Editor’s letter SUMMER IS SUCH A MAGICAL TIME OF THE YEAR … the sun is shining, the beach is beckoning and the holiday season is just around the corner. With this in mind we have, quite literally, sprinkled a little bit of magic throughout this edition with articles on the iconic Magic Millions Carnival, the mighty Mississippi and the mysterious Miss Grace Jones. Our cover continues the theme featuring master illusionist Matt Hollywood along with his gorgeous daughters Grace and Eva. Inside, the Sanctuary Cove-based magician chats with us about his family, his career and why he puts his life on the line every time he steps on stage. Speaking of stages, rock star Jon Bon Jovi is the subject of our feature interview. After a year-long hiatus, this popular performer has come back bigger and better than ever with a new album and a new approach to his music. Happy Birthday Play School: Celebrating 50 Years

Vale Patsy

On 13 November 2016, after a six-month battle with Leukaemia, our popular long-term contributor, Patsy Rowe, peacefully passed away with her beloved husband Bill by her side. Always elegantly dressed, beautifully made-up and impeccably coiffured, Patsy was larger than life irrespective of her diminutive size. She undertook every task, be it writing books, public speaking, entertaining, or just plain living, with enormous enthusiasm and energy. Patsy had an amazing ability to somehow touch people’s lives and influence them, even after a brief meeting. Her grace, charm, common sense, self-deprecating humour and sheer joie de vivre was infectious. People loved her and she will be sadly missed by many, including all of us here at Cove magazine.

Back at his best After a strenuous tour with his American rock band Bon Jovi in 2013, lead singer Jon Bon Jovi took a year off from music. Now he’s back and sharing what he learned through the lyrics of the band’s new album, This House is Not For Sale.

Was it hard work doing the album? No, it was a jewel but there was so much that went into it. While I was in that period, over the last three years, there was a time for doing nothing, for coming down from the last tour and everything that was involved in that traumatically, to sitting out in 2014 doing nothing musically, to 2015 starting the writing process for ‘This House’. By May or June of this year, when it was complete, I could just say it’s released and it’s a relief. Is it any good? I think it is but you have to wait and see what the reaction is in the real world and that’s just starting now. This feels like the beginning. The new light at the end of the tunnel.

How was it not doing music for a year? Fine by me. After the tumultuous ‘What About Now’ tour I just looked at that guitar sitting on the stand in my bedroom and kept walking by it. It would look at me and give me the cold shoulder and not say anything. Just like a lover turns their back on you. I was fine with that (laughs).

So you didn’t miss it at all? It’s interesting, I don’t have any fear that it won’t come back again, the writing or the ability. I don’t force it. If I don’t feel like writing, if it’s not there, it’s not there. It’ll come back. So in all of 2014 I had no desire what so ever to touch it. >>

What do you do when you don’t do music for a year? Well, if you don’t know the background of 2013, it was a difficult tour. It was a long tour and then I was trying to buy the [Buffalo Bills] NFL football team up until September of 2014 and that didn’t work out. That was one more blow that it was just too much. But by January of 2015 I was ready to start a dialogue with the guitar. It’s like I walk by and I go, ‘How you doing? Still playing the cold shoulder? Oh ok then, I’ll wait’, and eventually it says, ‘Oh, I’m ok, how are you?’.

Anytime you run into an obstacle in life – no matter whose life it is – it’s almost God’s way of saying, ‘I’m just steering you this way. It’s ok, I just didn’t want you to keep going that way. I put an obstacle in your way so you’d come this way’. That’s part of the journey. In your song ‘Reunion’ it felt to me like you were addressing your children? Well, I was given an honorary doctorate at a college, so it’s Dr. Bon Jovi speaking to these grads.

Being an inspiration to college students, does that mean a lot to you? I’m grateful. I’m humbled by it. I put in a lot of work into my career. I did a lot of living in these last three decades. I’m glad somebody is paying attention to the lyrics, because I obviously put in the effort. But that’s where it ends. I don’t profess to be a professor. I’m just a student of life, just like everyone else, trying to figure it out.

You knew you would get back together? Eventually, yes (laughs).

Do people call you Dr. Bon Jovi? No, but funny enough, I’m asked to speak in a university in New Jersey. I prepare this speech, what can you really say? ‘Go and do things in your life, try things’. But to add to it, I wrote them a song and I played it for them that day and it really resonated, it got a lot of reaction, because the lyrics made sense and people related to it. So I said, ‘Well, I think this is a part of the three years. Not every thing was just dark and miserable’.

Your children are around the age where they’re graduating... I have two that will graduate college this year. My daughter stuck around for more film school. She got out in June and Jessie will graduate ahead of his class in December, then I have a fourteen and twelve year-old, so they have a few years to go.

It’s interesting that in this traumatic year, you didn’t use songwriting as therapy … Oh, I think it’s very therapeutic. Not the year after. I wasn’t ready for it. I couldn’t have done it. There was no chance, not in 2014. You know, in order to get therapy, you have to know that you need it. I was too low. The curb was up. The gutter was a step up from where I was. Have you been sure, all the way through, that your positivity would return? No, I wasn’t confident that it could or would, it was just a result of all of the elements that lead me to this place.

I think it’s your second doctorate. It is. Please, it’s not worth the paper it’s printed on, but I’m humbled by it. Two universities in the great state of New Jersey have bestowed this honour. It’s nice. I’m the professor. That’s what living life will do for you.

