Editor’s letter Pretty in pink … think pink … in the pink … while these sayings may seem a little frivolous, the colour pink is also synonymous with breast cancer awareness, a cause very close to our hearts here at the Cove magazine. The stark reality is that about 15,270 Australian women are expected to be diagnosed with breast cancer in 2014.* With this statistic in mind, we have dedicated our October/November issue to all things pink … pink recipes, pink diamonds, pink fashion, make-up and events… even a pink cover. We also encourage everyone to ‘Party for a Cure’ this October by supporting the National Breast Cancer Foundation’s Pink Ribbon Breakfast. This annual initiative is all about having a good time with friends, family and/or colleagues while also raising money to fund vital breast cancer research. Speaking of pretty in pink … how gorgeous is our covergirl, Robby X. This talented singer/ songwriter is about to launch her debut album and we are very excited to profile her and her music. Robby has very kindly decided to donate some of the royalties from her first single, Never Wanna Let You Go, to the McGrath Foundation, a charitable organisation that raises money to place McGrath Breast Care Nurses in communities right across Australia, as well as increasing breast awareness in young Australian women.
While Robby is just starting her solo career, veteran actor, film director and producer Clint Eastwood has more than 60 years experience in the entertainment industry. In this edition the Hollywood legend discusses everything from the challenges of making Jersey Boys to how he stays in shape in his 80s. Moving on to the rest of the magazine, we bring you a well-rounded selection of food, wine (did someone mention pink champagne?), travel and motoring. A new direction Now aged in his 80s, Hollywood legend Clint Eastwood is still in demand as an actor, film director and producer. Words

Clint Eastwood’s acting career was just getting into full swing when Frankie Valli and The Four Seasons rose to fame as a homegrown pop band in the early 1960s. At that point, his musical taste leaned more towards jazz than pop music. Eastwood, who went on to become a successful filmmaker as well as actor, decided a few years ago that it was time to do a musical. He considered doing a remake of A Star is Born, but when that didn’t pan out, he agreed to bring to the big screen the Tony award-winning musical Jersey Boys, about the rise of the Newark-based band, whose hits included Sherry, Walk Like a Man and Big Girls Don’t Cry, among others. The one-time spaghetti-western film icon figured it would be an interesting challenge. The 84-year-old director soon became a theatre rat, attending various productions of the show, and scouting would-be stars for his bigscreen version. The four-time Oscar winner brings to the screen the story of four boys from the wrong side of the tracks, who rose to fame to become one of the most popular pop bands of the 1960s. Written by Marshall Brickman and Elice, the film stars John Lloyd Young, Erich Bergen, Michael Lomenda and Vincent Piazza as the harmonising quartet. Just across the Hudson River, Clint spoke about what drew him to helm Jersey Boys and how this California native became immersed in East Coast Italian-American culture of the 1960s.

I think in general, especially in America which is such a youth driven society, old age doesn’t count for much. Life experience for that matter doesn’t count for much. Hollywood has always and probably will always be about the next big thing. And I am certainly no longer the next big thing (laughs).
Is it true that you said, you need to keep reinventing yourself or you will die? Not sure if it was that drastic. We will all die eventually anyway (laughs). But I do want to progress in life, still. I don’t want to stand still or go backwards. I’ve always liked learning. Is that why you are still making movies? It’s simple, really. They have not chased me away yet, they have not told me to finally hang up my hat. It’s not easy making movies, but I still enjoy a good fight. I still enjoy getting things done. Maybe that will never change. Is it easier for you in Hollywood because you are Clint Eastwood? You would think they’d cut an old guy some slack, right? – No, it’s not. If you don’t come back with a financial success you are in trouble in this business. But I don’t care, I keep coming back anyway. Let some young punk chase me out of his office. I dare him (laughs).
How important is music in your life? Very important. It’s carried me through the decades of my existence. I love music. It soothes me, it gives me peace. Music is a reflection of who you are. What do you do these days to stay in shape? I try to avoid Cuban cigars and I walk the golf course instead of riding in a cart. I enjoy being outdoors, and I take a nice nap every day. Sleep is the best thing I discovered in my 60s. There seems to be a little bit of Dirty Harry in the real Clint Eastwood ... Of course there is. There is a little bit of all the characters I played throughout life in me. Why the Jersey Boys movie? It seemed like something to do. It’s funny I hadn’t seen the play but I’d heard a lot about it over the years. Somebody said, ‘Would you be interested?’ and I said, ‘I’d be interested in looking at it’. They sent me the script, which was by a very good writer, and I found out later that it wasn’t the script of the play. Only in Hollywood would somebody give you something else when they have a script that’s a hit. I saw three different version of the play in New York, San Francisco and Las Vegas, and saw those wonderful actors and that was that. >>

Did you know Frankie Valli? I met Frankie Valli years ago in passing and I met him over the years. I wasn’t a fan of music of that era because I came along before that. But I liked The Four Seasons a lot. Their music was far superior. Can’t Take My Eyes Off of You was a classic song and would have been a classic song in the 30s or 40s, or at any time in history. Their music was great fun. It was a pleasant challenge and I worked with the actors, who had a great influence on the play through its run in the country, and using the original people. Your film explores the ethnic prejudice at the time in New Jersey. Did that aspect of the story also interest you? In terms of (The Four Seasons member) Tommy DeVito, it was certain stigmas of the time against Italian-Americans and transcending the borough from which they’re from. It created a fire for these guys to get out to make it. It was apparent in some of the scenes, getting out of the neighbourhood.

Had you thought about doing a music-related What were the big challenges of making a film before? musical biopic? I’m thinking of doing a remake of A Star is Born. It wasn’t too much of a challenge. You incorporated those stereotypes and prejudices into the film, right? We touched a little bit on that. You don’t forgive a lot of things, maybe cliches about the Italian community, like if you get on their bad side, you’re on the bad side forever. I don’t know if that’s true nowadays. I related to it, because of the people I knew in Oakland at that time, the friends I had. Then, I was going over to New Jersey where Tommy DeVito has a street named after him because of the play. There’s no street named after me in Oakland. (He chuckles.) You have a cameo in the film. Can you talk about that? You mean my Hitchcock moment? That was Erich (Bergen’s) suggestion. We were talking about a scene where he’s watching television and it’s showing (Eastwood’s early TV series) Rawhide, and I thought, ‘Yeah, it could be’. Then I put it out of my mind. But somebody who handles our television stuff went ahead and (added it). Afterwards, I said, ‘I’ll live with that’. Rawhide was my first break after years of doing bit parts and unappealing roles.

