Winter has come - and it's intense! After close to a life-time living on the Gold Coast, I've never felt the cold so keenly as this year - a great opportunity to break out the boots, coats and other winter woollies as well as the heater that is placed under my office desk day and night at the moment. ASSET PROTECTION AND FAMILY LAW FINANCIAL AGREEMENTS WITH THE INCREASE IN BLENDED FAMILIES AND SEPARATIONS IN MODERN TIMES, IT IS BECOMING INCREASINGLY COMMON WHEN ENTERING NEW RELATIONSHIPS TO BE CONCERNED WITH PROTECTING YOUR PRE-EXISTING ASSETS. Whilst it may seem unromantic or to be "cursing" a new relationship to consider what will happen if it ends, it is also very sensible, pragmatic and practical to do so. This is where a Financial Agreement can be considered. A Financial Agreement – What is it? A Financial Agreement is essentially a contract between the parties to the relationship which deals with, in a formal manner, how your real estate, other assets, superannuation and liabilities will be divided in the event of a breakdown of a marriage or a de facto relationship. There is a requirement for each party to have been independently advised as to the advantages and disadvantages of entering into the agreement and both solicitors must sign a certificate indicating they have provided that advice. There is sometimes a misconception that a Financial Agreement is simply a prenuptial agreement and only for use before a marriage takes place or a relationship commences. This is not the case. A Financial Agreement can be entered into at any stage of the relationship such as when a couple is entering into a de facto relationship, during a relationship whether married or not, or after separation. A Financial Agreement – Why would you enter into one? A Financial Agreement is primarily entered into to create a degree of certainty about what will happen in the future. It can provide clarity and a clear path for what will happen in the event of a separation. Even if you are in a happy stage of your relationship, it can be worthwhile considering a Financial Agreement as
part of a wider asset protection strategy including Estate Planning and Financial Planning. This is partly because people are often more amicable and flexible during their relationship rather than when it ends, where there are a whole range of emotional drivers attached to their decision-making. A Financial Agreement can also be used as a tool to finalise the financial arrangements of separated parties and can offer more flexibility than formalising their arrangements via a Court Order, such as a Consent Order. A Financial Agreement – What are the advantages? The end of a relationship can be incredibly stressful. If you do not have to add negotiating a property settlement into the mix at that point in time, it will make what is often a hard process, far less costly, stressful, and emotionally draining. One of the other major benefits of a Financial Agreement is that there can be mechanisms put in place that sets out how property is to be acquired throughout your relationship and whether that occurs jointly or is kept separate from each other. One of the greatest advantages is that there is a degree of flexibility for both parties. An experienced family lawyer will be able to prepare an agreement that can provide for a whole range of scenarios. The agreement can go into as much detail as required. A Financial Agreement – Do you have only one chance at its terms? A Financial Agreement would normally be set up as a one-time document, but there is a possibility that you can build into the agreement a plan to update it after a certain number of years. 24 slim magazine Winter 2022
An alternate to reviewing the Financial Agreement is to build into the document, arrangements for future scenarios. For example, the Financial Agreement may include particular payments to be made, based on a certain number of years you have been together, or it could be dependent on the number of children you have. It is important to note that Financial Agreements are not without risk. There is a chance they can be set aside by the Courts. This is why it is so important to ensure when you consider this as a possible asset protection strategy, that you seek advice from an expert in family law. As an Accredited Specialist in Family Law, I advise my clients that they must provide the other party with full financial disclosure and encourage them to get evidence information that details the other person's assets and their financial position. We do that on both sides to ensure that there is a reduced risk of there being any issue later on, relating to insufficient disclosure of financial position and the nature of their assets. Bringing Financial Agreements into asset protection discussions In the event that you are entering into a new relationship, contemplating marriage or considering a separation, a conversation with a specialist family lawyer is the first step. Once armed with information, you can then decide if a Financial Agreement is something you wish to add to your asset protection strategy or a method to resolve your property settlement. What motivated you to go on your weight-loss journey? Hernia, diabetes, high blood pressure and in some cases, it had affected my confidence with myself and the ladies. I realised I needed to make some changes. The biggest motivator was my niece. Also, it is an awesome feeling to be such a motivation to my cousin, Mahir to go through his weight-loss journey too. It’s great to see others proud of what I have achieved and have wanted to do the same for themselves.
What made you decide on weight-loss surgery and which procedure was the right one for you? Overall, over the yo-yo dieting to lose weight and knew I had to make a change. I tried dieting or working out but for such a big person, it never moved as much as I’d hope. I heard great things about the surgeon, so I went for a consultation and he made me feel very comfortable about my decision and helped me choose the right option for me. Post-surgery, what have been some of the challenges? One of the biggest challenges for me has definitely been, shortly after surgery the self-doubt started to kick in and hard: ‘What if I made the wrong decision, should I have done this, what have I done?’
How long had you battled with weight issues?
But I had a strong support network with my family and my friends. I had to remind myself of why I chose to do it in the first place. I found it hard with such a big and fast change from what I was eating to what was left of eating. It was a huge change but I wouldn't change that for the world. I'm much more comfortable now, more than ever.
Give or take a few, but about 15 years.
Any regrets?
What health problems did you face as a result?
The only one is I wish I’d done it sooner. I wish that I had heard of the surgeon and his team earlier. I tried to do it without surgery. I gave it my all, but for some people surgery is the best option.

Growing up, food was life, coming from an ethnic family. If I was stressed, food always calmed me down. If I was bored, food was always there. I hate wasting food because there are so many people in the world who don’t have what we have but that lead to always over-indulging. What motivated you to go on your weight-loss journey? I wanted to do this surgery 18 months ago for my wife and kids and for myself, but went to see a surgeon and it didn’t feel right. But eight months ago, my cousin Dennis had the operation and was keeping an eye on his progress and how he was handling it. He was about four weeks post-op and he saw me and grabbed me and said “cousin, you have to do this to save your life! I don’t care, I’ll pay for it! It’s a life changer!” He usually is a funny, jokearound kind of guy, but in that moment, he had a tear in his eye I knew it was time to get it done. How long had you battled with weight issues? Since I was a child, my weight was always up and down. I would work out and be healthy but then having kids and multiple businesses, I didn’t have time to look after myself constantly because I always was working or doing family life. When Covid hit, it went to next level and the weight packed on like crazy. What health problems did you face as a result? I have Ankylosing spondylitis which is an inflammatory disease. I didn’t realise
until after my operation that the food I ate inflamed my body and was always in so much pain. I was on multiple medications daily which, since the operation, I have come off and only take them from time to time. I also had sleep apnoea to the point where I could only sleep two hours and then wake up. A week after the operation, I stopped snoring and slept for eight hours straight for the first time in years. Even mentally, I didn’t realise how much I was affected due to not have a proper sleep for years. I had no clue how bad my health and life were. What made you decide on weight-loss surgery and which procedure was the right one for you? I was sick of feeling uncomfortable, breathing heavy and not being able to buy clothes from a normal shop, so it was easy decision for me. I followed my cousin Dennis sleeve gastrectomy journey. He was two months ahead of me so just did what he did and had great results. Post-surgery, what have been some of the challenges? I was really lucky to have an amazing wife and children who supported me from pre to post op to this day. From time to time I’d get a bit down because everyone at the table is eat a massive dinner but then I think to myself, that dinner would have been the death of me soon enough, and to be able to sleep, feel energetic and mentally happy every day is worth the sacrifice.

