La singularidad de las Islas Canarias, reflejada en los contrastes de sus paisajes, se percibe también en los sabores de su gastronomía. Un sinfín de recetas tradicionales perviven y se combinan con las nuevas tendencias culinarias, que utilizan productos de la tierra para ofrecer unos platos con texturas y sabores diferentes y únicos.

La esencia de esta tradición podemos hallarla en los conocidos “guachinches”, locales cuyo origen data del siglo XVII, cuando los viticultores se situaban en los caminos y daban a probar su vino con la intención de poder exportar su producto.

Para acompañar la cata del vino, normalmente se ofrecía también un poco de queso de cabra y otros alimentos caseros recién elaborados.

En términos tradicionales, un guachinche abría su establecimiento durante unos meses determinados del año, con-

dicionados por la cosecha, y su espacio podía ser el propio garaje del viticultor.

Hoy en día, un guachinche es un local que puede vender su propio vino y también el de otros viticultores y que cuenta con una carta de platos y bebidas más amplia. Su oferta consta de recetas típicas como, por ejemplo, la carne fiesta, compuesta por trocitos de carne de cochino adobados en ajos, sal, pimienta, vinagre y vino blanco, entre otros, que dan como resultado un sabor único y que se sirven acompañados de papas fritas.

En los guachinches también encontramos las conocidas papas con mojo, una seña de identidad de la gastronomía canaria que debes probar si estás de visita en el Archipiélago. Su cocción a base de sal, que impregna la piel de la papa, ligada al sabor de los mojos (rojo y verde), da lugar a un plato delicioso.

Otra opción que podemos tener en cuenta es el potaje de berros tradicional, que une al berro toda una amalgama de sabores: zanahoria, calabaza, espe-

cias y costilla de cerdo. Y, si se prefiere, se puede pedir con el célebre gofio escaldado.

En toda comida canaria que se precie no puede faltar tampoco la repostería típica, como el quesillo, la mousse de gofio o el bienmesabe. Unos platos que integran en su sabor la dulzura de una gastronomía histórica. Así que no esperes más: si ves algún cartel con la palabra guachinche, prepárate para conocer la auténtica esencia de la cocina canaria.

The uniqueness of the Canaries, seen in the contrasting landscapes, can be tasted also in the Islands’ gastronomy. An endless range of traditional recipes survives to this day alongside new culinary trends that use local products to produce dishes with different and unique textures and tastes.

The essence of traditional Canarian cuisine can be found in so-called “guachinches”, eateries that date back to the 17th century, when winemakers would take up positions on roads and offer up their wine for tasting, in the hope of exporting it. The tasting would be accompanied by some goats’ cheese and other fresh home-made foods.

In days of old, a guachinche would open for a few months every year, depending on the harvests, and would often be located in the winemaker’s garage at home.

Nowadays, guachinches are premises that can sell their own wines as well as those of other winemakers. They also have a much wider offering of dishes and drinks than previously. They tend to offer typical dishes such as carne fiesta, tender chunks of pork with a unique flavour stemming from being marinated in -among other things- garlic, salt, pepper, vinegar and white wine, and usually served with chips.

In guachinches you will also find the wellknown papas con mojo, one of the most traditional features of Canarian cuisine and an absolute must if you are visiting the islands. These small potatoes are boiled with huge amounts of salt, which impregnates the skin. This combination and the spicy red or green mojo sauces they are served with makes for a delicious dish.

Other options include the traditional potaje de berros (watercress broth), which is based on watercress and a host of other tasty ingredients: carrots, pumpkin, spices and pork rib. If you like, you can order it with the famous gofio escaldado, a tasty puré made of roasted Canarian flour.

Any mention of Canary food must include the typical sweets, such as quesillo (a Canarian-style flan), gofio mousse, and the rich, almond-based bienmesabe. These dishes encapsulate the sweet side of the islands’ age-old gastronomic tradition.

So, what are you waiting for? If you see a sign that says guachinche, get ready to try authentic Canarian cooking.

Die sich in den Kontrasten ihrer Landschaften widerspiegelnde Einzigartigkeit der Kanarischen Inseln gewahrt man auch in den Aromen ihrer Küche. Unzählige traditionelle Rezepte wurden von Generation zu Generation weitergegeben und verbinden sich heute mit neuen kulinarischen Trends, die lokale Produkte verwenden, um eine Vielfalt von Gerichten unterschiedlichster Aromen ohnegleichen anzubieten.

