–10 minutes, until the broccoli is softened. Turn off the heat, add the spinach leaves and mint leaves and stir until the spinach is wilted. Using a stick blender (or regular blender/food processor), blend the mixture until smooth. Add 1 teaspoon of sea salt and some freshly ground black pepper.

Meanwhile, heat a frying pan over medium–high heat. When hot, add 3 tablespoons of olive oil along with the remaining chickpeas. Reduce the heat to medium or medium–low and fry, shaking the pan every now and then, until the chickpeas are crisp. The chickpeas may burst and splatter out of the pan and if they do, reduce the heat to low, increasing the heat again once the bursting stops. Continue to cook for 10–12 minutes, until the chickpeas are crispy all over. Add the remaining garlic, the capers, almonds and chilli, increase the heat to medium–high and cook until the almonds are golden, about 4–5 minutes. Add the parsley and cook for another 1–2 minutes, until everything looks toasted and crispy. Season with ½–1 teaspoon of sea salt.

Ladle the soup into bowls and top with the spicy fried chickpea mixture, some mint leaves and a squeeze of lemon juice.

Serving suggestion: Finish with shaved parmesan.

Cheesy kale and rice cake bake

INGREDIENTS

SERVES 4

• 2 tablespoons extra-virgin olive oil

• 4 garlic cloves, finely chopped

• 1 tablespoon gochugaru

• 2 tomatoes (about 300g), roughly chopped

• 1 teaspoon sea salt

• 1 teaspoon white sugar

• 1 litre (4 cups) vegetable stock

• 900g rice cake sticks, rinsed in water to separate

• 180g kale leaves (from 1 bunch), torn

• 170g (1 ½ cups) grated cheddar

• 200g fresh mozzarella, torn

• 2 green onions (shallots), finely chopped

METHOD

Heat a deep 25cm ovenproof frying pan or shallow Dutch oven over medium heat. Add the olive oil and garlic and cook for 15–20 seconds, until fragrant. Add the gochugaru, tomato, sea salt, sugar and vegetable stock and stir to combine. Cover with a lid and allow it to bubble away for 10 minutes.

Preheat the oven to 200°C.

After 10 minutes, remove the lid and stir the sauce, squishing the tomato with the back of a spoon or spatula. Add the rice cake sticks, along with the kale, and stir until the leaves wilt. Add half the cheddar, half the mozzarella and the green onion, and stir to combine. Top with the remaining cheddar and mozzarella and transfer to the oven, placing a tray underneath to catch any drips. Bake for 15–20 minutes, until melty and golden.

Allow to sit for 5–10 minutes before serving.

Fennel and black pepper ice cream

INGREDIENTS

SERVES 4-6

• 1 small fennel bulb (about 200g) finely sliced, fronds reserved to serve

• 1 teaspoon fennel seeds

• ½ teaspoon freshly ground black pepper, plus extra to serve

395g sweetened condensed milk (regular or vegan)

• 250ml (1 cup) thickened cream or vegan coconut cream

• 1 tablespoon extra-virgin olive oil, plus extra for drizzling

METHOD

Place all the ingredients in a high-speed blender or food processor and whiz until smooth. Pour the creamy mixture into a small loaf tin or dish that measures approximately 22cm × 12 cm, cover with plastic or reusable wrap and freeze for at least 3–4 hours, until firm.

To serve, let the ice cream stand at room temperature for 5 minutes (to make scooping easier) and top with a drizzle of olive oil, a few fennel fronds and a few turns of freshly ground black pepper.

Roasted prosciutto-wrapped troutwith sage burnt butter & pine nuts

INGREDIENTS

SERVES 2

• 8 thin slices prosciutto or jamón

• 2 x 250g whole, fresh rainbow trout, scaled and gutted

• 60g butter

• 2 tablespoons pine nuts

• 20 sage leaves

• 2 teaspoons lemon juice, strained

METHOD

Preheat the oven to 200ºC.

Lay four slices of prosciutto next to each other on a clean work surface so that the long edges are slightly overlapping. Lay the trout across the prosciutto to cover the length of the fish, except the head and tail, and wrap the prosciutto around to enclose. Repeat with the remaining prosciutto and trout.

