editor’s letter Welcome to our special sixth anniversary edition. Can you believe it has been six years since we produced the very first edition of the Cove magazine? Naturally, there have been some modifications over the years, and when better than an anniversary to introduce a ‘new look’. Fresh fonts, redesigned layouts and more streamlined editorial are just some of the changes you will find throughout this latest magazine. Of course, in this issue, as in every issue, we strive for the perfect balance of content … Our feature article is Robert De Niro. From his early roles in movies like Taxi Driver to his reincarnation as a comedic actor in Meet the Fockers, this Hollywood legend is just as awe-inspiring off screen as he is on. Car enthusiasts will enjoy our comprehensive motoring feature, which showcases the latest releases and prestige brands. And for the ‘boaties’ we preview the 2013 Sanctuary Cove International Boat Show, which, incidentally, is also celebrating a major milestone – its 25th anniversary! house of Dior Christian Dior … the talented French designer founded one of the world’s most remarkable and enduring fashion houses. words Susan Lang-Lemckert

With art, as in life, timing is everything. And few have timed things with more precision – or style – than legendary French designer Christian Dior. Like being born in the 20th century, when unprecedented social and economic upheavals not only made his innovations possible, but ensured their triumph in the modern world. And the launch of his striking new designs into a market hungry for style after years of wartime deprivation. And even in having the foresight to groom an early protégé – one Yves Saint Laurent – whose exceptional talents saw the House of Dior continue to grow in the aftermath of its founder’s premature passing. Even today, more than 60 years after his death at the age of 52, Dior is considered one of the most important designers of recent history, although his time at the helm of his own label spanned only ten years. Fashion design would have been denied his talent altogether had Dior followed the more traditional career his parents had hoped for. Appalled by his aspirations to study architecture at the Academy of Fine Arts, they insisted he enrol at the prestigious Ecole des Sciences Politiques with a view to becoming a diplomat. But it soon became evident that Dior’s passions lay elsewhere – his love of all things artistic saw him frequenting galleries, cafés and bars with a bohemian coterie, reputedly including Picasso and Cocteau, who shared his eclectic interests. Following a period of conscription with the Fifth Engineers Corps, Dior sought to set up an avant garde gallery with a friend, and to his surprise, his father, Maurice Dior – by now accepting of his deep love of art – gave him the capital to do so. But there was a proviso – he must never allow the name Dior, at that time synonymous with the family’s prosperous fertiliser manufacturing firm, to be associated with the artistic venture. The joy of the gallery’s initial success was tempered by a dark period for the Dior family, when Christian’s brother died, his mother fell fatally ill, and his father lost everything in the wake of the 1929 stock market crash. Then Christian’s gallery also failed, and he developed tuberculosis ... so he went first to the Pyrenees and then to Ibiza to recuperate. Determined to succeed on his return to Paris, Christian first produced and sold fashion sketches to haute couture houses, then became a full-time designer for couturier Robert Piguet. Here he found instant success with his Cafe Anglais dress and other designs, before his new career was interrupted by another spell in the military as the Second World War began. But by 1941 Dior was back in his niche, this time designing for Lucien Lelong during an exciting period for fashion where the extraordinary creativity of French designers not only met but triumphed over the strictures of wartime. >>

In 1947, entrepreneurial UK firm Dereta sourced sufficient fabric for 700 New Look-style suits from Dior ... a veritable treasure trove in post-war England, where clothing coupons were still in use. All were quickly snapped up by women keen to escape the unglamorous strictures of wartime austerity.

A show at London’s Savoy Hotel that same year led to an invitation from the Queen for Dior to present a private show for the royal family. Though all in attendance were suitably impressed, King George V forbade the young Princesses Elizabeth and Margaret from wearing New Look outfits. He felt their doing so would be insensitive to a general public still living with post-War rationing.

Dior’s growing renown saw him establish his own fashion house just after the war, with financial backing from textile magnate Marcel Boussac, who was also known as the ‘King of Cotton’. He had a deep faith in Dior’s vision to revolutionise fashion as an art form, and to successfully launch that art form into a welcoming, style-starved marketplace. And the passing of Christian’s father Maurice freed him to use the family name for his new venture. Opening Christian Dior Limited in grand style with premises at 30 Avenue Montaigne, a staff of 85, a signature fragrance – Miss Dior, and a collection of 90 designs, Dior was always destined for great things. Though named ‘Corolle’ and ‘Huit’, this debut collection’s opulent, feminine lines became universally known as the ‘New Look’ courtesy of a quote from Harper’s Bazaar’s Editor-in-Chief Carmel Snow, and proved so popular that the store had to remain open into the evenings to meet client demand. Dior’s widespread success saw rapid expansion, including the opening of a boutique in New York City. And by 1949 – only two years after the company’s official launch – Dior fashions accounted for 75 per cent of Paris’s fashion exports, and generated 5 per cent of the country’s total export revenue. By this time Christian Dior’s name had become as prestigious as his designs and fragrances, and a licensing program for luxury accessories like neckties, furs, hosiery, hats, gloves and jewellery began. Though initially considered by some as an unseemly move for an haute couture label, this innovation proved immensely profitable, and was subsequently adopted by many other fashion houses. As his empire grew, Dior opened more international outlets and continued adding new products – footwear, lipstick, and even his own model agency, the London-based Christian Dior Models Limited. And in March 1957 he became the first fashion designer to grace the cover of Time magazine. Only one other designer, Giorgio Armani, has been similarly honoured. Though tragic, his sudden death in 1957 did not spell the end of the company Dior had worked so hard to establish and steer to prominence. Yves Saint Laurent, who’d been appointed as Dior’s first (and, as it transpired, only) Head Assistant and whose artistic development had seen 40 of his designs included in the 1957 collection, was ready and perfectly poised to take on the role of Head Designer. Indeed, his first collection after Dior’s death was designed in only nine weeks, and he was lauded as a national hero for retaining the essence of Dior while creating softer, lighter lines and garments that were easier to wear. And so the House of Dior continued to expand into new realms – including babywear, knitwear, cosmetics and skincare, menswear and watches – as the 20th century progressed and became the new millennium. Today the company has a retail presence in six continents, with more than 200 outlets throughout the world, and remains as synonymous with style and luxury as was Christian Dior himself throughout his short but prolific lifetime. It’s fitting that a favourite quote from the man behind the label: ‘True luxury requires genuine materials and the craftsman’s sincerity. It is only meaningful when it respects tradition’, still serves as the company’s mission. And there’s no doubt the Dior family would be very proud of the enduring fashion legacy he created that’s now inextricably linked to their world-famous surname.