Die Essenz dieser Traditionen finden wir in den sogenannten „Guachinches“, traditionelle Landgaststätten, deren Ursprung bis ins 17. Jahrhundert zurückreicht, als die Winzer an Wegen und Straßen ihren Wein zur Probe anboten, um ihn nach auswärts verkaufen zu können.

Zur Weinprobe wurden gewöhnlich auch Ziegenkäse und andere frisch zubereitete hausgemachte Speisen gereicht.

Traditionell öffneten diese Weinstuben nur in wenigen, von der Weinlese abhängigen Monaten des Jahres und bei dem Lokal konnte es sich auch um einen einfachen Schuppen handeln.

Heutzutage ist ein „Guachinche“ aber eine Gaststube, in der Winzer ihre eigenen guten Tropfen, sowie die anderer Weinbauern servieren können und in denen es auch eine breitere Auswahl an Speisen und Getränken gibt. Die Speisekarte umfasst inseltypische Gerichte, wie zum Beispiel „Carne fiesta“ - in Knoblauch, Salz, Pfeffer, Essig und Weißwein mariniertes Schweinefleisch, das auf diese Weise zubereitet einen vorzüglichen Geschmack besitzt und in der Regel zusammen mit Pommes Frites gereicht wird.

In diesen Gaststuben finden wir auch die bekannten kanarischen Pellkartoffeln mit Mojo- Soße, einem Markenzeichen der Inselküche, die Sie unbedingt probieren sollten, wenn Sie die Kanaren besuchen.

Beim Kochen in reichlich gesalzenem Wasser durchdringt das grobe Salz die Kartoffelschale und erbringt zusammen mit den grünen oder roten Mojo-Soßen ein köstliches Gericht.

Eine weitere vorzügliche Wahl stellt der traditionelle Kresse-Eintopf dar, bei dem die Brunnenkresse mit einer Vielfalt von Zutaten, wie Karotten, Kürbis, Gewürzen und Schweinerippchen, verbunden wird.

Und wenn Sie möchten, können Sie diesen “Potaje de berros“ zusammen mit dem berühmten gerösteten Getreidemehlgericht „Gofio escaldado“ bestellen.

Bei einer kanarischen Mahlzeit darf natürlich auch nicht der typische Nachtisch fehlen, wie z. B. der Eierpudding „Quesillo“, „Gofio-Mousse“ oder die Baiser-Speise „Bienmesabe“ – Nachspeisen, die den süßen Reiz einer historischen Gastronomie in ihren Geschmack integrieren. Warten Sie also nicht länger: Wenn Sie ein Schild mit dem Wort „Guachinche“ sehen, kehren Sie ein und lernen Sie die wahre Essenz der kanarischen Küche kennen.

Surinamkirsche - Pitanga. Die Frucht

FRANCISCO BELÍN

(Eugenia uniflora) gleicht einem kleinen, abgeflachten Kürbis, hat eng zusammen stehende Segmente und ist von orange, tomatenroter oder sogar lila Farbe. Im Gaumen zeigt sie sich krautartig, intensiv, von temperierter Säure; ihre Kerne sind groß und das umgebende fein saftige Fruchtfleisch ein himmlischer Genuss. Man kann sie auf Bauernmärkten finden, z. B. auf dem von Güímar.

Pitanga. El fruto de

la pitanga (Eugenia uniflora) parece una calabaza en miniatura, con gajos apretados que conforman ese óvalo pequeñín y achatado de colores naranja, rojo tomate e incluso morado. En boca es herbáceo, intenso, de acidez atemperada; su pipa es voluminosa y la delgada carne jugosa la rodea triunfal. Puede encontrarse en mercadillos del Agricultor como el de Güímar.

Quesadillas. Al igual que en el caso de la flor de sal, la quesadilla, originaria de El Hierro, es uno de esos manjares dulces alabados en todas las Islas. Para la elaboración se emplea un molde con forma de flor o estrella y el sabor característico lo aporta el queso local.

La fábrica Adrián Gutiérrez e Hijas comenzó su producción en 1900 y hoy continúa elaborando su producto artesanal en horno de leña.