Melt 20g of the butter and brush onto the trout. Place the trout in a shallow roasting tin and roast in the oven for about 8–10 minutes, or until cooked through. Place on a serving plate.

Heat the remaining butter in a frying pan over a medium–high heat, add the pine nuts and toss to brown slightly. When the butter turns a nut brown colour, add the sage leaves and remove from the heat. Keep tossing and add the lemon juice. It will fizz and froth, so just keep shaking the pan to stop it burning.

Pour this butter mixture over the trout and devour immediately. I’d probably drink a semillon with it. As the wine flows, you can tell everyone about the D’Meure chardonnay — the one you’ve heard others on the river talk about, but have never actually seen.

Macadamia and honey tart

INGREDIENTS

SERVES 12

12 sheets filo pastry

80g butter, melted, plus 150g butter, extra

40g sugar

2 tablespoons honey

60ml pouring (whipping) cream (35% fat)

3 tablespoons finely grated mandarin or orange zest

250g unsalted macadamia nuts

METHOD

Preheat the oven to 180ºC. Grease a 27cm round loose-based flan (tart) tin. Line the base and side of the tin with layers of filo pastry, brush each layer with a little of the melted butter before adding the next. Trim the edges.

Put the extra butter, sugar, honey and cream in a large saucepan over high heat then reduce the heat and simmer for 3 minutes.

Add the mandarin zest and simmer for 1 minute more. Fold through the macadamia nuts and almonds and spread evenly over the prepared pastry case.

Bake in the oven for 25–35 minutes, or until the top is a nice caramel colour. Cool for 30 minutes in the tin before removing.

Rabbit rillettes

200g slivered almonds METHOD

Store the tart in an airtight container in the refrigerator for a couple of days at most, but serve at room temperature.

INGREDIENTS

SERVES 10

tablespoons duck fat or lard

leek, white part only, rinsed and chopped

garlic cloves, chopped

whole rabbit or duck

4cm strips mandarin or orange peel

cinnamon stick

whole star anise

whole black peppercorns

1 teaspoon salt lard or butter, for sealing

Heat 1 tablespoon of the duck fat in a heavybased saucepan over low heat and gently fry the leek and garlic for 5 minutes, or until soft. Remove with a slotted spoon.

Joint the rabbit or duck into 10 pieces (see note), pulling away any loose fat and discarding any liver or kidneys for another use. Fry the loose fat in the same pan you cooked the leek, for a couple of minutes. Add the meat in two batches and fry over a medium heat until well browned. Return the first batch to the pan.

Return the leek and garlic to the pan. Add the mandarin peel, spices, salt and 500ml water. Cover, bring to the boil, then reduce the heat to a gentle simmer. Cook for 2–3 hours, or until the meat is falling off the bone, adding more water if it starts to dry out, and checking the meat isn’t sticking to the bottom. (You can also cook it in a low oven or a pressure cooker.)

Remove the meat with tongs and allow to cool. Pour the cooking liquid through a fine sieve, discarding the solids. Shred the meat finely with your fingertips, checking very carefully for bones. If you have a mortar and pestle, pound it in small amounts, just until it starts to clump together. (You can pulse it in a food processor if you prefer.)

Place the meat with the strained cooking liquid in a saucepan and simmer to form a dryish paste. Stir through the remaining duck fat and taste for salt and freshly milled black pepper. Press into 250ml ceramic dishes.

If you want to keep it for a few days, melt some lard or butter and pour over to seal.

NOTE

You can cut the rabbit roughly into pieces to help them brown. Avoid the hard leg bones though, or get your butcher to do it.

Slow-cooked Mexican Brisket

INGREDIENTS

SERVES 4

• 1 teaspoon garlic powder

• 1 teaspoon ground cumin

• 2 tablespoons smoked paprika

• 1 tablespoon dried oregano

• 1 tablespoon extra virgin olive oil

• 1kg beef brisket, visible fat removed (150g meat per serve)

• 1 onion, sliced

• 2 tablespoons tomato paste (no added sugar or salt)

• 1 cup salt-reduced chicken stock

• Juice of 1 lime

• Coriander leaves, for garnishing

HERBY TOMATOES

• 400g tomatoes (use a mix of varieties, such as regular, cherry, roma etc.)