How was this experience of making a movie with pop music at the centre of it? I love films about musicians and in this case, singers. This one was easy because the guys were easy. I got a standing ovation for actually going to the men’s room when I was at the Broadway show. I thought that was the first time and probably last time that will ever happen. How did you cast Vincent Piazza, who plays Tommy DeVito in the film? I had never seen (his series) Boardwalk Empire, but he came in and was spectacular in the audition. I was worried about Vince, he was starting from scratch, but he fit right in. In looking back on your experience making this film what can you say about being able to pull it off successfully? There’s an old saying ‘I’d rather be lucky than 9499 good’. I’ve been very lucky knowing these actors and watching them perform individually in different productions and seeing them altogether. At the time you go, ‘Okay, this is as good as it’s going to get’. If I can get a family together like this one, it’s very, very lucky. But I pay tribute to the screenwriters (Marshall Brickman and Rick Elise). The director is interpretive and the actors are interpretive. That you can start from zero and make something is always amazing to me. I’m lucky to have this great material.

Robby X is one of those people who just light up the room. Beautiful, charming, talented … and super excited about her debut album, Obsession, which will be released in October. “I wrote and produced the entire album which was an absorbing and uplifting experience,” Robby says. “I’ve dreamt of doing this for a long time but it’s such a huge undertaking. I’m so lucky that technology now allows me the freedom to create my own music. I was able to set up my own recording studio to write and produce the kind of music I’ve always wanted to make.” In what can only be described as a dream start for a debut artist, Robby has also signed a deal with Universal Music Australia (UMA), who will be supporting the album in stores and on radio. “It’s just wonderful that these new songs now have an opportunity to find their way out to a wider audience,” Robby says. “When I think about how it all started, sitting at the piano, feeling that first burst of inspiration, I am very grateful to have the album finished at last, along with the support of a major record label.” Robby has generously decided to donate royalties from her first single, Never Wanna Let You Go, to the McGrath Foundation. “The song is all about that ray of hope that shines through tough times when you realise you’re not alone, that someone loves you and they are there for you,” Robby says. “I’ve been a great admirer of the McGrath Foundation and the very special work they do in supporting women with breast cancer. It just seemed like the right thing to do, to use royalties from the sale of the song to raise money for such a worthy and important cause.” The making of her debut album has been a labour of love for Robby but it hasn’t always been an easy road.
“There have been times when I’ve thought … ‘this is just too hard and maybe I should throw it in’ but something deep inside kept me coming back to the music. It’s quite a passionate and spiritual experience writing songs. One of my tracks, The Thief is based on the poetry of 13th century philosopher Rumi, another song Close To Me was written after the passing of my Grandpa who was one of my greatest inspirations.” While Obsession may be her first solo undertaking, Robby is no newcomer to the industry. A graduate of the Conservatorium of Music, she has served her apprenticeship well, recording thousands of voice-overs and jingles for some of Australia’s leading brands. She has also supported her husband, Lee Kernaghan, as he built a reputation as one of Australia’s most successful country music artists. “I’ve been working with Lee on his albums for years now, singing and recording backing vocals, co-writing songs, shooting the cover photography for many of his albums and we even had a number one hit with our duet version of Fire.” Now it is Lee’s turn to support Robby as she makes the transition from back-up singer to headline act. “Over the years I’ve admired Lee so much because he stays true to himself and his genre of music. When it came time to make my own record I knew I’d have to put my heart out there, take a leap of faith and record the kind of music that had been incubating inside of me, waiting to be born.” Which is why, despite the fact Robby is married to a country music legend, this album is pure pop. “I wanted the songs on Obsession to take people on a journey. There are various themes about life and love and some of the songs are quite sexy and sensual. There’s music to seduce to, music to dance to, to drink to or just to chill to,” Robby admits. >>

“I’ve co-written two tracks, Dirty Mind and Just Another Night with Ciaran Gribbin, a Grammynominated songwriter who wrote the number one hit Celebration for Madonna. I was also lucky enough to collabrate with award-winning songwriter and producer Lindsay Rimes, which was magic. “I’m feeling a lot of love and gratitude at being able to launch this debut album. I don’t know how it will be received but I’m just thrilled that finally I can release my songs as Robby X.” Which begs the question … where did the ‘X’ come from? “I’ve always signed my name with a kiss so Lee picked up on that,” she explains. “Last year for Valentine’s Day he gave me my artist name and the domain name as a surprise, and that’s how I became Robby X.” While Lee may have given Robby her stage name, it was the couple’s two boys Jet, 13, and Rock, 12, who gave their mother the impetus to pursue her dreams. “I used to write and sing at the piano late at night when the kids were asleep and nobody could hear,” Robby explains. “One night, I noticed something in the corner of my eye and Rock was squatted down in the hallway in his pyjamas just watching me. When he realised I’d seen him he stood up and said ‘Mummy when you sing it makes me so happy’.

The tears just fell down my face and I had this lightbulb moment that ‘I’ve got to do this’. “Both of my kids love the music and think it’s really cool that mum’s doing some pop music.” With the release of the album just weeks away, Robby is feeling a mix of emotions. “I think in many ways songwriters are alchemists, turning a blank page into something tangible and it’s a very personal thing,” Robby says. “You get the chance to create something that comes from deep inside you and maybe from outside experiences too. “For me, releasing these new songs for the first time feels a little bit daunting and a little bit amazing all at the same time. It’s like you’ve reared your children and now they are leaving home and you really don’t know how they are going to go out there in the big wide world. “Making this album has been one of the most gratifying and joyful experiences of my life. Listening back to the record fills me with a lot of positive feelings and my hope is that when people get to hear it for themselves, this new music will make them feel good too.” Obsession will be available on iTunes and in store as well as through Robby’s website:

If necessity is the mother of invention, it could be argued that Florence-born Guccio Gucci – founder of the most successful Italian brand in history, is its very stylish father. An ambitious man of great vision, Guccio was also inventive and practical, which saw Gucci flourish even through times of hardship, war and scarcity of materials to emerge triumphant as the powerhouse label it remains today. As a teenager Guccio travelled to London, where he worked as a bellboy at the city’s prestigious Savoy Hotel. It was here that he came to appreciate the refined practicality of English design, which he felt would meld perfectly with the renowned style and workmanship of Italian artisans. While abroad Guccio noticed that affluent travellers particularly favoured Tuscan luggage, and the seeds of a new enterprise were sown. Returning to Italy, Guccio worked for a leather crafts company before opening a small outlet in Florence, where he sold his own customfashioned luggage alongside exclusive pieces imported from Germany and England. Burgeoning customer demand – Guccio’s store had become the place for sophisticated clientele to visit while holidaying in Florence – saw expansion of the original workshop and workforce. Such was the business’s growth that the next generation of Guccis – Guccio’s sons Aldo, Vasco, Ugo and Rodolfo – came on board to help steer it through its next phase of development. But all was not well at the time. The rise of Facism in Italy meant foreign components were in short supply, so the company began incorporating atypical luxury materials like hemp, linen and jute into its designs. One of these unconventional materials – burnished bamboo, which was used to fashion handles for bags, became synonymous with the brand and still graces contemporary Gucci items.
With an international trade embargo placed on Italy by the League of Nations in 1935, the company diversified into the manufacture of other items like shoes, wallets and belts. And the innovative Gucci Suiter bag, featuring a builtin coathanger, became extremely popular with British military officers stationed in Rome after the war. The year 1951 saw Gucci introduced to the American market through a small show for department store buyers and the press, and the great interest this generated led to the opening of the first US Gucci store, in New York, just a year later. The inevitable global expansion then continued, seeing Gucci outlets established in major cities including London and Paris. By the late 1960s, Gucci was selling 84,000 pairs of shoes in the US alone, and was moving into ready-to-wear fashion, later presenting its first collection at Rome’s Alta Moda fashion week and introducing a signature scent – Gucci No. 1. Along the way, some of Gucci’s creations became celebrities in their own right. There was the Flora silk scarf designed at the personal request of Princess Grace of Monaco, and the inclusion of Gucci loafers in the 1985 ‘Man and the Horse’ exhibition staged at the Metropolitan Museum’s Costume Institute. Following the exhibition the loafers’ iconic status as a fashion item was formalised when they became a part of the institute’s permanent collection. And then there was The Guinness Book of Records’ official recognition of a pair of distressed Gucci jeans embellished with African beads as the world’s most expensive denim jeans – with a price tag of $3,134 (in 1993’s money). With continued growth and expansion, Gucci moved from family-run company (albeit a very large one) to corporate giant towards the end of the 20th century. >>
gucci Iconography he very first Gucci symbol depicted a bellboy T – a direct reference to Guccio’s time at the Savoy Hotel in London. Many of Guccio Gucci’s early clientele were Italian horseriding aristocrats seeking stylish, top-quality riding gear. This gave rise to the brand’s distinctive Horsebit icon. Equestrian pursuits were also at the heart of the brand’s now-famous green-red-green web stripe design, which was inspired by a traditional saddle girth. The 1950s saw the design of the Gucci crest featuring an armoured knight holding a suitcase and handbag in place of a sword and shield, together with a ship’s wheel representing entrepreneurial spirit and leadership, and a rose to symbolise beauty and value. The brand adopted the interlocking double-G logo celebrating Guccio’s initials in the 1960s, and was renowned for the unique ways it was featured – for example, burning the logo into suede. Gucci’s 2014 equestrian collection features the Horsebit icon and the 1950s crest, and is decorated with the brand’s distinctive greenred-green web stripe.

The label’s unparalleled reputation for style and excellence has been upheld by the strategic choice of personnel for key roles, such as current Creative Director Frida Giannini. Joining Gucci as Handbag Design Director, Frida ascended to the role of Creative Director of Accessories after only two years, and brought a powerful new perspective to the label’s extensive range of bags, shoes, luggage, silks, fine jewellery, watches and eyewear. Moving up again to become Creative Director of women’s ready-to-wear – while retaining her role as Creative Director of Accessories – Frida soon took on responsibility for Gucci menswear as well, becoming the brand’s overall Creative Director. Frida’s vision for Gucci has brought a 21st century spirit to the brand, moving it into exciting new realms while maintaining the traditions and achievements of the past. Recent innovations include the advent of bold architectural and interior environments for the Gucci outlets and the establishment of the Gucci Museo in Florence, which celebrates the evolution of the brand’s iconography. Frida has also fortified Gucci’s relationship with cinema through a number of avenues including a partnership with The Film Foundation, which was established by Martin Scorsese to preserve motion picture history. Committed to funding the restoration of at least one classic film per year, the foundation already claims Rebel Without a Cause, La Dolce Vita and Once Upon a Time in America among its significant international credits. And Frida’s astute stewardship of Gucci has itself been the subject of a film, The Director, which premiered at the 2013 Tribeca Film Festival. A documentary spanning 18 months behind the scenes at Gucci, The Director shines a candid light on the brilliant artisan who consistently reinterprets the brand’s iconic designs with her own sense of classic, contemporary style. In doing so, Frida is writing the next chapters of a wonderful true story that began in Florence nearly 100 years ago. Were he able to see the 21st century evolution of the small company he founded with a dream and a vision in 1921, Guccio Gucci would be a proud man indeed. But probably not surprised.

