Ljubljana letošnje leto nosi pomemben naslov »zelena prestolnica Evrope 2016«, saj je po mnenju Evropske komisije naredila največ sprememb v kakovosti življenja. This year, Ljubljana is the proud holder of the title European Green Capital 2016. In the opinion of the European Commission, Ljubljana has made the highest number of changes with regard to quality of life in the shortest time. Ljubljana

U rbano zelenimi kotički v samem središču mesta. Sodobna Ljubljana sledi trendu ekološko ozaveščenega mesta, ki uvaja napredne trajnostne rešitve in skrbi za visoko raven kakovosti življenja. Sama po sebi tako ponuja urejene rekreacijske poti – botanični vrt je eden najstarejših v Evropi, Ljubljanski grad je bil od nekdaj zeleno srce Ljubljane, medtem ko park Tivoli sega skoraj do središča mesta. V mestnem jedru, kjer so prej vozili avtomobili in avtobusi, imajo danes prednost pešci in kolesarji.

Mesto ptic, žab in čebel Na območju Mestne občine Ljubljane so razglašeni štirje krajinski parki, skoraj polovico površine mesta pa prekriva avtohtoni gozd. Sredi mesta smo tako ohranili številna območja, ki predstavljajo življenjski prostor mnogim zavarovanim in redkim ogroženim vrstam, ki so ponekod v Evropi že izumrle. V najstarejšem ljubljanskem parku Tivoli je tako urejena dežela ptic Tičistan, kjer lahko opazujemo ptice in jih krmimo kar iz roke.

Nagrada ima za Ljubljano velik pomen, saj jo uvršča na evropski in svetovni zemljevid trajnostnih mest, hkrati pa je edino mesto v osrednji in jugovzhodni Evropi, ki je prejelo ta prestižni naziv. Ljubljana je mesto, ki preseneča, je majhna po površini, a velika po gostoljubnosti in kakovosti življenja. Če s katere koli razgledne točke pogledamo na prestolnico, ugotovimo, da smo obkroženi z naravo. Ljubljana se lahko ponaša z veliko zelenimi površinami, številnimi drevoredi, parki, vrtovi, predvsem pa s prijetnimi Ljubljana

V bližini vodotokov, Tivoliju, ob Večni poti in na Barju so svoje zatočišče našle tudi žabe. Ljubljana skriva še eno posebnost – urbano čebelarstvo, katerega tradicija sega že v čas prvih prazgodovinskih naselbin. Čebelnjake in panje najdemo na različnih lokacijah v urbanem jedru Ljubljane.

Okusi zelenega mesta S projektom Okusi Ljubljane so zaživele tradicionalne jedi, pripravljene na sodobne načine, njen namen pa je povečati prepoznavnost ljubljanski jedi in jih vrniti v redno kulinarično ponudbo. Vsak sončni petek od marca do oktobra lahko obiščemo Odprto kuhno, ki med svoje stojnice privablja gurmane in kulinarične avanturiste. Da Ljubljančani nikakor nismo prikrajšani za kulinarični hedonizem, je že skoraj samoumevno, a tudi pitna voda je vir zdravega življenja. Naše mesto se lahko pohvali, da si vodo lahko točimo iz pipe, v samem mestnem jedru pa imamo že od leta 2008 tudi številne pitnike.

Zeleno dogajanje Za letošnje »zeleno« leto so pripravili številne dogodke in aktivnosti, ki so razdeljeni na tematske mesece. V drugi polovici leta bo julij namenjen biodiverziteti in čebelam, avgust bo posvečen trajnostnemu turizmu, september trajnostni mobilnosti in skrbi za kakovost zraka, oktobra bo v ospredju dogajanje, povezano z lesom, ki je neprecenljiv dar narave. Do konca leta ostaneta še november, v katerem bo v ospredju tematika prilagajanja podnebnim spremembam, in december, ko se bomo lahko navduševali nad eko inovacijami in zelenimi delovnimi mesti. Ljubljana is a city full of surprises, is small on the surface, but large for its hospitality and quality of life. If you take

a look across Ljubljana from any viewing point, you soon realize that you are surrounded by nature. Ljubljana boasts large green spaces, a number of avenues, parks, gardens, and especially the nice green places in the city center. The modern Ljubljana follows the trend of an eco-conscious city, which introduces advanced sustainable solutions and ensures a high quality of life. It inherently also offers organized recreational trails, the botanical garden is one of the oldest in Europe, Ljubljana Castle was always the green heart of Ljubljana, while Tivoli Park extends almost to the center. In the city center, where previously cars and buses had priority, today pedestrians and cyclists occupy the streets.

