It’s fair to say that we’re all more than a little partial to a bit of luxury, yet our definition of luxury is obviously so personal and diverse (for proof of this, check out the answers from the Style team on page 12!). T he curtains are up, the music is playing, and one thing is for sure… it’s always a good time at the theatre when Shubshri Kandiah is on the Shubshristage.Kandiah is a Brisbane-based performer who launched her career by playing the role of Princess Jasmine in Aladdin. But when the curtains went down, the magic certainly didn’t stop. Shubshri has recently landed the role of Cinderella in the Tony award-winning musical touring Australia this year. It is no secret that Shubshri is a princess on stage, but off it, she’s a total rock star too. “What I love about Cinderella is the message of being enough just as you are, and the courage it takes to be kind which is beautifully told through Cinderella’s journey,” saysWhenShubshri.Shubshri performed in her first ever production (in primary school) it was clear a career in the industry was meant for her. “I have loved being on stage ever since I was a child and grew up in a family that had a love for the arts and performing. A s a fifth generation McKinney descendant, you could say that Andrew McKinney Welch has a lot to live up to. And after being ingrained in the jewellery industry his whole life, it’s only natural that he would eventually be drawn to wearing and creating jewellery of his very own. “I wanted to stand out from the crowd and wear pieces that no one else had seen. This was a key reason for me creating the McKinney Welch brand. I had been searching for jewellery that I could wear formally in a work environment, but also in a casual way on the weekend. Even in the early throws of a new business, Andrew is determined to lean on the four generations that came before him, carrying on the tradition of the business and always staying true to the core values of providing outstanding service and searching the globe for the finest gems. “I have always been enormously proud to be the fifth generation in our family business,” he says. But as for the future of his own venture? Just try and slow him down. “We are always looking forward to new and exciting trends to keep our collectors ahead of the game. We have some revolutionary designs in the pipeline at the moment that will allow you to wear your jewellery in a multitude of ways, whilst keeping the exceptional craftmanship of the McKinney Welch brand.”
When it comes to the men who choose to adorn themselves in McKinney Welch Jewellery, Andrew hopes that his pieces will remind them of their accomplishments and successes in life. “Men have always looked for luxury items like cars or watches to mark milestones in life – jewellery is just an extension of that. How did Queensland Oyster Company start?
Queensland Oyster Company (QOCo) started in 2013. Dad (Tim) had recently retired and was looking for his next project when oyster farming caught his attention. We began to expand from a hobby farm to an established business, with bases in North Stradbroke Island, South Stradbroke Island, and the Tweed River. We’ve had a lot of ups and downs. The most significant was in 2018, when we lost approx. 40,000 dozen saleable oysters due to QX (Queensland Unknown). Having to start all over again was a real setback, but it has made us better farmers. What does your day to day work look like? No two days are the same! Our tasks vary a lot depending on the weather and the time of year, but most of the time you will find us pulling in bags of oysters from the water, grading them into different sizes, then putting them back out again ready for sale. It takes approximately three years to grow a Sydney Rock Oyster, and there is a lot of work involved during that time in order to track and manage their progress. We love being outside in nature every day. Even though there is always plenty to be done, we love a good yarn and you’ll often find us chatting to other farmers, wholesalers, customers, and anyone else passing by the shed. What are your rules for farming the perfect oyster? Farming the perfect oyster comes down to many factors – the water conditions, moon phases and tidal movement, salinity, rain, algae levels, climate, handling process, infrastructure, seasons, location, the individual farmer, and much tooystershelled,perspective,Frommore.afarmingacleanwell-shapedwithgoodmeatshellratioiswhatwe strive for. I don´t think that there is one hard and fast method to growing oysters, as there is a beauty in the unique nature of the differing sizes and shapes you get from each farm/farmer and estuary. What constitutes a ‘perfect oyster’? I wish I had the answer! I don’t think there is a perfect oyster – it´s like asking what a perfect wine is. Each estuary has its own distinct flavours and characteristics. An oyster in perfect condition should have firm and fat meat with a creamy, golden colour to it, and little to no water in the shell. When an oyster is in top condition, you will get a really nice balance of salty and sweet without a lasting aftertaste. Who are some of the restaurants you supply to? We currently supply our oysters to Essa, Bisou Bisou, Anekawa, Palette at HOTA, Belongil Beach Café, Pipit, Café le Monde, and many more restaurants across QLD and Northern NSW through our wholesalers. What is the best way to eat an oyster? Definitely not at 6:00am with a coffee – which is how I eat 90% of mine! I prefer to eat my oysters freshly shucked, either natural (to appreciate the oyster´s flavour) or with a finger lime dressing.

