IN HER LATEST RELEASE, Rough Night, Scarlett Johansson plays Jess, a bride-tobe who reunites with four college friends – Pippa (Kate McKinnon), Alice (Jillian Bell), Frankie (Ilana Glazer) and Blair (Zoë Kravitz) – for her bachelorette party in Miami. When things get wild, they end up with a dead (male) stripper on their hands. Scarlett admits that every single day, as she filmed the hilarious black comedy, she had to try to stop herself from laughing. She didn’t always succeed. She has also recently filmed thriller Ghost in the Shell and is about to embark on the new episodes (3 and 4) of the very successful Avengers series. Let’s start by talking about the story … I think this film is really about friendship. I guess unexpected in some ways – when you review the log line of the film – but actually it’s really a film about those friendships that are old and meaningful and remind you of different times in your life and who you actually are. It’s about those very grounding friendships and how they help us stay true to ourselves. Friendships from our formative years that can have a lifelong impact on our lives? Yes. I certainly have those friendships that I have cherished for almost two decades at this point and there are those friends that you don’t feel the responsibility to catch up with all of the time or put in all this face time to keep it vital. But they are friendships that in a lot of ways are the most meaningful because they are a reflective surface that you can gaze upon and re-centre yourself and that’s really what this film highlights and celebrates. So Jess is getting together with her college friends for the first time in several years?

Right, it’s her bachelorette party and the character that I play has become so work obsessed as politicians in general do during election campaigns. She is totally focused on this very definitive election and her own life and her political career and she believes strongly that she is the right candidate and she is trying to do better for her community but she goes on this detour for her bachelorette party and goes there thinking ‘oh this will be a boozy weekend in the middle of this election cycle, I don’t really have time for this right now’. So it’s inconvenient.

The movie is not vulgar the way that some R-rated comedies are. The situation is so extraordinary and ridiculous it allowed for a lot of very dry and funny stuff. Was it funny on set when you are doing that stuff? We were laughing non-stop. Absolutely non-stop. Those girls are so good at what they do. Kate, Ilana and Jillian have been making their parents laugh since they were three-years-old so they are just so sharp and they inspire one another in an incredible way. I kind of bring my own element to it. I love being the straight man for all this stuff, it’s so funny. Also, Paul is great. When you see the film, the guy stuff in it is just so funny. Obviously we weren’t there when they were filming that. There are scenes when we are following my fiancée and his groomsmen and none of us were there for any of that stuff. When I saw the film, well, they are just absolutely outrageous. Paul kept the girls laughing all the time. And of course Lucia absolutely adores him. The two of them bounce back and forth and it’s absolutely priceless and we were just constantly blowing up. It was so much fun.

What was it like for Ryan Cooper, who plays the stripper? Ryan was such a sport about it and he has to do a lot of acting. It’s crazy when you see the film how realistic he is. He’s really a presence – the body is a character in this movie. In some ways it’s kind of like the sixth member of this group. He was great. I don’t know how he kept it together because it was so hilarious all of the time. He was a model for a long time before he became an actor so he was really good with his body but I don’t know how he did it. We were all amazed. His faces were so good – like his cadaver face was hysterical and it’s hilarious and it’s so wrong. I was very impressed.

Then it all goes crazy when they are in Miami? What happens? Yes, it gets really crazy. A series of events occur and a stripper dies an accidental death and for one reason or another each character justifies the disposal of his body (laughs). Did it make you laugh out loud when you first read it? It did. I remember I was at the beach and I was lying on the couch resting. My daughter was pretty young at the time. I was about to start something – I think it was Ghost in the Shell – and I had one week where I was going to try and take it easy before I headed into it. My agent called me and he said ‘the guys that do Broad City wrote this script’. I was excited about it and I wanted to read it because I think Broad City is so great. I remember reading it and literally laughing out loud. I thought it was so funny. It was thrilling and it’s crazy to get stuff like that. It makes you feel like ‘there is original content out there’. It’s inspiring.

Is it a case of finding the right balance with that kind of comedy? It’s a delicate balance with R-rated comedy.