wedded bliss Designer profile – DARB Bridal Couture designer and owner Brad Webb. Have you always had an interest and talent for fashion design? What made you specialise in bridal couture? I have always loved fashion and fabrics and playing with textures. Bridal couture really gives you the opportunity to create a special gown for a special day. Your exquisite designs are highly sought-after. What steps are involved in creating a gown? When designing for the collection I start with the idea then source the fabrics or prepare fabrics such as having beadwork done. I then work on the pattern and once that is created I try it out with a toile so the pattern and cut can be fine-tuned. After that it’s time to move into the beautiful silks – this is where the design really starts to come to life. A little more playing and creating along the way and voila … a new gown.

What is the most important aspect of designing a dress for a bride? Are there more elements to consider than the fabric and design? One has to take into account the style of the wedding and the bride’s figure and her personality. There are many designs that will look fabulous on a bride but there will only be a few that a bride feels confident in … and that is the most important element. It’s all about looking terrific and being able to carry it off. How does designing a runway collection differ from creating a dress for an individual bride? Designing for the runway means more freedom in design. While I still like to create wearable couture for the runway you can afford to be a little more exaggerated and dramatic than you might for a customer. There is also a little more freedom as the model just has to look great walking the length of

the catwalk, you don’t have worry about mundane aspects like sitting down, fitting into a car and not crushing the fabric for example. Where do you draw your inspiration from? It comes from all over the place. Sometimes I will start with a fabric and let it guide the design from there and other times it may be a Renoir painting or maybe some exquisite architecture. Do you have a gown that was particularly memorable to create? There have been many but, of course, some of the award-winning gowns do stand out. (Is that indulgent of me to say that?) I guess the first Supreme award-winning gown is a particular favourite of mine. It had the most exquisite English lace and organza fabric that I teamed with beautiful Swarovski crystal beading … the textures just worked together beautifully.


If you had the opportunity, which fashion designer would you most like to meet and why? Oh Christian Dior ‌ totally classic and totally chic. When you are not designing beautiful gowns, how do you unwind and relax? I am a bit of a home body and living at Sanctuary Cove makes it very easy to relax. I love to go down to The Marine Village on Sundays for a meal or maybe a swim in the pool, and its always very revitalising to just go for a walk round the streets. If you could travel anywhere in the world, where would you go and why? I have just been fortunate enough to spend five weeks in Europe over Christmas checking out some of the famous sights which was amazing. The buildings, which are a passion of mine, were incomparable ‌ to think what they have seen and what stories they could tell! Carla Maria Zampatti AM is an accomplished woman, both in the fashion industry and out. Her values of family, quality, and self-belief are uncompromised and they are the key to her success. Carla, along with many fashion greats including Valentino Garavani and Miuccia Prada, hails from the Northern Italian region of Lombardy. She emigrated to Australia with her family at age nine, and in response to that completely new beginning, she values the importance of family. Quality time with them is something she has never compromised on. Weekends were always dedicated to family, and in this way Ms Zampatti successfully pioneered motherhood as a businesswoman. A testament to her close-knit family ethos, all three of her children are involved in Carla Zampatti Pty Limited; Alex Schumann sits on the Board of Directors, daughter Allegra Spender is the General Manager, and her sister Bianca Spender joins her mother in the design atelier. Raised in Lovero, a picturesque village nestled deep within a valley of snow-capped mountains, Carla has fond childhood memories of accompanying her mother through the narrow streets of her hometown to the dressmaker. Recalling the genesis of her design ambitions, Carla described her creative inspiration in an interview with Sandra Sully in 2012; “The dressmakers were very creative, and ready to wear wasn’t available. You went along to your dressmaker and you talked about your needs and they came up with styles … I thought that was really an exciting, creative environment – and I thought later on, when I grow up, that’s what I want to be.” Upon her arrival in Australia, Carla was faced with a starkly different world of fashion. The typically Italian design philosophy of subtlety in colour and cut was exchanged for the mass-produced readywear fashion of 1950s Australia. Inspired to revolutionise the Australian fashion industry, Ms Zampatti released her first small collection in 1965, followed by the national launch of Zampatti Ltd in 1967, and then the establishment of Carla Zampatti Pty Limited three years later.