Quesadillas. Wie im Fall des Blütensalzes auch stellt

der von El Hierro stammende Käsekuchen “Quesadilla” eine dieser Köstlichkeiten dar, die auf allen Inseln in höchsten Tönen gelobt werden. Für die Zubereitung verwendet man blumen- oder sternförmige Schalen und der unverwechselbare Geschmack stammt von dem heimischen Käse der Insel. Die Fabrik Adrián Gutiérrez e Hijas begann die Produktion im Jahr 1900 und bis heute werden die Quesadillas dort nach altem traditionellem Rezept in einem Holzofen gebacken.

Ingredientes: • 1 conejo de un kilo.

• Sal gorda.

• 6 dientes de ajo. Una punta de cuchillo de pimentón.

• 1 pimienta picona.

• Aceite. Vinagre.

• Laurel. Romero. Tomillo.

Cortamos el conejo en trozos no muy menudos, lo ponemos en un recipiente y lo salamos. Majamos los dientes de ajo con algo de sal gorda. Sobre esta pasta, echamos el pimentón y la pimienta y seguimos machacando. Cuando todo esté cohesionado, agregamos un chorro generoso de aceite y un poco menos de vinagre. Revolvemos bien. Este majado lo echamos sobre el conejo y le damos a la carne unas vueltas para que se impregne.

A continuación, echamos un vaso de vino blanco y le ponemos una hoja de laurel, algo de romero y algo de tomillo.

Bien revuelto otra vez todo, lo dejamos allí algunas horas (entre cuatro y doce).

Después, vamos sacando los trozos de conejo, los freímos en una sartén y los pasamos a otro recipiente.

En parte del aceite que nos sobra de freír el conejo, calentamos la salsa que nos ha sobrado y la echamos en el otro caldero, para dar un hervor final de unos minutos, hasta que esté en su punto.

Pitanga. This fruit (Eugenia uniflora) looks like a

miniature pumpkin, with tight segments making up a small, flattened oval in orange, tomato red or even purple. It has an intense, moderately acid and herby flavour; the large pip is surrounded by a delicious, thin coat of juicy pulp. It can be found in Farmers’ Markets such as the one in Güímar.

Quesadillas. Just like the fleur de sel, the quesadilla – from El Hierro – is one of those sweet treats which are favourites on all the islands. It is prepared in a flower or star shaped mould and its characteristic flavour is provided by local cheese.

Fábrica Adrián Gutiérrez e Hijas began production in 1900, and nowadays continues to prepare these handmade pastries in a wood-fired oven.

Ingredients: • 1 one-kilo rabbit.

• Kitchen salt.

• 6 garlic cloves. A pinch of paprika.

• 1 hot pepper. Oil Vinegar.

• Glass of white wine.

• Bay leaf. Rosemary. Thyme.

• 1 Kaninchen, etwa ein Kilo schwer.

• Grobes Salz.

• 6 Knoblauchzehen.

• Eine Messerspitze Paprika.

• 1 scharfe Pfefferschote. Öl. Essig.

• Lorbeer. Rosmarin. Thymian.

Preparation Cut the rabbit into largish pieces, place in a bowl and salt lightly. Crush the garlic cloves with some kitchen salt, add the paprika and hot pepper to this paste and continue to pestle.

When smooth, add a generous dash of oil and another, less generous, dash of vinegar. Mix well. Pour the mixture over the rabbit and turn the pieces around to coat them all over. Then add a glass of white wine and the bay leaf, some rosemary and some thyme.

Once the pieces are well coated, leave for a few hours (between four and twelve is recommended). Afterwards, take pieces of rabbit and place in a frying pan to fry, then remove and place in another bowl. In part of the oil left over from frying, eat the leftover sauce and then place in another pan to boil for a few minutes until ready to serve.

Schneiden Sie das Kaninchen in mittelgroße Stücke und geben Sie diese in eine Schüssel, in der Sie sie leicht salzen. Die Knoblauchzehen zusammen mit dem groben Salz in einem Mörser zerstampfen, dann Paprika und Pfefferschote hinzufügen und weiter zerstampfen.

Wenn alles mehr oder weniger zu einer Paste geworden ist, fügen Sie einen großzügigen Schuss Öl hinzu, sowie einen kleineren Schuss Essig. Gut umrühren. Die Beize auf das Kaninchen geben und die Fleischstücke wälzen, um sie gut damit zu im-prägnieren.