Have you ever been on one of those kinds of bachelorette parties? I’ve had my own version of those crazy girls nights. My favourite times are girls’ trips – when the girls get together and have a destination trip and get to go out and dance and get crazy and have your hangover brunch. You know, those times when you relax, gossip, inspire one another, read together, that stuff is great and those are the best times and I am long overdue a trip like that. >>



You said that you rarely get sent comedy. Would you like to do more comedy in the future? Yes. I would. I also loved working with Lucia and Paul so much. I would love to be able to continue to collaborate with them on stuff and we talked about doing other things together. I hope that Rough Night does so well that all of us can get together for another one. We talked about what the next one would be: the honeymoon? Or the baby-moon? It would be great if all of us could go on together. Doing comedy is really challenging. It’s exciting and the improvisational aspect of it sharpens your acting tools. So certainly I hope I can do more comedy. What’s next for you? I’m back in the suit. I’m leaving for Scotland and we’re doing a little bit of Avengers there. We’re shooting Avengers 3 and 4 back-to-back and that will take me through until the end of the year. So who knows what the future holds? I’m waiting to know what happens to Natasha.

Are you still enjoying playing her? Oh yeah, it’s fun. I love my co-stars and it’s always great to get back together with all of them. We have the Russo brothers [directors Anthony and Joe] this time and we’ve had some fun with them already. It’s like a family; all of the producers, the filmmakers, the cast. I’ve been with them through my pregnancy and now as a Mum. It’s a great job and I love this character. She’s very complex and it’s been really interesting to grow into my womanhood with a character. I never thought that could ever be possible. I’ve been playing this character since I was 24-years-old and now I’m 32. I’m a different person now than I was then and I think so is Natasha. It’s a really great job. I feel very fortunate to be able to continue this story and who knows what is going to happen. Every time I get the script I’m nervous to open it because I love this character and I care about what happens to her. I’m totally invested in her – so I hope she fares well. We’ll see but she could use a little luck.

You mentioned being a mother. How is that? That’s the greatest adventure of all – it’s the best job ever. I know everybody says it, but I could never have possibly imagined how much you can love someone. It’s crazy. Somebody once described being a Mum to me as being like your heart kind of grows another chamber and I thought that was really apt. It’s challenging in all the best ways.

AS A HIGH ARTISAN and bringer to and taker of wonderous things to his places of significance, Bulgari founder Sotirios Voulgaris had few peers. Born in Kalarites, an Aromanian village in Greece, Sotirios trained as a jeweller and later opened his own store in Paramythia. His distinctive pieces, which drew on the richness of his Greek culture and history, gained immediate attention. With bigger and better things beckoning, Sotirios moved to Rome with only 18 cents and a dream to make his mark in the fashionable city. Opening a store in Via Sistina, he founded Bulgari – the trademark derived from the phonetic spelling of his surname, as written in the classical Latin alphabet. Sotirios’s immersion in Italian culture saw an evolution in Bulgari designs, which began to reflect the influences of ancient and modern Rome alongside those of their classic Greek heritage. And it was not only the designs that made Bulgari pieces instantly recognisable – the use of vibrantly-hued gemstones, particularly sapphires, has always been synonymous with the label. This bold creative departure set Bulgari designs above and beyond others, particularly during the 1950s, when fine jewellery almost exclusively featured white diamonds. Continuing to absorb cultural influences while remaining true to Bulgari’s distinctive style,

elements of Renaissance and Art Deco began to appear in the brand’s designs. This point was not lost on the avant-garde Andy Warhol, who once remarked that: ‘For me, calling at Bulgari’s shop is like visiting the best exhibition of contemporary art.’ Bulgari designs were also showcased by Jessica Lange in the iconic 1976 movie, King Kong, and have been favoured by a discerning clientele including Elizabeth Taylor, Audrey Hepburn, Princess Grace of Monaco and, more recently, Kylie Minogue and Uma Thurman. Always challenging and redefining the essence of jewellery design, Bulgari pieces remain renowned for their bold colours and proportions and the use of unorthodox materials such as marble or ceramic. This was epitomised when the new millennium saw creative collaboration between Bulgari and celebrated architect Zaha Hadid to create the B.zero1 Design Legend ring, whose fluid curves were inspired by the Colosseum in Rome, where the second and perhaps the most exciting Bulgari chapter began. Today, the Bulgari empire encompasses not only jewellery but watches, accessories, leather goods, fragrances and hotels and resorts, and maintains a suite of corporate social responsibility programs.