It is a common mistake made by many that personal stylists are only for the A-listers; this misconception is preventing many people from achieving their true potential both professionally and personally. “Stylists offer a great opportunity to get such a service for a reasonably small outlay,” says Brisbane’s leading fashion doyenne, Dianne Cant. Dianne became a personal stylist 30 years ago while teaching Wardrobe and Style at June Dally Watkins and says her clients now include ‘business men, career women, models, yummy mummies and students starting out with interviews and a new job’. “My first paying client – a medical student just through uni and working as an intern at The Royal Brisbane – said to me ‘I don't know anything but student dress, and now I am ready for the next level.' To the next level we went. I showed her the formula to a great wardrobe and then how to add her own 'signature' to it.”
Caitlin Harrison has worked in many areas of fashion, from PR to retail, so a career as a stylist was a natural progression. “I’ve always been interested in what suits different body shapes,” she reveals. “My clients come to me because they want a change – they want to KNOW what clothes work for them, they want to spend less and wear more and they want to feel amazing in the right clothes.” Who are these clients? According to Caitlin they are ‘Everyday women! They are mums and wives, they work, they don’t have a huge budget, but they want to look and feel fabulous!’ Gold Coast-based personal stylist Katherine Galvin says her interest in fashion dates back to her childhood. “I was always dressing up in my mother’s heels and I even had a special skirt for dancing when my favourite song came on,” she admits. “I’ve always had a love for fashion so fashion styling was exactly the right ‘fit’ for me.
Former theatre nurse, Sara Hatten-Masterson, has a similar story. “Spending my days in scrubs I always wore an amazing headscarf and bold lipstick, and talked about clothes all of the time! My colleagues told me that I should take people shopping for a living and although enticed, I didn’t really think this was a service for the everyday person, only for celebrities and the uber rich.” When Sara delved a little deeper and realised there was a market in Brisbane for this type of service, she completed her training as an image consultant, set up her website, and from there her business has flourished. “Most importantly, as a personal stylist I save my clients time, money and the disappointment of not being able to find things they love even after they have spent hours shopping,” Sara adds. “I can see a person differently and provide an honest and unbiased opinion, helping remove the barriers that we all have.” >>

My own journey as a freelance personal fashion stylist began in London when I was a fashion writer at Harpers Bazaar UK in my early 20s. I get immense joy out of helping people discover that they can look fabulous and feel confident no matter what their bodyshape, size or budget is. This seemed to be a recurring theme among the group when I posed the question – ‘Why are you a Personal Stylist and what is the most satisfying thing about your job? “It’s the perfect job for me!” Caitlin admits. “I get to combine my love for clothing and style, with my life-long desire to help people and make them feel good – I just happen to use clothes as the tool to do that.“ Katherine puts it more succinctly. “I like empowering people to look and feel their best!” According to Sara, ‘seeing people’s reaction when they look into the mirror or get home with their new items and they realise that they can look and feel amazing and find great items that really show their personality and figure in a way that they are 100 per cent happy with’ is extremely rewarding. While Dianne’s motivation is also quite simple. “Styling women who don't understand how wonderful they can look and feel by getting it right. When a client looks in the store mirror and says 'that is how I want to look, thank you’." So on to the real question, what makes or breaks an outfit? My own cardinal rule is ‘the foundations’ – always ensure that your underwear fits perfectly (wear a size larger to avoid pinching), creating a smooth canvas for your clothes to silhouette. According to Sara ‘a person looks great when their clothes fit well and complement their proportions’. “Choose one area to highlight,” she advises. “The face is always a good place to start so wear your best colours close to your face and add a fantastic neckline or accessory to draw attention to this.” Caitlin believes ‘the accessories, and the finishing touches’ can make an outfit. “You can just be wearing a simple tee and jeans, but the shoes, the bag, the jewellery, even how you’ve styled your hair and makeup, can take you from playground to dinner party!” I would like to end with a pertinent quote from Edna Woolman Chase (editor in chief of Vogue magazine from 1914-1952), 'Fashion can be bought. Style one must possess.' For those individuals who do not possess innate style it may well be worth investing in a personal stylist.

A staggering 90 per cent of the world’s natural Pink Diamonds are sourced from the Argyle Diamond Mine, located in the rugged East Kimberley region of Western Australia. Since the mine began production in 1985 just one per cent of the 600 million stones produced from Argyle are pink, ranging in colour from pale rose blush to vivid purplish pink, and occasionally striking reds. This fact becomes ever more poignant when you learn that the mine is estimated to be depleted of its diamond source in just six years. Given the imminent extinction there has been a noticeable surge of interest in the exclusive Pink

Village practice Sanctuary Cove Medical Centre is thriving under new management.
Sanctuary Cove Medical Centre’s new owners, John and Deanne Hummelstad, are bolstering their specialist medical services. The Hummelstads took the reins in February, drawn to the clinic because of its prime Marine Village location and established clientele. While continuing to offer general practitioner consultations, the medical centre now offers a range of specialist services in the areas of women’s health, paediatrics, injectables and anti-wrinkle treatments. “Sanctuary Cove Medical Centre has an established base of loyal clientele, many of whom have been coming here since it opened 15 years ago,” Deanne said. “In taking over the clinic, it was important for us to continue to provide for these patients while expanding our services. “That not only adds greater value for regular clients, but will help us in building the customer base.” Dr Hummelstad said Sanctuary Cove residents were traditionally proactive with their health and the Medical Centre had grown to be a pillar service business within the growing Marine Village.

“The most rewarding part of owning the clinic is having such strong relationships with patients – you’re working with people on a journey to better health and that is very rewarding,” she said. Deanne hasn’t always donned the stethoscope, having spent the first decade of her career working in the IT industry in Sydney. It was after returning to live at Hope Island on the Gold Coast to have a family she decided medicine was her calling. “My father worked as a haematologist and he was really my inspiration to pursue a career in medicine,” she said. “After completing my studies I went on to work as a doctor in the Emergency Department of Gold Coast Hospital for six years. “But it was a fast-paced, in-and-out atmosphere and I wanted to have a more personal and long term relationship with my patients, which drove me to open my own practice.” The Hummelstads have retained the clinic’s medical staff, many of whom are long-term employees who have established a rapport with patients. “We’re lucky to have inherited a great team of medical professionals,” Dr Hummelstad said.

The right fit Sanctuary Cove has boosted its health offering after a chiropractic clinic secured a space in the precinct’s iconic Jabiru House. Gold Coast Chiropractic has opened its doors on a 57sqm ground-floor tenancy in the distinctive two-level Jabiru House building, which sits at the entrance to The Marine Village Sanctuary Cove. The clinic offers a suite of medical services including chiropractic, naturopathy and massage therapy and is headed by entrepreneur Sharon Taylor. Sharon, who hails from the UK and has a passion for health, identified a niche market for specialist chiropractic services in The Marine Village. “Sanctuary Cove is an active community – for instance golfing is a big part of the lifestyle here – so the demographic is a great fit for us,” she said. “There wasn’t a chiropractor operating within Sanctuary Cove but there is a range of medical tenants that our clinic can complement. “Our location, which is on the ground floor of Jabiru House and fronts the car park, allows