City of birds, frogs and bees In the area of the Municipality of Ljubljana, there are four landscape parks in the city area and nearly half of the land within the city boundary is indigenous woodland. In its center, Ljubljana

the City has preserved numerous areas which today are a habitat for many protected, rare and endangered species, some of which are extinct elsewhere in Europe. Ljubljana’s oldest park, Tivoli, is home to a land of birds, called Tičistan, where visitors can bird watch and have them feed from your hand. In Ljubljana, frogs find their homes in Tivoli, along Večna pot, on Barje and elsewhere in nearby watercourses. The city possesses another specialty, urban beekeeping, a tradition dating back to the time of the first prehistoric settlements. Beehives are found in different locations throughout the urban center of Ljubljana.

Green events For this year’s »green« year, the City of Ljubljana has prepared a number of events and activities, which are divided into thematic months. The second half of July is devoted to biodiversity and bees, August is

dedicated to sustainable tourism, September examines sustainable mobility and air quality concerns, October focuses on developments related to wood, which is a priceless gift of nature. The remaining months of November and December concentrate on adaptation to climate changes and eco innovations and green jobs, respectively.

Pod arkadami kultne Plečnikove tržnice ob mestni ribarnici se je pod okriljem zavoda Kino Šiška odprla DobraVaga – razstavni in projektni prostor, prodajna galerija, kavarna in odprti atelje različnih likovnih ustvarjalcev. V DobriVagi se po zgledu bližnje tržnice uveljavlja koncept prodaje umetnosti na kilo, pri katerem sta bolj kot ime avtorja pomembna teža njegovega dela in ustvarjalni proces.

Located under the well-known arcades of the famous Plečnik‘s marketplace alongside the city fish shop and in the framework of Kino Šiška Institute, DobraVaga, an exhibition and project space, a sales gallery, a cafe and an open studio of various fine artists, opened its doors. Following the example of the nearby marketplace, DobraVaga introduces the concept of selling art per kilo, where the significance of artist‘s work and the creative process take precedence over the artist‘s name.

Paolo Trichilo Njegova ekscelenca Paolo Trichilo je novoimenovani italijanski veleposlanik v Sloveniji. Z njim smo se pogovarjali o prvih vtisih bivanja v naši prestolnici, o njegovih nalogah in načrtih, kako še tesneje povezati Italijo in Slovenijo ter še globlje utrditi njun medsebojni oziroma medsosedski odnos. His Excellency Paolo Trichilo is the newly appointed Italian Ambassador to Slovenia. With him, we talked about his first impressions of staying in our capital city, his tasks and plans on how to even further connect both countries and strengthen their neighborly relations. Ljubljana

I ntervju Kakšen je vaš prvi vtis o Ljubljani? Moj prvi vtis o mestu v mojih prvih treh mesecih bivanja tukaj je bil zelo pozitiven, saj je kakovost življenja zelo visoka, mesto pa turistom prijazno in dobrodošlo. Preureditev mestnega središča v veliko območje, namenjeno samo pešcem, je velik napredek, ki je Ljubljano napravil zelo prijetno. V Mestnem muzeju sem videl fotografije mesta, še preden so bile te spremembe uvedene in razlika je osupljiva. Tam, kjer so bila nekoč parkirišča, se zdaj lahko svobodno gibljemo, hodimo in to je dober zgled vsem evropskim mestom. Tudi nagrada “zelena prestolnica Evrope 2016” je zelo zaslužna, saj je Ljubljana, na primer, evropska prestolnica z najvišjo stopnjo recikliranja. To pa pomeni, da so strukturne spremembe uvedene v veliko korist prebivalstva.

Ali vam je že uspelo obiskati tudi druge predele Slovenije? Kateri vam je najljubši? Kako bi opisali Ljubljano (in Slovenijo) svojim prijateljem? Doslej sem obiskal prikupno primorsko regijo z dvojezičnimi občinami, kot so Koper, Izola, Piran in Ankaran, in tudi druge kraje ob meji z Italijo, in sicer Novo Gorico, Kobarid in Tolmin, ki je prejel naziv “alpsko mesto leta 2016”. Obiskal sem tudi druge lepe kraje s čudovito kulturno dediščino, kot so Novo mesto, Radovljica, Slovenske Konjice. A to je šele začetek. V preteklosti sem lahko obiskal skoraj vse kraje države,

Všeč mi je zgodovinsko središče z lepimi izkušnjami sprehoda ob Ljubljanici in gradu, vendar cenim tudi druge predele mesta, kot je Metelkova. Kateri del mesta vam je najbolj všeč? Ste že odkrili svojo najljubšo restavracijo in jed? Očiten odgovor na prvo vprašanje je zgodovinsko središče z lepimi izkušnjami sprehoda ob Ljubljanici in gradu, vendar cenim tudi druge predele mesta, kot je Metelkova, kjer so muzeji in kulturna središča nadomestili nekdanje vojašnice. Prav tako uživam na kolesarskih in tekaških stezah v mestu in njegovi okolici, ki nam omogočajo dobrobit zelenega okolja, kot tudi v parku Tivoli in na Rožniku, kjer se počutim, kot če bi bil na gorskem trekingu v nekem daljnem kraju. Kar pa zadeva drugo