Of fables and fantasy NATALIE PORTMAN IS A MODERN DAY SUPERHERO, MUM AND NOW, AUTHOR. We’ve watched her grow up, evolve as an actress and play some of the most moving characters on the silver screen, as a Senator, swan and soon, superhero with a particularly poignant secret. Her diverse roles in blockbusters and independent films over the past 28 years have earned her multiple accolades, including an Academy Award, a British Academy Film Award, and two Golden Globe Awards. Natalie Portman, actor, director and most recently, author, is at heart a storyteller, who says her passion for acting stems from her the human urge to “develop empathy and practise empathy”. Born Natalie Hershlag in Jerusalem to an American mother and Israeli father, she moved with her family to the US in 1984 settling in Syosset, Long Island, New York where her father established a fertility medicine practice. As often happens in the Big Apple, she was approached by a modelling agent in a pizza restaurant, which she turned down, but did engage an agent and pursue her interest in acting with several auditions in off-Broadway shows. At just 12-years-old, Portman auditioned for and was chosen for the part of
Mathilda in Luc Besson’s 1994 film, “Léon: The Professional”. She adopted her maternal grandmother’s maiden name in an effort to protect herself from unwanted attention as a result of the some of the film’s themes, which she later criticised for their sexualisation of the young French orphan. She told the entertainment media she experienced “sexual terrorism” after the film’s release, and that in the #MeToo era, “no one would make a film like Léon today”. While still at high school, she made her Broadway debut in a 1998 production of “Anne Frank, The Diary of a Young Girl and then went on to international stardom when she was cast as Padmé Amidala in Star Wars: Episode I – The Phantom Menace (1999). Focused on her education, and keen for a taste of the real world beyond acting, Portman attended Harvard University and completed a bachelor’s degree in Psychology, concurrently acting on stage and film – in Anton Chekhov's play The Seagull (2001) and the Star Wars prequel trilogy (2002, 2005). Continuing her education, gaining a degree and all the experiences that entails, were important to Portman, especially as an actor, as she told Business Insider magazine. “Going to college was amazing for me, mainly in terms of giving me a group of friends that are so interesting, and from such different backgrounds, and such different interests and went into different careers. 30 slim magazine Winter 2022

In an interview with Disney's D23 Magazine, Portman spoke of her return to the Marvel Cinematic Universe and discussed the dark secrets Jane Foster is hiding in this episode. “I was so excited by what Taika, Chris [Hemsworth], and Tessa [Thompson] did in Ragnarok, ‘Love and Thunder’ seemed like a great opportunity to revisit the character and see her expand as a Superhero herself.” Astrophysicist and Thor’s ex-girlfriend, Jane Foster is secretly struggling with a terrible hardship which she can only overcome when wielding Thor’s hammer, Mjolnir. As she explained at the launch in February, “These classic tales have great messages (hard work pays off, perseverance and grit win over hubris and haste, abundance can be dangerous), but I hope they just feel like great stories we want to read again and again, the way I do with my children’s favourites.” She continued: “I chose these three fables, which are The Tortoise and The Hare, The Three Little Pigs, and Country Mouse and City Mouse were because they were the ones that I felt had really relevant lessons, still.” “The Tortoise and The Hare, for me, is so much about paying attention, not trying to rush through everything. I think it is more resonant than ever because the world feels so fast and noisy with so much going on and the true meaning seems completely founded in attention and in taking time.” “The beautiful thing about children’s books is that the children get the message of the story, but so do the parents, while reading it out loud to them over, and over, and over again every night. I like to read the things that enrich me too when I read to my kids at night.” “The Three Little Pigs is about building strong foundations. I thought that was really relevant now with the environment, because of course we have to be so conscious of how we’re building strong foundations that we need to think about now.” “And then City Mouse and Country Mouse is a timeless fable about real fulfillment versus superficiality. Then school pickup and the evening routine of dinner, bath and bed before sitting down and enjoying some quiet time and a debrief of the day with Drew.” Fortunately, living and working on the Gold Coast allows Nicole and Drew to unwind and enjoy the best of all worlds. “I love the laid-back lifestyle, the weather and being so close to the beautiful beaches and waterways. It’s a great place to raise a young family. When we have time, we enjoy Restaurant Labart in Burleigh for date night and Paddock Bakery for the best breakfast on the GC. And of course, The Lotus Institute for everything pertaining to beauty, laser and injectables. “Queenstown is still one of our all-time favourite holidays, however having three small children has made that a little challenging. So, these days our destinations of choice for family holidays are Hamilton Island and Fiji.”

FIONA CARY A qualified nurse and midwife, Fiona Cary, married to Dr Andrew Cary, who specialises in Fertility, Obstetrics and Gynaecology, now works as his practice manager. “I manage all the accounts and assist Andrew to run the business side of the practice. I’m also the relief secretary.” Fiona undertook her general nursing training at the Mater Adult Hospital Brisbane and worked there for a number of years before heading to the old Holy Spirit Hospital working in ICU. “I then did my midwifery training at the Royal Women’s Brisbane,” she continues.
“I was 34 weeks pregnant when I completed this training and Andrew was on the O&G training program, so we moved location each year for four years and had another baby during that time.” Beyond work, Fiona is a keen golfer and loves skiing. “We have skied in many different locations around the world and have recently started more walking holidays. Our favourite destinations are NZ for the beautiful scenery and golf. Now we have a son who lives in Vancouver we frequently spread our wings to Canada.“Closer to home, we are about to head out to the Scenic Rim for a couple of days.

Kim Free is addicted to adventure. Wife of Specialist Bariatric Surgeon, Dr Jason Free, Kim is Business Manager at their private practice, working behind the scenes. “Jason and I are a great team, and we’ve been together 22 years, with five amazing kids,” states Kim. “My background is in outdoor recreation and education. I specialised in high adventure, climbing, abseiling ropes courses, leading adventure expeditions. “Jason and I met on the side of a mountain, rock climbing.” Their kids are just as active, undertaking a variety of sports, surf club, music and more. “It’s busy - but so much fun and so rewarding,” says Kim. “My day is centred around supporting everyone; preparing meals, before and after school activities. There’s always someone doing something to cheer on or help to get ready. I love being a mum. We enjoy the shops and restaurants at Via Roma as well as Island Emporium. We eat out regularly and try restaurants at Nobby's and Burleigh Heads, especially with our adult children.”