visitors to come in and out with ease – there are no stairs to contend with which is important for clients who may have difficulty with mobility.” To build its local clientele, Gold Coast Chiropractic is offering Sanctuary Cove residents a discount on their medical services of up to 10 per cent. “Depending on the consultation, we’re offering discounts of between five and 10 per cent to locals,” Sharon said. “We’re in the middle of a thriving, established community and the nearest chiropractor is in Hope Island, so there is a gap in the local market we are looking to fill.” Gold Coast Chiropractic employs chiropractor Mark Alan Miller, who owned and operated several chiropractic clinics in the USA before moving to Australia last year. Pack your manners Etiquette expert, Patsy Rowe, shares some top travel tips. Who doesn’t love a holiday? To help make yours a hassle-free one, here are a few points to remember: check your passport is valid and note that some countries still require visas (in fact, some even require a different photo size which is a nuisance as it prevents you from using your passport photo). Processing can sometimes be drawn out so start early. Be sure to take extra photos with you and put printed copies of your passport in your luggage in case you lose yours. (The idea is not to keep these in the same place as the passport!) Hotels can be relied upon to supply hair dryers so unless you’re contemplating a walking safari in Africa or dog sledding across Antarctica you can leave yours at home. (Mind you, it would be challenging to find electricity in either of these locations.) Incidentally, it is extremely bad manners to pinch the hotel gown … just ask at the desk and they’ll charge one to your room. When booking don’t feel embarrassed to ask for details of accommodation in your hotel: you
may be shocked to find you’re booked into an un-airconditioned room on the seventh floor of a building with no elevator. The stairs may be a great work out for the calves but they are not such fun if you’re schlepping a 20 kilo suitcase, carry-on and a bulging-at-the-seams handbag. As for suitcases … I read where tying a coloured ribbon for easy identification was the go, but I tried this and when I got to the carousel I couldn’t remember what colour I’d used! Since carry-on luggage seldom leaves your sight, being able to identify it isn’t that important but weight is. If it’s too heavy to lift up into the overhead locker (and get it down every time you want something during the flight) you may need to jam it between your feet for the duration of the trip. It would be courteous to position it so that other passengers don’t trip as they climb over you. Don’t stint on clothes if you’re going on a cruise. Dress in the dining room varies from semiformal to smart-casual. Most cruise lines have a black-tie night every week so pack something
glamorous and make sure your partner puts in either a lounge or dinner suit. If you don’t fancy getting dressed up, all the ships offer casual dining either indoors or al fresco on the deck, however, it can get breezy so pack a pashmina or light cardigan. Leaving the ship for day tours can be trying if there are long queues for taxis and buses. Queue jumping is very poor form, as is pushing and shoving to get the best seat on the bus. Tossing your hat on to a seat and yelling: ‘I bags the window seat!’ will draw unwanted attention and make you appear selfish and mean-spirited. You’ll see these people back on the ship and they’ll remember you! Tipping is expected in some countries. A good guide is 10-15 per cent. Get into the habit of carrying smaller notes with you at all times. It is not acceptable to tip with a $50 note and ask for change. Hopefully these tips will come in handy next time you head off for a break. Bon voyage.

My mother – always an inquisitive soul where food is concerned – likes to tell the tale of our first pheasant, eaten when we lived in Scotland in my very early years. It had been hung (for how long exactly we never discovered) until the feathers began to fall, guts intact, ‘like meat crossed with blue cheese’. It wasn’t a hit. But times have changed.

Only two weeks ago I had a plate of pheasant at the Alliance Hotel in Brisbane. It was terrific, but a far cry from the sort of ultra-game that came with the bird of my youth. The rules governing how we handle meat in Australia is as clinical as it is obsessive, with the net result being sound, safe and rather soulless. If you think about pheasant meat, it is a bit too lean to meet the allure of chicken and a bit too lacking in flavour to match venison, goat, quail or squab. So Australian chefs using the meat need to make the most of the rest of the dish to add some impact. Hanging? … If only. Which sort of moves me forward some twenty odd years after Scotland to when I worked on a shearing team in far north-west Queensland, based out of McKinlay – a town most famous for its pub’s role as the Walkabout Creek Hotel in Crocodile Dundee. Every few days we’d bang a wether (castrated male) on the head and hang him in the meat safe (skin on but guts out), pulling legs and fillets from the carcass as required. McKinlay is hot in the summer, easily hitting 40 degrees as often as not. But the meat safe kept the maggots away, and it was dry heat, so aside from enzymatic breakdown I don’t reckon there was much going on to worry us. I can’t say the meat tasted great, but truth be told our camp-cook could curdle a tin of baked beans. These days I reckon I could make a serious feast of three-day, heat-aged wether. The point hasn’t been lost on butchers. Dry aged beef has become something of a darling for serious steak restaurants and our best butchers, despite the fact that it’s an old technique. It’s a relatively simple procedure that involves hanging or rack-ageing beef cuts in a controlled environment (near-freezing and around
dry aged steaks; their entrances make shrines of the hanging sections of beef. You can pay a goodly sum for a dry aged steak, but when you take into account shrinkage, time, expertise and the pedigree of the initial material it is small change. But there’s no need to travel outside Queensland to eat dry aged beef (even if the Rockpool Bar and Grill experience is worth a bit of effort). Moo Moo (both Brisbane and Gold Coast) has a couple on offer and the Regatta’s Boatshed restaurant makes a feature (visually and on the menu) of dry ageing. David Pugh, chef and owner of Restaurant Two, once cooked a guinea fowl that has stuck in my memory like glue. He’s an accomplished chef, but that particular dish was the best thing he’s ever done that I’ve had the pleasure to taste. Chef Pugh had aged the birds in the coldroom. I can’t rightly recall for how long, if they were dressed or intact with feathers and guts; or if he took many precautions. But boy … I’ve never had guinea fowl that has come close. There was a time when I had a flock of close to thirty guinea fowl, so they were on the home menu reasonably often. It’s an easier bird than pheasant when it comes to creating an interesting dish, but it’s not naturally imbued with a great deal of interest and complexity. So, it’s all about the enzymes! Last weekend I came home from the Granite Belt with a deer (or, more correctly, a third of a deer … I went with friends). The meat comes from a wild animal – and a male at that – so it’s already quite gamy, but my plan is to make it more so. I’ll tail a cut (probably the rib fillet) and I’ll try a little dry ageing of my own. If I survive, I’ll write about the results: wish me luck!