Do they know what they want to do? My daughter wants to do film, film business. She’ll be like a film producer. So she can do one with you? Yeah, no, no thanks (laughs). I’m out of that one, but yeah, she’s in that business. It’s neat. Nobody wants to follow in your footsteps? No, that’s just fine by me too. >>

Do you hope they will change their minds? No, I don’t care. It’s interesting, none of my brothers were in the music business, my parents were not musical, nor were my children. It was just my calling, so I don’t push it on them. The new album was recorded here at Avatar Studios (The Power Station). This place was run by your uncle, wasn’t it? He was a second cousin. I’d never known the guy prior to 1980. Then I was lucky enough, my dad called him and said, ‘Would you come and see my kid’s band because he’s very serious about it. Before I put my support behind him, come and see the kid, you’re the only guy I know in the music business’. We went to the recording studio and the guy says, ‘The band’s not very good, but the kid is pretty special. Nice to meet you’. And he said to me, ‘If I can ever do anything for you, give me a call’. So in September, 36 years ago, I called him and said, ‘Hi, remember me? Can I just come and hang out?’. They gave me fifty dollars a week and I was the gofer and I would go for this, go for that. Then, I subsequently recorded ‘Runaway’ in that room and then we did our first album in that room and we did the new one here, upstairs. This power station was one of the most famous recording studios in the world. From ‘Under Pressure’ to ‘Let’s Dance’ to ‘Like a Virgin’ to ‘Born in the U.S.A.’. You name it, this was the place. So from the fall of 1980 until the summer of 1983 I was here and it was amazing. When Richie [Sambora] left the band four years ago, was it like a divorce? A divorce? A real divorce of marriage or a relationship to Richie?

Your relationship. Did it feel like an actual divorce might feel like? I don’t think so, having never gone through a divorce. No, I mean, the truth is the truth. It was a show night. It was show 21 on the last tour, and he didn’t show up. There was never a fight, it wasn’t about money, there was no argument, the album was coming in at number one that week, we were sold-out everywhere. The last time he had been in rehab, this guy Phil X filled in for him. So I was like, ‘Hey Phil, do you still have those charts? Do you know the songs?’ And we got him the next day. Fortunately for us we never missed a beat. Richie’s got his demons and that was that. Just like that, not showing up? I would have at least imagined a proper fight ... I swear to you on a stack of bibles ... no, there was no fight. How euphoric do you get when you’re playing a song? There’s a great sense of pride. When you write a song on a notebook, you think you hear what it’s going to sound like and then you show it to the band, the drums, the base, and the keyboard, and it takes shape in the studio. When you have the thought confirmed from the notebook to reality, it’s incredible. Then, the next phase is to go out and perform it for people, then you really know if the song works or not. Even when you finish the record, you think it’s right, but until you play it for people, you don’t know if it works. That’s true. What you were aiming for on this latest record? The intricate word in all the descriptions of it is integrity. That the integrity of the band should

not be called into question and I think the songs stand on their own. Not euphoria, not optimism. Although, I’m an optimistic guy at the end of the day, this is not that. This record is about integrity. It’s a very serious word of serious value. Yeah, it’s not light-hearted. It’s all of us together. This is about taking something very personal and then people making it their own. As soon as the songs are out of my hands, they don’t belong to me anymore. They belong to the world and people decide what they’re about. For you, personally, you’ve always been a man of integrity? I hope so. That’s an aspiration. Wouldn’t that be the greatest thing to say about any person? That their integrity was intact? That they didn’t sell their soul? That is something I consider to be very important, regardless of what you are or what you do. Is this Jon Bon Jovi speaking or is this a character? No, definitely me. You know, people are going to say this happened and this happened. ‘Coulda, shoulda, woulda’, was that my mantra? Absolutely not. WHO’D HAVE THOUGHT back in 1986 that the sale of 200 yearlings on Queensland’s Gold Coast would evolve into the Southern Hemisphere’s highest-earning yearling sale and one of the country’s most prestigious equine events? In the space of 30 short years, the Jeep Magic Millions Carnival and Raceday now catalogues well over 5,000 horses for auction and is a key component of the Australian breeding and racing economy, while the Raceday itself counts among the world’s 10 richest racemeets. And with Magic Millions sales graduates racking up around 6,000 global wins each and every racing season, as well as accounting for nine of the last 12 Golden Slipper wins and the 2009 Melbourne Cup winner – Shocking – it’s not hard to see why. Complemented by the Magic Millions Race Series and a flurry of social events including the Myer Fashions on the Field and the Moët & Chandon Opening Night, the Magic Millions Yearling Sale Series reflects the Magic Millions philosophy of innovation, participation and fun at the racetrack. Magic Millions Racing Women Launched in 2012, Magic Millions Racing Women is aimed at fostering the development and recognition of women in thoroughbred horse racing through incentives and resources that encourage women’s participation in the industry. These incentives include an additional prizemoney bonus of AU$500,000 that is distributed between the first four all-female owned or leased horses in finishing order of the race. This has resulted in a steadily increasing number of registrations of horses targeted at the bonus, with 126 registrations being received in 2016 – only four years after the introduction of the incentive. Key figures in the Women’s program include Katie Page-Harvey, Magic Millions co-owner who launched Magic Millions Racing Women to boost the profile of women in the thoroughbred horse racing industry, and Zara Phillips MBE, a silver medal-winning Olympian equestrian and Magic Millions Racing Women Patron who is also the second-eldest grandchild of Queen Elizabeth II.

WE NEED TO TALK ABOUT BALLY. Something very, very interesting is happening at the revered Swiss luxury brand that has been operating, with great elegance, since 1851. Bally’s heritage is in shoe-making, and over the years there has been the introduction of a full fashion selection including bags, belts, eyewear, wallets, scarves and ready to wear. There has also been a series of design directors over time, but it is the 2014 appointment of Argentinian born Pablo Coppola that is making some beautiful shifts in both product and perception. Pablo has more than a decade’s experience of designing accessories, with stints at several of the industry’s top luxury brands, including Christian Dior, Tom Ford, Alexander McQueen, Burberry and Celine. He now oversees the design team responsible for Bally’s ready to wear, shoes, handbags and accessories, as well as overall brand image and communications, based in the company’s London headquarters. What has become increasingly apparent is that while Pablo clearly appreciates history, he also understands how to innovate. And have some fun along the way. First and foremost, Bally’s history is in shoes, and what a rich and unparalleled history it is. The Bally family began collecting shoes in the 1850s: the private collection eventually became a museum in 1942. Housed in the original home of Carl Franz Bally, in picturesque Schonenwerd, Switzerland, the museum is open to the public, and houses more than 1,000 pairs of shoes from ancient roman sandals to swashbuckling over the knee boots fit for The Three Musketeers. The Bally archive, in the nearby head office, also boasts a collection of more than 35,000 styles. It is an astonishing collection, undoubtedly one the most important private fashion archives in the world. From the high buttoned boots of the late 19th century, to the feminine thirties styles, forties platforms and fifties stilettos it is a veritable secret shoe heaven (one this journalist was fortunate to have visited a number of years ago). >>

