I ntervju Koliko časa živite v Ljubljani? Sem rojena Ljubljančanka, tako da zdaj pa že kar dolgo.

How long have you been living in Ljubljana? I was born in Ljubljana, so it has been a while.

Kateri del mesta imate najraje? Vedno sem trdila, da nikoli ne bi živela v Šiški, zdaj pa sem naravnost zaljubljena v Mostec, ker nikjer nisi tako blizu mestnega jedra, pa hkrati v naravi. Tudi ne moreš imeti izgovora, da nimaš časa za tek – enostavno obuješ superge in akcija.

What is your favourite part of the city? I always said I would never like to live in Šiška, but these days I just love Mostec, because there is nowhere else where you can be so close to the city centre and the countryside at the same time. There is also no excuse not to go running; just put your sneakers on and go.

Vaša priljubljena kavarna, restavracija in hrana? Zvezda Bistro, Cubo, DaBuda, Sushimama. Sem bolj človek trenutka in občutka, zato se ne navdušujem le nad eno vrsto hrane, pijače, zabave. Odvisno pač od razpoloženja.

Your favourite cafe, restaurant and food? Zvezda Bistro, Cubo, DaBuda, Sushi Mama. I live by the moment and by the whim, so I am not enthusiastic about a single type of food, drink or pastime. It depends on my mood. How would you describe Ljubljana in short to your friends abroad? A small capital with a soul. It has everything larger cities have, but the quality of life is better here due to the population density. There is also this unexplainable energy that cannot be described, only felt. You connect entrepreneurs from two different but successful countries.

Kako bi prijateljem iz tujine na kratko opisali Ljubljano? Mala prestolnica z veliko dušo. Ima vse, kar imajo veliki, pa vendar je kakovost življenja zaradi zgoščenosti večja. Ima tisto energijo, ki se je ne da opisati in pojasniti, saj jo je treba začutiti.

What advice would you give to young entrepreneurs who are at the start of their professional journey? Entrepreneurship does not involve luck alone, but mainly a lot of work and dedication. Anything is possible; every challenge can be solved, what is required is one’s belief in themselves and to work for a higher purpose than, for example, just a new car. The work should be made sense of, because then you will no longer consider it work, only “fun”. This advice however comes with the warning that this “entertainment” must be well prepared and carried out. As a society, we must support enterprising people and wish them more success.

Povezujete podjetnike dveh različnih, a uspešnih držav. Kaj svetujete mladim, ki se šele podajajo na poklicno pot? Podjetništvo ni zgolj sreča, ampak predvsem veliko dela in predanosti. Vse je mogoče, vsak izziv rešljiv, potrebno pa je verjeti vase in predvsem delati za nekaj več kot na primer za nov avto. Delo si je potrebno osmisliti in potem nikoli ne delaš, temveč se preprosto »zabavaš«. Seveda z opozorilom, da morajo biti »zabave« dobro pripravljene in oddelane. Kot družba pa moramo podpirati podjetne in jim želeti še več uspeha. Predlog za enodnevni izlet po Sloveniji? Odvisno od letnega časa. Dve možnosti: Ljubljana, Radovljica, Bled ali Ljubljana, Postojnska jama, Lipica, Piran – za tiste, ki Slovenije še ne poznajo. Ostalih možnosti pa je neskončno, saj zeleno vedno prepriča.

Do you have a proposal for a one day trip around Slovenia? Depends on the time of the year. There are two options: Ljubljana, Radovljica, Bled. Or Ljubljana, the Postojna Cave, Lipica, Piran, for those not yet familiar with Slovenia. There are numerous other options, because green is always the right colour.

Če bi lahko – kaj bi spremenili oziroma naredili v Ljubljani? Všeč mi je dobra vibra.

If you could - what would you change or create in Ljubljana? I like a good vibe.

Vizija Ljubljane čez 100 let? Mesta bodo zagotovo popolnoma drugačna. Želim si, da bodo tudi moji pra…vnuki lahko uživali v zeleni Ljubljani. Naj postane velika prestolnica z neskončno dušo.

