We see possible It must be said, our iconic Jasper is quite sofa-esque. We’ll concede that. Arms, back rests, that couple sitting comfortably. But you know, it really is quite different. A multi-award-winning design that is truly modular, means those two have changed the shape of their Jasper seven times in eleven years, across three different homes. Come to think of it, those shelves are new. No, this is not any sofa. This is their King.

I’m very proud to say that this is our biggest edition, page wise, since we started the magazine.
Editor’s letter CELEBRATING MELBOURNE CUP has become a tradition in the Cove office … in the weeks leading up to the big day there is much discussion about where we should go, who should be invited, and, most importantly, what we are wearing. This year, as evidenced on our cover, we have taken things one step further and partnered with Palazzo Versace to present one of the most anticipated Melbourne Cup events on the Gold Coast. This iconic venue will be home to all the food, fashion and racing action on the first Tuesday in November. Tickets are still available if you would like to join us. Phone 5509 8000 for more information and bookings. With our sights firmly set on celebrating the Spring Racing season in style, we have dedicated this entire issue (which I’m very proud to say is our biggest edition, page wise, since we started the magazine) to fashion. Inside you will find a showcase of looks from The Marine Village Sanctuary Cove as well as a preview of the inaugural Brisbane Fashion Month to be held during October. We also open the doors to the new Tiffany & Co. boutique at Pacific Fair Shopping Centre, take a humourous look at finding your perfect lipstick with Patsy Rowe and bring you our usual His and Hers Style File pages.
Moving on to tracks of a different kind, Madison Hebbard relives her childhood experiences as we celebrate 90 years of Speedway, and Chris Nixon takes to the bitumen to test-drive a couple of classic sports cars, the Ferrari 488GTB and the McLaren 570GT. If a life on the water is more to your liking, be sure to see our special cruising feature in the Well Travelled section. Regent Seven Seas and Oceania cruise lines offer some of the most luxurious ships at sea, along with a wide range of itineraries, personalised experiences and shore excursions. Finally, this edition includes the annual Marine Village mini-mag, a comprehensive guide to the diverse selection of retailers in Sanctuary Cove. From clothing boutiques, jewellery stores and beauty services to restaurants, cafés and business providers, The Village really is the perfect relaxation destination.

Susan says Well known for her social and political activism, actress Susan Sarandon takes a lighter approach to her role as Marnie in The Meddler.
WORDS JEREMY BERKOWITZ / THE INTERVIEW PEOPLE
SHE WOWED AUDIENCES as an inexperienced Janet in cult classic The Rocky Horror Picture Show, rose to prominence playing a feisty feminist in Thelma & Louise and won an Oscar for her portrayal of a Roman Catholic nun in Dead Man Walking. Now Susan Sarandon is back as an aging widow in The Meddler, a comedy/drama that takes a heartfelt look at family dynamics.
Whether you’re older or younger, to watch a protagonist do that is what’s so magical about movies. If you’re in a theatre you are in a dark place where you can suspend your disbelief and enter into that story in the midst of all these people. It’s even better than when you’re at home or on your devices. One of the quotes in the movie says, ‘Movie stars

You’re a mother of three. Have you ever been accused of being a meddler? The secret to being a meddler is to do it from the very beginning so they think that’s normal. I definitely do, and they meddle back. It’s a mutual meddling thing. I send things constantly … and I text constantly. They don’t take my phone calls so I text. And I send videos and music and books – that kind of meddling. I’m a big believer in making mistakes so I encourage my kids to fail constantly, but I always assume that they’ll get back up. If they ask me for advice. I give it, but that doesn’t happen too often.
aren’t nice people, but they really are’. What is it like to be a movie star? I think that you kind of have to make peace with loss of privacy and that’s the tradeoff. But it’s a great job. It’s a fabulous job. I can only speak as a woman but it used to be that women had to choose between a career and a life and I think now it’s been proven you can have both as much as anyone else. There are so many great actors that don’t get a chance to do top of the line stuff. They’re doing all kinds of work in smaller roles or theatre. And you’re lucky if you get to the point where you can have more control. That’s when you become a movie star, right? When you have more say?

How exciting is it for you to have a romantic leading part in a film like this? Not too many of them are bring written for mature audiences anymore. I love every film I’ve ever done no matter who the people are because for me the bravest and most moving thing anyone can do is to decide to make contact with another person and be intimate with them, not even sexually, but just to be seen. I think that makes you so vulnerable. So, when I go to the movies I want that contact. Whether it’s with a kid or another woman – it doesn’t really matter – just that moment you decide you’re going to be vulnerable to another human being. In any film with anybody of any age that’s what reads as chemistry, if you see people see each other in a way that nobody else sees. And I think you root for that because everybody wants to have contact with somebody. That’s really what our tribe is about – always looking to make contact.

I really related to Marnie’s generosity. How do you police yourself with regard to that? If you’re helping people who cares what the reason is? I don’t judge it. I know my business manager puts his foot down. That’s what stops me. But I think you investigate. As the oldest of nine kids when I did start to get money I had to learn when to interfere – when to let people down – even with my kids. I remember my son saying, ‘Having an allowance and having to do this makes me so tense, Mom’. You know, when he had to start paying for things and figuring out how to work it. You don’t want to take that away when you’re helping people do things that they can do for themselves. But I don’t think you can be too generous. I mean maybe she’s not paying attention to her own escape or her own problems, but I say err on the side of generosity anytime. >>