Pablo has, of course, been inspired by this treasure trove, citing the thirties as perhaps his favourite period. “Before I joined Bally I always thought of it as a men’s brand,” he told Wallpaper magazine earlier this year. “Then I visited the archive and I couldn’t believe the amount of beautiful women’s shoes – all these golden shoes for women in the 1920s and

Bally was never flashy, it was beautifully constructed and beautifully considered. Pablo is continuing this tradition, of recognising and capturing the mastery of the past, and bringing it into the now. In April 2016, Bally celebrated the opening of a new David Chipperfield-designed Tokyu Plaza store in Tokyo with a selection of archival shoes in a brand

After a 60’s infused Autumn/Winter 2016 women’s collection, inspired by girl groups such as Martha and The Vandellas and The Shirelles, Pablo has hit the ground running with a gorgeous Spring/Summer 2017. The collections still have lingering traces of the 60’s with its poppy colours and chunky costume jewellery, but there is masterful exploration of some

I love our archive and go back whenever I can.” Bally is a most-European brand, and Pablo is correct in suggesting that it was for a long time more famous for men’s shoes, especially the ‘Scribe’, a style created in 1951 by Carl Franz Bally’s grandson Max, named after the Hotel Scribe in Paris. The Scribe became Bally’s bestselling style and has since been updated to versions called the Scribe Novo and the Scribe Novo Light; this gently tapered dress shoe is still one of the most elegant and classic styles for a well-dressed man, and a wardrobe benchmark. “Almost every man in Paris wore Bally loafers in the eighties,” a French male friend assured me. Bally became quietly famous for style, comfort and quality. You went to Bally for the sort of shoe you bought regularly, a staple that you updated.

But defiance may also be a term that can equally apply to Coppola. His new designs for men and women are both classic and a touch kooky – Men’s Spring/Summer 2017 features classic suits (in tomato red and musk pink), jeans and cowboy shirts embroidered with edelweiss, kimono coats, leather tracksuits, pale blue clutch bags and studded velvet loafers (worn all at once if so desired).

Bags are a standout, a fuchsia crushed velvet back pack, a quilted chain bag in shiny gold foil (with matching espadrilles), a not so sensible but highly covetable croc print tote in pale blue, all tapping into a new consumer desire for light-heartedness. In the same sense of joie de vivre, Bally has teamed up with Swedish born artist André Saraiva for an exclusive capsule collection released in selected Bally stores and online in France, Germany, Italy, Japan, U.K. and U.S. from October 2016. Also known as Monsieur André or Monsieur A, André’s career began in the mid-1980s on the streets of Paris, when he started painting graffiti on the walls featuring a cheerful stick figure by the name of ‘Mr. A’.

A sparkling, Chipperfield-designed flagship store opened its dazzling doors on Rodeo Drive, Los Angeles in 2016 and expansion in the U.S. market will continue later with new stores planned for Miami and Hawaii, and a flagship store in New York in 2017. They have also recently opened a stylish new boutique in the redeveloped Pacific Fair on the Gold Coast. For a luxury brand with a 165-year-old history, maintaining tradition, while being contemporary and relevant, is a delicate balance. Pablo’s light touch, playful experimentation and clear-sighted appreciation of the past have made us excited about Bally all over again. As someone who has seen the already phenomenal archives, it may be that the best is yet to come.

MAX MARA rewrites the script with a star part for Miss Grace Jones, a self-fashioned icon who knows all there is to know about working the dynamic between masculine woman and feminine man. Her recently published book, ‘I’ll Never Write My Memoirs’, lists her enigmatic role models: David Bowie, Marlene Dietrich, Klaus Nomi and Lauren Bacall. WITH THE SUMMER holidays fast approaching I decided to seek some advice from Brisbane childrenswear experts – Elizabeth O’ConnorCowley, founder and designer of eeni meeni miini moh and e3M; Rachel Moor, co-owner of littlekisses.com; and Anna Callinan owner of Cocoon Petite Living – to ensure my daughters are on point this season. First up I asked what the key colour palettes are for 2016/17. “Summer is always such a vibrant, playful time of the year,” Anna replies. “We are seeing lots of fresh colour palettes including blues, greens and yellows coming through for girls, while reds and oranges are featuring strongly in our boys ranges.” “Neons continue to be very popular – citrus, neon green and neon red exude confidence and brightness for summer and feature in both our girls and boys collections,” says Elizabeth. “A pop of neon teamed back with our signature hues makes the perfect combo.” As for the babies …

Summer pasta Serve up summer seafood with a difference using this delicious recipe from Balthazar Restaurant, Crowne Plaza Surfers Paradise. Ravioli Lobster with Armoricaine Sauce PASTA Ingredients 400gm plain flour 4 eggs Method 1. Put flour through sieve. 2. M ix in eggs one by one on low speed blender. 3. R oll dough through pasta machine to cover numbers. RAVIOLI STUFFING Ingredients 1 500gm lobster 150ml cream 2 egg whites Salt and pepper to taste Dill Method 1. Remove tail from lobster. 2. Dice half of lobster tail. 3. Sautee in butter. 4. Blend the other half of the lobster tail with egg white, dill and seasoning. 5. Add cream. To make ravioli 1. Cut pasta dough to shape. 2. Top with lobster stuffing. 3. Brush egg white on one side of pastry. 4. Cover with another piece of ravioli pasta. 5. Pinch sides together. ARMORICAINE SAUCE Ingredients 100gm Spanish onion 100gm carrot 50gm garlic 1 bunch tarragon 300gm fresh tomato Brandy Olive oil Salt and pepper 50gm long grain rice Fish sauce

Method 1. Finely dice onion and carrot. 2. Chop garlic. 3. Dice tomato. 4. Chop lobster shell into pieces. 5. SautĂŠ onions and carrots until soft. 6. Add garlic and lobster shell. 7. SautĂŠ until golden. 8. Flame brandy. 9. Add tomato. 10. Cover with fish sauce, season and simmer for 30 minutes. 11. Add rice and simmer until rice is cooked. 12. Put mixture through strainer.