Na prireditvi so zbrali 3.010,00 € za humanitarno medicinsko odpravo šestih študentov medicine, ki bodo v letu 2015 odšli v Zambijo. As we have seen, besides traditional white, grey and light brown, the latest fashion trends bring a combination of the most daring colours such as green, blue, violet and red. Also fashionable is combining various textures.

The new, young creative generation that is taking over the family trade with an impressively long tradition is interweaving fresh young ideas with the experience and knowledge of its predecessors and thus approaches new customers while continuing the remarkable family tradition. This year’s fashion show also featured a charity drive, as is tradition. At the event, €€3,010.00 was collected for a humanitarian medical expedition to Zambia in 2015 for six students of medicine.

How They Used to Dance in Ljubljana

Pričevanj o plesih v Ljubljani je veliko, saj se je ta oblika družabnosti skozi stoletja razvijala hkrati z mestom. Plesali niso le na prostem, pod lipo, temveč tudi v posebnih plesnih prostorih in na med seboj povezanih čolnih, ki so pluli po Ljubljanici. There are many testimonies about dancing in Ljubljana since this form of socialising developed over the centuries of the city‘s development. Dances were not only held outdoors under lime trees but also in special dance halls and on connected boats sailing dr. Janez Bogataj Mediaspeed on the Ljubljanica River. V obdobju cesarice Marije Terezije se je plesna dejavnost v mestu razvijala z javnimi plesi na mestnem strelišču, v stanovskem gledališču in redutni hiši, ki so jo l. 1774 pozidali na mestu dela nekdanjega jezuitskega samostana. Redutna hiša je bil večji prostor za plese in zabave, v katerem se je lahko zbralo tudi več kot 400 oseb. Predvsem so bile priljubljene predpustne plesne redute, med njimi tu-

G ala ponke v obliki stiliziranih cvetov, in želja vsakega plesalca je bila, da jih je zbral čim več. Že pred postavitvijo redutne hiše so prirejali plesne zabave tudi v mestnem »balovžu« (iz nem. Ballhaus), dvorani, kjer so med imenitne plesne predstave pogosto vpletali tudi razne igre z žogami, npr. sabljanje. Iz nemške besede za žogo (Ball) tako izvira tudi poimenovanje za ples – »bal«. V drugi polovici 18. stoletja so plesno dejavnost v mestnem »balovžu« opustili, nanjo pa spominja le še ime mestne ulice, in sicer Igriška (prvotno Ballhausgasse). Po izgradnji elitnega hotela Union, l. 1905, so začeli prirejati tudi znamenite ljubljanske Unionske plese. Popularni so bili zlasti silvestrski in v predpustnem času, tradicijo iz predvojnega obdobja pa ima še vedno tudi popularni rotarijski ples.

Veliki rotarijski ples di t. i. črno-bela reduta, ki je bila elitni ples v maskah in oblačilih črne in bele barve. Ta oblika plesa, razvita predvsem v 19. stoletju in do začetka 2. svetovne vojne, je bila povezana le s pisnimi povabili – v redutno hišo so namreč zahajali predvsem premožnejši meščani. Na področju organizacije plesov so veljala splošna pravila oziroma red. Plesno obdobje se je začelo takoj po novem letu ali treh kraljih in je trajalo do pusta. V tem času so se v mestu zvrstili najrazličnejši, tudi tematski družabni plesi, ki so jih prirejala društva in organizacije. Na plesih sta veljala plesni red in plesni bonton. Plesni red, ki je zelo podrobno določal tudi pravila za plese v maskah, je Ljubljana dobila l. 1773. Ti so bili lahko organizirani le v gledališki dvorani, na zasebnih prireditvah pa niso bili dovoljeni.