velike kot Indija, in ne dvomim, da ne bi tudi tokrat obiskal celotne Slovenije, še preden jo zapustim. Svoje prijatelje sem že povabil, da pridejo in obiščejo to lepo, zeleno, inovativno državo, ki je tako bogata s kulturno raznolikostjo in dediščino. Katere so osnovne naloge na začetku vašega mandata? Moja glavna naloga je še bolj utrditi odlične dvostranske odnose med Italijo in Slovenijo na vseh ravneh. Italija je druga trgovinska partnerica Slovenije in četrta vlagateljica kot tudi prva partnerica pri turističnih prilivih. Na kulturni ravni je Slovenija Ljubljana

dvajseta država na svetu z absolutnim številom študentov italijanskega jezika (1/140 prebivalcev). Poleg tega je, po podatkih Eurobarometra, italijansko govorečih približno 8 odstotkov Slovencev. Kar se tiče akademskega sodelovanja, je med Italijo in Slovenijo sklenjenih približno 50 meduniverzitetnih sporazumov. Tudi prisotnost avtohtone italijanske skupnosti v Sloveniji in avtohtone slovenske skupnosti v Italiji je bogastvo za obe državi in pomemben dejavnik za krepitev našega prijateljstva. Na katerih področjih bi lahko Italija in Slovenija še tesneje sodelovali? Menim, da bi bil napredek lahko narejen predvsem v infrastrukturnem in prometnem sektorju. Medtem ko so cestne in avtocestne povezave najsodobnejše, so železniške povezave nezadostne. Tudi sodelovanje med severnojadranskimi pristanišči, zlasti med Koprom in Trstom, je treba nadgraditi, če želimo prestreči trgovske tokove iz Azije in ustvariti takšen položaj, ki bi koristil obema, še posebno v luči razširitve Sueškega prekopa. Če ti dve pristanišči ne bosta vzpostavili dobre železniške povezave in enotnega pristopa do azijskih podjetij, se bojim, da ne bomo mogli biti konkurenčni v odnosu do pristanišč severne Evrope. What is your first impression of Ljubljana? My first impression of the city during my first three months here has been extremely positive, since the quality of life is very high and the city is very welcoming and tourist-friendly. The transformation of the city centre into a large pedestrian zone is a great progress that has rendered Ljubljana


I nterview very enjoyable. In the City Museum of Ljubljana I have seen photographs of the city before these alterations and the difference is striking; where you once had parking lots you can now walk freely and this sets an example for all European cities. The Green European Capital award for 2016 was also well deserved, since, for instance, Ljubljana ranks the highest among European capitals in terms of recycling. The structural changes introduced have greatly benefited the Ljubljana residents.

Have you managed to visit other parts of Slovenia? Which one is your favorite? How would you describe Ljubljana (and Slovenia) to your friends? So far I have visited the lovely Primorsko region with its bilingual municipalities of Koper, Izola, Piran and Ankaran, as well as other towns located along the border with Italy, namely Nova Gorica, Kobarid and Tolmin; the latter received the title of the Alpine Town of 2016. I have also visited other beautiful places rich in

The part of the city that I like the most is the historical city centre, which provides one with the pleasant experience of strolling along the river Ljubljanica, and the Ljubljana Castle. However, I also appreciate other places, such as Metelkova. Which part of the city do you like the most? Have you discovered your favorite restaurant and food yet? As to the second question, as a vegetarian, I appreciate that there is an ever wider choice of vegetarian and vegan food for people that wish to follow their dietary or moral preferences.

I have already invited my friends to come and visit this beautiful, green, innovative country, so rich in cultural diversity and heritage. What are the primary tasks at the beginning of your mandate? My primary task is to further consolidate the excellent bilateral relations between Italy and Slovenia on all levels. Italy is the second-largest trading partner of Slovenia and its fourth investor, in addition to being its first partner in tourist inflow. On the cultural level, Slovenia is the 20th country in the world in terms of the absolute number of students of the Ljubljana

Italian language (1/140 inhabitants). In addition, Italian is spoken by about 8% of Slovenians according to Eurobarometer. As for the academic collaboration, there are almost 50 inter-university agreements between Italy and Slovenia. The presence of the autochthonous Italian community in Slovenia and of the autochthonous Slovenian community in Italy represents great enrichment for both countries and is an important means of strengthening our friendship. Which areas of cooperation between Italy and Slovenia could be improved even further? I believe progress could be made in the infrastructure and transport sectors. While the road and highway connections are state of the art, the railway links are insufficient. The cooperation between the North Adriatic ports, in particular between Koper and Trieste, should also be upgraded if we want to intercept the trade flows from Asia in a win-win situation, especially in the light of the widening of the Suez Canal. If the two ports do not establish good railway connections topped with a unified approach towards the Asian companies, I am afraid they will not be able to compete vis-Ă -vis the North European ports.