These include operating training programs for young craftspeople, from which talented individuals are selected to undertake company internships, and a rehabilitation and training program for female prisoners of Borgo San Nicola in Lecce. Bulgari has also partnered with Save the Children to custom design the Save the Children jewellery range, with the charity receiving part of the proceeds of each and every sale. To date over $50 million dollars has been raised. Having established a strong cooperative relationship in this milieu, Bulgari now retains Save the Children ambassadors and supports a number of the charity’s strategic areas of intervention, including emergency relief and education. Bulgari’s donations benefit children in 23 countries around the world, including Australia, as famously highlighted by Australian – and late of Hollywood – actor Eric Bana, who visited some of the programs for disadvantaged children and youth in Western Sydney in 2014. For more than a century now Bulgari has been both bringing to and drawing from its many places of significance, and the world has become an enriched, and far more beautiful, place for it. And the future for Bulgari, whatever that may be, will be bold, iconic and enduring – just as Sotirios Voulgaris would have wanted. >>

Elizabeth Taylor and Bulgari The legendary Elizabeth Taylor was renowned for her love of Bulgari, and was presented with many beautiful pieces by Richard Burton during their tempestuous but enduring relationship. Richard Burton famously made several trips to Bulgari’s Via Condotti boutique to source ‘The Emerald Suite’ – comprising a necklace, pendant, ring, bracelet and earrings – for his beautiful wife. He also celebrated her 40th birthday by giving her an exquisite art deco style sautoir featuring a 52.72 cabochon sapphire. But even before this, in 1962, Bulgari had crafted a revival motif mirror from turquoise and gold to mark the end of production of the epic film Cleopatra, which brought Elizabeth Taylor and Richard Burton together for the first time.

MY LOVE AFFAIR with boots started at the tender age of 11, when we were on a family summer holiday in a little seaside village called Penrhyndeudraeth near Harlech Castle in North Wales. Daily, my nine-year-old sister and I would wander into town and I would gaze lovingly at a pair of black suede, ankle-skimming, lace-up winkle picker style boots with a two inch heel. The apple didn’t fall far from the tree; my 2-yearold daughter Sofia wears her candy pink gumboots come rain, hail or shine – be it to day-care, the shops, the park, or parties. Sofia definitely has her finger on the fashion pulse, as gumboots have become an essential part of any fashionista’s wardrobe. They first came to prominence as a fashion item just over a decade ago, when Kate Moss famously wore a pair of Hunter gumboots with a micro-mini knit dress to the 2005 Glastonbury Music Festival. This season, I have my eye on Louis Vuitton’s very stylish high-shine waterproof rubber ‘Drops’ gumboots embossed with the iconic monogram. Perfect footwear for the equally iconic Splendour in the Grass, which is renowned for its wet weather and mud. On the subject of being outdoors, another practical piece of footwear is the vibrant yellow Bally ‘Kandal’ hiking boot, which will ensure you stay visible and sure-footed as you traverse the rugged terrain of the National Lamington Park. For those of you who prefer to trek in the urban jungle, Louis Vuitton’s ‘Checkpoint’ Platform Desert Boot is the perfect combination of comfort and cool.

Pair it back with a ripped pair of high waisted ‘mom’ denim jeans, a white tee and blazer, or a boho-style floaty floral print dress and a denim jacket. My other go-to option this winter is the ‘Marce’ ankle boot from Shoes of Prey. According to co-founder Jodie Fox, this style has the ‘holy grail’ of heel heights – 2.8 inches – in either a Cuban or square stacked heel, which makes it uber-comfy. Needless to say you will run all your errands (and maybe a marathon) in these kicks. Another essential wardrobe item is the classic knee-high boot. Bitters sweet The team at room81 has used the classic flavours of lemon, lime and bitters to create a delicious dessert. Lemon, lime & bitters Serves 10 Note: this recipe needs to be started at least three days ahead.