She also holds a Directorship with the Westfield Group, is a Trustee of the Sydney Theatre Company Foundation Trust, and is a Board Member of the Australian Multicultural Foundation. Carla has been recognised with a number of Australian and international awards for achievement and excellence. She is a Member of the Order of Australia (AM), was a Bulletin/Qantas Businesswoman of the Year, and in 1994 the fashion industry of Australia named her Designer of the Year. In 2004, the Italian government appointed Carla Commendatore (Commander) in the Order of Merit of the Italian Republic. The Australian Fashion Laureate was awarded to her in August 2008. Already being a Member of the Order of Australia, Carla was appointed Companion of the Order of Australia (AC) as part of The Queen’s Birthday Honours in June 2009. It is this final honour that recognises Carla Zampatti AM as a remarkable role model for women. Japanese luxury car brand Infiniti has now joined the ranks of Porsche, BMW, Mercedes-Benz and Audi in Australia with a vehicle line-up promoted as ‘performance luxury’. Long established throughout the USA and Europe, Infiniti has entered its boutique Australian showrooms with four exciting models: the FX crossover, the Infiniti M sedan and a matching pair of two-door sports cars, each known as the G37. A ‘performance cross-over’, the Infiniti FX is not a traditional luxury SUV. It’s more a sports car blended with an SUV’s stance, with handling more akin to the former. Buyers can choose from three different engines – a 235kW 3.7-litre petrol V6, a 550Nm 3.0-litre turbo-diesel V6 and a 287kW 5.0-litre petrol V8 with a 0-100km/h time of only 5.8 seconds, faster than a Porsche Cayenne S. Next up is the company’s luxury sports sedan, the Infiniti M. Like its FX sibling, it features distinct styling and an emphasis on driving dynamics. Again, three engines are available: the same petrol (M37) and turbo-diesel (M30d) V6s in the FX as well as a high-tech 3.5-litre petrol V6 hybrid, called the M35h. It’s not an ordinary hybrid. The good folks at Infiniti have used its highly efficient electric motor for fuel economy and propulsion so it’s a surprisingly fast car. Sports car lovers will find Infiniti’s G37 Coupe and matching G37 Convertible models very tempting. Powered by the marque’s 235kW V6 engine, they offer dynamic handling and rapid acceleration in a rich equipment package. The G37 convertible’s retractable metal roof gives open-top motoring for four. Joining the Australian Infiniti range later this year will be the stunning new Infiniti Q50 sedan. This model is a technological tour-de-force and if reactions at its Detroit Auto Show world premiere are any indication, it will prove a seriously popular challenger in this all-important part of the luxury car market. “Infiniti is a luxury car brand for those who don’t always want to follow the crowd. Providing true, traditional Italian cuisine as it happens in the kitchens of Italy – fresh, vibrant dishes that rely on the quality of their ingredients for their beauty.

There is a wealth of great dishes and millennia of culinary tradition that make up the various cuisines of Italy. Tartufo Ristorante is one of the leaders of the modern pack: providing true, traditional Italian cuisine as it happens in the kitchens of Italy – fresh, vibrant dishes that rely on the quality of their ingredients for their beauty. Located in the chic Emporium precinct in Brisbane, Tartufo is owned and run by Tony Percuoco and his wife Gordana: the kitchen is Tony’s domain and the front of house Gordana’s, but in true Italian fashion those boundaries are often blurred: a swing of the kitchen doors, a flash of chef’s whites and Tony is doing the rounds of the tables, giving diners that extra bit of magic, the personal touch that seems endemic in European hospitality. The journey to Tartufo has been a long one. It begins in Naples – Tony’s birthplace – and a family steeped in the food game. His father Mario had

restaurants in the home country before moving to Australia in the 1970s and making his mark here. “My late father was my inspiration, my older brother Armando from Buon Ricordo in Sydney is my mentor,” Tony admits. Tony was never in doubt about what he wanted to do with his life and in 1973 he began work at Bennelong in the Sydney Opera House, making his way up the ladder of the kitchen brigade through a number of Sydney restaurants until finally opening his own: Senso Unico in Surry Hills. His first restaurant in Queensland was Grissini on the Gold Coast. And Fellini, which he owned and operated with his brother Carlo and sister Anna, remains a Gold Coast icon despite the fact that Tony went on to open Tartufo in Brisbane. Asked about the move, Tony admits it was inspired by the dawning of our capital’s cosmopolitan age. “The reason I moved to Brisbane was purely a business decision to go back to a city and, yes,

Brisbane does remind me of Sydney or Melbourne in the mid 70s,” Tony explains. “It now has a café, wine bar and restaurant culture that is alive and well and apart from this, the art, opera and theatres are now of world standard.” So what makes Tartufo tick? For starters it inhabits a sublime space, a recreated golden-age brasserie (is there an Italian equivalent for such an evocative French term?) with a magnificent sweeping nickel bar, ornate ceiling, booths, nooks and acres of leather. There’s a cracking wine list that covers the better end of the domestic wines as well as a smart cast of Italian labels. But the deal-maker is a menu that is distinctly contemporary (without the frills and gastro-trickery) yet has its feet firmly planted in Italy. “A lot of the dishes in the restaurant are from classic Italian cuisine or many family recipes. A few modern techniques are used but you will not find any foams or stacked food,” he says. “My food is simple and the main ingredient is the star, not to be camouflaged by too many ingredients around it. But above all each dish should be a perfect balance of acidity, texture, aromas and clean flavours.” He’s not kidding. Tartufo peddles a menu wrapped around fresh produce, accompanied, cooked and presented with a sensitive touch. And it shines even brighter thanks to impeccable service and a lustrous setting. “A good restaurant is one that provides a good clean service with a smile and food that is easy to understand. Sometimes a so-called fine dining restaurant will have the waiter explaining a romance novel instead of just the simple facts of the food.” For some folk the hospitality game is a job, a way of making a living. For others it’s a passion and a way of life. As diners it’s easy to sense the difference: even the best run-by-numbers restaurant will always feel a little ‘hospitality by rote’. However, a restaurant run from the heart is imbued with imagination and sensitivity. That’s the restaurant worth visiting. For Tony Percuoco it has been quite a journey from Naples to Brisbane, spanning decades, miles and a wealth of experience. But it’s a journey that seems to have taken him closer to his roots, not geographically but creatively. In doing so he is bringing us closer to the elegant, fresh and vital side of Italian cuisine.

Beef Ingredients 400g Black Angus eye fillet Method 1. Slice beef into 2 even pieces. 2. Season with salt, pepper and oil. 3. Sear beef in a fry pan on all sides until rare. 4. Place in fridge until cool.

Ponzu dressing Ingredients 100ml low salt soy sauce 50ml rice wine vinegar 50g brown sugar 50ml lemon juice 50ml lime juice 50 ml fresh ginger juice (grate fresh ginger and squeeze through a fine strainer or through a clean kitchen cloth) Method 1. Place all ingredients in a bowl and mix together until sugar is dissolved.