Ljubljana Festival Eden najstarejših in najpomembnejših poletnih festivalov v Evropi bo v svoji 64. ediciji postregel z mnogimi glasbenimi in plesnimi predstavami. Številne predstave na prostem bodo širši množici približale dela vrhunskih izvajalcev. Že otvoritveni dogodek je postregel z zvezdnikom svetovnega kova. Basbaritonist Erwin Schrott je skupaj z argentinsko sopranistko Jaquelino Livieri poskrbel za nepozabno predstavo.

Večeri opere, solistov, orkestrov in dirigentov Festivalsko dogajanje se je začelo v znamenju opere o ljubezni. Izvajalca sta si oder delila z mogočnim zvokom združenih filharmoničnih orkestrov iz Zagreba in Ljubljane, pod taktirko vse bolj prepoznavnega italijanskega dirigenta mlajše generacije, Francesca Ivana Ciampe. Ob Erwinu Schrottu in Jaquelini Livieri pa bodo zanimive operne večere ustvarili še tenorist Piotr Bezcała ter dve predstavi Verdijevega Otella, v katerih bosta v naslovni vlogi gostovala slovita José Cura in Walter Fraccaro. Festival bo med drugim gostil veliko svetovno priznanih orkestrov in dirigentov, kot so Londonski simfonični orkester, Kraljevi orkester Concertgebouw iz Amsterdama ter kitajski Simfonični orkester Shenzhen. Na festivalu bomo lahko prisluhnili še priznanim solistom – pianistoma Simonu Trpčeskemu in Denisu Macujevu, violinistom Lani Trotovšek, Dmitryju Sitkoveckemu, Janezu Podlesku in Sergeju Krylovu ter basistu Grigoryju Soloviovu.

Pester program za sproščeno poletje Za sproščeno poletno dogajanje bosta poskrbeli gledališki predstavi Pilade v izvedbi La MaMe iz New Yorka in Tako je govoril Zaratustra z Anton Podbevšek teatrom in skupino Laibach. Slednja se bo festivalskemu občinstvu predstavila tudi na koncertu s Simfoničnim orkestrom RTV Slovenija. Kitajsko nacionalno operno in plesno gledališče bo gostovalo z baletom Konfucij, SNG Opera in balet Maribor pa z baletom Gusar. Za bolj sproščeno vzdušje bosta poskrbela večer flamenka Vida! in romsko obarvana plesna predstava Sisi iz Budimpešte. Nastopili bodo še litovski komorni orkester, ruski plesni ansambel Beriozka, Vlado Kreslin in drugi. Med bogatim kulturno-umetniškim programom festivala bodo potekale tudi 19. mednarodna likovna kolonija in številne ustvarjalne delavnice za otroke, prvič pa se bodo dogodki vrstili tudi na Ljubljanici. Muzikala bosta letos v znamenju ponovitve izjemno uspešnega Cvetja v jeseni ter slovenske izvedbe muzikala Mamma Mia!. Na Ljubljana festival se vrača Akademski državni balet Borisa Eifmana iz Sankt Peterburga z baletno predstavo Up and Down, s katero se bo 13. septembra letošnji festival tudi zaključil. Ljubljana

L jubljana F estival The 64th Ljubljana Festival, one of the oldest and most important European summer festivals, promises a wide selection of musical and dance performances. Numerous open air performances will acquaint the wider crowd with the work of top performers. The opening event itself was hosted by a world-class star, the bass-baritone Erwin Schrott. Accompanied by Argentinian soprano singer Jaquelina Livieri, he delivered an unforgettable performance.

Evenings of opera soloists, orchestras and conductors The Festival opened with an opera about love. The Uruguayan bass-baritone Erwin Schrott and the Argentine soprano Jaquelina Liveri shared the stage with the powerful sound of the combined philharmonic orchestras of Zagreb and Ljubljanaconducted by a young rising star, Italian conductor Francesco Ivano Ciampa. Furthermore, there will be interesting opera evenings created by a Polish tenor Piotr Bezcała. Also, there will be two performances of Verdi’s Otello, which will be in the title role shared by two famous star names. First role will be interpreted by the Argentine singer, composer, conductor and producer José Cura, while the following day the role will be sung by the Italian tenor Walter Fraccaro. The festival will also host many world-renowned orchestras and conductors, namely the London Symphony Orchestra, the Royal Concertgebouw Orchestra of Amsterdam and the Shenzhen Symphony Orchestra. The festival will also host the renowned soloists Simon Trpceski, Denis Macujev, Lana Trotovsek, Dmitry Sitkovetsky, Janez Podlesek and Sergej Krylov, Grigory Soloviov and others