BB: In my role as the Production Manager and Choreographer, it’s like being the conductor of an orchestra. This is the time when I start to shortlist music. It’s about sourcing a variety of music across different genres so that we have a library of tracks to work from. As anyone who’s attended a runway show will know, it’s so inspiring and immersive to watch a model strutting it out to an amazing beat. KG: This is when we approach designers, both local and national, and invite them to take part. Communication during this time is critical and allows us to share our vision for the upcoming Festival with the industry.
ONE WEEK OUT LB: This is where you hope that all the planning, meetings, staging, and custom builds come together. It is now about making sure the attention to detail is carried across everything and that all partner deliverables are met. While the designers are putting the finishing touches to their pieces, we are finalising music selection, show orders, and dealing with the many calls from people looking for last-minute tickets, through to organising and scheduling the hundred or so volunteers all keen to experience what the Fashion Festival is about. It’s essentially a military operation across all areas. Nothing is left to chance.
BB: Now the real work begins for me. Alongside Lindsay and Kimberly, we hold a model casting for the festival. It’s about finding the right models that best suit the vibe of the shows. Finding the right mix of talent and embracing inclusivity is so important. This is also when we start to finalise the music with all the designers and to make sure that the entire show flows. If they all had the same beat or style of music, then the show would feel flat. It’s about taking the audience on a journey. KG: Generally during this period, you start to feel the pressure just a little. We will have just completed our campaign shoot that will be carried across key collateral. We will have spent time determining the overall direction for hair and makeup for each show and workshopping this with Issada Cosmetics and Schwarzkopf Professional. Determining model orders for each show and making sure each model has as much time as possible to change for each look is crucial. Our models each year are wonderful and are key to helping the show run seamlessly and inspiring the audience to appreciate and love the outfits on the runway.
ONE YEAR OUT LB: Planning for the Festival is lengthy. Not long after we complete the reports and analytics of the previous festival, planning begins on how we build the event for the next year. COVID-19 has shown that the business model for everything needs a radical rethink. It’s a matter of quality. It must be meaningful for the industry and the public alike. BB: With models selected, music largely confirmed, and run sheets at the ready, it’s now all getting real and exciting. This is when you start to see everything come together. Model fittings are underway. The stage and set are being constructed and a real commitment to making this work kicks in.
KG: Just a few days before the first outfit appears on the runway, we will have conducted fittings with models for each look – which this year will be more than 500 across the three group shows. Making sure the fit is just right and making subtle tweaks to how the outfit is to be worn is so important in making the look runway ready. With my core team of just three, managing some 30 models, 30 volunteer dressers and upwards of 12 designers backstage keeps the team on their toes. This is where the real action takes place and where we have been able to create a wellthought-out and planned approach.

“I love seeing faces light up when I explain something about the champagne clients are tasting and they ‘get it’ – it’s wonderful,” she says. Amanda describes the buzz of her events like champagne bubbles, they are infectious, and people just can’t help being happy. You may be surprised to learn that although it’s a white drink, it’s made from mostly black grapes, or that Champagne wasn’t the first region in France to produce sparkling wine. This is just a taste of Amanda’s knowledge of the field. Her voyage into the glamorous world of bubbly started on her 18th birthday. “I fell in love with champagne the first time I tasted it – a bottle of Bollinger Special Cuvee – I’ll never forget, then when I first visited the region in 1995, I fell in love with the people, their generosity, and the history,” says Amanda.