LEMON MYRTLE SORBET Ingredients 420ml water 450g sugar 80g fresh lemon myrtle Method 1. Place sugar and water into a saucepan and stir over medium heat until sugar has dissolved. 2. Allow to cool over a bowl of ice. 3. O nce cool, add the fresh lemon myrtle and leave in fridge overnight to cool. 4. The next day, strain off the fresh lemon myrtle and reserve the liquid. 5. T ransfer liquid into a paco jet container and freeze for at least 10 hours. 6. When frozen, blend the sorbet. 7. Freeze until required. BITTERS MERINGUE Ingredients 200g caster sugar 4 egg whites 10ml bitters Method 1. Combine sugar and water in a small pan and bring to the boil, stirring continuously with a wooden spoon until the sugar dissolves. 2. R educe heat to medium and brush down the side of the pan to remove the sugar crystals. 3. Cook until syrup reaches 115°C. 4. Whisk egg whites with bitters until soft peaks form. 5. Meanwhile, bring the sugar up to 121°C. 6. With the mixer on full speed, gradually pour the syrup into the meringue and beat at medium speed until cooled to room temperature and the meringue is thick and glossy. 7. T ransfer to piping bag and pipe onto dehydrator tray and dehydrate at 50°C for 24 hours.

Combine sugar, water and lemonade in a small pan and bring to the boil, stirring continuously with a wooden spoon until the sugar dissolves. 2. Reduce heat to medium and brush down the side of the pan to remove the sugar crystals. 3. C ook until syrup reaches 115°C and add the gelatine. 4. Whisk egg whites until soft peaks form. 5. Meanwhile bring the syrup up to 121°C. 6. With the mixer on full speed, gradually pour the syrup into the meringue and beat at medium speed until cooled to room temperature and the meringue is thick and glossy. 7. T ransfer to piping bag and keep refrigerated until needed.

FROZEN LIME CREAM Ingredients 100ml fresh lime juice 80g sugar 200ml cream Method 1. Bring lime juice and sugar up to the boil until sugar has dissolved. 2. Take off the heat and allow to cool. 3. O nce cooled, add the lime syrup to the cream and whisk until combined. 4. Transfer the mixture into siphon gun and charge with two gas charger bulbs. 5. Set aside until needed. TO SERVE 1. Squirt the lime cream into liquid nitrogen and mix with a spoon until you have frozen mini rock-like shapes of lime cream. 2. Pipe the lemonade marshmallow onto lime cream and blow torch to create a toasted lemonade marshmallow. 3. P lace bitters meringues onto the plate in between the toasted marshmallow. 4. Then sprinkle the frozen lime cream down the centre of the toasted marshmallow and the bitters meringue. 5. Q uenelle the lemon myrtle sorbet straight onto the centre of the frozen lime cream. 6. Finish off by placing sprigs of micro lemon balm over the top of the dessert.

Food escapes Take a leisurely drive to the country and discover a wealth of epicurean delights. WORDS & PHOTOGRAPHY MARJ OSBORNE

THE GOLD COAST may be the holiday epicentre, and Brisbane a growing tourist destination, but those of us who live and work in South East Queensland can still get ‘that weekend feeling’. Try packing an overnight bag, leaving the paperwork, computer and TV behind as you head for rolling green hills. Just beyond our doorstep there are new experiences waiting, food straight from the grower and delicious wines for the tasting. Besides Mt. Tamborine and the Scenic Rim, here are a couple of areas you might like to try: The Tweed Valley The Tweed Valley is a natural wonderland close to our southern border. It’s a uniquely beautiful fertile area encompassing Carool (on the ridge along the state border), along the Tweed River to Tumbulgum and Murwillumbah, beaches down past Hastings Point, and inland areas such as Tyalgum and Chillingham. Trawlers dock at Tweed bringing their bounty for sale, market stalls along the highway sell goods from local farmers, or you can time your visit to coincide with weekly markets, such as the Farmer’s Market held at the Murwillumbah Showground each Wednesday morning. Stop in at the Tweed Art Gallery to view the permanent installation of a part of renowned artist Margaret Olley’s house, a travelling exhibition such as the Archibald Prize, the Olive Cotton Award or the Border Art Prize.