Diverse programme for relaxed summer For relaxed summer festival events, there will be a theater play Pylade performed by La MaMa Experimental Theatre Club and Thus Spoke Zarathustra by Anton Podbevšek Teater with the music group Laibach. The latter will introduce itself to the festival audience at a concert with the RTV Slovenia Symphony Orchestra. China National Opera and Dance Drama Theatre will perform the spectacular dance performance Confucius, while Opera and Ballet ensemble of the Slovene National Theatre Maribor will perform The Corsair, romantic ballet in three acts. For even more relaxed atmosphere there will be an evening of flamenco Vida! and the gypsy colored dance performance Sisi from Budapest. The concert will feature the Lithuanian Chamber Orchestra, the Russian dance ensemble Beriozka, Vlado Kreslin and others. The rich cultural and artistic programme of the festival also includes the 19th International Fine Arts Colony and many creative workshops for children. For the first time, the events will take place at the Ljubljanica River. This year too, musical will be marked by the recurrence of extremely successful Flowers in Autumn and the Slovenian version of the musical Mamma Mia!. Its history dates back 120 years, to when Jožef Čad first opened a wine shop here. he wine shop soon grew into a restaurant serving traditional dishes that was very popular with the townspeople before and after the war. In the 1960s, the restaurant expanded its menu to include classic grill dishes, which led to a further boom in popularity. Even today, the Čad Restaurant still has the soul of a true, traditional restaurant, where every guest is greeted with warmth and enthusiasm. In the summer heat, you can enjoy your lunch in the shade of the hundred-year-old chestnut trees, while the children can run around the large children’s playground. In the winter, you can relax in the warm dining room with a real fireplace. The main staple of the restaurant is barbecued food, prepared on a traditional grill over real charcoal – something Čad is famous for. Restavracija As, As Aperitivo in Pop‘s Place Pop‘s Place na Cankarjevem nabrežju je bil pravzaprav logično nadaljevanje As Aperitiva, As Aperitivo logično nadaljevanje Gostilne As, vse tri izpostave dinastije Raspopović pa vzorčni primer, kako se peče meso. Če si tiste konkretne steake v Asu lahko privoščijo le izbranci, pa je že tagliatta zorjenega kraškega goveda v bistrojskem As Aperitivu cenovno dostopnejša. Še bolj sta se Raspopovića ljudstvu odprla s Pop‘s Placeom, ki je ravno pravi čas zajahal val manije burgerjev in mikropivovarjev pri nas. V verjetno najbolj napolnjenem lokalu pri nas tako nudijo lep nabor butičnih piv in izjemne sočne burgerje, za katere je recepte prispeval »ameriški« Slovenec Greg Yurkovich. Seveda v ponudbi ne manjkajo niti slastna marinirana rebrca. Pop’s Place at Cankarjevo nabrežje (the Cankar Embankment) was actually a logical continuation of As Aperitivo, which was in turn the logical continuation of the As Restaurant. All three branches of the Raspopović dynasty are a good example of how to properly roast meat. If only the chosen ones can afford the thick steaks at As, the aged Karst beef tagliatta at the As Aperitivo bistro is available at friendlier prices. The Raspopovićs have opened themselves to the people with Pop’s Place, which caught the wave of burgermania and microbrewers in Slovenia at just the right moment. At probably the busiest pub in Slovenia, they offer a nice array of boutique beers and incredibly juicy burgers. The recipe for the latter was contributed by the »American« Slovenian Greg Yurkovich. Of course, their offer also includes delicious marinated ribs.

Tabay Brothers Za nekatere sta makedonska brata Marko in Tomislav, ki sta svoj lokal na Gosposvetski odprla lani, koncept burgerjev še nadgradila. Sta namreč edina, ki burgerje delata po metodi sous vide, preden jih na hitrico zapečeta. Uporabljata samo slovensko meso, a ga ne zorita. Sama pečete tudi bombetke in delata pomake, na meniju pa so zgolj in samo burgerji. In še en plus – za razliko od konkurence stane njun najdražji burger pičlega 5,60 evra.

Some say that the Macedonian brothers Marko and Tomislav, who opened their pub at Gosposvetska Street last year, have also upgraded the concept of burgers. G ourmet Sorbara Steak House Erik Sorbara je Steak House na Gallusovem nabrežju odprl potem, ko je vrsto let uspehe žel že s Špajzo. In nekateri pravijo, da se najboljši steaki v mestu dobijo prav pri njih. Seveda imajo tudi burgerje iz angusa in tatarce, novozelandskega jagenjčka, testenine z raguji in kopunčke, a v Sorbaro se v prvi vrsti pride na steak. No, pa na Klinčev 36 mesecev zorjen pršut z Brd za predjed. Erik Sorbara opened his Steak House at Gallusovo nabrežje (the Gallus Embankment) after he took the glory with his Špajza for years. Some people say that this is the place to get the best burgers in town. Of course, they also have Angus burgers and tartare steaks, New Zealand lamb, pasta with ragùs and capons, but Sorbara is primarily the place to eat an excellent steak. Well, perhaps also a starter in the form of Klinec’s 36-months aged prosciutto from Goriška Brda (the Gorizia Hills).