ALANA CLARKSON LOCAL ENTREPRENEUR AND MUM, ALANA CLARKSON IS SOLVING A BIG PROBLEM FOR MANY WOMEN WHEN IT COMES TO THEIR ACTIVEWEAR.
Based at Palm Beach, Alana, a gym instructor for over 10 years, has released her own line called Idea Athletic which helps to wick away sweat, solving the problem of sweat marks in awkward places. During her time working at the gym, Alana has worn nearly every type of activewear that’s ever existed, and yes, that includes tights that have ridden up, rolled down, thinned out and most of all dampened around her thighs and bust, creating wet patches. She always heard the same complaint from women about getting sweat marks in their crotch and bust regions whenever they sweat, which is especially obvious if they are wearing a lighter colour. “One of the gyms I worked at was housed in a converted warehouse, so the temperatures would soar in summer!” Alana recounts. “That was when I would see and hear how irritated many women felt by visible sweat patches around their bust and crotch areas. And that was the turning point, Alana knew that if this product did not exist it needed to, so she set out on her mission to create high quality sweat solution activewear. The concept of Idea Athletic was born.
After two years of research and development, Alana devised the solution. Idea Athletic’s designs feature their own Australian innovation patented sweat-absorbing bamboo lining throughout the bust, crotch and rear panels called invisiSweat, made from a bamboo fibre which is nature’s superhero. HPV – MYTHS AND PRECAUTIONS HPV IS A SEXUALLY TRANSMITTED DISEASE THAT CAN CAUSE CERVICAL CANCER IF LEFT UNTREATED. BUT CAN IT ALSO IMPACT YOUR FERTILITY OR PREGNANCY? HPV stands for human papillomavirus, a common sexually transmitted infection which usually shows no symptoms and goes away by itself, but can sometimes cause serious illness. The virus is spread through intimate contact with genital skin and can infect both men and women. Condoms offer some but not total protection from HPV as they do not cover all the genital skin. You can be exposed to HPV the first-time sexual activity occurs or from only one sexual partner. Cervical cancer is one of the most preventable and curable cancers. Cells in the cervix show changes or ‘abnormalities’ before any progression to cancer, which takes around 15 years. When left untreated, many sexually transmitted infections (STIs) can lead to infertility. However, HPV shouldn’t affect your ability to conceive. Although you may have heard that HPV can lead to fertility problems, that’s generally not the case. Some strains of HPV can increase the risk of cervical cancer. Removing cancerous or precancerous cells from the cervix can, in turn, affect fertility. The first HPV vaccine protected against the two high-risk HPV types (types 16 and 18), which cause 70 percent of cervical cancers in women and 77 percent of all HPV-related cancers in men and women. The HPV vaccine that is now most commonly used in Australia is Gardasil 9, available free of charge through the school-based National HPV Vaccination Program.
It protects against seven high-risk HPV types (types 16, 18, 31, 33, 45, 52 and 58), which cause 90 percent of cervical cancers in women and around 90 percent of other HPV-related cancers in both men and women. Gardasil 9 also protects against two non-cancerous types (6 and 11) which cause 90 percent of genital warts. All boys and girls aged 12 to 13 should have the HPV vaccine. The vaccine is most effective if given before exposure to HPV that is before sexual activity commences. Testing for HPV to prevent cervical cancer Australia has one of the world’s lowest rates of cervical cancer mortality, thanks to the effectiveness of our National Cervical Screening Program, introduced in 1991. The Pap test was replaced with the HPV test in 2017. The Pap test used to look for cell changes in the cervix. The new test looks for HPV (a common infection spread during sexual activity) which can lead to those cell changes. The HPV test can detect high-risk HPV infections in cervical cells, sometimes before they cause abnormal cells to develop. Women aged 25 to 74 are invited to take the HPV test every five years, instead of a Pap test every two years. Cervical cancer is extremely rare in women under the age of 25 and the introduction of the HPV vaccine has been an effective means of protecting women against some of the leading causes of cervical cancer. 44 slim magazine Winter 2022