Garlic chips

Method 1. Whisk the egg white and the cream of tartar to a foam and start adding the caster sugar in three additions. 2. Slowly increase the speed of whisking. 3. Continue to whisk until a firm peak is achieved then add the colour. 4. Transfer to a large bowl and slowly add the tant port tant followed by the icing sugar. 5. Change to a spatula and work the dough until it becomes shiny. 6. Pipe onto a non-stick pastry mat or lined baking tray using a 10mm plain piping tube. 7. Bake at 160째C for approximately 9 minutes.

Chocolate Filling Ingredients 200g milk chocolate 150g cream Method 1. Melt the chocolate in a double boiler and stir in the cream and butter. 2. Mix well then cool.

To assemble

1. Place about a teaspoon of filling on the flat side of one macaron shell. 2. Cover with another shell and twist until filling is evenly spread. Makes 30

Craggy Range Te Muna Road Vineyard

The wines of today have the underlying power that seems to be inherent – a trait of the soils, sun and climate of the district – but they are graceful and restrained, whispering, rather than shouting their virtues: that’s the stamp of great pinot noir.

This year marks a decade since the first release from the Craggy Range Te Muna Road vineyard. It’s an important jewel in the company’s impressive collection of vineyards making distinctive wines across four different varieties. And while sauvignon blanc takes up the largest share of the vineyard, it is pinot noir that holds pride of place. The Te Muna Road vineyard lies in Martinborough, about an hour’s drive north east of Wellington at the southern end of New Zealand’s North Island. Most pinot-philes will agree that New Zealand has two regions that vie for the title of the country’s best for pinot noir – Central Otago and Martinborough – so

it is a fairly hallowed place. The Te Muna vineyard – with a total area of 167 hectares with 94 planted – is therefore a serious asset, and the largest single parcel in the Martinborough district. Over the past decade it has been enthralling to watch the Te Muna pinots evolve as vine age, winemaking experience and fashion have cajoled its style. When the 2006 vintage arrived, the Craggy Range team felt that the Te Muna vineyard had matured enough to warrant the release of the first Aroha – an ultra-premium pinot noir that sits alongside Sophia, Le Sol and the rest of the Craggy ‘Prestige Collection’. Aroha is simply stunning. It has the trademark ‘Craggy Range’ brightness – almost glowing purple – and a silkiness and polish to its texture that is found across the Craggy Range reds. In Martinborough terms (where weight and power tend to define many of the pinots) it is restrained and elegant, but there is structure and persistence that will give plenty of cellar life. Craggy Range, with a mere decade of production, is a relatively new arrival to Martinborough. The first of the modern winegrowers set their roots in 1979 and 1980: Ata Rangi, Martinborough Vineyard, Dry River and Chifney. All but the last are still going strong, and regarded as world-class producers. Dry River is something of a cultish legend. Its wines are expensive and rare, and its style of pinot


noir is quite singular: boldly structured, deep and brooding. They are wines that demand cellar time to unfold, and when they do, they give an exotic kind of love … in spades. Expect to pay well over $140 a bottle for Dry River pinot in a retail store, and more than $200 in a restaurant … if you can find it. For a Kiwi that’s pretty big money, but on the world stage it’s small change for a great pinot noir. Martinborough Vineyard was begun by a group of six friends who shared a common vision to make great wine. By 1986 they had taken on Larry McKenna as winemaker – a decision that I reckon was pivotal to its success. McKenna (a defected Aussie) is a man of crystalline vision and great talent. He was unabashed – in the face of a plethora of soft, pretty Antipodean pinot noirs – about making wines with tannic backbone. The Martinborough Vineyard pinots aged like few others, and amassed a string of awards amongst global competition. McKenna left after fourteen years to do his own thing at Escarpment (a sizzling Martinborough label), and Claire Mulholland has steered the Martinborough Vineyard style ever since.

Sometimes I wonder if common perceptions are really only my own. Probably. Still I’ve always had the idea it is commonly perceived that the two foremost New Zealand names for pinot noir are Felton Road and Ata Rangi. Don’t ask me why … I just have that feeling. Felton doesn’t belong in this diatribe because it is grown and made in central Otago, but Ata Rangi certainly does! Family owned since the start and begun on little more than a wing and a prayer, Ata Rangi has grown to become a very important piece in the New Zealand puzzle of pinot noir. Its style is silky, but perfumed, complex and alluring, with plenty of depth and dark cherry fruit. They are age-worthy and age-demanding to show at their best, but even as young wines they can captivate. From roots of just four pioneers, the Martinborough district now has more than 24 producers and an extraordinary reputation for great pinot noir. Craggy Range is celebrating ten years of production from its Te Muna vineyard; newcomers perhaps, but given their size and what they’ve achieved in a decade, they are a major part of the Martinborough story.

I have so often looked down from 30,000 ft when taking overseas flights and wished that I could see the country from a much lower altitude. Even from that elevated distance the colours and patterns on a clear day are stunning, and how much more so would they be if I could get closer! Last August Brian and I decided to join 17 other participants keen to do just that. Twenty of us, including two pilots and our leader, flew in two twinengined Titans from Sydney to Marree, Lake Eyre, Coober Pedy, Uluru and Alice Springs, Yuendumu in the Tanami Desert, Fitzroy Crossing, Broome, Derby, the Mitchell Falls, Kununurra, Darwin, Cooinda in Kakadu National Park, Elcho Island (one of the Wessel Islands), Nhulunbuy (Gove), Dhuruputjpi on Blue Mud Bay, Borroloola, Adels Crossing and Lawn Hill Gorge, Longreach and back to Sydney. A breathtaking 26 flights in all and oh, what truly glorious sights we beheld. The countryside was so green all the way out to Broken Hill thanks to recent rains, then the colours set in and we feasted on endless shades of burnt sienna, red ochre, brilliant oranges and buttery yellows to pale lemons and creams interlaced with or replaced by soft greys, pale minty greens and muted, ancient lavenders and pinks that splatter the vast, unending country of inland central Australia. This is exactly what the Aboriginal people saw, and depicted in their dot paintings, from the tops of ancient hills and mountain ranges that scatter the outback country. Clumps of spinifex, bundles of blown grass scattered by willy-willies, saltbush and spindly, but hardy, grasses providing much needed fodder dot the countryside, while the meandering creekbeds wend their weary ways across the horizon, often to disappear into the scorching red earth with only a darker shade of red to identify their trails. She-oaks and river red gums, native apricots and coolibahs leap crookedly into the skies from the banks of the creeks and stand limply when the rains don’t come. It is either feast or famine out here, but we are just fleeting visitors marvelling at the beauty of it all, with no time now to fully appreciate the rigours of life for man and beast in the bush. >>