Rodizio do Brasil Seveda smo na neki točki kot prava metropola morali dobiti tudi brazilsko restavracijo. Rodizio do Brasil je zavohal tržno nišo in leta 2014 odprl lokal, v katerem za fiksno ceno 25 evrov dobite deset vrst mesa. Seveda, saj imajo tam zadaj nekje tudi samopostrežni solatni bar, a v Rodizio se pride na meso, na churrasco, kot pravijo tovrstnemu mesnemu žaru v deželi sambe. Vrste mesa v izboru rotirajo, boste pa zagotovo dobili kak dober kos govejega fileja, začinjeno klobaso, svinjska rebrca, jagnjetino, zarebrnico, občasno celo piščančje srčke.

Rodizio do Brasil discovered this marketing niche and opened a pub in 2014, where you can get ten types of meat for a fixed price of 25 euros. Out there somewhere is a self-service salad bar as well, however one comes to Rodizio to enjoy meat, the churrasco, as they call grilled meat in the land of Samba. The types of meat vary, but you will surely get a nice piece of beef fillet, a spicy sausage, pork ribs, lamb, chops and sometimes even chicken hearts.

As velja za eno najboljših restavracij pri nas, za kar se ima v veliki meri zahvaliti tudi šefovemu nastopu in življenjski sli. No, pa tudi prelepa zelena terasa sredi mestnega središča ne škodi. As is considered one of the best restaurants in Slovenia, mostly thanks to the chef’s approach and lust for life. I ntervju »Vse velike stvari se rodijo iz nič,« razlaga svojo pot od carinika do prvega gostinca Ljubljane Pope, ki je osebnost z veliko začetnico. Tak, ki s svojo karizmo napolni prostor in naredi iz obeda doživetje. As je institucija tudi zato. Seveda brez vrhunskih surovin ne bi šlo – kot maslo mehke mesnine so iz mangalice ali krškopoljca, meso zori po več tednov, da je vsaka rezina rostbifa prava zakladnica okusov, rakovice dobiva z Aljaske, črno polenovko iz Severnega morja, brancini so divji, škampi jadranski, rižote in testenine pa take, da ga Italijani sprašujejo, v čem je skrivnost. Skrivnost je v bistvu zelo preprosta – manj je več. Pope svoje krožnike gradi na eni osnovni surovini, naj bo to riba ali meso – dva Asova stebra, a mora biti oboje nadstandardno, polno okusa divjine, morja ali pašnikov. Ribi doda zgolj minimalno količino dodatkov – poper, solni cvet, butično istrsko oljčno olje, vejica rožmarina. »Kaj vidi riba, ko pogleda iz vode? Oljke in trte! To je to. Dobra riba več od soli, olja in vina v kozarcu ne potrebuje,« trdi Pope, ki zavrača redukcije, sofisticirane omake in večurno kuhanje fonda. V njegovi hrani pride do izraza esenca. »Pope je filozofija, ne krožnik!« pravi starosta slovenskih gostincev, ki je vedno znal biti korak pred ostalimi. Pa naj bo to leta 1998, ko je odprl As, leta 2010, ko se je povezal z Ano Roš in na »zakleti« grajski lokaciji odprl Gostilno na gradu s slovenskimi jedmi, leta 2011, ko je Asu dodal bistrojski As Aperitivo, ali pa lani, ko je s sinom Sebastijanom odprl Pop‘s Place s craft pivi in gurmet burgerji – danes najbolj oblegano lokacijo na Cankarjevem nabrežju. Raspopovića sta v ZDA nenehno

na sledi za najnovejšimi dognanji v svetu burgerjev in steakov, da pa bi As nudil res samo najbolj prvovrstno mesovje, je Pope najel italijanskega skavta, ki mu išče vrhunsko govedo. »Smo prva taka restavracija, kot jaz vem. Takega človeka ima samo še Vatikan,« zatrdi suvereno. Pope ne izgublja časa z lažno skromnostjo – je neposreden, samozavesten, trdno prepričan v svoje. V gostinstvo je šel iz zelo preprostega razloga: ker se rad druži z ljudmi in jih pogosti, v kar vlaga izjemno veliko energije. »Moj dan se začne na Krasu, v mojih vinogradih, na konju. Cel dan si polnim baterije, se pripravljam in se veselim rezervacij, da lahko potem zvečer tri ure dam celega sebe gostom, jih že ob vhodu napadem s svojo blago agresijo, z voljo do življenja in jim ponudim, kar imam najboljšega tisti dan – ne zato, da jim vzamem denar, ampak da pridejo še enkrat,« razlaga. Svoje delo opravlja s srcem, se pa zaveda, da je njegov značaj velik del Asovega draža. »Človek brez karizme je takoj manj zanimiv – to ne velja samo za gostince, velja tudi za športnike, politike …,« pripoveduje in postane v svojem zagonu samo toliko, da pomigne natakarju, da prinese steklenico njegove zrele, macerirane malvazije. »Zdi se mi ključno, da imam svoje vino, vino z močnim karakterjem, ki diši po meni.« Pope govori o svoji Amfori, malvaziji s Krasa, ki je ležala na tropinah osem mesecev, v hrastovih sodih tri leta in še leto v steklenici. Vino, ki ima nedvomno ogromno karakterja. »Odloži vilice! Zagrabi ribo s prsti, da je v stiku s tabo!« mi ukaže, ko skušam nabosti sočen bel kos divjega brancina. Raspopović ga dela po Ljubljana