Ein Glas Weißwein untergießen und ein Lorbeerblatt, etwas Thymian und etwas Rosmarin hinzufügen. Nachdem wir alles erneut gut umgewälzt haben, ein paar Stunden stehen und ziehen lassen (zwischen vier und zwölf Stunden sind empfehlenswert).

Dann nehmen wir die Kaninchenstücke nach und nach heraus, braten sie in einer Pfanne und legen sie in einen anderen Topf. In einem Teil unseres über-schüssigen Öls, in dem wir das Kaninchen frittiert haben, erhitzen Sie die restliche Soße und geben alles in einen anderen Topf, um alles noch einmal für einige Minuten zu erhitzen, bis es fertig gebraten ist.

El municipio de Candelaria, referente religioso de Canarias por albergar la basílica de la patrona isleña, ofrece los miércoles y sábados, de 9:00 a 14:00 horas, uno de los mercadillos del agricultor más completos del valle de Güímar, la comarca en la que se ubica esta localidad de gran arraigo marino. Los agricultores, ganaderos y reposteros de la zona ofrecen sus productos frescos a precios muy competitivos y con una calidad que queda corroborada cada uno de esos días con la gran afluencia de consumidores, que repiten y repiten. Los miércoles, los puestos se ubican en las instalaciones del mercado local, mejorado hace unos años. Los sábados, la oferta se traslada a la plaza del centro comercial Punta Larga, pero en uno u otro lugar hay atractivos de sobra porque en unas horas se puede disfrutar del mar, de la devoción religiosa propia o ajena y de productos que convencen.

Lobo herreño El lobo herreño es perro cuyo origen se remonta, al menos, a doscientos años atrás, cuando los pastores los utilizaban para las labores ganaderas en la isla de El Hierro. Existen teorías que indican que quizás fueron traídos por los conquistadores en el siglo XV, aunque otros señalan que ya se encontraban en las Islas antes de la llegada de los castellanos. De nombre oficial lobito herreño, que es también como más comúnmente se le conoce, es uno de los animales más representativos de la fauna de Canarias. Sin embargo, su raza aún no está reconocida y se le considera, de momento, un grupo étnico canino por la Real Sociedad Canina Española.

Aunque estuvo a punto de extinguirse por la disminución de la actividad agrícola que ha experimentado el Archipiélago en las últimas décadas, su carácter cariñoso y su fidelidad le han servido para hacerse un hueco como animal de compañía en los hogares canarios.

Tabaiba dulce JUAN ÁLVARO

No hay paisaje del sur de Tenerife donde el viajero no pueda admirar un arbusto que puede alcanzar hasta los dos metros de altura, conocido científicamente como Euphorbia balsamifera. Con este invierno tan tardío, aún puede tener la suerte de disfrutar incluso del color amarillo intenso de las flores de la tabaiba dulce, que dará paso a unos frutos rojos.

Turismo de Tenerife (webtenerife.es) informa que este arbusto endémico de las islas Canarias desprende una resina que antiguamente se utilizaba como chicle y para sellar barriles de vino. Como bien dice su nombre científico, tiene poderes como planta medicinal, que la convertían hace muchos años en un remedio efectivo para dolores del pecho y catarros. Der Wolf von El Hierro The Hierran Wolfdog The origins of the Hierran Wolfdog go back - at the very least - two hundred years, when it was used for shepherding on the island of El Hierro. According to some theories, the dog may originally have been brought in the 15th century by the Spanish conquistadors of the Canaries, although others believe that it was already present in the islands before the Spaniards arrived. Officially known as the lobito herreño (literally, little Hierran Wolf), which is also its commonly-used name, this small dog is one of the most typical of the animals associated with the Canaries. However, it is not recognised as a breed in its own right and is considered, for the moment at least, an ethnic group by the Royal Canarian Canine AssociationAlthough it was on the verge of extinction due to the downturn in farming in the Canaries in recent decades, its friendly nature and loyalty have seen it grown in popularity locally as a family pet.

Balsam spurge There is no landscape in southern Tenerife where the traveller cannot admire a shrub which can reach two metres in height, with the scientific name of Euphorbia balsamífera.

With such a belated winter, there is still the chance of admiring the intense yellow of its flowers, which will soon give way to red fruit. Turismo de Tenerife (webtenerife.es) tells us that this native shrub of the Canary Islands releases a resin which was formerly used as chewing gum or to seal wine barrels. As can be deduced from its scientific name, it has medicinal properties, making it an effective remedy of the past for chest pains and colds.