»Pudel-bal« Predpustni plesi so bili organizirani dvakrat tedensko od 9. ure zvečer do 3. zjutraj, v drugi polovici predpustnega časa celo do 5. ure zjutraj. Plesi so se razlikovali tudi po družbeni pripadnosti. Tako so imeli v predpustnem času svoje plese, imenovane »pudel-bal«, tudi »navadni« meščani. Med številnimi vrstami plesov, ki so se zvrstili v predpustnem času, so bili tudi študentski (danes dijaški) in akademski (danes študentski). Tudi na njih so veljala stroga pravila obnašanja. Dekleta so pogosto prihajala v spremstvu starejših poročenih dam, ki so skrbele za njihovo varnost in nadzirale njihovo druženje s fanti. Imenovale so se »garde dame«, vendar so jih dijaki in študentje zaradi njihove posebne vloge hitro preimenovali v »grde dame«. Dekleta so plesalcem podarjale kotiljone, tj. okrasne pri-

G ala During the reign of the Empress Maria Theresa of Austria, dancing in the city developed with public dances at the city shooting range, in the Estate Theatre and in the Dance Hall (redutna hiša), which was constructed in 1774 on the location of part of the former Jesuit monastery. The dance hall was a large room for dances and parties that could accommodate more than 400 people. Especially popular were the pre-carnival masquerade balls, including the Black-and-White Fancy Masquerade Ball. This form of dancing, which was especially popular in the 19th century and until the start of the Second World War, was an invitation-only event. The dance hall was mostly visited by the wealthier citizens. There was order and rules applied to the organisation of dances. The dancing period started immediately after New Year‘s or after the Feast of the Epiphany (Three Kings Day) and lasted until the carnival. During this time, the city also saw numerous thematic dance evenings that were organised by different associations

and societies. The dances were governed by dance order and etiquette. Ljubljana got its dance order in 1773, which also detailed the rules for masquerades. These could only be organised in the theatre hall and were not allowed at private events.

“Pudel-bal” Pre-carnival dances were held twice a week, from 9 pm to 3 am – or even until 5 am in the second half of the pre-carnival period. The dances also differed according to social stratum. In the pre-carnival time, even the so-called ordinary citizens held their dances. These dances were called Pudel Balls. Among the numerous dances taking place in the pre-carnival time, there were also student dances (secondary school student dances today) and academic dances (tertiary student dances today). These dances were also governed by strict rules of behaviour. The girls often came accompanied by older married ladies, who made sure they were safe and who chaperoned their communication with the boys. They were called

Novinarski ples 1956 Foto Svetozar Busić, hrani Muzej novejše zgodovine Slovenije “garde dame” (guarding ladies) but due to their special role, the students quickly renamed them “grde dame” (ugly ladies). The girls gave their dancers special cotillion pins in the shape of stylised flowers and every dancer wanted to collect as many of them as possible. Even before the Dance Hall was constructed, dance parties were held in the town “balovž” (from the German Ballhaus), i.e. a hall where various ballgames or even fencing were incorporated into the prominent dance shows. This is also the origin of the term „bal“ for dancing, i.e. from the German word ball (a ball). In the second half of the 18th century, dancing in the town “balovž” was abandoned and only the name of the street remained in its memory, i.e. Igriška (originally Ballhausgasse). After the elite Union Hotel was built in 1905, the famous Union Balls were organised – with the New Year‘s Ball and the pre-carnival ball proving especially popular, while the still popular Rotary Ball also dates back to pre-war times.

How long have you been living in Ljubljana? A little more than three years.

Malo več kot tri leta.

What is your favourite part of the city? Undoubtedly Rožna dolina, where I live. It is unique, peaceful and at the same time extremely close to the city. I very much like the view of the nearby forest, which changes with the seasons. In Ljubljana, I have become an enthusiast of both nature and sports. The Rožnik hill is an excellent opportunity for everyday exercise.

Kateri del mesta imate najraje? Nedvomno Rožno dolino, kjer živim. Je edinstvena, je mirna, hkrati pa izjemno blizu mesta. Pogled na bližnji gozd, ki kaže spremembe skozi letne čase, mi je zelo všeč. V Ljubljani sem postal navdušenec narave in športa. Rožnik mi nudi odlično vsakodnevno rekreacijo.

Where do you drink your best coffee? I do not have any experience with bad coffee, but my favourite is at Kavarna Zvezda in the Congress Square. I like the entire offer: coffee, service, ambiance, comfort, wonderful personnel and the healthy ingredients they have on their menu.