What changed when you won the Oscar? Nothing changed. I mean, when you’re Jennifer Lawrence and get nominated and nobody knows
I just was always kidding that I wanted to raise kids that I could have dinner with. And it turned out to be an absolutely good idea and now we’re
of the Apple store. I’ve also never had to eat that much pot. I had to research that. I was just so grateful to be surrounded by
who you are – that makes a difference. Or if you are Halle Berry, who was a Bond girl, and then you do a serious, dramatic role and get a nomination that really wakes people up and changes the way you’re seen. But when you’ve been in the business for almost 50 years, it’s great because they finally see the bottom half of your dress. You get to get out of your seat. Instead of saying, ‘four time loser’. They say, ‘Academy Award Winner’. It didn’t really change anything, but it gives you a chance to say that, and that becomes your label. I’m not knocking it. It has been a lot of nominations in a short period of time, and think everybody was just, ‘Ugh. Give it to her’. By the time you’re at that point in the awards your blood sugar is so low. You’ve been there for hours and those last few categories are left. Lawrence Fishburne was sitting behind me and he leaned over and said, ‘If you don’t get it this time we’re burning this place down’. And for some reason that made me feel so relaxed. I thought, ‘Oh good’.
in a different phase. I don’t know how you’d deal with a mother that’s that overbearing. I have a lot of siblings that don’t necessarily get along and what I tell my kids if we’re going into a situation with multigenerations – like holidays full of cousins – is ‘let’s just all pretend we’re in a sitcom’. If you can hold for a certain amount of time and have a sense of humour, then I think the whole meddling thing really is just love and a need for connection. There are worse things than having a manifestation of too much love.
so many solid, funny, improvisationally capable actors. This is huge. I mean Lorene was so great in assembling all those women, not just the main guys, but also every little part. If you’re doing a low budget movie like this and you fill in with extras, if something starts to happen they can often just panic or stop because something is going on that they didn’t anticipate. With this group everybody was so capable and could take care of themselves. That meant you could make mistakes 100% and just go with it. So, I often found myself doing and feeling things. We had a few moments where stuff happened that wasn’t scripted, and I love it when I’m surprised. That only happens when you’re with people you can count on and you feel safe and you know they can handle it. A lot of things happened that, as Marnie, I was surprised and that was so much fun.
NOT AVAILABLE ONLINE In the hands of another actor your character could’ve been a stereotypical Italian mother, but you really avoided that. What was the most important part of you that inhabited Marnie in this film? I think for all of us that the tone of the film was really important. Everything had to be approached in reality. I didn't want to wink at the audience or patronise them. It was so well written … and there’s nothing funnier than desperation, so I basically just wanted to make sure that she was real. Really be as open as possible and surrender to that. As much as she is afraid of certain things, her heart is really open, so it was important that I stay in that state and that I didn’t think she was funny, and instead she was really sincere.

What’s the right way for a daughter to deal with a meddler mother? And what’s the secret to raising healthy kids? I think growing up in New York helped because at least they knew they were very privileged. They weren’t behind a gate somewhere. They didn’t have great cars and mix with kids that were all actors. They were on foot with all colours and languages and religions and economics and everything else so at least they could see they were lucky and could take responsibility for that. I was very hands on and dragged them all over. We had our ups and downs but they’re great kids. They’re so funny.

Did you learn anything about yourself playing Marnie? Did your perspective change about places like The Grove? I didn’t know much about The Grove because I’m from New York. I honestly haven’t spent any time at The Grove. I now understand the process
Do you still believe in romance? Oh yeah, unfortunately. How does that manifest? That’s why Sundays are so miserable. I go out and everyone looks like they’re in love. I just hate it. I’m very romantic. I’m even romantic about my grandchildren. And I think that’s what I miss. I don’t miss a person from an old relationship, but I miss the being in love part. Because I like that. I’m really good at it. I miss not being able to have that kind of stuff, but, you know … It could happen. It could happen. I just have to find my Zipper.

Passion for fashion Brisbane Fashion Month heralds a fresh new chapter for Queensland fashion.
WORDS HENRIETTA DUPS
I HAVE ALWAYS BEEN A STRONG advocate for locally cultivated talent, so imagine my delight when just a few weeks ago I received a press release announcing ‘Queensland industry unites for first-ever Brisbane Fashion Month’. For the month of October, industry group Fashion Hub Queensland will host Brisbane Fashion Month presented by Wintergarden. Aimed at raising the profile of Queensland fashion, the event will feature consumer experiences, industry forums, runway shows and an educational forum. A tight knit group of Brisbane’s ‘bright young things’, namely lecturer, designer and journalist Carly Vidal-Wallace, fashion stylist and writer Laura Stead-Churchill and beauty and fashion photographer Daniel Sangermani, have joined forces to drive the dynamic new event. None are more qualified to revive Brisbane’s passion for fashion. Carly has spent the better part of two decades in the fashion industry both in Queensland and overseas. As a lecturer at QUT’s Creative Enterprise Australia, fashion editor for Brisbane’s City South Bulletin and founder and designer of dance-inspired label Urban Prima, Carly offers a wealth of industry knowledge and experience. Having run successful fashion events in Brisbane under the banner of Fashion Hub Queensland, and in conjunction
46
with the Australian Fashion Chamber for the likes of Vogue Australia editor Edwina McCann, her achievements won her a covetable Telstra Micro Business Award in 2015. Brisbane-based Laura specialises in runway and event production. A former fashion editor for The Courier-Mail, Laura has gained a reputation for championing and presenting Brisbane fashion on the local and national stage. Her wealth of media and fashion experience has seen Laura work with a host of retail, corporate and lifestyle brands on runway parades, editorial and commercial photo shoots, visual merchandising, consumer events and fashion journalism. After discovering his passion for photography back in 2001, Daniel has established himself as one of Brisbane’s leading editorial, fashion and beauty photographers. Previously simultaneously juggling two careers, Daniel has recently gone professional, leaving behind his PhD in molecular science and dedicating all of his time to photography. Bypassing government funding and instead relying on financing the event with their own capital and the support of generous sponsors and partners, this enterprising trio of fashion entrepreneurs has created a pattern for success which will see Brisbane Fashion Month become a mainstay of the annual cultural calendar.
“The timing felt right to build a new fashion event for Queensland,” says Carly. “Brisbane Fashion Month started out as a few key standalone events, but it is now much broader and inclusive of some other brilliant initiatives that are available for consumers and the industry in October. “Together with the Wintergarden and our partners, we feel it’s essential that Brisbane has a platform like this to keep the momentum going for the fashion and design industry in the Sunshine State. The response we’ve already had has been very positive and we are excited for what is ahead.” This unprecedented buffet of fashion builds on the reputation and success of Brisbane’s fashion industry, and will inspire Queenslanders to engage with their local design community. "We're looking forward to showcasing a cross section of some of Queensland's best designers at the wrap party,” says Laura. “From Casey Tanswell's fashion-forward collections to Urban Prima's incredible danceinspired print-driven pieces, custom designs by Isabella Longginou and dapper menswear by Urbbana – there really is something on show for everyone. “The Queensland fashion industry is alive and well and brimming with fresh talent and that's what we're looking to celebrate."