Besides the gallery itself, the café is well worth a stopover for its delicious lunches, afternoon teas and stunning views. The tiny village of Tyalgum, founded in 1908 as a timber-cutting centre, is now home a series of shops cascading down the main street: a general store, craft studios and galleries, a bookshop, bakery, accommodation and a wellness retreat as well as the famous Flutterbies Cottage Café. Nearby in Chillingham is Buck’s Farm, a major grower of seedless finger limes as well as the very interesting looking Buddha’s hand. Mavis’s Kitchen is the epitome of hyperlocal and local cuisine, with food sourced from its own garden or from a couple of local farmers who exclusively supply the restaurant. Sit on the veranda of the stately Queenslander (once situated in Labrador, housing Harley’s Brasserie) and overlook the dam and estate kitchen garden as you enjoy lunch or afternoon tea. Blissfully peaceful, it’s a world away from busy city streets. Look out for Mavis’s Event Series dinners. You can book into one of their cabins, or a local B&B, for a relaxed weekend. Carool Can’t get away for a weekend? Take a 15-minute drive up the hill from Coolangatta, and you’ll find that there’s lots to discover here in Carool. Though it’s only one ridge over from Currumbin, you cross the state border on the journey and are now officially in the Tweed Shire.

Tweed’s only winery, Ilnam Estate Winery, can be found at the top of the hill, framed by a stately Poinciana-paved driveway with vineyards on either side. Former teacher and Charles Sturt winemaking graduate Mark Quinn planted the vineyard in 1998, with 2000 being his first commercial vintage. Join Mark for a tasting of his wines at the cellar door before heading to lunch. On the edge of a 10-acre property, Potager’s restaurant is set beside an expansive vegetable and edible flower kitchen garden. Potager’s is wholesome, soul-nourishing and practical: blankets to keep fresh breezes at bay hang on pegs on one wall, pots dangle from the window holding produce for use in the kitchen, and vintage prints of vegetables are warm reminders of the origins of our food. We’re half expecting to see Maggie Beer emerge from the kitchen, a pheasant hanging from one hand. Instead it’s chef Gareth Leslie (ex-From Earth and Water and Gwinganna), who owns the restaurant with partner Peter Burr. In a menu that leans towards Tuscan and French provincial cuisine, seasonal produce from the ‘potager’ or kitchen garden joins goods bought from local markets, together with Tweed seafood and locally-sourced meat. Potager’s boutique wine list features organic, vegan, and preservative-free wines including a couple from local Ilnam Estate. The restaurant also serves Zeta’s Coffee from Carool’s Wirui Estate.


BENOWA MANSIONS PERIODONTAL AND DENTAL IMPLANT PRACTICE

Ipswich Ipswich may not immediately spring to mind as a holiday destination, however this once prosperous town aspired to being Queensland’s capital. On the rise once more, it’s full of gorgeous old Queenslanders and stately colonial buildings. You can easily fill up a long weekend with eating, drinking, walking and looking, talking to locals and soaking up a little history. The Top of the Town precinct, the centre of business after World War II, is perfect browsing territory. Housed in heritage buildings, the area embraces the town’s history by offering an eclectic mix of cafés, vintage stores, clothing boutiques, homewares and niche products. Coffee shops and restaurants dot the street. From the retro Deann’s Coffee House to the stylish Fourthchild, there’s plentry of dining choice. If there’s one venue which exemplifies the progressive attitude of the town, it’s the Pumpyard Brewery. Home to Wade Curtis’ award-winning 4 Hearts beer, first released commercially in 2011, the brewery takes its name from the site’s historical role: the place where in the 1860s locals came to collect their four free buckets of water daily at a pump tapping a natural underground spring. Dine casually at the brewery, or enjoy lunch under 100-year-old Poinciana trees at the brewery’s new finer dining restaurant, Dovetail (named in honour of the many carpenters who trained at this former TAFE complex). Ironback Ridge Vineyard, in Purga, about 15 minutes’ drive from Ipswich, is the oldest vineyard in the Scenic Rim, the lifetime work of Barry Hoffensetz. Established in 1984, the property has eight acres of vineyard. Sold in 2016, the pearl of the wine collection is Hoffensetz’s ‘Old Friends’ tawny fortified shiraz, its raisin tones begging to be paired with a chocolate tart. Delicious. Half an hour’s drive beyond the town is Peak Organics at Ivory’s Rock. A volunteer-run market open to the public is held every Saturday from 9am - 2pm on part of the Ivory’s Rock Conventions and Events property at Peak Crossing. Although the market is very small, prices are very reasonable for certified organic produce. Not far from Ivory’s Rock is Spicer’s Hidden Vale, the ideal spot for a weekend away or a relaxed meal. their own unique perspective of the countryside framed through doorways or from balconies. The historic homestead housing the hatted Homage Restaurant occupies the crest of the ridge, giving it an eagle’s eye view of the surrounding 1,200 acre working farm. Sit on the veranda for lunch looking out across an infinityedged pool, rolling hills leading to the mountains beyond. Head Chef Ash Martin pays homage to both land and beast as he takes us on a journey through the landscapes of nature. The degustation is a whimsical culinary delight; a montage of carefully crafted scenes using food as the milieu; the menu mapping its local seasonal source, including Scenic Rim seafood farms, vegetables from the resort’s own garden, house honey and free range organic meat from the farm next door. Tassie trio Meet the three Tasmanian winemakers who are at the forefront of the state’s growing wine industry.