Kje spijete najboljšo kavo? Nimam izkušenj s slabo kavo, toda meni najljubša je tista v Kavarni Zvezda na Kongresnem trgu – vse skupaj: kava, postrežba, atmosfera, udobje, čudovito osebje ter zdrave sestavine, ki jih imajo v ponudbi.

Your favourite cafe, restaurant and food? You have plenty of good restaurants with resonant names that are believed to be good, but I must say that their quality is not always consistent. For me personally, the Hiša kulinarike Manna restaurant is excellent and never disappoints. Outside of Ljubljana, I was delighted by the Oštarija restaurant in Dolenjske toplice. In terms of Slovenian cuisine, I would like to point out štruklji, which I found were the best in Bohinjska Bistrica and Idrija.

Vaša priljubljena restavracija in hrana? Imate mnogo dobrih restavracij z zvenečimi imeni, ki veljajo za dobre, toda moram reči, da njihova kakovost ni konsistentna. Mestne delikatese in ribarnica so ponujale polenovke, namočene v škafih z vodo in bukovim pepelom. K božičnim večerjam in kosilom sodijo seveda tudi druge

praznične jedi, kot so npr. razne pečenke, različne vrste mesa z omakami, tudi pečene ali kuhane ribe in seveda sveže koline. Na mizah so pogosto še božični kruh in različne praznične sladice. Med slednjimi so potice in razne vrste piškotov. V nekaterih družinah za božič (in novo leto) še vedno pečejo več vrst potic, seveda tistih, ki so primerne za ta letni čas in praznike. To so orehova, lešnikova, mandljeva, medena, čokoladna, rožičeva, makova potica in potica z različnim suhim sadjem ali suhimi slivami.

The festive decoration of Ljubljana, the market stalls in festive December, numerous events, St. Nicholas and “Dedek Mraz” (Father Frost) processions, the excellent Christmas Cribs in the churches and more are only the external signs of the holiday experience that peaks on Christmas Eve and night and on the night of New Year’s Eve. Christmas celebration is still connected with two characteristic meals: the Christmas supper and the Christmas lunch. Both take place in family circles, also friends, and contain their own culinary ingredients.

However, there is an increasing tendency to prepare exceptional dishes. The desire for creativity is increasing and this can imbue us with an optimism that we have yet to completely fall into the hands of the holiday as a form of consumerism. In Ljubljana, there was a tradition before Christmas of cooking codfish with potato or “štokfiš”, which was quite a frequent Christmas evening dish. The city delicatessen and the fisheries provided codfish soaked in pails containing water and beech tree ash. Of course, other holiday dishes can also be served as Christmas dinners and lunches, such as various types of roast meat, various types of meat with gravy, even baked or cooked fish and of course fresh pork and sausages.

Tables often serve Christmas bread and various holiday confections. These include “potica” (nut roll) and various types of biscuits. In some families, they still bake several types of potica for Christmas (and New Year’s) – of course those that are suitable for the season and holidays. Celebrating the end of the old year and the entry into the New Year is something completely different. For this purpose, almost all catering establishments in the city organize various New Year’s celebrations and festive New Year’s eve dinners because, besides foreign guests, the majority of the inhabitants of Ljubljana include a visit to a concert and then dinner in one of the catering establishments as part of the celebration of the end of the year. The joint characteristic of the entire New Year’s Eve offer is of course related to culinary creativity, because the chefs make a special effort for this celebration and offer everything that demonstrates their top knowledge and skill. New Year’s Eve dishes thus cannot be described as any kind of constant or distinguished as characteristic of Ljubljana, because the majority interweaves international cuisine. If we were to adhere to the old rules, then the New Year’s Eve menus would contain pork, namely roasted pig heads, gammon or suitable roasted meat with side dishes. This is because an old rule says that we should never serve guests poultry for New Year’s, since these animals use their claws to scratch back into the old year, while swine use their snouts to push forward, thus figuratively into the new year. The New Year’s Eve table can thus contain pork meat and sausages, and after midnight the refreshing and “wholesome” sour soup, a strong goulash or even tripe in gravy. All the above fits well, because another hard year is behind us and we hope that the next one will be at least a bit better.