The guanches (the primitive inhabitants of Tenerife, who mummified their corpses) used to call it tavaiva or tubaiba, hence its current name, according to mundoguanche.com.

Der so genannte „Wolf von El Hierro“, Lobo herreño, ist ein Hund, dessen Ursprung mindestens zweihundert Jahre zurückliegt, als die Hirten der Insel El Hierro ihn zur Bewachung ihrer Viehherden verwendeten. Es gibt aber Theorien, die darauf hindeuten, dass er schon im 15. Jahrhundert von den Eroberern auf die Insel gebracht worden sein soll, andere vermuten sogar, dass er bereits vor der Ankunft der Kastilier auf den Inseln lebte. Der offizielle Name Lobito Herreño, der kleine Wolf von El Hierro, wird auch von den Inselbewohnern für ihn verwendet. Er ist eines der repräsentativsten Tiere der kanarischen Tierwelt. Seine Rasse ist jedoch noch nicht anerkannt und wird derzeit von der Königlichen Spanischen Gesellschaft für Hundezucht als ethnische Hundegruppe angesehen. Obwohl er aufgrund des Rückgangs der landwirtschaftlichen Aktivitäten, die der Archipel in den letzten Jahrzehnten erlebt hat, vom Aussterben bedroht war, hat sein gutmütiger, treuer Charakter dazu beigetragen, dass er heute seinen Platz als Haustier auf den Kanaren gefunden hat.

Balsam-Wolfsmilch Es gibt keine Landschaft im Süden Teneriffas, in der der Reisende nicht einen Strauch bewundern könnte, der bis zu zwei Metern Höhe erreicht und die wissenschaftliche Bezeichnung Euphorbia balsamífera trägt. In diesem spät kommenden Winter können Sie sogar jetzt noch das Glück haben, die tiefgelbe Farbe seiner Blüten bewundern zu dürfen, die sich in rote Früchte verwandeln werden. Turismo de Tenerife (webtenerife. es) schreibt, dass dieser endemische Strauch von den Kanaren ein Harz besitzt, das man zu früheren Zeiten wie Kaugummi kaute und zur Versiegelung von Weinfässern benutzte.

Wie der wissenschaftliche Name unterstreicht, besitzt diese Wolfsmilchart Heilkräfte und wurde früher als wirksames Hausmittel zur Linderung von Brustschmerzen und Erkältungen verwendet. Die Guanchen, die ersten Bewohner von Teneriffa, die ihre Toten mumifizierten, nannten den Strauch tabaiva o tubaiba, worauf laut mundoguanche.com die hiesige, volkstümliche Bezeichnung “Tabaiba” zurückzuführen sei.

In search of the oldest lighthouse in the Canaries This route, of just over 8 kilometres in length, allows us to get to know one of the main vantage points of the Island, the first lighthouse to operate in the Canaries, and one of the oldest and most fertile farming lands of the Biosphere Reserve of Anaga. It is perfectly waymarked as short distance trail (PR TF-6) starting from the town square of Chamorga (you can reach it by car or with TITSA public transport bus 947). From here it ascends to Tafada and then climbs down to the Anaga Lighthouse with spectacular views of the coast, returning along the singular Roque Bermejo Ravine to the starting point.

Der etwas mehr als 8 Kilometer lange Weg ermöglicht es uns, eine der bedeutendsten Gipfelregionen der Insel kennen zu lernen. An ihm liegen der erste Leuchtturm, der auf den Kanarischen Inseln aufleuchtete, sowie einer der fruchtbarsten Landstriche Teneriffas mit uralten Landgütern im Biosphärenreservat Anaga.

Der als Kurzstrecke (PR TF-6) sehr gut ausgeschilderte Wanderweg beginnt an der Plaza de Chamorga (hierher gelangen Sie mit dem Auto oder öffentlichen Verkehrsmitteln, TITSA, Linie 947). Nach dem Aufstieg nach Tafada führt die Route mit spektakulären Ausblicken auf die Küste bergab bis zum Leuchtturm von Anaga und zurück zum Ausgangspunkt durch die einzigartige Schlucht Roque Bermejo.