svojem receptu: trebuh mu napolni z rožmarinom, obda ga v ovoj iz moke in soli, speče na živem ognju, filira pred gostom, nato pa na kose vehementno meče zrnca piranske soli. Ubogljivo med prste stiskam kose ribe, ocvrto rukolo in popečene gomoljnice, medtem ko mi po rokah mezi oljčno olje. »Velikokrat se sprašujem, kaj pomeni biti gostinec. Imeti restavracijo ni dovolj, ta poklic moraš opravljati z radostjo. Biti restavrater je način življenja,« sklene Pope, ki je z mislimi že pri svojem naslednjem projektu – družinskem hotelu Sophia AS, imenovanem po njegovi pokojni mami. Butični hotel bo zgrajen nad restavracijo, z 39 sobami, razgledom na grad in park, z bazenom na terasi in – tako obljublja Pope – najboljšim zajtrkom v Evropi. Držimo ga za besedo.

»All great things are born out of nothing,« says Pope about his life path from a customs officer to becoming the best caterer in Ljubljana. He truly is a remarkable figure. He is a person who fills the room with his charisma and turns a meal into an adventure. This is also one of the reasons why As is an institution. Of course, he could not do it without superior ingredients. The meat products, as soft as butter, are either from Mangalica or Krškopolje pigs. The meat is aged for several weeks so that each slice of roast beef is a real treasure. The crabs are from Alaska, the black cod from the North Sea, the sea bass is wild, the shrimps are from the Adriatic and all of his risottos and pasta are so good that even the Italians ask him about his cooking secrets. The secret is actually very simple – less is more. Pope builds his dishes on one basic ingredient, which is either fish or meat, the two pillars of As. However, both need to be of the highest standard, full of the taste of the wild, sea or pastures. Then he adds a minimum quantity of pepper,

In order to offer only the best prime meat in As, Pope hired an Italian scout, who searches for first class cattle. »We

I recharge my batteries for the entire day, make preparations and look forward to reservations, so that I can dedicate my whole self to the guests in the evening for three hours, attack them with my slight aggression and my will to live at the entrance and offer them the best of the day – not because I want their money, but because I want them to come back,« he explains. P anorama Letališče Lesce Lesce Airport Doživite pogled na bisere slovenske pokrajine iz ptičje perspektive – Blejsko jezero z otokom, Bohinj s slikovitimi hribi, ki ga obdajajo, mogočni Triglav in slikovita Ljubljana so iz zraka videti tako blizu, da bi se jih lahko dotaknili z roko. Letališče Lesce leži nedaleč od Bleda in ravno zaradi svoje izjemne lege predstavlja odlično izhodišče za športno in jadralno letenje ter panoramske polete. Travnike so najprej uporabljali vojaški piloti, pred več kot 70 leti, ko je v Lescah začel delovati Republiški jadralni center, pa so tam uredili prvo travnato letališko stezo za športno letalstvo. Že leta 1954 je z letališča Lesce poletel prvi aero taksi. Izkušeni piloti tako potnike največkrat popeljejo na 15-minutni polet do Bleda, polurno popotovanje do Bohinja in seveda skoraj urni polet do Triglava. V sodobnem letalu seveda lahko poletite tudi drugam – pogled na prestolnico je za marsikoga prav tako preprosto osupljiv. Letališče v Lescah je v zadnjih letih vse bolj priljubljeno tudi za tiste, ki raje ostanejo na trdnih tleh in s prijetne terase nove restavracije uživajo v pogledih na podvige mojstrov letenja. Gostilna Čubr – preplet tradicije in sodobnosti The inn Čubr – a combination of tradition and modernity Začetki gostilne segajo v davno leto 1754. Prvotni lastniki sicer niso bili njihovi predniki, a od takrat se je ohranilo ime Čubr. Gostilna ne tako zelo daleč od prestolnice, v vasi Križ pri Komendi, velja za eno prestižnejših na gorenjskem koncu. Bolj kot po jedeh iz stalnega jedilnika so znani po degustacijskih menijih in različnih dobrotah, ki se spreminjajo z letnimi časi. Izvrstna ponudba se menja iz dneva v dan, zato naj nam ne bo nikoli odveč poklicati in povprašati, s katerimi specialitetami bodo postregli tisti dan. Postojnska jama - kjer živijo zmajevi mladički Postojna cave - where baby dragons live Fantastičen preplet rovov, galerij in dvoran, osupljiva pestrost kraških pojavov ter preprosta dostopnost so glavni razlogi za izredno priljubljenost in obiskanost Postojnske jame, ki je v 200 letih gostila že 36 milijonov obiskovalcev. Postojnska jama slovi kot ena najbolj raznolikih kraških jam na svetu. Nikjer drugje ni mogoče v enem samem jamskem sistemu občudovati tako velikega števila podzemnih kraških čudes. Le tu, v Postojnski jami, se lahko obiskovalci že dobrih 140 let podajo na vožnjo s posebnim jamskim vlakom, ki jih popelje pod veličastnimi podzemnimi oboki, skozi osupljivo pokrajino, posejano z igrivimi skulpturami iz apnenca. Postojnska jama je zibelka posebne veje biološke znanosti – speleobiologije. Najbolj znana med jamskimi živalmi je človeška ribica. To bledo in nadvse nenavadno bitje, ki v dolžino zraste tudi do 30 cm, je popolnoma slepo, živi v podzemnem svetu in lahko doživi tudi neverjetnih 100 let. Človeške ribice pa so od nekdaj burile ljudsko domišljijo. Po splošnem prepričanju naj bi šlo za zmajeve mladiče. Letos smo v Postojnski jami priča posebnemu dogodku, saj je v januarju človeška ribica izlegla jajčeca iz katerih se je doslej izleglo že sedemnajst mladih zmajčkov. Držimo pesti zanje!