S soustanoviteljico in direktorico Sense Wellness Cluba, Andrejo Medvedič, smo se pogovarjali o njihovi prvi desetletnici ter obujali spomine o začetkih uspešne zgodbe. The idea and need for such a spa, which did not exist in Ljubljana at the time, was born based on her own needs and wishes. Let us remember some of the past winters that brought huge amounts of snow. These winters delighted the children but also brought worries and plenty of strenuous shovelling for adults.

Za zimo z največ snega v 20. stoletju velja tista v letih 1951/52, ki izstopa po izjemno obilnem sneženju. 28. januarja je opazovalec izmeril 53 cm, 15. februarja zjutraj, ob koncu močnega sneženja, pa je bilo snega že kar 146 cm. Zima je bila mrzla, saj se je temperatura spustila do –17 °C. Tudi v zimi 1968/69 je zapadlo veliko snega – četrt metra je zapadlo že sredi novembra, a je v nekaj dneh skopnel. V prvi polovici februarja je zopet obilno snežilo, tako da je bilo 17. februarja zjutraj skupaj 95 cm snega, kar je bilo v Ljubljani še vedno največ po februarju leta 1952. Zima je prinesla tudi zelo hladne dni, saj so bile jutranje temperature od 10. do 12. februarja med –10 in –16 °C. Ljubljana

N ostalgija Kot zanimivost – tisto leto je sneg prestolnico presenetil še 20. maja. V zimi na začetku 80. let prejšnjega stoletja, 1980/81, je sneg ležal najdlje, saj so bila tla s snežno odejo prekrita kar 120 dni. Prvi sneg, 30 cm, je zapadel že na začetku novembra. Posebno hudega mraza ni bilo, a vendar dovolj, da se je sneg obdržal kar do 9. marca.

Zime v novem tisočletju Kljub temu, da je bila zima 2005/06 ena najbolj zasneženih zim v zadnjih 100 letih, saj je bilo v Ljubljani kar 106 dni s snežno odejo, pa posebno hudega mraza v tej zimi skorajda ni bilo, le 25. januarja je termometer pokazal –16 °C. Malo manj, a še vedno precej snega je padlo v zimi 2009/10, ko je skoraj ves sneg zapadel v drugi polo-

vici meteorološke zime. Zadnji dan januarja je bila snežna odeja debela 28 cm. V zadnjih letih je bila s snegom nedvomno najbolj obdarjena zima 2012/13, ko ga je skupaj zapadlo 220 cm. Prvi sneg je zapadel že 28. oktobra, od sredine decembra do sredine januarja pa smo bili brez snega, saj je bilo vreme pogosto milo ali celo toplo. S 13. na 14. januar je zapadlo 30 cm snega, februarja je večkrat snežilo, najbolj od 21. do 23., ko so namerili tudi najvišjo debelino snežne odeje v celotni zimi in po februarju 1999, in sicer 53 cm. Če je bila zima 2012/13 zelo bogata s snegom, pa je bila skromna z mrazom – v Ljubljani živo srebro ni padlo pod –10 °C. Winters in the new millennium Even though the winter of 2005/06 was one of the most snowy winters in the last 100 years, with Ljubljana remaining under a snow blanket for 106 days, that winter was not especially cold with temperatures only dropping to -16 °C on 25 January. A little less snow, but still plenty, fell in the winter of 2009/10, when almost all the snow fell in the second half of the meteorological winter. On Ljubljana