The facets of Tiffany Tiffany & Co. brings a touch of New York to the Gold Coast.
WORDS RHONDA OXNAM
TIFFANY & CO. … the very name conjures visions of exquisite diamonds, elegant soirees and dainty blue boxes. Now this iconic label has opened a stylish new boutique on the Gold Coast and introduced another level of luxury to Pacific Fair Shopping Centre. “Tiffany & Co. is a world-renowned jeweller that epitomises the sophistication of New York, where it was founded in 1837,” says Bill Nolan, Sales Director Tiffany & Co. Australia. “Today and every day since, Tiffany fulfills a glorious mandate for innovation, discovery and magnificent design. “Being a globally recognised brand that is acknowledged for quality, craftsmanship and design, Tiffany & Co. has been successfully embraced by the Australian market. We have a comprehensive product offering in Australia and pride ourselves on our excellent standard in customer service.” Covering almost 400-square-metres, the elegant Pacific Fair store features hand-painted glass magnolia patterns in the fine jewellery and bridal salons and a dedicated customer service area. “Tiffany architects and designers have created a modern and impressive space to showcase an array of renowned Tiffany & Co. collections,”
48
says Bill. “The store will house a comprehensive selection of our iconic pieces, as well as offering luxury customer services.” As part of the grand opening celebrations a unique collection of Tiffany & Co. pieces was introduced to Gold Coast audiences. “The Tiffany & Co. high fine jewellery trunk show from New York is one of the most exclusive diamond and gemstone collections ever assembled and highlights the evolution of Tiffany & Co.’s 179-year legacy of glamour and style,” Bill explains. “The collection features pieces from this year’s Blue Book, ‘The Art of Transformation’, and is the vision of design director Francesca Amfitheatrof, who utilises the finest diamonds and colourful gemstones to capture the brilliant world that unfolds in nature and in one breathtaking moment, bursts into an extraordinary beauty.” Throughout Tiffany’s history, gemologists have travelled the world in search of the rarest and most exotic gemstones. This legacy is brilliantly reflected in this collection, which features a ring in platinum with a 2.52-carat, modified square brilliant Fancy Greenish Blue diamond and white diamonds, valued at AUD $1.9 million. Another highlight is a wide, contoured bracelet inspired by 1960’s archival sketches of diamond-
intense jewels reminiscent of ferns, leaves and flowers. This bold, dynamic creation features more than 1,800 diamonds and was handcrafted over the course of 1,000 hours. “The trunk show is collated by our team in New York with the aim to present the company’s best high jewellery pieces all brought together into one collection,” says Bill. “Pieces mainly come from the New York flagship store but can also be transferred from locations such as Hong Kong.” So what is the quintessential Tiffany & Co. piece? “Our beautiful engagement rings are highly sought after, especially our iconic Tiffany Setting engagement ring, that celebrates its 130th anniversary this year,” says Bill. “In honour of its anniversary, Tiffany & Co. has designed the Pavé Tiffany® Setting with a platinum band and prongs set with pavé diamonds in a limited edition of 130 rings. “The inspiration behind this limited anniversary edition ring was a one-of-a-kind Tiffany® Setting ring that was featured in the 2016 Blue Book Collection. “The iconic Tiffany Setting is displayed permanently at the Pacific Fair store,” he adds.

Spa spa away One Wybelenna Spa – an oasis of relaxation. WORDS MADISON JILL HEBBARD
LET’S FACE IT ... a true spa experience can be difficult to find. Not a small room in a concrete building but an actual destination location completely dedicated to your relaxation and escape from the real world. A place where you find your own dedicated professional skin and body treatment expert. Recently I was fortunate enough to find one such location in Brookfield. Yes, Brookfield. Not far far away but an escape nestled in a serene green environment dappled with sunlight, and totally worth the drive. With my heart racing from the day’s meetings I made my way across Brisbane heading west to what is a more rural suburb with mostly acreage properties. On parking my car I dashed into what already felt like another world, away from the hustle bustle of life. An escape from civilisation as I knew it. I had arrived at One Wybelenna Spa. Greeted by welcoming friendly staff, I was ushered to the quiet and spacious lounge which overlooked the horizon pool and magnesium spa. Taking a deep breath, and sipping on a herbal tea, my heartbeat slowed and a warm smile appeared on my face. One other person sat in their own private area with a look of bliss on her face. I hoped I was on my way to the same feeling of relaxation. To find my own bliss. I met with the divine Heather Sartain, director, designer and enviable owner of this fabulous house of tranquillity, who reflected the soothing qualities of her creation.
50
One Wybelenna Spa is Heather’s sanctuary and a vision that she built as a haven for all of us busy bodies, whether you are stressed or just needing an escape for a day. My personal dream transporter was Michelle, and before I met her I was escorted to my own expansive treatment room where my robe, wrap and wardrobe waited for me. Don’t worry about judgment here. Being a highly private location it’s a total non-stressful stroll to the outdoor magnesium spa where I enjoyed a glass of sparkling wine. I rested my head on the warm slate and found a little sly smile had made its way to my face. For those of you like me who are unaware of the benefits of a magnesium spa, their power is to relax tired and aching muscles and drain stress from your body. Well known and used in sporting circles it feels like a prehistoric method of supreme stress relief. After almost dropping into a stupor enjoying the magical magnesium, I felt beyond relaxed. I slowly emerged from the 38 degree water, dried off and walked sedately back to my treatment room. Then the magic truly began ... 60 Minutes of tension release massage on the new Hydrotherm mattress. One Wybelenna is one of the very first spas with this innovative water treatment equipment. It’s hard to get your head around but what it means is you don’t have to flip over as your masseuse can actually massage your back without you moving. Pure indulgence.
This relaxation treatment was followed by a rejuvenation facial and a trio of added extras. Travel with me on this sublime trip to understand why you need to book yourself a One Wybelenna experience as soon as possible. Imagine a sensory journey as a range of subtle energy oils cascade over your limbs encasing each exhausted muscle. Specifically, in my case, the Tranquillity Blend. My favourite was the Indian Lime, which took me to a dreamland. Ah, the serenity. The facial products I experienced were from the Germaine de Capuccini range and made me feel like the years of stress were being melted from my face. I swear I could actually hear my skin breathing. Then, the talented Michelle began applying Time Expert Rides products for combating the effects of ageing. Working on expression lines these products have peptides for blocking contraction of the muscle which acts like a filler. They also include pro-collagestine – fill to repair structural support of the skin, giving a ‘push-up’ effect. Between the magnesium spa, the delicious filtered drinking water, the supreme quiet, the smiling staff, the scent in the air that you want to breathe deep into your lungs, the lingering massage and the youth defining facial, I recommend you place One Wybelenna into your calendar as ‘me time’ as often as possible. Leave the world behind, just for a day. Enjoy a spa experience in a tranquil sub-tropical environment and reap the relaxation rewards.