AARÓN RODRÍGUEZ

Esta ruta, de poco más de ocho kilómetros de longitud, nos permite conocer una de las principales atalayas de la Isla –el primer faro marítimo que se encendió en Canarias– y una de las más fértiles y antiguas haciendas agrícolas de la Reserva de la Biosfera de Anaga. Se encuentra perfectamente señalizada como sendero de pequeño recorrido (PR TF-6) a partir de la plaza de Chamorga (se puede llegar en coche o con transporte público de Titsa, línea 947). Desde aquí asciende a Tafada, para descender luego hacia el faro de Anaga, con vistas espectaculares de la costa, para regresar por el singular barranco de Roque Bermejo hasta el punto de inicio.

In 1990, Mihail Gorbachov visited Spain and his first words before the authorities were: “I come to a Spain which was the birthplace of the most illustrious collaborator that Russia has had”.

He was referring to the person who was born in Tenerife in 1758 in Puerto de la Cruz and died in 1824 in St. Petersburg, where he is buried beside distinguished Russians. A military engineer and inventor, he worked in Spain, France, England and Russia. He designed steam engines, hot-air balloons, long distance communication signals, bridges, buildings and urban planning.

He was founder of the School of Civil Engineers, and marshal of the Russian army.

In 2008, Russia issued a stamp commemorating the 250 years of his birth.

In Plaza de la Iglesia in Puerto de la Cruz, his native town, there stands a monument – a bronze bust on a stone pedestal – of this eminent islander with his military braids.

En 1990, Mijaíl Gorbachov visitó España y las primeras palabras que dijo ante las autoridades que le recibieron fueron: “Vengo a una España en la que nació el más ilustre colaborador que ha tenido Rusia”.

Se refería al tinerfeño Agustín de Bethencourt y Molina, nacido en 1758 en Puerto de la Cruz y fallecido en 1824 en San Petersburgo, en cuyo panteón de rusos ilustres está enterrado.

Ingeniero militar e inventor, desarrolló su actividad en España, Francia, Inglaterra y Rusia. Diseñó máquinas de vapor, globos aerostáticos, comunicaciones de señales a larga distancia, puentes, edificios y planes urbanísticos.

Fundó la Escuela de Ingenieros de Caminos y Canales y fue mariscal del Ejército ruso.

En 2008 Rusia emitió un sello conmemorativo para celebrar los 250 años de su nacimiento.

En su ciudad natal, Puerto de la Cruz, en la plaza de la Iglesia, un monumento –un pedestal de piedra sobre el que se erige un busto de bronce– recuerda al ilustre canario con su entorchado militar.

Im Jahr 1990 besuchte Michail Gorbatschow Spanien und seine ersten Worte beim offiziellen Empfang waren: „Ich komme nach Spanien, wo der berühmteste Mitarbeiter und Helfer geboren wurde, den Russland je besaß“.

Gorbatschow bezog sich auf den im Jahre 1758 in Puerto de la Cruz geborenen Agustín de Bethencourt y Molina, der im Jahre 1824 in St. Petersburg starb, wo er im EhrenPantheon Russlands begraben liegt. Er war Militär-Ingenieur und Erfinder, wirkte in Spanien, Frankreich, England und Russland; entwickelte Dampfmaschinen, Heißluft-Ballons, Kommunikationssignale über weite Strecken, baute Brücken, war Architekt und Stadtplaner.

Er gründete die Hochschule für Straßen- und Wasserbau und war Marschall der russischen Armee.

Im Jahr 2008 gab Russland eine Sonderbriefmarke zum 250.

Jahrestag seiner Geburt heraus.

In seiner Heimatstadt, Puerto de la Cruz, ziert ein Denkmal zu seinen Ehren die Plaza de la Iglesia. Die Bronzebüste auf Steinsockel erinnert an den berühmten Einwohner Teneriffas - geziert mit seinen militärischen Ehrenabzeichen an den Ärmeln.

The salt of the Atlantic Ocean and the greenery of pine trees and laurel woodland are combined in the Tenerife municipality of El Sauzal. Situated in the north of the island, this small enclave a mere 18 square kilometres in size and with a population of less than 9,000 is a haven of tranquillity but is also brimming with history and culinary culture. Forestland and sea combine here and are accompanied also by the town’s “impressive” gastronomy, both in its highest areas and old centre.

El Sauzal is also home to several key Tenerife museums. Despite its small size, it boasts the “Casa del Vino” wine museum, the Museum of Canarian Wrestling, the Museum of Religious Art and the Museum House of the Servant of God (a famous local nun).