K akovost Kdaj Ljubljana dobi svoj regijski center za ravnanje z odpadki? Po dolgih letih truda se je letos začela gradnja regijskega centra za ravnanje z odpadki (RCERO Ljubljana), ki je največji okoljski kohezijski projekt s področja okolja v državi. Projekt vodi Snaga, gre pa za najboljši in najsodobnejši sistem predelave odpadkov v Sloveniji. Center, ki bo s poskusnim obratovanjem začel konec leta 2015, bo uredil problematiko ravnanja z odpadki za tretjino Slovenije oziroma za 700 tisoč državljanov. Poleg vseh dobrobiti je RCERO Ljubljana tudi primer dobre prakse na področju povezovanja in sodelovanja občin ter povezovalni element ravnanja z odpadki v Sloveniji med občinami in regijami, saj je trenutno v projekt vključenih že 36 občin. Ste tudi predsednik Zbornice komunalnega gospodarstva, ki združuje slovenske komunale. Ali morda razmišljate o širšem, nacionalnem uveljavljanju načel Zero Waste strategije? Tako je. Smer, v katero z aktivnostmi in pobudami stopamo slovenske

imamo neposreden stik z uporabniki, je prav, da čim bolj izkoristimo vse možnosti za podpiranje trajnostnega razvoja družbe. Pod okriljem Zbornice je zato zaživela pobuda Skupaj za boljšo družbo, k sodelovanju pa bomo povabili tudi državo.

How can we become a recycling society and a society of responsible consumers? “By setting ambitious plans and by joining forces,” Janko Kramžar, director of the Snaga public company, explains with conviction. In relation to this, he shared an anecdote from the recent symposium in Zagreb, where he was classified as an alien visiting from outer space because of the decision on Zero Waste and Ljubljana‘s excellent recycling results. What does Zero Waste mean? Does it mean that we will no longer have any waste? Ljubljana has a perfected separate waste collection system (door-todoor) and we achieve excellent results – slightly more than 60% of separately collected waste. Cities of comparable size are either worse or on par with Ljubljana as regards separate waste collection. It is however true that quite a lot of waste is deposited because we do not have the infrastructure for energy recovery from waste. This seeming deficiency – among all the finalists for the 2016 European Green Capital, Ljubljana was the only one without an incineration plant or another facility for the thermal utilisation of waste and waste-derived fuel production – was turned into an advantage. We decided on an alternative that replaces the depositing of waste and energy recovery from waste through comprehensive waste management – the path to a

Zero Waste society. In its essence, Zero Waste basically means zero waste for deposit sites and incineration plants. When will Ljubljana get its Regional Waste Management Centre? After years of struggle, the construction of the Regional Waste Management Centre (RCERO Ljubljana) began this year. This is the largest environmental cohesion project in the country. The project is managed by Snaga and it encompasses the best and most modern waste processing system in Slovenia. The Centre, where the start of trial operation is planned for the end of 2015, will regulate the waste management problem for one third of Slovenia or 700 thousand citizens. In addition to all its benefits, RCERO Ljubljana is also a good practice example from the field of connections and cooperation of municipalities and a linking element of waste management in Slovenia among our municipalities and regions, as there are currently already 36 municipalities included in the project.

Otvoritev Pivnice pivovarne Union The Opening of the Pivovarna Union Pub Pivovarna Union, ki praznuje 150 let, je novembra v stavbi stare sladarne odprla svojo pivnico – težko pričakovano stičišče ljubiteljev piva in dobre kulinarike. The Pivovarna Union brewery, which is celebrating its 150th year, opened its own pub in the building of the former malt-house in November – a long awaited meeting place for enthusiasts of beer and good cuisine. 30. slovenski knjižni sejem 30th Slovenian Book Fair Kulturno dogajanje v novembru je zaznamoval tudi slovenski knjižni sejem – jubilejni, 30. po vrsti. V okviru založniškega dogodka desetletja so podelili celo vrsto nagrad, med drugim prvič tudi nagrado Velika nagrada Slovenskega knjižnega sejma, ki jo je prejela knjiga Ljubimca z Vošnjakove ulice: pisma Silve Ponikvar in Karla Destovnika Kajuha. The cultural events in November will also feature the 30th anniversary of the Slovenian Book Fair. Šego, astronavtom slovenskega rodu. AmCham Slovenia celebrated its 15th anniversary with Slovenia’s most successful business representatives and the guest of honor Mr. Ronald M. Šega, an astronaut of Slovenian descent.
