Following an extensive career in the fashion industry, designing womenswear and lingerie prints for the UK high street, Caroline Bithrey started her business Josephine & Joe about four years ago. RHS GARDENS

All four RHS Gardens are now reopening under a new pre-booking system as the governmentâ&#x20AC;&#x2122;s coronavirus lockdown measures begin to lift. The Gardens closed on Sunday 22nd March after an increase in visitors post-lockdown made it difficult to maintain social distancing requirements, but now, more than two months later, the popular green spaces will reopen. This includes RHS Garden Wisley, RHS Garden Hyde Hall, RHS Garden Rosemoor and RHS Harlow Carr. Sue Biggs, RHS Director General, says the gardening charity is delighted that the Government has said it is safe to reopen the RHS Gardens because it is proven that spending time outside in green open spaces surrounded by plants has an immensely positive effect on our health. The Gardens will open from 10am to 4pm daily (Garden Centres 10am to 5pm daily). However, areas within the Gardens where it would be difficult to maintain social distancing, such as glasshouses, Alpine houses, bird hides and play areas will remain closed. While the reopening will come as welcome news, visitor numbers entering the Gardens will be limited. Visitor numbers will be restricted and social distancing measures need to be adhered to, so itâ&#x20AC;&#x2122;s essential to pre-book. Booking is now open here at www.rhs.org.uk/gardens

THE NATIONAL TRUST

The National Trust has announced it’s reopening 29 gardens and parklands across England and Northern Ireland from the beginning of June. The move comes after the UK government updated its advice on ticketed garden venues advising the public in England that they can now visit gardens and land maintained for public use. However the indoor areas such as houses, shops and cafés will remain closed for now. This will mean that if you’d like to visit you will have to pre-purchase your ticket. • 25ml Cold Brew Coffee Liqueur • 200ml classic Indian tonic water • Wedge of fresh orange

• 50ml Dorset Dry Gin • 25ml fresh lemon juice • 25ml honey

How to make

Simply swap out your gin for Cold Brew Coffee Liqueur – remembering to add the Cold Brew after the tonic (otherwise all hell breaks loose). Garnish with a belt of orange peel.

Take the gin, fresh lemon juice and your tastiest honey and shake. Add ice and shake to chill the drink down, pouring into a fancy chilled glass. Garnish with a twist of lemon peel.

After studying the science of soap making in Paris in 1883, he decided to return to England with ambitions to become a premium soap maker. After borrowing £300 from a friend, he set up a small shed in Holborn and began to craft, produce and sell his luxury products. Watercress is a superfood that’s much underrated. Here’s why you should include this seasonal vegetable in your diet!

What is watercress? Watercress is an aquatic plant related to mustard, broccoli and wasabi. It’s commonly confused with garden cress (also known as mustard and cress) but is actually a different species, although the two are related. Raw watercress has a peppery taste that’s similar to mustard and wasabi. Once cooked the pepperiness of watercress diminishes, leaving a distinctive vegetable flavour. The entire watercress plant is edible, including the flowers, although the roots should be best removed as it can have a bitter flavour. However, watercress that is packed into a bag and sold in supermarkets is entirely edible. It’s best eaten raw as it loses a proportion of its health benefits when cooked. Watercress is most commonly used in salads, smoothies, soups and sandwiches, however it can also be treated as a herb and used to flavour sauces and dressings. It’s delicious wilted or stir-fried and in soups and stews, and can be used in a similar way to spinach.