Our first night was spent in Marree under an enormous velvety sky twinkling with starry lights as the sun sank slowly across the flats. It was here I took a photo of Brian standing in front of an enormous rusted out train engine on which someone had amusingly hooked a sign saying For Sale. On the outskirts of the tiny town was the junction between the Oodnadatta and Birdsville Tracks – it was a very long way from anywhere, and the sense of endless space was truly awesome. Up early the next morning, we all piled into a small four-wheel drive bus to travel to the edge of South Lake Eyre, and when I dipped my finger in to test the waters we were told it is ten times saltier than the Dead Sea. Somehow dozens of gorgeously hued spring flowers, dancing on the dry sandy banks, are able to survive the saltiness and thrive in abundance, but there was hardly a bird to be seen. Seems the flood waters were more abundant in smaller lakes and depressions elsewhere in the desert, thus the birdlife had departed for fishier waters. At Yuendumu in the Tanami Desert we gorged ourselves on viewing dozens of wonderful dot paintings. The skill of creating their stories on canvas in an appealing and inventive manner using colour, texture, balance and harmony is as well-executed as that of dozens of abstract artists from the Impressionist era onwards. It does not seem to matter how often one visits Uluru or the chasms and gorges around Alice Springs, their natural beauty consistently impresses our senses, and it is as if one is seeing them for the first time. I had not taken in before how scaly the surface of Uluru is, looking like a giant aged dinosaur sitting ponderously in the red dust. Perhaps this greater awareness is due to the fact that I have my Drawing A Day book with me and am scribbling furiously even as we walk, trying to capture the wonderful sights that fall in front of us at every step. I cannot think of Fitzroy Crossing without imagining thousands of head of cattle splashing their way through the shallows of the Fitzroy River, mooing and bellowing at one another as whips crack and crocodiles snap and the drovers try their darnedest to save heads for the markets down in Derby. We are warned not to stand too close to the edge of the waters, but there is always a silly ass who is standing knee-deep with a beer can in one hand and a fishing rod in the other, tempting fate. Except for the Linley and Paspaley shops and a corner supermarket, Sunday in Broome is as quiet as any other country town in Australia, so we explore the most stunning headland of brilliant red ochre, where the now defunct lighthouse rests in private hands and the exquisite turquoise blue sea views assail our every sight and sense. Oh, that we could have had more time to just sit and gaze out to sea drinking in the sounds and salty smells of the timeless ocean, but an overnight stop in Derby and our ever-waiting aircraft demanded our attendance. The next day we flew along the coast over the Buccaneer and Bonaparte Archipelagoes to the Mitchell Falls in the Kimberleys, where we walked for about four hours down to the helicopter base before flying on to Kununurra. There is nothing more satisfying and welcoming than plunging into a cool, cool waterhole when one is gasping of thirst and sweltering in the heat. It was heaven. There were so many wonderful spots to explore, but visiting some of the more remote Aboriginal communities on Elcho Island in the Wessel Islands and Dhuruputjpi on Blue Mud Bay we found very interesting and enlightening. Our overnight stop in a safari tent camp looking out on the creek at Adels Crossing was gloriously refreshing, with a morning visit to the unmissable Carabirini National Reserve. We pressed on to the glories of looking down on Lawn Hill Gorge from the top of a ridge where we spied below us three small waterfalls bordered by a host of exotic tropical plants that reminded me of a scene from a pictorial Bible. All too soon we were heading south back to the metropolises we inhabit, feeling like we had been overseas to another country, exotic yet somehow familiar.