Broken Heart Syndrome IT SOUNDS MELODRAMATIC, BUT IT’S REAL. RECENT RESEARCH INDICATES THAT TAKOTSUBO SYNDROME, ALSO KNOWN AS “BROKEN HEART SYNDROME”, THE RARE HEART-BRAIN DISORDER, IS INCREASING IN MIDDLE-AGED AND OLDER WOMEN.
Named for the Japanese octopustrapping pot that the heart resembles, Takotsubo syndrome occurs when the heart muscle is weakened, usually following severe emotional or physical stress when an outpouring of adrenaline creates a transiently “shocked” state characterised by markedly abnormal contractions in a section of left ventricle and by heart failure. Though the muscle weakness is temporary, up to 10 percent of patients will experience another attack within five years. No one is sure what triggers stress cardiomyopathy, but experts are certain that it’s on the rise. The condition is often triggered by stress or loss and can lead to longterm heart injury and impaired heart function. Researchers from the Smidt Heart Institute at Cedars-Sinai in the US have discovered two alarming trends in Takotsubo cardiomyopathy. The study, published in the Journal of the American Heart Association (JAHA), suggests middle-aged and older women are being diagnosed with broken heart syndrome up to 10 times more often than younger women or men of any age. The research also suggests that the rare condition has become more common, and the incidence has been rising steadily since well before the COVID-19 pandemic. Incidence of the disease has grown from less than 2 percent to 7.8 percent during the COVID-19 outbreak, according to a Cleveland Clinic study in the Journal of the American Medical Association, as women report being extremely stressed by the pandemic and its impact on
health, job security and the disruption of normal activities. This study further validates the vital role the heart-brain connection plays in overall health, especially for women. The research team used American hospital data collected from more than 135,000 women and men who were diagnosed with Takotsubo syndrome between 2006 and 2017. While confirming that women are diagnosed more frequently than men, the results also revealed that diagnoses have been increasing at least six to 10 times more rapidly for women ages 50 to 74 than for any other demographic. Prior to this study, researchers only knew that women are more prone than men to developing Takotsubo syndrome. This latest study is the first to ask whether there are age-based sex differences and if case rates may be changing over time.
Researchers intend to research the longer-term implications of a Takotsubo diagnosis, molecular markers of risk and the factors that may be contributing to rising case rates. Although medical professionals understand that mental stress accelerates cardiovascular disease by promoting inflammation, oxidative stress, and abnormal function of the endothelium, the protective inner lining of our blood vessels, there is still a lot to discover. A healthy lifestyle, balanced diet, exercise and relaxation practices can go a long way to ensuring heart health into middle and older age.
The Brain and Heart Connection We’ve known for decades that smoking, hypertension, high cholesterol and diabetes account for most cardiovascular problems. But it wasn’t until publication of the Interheart study in 2004 (25,000 volunteers spanning 52 countries) that emotional stress was identified as another key risk factor, accounting for about one-third of heart attacks and strokes. The way the brain and nervous system respond to different types of stressors is something that changes as women age. One in nine women will suffer with endometriosis. More than 830,000 (more than 11 percent) of Australian women, girls, and those who are gender diverse suffer from endometriosis at some point in their life with the disease often starting in teenage years. Importantly, there is a delay to diagnosis by seven years, which can impact a womans' ability to fall pregnant, as well as affect her general health and wellbeing. Common symptoms include painful periods, pelvic pain and cramping (which may occur throughout the whole month), pain with intercourse, altered bowel movements or urination, excessive bleeding and infertility. Endometriosis is more than a “bad period”, and if you find yourself needing to take days off school or work, that is not normal and it should be investigated. An operation, usually a day procedure, called a diagnostic laparoscopy is the gold standard for diagnosis of endometriosis.
This allows for the excision of abnormal tissue which improves pain and also fertility. Important to note, a normal ultrasound does not rule out endometriosis. Endometriosis is a whole body chronic disease and it requires a multidisciplinary approach to treatment. Dietary changes to include or exclude some key food groups and a low fodmap diet may help in reducing the symptoms of pelvic pain and bloating. Physiotherapy can work together in a holistic approach to treating this whole body, chronic disease by working to improve pelvic floor function/ dysfunction. The report builds on the findings of The Men’s Project’s 2018 report “The Man Box”. The study compared men’s belief in outdated gender stereotypes – such as men having to be the breadwinner – with other factors such as their age, where they live, their employment status, cultural background, education level and sexuality. The initial Man Box report found that young Australian men who believe in outdated masculine stereotypes were themselves at higher risk of using violence, online bullying and sexual harassment, engaging in risky drinking and reporting poorer levels of mental health.
The new report, Unpacking the Man Box, finds men’s adherence to outdated attitudes to gender is 25 times more accurate than a range of demographic variables in predicting the use of physical violence, sexual harassment, verbal bullying and cyber bullying, 22 times more accurate in predicting the experience of physical violence, verbal bullying and cyber bullying, 11 times more accurate than demographics at predicting very risky drinking, and 10 times more accurate than demographics at predicting negative feelings and emotions. Matt Tyler, Executive Director of Jesuit Social Services’ The Men’s Project, says the report shows masculine stereotypes stop young men from living healthy lives and being their best selves. “This report demonstrates the significant costs to young men and others of being ‘in the man box’ – meaning they personally endorse a range of behaviours related to rigid gender roles, aggression, control and acting tough. “These stereotypes have unique, powerful influences on a number of harmful attitudes and behaviours. Breaking free of these stereotypes will improve the health and well-being of both women and men.”

Mr Tyler says the report shows the need for Governments to fund public awareness campaigns about the negative impact and associated costs of conforming to masculine stereotypes. “We also call for greater capacity building among people who work with men and boys – like teachers, sports coaches and social workers – to help them recognise and challenge harmful attitudes and behaviours. WHAT IS STRESS? Stress is anything that causes a physical change in your body. GET GRATEFUL Gratitude is a powerful positive emotion. There are many ways you could make this a healthy habit. You could gaze at photos of that outdoors adventure and find something that day that really left you feeling grateful, you could express gratitude to someone in your life or you could use the old favourite of writing down three things that you are grateful for in a journal. Get creative and find what works best.

Day 1. To make the buttermilk brine, combine the buttermilk, salt, chicken bouillon powder, garlic powder and chilli powder in a large bowl or container. Ensure the container is deep enough so that the chicken will be completely submerged. Place the chicken thighs into the buttermilk brine, cover and refrigerate for 12–24 hours.

Day 2 To make the Beijing spice mix, heat a small frying pan over low heat and toast the white and Sichuan peppercorns and cumin seeds, moving the pan continuously so that the spices toast evenly. When the spices are lovely and aromatic, add the garlic powder, chilli powder and chilli flakes and toast gently for 30 seconds. Allow the spices to cool, then grind them into a coarse powder using a mortar and pestle. To make the potato-flour dredge, combine the potato flour, plain flour, black pepper and salt in a large bowl. Set aside. Heat at least 6cm of vegetable oil in a large heavy-based saucepan to 160°C, using a food thermometer to check the temperature. Lift each piece of chicken out of the buttermilk brine and shake off the excess. Thoroughly coat the chicken in the potato-flour dredge, then carefully lower into the oil. Fry the chicken in batches, making sure the pieces don’t touch each other or stick to the bottom of the pan. Fry for 5–6 minutes, until the crust is just set. Transfer to a wire rack to rest while the remaining chicken is fried. When all of the pieces have been fried once, fry each batch a second time, until the coating is extra crispy, 6–7 minutes. Potato flour does not brown like plain flour does, so don’t attempt to fry until golden. When you tap the coating and it is hard and crisp, the chicken is ready to drain on a wire rack. Reserve ½ cup (125 ml) of the hot frying oil. Place 2 tablespoons of the Beijing spice mix in a heatproof bowl with the reserved frying oil, chilli oil and salt, and mix to combine. Add 2 chicken pieces to the bowl at a time and toss to coat in the spice and oil mix. Return the chicken to the wire rack and sprinkle generously with the remaining Beijing spice mix. Serve hot.

• Vegetable oil, for brushing • 2 sheets shortcrust pastry CUSTARD • 1/3 cup (75g) caster (superfine) sugar • 150ml hot water • 2 eggs • ¼ cup (60ml) sweetened condensed milk • ½ teaspoon vanilla extract
METHOD 1. For the custard, dissolve the sugar in the hot water in a saucepan over low heat, stirring to make a syrup. In a bowl, whisk the eggs, condensed milk and vanilla together to combine. While whisking continuously, slowly pour the sugar syrup into the egg mixture. Strain into a jug and allow to stand until the air bubbles dissipate. Set aside. Preheat the oven to 200°C. 2. Lightly brush a 12-hole muffin tin or 12 fluted individual tart tins with oil. Cut the pastry sheets into 12 even squares and press into the greased tins, trimming off any excess. Chill in the fridge for 15–20 minutes. 3. Line the pastry shells with baking paper and fill with pastry weights or uncooked rice. Blind-bake for 10 minutes, then carefully remove the paper and weights and bake for another 3–4 minutes, until golden. Set aside to cool. 4. Reduce the oven temperature to 140°C and divide the custard equally between the shells. Bake the tarts on the lowest shelf of your oven for 20–25 minutes, until the filling is just set. Remove from the oven and allow to rest for about 15 minutes. Enjoy the custard tarts while they’re warm.