Counter productive Patsy Rowe searches for the perfect shade of lipstick. ON SATURDAY I went shopping for my favourite lipstick, Adorable Diva. I was armed with a special offer coupon from the Sunday paper – if you bought $25 worth of make-up you would receive a travel pack valued at $200 with cleansing cream, night cream, day cream, eye cream and neck cream (the older I get the more creams have become necessary.) I have to confess I’m a little in awe of the sales ladies at the cosmetic counters. Their hair is perfectly coiffed, their skin smooth and unlined, their lashes long, their lips full and neatly outlined, dewy with gloss. I’m often tempted to book in for a ‘make-over’ by one of the visiting make-up experts just to see what could be done with what I already have but my courage has always failed me and I usually
just buy what I came in for and go home looking the same as I did when I arrived. I stood waiting at the make-up counter while the two sales consultants discussed the merits of the glazed duck recipe that had apparently done very well on ‘MasterChef’ the night before. Not having seen the show I didn’t feel able to join in the discussion so I waited for a pause. It didn’t come. They segued so smoothly from the glazed duck to the chocolate cowboy cake, I lost my opportunity. Feeling I had to take the initiative I cleared my throat and smiled expectantly. They turned to look at me but continued their conversation. Well, at least they knew I was here.

Minutes passed. I took a deep breath, “Excuse me, I’m so sorry to interrupt but I’m after Adorable Diva, I wonder if you could help me?” “No can do, I’m afraid. That’s not our brand.” “But this is the right counter, isn’t it?” “Yes but we’re just standing here while the assistant’s on her break.” “Oh, do you know how long she’ll be?” “Not a clue, sorry,” remarked the older one. Deciding to wander round until she returned I noticed my favourite brand of pantihose was selling three pairs for the price of two. I looked up and down all the shelves but couldn’t see the toeless ones so I approached the sales lady. “I’m after a pair of Midnight Magic but I like the toeless ones. Can you help me?” “I’m afraid I can’t, dear. I’m actually in a different section but the regular assistant is on
her rostered day off so I’m doing her counter and mine. Did you look at the centre showcase? You might find something there.” I didn’t have any luck so I returned to the make-up counter. The sales assisant had arrived back from her break and was busy touching up her mascara. I waited then said, “Excuse me, I’m after an Adorable Diva lipstick.” I flashed my Complimentary Travel Pack coupon. Without looking at me she said “I’m sorry, that offer is only available in the Broadbeach store.” “The Broadbeach store? It didn’t say that in the newspaper.” “Well, I wish it had because I’ve been run off my feet today telling people we don’t have the Complimentary Travel Pack.”
“I have to say I’m a bit upset myself. I could have gone there in the first place. Anyway never mind. I’ll take the lipstick anyway.” “Sorry all the new season’s stock went down to the Broadbeach store.” I tried to smile as I thanked her, after all it wasn’t her fault. I wandered up and down the car park for 10 minutes trying to remember where I’d parked my car before heading for Broadbeach where I spent another 10 minutes driving around that car park to find a spot. I hadn’t been there before so I took another 20 minutes to locate the right counter as I had parked at the northern end of the car park and the make-up store was at the southern end.
Beautifully serene... One Wybelenna, Brisbane’s most exclusive day spa, is open from Tuesday to Saturday offering holistic health services for beautiful maintenance and luxurious indulgence.

I arrived panting and perspiring but relieved to spy the Complimentary Travel Coupon prominently displayed above the counter. It’s been discontinued.”

With over a decade of track experience, Supercars Champion Jamie Whincup has transferred the fundamentals of racing to his business ventures. Based in Sanctuary Cove, the Whincup Motorsport office is full of activity with the company recently expanding its interests to include LOCA Café and Washed for Cars off Hope Island Road, Hope Island. The two businesses are central enough to the office and Jamie’s home in Sanctuary Cove that he can take a hands-on approach during his downtime.
It’s not unusual to see him with a sponge in his hand washing cars or serving customers in the café. “I’m really enjoying spending time learning the ropes and getting to meet our customers and clients,” says Jamie. However, driving remains his highest priority, and he always looks forward to racing in front of his home crowd in October. “The Gold Coast 600 is a fantastic event and it’s very popular with all the teams and drivers,” he says. “Being able to live, work and race locally is the ideal combination.”