The Gallipoli Centenary Cruise 2015 offers a unique opportunity to pay homage to the spirit of the ANZACS. Eight hundred privileged Australians will commemorate the centenary of the Gallipoli campaign with a once in a lifetime 42 night voyage covering almost the whole Mediterranean. The date is April 2015, and we have chartered the classic cruise ship Black Watch to ensure our guests have a unique experience of the ANZAC Cove area and the services of remembrance. Highlights of the cruise will include three days in the Gallipoli region and a Centenary Dawn Service on board Black Watch off ANZAC Cove on 25 April 2015. The cruise will take in many other sites of historical significance associated with both World Wars, and leading historians and senior military figures will be on board to offer a fascinating series of lectures and information sessions. Gallipoli is undoubtedly the central focus of the cruise, but our guests will experience so much more. In fact this voyage aboard Black Watch is possibly the most comprehensive itinerary ever offered in the region. The adventure begins with two free nights in a London hotel with many tour options available. Then our passengers will be taken to Southampton where Fred. Olsen Lines UK-based Black Watch will be waiting alongside her berth. First port of call is Gibraltar, resolutely British for nearly 300 years, and the guard post for the entrance into the Mediterranean Sea. Then it is on to Valletta, Malta, described by many as one of the most impressive harbour entrances in the world. Next stop is Alexandria, Egypt, where guests will have the opportunity to visit the battlefield of El Alamein or join a bus tour to enjoy the ancient world of the Pyramids before rejoining the ship at our next port of call, Port Said. The port of Ashdod is the most important in Israel, and our overnight stay will give passengers the chance to experience a moving tour of the Holy Land, which will include visits to Jerusalem, Bethlehem and the Dead Sea. Then it is on to the Aegean island of Lemnos before the memorable three-day visit to the Gallipoli Peninsula, where our mooring location will offer a unique vista and the opportunity to view the Peninsula as the gallant soldiers and sailors would have seen it on that fateful morning. To enable our guests to capture the atmosphere of the centenary commemoration, Black Watch will then be berthed for three days at Çanakkale, where our specially chartered buses will offer a series of exclusive excursions. From there we cruise to Istanbul, where the cultures of East and West meet in a chaotic collision of past and present, and then on again to the relative calm of Thessaloniki, Northern Greece, the Greek capital of Athens, followed by the rugged island of Crete. Catania is Sicily’s ancient second city, set below Mount Etna. Over the years it has survived earthquakes and volcanic eruptions, but its many noble Baroque buildings have survived to give the city a majesty not found elsewhere on the island. There will be a good chance of seeing a live volcano breathing fire and spitting molten rocks as we navigate the narrow Straits of Messina and pass as close as we dare to the awe-inspiring volcano of Stromboli. Then we turn towards the mainland and the port of Naples. Why not take the opportunity to visit rich historic treasures like Pompeii and Heraculem or take the short ferry ride to the beautiful Isle of Capri? As we make our way westwards again we hug the coastline to call at Marseilles, a cosmopolitan city offering a variety of cultural and gastronomic experiences, then retrace our route through the Straits and back into the Atlantic Ocean. Approaching Lisbon through the mouth of the Tagus River will provide another memorable experience before our final port of call, which is Honfleur. This quaint little port and its surrounding countryside is among the most beautiful in France, and has been an inspiration to many great painters and poets. It is also ideally located near the Normandy D-Day Beaches. Back at Southampton guests can take advantage of a whole host of post-cruise options, or our chartered buses will be waiting at the quayside to transport you back to Heathrow. Conveniently located adjacent to Noosa’s popular Hastings Street, with its dynamic mix of cafés, restaurants, boutiques and tourist attractions, the village-style resort offers beautifully appointed serviced apartments, villas and penthouses. Having been given the opportunity to spend a long weekend in one of the Outrigger’s luxurious 4 Bedroom Deluxe Villas, I invited an eclectic group of friends and family to join me. While having so many different personalities in the one apartment could have been a bit challenging, in actual fact the spacious three-level villa was just perfect. There was plenty of room for everyone to enjoy their own space, while the large communal areas were ideal for meals, movie nights and general camaraderie. Each level boasted its own lounge area and flat screen TV (no need to argue over the remote control), a bathroom and one or two bedrooms, while the entire apartment enjoyed panoramic

views over the luscious gardens and Noosa itself. There was also a double garage, laundry facilities and a fully-equipped kitchen – although I can’t imagine why you would bother cooking when Noosa’s restaurant precinct is just a short stroll (or buggy ride) away, and the delicious flavours of View on Little Hastings Restaurant & Bar are available within the resort. Of course, anyone staying at the Outrigger Noosa also has access to a fantastic range of premium resort facilities including a heated pool, lap pool and Stephanies Ocean Spa. The resort itself features 197 beautifully appointed suites, villas and penthouses with large private balconies. It is nestled beside the national park, allowing complete privacy, and Noosa’s cosmopolitan dining and fashion hub is just a 500-metre stroll away. Or, if you prefer, the friendly staff are on hand to provide buggy transfers to and from Hastings Street – simply phone them on the number provided and they will pick you up and drop you back. This came in very handy during our stay as it rained the entire weekend! However, the ambience of the resort and the spaciousness of our accommodation more than made up for the lack of sunshine.

We passed … tiled facades and beautifully patterned pavements as we cranked along cobblestoned streets and intimate alleyways so narrow you could reach out and touch the buildings.

The embarcartion after our wonderful London to Lisbon cruise was so smooth we arrived early at the Sofitel, bought a day tour and wandered down to the nearest square for an espresso. An hour later found us trundling along in a quaint wooden tram admiring Lisbon which is reminiscent of San Francisco with its hilly terrain. We passed brightly-coloured washing waving in the morning breeze, tiled facades and beautifully patterned pavements as we cranked along cobblestoned streets and intimate alleyways so narrow you could reach out and touch the buildings. Dotted in the grassed areas between streets were delicate wrought iron kiosks selling magazines, cigarettes, flowers, coffee and fortunately, wine (since travelling can be dry work). Lisbon is one of the oldest cities in the world, and the oldest city in Western Europe, pre-dating other modern European capitals such as London, Paris and Rome by hundreds of years. It’s also a city of contrasts: an art nouveau mansion wedged between a derelict graffiti-covered building and an ugly office block screaming hasty post-war construction; locals who are very helpful or very unhelpful; long straight double carriage way boulevards which morph into an incredible maze of narrow winding streets, passageways and tangled labrynthine neighbourhoods; waiters who speak impeccable English to those who speak none; body piercings on bodies of all shapes and sizes (and in every imaginable place) but tattoos as rare as hen’s-teeth. At the end of a day of kaleidoscopic sights and sounds we discovered an alley of restaurants offering every kind of food imaginable. We settled on Portugese. Since we couldn’t read the menu, and the waiter spoke no English, we simply pointed at other diner’s meals. It worked well and we enjoyed an inexpensive seafood platter with local wine. In fact, overall, we found Portugal to be very well priced. We were told we ‘must see’ Sintra. Fortunately, the hotel is central and the tour bus could collect us at the door. Then we spent the next hour picking up what seemed to be the other half of Lisbon! Finally, we thought we were on our way … but no, a change of both bus and driver ensued amid much confusion, shouting and gesticulating. And then, off