To serve 1. Blanch ravioli in boiling water. 2. Lightly toss in olive oil. 3. Pre-heat pasta bowl. 4. Pour sauce onto bowl. 5. Place lobster ravioli on top of sauce. 6. Garnish with dill and micro herbs and finely shaved black truffle. 7. Add rice.

JEAN-MARC HEUSSNER, EXECUTIVE CHEF CROWNE PLAZA SURFERS PARADISE JEAN-MARC started with Crowne Plaza Surfers Paradise in May 2012. He oversees, and is responsible for, five restaurants, room service, and a 14-room capacity conference and events department specialising in residential conferences, meetings, gala events and weddings. Jean-Marc has had an extensive career across both hotels and independent restaurants. Of particular note is his time working under the guidance of renowned chef Charles Barrier in Les Negre, a Michelin-starred restaurant in France’s Loire Valley. Then followed a trip to Australia, where he landed a lead role in his first Sydney restaurant, Victoire Restaurant in Chatswood. This role allowed Jean-Marc to travel and visit South-East Queensland, taking his first steps into the Gold Coast, working for the ANA, Holiday Inn and Crowne Plaza Hotels. Jean-Marc participates in local food activities and fairs, and over the years has taken part in developing many talented chefs. As Executive Chef he also nurtures other key leadership roles in the kitchen, effectively ensuring sustainability in the hotel’s talent pipeline and, more importantly, the industry pool. MICHAEL AND BRONWYN LIND are the passionate people responsible for turning local ‘white gold’ into quality dairy products under their White Gold Creamery label. A tree change to the Gold Coast hinterland alerted them to the harsh plight of dairy farmers since deregulation of the industry. This knowledge, and an interest in cheese making, led Bronwyn to begin experimenting – making a different cheese each week, using milk produced in her community. Not knowing how far it would take them, Bronwyn entered a cheese makers’ competition in the home-made category. Almost all her products were declared prize-winners, which led to an idea of even greater proportions – how to use this new found passion for cheese making to directly impact their community, and assist in offering farmers a fair price for their milk. “Unless something is done, the future could be devoid of farms like the one I discovered,” Bronwyn said. “They will just disappear from our communities.” Before embarking on their venture, Bronwyn and Michael conducted extensive research, travelling to many of the big cheese making countries, including Italy, France and Germany. The White Gold Creamery was then fastidiously set up to respond to market demand, to place cheeses into the local environment, reflect the local area’s milk, and bring hard-to-find products to their local customer base. They have sufficiently diverse equipment to produce just about every kind of cheese

imaginable – soft, blue, hard, you name it – in this humble creamery at Biggera Waters on the Gold Coast. The Lind’s source the ‘white gold’ from nearby Mt Tommerup outside Beaudesert. Here, Jersey cows graze happily on the farm of sixth generation farmers Dave and Kay Tommerup, and are still hand milked and raised ethically following organic principles. This pasture rearing adds a unique flavour to White Gold Creamery products. Michael regularly visits the farm ensuring strict regulations are met when securing this precious milk. Within a matter of hours of collection, it is pasteurised at the Creamery adding specific cultures. The by-product of cheese and dairy making (the whey) is then transported back to Mt Tommerup for their heritage breed pigs to devour, minimising waste and maximising this valuable food resource. Michael and Bronwyn only deal in small batch amounts of sustainably sourced 'fair’ price milk. Because the milk returns a different flavour depending on the time of year – summer milk yields a lower fat content, while winter milk is creamier with a higher fat content – these artisans are able to constantly create differing flavours and styles. Along with milk from Mt Tommerup’s jersey cows, the couple incorporates local ingredients during maturation of certain cheeses. They are able to wash rinds with local olive oil or beer, or even dust the products with native herbs and leaves to increase the flavour.

The natural Queensland Hoop Pine shelving in the ageing rooms allows the pine to infuse with the cheeses as they age – Cheddar and Beechmont especially sit comfortably on these shelves – adding a unique point of difference. There is a wonderful stretch of products being made at the White Gold Creamery including Cultured Butter (this will yield the perfect beurre noisette, chefs take note); Creme Quartet, an indulgent decadent bloomy rind; Broadwater Blue; Haloumi (best I’ve tasted by far … very very impressive) and Duck Creek, a semi soft gouda-esque, enhanced with flecks of cumin seeds. Bespoke cheeses can also be made/ created on consignment. Recently, Food Standards Australia and New Zealand (FSANZ) lifted the ban on some raw milk cheeses (cheese made from milk that has not been pasteurised), another exciting step for Michael and Bronwyn. “The taste difference is mind blowing, I was shocked at the difference,” Michael says. “To compare the two is to compare a four piece band to a symphony orchestra.” By combining thorough research, support for their farming community and dedicated hard work, with an instinctive expertise and genuine passion, Michael and Bronwyn have developed a superb local product, all using their precious ’White Gold’.

The heart of Heathcote The team at Tellurian Wines has bottled the true essence of the Heathcote winemaking region.

I MET DANIEL HOPKINS late last year and we chatted over a fairly average seafood lunch. He’s the sort of bloke I like – clever, articulate but honest. He’s a country boy and he’s also General Manager at Tellurian Wines – a small, family-run winery in Heathcote. Tellurian was his dad’s idea. Ian Hopkins is an engineer with a lifetime love of wine. In 2002 he did the thing folks say you should never do and turned his hobby into a work project by buying a patch of land in Heathcote and planting it to vines. Hobby became toil, but from what I could glean it is stuff he still loves. At the time Ian was buying land Daniel was flying pretty high, working for Nike, hunting gifted athletes and travelling the world. These days he is firmly grounded in Heathcote, but – like his father – he seems rather content. In 2006 the Tellurian team doubled with the addition of Tobias Anstead (winemaker) and Tim Brown (viticultural consultant). Heathcote lies almost in the middle of Victoria, 102 (as the crow flies) kilometres pretty much due north of the Melbourne CBD and about 40 kilometres south-east of Bendigo.