IF YOU WERE CUNNING and wanting to establish your own Australian wine-growing venture (although wine-growing is, at best, a perilous thing so perhaps cunning is a poor choice of word) you’d probably settle on Tasmania as the place – it’s cool and global warming already has its mitts well and truly sunk into the wine-growing business, it still has plenty of land available plus a good and growing catalogue of established vineyards and it is a stellar place for the likes of pinot noir and chardonnay, the darlings of the wine-grape family. It’s not a great surprise then that the Tasmanian vineyard plantings have multiplied by more than 20 times over the past 30 years, from a mere 71 hectares in 1984 to more than 1,500 hectares today. A good part of the expansion has come from large and middle-sized contenders – Yalumba, Constellation, Shaw and Smith, Brown Brothers – seeking cool-climate juice for sparkling wines and pristine fruit for top-end chardonnay and pinot noir; the likes of Heemskerk, Arras, Tolpuddle, Tamar Ridge and Bay of Fires.

And there remain a handful of folk that have been there for the long haul – Freycinet, Moorilla, Domaine A, Providence, Holm Oak and their ilk. But the glittering edge, the future of the island’s winegrowing and – given global warming – the likely epicentre to world class Australian wine lies in the hands of the small guys carefully tending the special blocks in the Island state. Folk like Gilli and Paul Lipscombe, Joe Holyman and Samantha Connew and their progressive, startlingly good wine brands. I’m not suggesting they are the only three Tasmanian’s worth thinking about, but they are three I think are special. Of this small collection Joe Holyman has the deepest roots in the state. He grew up near Launceston and his parents cultivated grapes – not for a living, but for fun. Joe and his wife Lou purchased their Tamar Valley property in 2004, already planted to vines but in need of some loving. And that’s exactly what the Holymans have supplied – care, thought and time into vines that supply fruit for the Stoney Rise and Holyman brands.

Their vineyard – farmed increasingly using biodynamic principles – is 4.2 hectares, small even by Tasmanian standards. And apart from a patch of gruner veltliner, it’s planted to pinot noir and chardonnay, the best of which is destined for the Holyman brand (of the 3.2 hectares of pinot noir, only 0.6 of a hectare makes it to the Holyman; it’s a severe cull). It‘s gentle winemaking, relying on indigenous yeasts and employing no additions except sulphur, allowing the wines to whisper of their origin rather than their winemaking. Then there’s Project X. When making the Holyman pinot, Joe looks at the stalks and – depending on the traits of each vintage – allows a proportion of whole bunch, changing the aromatics and texture of the wine; an added dimension. Project X is where he pushes things to the edge, using 100% whole bunch. I love it. Samantha Connew doesn’t have Joe Holyman’s claims to being a native Taswegian – she’s a Kiwi – but, after a stellar career making wines on Australia’s mainland, Tasmania is where