Chef profile CRAIG WRIGHT HEAD CHEF, HATCH & CO. BROADBEACH WITH TWO EXCELLENT home cooks as parents, Craig’s passion for food and love of all things gastronomic began at an early age. By the time he started high school, he was headed down the path to becoming a Chef and just two weeks after completing his final HSC exam Craig started an apprenticeship at long standing Sydney restaurant Cottage Point Inn. “Due to the remoteness of the restaurant, deliveries were limited,” he explains. “This gave me the opportunity to learn things that were unique to me, from house-baked bread to 4am trips to the Flemington Market to purchase fruits and vegetables.” Next came the opportunity to work at the Establishment Hotel, in Sydney’s CBD. From there he ventured to Vancouver, Canada for what would be four years of continued culinary growth. “My watershed moment came in 2009 when I started working for Sean Moran at the fabled Bondi restaurant Sean’s Panaroma,” Craig says. “I was struck by the honesty and integrity of the food and the restaurant. I have been inspired ever since to strive for that level of integrity and pure deliciousness without pretention.” Now Head Chef at Hatch and Co. Broadbeach, Craig’s food philosophy is all about simple honest food. “I am passionate about giving each guest a memorable experience and utilising local produce to create dishes that are delicious to eat. “My hope for Hatch and Co. Broadbeach is to stand out in the local area as a place to go to have quality food in a beautiful setting. I also hope to continue developing relationships with local purveyors and producers that will enable me to showcase the amazing food available here on the Coast and nearby regions. French lesson Discover the history of French cuisine and its importance to the culinary arts.
WORDS & PHOTOGRAPHY JAMES BARNES
FRENCH COOKING isn’t the only cuisine in the world. Ask a French chef and they will agree, though with a quick tongue they will also chime in ‘but it is the greatest’. Which is only natural – anyone patriotic to their own cuisine, sport and so on will vehemently profess that theirs is the best. I am not French, although I do have an understanding of various cuisines, where they sit in regard to modern day cooking, and that more and more rules tend to be broken as food evolves. I strongly believe French cuisine lays the foundation for solid training in the culinary arts. Why is it so important to the cuisine scene and modern day restaurants? It comes down to timing, hungry subjects and the guillotine. I love the history of food – so much to learn. Understanding its past plays an important role when catapulting food forward – looking back to look ahead. While not professing to be an historian, I have read a little on this subject, and although the following dates and times could vary somewhat, for the purpose of prose they did happen at some point. Restaurants (let’s call them places that sold food for profit) have been around from ancient times and appeared throughout Europe in the Middle Ages. As cities and civilisations grew, the need for eateries also grew. Inns on roadsides appeared, where travellers could share food on tables and provide a service for farmers to bring their livestock and produce to the larger cities. Imagine a place you could wander into, throw down some coins and be fed. No choices – they were the first table d’hote (table of the host) menus.
112
Within city walls, cramped living spaces would not allow for a ‘kitchen’ or cooking space; street vendors popped up, selling very cheap small foods – you can still see this all around the world including in our own city. I wasn’t around to witness the French Revolution (happy about that) but let’s look at what happened in France around that time. Firstly, we know the commoners were unhappy and showed their disdain at how the monarchy was ruling (remember I’m no historian here), rationing the one thing humans needed for survival – food, especially bread. Enter French queen Marie Antoinette. When told bread supplies had run out and her subjects were starving, she allegedly muttered ‘Let them eat cake’. (Brioche I think she was referring to – a sweet, yeasty, rich, buttery delicacy). She went on to keep an appointment with the guillotine along with her husband, King Louis XVI. This very vicious event began to shape the restaurant as we know it. Small inns started serving soups thought to be restorative (probably a bone broth with vegetables). These little eateries became known as restaurants. According to the Oxford Dictionary definition, a restaurant is a place where ‘people pay to sit and eat meals that are cooked and served on the premises’; Origin – early 19th century, from the French restaurer meaning ‘provide food for’ (or more literally to ‘restore to a former state’). Then another clever fellow, rather than offering only soups and the like, gave customers a choice of foods during fixed hours – this ’cooked to order’ food gave birth to the a la carte menu.
After the monarchy’s demise, most of the wealthy had fled. With few of the aristocracy to cook for, out of work chefs now had free time on their hands. Clever cooks took this as a sign to open their own ‘restaurants’ and, in Paris, commoners were able to explore this ‘haute’ cuisine for the first time. Guilds previously controlled by the monarchy (butchers, cheesemakers, etc) were now free to offer their wares to the greater population. And, more importantly, to proprietors of the new restaurant scene. This saw the emergence of many chefs and food writers such as Carême, Brillat-Savarin and the Godfather of Modern Cuisine, Auguste Escoffier – such an important chef. His firm and codified standard of cooking was exceptional. Around Escoffier’s time we also saw the growth of hotels thanks to the industrial revolution and international travel. Escoffier used his standards to form the building blocks of the modern day kitchen brigade with his format of hierarchy, along with his classical recipes, mother sauces and techniques, still used today. It could be said that French food is so highly regarded because of its ability to stay established deeply and firmly in tradition. With France in general, and Paris in particular, seen as the centre of the restaurant scene, many young chefs regard it as a rite of passage to travel to the region, learning the basics of classical French cuisine as defined by the great chefs Escoffier, Fernand Point and Bocuse. Overall French cuisine has a very rich history ... this is largely owed to the exceptional talent of many chefs, the dreaded guillotine and copious amounts of butter, which is really not all that bad.
WINE CELLAR
Wines of provenance The Hunter Valley Wine Show uncovers some near perfect semillons. WORDS TONY HARPER
I LAST VISITED the Hunter Valley in 1988, and for a bloke in the wine profession that’s an appalling admission. It’s a crime I’ve fixed, and I’ll admit it’s both weird and humbling, testing memory against reality nearly 30 years apart. In 1988 I was a wine novice keen to have a look at some legendary producers – Lake’s Folly, Tyrrell’s, Brokenwood. This time I returned as a judge at the Hunter Valley Wine Show: more skilled perhaps, but hardly more informed. The Australian wine show system is a constantly evolving beast and in the last half decade there have been countless innovations in the judging process. A fairly recent addition has been the Wines of Provenance. Basically it invites producers to enter three wines of the same ilk (paddock, producer and variety) from different vintages spanning a decade. The idea is to seek out makers and vineyards that showcase the region and perform consistently in terms of both style and quality. For the judges it’s Nirvana, and in the Hunter Valley there are really only two grape varieties on show – semillon and shiraz. Eight wineries submitted semillons and seven submitted reds (most, but not all were shiraz). Is there a better lineup of Australian wines than the semillons that were shown this year? It’s hard to think of one. The first great epiphany was courtesy of the 2009’s. It’s no secret that it’s a terrific semillon vintage in the Hunter Valley, but so too were 2005, 2007, 2013 and 2014. Right now, however, the 2009’s are looking about as spectacular as they ever will, and that’s pretty spectacular. Represented in the lineup were Drayton’s Family Wines Susanne, Meerea Park Alexander Munroe, Tyrrells Belford, Tintilla Estate Angus and Brokenwood ILR. Tasting them was a frothing at the mouth affair, and if I had to choose a single wine from the 24 semillons (all vintages) on the table it would be the 2009 Tintilla Angus. Right now it lacks for nothing. Great Hunter Valley semillon begins life as a fairly lean ungiving wine – lime and lemon with very little flesh and even less in the way of things voluptuous or generous. But when it ages in the bottle it gains texture, weight, generosity and interest; the lean citrus profile fattens to lemon curd and toast tempered by a shot of honey.
114
Tintilla Angus 2009 is in the happy zone. It has shed its juvenile reluctance, gained some welcome fat and flowered. Right now it is the epitome of what Hunter Valley semillon can become when the stars align: fine, fresh, spookily complex and one of the most intriguing wines on the planet. It still has years – possibly a decade – left before it fades, but really, why wait? Which sort of brings me, via swings and roundabouts, to the crux of this story, the little itch I’ve been waiting to scratch. Wine shows are peculiar beasts in the way that they are fair: as judges we don’t know whose wines we are tasting and we try to assess things impartially. And it’s a good system because – over a spread of judges, argument and coercion – a good result is generally arrived at. It’s democracy with a hierarchy. In the Wines of Provenance tasting there were plenty of great brackets with two standouts: bracket 6 and bracket 9. Bracket 6 was the Tintalla Estate Angus from 2016, 2009 and 2007: bracket 9 was Tyrrells Belford from 2016, 2013 and 2005. What separated the two was their readiness. The Tintilla wines – particularly the 2009 – are expressive and svelte. If you happened to be in the mood for a great glass of semillon it would be hard to find, right now, better than its 2009. Tyrrells Belford – a Hunter wine of great repute and serious provenance (just the sort of stuff you want in a Wines of Provenance tasting) – was far more reticent; even its 2005, the oldest semillon of the whole tasting, was so fresh it seemed younger than some of the wines more than seven years its junior. Choosing between the two collections was the subject of argument. I was batting for bracket 6 and its collection of expressive, complex, ready wines. The other judges liked bracket 9 for the incredible gloss of youth and vitality, spearheaded by a 2005 that seriously needs more time to blossom. I lost the battle and when the results were finally revealed I wasn’t upset: Belford is a remarkable semillon. Still I’ve tracked down Tintilla and I’ll be buying some 2009 because where it’s at in 2016 is semillon perfection: a perfect snapshot of the Hunter Valley’s best and a wine style unique to Australia.