The new Nineteen Sanctuary Cove’s Café Nineteen has undergone a stylish revamp. What is it about pink champagne, with that tiny bit of colour, that makes the wine more celebratory, more feminine, and convinces us to pay half as much again for a bottle? Perhaps it’s the rarity. Perhaps it’s that strange affinity that an undefined percentage of the female (and no doubt some of the male) population seem to have with the colour pink, and perhaps it’s merely the strength of ‘brand champagne’ and the remarkable PR job it has done for the past century or so. Oddly enough rosé champagne has always been – in terms of importance for the producers
Champagne of course) with only a handful of the more serious rosé champagne makers taking on the task themselves. Only a small handful choose the laborious route of using skin contact. Not that one process is necessarily better than the other; just different. Let’s take Bollinger. It’s an exceedingly qualityconscious, traditional champagne house that takes no shortcuts. It has produced a vintage rosé for a long time, but a few years ago it began making a non-vintage rosé based on the exact same white blend as the Bollinger Special Cuvee, but coloured with a dash of red wine.
– an ‘also-ran’. There are a few houses, like Billecart-Salmon and Laurent-Perrier, that are understood to make really good rosé. But for most houses it’s a small part of the production … with a hefty price tag that we seem strangely willing to pay. Can we tell the difference? In a dark room, most of us, tasting the produce of most houses (white against pink) would struggle, myself included. But champagne goes way beyond mundane practicalities; we are drinking a story and buying the prestige that goes with that story. Let’s delve into it for a moment … Making white wine – still or sparkling – means taking the juice of the grapes away from the skins quickly. And because the colour pigment for all but a tiny few grape varieties are contained in the skins, you can make white wine from black or white grapes. In champagne, where three grapes are used, two of them (pinot noir and pinot meunier) are black. To make red (or pink) wine, you need to have the skins of black grapes involved somewhere along the line. Most rosé (pink) wines rely on a small period of skin contact before or at the very start of fermentation. It’s enough to drag a little colour from the skins into the wine without including too much tannin and aggression into the mix. But for almost all rosé champagnes the story is different. France has a blanket rule that rosé wines can only be made using a period of skin contact … except if you are making champagne. This lone exception allows producers to splash a little red wine into a white to produce a pink; go figure. And this far simpler method is the one followed by the majority of champagne houses. And most of those buy the red wine (made within the boundaries of
It’s uncanny (and possibly thanks to the power of suggestion) but that small change makes for a totally different wine – and a totally different price. It still has the trademark Bollinger aromas of grilled nuts, candied fruits and brioche, but there’s a discernible ‘pinkness’ – soft strawberries, cochineal and cherry – and a hint of tannin. It’s a subtle rosé. At the opposite end of the spectrum is the rosé from a small, fastidious house called LarmandierBernier. Every champagne it makes is quite unique and exceedingly expressive, but none more so than its rosé. Made from old-vine pinot noir from their Vertus vineyards, it’s deeply coloured, powerful, sinewy and even a little tannic – a far cry from the pale salmon, delicate things that tend to be favoured by champagne drinkers. Larmandier-Bernier is a chardonnay specialist, but not a drop of chardonnay makes the rosé: it is 100 per cent pinot noir that sees two to three days of maceration with the skins before fermentation with wild yeasts. It is extreme champagne – extreme wine – that begs for red meat and game: more like zesty red burgundy with bubbles than mild-mannered champagne with a lick of colour. It’s probably the most bombastic rosé in all of Champagne, and many different styles exist between Larmandier-Bernier’s extreme and Bollinger’s subtler affair. And there are some that make Bollinger seem quite brash. But the addition of a splash of colour adds more than just visual appeal and hint of red fruits. It also brings structure and strength, making them wines that are as comfortable on the dinner table – with salmon, poultry or even red meats – as they are as an aperitif.

Dynamic duo Two of the most desirable luxury convertibles have visited the Cove’s garage, but Chris Nixon finds the Bentley Continental GTC V8 and Jaguar F-Type are very different cars for very different purposes.
Bentley Continental V8 GTC The name Bentley, one of the oldest in the car world, implies a superiority few car makes can match. You know the Continental GTC V8 is going to be a grand car even before the key is turned. Except to turn a key would be old-hat. The Continental has a big button printed with the word START, enhancing the sense of occasion. This is our chance to test an example of the Continental range with the recently-introduced V8 engine now complementing the familiar W-shaped 12-cylinder. It’s also our first experience of the GTC convertible. Cote d’Azur, here we come. Well, perhaps the Cote d’Or will have to do ... I once saw a man spontaneously buy a powder-blue GTC with cream leather as a birthday gift for his wife. I’ve wanted to find out what one was like ever since. Sublime. It’s handsome, for a start, in a bulky sort of way. But the impression of size diminishes the more you drive. Inside is pure Bentley. Superb leather and carpeting, oodles of chrome around the instruments and the traditional bulls-eye air vents with organ-stop controls. Trim finishes include the choice of wood, aluminium or hi-tech carbonfibre. The Bentley motif appears on the steering wheel, pedals and door plates and is projected in the puddle lights shining under the side mirrors.

The front seats are large and superbly comfortable. In the rear are two individual posies sunk deep in the bench; very cosy. If you want to spend the money, the entire interior finish can be personalised to your individual preference. The four-layer folding fabric roof insulates noise almost as completely as the fix-roof coupe. So far, what’s in the box matches the specifications of the W12-engined big sibling. The V8 makes a significant difference. For starters, the list price of $407,000 is $42,000 less than the W12 GTC. The twin-turbo, Audi-derived 4.0 litre V8 might be less powerful at 375 kW, but it is also slightly lighter and this is surprisingly noticeable from behind the wheel. The lovely-sounding V8 certainly feels more agile, though never let it be said the GTC is a sports car; it’s a fast luxury tourer. Almost 2.5 tonnes of high-powered comfort won’t dart around bends like a Mini. It helps that the GTC has air suspension and full-time all-wheel drive, though. The air springs give a well-cushioned ride and AWD ensures secure road grip, especially on wet surfaces. Connected through a new eight-speed automatic transmission with paddle shifters, the engine drives the GTC V8 from rest to 100 kmh in a claimed 5.0 seconds – an impressive feat considering the static intertia of all that weight – and on to 301 kmh.
While the standard GTC V8 is wonderful, don’t think you’ll escape without spending more than the price on the windscreen. The standard specification is unlikely to include everything you think you want. Our test car came loaded with $60,000 worth of optional extras and even then I doubt the list reached the bottom of the goodie sack.