we went again, with no explanation! At Sintra we climbed into another tram for the ride to the top to the fortress-like castle built so high it was clouded in mist giving it a fairytale aura and an ethereal mystical appearance. We had a glass of wine and chocolate cake in the tiny café before heading for Cascais. This elegant town is home to many of the exiled royal families of Europe, with its lovely beaches also making it an attractive destination for ‘jet setters’. Just up the coast was Estoril which became famous during WWII as the hub for spies, intrigue and diplomatic secrecy. The town retains its cosmopolitan atmosphere, with many smart cafés. Some of the mansions have been converted to hotels, but others remain a testament to days gone by when the rich could employ dozens of gardeners to tend their rose beds or pay for artisans to decorate their homes with frescoes and beautifully painted tiles. When I’m visiting these superb places I never know where to look: up at the ornate panelled ceilings or sideways at the frescoes, but in Portugal the place to look is down as the moscaic tiles are exquisite with strong Moorish overtones reflecting the country’s checkered past. We visited the amazing Oceanarium, Casa Pasteis De Belem where we feasted on pastéis de nata (a delicious egg tart served warm out of the oven with confectioner’s sugar and cinnamon), Castelo de São Jorge and the Monastery of Jerónimos at Belém and Fundação Calouste Gulbenkian, with its superb collections of ancient and modern art. On our last day we decided to find ‘the famous elevator’. Since few speak English we probably passed it several times as people (the helpful ones!) directed us this way and that. Eventually, after stopping for a quick glass of wine and another slice of chocolate cake, we found it, and then queued for an hour! A fun ride though and at the top there were two more flights of winding narrow metal stairs to negotiate to reach the roof. But what a magnificent view of the city below, truly the best vantage point for an overall ‘picture’ of the city and harbour front where shining white cruise ships contrasted with this ageing but graceful city. Then it was down again for another glass of wine and more chocolate cake!

After almost two decades living and working in various hotels around the world, Australian-born Scott Murray has returned home to take on the position of General Manager Hayman. Catching up with Scott during my recent visit (for the record, Hayman has everything you would expect from Australia’s premier island resort … and more) it was evident that he was delighted with his new role. “The drawcard was ‘Hayman’,” Scott explains. “It has such an incredible reputation, it’s been the jewel in the crown of the Great Barrier Reef for so many years … and the bonus is that it is in Australia.” Since taking on the position in December, Scott and his wife Jennifer have embraced all that Hayman has to offer, relocating the family from Dubai and enrolling their two young sons, Thomas and James, in the local school. “Some nights we stand there at sunset and think ‘wow’. There are not many places left like this in the world. The natural environment here never changes … and it never will. That is priceless. “And the kids are experiencing a different world as well. Where they went

to school in Dubai had very modern classrooms with all the latest technology, but here they get to do bushwalks and play with animals. “They are learning more life skills and getting in touch with nature. I can’t put a price on that.” On a professional level, Scott is looking forward to engaging the contacts he made during his eight years in Dubai and showcasing the resort. “We have so much potential to tap into the international market … everybody wants to come to the Great Barrier Reef. And for Australians who want a short break and don’t want the long travel times, Hayman is the perfect destination. It’s one resort, one island. When guests get here, it’s their exclusive private island. There’s no jostling with other resorts or busy roadways or anything else. “Even when the resort is full you have space. It doesn’t matter how busy we are, you look around and think ‘where is everyone?’ “Guests can be out on a helicopter, on a seaplane, an island escapade, bushwalks, snorkelling ... there are so many different places to ‘escape’ and there are so many different dining opportunities as well.

welcome aboard A wave of first time exhibitors is set to hit the Sanctuary Cove International Boat Show this year. This year marks the 25th anniversary of the iconic Sanctuary Cove International Boat Show (SCIBS). Running from May 23 to 26, the 2013 event will showcase a variety of international boating brands, products and technologies alongside the superb backdrop of the award-winning Sanctuary Cove Marina and The Marine Village. Organisers are excited to welcome 39 firsttime exhibitors on board. New exhibitors include Arnold’s Boat Shop, Dutch Sloop and Pantaenius Australia along with a number of the biggest names in the boating business. Arnold le Rutte, owner and Managing Director of the recently launched online-based Arnold’s Boat Shop said the opportunity to feature at one of the country’s biggest boat shows couldn’t be passed up.

Wichard and Profurl Director, Gaelle Marks, said returning to the show was a positive sign for the business, which has an exclusive traders-only client base. “The marine industry is gathering pace, which is part of the reason we’re returning this year,” she said.

a black&white masterpiece Robinson’s Kitchens has created a classic, yet contemporary, kitchen in this Sanctuary Cove home.

When Sanctuary Cove couple, Dennis and Lorraine Benbow, decided to revamp their kitchen, they knew they needed some professional guidance to transform the existing area into a more streamlined and practical space. Having researched and met with several companies, the Benbow’s engaged Joseph Haddad from Robinson’s Kitchens to oversee the project. “We just felt very confident from the outset,” Lorraine says. “We went through every aspect together, from the repositioning of the appliances to the final finishes … and every time we had a question or weren’t sure about something, Joseph was able to come up with a solution.” One of the biggest challenges was creating more space without carrying out any major structural changes. After consulting with Joseph, the Benbow’s decided to close off an existing passageway to create a walk-in pantry. The fridge was also relocated to allow for more storage, while an appliance cupboard, deep storage drawers and wide granite benchtops were included in the design to maximise space. Naturally, all the cupboards and drawers feature the latest soft-touch technology, allowing them to open and shut quietly and efficiently.

The dishwasher is nestled behind a false door, blending seamlessly with the rest of the cupboards, while the wall oven, microwave and induction cook top add a practical element to the kitchen. Another clever inclusion is the half desk/half storage cupboard housing the phone, stationery and other bits and pieces, which Lorraine jokingly refers to as ‘my secretary’. “Everything in the new kitchen works really well,” says Lorraine. “There is ample storage, lots of practical inclusions … and it looks good.” The couple chose a classic black and white colour scheme, highlighted by stainless steel handles and opaque glass splashbacks. Opaque glass panelling has also been used as a feature in some of the cupboard doors, adding yet another dimension to the overall appearance. In fact, everything about this kitchen has been designed for maximum efficiency and aesthetics … and, according to Dennis and Lorraine, it has all been done with minimum disruption.