• 2 tablespoons cornflour (cornstarch) • 300g Gruyere, grated • 300g Comte, grated • 2 cloves garlic, minced • 300ml lager • 1 tablespoon lemon juice • ½ teaspoon salt • ½ teaspoon ground white pepper • 100 ml chilli oil Fresh dill, parsley and chives, roughly chopped • Cracked black pepper

2. Heat the garlic and lager in a pan over low heat and bring to a simmer. Add a handful of the cheese mixture at a time to the simmering beer and whisk vigorously, ensuring each addition is completely melted and emulsified before adding more. 3. Once all the cheese has been added and the mixture is thick and smooth, add the lemon juice, salt and white pepper and stir. If the mixture has turned into a blob of melted cheese with some separated liquid, don’t worry. Simply increase the heat and whisk hard to bring it back together. 4. Transfer the cheese mixture to a fondue pot or cast-iron skillet. Dress liberally with the chilli oil, fresh herbs and cracked black pepper. If the fondue starts to set, simply pop it back on the stove and warm it up over low heat. 5. Serve the fondue with pickled chillies, bread, smoked sausages, charcuterie and boiled potatoes, for dipping.

• 100ml olive oil • 3 cloves garlic, sliced • ½ cup (80g) blanched almonds • Sea salt flakes • Handful flat-leaf parsley leaves, finely chopped • 1 small brown onion, finely chopped • ¼ cup (60ml) tomato paste (concentrated purée) • Pinch of sweet smoked paprika • 4 fresh bay leaves • 2 red-skinned potatoes, such as desiree, peeled and sliced into 5 mm rounds • 1 cup (250ml) dry white wine • Pinch of saffron threads (optional) • 1 x 400g can crushed tomatoes • 2 cups (500ml) chicken or fish stock • 300g ling or blue-eye trevalla fillet, diced • 8 raw king prawns (shrimp), heads on and tails intact • 500g mussels, scrubbed and debearded • Crusty bread, to serve (optional)
METHOD 1. Place a small frying pan over medium heat and add 2 tablespoons of the olive oil, the garlic, almonds and a pinch of salt. Cook, stirring constantly, until the garlic is lightly caramelised. Transfer the mixture to a mortar and pestle to cool, then crush it until it resembles rough breadcrumbs. Stir through the parsley and set aside. 2. Heat a large saucepan over medium–high heat and add the remaining olive oil, the onion and a good pinch of salt. Cook, stirring often, for 5 minutes, until the onion is translucent but not coloured. 3. Add the tomato paste, paprika, bay leaves and potato and stir through, then continue to cook for 2 minutes. Add the wine and saffron (if using) and cook for a further 2 minutes, then add the crushed tomatoes and stock. Reduce the heat to a simmer and cook for 10 minutes, until the potato is almost cooked. 4. Add the fish to the pan and gently poach it for 2 minutes, then add the prawns and mussels. Cover with the lid and cook for 5 minutes or until cooked. Spoon the almond and onion mixture over the suquet and serve with some crusty bread, if you like. 62 slim magazine WINTER 2022

METHOD 1. Preheat a large non-stick frying pan, chargrill pan or barbecue over high heat. 2. Season the tuna steaks with salt and pepper and drizzle with 2 tablespoons of the olive oil. Cook in batches for 30 seconds on one side and remove from the pan without flipping. If you prefer your tuna well done, cook for 30 seconds each side and then transfer to a plate to rest for 1–2 minutes. 3. Add the remaining olive oil to the pan with the garlic, tomatoes and a pinch of salt. Cook until the tomatoes begin to burst, then add the olives, capers and a crack of pepper. Add the herbs and stir through. To serve the tuna as it is (pictured), spoon the tomatoes over it. Squeeze the lemon juice over the top and finish with a drizzle of extra virgin olive oil. 4. To serve the tuna with pasta, slice it into thin strips and combine with the cooked spaghetti, tomato and herb sauce, reserved starchy pasta cooking water and a good glug of extra virgin olive oil. Finish with a squeeze of lemon juice and dried chilli flakes, if you like.

Fish shawarma-style wraps I N G R E D I E N TS SERVES 4
To serve
• 600g firm white-fleshed fish, such as ling, Spanish mackerel, swordfish, gemfish or barramundi, cut into 3cm pieces • 1 tablespoon ras el hanout • Sea salt flakes and ground black pepper • ¼ cup (6ml) olive oil • 2 lemons • 1 brown onion, cut into 1cm slices
• 8 small Lebanese-style flatbreads • 1 cup (220g) hummus • 3 handfuls fresh herbs, such as flatleaf parsley leaves, mint leaves or dill sprigs • 1 tomato, sliced • 1 Lebanese cucumber, sliced • ½ cup (135g) sumac yoghurt, or natural Greek-style yoghurt • 1/3 cup (80ml) zhoug
METHOD 1. Soak eight 12cm bamboo/wooden skewers in water for 10 minutes. Place the fish in a bowl with the ras el hanout, some salt and pepper and 2 tablespoons of the olive oil and toss to coat.
3. Preheat a barbecue or chargrill pan to high. Toss the onion in the remaining olive oil and season lightly with salt and pepper. Cook the fish for around 2 minutes each side, and the onion until it’s charred and gnarly, about 2 minutes.
2. Cut one of the lemons in half lengthways and then cut each half into eight thin slices. Thread the fish onto the skewers in between the lemon slices – you want three pieces of fish and two slices of lemon per skewer. If you have time, place the skewers in the fridge for up to 1 hour to marinate.
4. To serve, lay the flatbreads out, spoon some hummus onto them and top with the herbs, tomato, cucumber and the charred onion. Place a fish skewer on top, then pull the bamboo skewer out and discard. Finish with the yoghurt and zhoug, wrap it all up and dive in!
NOTES Ras el hanout, a North African spice mix, is available at well-stocked supermarkets and some grocers.