• 2 tablespoons red wine vinegar

• 1 small clove garlic, crushed

• ½ cup chopped flat-leaf parsley

• ½ cup chopped coriander leaves

AVOCADO CUCUMBER SALAD

• 1 avocado, sliced

• 1 telegraph cucumber, sliced

• 1 baby cos lettuce, leaves roughly chopped

• Juice of ½ lemon

• 60g Danish feta, crumbled

METHOD

Place the garlic powder, cumin, paprika, oregano and 2 teaspoons of the olive oil in a small bowl and mix to combine. Massage the mixture all over the brisket to coat it well.

Heat the remaining 2 teaspoons of olive oil in a large frying pan over medium–high heat. Add the brisket and sear on all sides.

Place the onion in a slow cooker and place the brisket on top.

Combine the tomato paste, stock and lime juice in a jug, then pour the mixture over the brisket. Put the lid on the slow cooker and cook on high for 8 hours until the meat is very tender and pulls apart easily with a fork.

Shred the brisket in the slow cooker using two forks. Stir the meat into the sauce to combine. Transfer to a platter and scatter with the coriander leaves.

Meanwhile, for the herby tomatoes, place all the ingredients in a bowl and toss to combine. Allow to marinate for 30 minutes to 1 hour before serving.

To make the avocado cucumber salad, place all the ingredients in a large bowl and toss to combine.

Place the Mexican brisket and the two salads in the centre of the table and let everyone serve themselves.

Turkish Poached Eggs with Chilli Oil

INGREDIENTS

SERVES 2

1 tablespoon extra virgin olive oil

½ teaspoon cumin seeds

½ teaspoon smoked paprika

Pinch dried chilli flakes

1 tomato, diced

¼ small red onion, finely diced

1 teaspoon white vinegar

4 × 55g free-range eggs

½ cup (130g) natural yoghurt

1 tablespoon dill leaves

1 small wholemeal pita bread, sliced into quarters,

in the microwave

METHOD

Heat the olive oil in a small non-stick frying pan over medium heat. Add the cumin seeds, paprika and chilli flakes and toast for 1 minute until fragrant. Set aside.

Place the tomato and red onion in a bowl and toss to combine.

To poach the eggs, bring a wide saucepan of water to the boil. Reduce the heat to a simmer and add the vinegar. Crack an egg into a mug, then slide it into the simmering water. Repeat with the other eggs and poach for 4 minutes. Remove the eggs from the pan using a slotted spoon and transfer to a paper towel–lined plate.

Spread the yoghurt across the bottom of two small shallow bowls, then add the eggs. Top with the tomato and red onion, and drizzle the chilli oil over. Garnish with the dill leaves, then season with ¼ teaspoon freshly ground black pepper and serve with the pita bread.

Frozen Yoghurt Bark with Pistachioand Blueberries

INGREDIENTS

SERVES 4

1 tablespoon cashew butter (see note)

1½ cups (390g) natural yoghurt

1 cup (155g) blueberries

2 tablespoons roughly chopped pistachios

2 teaspoons shredded coconut

METHOD

Place the cashew bu er in a small microwave-safe bowl and heat it in the microwave for 10 seconds on High.

Line a small tray with baking paper. Drizzle the yoghurt across the paper, then drizzle with the warmed cashew butter. Scatter the blueberries, pistachios and shredded coconut over the top. Freeze for 2 hours or until set.

Slice into shards to serve. Store in an airtight container in the freezer for up to 1 month.

NOTE

When purchasing nut butters, it is important to look at the food label. Ensure your nut butter has no added sugar or salt.

What’s involved in a 111-point check?

Exterior

The vehicle’s exterior components and modules create a harmonious overall look. That is why examining the body, paint, possible accidental damage and other modules on the vehicle exterior is exceptionally important.

Vehicle documentation

Keeping the Warranty & Maintenance booklet in good order is an important measure of quality. As well as providing peace of mind, proper maintenance ensures that a vehicle best retains its value. The on-board and safety equipment is also checked for completeness and to make sure that the existing Porsche components are approved.