CRUISING IS ONE of the most enjoyable ways to experience the coastline, cuisine and culture of Europe – and the broad range of itineraries on offer means there’s a cruise to suit everyone, from families and couples to solo travellers and seniors. “When Australians travel to Europe they are wanting to experience multiple countries and cultures,” says Steve Odell, Senior Vice President and Managing Director Asia Pacific for Norwegian Cruise Line Holdings. “Cruising allows you to do this, with the ease of unpacking just once and the benefit of travelling in comfort and style between destinations. “Currently, the Mediterranean – including the Greek Islands and coastal cities hugging the Aegean and Adriatic seas – is the leading long-haul cruise destination for Australians, while Northern Europe – including Norway, the Baltics and Russia – is becoming increasingly popular,” he added. Renowned for its immersive destination and culinary experiences, Oceania Cruises is at the forefront of this growing industry. Their fleet of six luxurious vessels – including Regatta, Insignia, Nautica, Marina, Riviera and the new Sirena – visit over 330 destinations via more than 150 itineraries worldwide, ranging from 7 to 180-day round-theworld cruises. AT THE WHEEL
Simply red The new Ferrari 488GTB ticks all the boxes.
WORDS CHRIS NIXON
ONE OF THE MOST BEAUTIFUL things about the Ferrari 488GTB is how it hides extreme complexity behind outward simplicity. Its bodywork is the epitome of Italian elegance – lithe, balanced and unadulterated – yet it shrouds computerised ‘active’ aerodynamics that clamp it to the tarmac like a magnet. The interior has every control and comfort one should want, but the shallow, clean fascia is closer to a well-appointed Cessna’s than the Airbus flight deck some car makers confuse as being impressive. It’s equally capable on track or in traffic, always flattering the driver’s abilities with its own on a far higher plane of performance and controllability. The 488GTB’s predecessor was the 458 Italia. It was thought so pretty and so brilliant, it’s difficult to imagine it could be surpassed. Yet the 488GTB is in a new league where only the smallest handful of other supercars roam. But as supercars go, it’s not in the unreachable class. While Bugattis, Koenigseggs or Paganis cost millions, the Ferrari F488 has a list price of ‘only’ $470,000.
124
Consequently, the order queue is long for the Berlinetta (coupe) or Spider (convertible) and buyers appear not at all discouraged by the heart-stopping price of ‘irresistible’ options. Plastic Ferrari prancing horse shields for each front flank? Only $3,000. Refrain from the pricey extras and you’ll still have a car that stops other traffic. It’s simply beautiful to look at, with a lightness and purity to its lines that belie the seriousness of its purpose. Side-by-side, the profiles of the 458 Italia and 488GTB are similar, but the new car leaves the predecessor literally in its slipstream. The 488GTB’s aerodynamic underbody features vortex generators – curved appendages that accelerate the air and reduce pressure. The car is literally sucked to the road. An array of vents, diffusers, tunnels and moveable flaps, controlled by a computer reacting to body sensors, harness the airstream to limit the conflict between vertical downforce and horizontal drag. More of the first improves cornering grip but usually at the cost of more of the second, which inhibits speed.
Ordinary cars without such aerodynamics just chew up horsepower and fuel pushing the air out of the way. Aero also plays an important part in engine performance, directing air efficiently to the radiators to be cooled before it’s gulped into the high-revving V8 engine. The 3.9 litre, twin-turbocharged engine is the jewel in the crown. Ferrari has used few turbo engines until now because their pattern of power delivery and accelerator response weren’t thought good enough for a real sports car. But the Italian maker has mastered the technology so well, the V8 was recently judged best engine in the world. The 488GTB’s numbers are impressive – 492 kiloWatts of power at a shrieking 8000 rpm, 760 Newtonmetres of torque at 3000 rpm, 0-100 kmh acceleration in 3.0 sec. and top speed of 330 kmh. A seven-speed, twin-clutch gearbox can be operated automatically, or manually via fingertip paddle shifters. Different driving modes can be selected with the Manettino switch on the steering