The costs are never a surprise at this end of the market: special paintwork $8600, cross-stitched upholstery $7000, space-saver spare wheel $1300, Mulliner sports appearance enhancement pack $24,500 and a convenience pack including rear-view camera and adaptive cruise control, $7700. The last item is disappointing – cameras come free on sub-$20,000 hatchbacks. But we’re being picky. If you’ve got it, flaunt it, and the Bentley Continental GTC V8 is magnificent. >>

JAGUAR F-TYPE Few cars have faced more expectations than the F-Type, which reached our shores last year. It was as though all the other excellent Jaguar sports cars since the fabulous 60s E-Type hadn’t counted – F-Type was to be the E-Type’s true successor. That’s a tall order in the 21st century, when technology has made all cars more equal. There may never be another car as glamorously original as the E-Type, a car perfectly suited to its swinging era, but the F-Type is unquestionably a fine and distinctive sports car. Against rivals from Porsche, BMW or Mercedes-Benz – there aren’t really any others in this segment – the Jaguar looks most like you’d want a sports car to look, low and slinky and with great proportions and fine details such as its exquisite tail.

It’s available in two versions with a supercharged V6 engine and one with a supercharged V8, priced at $138,645, $171,045 and $201,945. Since our test of the mid-range V6S roadster, Jaguar has released a coupe with lower prices for the V6s and higher for the V8 and – if it were possible – even prettier looks. Being a true sports car, the F-Type has been designed with performance as the priority, which results in some things also having lower priority. The F-Type’s shortcoming is a lack of boot space, at least when an optional spare wheel is fitted. I should explain: it’s customary these days for many new cars to be sold without a spare, to save money, weight and space. Should the buyer require one, it’s an optional extra – extra cost and extra space. The Jag’s wheel is huge and parks
right in the middle of the boot – there seems to be no well or recess in the floor – so you can’t do much more than stuff loose shoes or jackets or maybe a grocery bag around the sides. No luggage room for a bag in the boot or the cabin if you want to travel with a spare. I would take my chances, given the low odds of getting a puncture these days, and rely on the free roadside assistance included in the ownership package. But let’s not worry about unimportant things and get out on the road. I’ve only driven the 3.0V6S with 280 kilo Watts of power, which by many other accounts is a good compromise between performance and price. The ‘base’ V6 has 250 kW and the V8 364 kW. Performance is certainly strong – 0-100 kmh acceleration takes a claimed 4.9 seconds – but in

a sports car like the F-Type it’s less about raw power than the total package, how it steers, turns, rides and stops. On all points, the Jaguar F-Type scores well, although the ride comfort drops off somewhat when you leave the highway for less-smooth back roads. Acceleration and rolling throttle response is more than most drivers will ever want. The supercharger, which does exactly like it sounds it would, guarantees an instant shove in the back. The Jag’s point of difference is a loud and wonderful exhaust sound when the throttle is floored. It’s enjoyable enough at the best of times, but with something called an Active Sports Exhaust (optional on the base V6, standard on other models) it’s pure theatre. Baffles in the exhaust system open at a certain point to release, literally, full noise through a pair of trumpetshaped tailpipes. Enjoyable, yes, but I felt self-conscious every time this happened and questioned the need to have noise-on-demand just for its own sake. Inside the cabin is everything one expects of a Jaguar – premium materials on all surfaces, classy design and impeccable finish. More space for small items like phone, wallet and water bottle would be welcome. As it’s a sports car, you’ll want to drive with the roof down, especially on a summer night, but should you feel the need for shelter the fabric top rises into place in just 12 seconds while travelling at up to 50 kmh. Purists will spend much time debating whether an F-Type convertible is better than a Porsche Boxster. Each has the same goal of being a true sports car worthy of their famous badges. How you get there is what matters and for those who value style as well as ability, the Jaguar is hard to pass.

Leigh-Smith Cruiser Sales has moved into its new premises on Quay Street and is also occupying three 40 metre berths in the marina. The move comes after 16 years at Gold Coast City Marina at Coomera where the Leigh-Smiths had operated the shipyard, marina and sales operation founded by their family in 1964. The brothers have decided to concentrate on new luxury boat sales, ranging from $750,000 to multi-million dollar watercraft as well as

Is there a particular place on your travel ‘bucket list’? I’ve always wanted to do Las Vegas for New Year’s with my close girlfriends. It seems like a fun place to let your hair down – not The Hangover style though. We’d be sipping cocktails poolside and shopping. But I’d also have to do the helicopter trip to the Grand Canyon. Where would you go if you could travel in luxury to anywhere in the world? The Maldives. I’m already picturing myself sunbaking on a deck chair outside one of those villas on the water. Share your best/strangest travel story: Strangest – Being caught up in the Vancouver riots in 2011 while visiting friends. It was chaos! I quickly learnt how to drive on the other side of the road while rushing one of my friends to hospital after a glass bottle and tear gas hit him. What is your most essential travel item? A camera. I love filling my house with framed pictures of the amazing places I’ve been. My favourite so far is one of a remote outdoor church I stumbled across while quad biking in rural Thailand. Who would you most like to sit next to on a long flight and why? How do you pass the time while in transit? It’d have to be a book! I couldn’t put down Russell Brand’s My Booky Wook in New Zealand in June. What has been your best/favourite overseas purchase? My Jimmy Choo handbag splurge while shopping on Fifth Avenue in New York in 2012 – it never leaves my side. Best impulse buy ever!