Test drive

The 111-point check concludes with a test drive. During this, safety-related aspects and typical Porsche driving characteristics such as the vehicle performance, braking action and handling are checked. Driver assistance systems which deliver a high level of convenience and safety also undergo testing.

Fluids

The levels of fluids such as the engine oil, coolant and the brake and clutch fluid are checked and topped up if necessary.

Interior

Of the 111-point on the checklist, 39 relate to the interior. Safety-related aspects are tested, as well as the infotainment and multimedia systems and every conceivable interior setting option.

Vehicle analysis

The fault memory is processed as part of the general vehicle analysis. The mileage is also checked for plausibility to rule out that the odometer reading has been tampered with. Inspecting the engine for over-revving is another key aspect. This will make sure that there are no early signs of damage.

Drive system and underbody

When it comes to the drive system and underbody, checks predominantly relate to technical aspects which as safetycritical and of significance in terms of efficient and sporty performance. These include the functionality of various components such as the transmission, radiator, brakes, fuel and exhaust system, as well as the chassis.

Engine

The heart of a Porsche is its engine. Therefore the running characteristics, belts, battery and other crucial components in the engine compartment are examined to ensure they are all interacting effectively. What cannot be measured is the legendary sound of a Porsche engine. That is something which is to be experienced.

HOW TO RETURN TO EXERCISE AFTER PREGNANCY, AND IN THE CASE OF PROLAPSE OR BIRTH TRAUMA.

Returning to exercise after having a baby can feel confusing and overwhelming for many women, even those who have experienced a relatively ‘straight-forward’ delivery (if there is such a thing?).

But for those who have experienced birth trauma and/or have been diagnosed with prolapse after giving birth it can feel even more challenging and many women don’t know where to start.

Having worked with mums and taught trainers who work with mums for almost 15 years I have an insight into how incredibly important it is that all women gain the support they need after having their baby. Whether you experienced birth trauma or have prolapse may first recommendation for every postpartum woman is to book an appointment with a pelvic health physiotherapist (PHP) for a check-up. This appointment will offer insight into where your body is right now, help you to understand your pelvic floor and inner core muscles (Transversus Abdominis or TA) and start you on your journey of ‘rebuilding from the inside out’.

For a woman who has experienced birth trauma or prolapse, finding a PHP that you can trust and feel comfortable with is a hugely important step to understanding your body, what you have been through and the best way to begin the recovery and re-building process specifically for you.

We also need to take into consideration that recovery is not just a physical process but mental and emotional too so ensuring the right support systems are in place here are important too. I highly recommend the work of both the Australasian Birth Trauma Association and COPE if you feel you need support, or even if you are experiencing something and you are not quite sure if it’s ‘normal’ or not. Asking for help is an important part of your journey.

And finally, when you are ready to move your body a little more making sure that you are under the guidance of an exercise professional that understands both birth trauma and prolapse is very important.

Although we are raising standards within the fitness industry there are still areas that you, mum and the consumer would benefit from being aware of. Exercise professionals working with mums need to hold a further education certification in the pre and post-natal space. We don’t get taught these specialised skills in our initial certifications. Make sure to ask anyone you are considering working with for their qualifications.

Next, observe their on-boarding process. A trainer that knows how to work with you will ask questions about your birth experience, your pelvic floor, abdominal wall, mental health and more. They will provide a safe space for you to talk about your prolapse symptoms and any birth trauma and will have other professionals, ie. PHP and counsellor/psychologist in their network to refer you to for support with anything that is outside their scope of practice.

Then, when it comes to your training session, they will adapt their programming for your individual

circumstance and throughout your session they will ask you how you feel, if you are feeling any prolapse symptoms, if you have awareness of your pelvic floor etc. They will also adapt the intensity of your program based on your energy levels and mental health too. If you don’t get looked after and supported in this way, seeking out an alternative training option may be a good idea at this stage.

THE most important thing is that you feel educated and empowered every step of the way and that you trust that the people around you understand your individual circumstance and experience and have a plan to support you that you feel happy with. Remember, there is a light at the end of the tunnel and there are people who want to help.