Red lentil and coconut dahl with fish
SERVES 4
• 1/3 cup (80ml) coconut oil
• 4 sprigs fresh curry leaves • Sea salt flakes and ground black pepper • 1 brown onion, finely chopped • 2 cloves garlic, crushed • 3cm piece ginger, peeled and finely chopped • 2 tablespoons curry powder, plus 2 teaspoons extra • 2 tomatoes, finely chopped, or 2 tablespoons tomato paste (concentrated purée) • 2 cups (410g) split red lentils • 6 cups (1.5 litres) chicken or vegetable stock • 1 x 400ml can coconut milk • 2 large handfuls roughly chopped kale or baby spinach leaves • 400g Spanish mackerel fillet, skin removed, or any other firm white-fleshed fish, such as ling or blue-eye trevalla • 2 tablespoons olive oil • 2 handfuls coriander (cilantro) leaves • Steamed basmati rice or naan bread, to serve (optional)
METHOD
1. Heat the coconut oil in a large shallow ovenproof frying pan over medium–high heat. Add half the curry leaves and cook for around 2 minutes, until crisp and translucent. Transfer to a plate, lightly season with salt and set aside. 2. Add the onion, garlic and a good pinch of salt to the coconut oil and cook, stirring, for 4–5 minutes. Add the ginger, the remaining curry leaves, the 2 tablespoons of curry powder and the tomatoes and cook for 1 more minute, then add the lentils and stir through. 3. Pour the stock into the pan and cook over low heat for 20 minutes, until the lentils are cooked and creamy. Tip in three-quarters of the coconut milk and cook for 2 minutes, then add the kale or spinach and stir through until wilted. 4. Preheat the oven to 200°C. In a shallow bowl, combine the fish with the extra curry powder, some salt, pepper and the olive oil, until coated. Nestle the fish in the dhal, transfer to the oven and bake for 10 minutes, until just cooked. Remove the dhal from the oven, scatter with the coriander leaves and drizzle with the remaining coconut milk. Rhubarb + goat’s cheese tart METHOD
IN G R EDIENTS PREP TIME 25 MINUTES, PLUS 20 MINUTES CURING COOK TIME 1 ½ HOURS SERVES 4-6
For the pastry • 225g plain flour, sifted • 110g butter, chilled and diced, plus extra for greasing • 1 medium egg yolk • 20g Parmesan cheese, finely grated • 2–4 tbsp ice-cold water • ½ tsp finer flaked sea salt • Freshly ground black pepper
1. Start by making the pastry. Pulse the flour and butter together in a food processor until the mixture resembles breadcrumbs. Add the egg yolk and Parmesan and pulse a couple of times to combine. Pour in the water, 1 tablespoon at a time, until the mixture comes together when you pinch it between your fingers. You may not need all the water. Add the salt and pepper and pulse again to combine. Transfer to a clean work surface, shape into a round, cover with cling film and chill in the freezer for 30 minutes. 2. Meanwhile, cure the rhubarb. Toss the rhubarb, salt, sugar, lemon thyme and fennel seeds together in a small bowl. Cover with a plate or tea towel and leave to cure at room temperature for 20 minutes. Drain the rhubarb in a colander, rinse and pat dry with a clean tea towel or kitchen paper. Leave in a cool place until ready to use. 3. Preheat the oven to 180°C. Lightly grease a 23cm fluted tart tin with butter. Remove the dough from the freezer and use the largest holes on a box grater to grate the dough into the centre of the tin in three stages. After each third, press the dough into the base and sides of the tin until they are completely covered to the top lip in an even layer. Prick the base of the pastry all over with a fork, then cover with baking paper or foil, making sure some of the paper hangs over the side. Fill with baking beans and blind bake in the oven for 15 minutes. Remove the beans and paper and bake for another 12 minutes to cook the base until golden. Remove from the oven and leave to cool. Leave the oven on.
For the cured rhubarb • 2 slim rhubarb stalks sliced in half lengthways, then cut into 1cm pieces • 5g finer flaked sea salt • 25g caster sugar • 2 lemon thyme sprigs • ½ tsp fennel seeds For the tart filling • 25g butter • 4 onions, finely sliced • 2 medium eggs, beaten • 100ml double cream • Leaves from a small bunch of parsley, finely chopped • ½ tsp Dijon mustard • 80g fresh young rindless goat’s cheese • 3 lemon thyme sprigs (or use thyme leaves and grated lemon zest) • Sea salt and freshly ground black pepper
4. Meanwhile, for the filling, melt the butter in a large frying pan over a medium heat until melted and bubbling. Add the onions and a large pinch of salt. Fry, stirring frequently, for 8 minutes until the onions are soft and translucent. Reduce the heat to low and cook, stirring occasionally, for 25 minutes, or until the onions have reduced in volume by half and are golden and sweet. Remove from the heat. 5. Whisk the eggs, cream, parsley and mustard together in a medium bowl, then stir in the onions to combine. Pour the filling into the tart case and dot over the cured rhubarb. Crumble over the goat’s cheese and scatter the lemon thyme over the top. 6. Bake the tart in the oven for 25 minutes, or until set. Leave to cool in the tin for 10 minutes before removing and slicing into wedges. Serve with a green salad and boiled new potatoes. The tart will keep covered in the fridge for up to three days. Grilled oysters in smoky spiced garlic butter INGRED I E N TS 4 AS A STARTER | 25 MINUTES
• 75g butter, softened • 50g Parmesan cheese, finely grated • 4 garlic cloves, finely grated • Finely grated zest and juice of ½ lemon • 1 tsp hot smoked paprika, plus extra for dusting • 1 tsp cayenne pepper
• ¼ tsp smoked sea salt • ¼ tsp hot sauce
• 12 rock oysters • Small bunch of parsley, leaves picked and chopped • Lemon wedges, to serve
METHOD 1. Mix the softened butter, cheese, garlic, lemon zest and juice, paprika, cayenne, salt and hot sauce together in a large bowl. Use a fork to work it into a smooth mixture. Empty the bowl onto a piece of clingfilm, big enough to hold the butter, then roll it into an even sausage shape about 2cm thick. Chill until ready for cooking. 2. Opening oysters can be tricky – even trickier after a few drinks by the barbecue with lots of people watching you, so open the oysters just before your guests arrive and make sure the oyster is completely detached from the shell to help with eating later. If you have not done this before, ask your fishmonger to show you (and refresh your memory with tutorials available online once you get home). You will need an oyster knife to do this at home.
3. Remove the grill from the barbecue and light. Get your charcoal to the point where you cannot hold your hand over the heat for more than 10 seconds. Place the shucked oysters, cup-shell down, on the cold grill. You need to be careful to get them to remain upright so they don’t spill their contents and add a 1cm disc of the flavoured butter to each oyster. Very carefully lower the laden grill on to the barbecue. Depending on the heat, it will take 3–6 minutes before the butter is bubbling and this means the oyster is poached to perfection. Using tongs, move each oyster to a serving platter. Sprinkle with parsley and a dusting of paprika and serve with lemon wedges and crusty bread.
NOTES The oysters can be cooked under a preheated hot grill if you don’t want to light the barbecue; the cook time will be the same.
Frozen blood orange Margarita INGR EDIENTS SERVES 4 | 5 MINUTES
For the cocktail • 400ml blood orange juice, frozen • 120ml good-quality tequila • 85ml triple sec • 60ml fresh lime juice • A few drops of vanilla extract • Ice cubes For the glasses • Finer flaked sea salt • Brown sugar (smoked for the next level) • ½ lime
METHOD 1. An absolutely excellent cocktail to create some magic even on those darkest of Winter days – deliciously balanced and a very pleasing colour. Blood oranges work so well here, but if they are not in season, then use a different freshly squeezed orange juice. The key to a good cocktail, as is the key to much good food, is to keep tasting and adjusting. 2. Pour all the ingredients for the cocktail into a large bowl with a spout or a jug, then whizz it in a blender in two batches. 3. To serve, sprinkle the salt and sugar onto a small, flat plate. Rub the edge of each glass with the lime, then dip the rim into the salty sugar mix to coat. Pour the cocktail into the glasses and serve immediately
NOTES To add that extra-slushy luxury cocktail level, freeze the blood orange juice in an ice-cube tray before making the cocktail. Alternatively, just use plenty of extra ice.