White Hall in Postojna Cave A fantastic web of tunnels, passages, galleries and halls, the astonishing diversity of Karst features as well as easy access are certainly the main reasons for such popularity of the cave and a large number of visitors, which has already reached 36 million in 200 years. Postojna Cave is the heart of the picturesque Slovene Karst. It was discovered in all its grandeur in 1818 by Luka Čeč, one of the locals – before his discovery only a very small part of it had been known. A proper underground kingdom revealed itself in front of his eyes, and the cave system of more than 24 kilometres in length with the most wonderful cave formations thus got its first admirer. He called out enthusiastically to his companions waiting outside: »Here is a new world, here is paradise!« Postojna Cave is today famous for being one of the most diverse karst caves in the world. Nowhere else is it possible to admire so many different subterranean karst wonders in a single cave system. Nowhere else but here, have visitors for 140 years been able to take a ride with a special cave train which takes you Ljubljana

around under magnificent underground arches, through an amazing landscape dotted with playful limestone sculptures. Postojna Cave is the cradle of a special branch of biology – speleobiology. This new science was born in the year 1831, when the Slendernecked Beetle (Leptodirus hochenwartii) was discovered in the Postojna Cave by Luka Čeč, a local of Postojna. Not long after, explorers discovered and recorded tens of new animal species adapted to the conditions inside the cave to such an extent that they are unable to survive outside of it. The most know among them is Proteus (also known as the olm). This pale and highly unusual creature can grow up to 30 centimetres in length, it is completely blind, lives in the subterranean world, even up to incredible 100 years. The olm has always excited people's imagination. People used to believe that olms were the dragons' offspring. Since the beginning of this year, we have been witnessing a special event taking place in Postojna Cave – in January, one of our olms laid eggs, from which seventeen baby dragons have hatched so far. Let's keep our fingers crossed for them!

Sistem je zasnovan v skladu z načeli trajnostnega sobivanja in je med prvimi v Evropi, razvilo pa ga je podjetje Avant car ob podpori podjetja Comtrade in drugih partnerjev. At the end of June, a new vehicle sharing system was presented – the Avant2Go electric »car sharing« model using exclusively electric vehicles. The system is designed in line with sustainable co-existence principles, is one of the first in Europe and it was developed by the Avant Car company with the support of the Comtrade company and other partners.

Naziv ima za Ljubljano velik pomen, saj jo uvršča na evropski in svetovni zemljevid trajnostnih mest, hkrati pa je edina zelena prestolnica v osrednji in jugovzhodni Evropi. V sredo, 22. junija, je na slavnostni prireditvi v Ljubljani Evropska komisija izbrala zeleno prestolnico Evrope 2018. Naziv je prejelo nizozemsko mesto Nijmegen. Zapomnili si jo bomo po velikem navdušenju nad kolekcijami domačih in tujih modnih oblikovalcev, modni razstavi ob 50-letnici ustvarjanja ikone slovenskega oblikovanja Marjete Grošelj, premiernem obisku svetovno znane manekenke Petre Nêmcove ter dih jemajoči modni instalaciji Alberte Ferretti. Ustvarjalna ekipa pod vodstvom Saša Radoviča že snuje in napoveduje jesensko nadaljevanje modne zgodbe.