It is Shiraz country. Like Coonawarra just over the South Australian border, soil is a big part of what defines its wines: here it is ancient, red Cambrian soils that grab most of the spotlight. Heathcote Shiraz gained a reputation as a high-octane powerhouse with some of its icons – like Wild Duck Creek – pushing the upper boundaries with explosive, uber-ripe flavours. And – as was the fashion not too many years past – a lot of new oak could be seen in the district. But there’s more to the region than merely bombastic wines, and today the best examples combine power and richness with far more elegance and restraint. Tellurian follows the more placid approach. The Tellurian vineyard lies to the north of the Heathcote township on the slopes of the Mount Camel range. Most of it is planted to Shiraz, but there’s also Riesling, Marsanne, Viognier, Grenache, Mourvedre and that wonderful Sicilian variety … Nero d’Avola. Establishing a vineyard demands a lot of yakka, fairly deep pockets and plenty of patience. Once the vines are finally in the ground it takes at least two years to grow a usable harvest, then a

further 10 for things to really get ticking. Tellurian made its first wine – a Shiraz – in 2008. Today there’s plenty more to the range. Grapes for two of the wines are currently sourced from the Chalmers Vineyard, also in Heathcote. These two, Fiano and Nero d’Avola, are quirky Italian varieties that the Chalmers family pioneered and championed (along with a plethora of other Italian grapes) in Australia. And both are finding a very firm foothold. The 2015 Tellurian Fiano is finer and more textural than a lot of the other Australian examples. It has had some barrel work which kind of plucks away at the fruit characters and adds some more savoury elements. Compared to a lot of the Italian versions it looks quite contemporary – mod-Oz alternative white with a Fiano bent: I love it. Nero d’Avola is a contrary beast: it’s a Sicilian red so you expect something brash and powerful … loud. But it tends more to perfume and a weight not far beyond Pinot Noir. Tellurian’s 2014 doesn’t lack for structure and it has captured the flirtatiousness of the variety. This is lazy Sunday afternoon red, slow sipping over olives and anchovies.

It shows the nutty, silky, fresh pear notes that typify Marsanne but like the Fiano there’s more to it than simple fruit; there’s some canny winemaking adding complexities and mouth feel. And the Viognier is superb – again not overblown but perfumed and lush. There’s a stunning 2015 Rosé crafted from Shiraz, Grenache, Mourvedre and Nero d’Avola – fine, dry, supple. A bunch of reds are produced but it’s Shiraz that really fuels the Tellurian story. Redline is the entry-level (around $22), then Pastiche ($27), and Tranter ($40) as the flagship plus two small parcels of single-block Shiraz. They all share the family traits of brightness and elegance, but as you taste upwards through the range they become more intense, more plush and paired with more oak. There’s a distinctive spice and lift to Heathcote Shiraz, particularly the stuff grown on the red soils. It’s there in spades in the Tellurian reds – they reek of their region. And despite the fact that they are gentler, more restrained wines than some of the big-name wines of a few years ago, I reckon they’ll live just as long and look a whole lot better when they get there.

MANY PEOPLE say the best thing about travelling is coming home again … but when your destinations include New Orleans, Nashville, Washington and New York, sometimes you wish you could stay away forever. This is exactly how Derek and I felt on our recent Big Easy to the Big Apple tour with APT. The month long odyssey wove its way from the heartland of the deep South, along the mighty Mississippi, across to the nation’s capital, before finishing up in the city that never sleeps … all clichés, but all providing experiences that lived up to the hype. After a quick layover in Dallas, our first stop was New Orleans where we spent a few days taking in the sights, sounds and smells of the

unique experiences as we were led through the streets of the ‘Quarter’ by a traditional Dixieland Jazz band, complete with police escort. Having the entire city centre come to a halt just so that we could walk to our restaurant was a surreal feeling (although I am assured the locals are quite used to it). The next leg of our trip was spent aboard the Queen of the Mississippi, a luxury small-ship paddlewheeler that took us from New Orleans through to Memphis. While the Mississippi itself was a bit disappointing – a working river with levee banks that prevent much sightseeing – the accommodation, company, service and dining options were excellent.

American Civil War, so naturally many of the daily excursions were focused on these two areas. Highlights included a visit to the perfectly preserved Oak Alley Plantation with its majestic avenue of 28 evenly spaced oak trees; another to Frogmore Plantation where we witnessed a heart-wrenching rendition of Old Man River; and a tour of Vicksburg National Military Park, the site of a key battle in 1863. Disembarking after seven magical days on board, more amazing experiences awaited. As Marc Cohn so eloquently put it, ‘I was walking in Memphis, walking with my feet ten feet off of Beale’. He was of course referring to Beale Street, the iconic thoroughfare where names such

French Quarter, exploring the home of the famous (or infamous) Mardi Gras and getting our first look at the stunning antebellum architecture that is prevalent throughout the South. One constant on the entire journey was the music and New Orleans provided the first of many

Speaking of Elvis, one of the benefits of joining an organised tour is the exclusive access given to attractions usually overrun by tourists and this was especially appreciated on our after-hours visit to Graceland. Although relatively humble by today’s standards, the King’s mansion was every bit as ostentatious and spectacular as you would expect. It was easy to imagine his entourage lounging around the famed Jungle Room or shooting pool on the blue suede billiard table. The grounds were equally impressive, as was the Elvis Presley Automobile Museum where we enjoyed a private dinner surrounded by pink Cadillacs and vintage Ferraris … a truly special and memorable night. Moving from rock’n’roll to rockabilly … the next stop on our journey was Nashville. Having been born in Australia’s country music capital, Tamworth, I was very much looking forward to visiting its American counterpart and I wasn’t disappointed. From standing on stage at the Grand Ole Opry to listening to buskers on the ‘Honky Tonk Highway’; from searching for the perfect pair of red cowboy boots to ‘walking the line’ at the Johnny Cash Museum, I loved every single minute of my time there. >>

However, a word of caution … don’t wander into a bar on Memorial Day and expect to have ‘just one drink’ … and if you do, don’t tell the band you are Australian because the odds are you will still be there singing Keith Urban songs until the early hours of the morning. After a memorable few days in ‘Music City U.S.A.’, we boarded a flight to the East Coast to check out Washington DC. A lot more corporate and conservative than the previous destinations, it was still a fascinating place to visit. Naturally, the White House, Arlington Cemetery and Lincoln Memorial were at the top of our sightseeing list, as was a visit to at least one of the Smithsonian Museums.