• 1 tablespoon garlic powder • 1 tablespoon onion powder • 1 teaspoon dried oregano • 1 teaspoon smoked paprika • 1 teaspoon ground coriander • ½ teaspoon chilli powder (optional) • pinch of salt and ground black pepper MEXICAN BEEF • 1 tablespoon olive oil • 1 brown onion, finely chopped • 2 cloves garlic, finely chopped • 2 celery stalks, finely chopped • 2 carrots, coarsely grated • 500g premium beef mince • 1 tablespoon Mexican spice mix (purchased or homemade; see above) • 400g tin corn kernels, drained, or 2 fresh corncobs, kernels removed • 400g tin red kidney beans, drained, rinsed • 2 × 400g tins no-added-salt chopped tomatoes • 1 cup (250ml) salt-reduced beef stock • 2 tablespoons no-added-salt tomato paste • plain Greek-style yoghurt, to serve (optional) • coriander, to garnish (optional)

• 2 cups (300g) self-raising flour • 100g salted butter, roughly chopped • 2 eggs, lightly beaten • ½ cup (125ml) your preferred milk • small handful flat-leaf parsley, finely chopped • 2 teaspoons Dijon mustard • 1/3 cup (25g) finely grated Parmesan
METHOD 1. Preheat the oven to 180°C (160°C fanforced). Heat the oil in a large frying pan over medium heat. Add the onion, garlic, celery and carrot and cook for 5 minutes or until fragrant. Add the beef and cook until brown all over, breaking it apart with a wooden spoon as you go. Sprinkle over the Mexican spice mix and stir through the beef. Stir in the corn kernels, red kidney beans, tomatoes, beef stock and tomato paste. Allow to simmer for 10 minutes or until the sauce thickens. Remove from the heat. 2. Meanwhile, to make the dumplings, place the flour in a bowl and rub in the butter using your fingertips until the mixture resembles fine bread crumbs. Stir in the egg, milk, parsley, mustard and Parmesan. 3. Remove at least 1½ cups (375g) of beef mixture to use in the nachos. 4. Pour the remaining beef mixture into a 4-cup (1 litre) casserole dish. Dollop level tablespoons of the dumpling mixture onto the beef mixture. Cook for 25 minutes or until the dumplings are cooked and starting to turn golden brown. MAKES 16-24 | 15 MINUTES CHILLING TIME | 10 MINUTES
1. Line a 20cm square cake tin with baking paper. Place the dates, cacao or cocoa, vanilla, maple syrup and peanut butter in a food processor and process until well combined. Add all of your chosen remaining ingredients (except the melts) and, using the pulse button, process until finely chopped and well combined, while leaving some texture.
• 15 pitted dates • ¼ cup (25g) cacao or cocoa powder • ½ teaspoon pure vanilla extract • ¼ cup (60ml) pure maple syrup • 2 tablespoons pure peanut butter • 1 cup (140g) crushed peanuts, plus extra to sprinkle • ¼ cup (20g) shredded coconut, plus extra to sprinkle • ¼ cup (30g) flaxseed meal • ¼ cup (45g) chocolate chips • pinch of salt • ¼ cup (35g) chocolate melts, melted
2. Press the mixture into the prepared tin and sprinkle with extra crushed nuts and coconut. Drizzle with melted chocolate if desired. Alternatively, roll the mixture into walnut-sized balls. 3. Place in the freezer for 10 minutes or until firm. Cut into squares to serve. Keep in an airtight container or a freezer-proof bag in the freezer for up to 2 months.

Pork with grapes & sage ING R E D I E N TS SERVES 4
• 4 pork cutlets • 500g crimson grapes • 1 red onion, roughly sliced • 8 sage leaves • 150ml marsala • 3 tablespoons extra-virgin olive oil • 1 tablespoon unsalted butter • sea salt and black pepper
Paccheri with cavolo nero & ricotta ING R EDIENTS SERVES 4
• 1 bunch of cavolo nero • 5 garlic cloves • 150ml extra-virgin olive oil, plus extra to serve • 200g fresh full-fat ricotta • sea salt and black pepper • 320g paccheri or other dried pasta of your choice • zest of 1 lemon, to serve
METHOD 1. Strip the leaves from the cavolo nero stalks and set the stalks aside for another use. Blanch the cavolo nero leaves with the garlic cloves in a large saucepan of salted boiling water for 5 minutes. Using tongs, lift out the leaves and garlic and squeeze out any excess water. Transfer the leaves and garlic to a food processor or blender and pulse until roughly chopped. With the motor running, pour in the olive oil and blitz until smooth. Add 150g of the ricotta and continue to blend until fully incorporated. Season to taste. 2. Cook the pasta in a large saucepan of salted boiling water (I use the same pan and blanching water from the cavolo nero and garlic), until al dente. Drain the pasta, reserving 250ml (1 cup) of the pasta cooking water, and transfer to a large bowl. Pour over enough sauce to coat the pasta, adding some of the cooking water, if necessary, to thin out the sauce, but usually this is not needed here. Toss well to coat and serve with an extra drizzle of olive oil, the remaining ricotta on top and a sprinkle of lemon zest. 68 slim magazine WINTER 2022
METHOD 1. Preheat the oven to 180°C. 2. Arrange the pork cutlets in a deep baking tray with the grapes, onion and sage. Pour over the marsala and olive oil and dot with the butter. Season with salt and pepper, then transfer to the oven and cook for 30 minutes or until the pork is golden and cooked through. 3. Remove the pork and keep warm under a layer of foil. Return the tray to the oven and increase the temperature to 190°C. Cook for 10 minutes or until the grapes have collapsed and the sauce has thickened. Return the pork to the baking tray – I serve it like this, but if you want to put the pork back in the oven for a few minutes, feel free to, then serve.