she has settled her buns, making wines that, if nothing else, have some of the most beautiful labels in the whole of wine-world. But there is plenty to crow about beyond the labels. Unlike the Holymans, Sam isn’t tied to a single vineyard, instead she sources from carefully chosen sites in the Coal River, Derwent and Tamar Valleys for the whites and dedicates her own, recently purchased Huon Valley vineyard for the pinot noir. She produces three whites – Derwent Valley Riesling, Tupelo (a Tamar and Derwent blend of pinot gris, riesling and gewürztraminer) – bouncy, fragrant, delicious – and a Tamar and Derwent chardonnay. Tupelo is exotic, the riesling a honed, focused white that will live for years and the chardonnay … profound. But it’s the Stargazer pinot noir that has shaken things up and with the recently released 2016 from the new estate vineyard it has added real rarity and a sense of planted feet to an already heady reputation. Stargazer is on its way to becoming one of those wines that people hear about in whispers, rarely manage to taste, but one that remains in the psyche: tiny production, stellar reputation.

Gilly and Paul Lipscombe from Sailor seeks Horse bought a run down vineyard in the Huon Valley, 6.5 hectares planted to sauvignon blanc, pinot noir, sangiovese and nebbiolo. The best vines were saved and the rest bulldozed. Now the vineyard is solely planted to chardonnay and pinot noir … sensible. And from those vines two of the most compelling new wines from Tasmania are crafted. Sailor Seeks Horse has labels as enigmatic as its name, and while the wines are surprising and singular, they are also perfectly considered expressions of their small part of Tasmania – bright, energetic, modern (hints of reduction, bright fruit, lean), and distinctly cool climate. The pinot has the edge on the chardonnay, but they are both stellar. For a winery with only a few vintages under its belt it has attracted plenty of attention. Holyman, Stargazer and Sailor Seeks Horse spin their tales with as many differences as similarities. The stuff they have in common – a love of Tasmania and a vision of its future as Australia’s leading state for top-flight wine – is as pertinent as the stuff that separates them; the parcel of land that shapes the character of their wines as much as the people themselves.

Irresistible Italy A European vacation is not complete without a visit to Italy. Grand Canal, Venice WORDS LINDSAY BENNETT

WITH THE ENGLAND and France section of our trip to Europe complete, we boarded a flight to Venice, where we took a private water taxi that whisked us direct to Luna Hotel Baglioni just off the Grand Canal – a truly great way to immerse ourselves in the city and the perfect way to arrive at this luxury property. The hotel is a stone’s throw from Piazza San Marco (St. Mark’s Square) and dates back to 1118. Throughout the years Hotel Baglioni has undergone transformations from a convent into an aristocratic palace and even a shelter for the Knights Templar. The hotel brims with original details, like ornate stucco walls, Murano chandeliers, watercolour paintings, frescoes and antique furnishings. The best way to truly capture the magic of Venice is in its narrow streets. To explore and to marvel at its rich history – it’s best to forgo the guide and simply walk. It’s almost a rite of passage to become lost in the city, as there is little if any method to their streets and alleyways. The maze of canals and narrow streets, whimsical bridges and colourful buildings – it’s almost as if you are looking at a painting. Around every winding corner and down every twisted street is a photo that begs to be taken.

Whether it’s the ancient cobblestones crumbling beautifully into one another, window boxes tidily filled with bright flowers, hidden courtyard gardens, laundry draped carefully from lines blowing in the breeze, arched stone bridges, or, of course, the canals and gondolas, Venice envelopes you with its beauty. The best time to explore the city is early morning before the throng of tourists descend on the city. Avoid eating at establishments that have pictures of menu items or written in 20 languages (tempting as it may be). These are over-priced, and mediocre at best. Instead, ask your hotel concierge where they eat, as there is so much on offer. If you’re looking for a reliable and reputable tour company that offers the best tours in Venice, I suggest you book through Viator. We pre-booked a half-day tour with a twohour walking portion covering all of the famous monuments and landmarks in the city. Then, after lots of learning on the go, we boarded a water taxi that took us on a relaxing cruise along the Grand Canal as well as some of the more minor canals. Another feature about this tour is that you receive a VIP pass to St. Mark’s Basilica, one of the busiest attractions in Venice.