Graceland, Memphis

Unfortunately our holiday coincided with the end of the American school year and the entire city was overrun with kids, so we soon retreated to our hotel and a slice of the amazing apple pie at the Blue Duck Tavern across the road (a huge thanks to my American friends for this recommendation). After a quick detour though Amish Country (and the obligatory buggy ride), we found ourselves on the streets of Philadelphia. Although our stay here was brief, there was still time to check out the biggest record store I’ve ever seen and belt out the strains of the Rocky music as we ran (or in my case walked) up the stairs made famous by Sylvester Stallone in the 1970s.

The musical mystery tour continued in New York, where we were lucky enough to catch the Rockettes in full dress rehearsal during a tour of Radio City Music Hall, as well as see the amazing Carol King-inspired musical Beautiful and the new Cirque du Soliel show, appropriately named Paramour on Broadway. Of course, no visit to New York is complete without a visit to the Empire State Building, which we did at midnight following a delicious meal at the Tribeca Grill (apparently this is a celebrity haunt but there were no stars in sight the night we were there). Despite the time, this iconic building was extremely busy. My advice … get your hands on a VIP pass, either through your hotel concierge

City escape In her final column, Patsy Rowe recalls a mid-week break in Brisbane.

LET ME BEGIN by saying that Bill really is a very good driver. It’s just that we’re different kinds of drivers. When heading to Brisbane, if I were at the wheel I would choose a lane as we came onto the motorway, and potter along in that lane until we arrived. Not so for Bill. He likes to try them all. And try them he does. Back and forth, with added commentary: ‘look at this galah chugging along in second gear’, ‘we won’t be in Brisbane till tomorrow at this rate’ … and my favourite: ‘this fella shouldn’t be in the overtaking lane. That’s illegal. I’ll have to go round him’. It isn’t that he’s actually in a hurry. He just doesn’t like to be behind anyone. Needless to say by the time we arrived at the Sofitel Hotel Brisbane for a midweek visit of two nights and three days, I was fairly stressed but Bill was just fine. Brisbane is a city which makes for a marvellous short break. Besides being close to home for us, it’s also the epicentre of all that is hip and happening these days, from fine dining and cocktail bars to swanky hotels. The only dilemma is that there are so many places to enjoy, and often so little time to enjoy them. For this escape we chose the Sofitel Brisbane for several reasons including its location. It’s right above Central Station, with the cultural centre close by, along with the designer boutiques of

Queen Street Mall and the opportunity to put a serious dent in Bill’s wallet. It wasn’t our first stay, so from the moment we walked into the lobby the Asian-inspired potted miniature trees and fresh flowers, fused with a dash of stylish French ‘art de recevoir’, was both familiar and welcoming. This included the smartly uniformed staff who greet you with ‘bonjour’ or ‘bonsoir’” depending on the time of day. Aspiring Francophiles beware, however. Attempt to engage your greeter with more conversation in French and, as I discovered, you’ll be left hanging. The ‘to-do’ lists that Bill and I compile for our Brisbane jaunts are rarely completed, but on this particular visit a top pick for both of us was seeing Tango Fire at the Queensland Performing Arts Centre. A dance troupe from Buenos Aires, they have moves which have to be seen to be believed. It’s a blur of high energy, high kicks, and the winding of legs between legs, which comes and goes with such speed you could be forgiven for thinking you’d missed it. We also got all our Christmas shopping done, even though it wasn’t strictly on the list. It began innocently with a workout in the Sofitel fitness centre. The treadmills were nicely positioned in front of floor to ceiling windows, offering not just a chance to work off some calories, but sublime views of the city. Unfortunately for Bill, this included QueensPlaza and David Jones.

“So much for our affordable getaway,” sighed Bill as he watched me skip towards the exit. The workout was ditched in favour of serious gift buying. On the way back to the hotel, laden with parcels, we somehow managed to get lost. On the plus side, the detour involved an unexpected stop at the Chanel boutique. It was something else to tick off my personal ‘to do’ list and raise Bill’s blood pressure. Beyond tango and shopping, most of our other outings involved food and wine, or cocktails. We enjoyed a glass of wine at Harveys, a charming Fortitude Valley bistro where the waitstaff are stylishly dressed, no doubt inspired by the surrounding chic fashion boutiques which Bill forbade me to explore. We also stopped by the uber-glamorous Emporium Hotel, which has a lavish cocktail bar for yet another glass of wine. Back at the Sofitel, we sampled drinks at the tropical-accented Cuvée Lounge Bar, which boasts extensive cocktail and champagne lists. We can also give a thumbs up to breakfast at Thyme2, especially the Eggs Benedict. We only had time to poke our noses briefly into the swish Stephanies Spa, and we sadly didn’t get to experience Privé249, the Sofitel’s fine dining venue, in spite of much encouragement from foodie friends. Oh well, in the meantime it’s back to the freeway.

MERCEDES-BENZ C-CLASS CABRIOLET Mercedes-Benz has completed the roll-out of body styles for its popular C-Class range with the introduction of a cabriolet – and it may be the answer to many drivers’ dreams. After the sedan, wagon and coupe, the cabriolet ices the C-Class cake with a glamourous, four-seat drop-top alternative to the BMW 4 Series convertible. The C-Class is supposed to be Mercedes’ ‘compact’ range, but it grows bigger with every generation. Nonetheless, as the first cabriolet in the history of the C-Class model – now in its fourth generation – the new car is a size smaller than the long-serving E-Class cabriolet. The E-Class is a mid-to-large car, so the availability of a smaller and less expensive alternative will be welcomed by buyers who want the Mercedes style without quite as much substance. The usual features are there, including AIRCAP and AIRSCARF to keep you warm when the top’s down. Lowered or raised in 20 seconds at up to 50kmh, the acoustic convertible roof comes in dark brown, dark blue, dark red or black to contrast with your paintwork. Two four-cylinder versions, C200 and C300, were launched for sale in October 2016, priced at $85,900 and $99,900 respectively. Early in 2017, Mercedes will add AMG C43 4MATIC (V6) and AMG C63 S (V8) sports models, priced at $119,900 and $179,900. The cabriolet coincides with the introduction of the AMG C43 variant across the C-Class range. With 270kW of power it should be a popular midrange choice between the cruiser-style C200 and C300 and fire-breathing C63 S. Of particular note is the inclusion of 4MATIC all-wheel drive, a first for the C-Class.