Summer sweetcorn soup with scallops I NGR E D I E N TS SERVES 4
• 5 sweetcorn cobs • 3 tablespoons extra-virgin olive oil, plus extra to serve • 2 tablespoons unsalted butter • 1 leek, white and pale green parts, well washed and roughly chopped • 1 shallot, roughly chopped
METHOD 1. Using a sharp knife, remove the kernels from four of the sweetcorn cobs and set aside. Cut or break the bare cobs in half and place them in a saucepan. Cover with 600ml of water and bring to the boil over high heat. Reduce the heat to a simmer and cook for 15 minutes. 2. Warm 2 tablespoons of the oil in a large saucepan over medium heat and add 1 tablespoon of the butter. When foaming, add the leek and shallot and a good pinch of salt. Gently cook for 8–10 minutes, until soft and beginning to colour. Add the garlic and cook for 2 minutes or until fragrant. Add the corn kernels and stir to coat, allowing the corn to mingle with the base ingredients for a minute or two.
3. Strain the corn cob broth into the pan with the sweetcorn – you should have about 500ml (2 cups). Add the crème fraîche and cook the soup for 5–6 minutes, until the corn is cooked through. Season well with salt and pepper. 4. Meanwhile, grill the remaining sweetcorn cob directly over a medium gas flame (or use a barbecue or dry frying pan), turning the cob frequently until the corn is cooked and slightly charred on all sides. Remove the corn kernels with a sharp knife and set aside. 5. Blitz the soup with a stick blender or transfer to a blender and puree until smooth. Check for seasoning and squeeze in the lime juice. Keep the soup warm while you cook the scallops. 6. Place a frying pan over high heat. When it’s very hot, add the remaining 1 tablespoon of oil and cook the scallops for about 1 minute. Don’t move them around – you want to get a nice crust on them. Turn the scallops over and add the remaining 1 tablespoon of butter. Cook for 30 more seconds, then remove from the heat. Season with salt. 7. Divide the soup among four bowls. Top each bowl with some of the grilled corn kernels, three scallops and some chives. Drizzle over a little more olive oil and a squeeze of lime juice, then serve.

• 170 g unsalted butter, softened • 300 g brown sugar • 2 eggs • 250ml (1 cup) full cream milk • 1 teaspoon vanilla extract or vanilla bean paste • 250g (1 cups) selfraising flour • 60g Dutch-process cocoa powder • 150g dark chocolate (70 percent cocoa solids), roughly chopped • icing sugar, to serve • double cream, to serve CHOCOLATE SAUCE
• 40g Dutch-process cocoa powder • 100g brown sugar • 300ml boiling water
• sea salt and black pepper • 3 garlic cloves, roughly chopped • 150g crème fraîche • juice of 1 lime, plus extra to serve • 12 scallops finely chopped chives, to serve
2. Cream the butter and sugar together in the bowl of a stand mixer fitted with the paddle attachment for 3–4 minutes, until pale and fluffy. Add the eggs, one at a time, beating well between each addition. Pour in the milk and add the vanilla and mix well. The mixture may look curdled, but will remedy once the flour is added. Sift in the flour and cocoa powder and, using a spatula, mix through until incorporated. Gently fold through the chocolate, then spoon the batter into the prepared dish and smooth the top with the back of a spoon. 3. To make the chocolate sauce, combine the cocoa powder and brown sugar in a bowl and pour in the boiling water, mixing well. Gently pour the liquid onto the pudding batter. Transfer to the oven and bake for 40–50 minutes, until the top is risen (cover the pudding with foil if the top is browning too quickly). Dust with icing sugar and serve warm with double cream.

We wanted this information to be available to a wider audience; those that may not have the time or resources to visit a dedicated wellness retreat. We were simply keen to share as many of these messages and much more with all women. WHO WILL BENEFIT FROM IT? Women of all ages from around 16 onwards will take valuable information
from our book. I had a couple of 80-yearold ladies in one of my seminars recently and they spoke to me afterwards saying the wellness message I shared on that day would add life to their years. The same applies to everyone. So many people are focused on their health, yet do they have all the pieces of the puzzle to design the ideal lifestyle that works for them? There is no one size fits all plan. We can help people understand how their starting point is relevant to their wellness plan. We provide a health audit as a tool to help the reader understand if they are currently in a depleted, surviving or thriving state of being. This assists people who are really struggling due to illness or accidents or emotional or mental health challenges to go slow and take a measured approach. Whilst those who have a solid approach to their wellness are challenged to consider if they are factoring in enough recovery. If not, they may have health consequences that will appear in the short term or later in life. Whilst the book is targeted to women, men can benefit from much of the information in the pages too. WHAT ARE SOME OF THE MAIN THEMES? Many wellness books focus on one wellness theme. We have a broad approach and have included five pillars of wellness. These cover all aspects of what is needed to be truly thriving in life, to feel energised and engaged in life, rather than feeling wired and tired. The book includes the foundations of movement and exercise, nutrition, and sleep. However, we take three chapters to unpack emotional well-being, what stress is and how to build stress resilience. This is a fascinating look at how our environment impacts how our genes express. It explores that if you turn up the volume of a gene by your lifestyle practices, what you may pass onto your next generation. It opens up the conversation of epigenetics in a practical way. It is comprehensive and I must say, a labour of love. WHY IS WELLNESS MORE RELEVANT NOW THAN EVER? There is an escalation of lifestyle disease which is exploding since Covid-19 entered our world. Much of it is driven by unmanaged stress levels. We need to ask ourselves; do I have time to be unwell or exhausted? When we look at many tribes in the Amazon and parts of Africa, even though they are living primitively, they are working with the human body’s natural design and not irritating the systems that allow the bodies innate wisdom to heal itself. If you were to bring members of these tribes into our environment, they would develop more lifestyle disease. There are five parts of the world known as blue zones where people regularly live well over 100 years and remain fully functional with limited lifestyle disease. These people do not go to the gym, they don’t diet and they don’t get stressed out every day. They live in community, and they eat well, mostly from what they grow. The members of these communities do not wake up in the morning saying I want to live to be over 100; it is their environment that is conducive to providing them with all the elements required to extend their life whilst they remain fit and healthy. Our challenge is to create a wellness environment for ourselves in our home and ideally in our workplace, where what we do, each day is contributing to our well-being. This is more than going for a walk or run and eating nutritious food, although these can be a great start to a living a more wellness-oriented life. There are simple practical steps that we can do every day that will have a huge impact on how well we live. Great Debate 2022 The Women of Influence Annual Great Debate 2022 focused on money, power and influence. One of the most informative breakfasts of the year, the Great Debate had guests laughing, learning and joining in the discussion. This year the debate featured a spirited team of women and men battling it out to entertain and enlighten, as both teams using their wit and wisdom to interpret the topic “Financial power is the greatest form of influence”. GCWW ladies gathered for the highlyanticipated Lunch at Fish Emporium, Via Roma. With sensational waterviews, margaritas on arrival, fine food and fab company, the event raised $4,000 for the Gold Coast Community Fund. Guests were spoilt with raffle prizes, a new season fashion parade by Liz Clift International and an epic goodie bag of products, Katrina Sanguigno and Melissa Dickinson products and more product. A sketch by Kaili Saba was given to every guest. What a day it was.