With so many ideal honeymoon locations to choose from, it was a hard task for Cove Travel’s Leslie Pomana and her husband Sam to decide on just one destination. Seeking a combination of sun, surf and city, they first flew to San Francisco to begin their post-wedding adventure. Checking into the Warwick Hotel, located just steps from Union Square, the travellers were enchanted by the historical features of the building, which was also ideally located for shopping, dining and sightseeing. A hop-on, hop-off bus tour was the perfect opportunity to view the city at large and get their bearings, while a visit to Alcatraz Island, located in the San Francisco Bay, was an eyeopening experience. An audio tour of the prison and an introduction to the last surviving inmate was humbling and gave the couple an insight into the island’s history. Hiring a car, Sam and Leslie proceeded down the coast to Santa Cruz. The town stakes its claim as the birthplace of surfing in America and with its picturesque coastline, moderate climate and alternative community lifestyle, the relaxed mood of the locale was contagious. Staying at Hotel Paradox, the couple admired the stylish furnishings and the central location of their accommodation. A stroll down the Santa Cruz Boardwalk was an easy and enjoyable way to spend their time. Travelling along the Californian coast once more, they headed down Highway One towards San Diego. The highway is renowned for its postcard perfect views of the shoreline, with sea lions basking and playing in the sun. >>

On their arrival, Sam and Leslie instantly fell in love with San Diego. Immersing themselves in the city scene, the pair attended a Padrès game at Petco Park – an open-air ballpark. With exposed white steel, dark blue seating and Indian sandstone cladding, the unique architectural features of the ballpark reflected a vision of sailing boats, blue waters, sandy beaches and the San Diego cliffs. The game was a highlight of the trip, with the sheer volume and excitement of the crowd creating an unforgettable atmosphere. The neon city was calling as they set out towards the bright lights of Las Vegas. The Cosmopolitan, featuring urban opulence throughout, boasted the most luxurious accommodation of their trip. While in Vegas, the couple attended the Cirque du Soleil performance of Michael Jackson ONE. The extraordinary synthesis of dance, music, acrobatics and visual effects took the audience on a journey through the music of the ‘King of Pop’. Breathtaking choreography with an urban hip hop influence and incredible aerial performances created a fitting tribute. With their trip drawing to an end, Leslie and Sam flew to Hawaii for some rest and relaxation. Instantly welcomed by the lush, tropical gardens and sea breezes of Waikiki, they settled into their room at the Hilton Hawaiian Village.

A new lacquered kitchen with stone bench tops was installed prior to the fresh carpet being laid. A commercial clean was done and then the furniture and soft furnishings were installed. The apartment now takes on a luxurious and contemporary feel, with calming neutral tones and a well-spaced layout. The strong yet minimal décor adds a sense of style and sophistication, while the subtle use of timber creates a relaxed and comforting feel The entire job was completed in just under nine weeks to a very delighted owner’s surprise and satisfaction.

advice. Through the use of their premises and social media for advisory services, community initiatives and support, branches have an opportunity to strengthen their importance. A digital focus In this world of the ‘Internet of Things’, Financial Service organisations need to provide their customers a seamless cross-channel experience across multiple touch points (including search, social media, Internet banking, ATMs, corporate websites, microsites, mobile/tablet, customer contact centre and branch network). This ‘ecosystem’ should be dynamic and flexible enough to be able to continually update and further develop its capability to improve the customer experience. All customer communication should be driven by targeted analytics – leveraging the wealth of customer information and data to provide them with
a highly personalised, tailored and relevant experience to help them achieve their goals. Digital today is much more than a website … it’s mobile, social, location aware, dynamic, personalised and offline too. Customers expect this and financial service organisations must be able to deliver to stay relevant and competitive. Banks need to be focused on developing a true multi-channel customer experience enabling customers to do business with when and how it suits them.

Centre stage Sanctuary Cove’s stunning Marine Village has starred in a landmark film project.
Project: One Shot, a 15-minute film that is poised to reach a huge international audience, is a collaboration by the Queensland film industry and is directed by Gold Coast resident and internationally acclaimed director Darwin Brooks. Filmed in one take at locations throughout The Marine Village in September, Project: One Shot is a light-hearted comedy that involved an impassioned group of 15 writers, 100 actors and a crew of more than 50 industry professionals. Their collective creativity saw the entire film, comprising more than 30 individual scenes, filmed in a single, rolling shot. Darwin Brooks, the son of DBI Design founder Desmond Brooks, said Sanctuary Cove was chosen for the unique backdrop and the stylish air it brought to the film. “It worked well with the script because there is a glamorous element to the storyline and also because it’s an iconic precinct on the Gold Coast,” he said. “We looked at other locations like Surfers Paradise and Broadbeach, but it would’ve been logistically impossible to make a film in one shot in such open and busy areas.

“Sanctuary Cove’s Marine Village was identified as the best filming location for these reasons.” The fact that the Village Roadshow Studios are nearby at Oxenford was another tick for Sanctuary Cove. Project: One Shot stars Sea Patrol actors Ian Stenlake and John Batchelor, Joss McWilliam (Water Rats), Channel 7 presenter Liz Cantor, and Big Brother 2013 housemate Ben Zabel. The crew required for the one-day shoot included a director of photography, sound technicians, hair and make-up artists, several assistant directors, traffic control officers, stunt coordinators, behind-thescenes cinematographers, and costume and set designers. The end product is a single Steadicam shot following Ian Stenlake and John Batchelor as they wind their way through a series of interconnecting mini scenes across The Marine Village. Darwin said the scale of the film production and collaboration was unprecedented. “It’s never been done before,” he said. “A single shot is the toughest shot to achieve, physically and logistically.
“The cast and crew were required to rehearse many times with and without the camera, however there was only a single day spent on location. “The concentration levels needed to remember every twist and turn of the shot along with the physical demands of carrying a heavy camera are a remarkable responsibility.” The Gold Coast Indie Film and TV Network will present the film at Jupiters Casino in November, and it will also be submitted to the Cannes Film Festival as well as film festivals in New York and Los Angeles. During his 20-year film industry career, Darwin has worked with leading actors Hugh Jackman and George Clooney. The long list of films he has worked on includes The Turning, The Great Gatsby, Charlie’s Farm, The Suicide Theory, 47 Ronin, The Railway Man, Australia, Prince of Persia, Syriana, Alexander and Peter Pan.

A creative career Claudio Kirac has forged a successful career, with a focus on the arts and popular culture.
With a career spanning more than 20 years as a professional artist, photographer, designer and consultant, Claudio Kirac is one of the Gold Coast’s most respected creatives. Currently the artist-in-residence and curator at St. Thomas Studio, a community art space on Chevron Island, Claudio works primarily within the fashion and music industries. One of his recent projects featured the very beautiful and very talented Robby X, a local singer/songwriter who is set to release her debut album, Obsession, in November. The photoshoot produced a stunning series of images, including the Cove cover shot which also showcases the original ‘Heartbreak Hotel’ sculpture Claudio created for his solo exhibition, Love Letters, earlier this year.