Where is the most interesting/strangest place your career has taken you? Hmm … that is definitely a tough question. Indirectly my jobs have taken me to Canada five times already. The open personality of the people, the inviting culture, beautiful skies, stunning trees, and the fun that I have had in this country is endless! Also, the Niagara Falls in Ontario were just breathtaking. I worked in Singapore for ten months before I joined Cavalia which was great too. I loved the warm weather, different culture and lifestyle. Is there a country/city on your travel ‘bucket list’? Not a list … a book! One of my most treasured possessions is my Travel Book. I picked it up in Thailand and it comes with me everywhere I go in the world. Each time I go somewhere new I cross it off the list. When I meet another keen traveller I pull out the book and get their take on where I should go in the world and what I should do when I get there. My mum was a big traveller, back-packing around the world on her own when she was just 19. I absolutely love hearing about all of her adventures and I love to share stories about different places and countries. I definitely caught the travel bug from her! I don’t have one ‘ultimate’ travel destination … I have many. My favourite is going to places where I can spend time with my friends and their families (being in this industry friends are very wide spread!). I feel that you see a whole new side of a country when you stay with someone that is from that place. Basically I want to see the world, and that is exactly what I am doing with Cavalia. It is amazing! Finally, what’s in store for you for the future? Definitely more travelling, more performing, new friends to be made. Time to continue conquering the world one handstand at a time.

I’m not an old fogey – really I’m not. I don’t hanker for the ‘good old days’ all that much. In fact, there are only a couple of things I’d like to turn the clock back on (though both will horrify ‘young people’). E-mail is one. Yes I’m on it every minute when I’m at my desk (though I refuse to do it on my phone. I figure if I’m away from my desk then it’s for an important reason – like attending a meeting, playing golf, or shopping for wine, cheese or chocolate) – but, truth be told, I can be a bit of a skiver and it’s the urgency of email that rankles. Pre-fax, I could say the letter or package hadn’t arrived yet; when faxes added real-time pressure in the office I could claim we hadn’t received one because the machine had run out of paper or the message had come in ‘garbled’. With email, people know if you’ve got it and read it and then sit drumming their desks waiting for an instant response.

Why? Because some years back a flaky design guru decided that what cars needed front and back was not a thick strip of rubber – which, in the event of a slight scrape, could be tidied up with a spot of boot polish – but a sculpted extension of the bodywork. This isn’t an issue if you drive a Ute because generally their owners have taken the option of a towbar comfortably able to handle a little backward nudge or a bullhorn more than capable of impaling a kangaroo boing-ing out of the bush or an old person crossing the road. But those of us with ordinary cars – or even SUVs purchased to tackle the speedbumps in the Coles carpark – will quickly find out that what was deliciously curvaceous looking at the dealership or at a motor show (especially with a deliciously curvaceous model draped over it) becomes butt-ugly after even the most innocuous collision. I’ve a suspicion that the genius who started this new artistic direction for the motor industry had a a family panel-beating business on the side.

Or maybe the carmakers are hedging their bets with their financial forecasts i.e. if they can’t make extra money out of you by selling you parking sensors and cameras as an option, then they just sit back and wait till a prang forces you to shell out for a replacement faux bumper. What I don’t understand is why the insurance industry doesn’t lobby for change by doing to the car sector what they habitually do to the rest of us i.e. turn up on their doorstep and

Television is the other; we used to have three channels when I was growing up in England. The BBC for reasonably sensible stuff, BBC2 if you fancied yourself as a bit of an intellectual, and ITV if you found sit-coms with one-liners like ‘don’t get your knickers in a twist’ hilarious. In spite of the limited options, there always seemed to be something worth watching. Now we have scores of channels paradoxically offering very little choice. TV today caters to an Australian population which seems interested in only two things – people who have nicer houses than them and other people giving advice on the fanciest way to arrange food on a plate. The latter is particularly ironic because – in spite of the national fixation with learning how to place broccolini and carrots at a jaunty angle (next to a ‘bed’ of mash or rice inevitably truffle-infused) or ‘drizzle’ (rather than, God forbid, ‘pour’) olive oil on to a salad – when you get invited to someone’s house for lunch you’re still only ever offered charred meat. “Did you see MasterChef last night? Wasn’t that soufflé to die for? Who wants another snag?” The synapses of my brain being rather weirdly wired, all of of the above came to me the other day shortly after I pranged my ‘other car’ (the one without the reversing camera and parking sensors). Accustomed to the warning beeps in my posher motor, I kept going backwards until a wall told me to stop. Anyway, I thought the meeting between car rear-end and brick had caused negligible damage till I got out to examine that part of the vehicle which, with nostalgic retrospect, not only used to be called a ‘bumper’ but was actually designed to handle bumps. You see bumpers aren’t bumpers anymore are they?

The rubber and shoe polish industries would back them to the hilt. ****** While I’m bagging the motor sector, I’m reminded of another ‘then vs. now’ issue on which my jury of grumpy old men is still out. Satellite navigation technology is a marvel (in fact, many of us would be lost without it. Boom boom). But I still wonder what is/was better/worse: The inevitable disagreement over a real spouse’s [in]ability to read a map or today’s tortuous nagging by the satnav lady telling you three times in the space of ten seconds about the ‘exit coming up’. Who is the owner of that voice? How many times a night does she tell her husband to take the rubbish out? Has he hired a hitman yet? I think a splendid optional extra would be to offer a choice of the voice providing directions. Wouldn’t James Earl Jones make finding your way a soothing experience? Or for the older ladies, perhaps Sean Connery or Hugh Jackman. Blokes my age might fancy a very strict Angelina Jolie telling them exactly what to do. Younger folk might go for rapping Nicki Minaj or manic comedian Chris Rock. Worst of the worst would surely be Kath or Kim. Predictably my nightmare would be taking orders from ‘Kochie’ (as if he doesn’t think he already knows everything). And though it’s moot now, imagine how much quicker Tony Abbot could have dispatched Julia Gillard had he got some IT boffins to hack her glasscutter tone into the nation’s satnavs. In the name of God, turn her off and hand me a map.