wheel; use Corsa (race) and the gears slam through with the speed and hard mechanical punch of a pile-driver. And here we return to this Ferrari’s over-riding talent for simplicity: it’s not some snorty, lunging beast, but whatever you want it to be. Trust your kid to take it to the shops, or explore its limits at a track day. Track days were off my test schedule, but I had plenty of kilometres around the suburbs and a sublime afternoon of play on a few quiet mountain roads. Oh, what a car it felt as I dived into corners, blasted up hills and wound out the lower gears just to hear the engine’s wail and the snap-blam of the upshifts. Sharpened up on the Sport Manettino setting, the steering is as precise and communicative as a great sports car should be, gear changes fast but not brutal and suspension control via magnetic dampers virtually perfect. And without a backbreaking ride. I haven’t driven enough Ferraris to be able to agree with critics who say this is the Maranello make’s greatest. And what would the owners of 60-year-old models now worth tens of millions of dollars say? But unquestionably, it’s fabulous. Put aside its red-painted glamour, exclusivity and heritage, and the 488GTB gets to the heart of what a sports should be – quick, nimble, beautiful and simply inspiring.

First Home Buyers: Now is the time NOW MAY BE the best time for those seeking to buy their first home in Queensland. And here’s why. In June this year Treasurer Curtis Pitt announced a $40 million boost for first home owners with a $5,000 increase to the Queensland First Home Owner Grant of $15,000 from July 2016. This means that until July 2017 first home owners can now access a huge government grant of $ 20,000 when purchasing their first home. With an aim to boost the Queensland construction industry, this grant will only apply to new properties under $750,000. “This is a great time to build in Queensland with affordable housing on offer and the Palaszczuk government’s First Home Owners Grant will make it even easier to enter the property market,” said Mr Pitt. “This doesn’t just mean more Queenslanders in new homes, it also means more jobs for our building industry.”
PROPERTY MARKET UPDATE WRITTEN BY ANGELA TRZ’AN CEO Master Wealth Coach
Why should first home buyers act now? Well, along with the $20k first home owner’s grant, the Queensland property market is still very affordable with strong price growth predicted over the coming years. That means it may be harder to snap up a great buy in future years as demand and house price s incre ase, e spe cially post 2018 Commonwealth Games. Another important thing to keep in mind is that Australian lending interest rates are currently at the lowest rates in history. Many can now secure home loans below 4%. That means that the average weekly repayment for a home loan of $400,000 over 30 years could be less than $440 per week.
Could now be your chance to stop renting and start owning? Renting can be expensive, frustrating and unsatisfying. Why pay someone else’s mortgage when you can pay for your own? If you’re an Australian Citizen or Permanent Resident and you’re eligible for the Queensland First Home Owners Grant, then now could be the perfect time to purchase your brand new home. With the first home owners grant of $20,000 you may not even require a large deposit as some lenders will lend up to 95% of the property value. Many parents are seeing this as a great opportunity and acting as guarantors to help their children get into the market. If you’d like to buy your first home, or know someone else who does, then now may be the perfect time to consider your options. Head to our website where we have provided some more information that can help first time buyers get started.

SPORT REPORT
Speed under lights Celebrating 90 years of Australian Speedway. WORDS MADISON JILL HEBBARD
138
THIS IS THE STORY of a great sport made
This made for the biggest family night out
greater by the men and women who lived and breathed it. From a dirt circle in the middle of Brisbane, was born a sport of exhilarating pace and sheer determination … Speedway. The dirt track cowboys on motorbikes and in speed cars would round the track at the Brisbane Exhibition Grounds (now affectionately known as the EKKA) at over 70 miles per hour clad only in thin cowhide leathers and archaic race suits. The motorbikes would slide sideways at breakneck speeds with absolutely no brakes as they only use one gear. It only needed one rider to slow down and the one behind not to and the carnage would have been far greater than you could imagine. You couldn’t ride one of these machines anywhere other than the track due to the rapid acceleration and the pure fuel that allows the bike to travel faster. This same fuel also assists in slowing down the machine. Every bike also had a safety cut-out device fitted, which was usually attached to the rider’s left wrist. The speedway cars on the other hand did not have a clutch, but they did have brakes. The reason for not having a clutch, well, there was just one gear. The drivers simply did not have enough time to take their hands off the steering wheel to change the gears and had to be push started by a standard street vehicle. An idea born at the Maitland Show in NSW, A.J. Hunting originally introduced this great sport to Brisbane when he opened 'the world's first' quarter-mile (0.4 km) speedway in the Brisbane Exhibition Ground in 1926. But the popularity of the sport skyrocketed in 1936 when it became the very first speedway in Queensland to be showcased under lights.
of its time. The tumultuous life of Speedway is filled with a myriad of personalities and track huggers. Names like Ivan Mauger, who was a six-time world champion and is now a resident of the Gold Coast. A proud Kiwi, he was the Pele of New Zealand at the time. Voted as the ‘Greatest Rider of the 20th Century’, Ivan was awarded an MBE in 1976, an OBE in 1989 and received the prestigious Millennium Man of Speedway in December 1999. His Triple Crown Special Gold Plated winning bike is displayed at the Canterbury Museum in Christchurch New Zealand. Among our local stars were the likes of Jack White, Burt Kingston, Bill Goode, Blair Shepherd and Barrie Watt. All of them champions of the day and icons of a time gone by. These men were the daredevils of the era and what they drove was like nothing seen before … starting with the Speedcar powered by a standard engine and with an exterior built from material used on a standard Australian car. Even the wheel frames were Australian made. The professionals cars, however, were brought in from the USA and at one stage seven locals owned the ultimate American Speedcar, the Offenhauser. The Speedway motor bikes of the day were built by J A Prestwich, who was an English designer, but local riders soon modified the machines to suit their own style of riding. Saturday night was speedway night and, as a spectator, there was nothing like the thrill of sitting in those first rows of wooden seats, with the wet dirt showering over your head. The dirt had been dampened to lessen the airborne dust clouds that made it harder for the drivers, riders and spectators to see and nowhere
in Australia was the crowd allowed closer to the action than at the great EKKA track. The resounding echo of the 4-stroke engines could be heard for miles as they roared in a circle for just under two minutes in six-minute intervals for over three hours of edge of your seat action. This noise was soon to become the beginning of the demise of this great sport. These men were the demons of the dirt track but the money to be made was not behind the wheel. Businessmen with big ideas used their racing name to build their empires. For example, Blair Shephard, who had a car sales business, was able to enjoy retirement after some choice signage placements. One of his best signs read ‘get off that tram, you will never own it’, which was placed right beside the tram tracks near his car yard in Brisbane. Blair’s other well-known statement was ‘Win on Saturday and sell more cars on Monday.’ In 1964 it was recorded that speedway racing was the second most watched spectator sport after horse racing, easily beating other now popular sports like cricket and tennis. In 2016 Queensland & Australian Speedway celebrates 90 years of Speedway action, paying tribute to the legends that are still with us and remembering those who kept us on the edge of our seats for so long. At Brisbane’s 2016 EKKA the Speedcar greats returned to the track for a weekend of, all-be-it slow, racing. I was immersed in the experience as I had the great honour of not only meeting the legends of the sport but also pushing the vintage cars onto the great Exhibition track. It was an emotional journey as these men, including my own father, a legend himself who worked tirelessly for over 40 years to ensure the