MASERATI QUATTROPORTE GTS Critics might argue whether objectively the Maserati Quattroporte GTS is the best luxury sedan, but if passion rules the purse-strings it should be no contest. This is the car with curvaceous looks that evoke fantasies of certain Italian actresses, silk upholstery by suit-maker Ermenegildo Zegna and a raspy, cultured V8 engine that is pure theatre. So what if it doesn’t quite match the über-techno firepower of a German bahnstormer? An upgraded Quattroporte range has just been introduced in Australia, featuring new front grille and bumpers, better aerodynamic efficiency and enhanced interiors including Apple CarPlay and Android Auto. A new package of safety systems is standard. It includes adaptive cruise control with stop&go, lane-departure warning and forward-collision warning with advanced brake assist and automated emergency braking. A surround-view camera complements the reversing camera. There are now two variants, GranSport ($345,990) and GranLusso ($349,990), which offer the choice of sporty or luxury emphasis. Really, this is semantics as both have the same awesome V8 engine – aluminium, 3.8 litres, quad-camshafts, twin turbochargers and 390kW of power. If you want to boast, the GTS will sprint from rest to 100 kmh in 4.7 seconds and on to a claimed top of 310 kmh – and make your hair stand on end for every metre. Comfort and corner handling are superb. The upgraded models arrived before we’d managed to report on the version we’d driven a month or two earlier. They will only freshen the appeal of a gorgeous car. >>

VOLVO XC90 Swedish maker Volvo has been on a drive in recent years to widen the appeal of its cars and wagons, especially since its sale to Geely of China, but that doesn’t mean it has lost any of its individuality. With its second-generation XC90 large SUV, Volvo has produced a distinctive rival for the better-known contenders such as the BMW X5, Audi Q7, Mercedes-Benz GLE and Range-Rover Sport. Large and handsome on the outside, it’s on the inside the differences show most. The 7-seat Volvo is not only luxurious, but also refreshingly designed in the clean, Swedish style. There’s a minimum of knobs and levers – and those there are, are easy to see and reach while driving – with many controls operated through a large central touch-screen. Volvo leather always seems to be thicker and more supple than in most cars and the XC90’s interior is a particularly comfortable place. The rear-most seat row is easy to access and for children who have grown out of a baby capsule, an integrated booster seat in the middle row is a superior alternative to an aftermarket product. Elsewhere, the interior finishes of jewel-patterned satin metal, and low-gloss light wood convey class, not brass. The attention to detail design is very satisfying. The XC90 can’t hide its big footprint. It’s tall and imposing but thankfully no challenge to drive. The highly successful first-generation XC90 offered five-cylinder, six-cylinder and V8 engines, but the new model makes a loud statement about efficiency by using only 2.0-litre four-cylinders. Turbocharging ensures these compact units – one petrol, one diesel and one hybrid – push this two-tonne wagon along with surprising verve and very respectable fuel economy. The diesel produces 165kW, the petrol 235kW. The hybrid supplements the petrol unit with 65kW of electric power, hits 100kmh in 5.6 seconds, tops 230kmh and drinks as little fuel as 2.1 litres per 100 kms in city/highway use. Our diesel test example had a dealer-fitted Polestar Performance Optimisation option, which boosted power, torque and driveability without economy loss. Impressive, not unique, these Volvo engines prove car makers are taking huge steps towards pollution reduction. On the road, or off, the XC90 is easy to handle despite its bulk. There’s an eight-speed auto transmission, all-wheel drive and selectable drive modes to help traverse different terrains. It’s pretty quiet overall – all the better to hear the optional Bowers & Wilkins sound system – although the diesel’s characteristic rattle isn’t muffled completely. Then there’s safety, a Volvo hallmark since it fitted the first three-point seatbelt in 1959. The modern Volvo has a full suite of features – albeit some at extra cost – but my favourite is Queue Assist, which keeps your car stopping and starting automatically in crawling traffic without bumping the car in front. There are three trim levels available in the XC90, Momentum, Inscription and R-Design and list prices range between $93,950 and $122,950. With engines limited to 2.0 fours, it’s difficult to rate the Volvo XC90 against other brands that offer more choice. But for sure, it’s a strong performer with an attractive and individual design style.

A space to call home Darren Palmer is perhaps best known for his role as a judge on The Block, however, it is his passion for helping others achieve their dream home that is the inspiration behind his new book, HomeSpace.

AUTHOR, DESIGNER, RENOVATOR, JUDGE … when it comes to interiors Darren Palmer is a jackof-all-trades … and a master of each and every one. His latest project is a new book, appropriately titled HomeSpace. “The book’s about showing how different types of families, of all different makeups, can satisfy their own brief and interpret things their own way to end up with a home that reflects them and their needs,” he explains. “I know a lot of people want an easy answer and they want to be able to paint by numbers but the idea that one size fits all just doesn’t resonate with me. “Everybody’s response to things is different, so you can’t say that green is the answer because it might not be the answer for you. “I need to teach people how they can get to know themselves and to interpret the fundamentals in their own way so they can get homes that please them, and better still make them feel prosperous. “There’s more joy in learning and understanding and diluting it down to your personal essence,” he insists. “And it’s validating as well. If you work 60 hours a week and you come home to something that’s reflective of you and it feels comfortable and you feel like you belong then you can say ‘ok, cool, I can get through the next week’.” This concept of getting to know the client and being able to interpret their needs is intrinsic to Darren’s role as interior designer. “What I do is put furniture in people’s houses, but the benefit is that I make places that fit people and make them feel like they have a place that they belong,” he says. “Through speaking to people, I can get a sense of who they are. I can understand whether they are conservative or not conservative, whether they are risk takers or not. There are a lot of clues when you are building a rapport with someone that belies what sort of person they are.