track, safety fences, race tapes and grounds were ready every Saturday night, entered the arena and began entertaining the waiting crowds. Opportunities to start and drive these vintage speedcars on such a famous track are very few due to modern safety restrictions and the value of some of these vehicles. Crowds of people gathered around the cars and the drivers as they returned from the track answering dozens of questions about their fondest memories of the sport that once ruled as the most popular pastime of the nation. Even though the spectacle of the era will never be repeated and it’s not easy to explain how this sport was so mesmerising and addictive, Speedway’s resurgence awaits as those who love the sport rebuild its following. It may have a lot more restrictions, faster bikes and cars, bigger sponsors and fancier leathers and race suits, but when it comes to the crunch, experience yields champions. For the simplicity of the machines they rode and the guts they needed to compete under conditions that would be outlawed today, we respect these men of the dirt track.

SCORPIO 24 Oct – 22 Nov
So much of the next two months’ focus will be on your relationships and the necessity to find a harmonious way to move forward while keeping the spark and passion alive in your personal life. The good news is you’ll manage to build more stability in your work and via general opportunities that arise in your daily life, and this will impact well on all your relationships.
SAGITTARIUS 23 Nov – 22 Dec
Fresh insight into ways to use your resources better will boost morale and provide clarity with your long-term plans. You may be surprised by an opportunity that arises unexpectedly, and this will provide yet more clarity about where your direction must lie, especially in practical terms, financially and in your personal life. Ensure you boost your health along the way.
ARIES 21 Mar – 20 Apr
CANCER 22 Jun – 23 Jul
You’ll enjoy broadening your horizons over the next two months, and this may come about in unusual ways, or simply due to fresh opportunities, such as a trip or an option you’re as yet unaware of. The supermoon on November 14 will, in addition, open new doors in your career and general direction. The direction you gain at this time will be grounding and stabilising.
LEO 24 Jul – 23 Aug
You’ll delight in the sense that you are progressing, even if it seemed the opposite has been the case, especially in your love life, family or creativity. Luckily, you’ll feel revitalised in your personal life and romance will sizzle by mid-November at the latest. For some, there will be no turning back, as it’s decision time about a major domestic development.
You’ll enjoy new options arising in a more varied work environment which, for you, spells success! With a supermoon in your sign on October 16, the next two months promise to be eventful and may also present an entirely new circumstance – for many regarding a partnership, business or personal. Singles should mingle, especially in October; you may meet a compatible character.

You prefer life to progress at a steady pace, so you’ll need to buckle up over the next two months! October’s supermoon may deliver a surprise. Change is most likely to occur either at home or at work; for some, this will affect your status and plans in unexpected ways. You can make a great deal of progress with informed advice, so ensure you gain expert help if needed.
You’ll appreciate the sense that you can get ahead, especially at work and with your ventures. Mars in your sign from early November onwards will encourage you to lead by example, and to take a proactive approach. But if you find that you’re uncertain of your circumstances or that a Mexican stand-off arises in coming weeks, ensure you’re prudent and accept expert advice.

PISCES 20 Feb – 20 Mar
You’ll enjoy revitalising your relationships, business and personal and, in the process, a new look, wardrobe or fitness routine will add to the healthy picture. In October, a refreshing work routine will encourage you to find more time for your favourite interests; and the supermoon on November 14 will bring a turning point with someone close. Singles should mingle then.
Get set for a far-reaching change to come knocking at your door; and this may come out of the blue, too. For many, this will involve a group or an organisation, such as a work opportunity; for some, a change in your family or love life. This is certainly a period to be open to change; the more you entertain new options, the more rewarding the next two months will be.

Events will prompt a re-evaluation of some of your closest-held principles, values and ideas. And there’s no time like the rest of 2016 to put the insight you gain into action. This will revolve around a fresh approach to money, to your assets or even to someone you love: and you’ll enjoy kick-starting a more passionate, upbeat and outgoing phase by mid-November.
Where making life changes has seemed impractical or even unlikely recently, get set to take action when opportunities arise. You’ll accomplish goals as the timing is right. Developments in your closest relationships will see ripple effects domestically or in relation to a property; and building the kind of environment you truly wish to live in will seem much more plausible.
The supermoon on October 16th really marks a turning point for you, especially in your personal life. Be prepared to welcome the new; and to gain a new understanding at the very least, with those you love. A change of environment or a trip may create a flurry of activity, and the upshot will be the chance to build a more stable foundation in your relationships and finances.