“Once I get an understanding of what type of person they are I ask the questions I need to ask about what lights them up, what they need, what they don’t need, what’s working, what’s not working, what styles work for them, the colours they respond to, and it’s that process that we do as designers every time we meet a new client, that most people out there don’t even think about.” As for those of us who struggle with their design choices, Darren has some simple advice. “It’s only when you look at everything as a possibility that it’s overwhelming,” he insists. “If you understand the process and you understand the parameters and constraints it makes things much easier. “Not everything is going to be appropriate for your brief and it’s only by understanding what your brief is that you can discard everything that doesn’t work and narrow it down to a small amount of choices. “If you choose pieces that are classic and enduring you can change your decorative elements once every three months if you want. “Cushions are cheap, soft furnishings are cheap, you can change the look of a room just by switching a lamp or the rug.” Just don’t mention the word ‘trends’… “You’ll never really hear me talking about trends,” he admits. “It’s great to see new product and it’s great to get some new ideas but when you start to adhere to trends in a slavish fashion where you are reproducing a look from a magazine or from somebody else’s work then you’re denying your own sense of personality. “And your personality is the key thing I keep coming back to, your personality is the thing that makes your home feel like you. “If you are going to use a trend, try to avoid more permanent items like tiles in bathrooms, for example, because those tend to come and go but you’ll be stuck with it for a decade.” >>

It is advice like this that helped secure Darren a role as a judge on hit TV show, The Block. “Of all the things I do, and I have between five and seven different jobs, the easiest in terms of logistics is The Block because all I do is turn up and talk about what I know and what I love. “It is hard work in that, while I’m judging others, we are being judged,” he admits. “We are being judged by the contestants, we are being judged by viewers, and if I miss something or I let my opinions get in the way it’s on me. “It doesn’t really matter if something pleases me aesthetically, what matters when I’m judging are four criteria – design, inclusions, appropriateness to the market and finish. “Those get broken down into 2.5 points each so someone could design something really beautifully, have the most amazing furniture, be exactly right for the market but not be finished and they could still get an 8 because they are only losing points off the finish.” When is comes to the show itself, Darren gets to enjoy all the action at the same time as the viewers. “The first time we see the drama is when we watch it on the telly,” he explains. “In the first three weeks we will say things like ‘this couple’ is doing a really good job’ or ‘the girls …’ because we are struggling with who is who. “We see their photos, we know their names and we know which apartment they are in … and that’s it. We don’t see any of the challenges, any of their dramas or any of their personal issues. This season the first time we met them was on the rooftop at the finish.” This makes it really easy for Darren to be subjective when judging. “We just talk about them based on their work … they take it really personally because they put their heart and soul into it but it’s not an

assessment of them it’s an assessment of their result. It’s very hard for them to separate the two but it’s very easy for us.” I had to ask … how does it feel if you are not fond of a room but find your book included as part of the styling? “It’s challenging because I like to think the book is informative enough for people to make good decisions and come up with something that works. All I can take away from that is that it’s the contestants’ interpretation of what makes them happy and that makes me happy.” Speaking of happy, another of Darren’s passions is the work he does for yourtown, an art union charity that assists young people in the community. “I love to use my skill to help people in need and to work with a charity whose fundraising method is property makes a lot of sense,” Darren says. “I obviously love design so that’s what I was able to do for them, style and furnish their Christmas Prize home. “It worked very well last year and exceeded all their records but because of my commitments I can’t do it more than once a year. “It takes weeks of planning because I have to purchase every single item … we are talking sheets, crockery, cutlery, furniture, décor, everything that somebody needs to live there. “It’s a lot of fun to do something like that where I control everything and I can go from go to whoa in a very short period of time.” Away from work, Darren admits he feels a certain amount of pressure when it comes to his own home. In reality it is more likely to be a build in progress rather than a perfectly styled finished product. “People think my house must be the designer dream but I’m a renovator, I move on average every two years.

“I buy houses that are rundown and I sell houses that are beautiful however I very rarely get to live in them.” As for his personal style … “If I was going to dilute it down to a phrase it would be that my work is comfortable, friendly, contemporary and refined.” Much like Darren himself.

MATT HOLLYWOOD is super-excited … not only does the master magician feature on our cover along with his gorgeous daughters Grace, 10, and Eva, aged seven, he has also recently received the 2016 Merlin Award for International Illusionist of the Year. His on-stage partner, Kristy Probst, was also named International Assistant of the Year. The Awards are bestowed by the 37,000member International Society of Magicians which was founded in 1968, with past winners including Siegfried & Roy, David Copperfield and Criss Angel. “This is the magic world’s equivalent of an Oscar – it’s the biggest achievement we can get in our game,” Matt says. “And to have the society’s president and founder, Tony Hassini, travel to the Gold Coast from Italy to present the award onstage was amazing.” Featuring a repertoire of death-defying tricks, each more spectacular than the last, Matt’s Vegasstyle Illusions show has not just grabbed the attention of the world’s best, it is also enthralling packed audiences in Sanctuary Cove’s iconic Village Theatre every Friday and Saturday night. “It is such a privilege to be a part of the Sanctuary Cove community and be able to perform here every weekend,” he says.

“And because the illusions change every few months, people come back again and again to see the new tricks.” The latest is the Jaws of Death, which sees a straight-jacketed Matt suspended upside down by a flaming rope, with just 60 seconds to escape before the jaws spring shut, bringing the show to a nasty conclusion … While I’m pretty certain he is always able to pull it off, it is an agonising minute as you wait for the clock to count down. Other new tricks to look out for are the Human Teleporter Device (Harry Potter eat your heart out) and the Houdini Underwater Torture Cell (ouch). According to Matt it is this element of danger, coupled with spectacular special effects and a touch of humour, that makes his show so popular. “Audiences enjoy seeing the big grand illusions that we do but I really love spending time with my girls so I have made sure that the show is also very family friendly,” Matt says. “Parents can bring their children along and know that everybody is going to have a great time.” “We also offer dinner and show packages that people can enjoy before or after the performance which makes for a fabulous night out.”