You won’t believe your eyes when you see the line of people trying to get into this place. Fortunately, the VIP pass allows you to skip the entire queue and head straight inside. Some of the highlights for us were to visit the Palazzo Ducale, Rialto Bridge and the Peggy Guggenheim Collection – which is among the most important museums in Italy for European and American art of the 20th century. It is located in Peggy Guggenheim’s former home, Palazzo Venier dei Leoni, on the Grand Canal in Venice. Leaving Venice we travelled to Florence. As the capital city of Tuscany, Florence has long been known for being a magnificent city filled with historical relics and artistic masterpieces by the greatest masters of the Renaissance. These creative geniuses made an indelible mark on the world’s architecture and art: Giotto and Brunelleschi, Michelangelo and Vasari, Michelozzo and Leon Battista Alberti, just to name a few. We stayed at Portrait Firenze, in the heart of the historic city. With its commanding position right next to the Ponte Vecchio, and view across the River Arno, Portrait Firenze is an impressive luxury boutique hotel belonging to the family of Salvatore Ferragamo.

It is renowned for the well-preserved Renaissance walls (4.2 km) encircling its historic city centre with its cobblestone streets and broad, tree-lined pathways along the tops of these massive 16th- and 17th-century ramparts. Home to Puccini, there is a picturesque square and monument of this great artist that sits in the Piazza Citadella in front of the house where he was born. A delightful restaurant that faces the Piazza called ‘Paris Boheme’, offers some fresh locally sourced cuisine and the atmosphere inside and out makes it a wonderful place to enjoy a relaxed luncheon. >>

From Lucca we travelled 30km to Bagni di Lucca – a collection of 25 villages in Northern Tuscany. The village of Ponte a Serraglio is like stepping back in time with a number of delightful buildings, and a small piazza with a café and bar where locals and tourists would gather each evening. The village is known for its thermal springs and is currently undergoing restoration which is sure to see this as a point of interest for tourists looking for a truly authentic Tuscan experience. Our next stop was to spend a few days relaxing in Vergemoli situated in the national park in Garfagnana in the magnificent mountains near Lucca. Nothing could prepare us for this experience which was the complete opposite to the past few weeks. Strolling the hills and taking time to explore the nearby village was a great chance to take stock and to truly appreciate the authentic Tuscan way of life. We stayed in a remote three-story stone house called Casa Debbio perched high above the Tuscan countryside.

While this location may not be for everyone, it was a definite highlight of our European adventure and one that will hold fond memories. Returning to Lucca we caught the train to our last destination – Rome. A mesmerising mix of modern and ancient, Rome is a rare and colossal capital. You literally can’t turn a corner without stumbling into some great remnant of history. Checking in to J.K. Place – the last of our luxury boutique hotels – in what was once Rome’s school of architecture was a delight. Classrooms have been transformed into elegant bedrooms with mid-century furniture and bold splashes of colour. Packed with antique furniture, sculptures and marble throughout, this is a casual-cool hotel with a relaxing vibe, minutes from Rome’s best shops and sights. As we sipped martinis on the voluptuous couches in the lobby and with scores of coffee table books covering the lacquered tables while the soft tones of Dean Martin and Frank Sinatra rang out, it was the perfect place to relax at the end of a busy day.

In our two days we managed to take in many of the sites, from the impressive Colosseum and surrounding monuments (a guided tour is well worth it), through to the Trevi Fountain, Galleria Borghese, Spanish Steps, Pantheon and Piazza Navona, as well as strolling the glamorous Via Condotti. As our European adventure came to an end, it has to be said that all these destinations stir such passion they leave you wanting more. They will forever inspire, excite and incite lasting memories. To truly experience these cities and their rich history you do need to immerse yourself in the local culture and find inspiration in the places and people that you encounter.

Most of all, Aston Martins of the post-war era have been instantly recognisable on the road with their distinctive, elegant looks – long nose, a low and wide front grill and tapered tail. From the DB2, DB3, DB4, Bond’s iconic DB5, DB7, DB9 through to the current range, the design genes are inescapable. Embarking recently on its second century of manufacturing, Aston’s challenge has been to keep this heritage while offering owners a contemporary style to stand proud among its peers in the rarefied world of half-million dollar sports cars. The DB11 is Aston Martin’s answer. It gloriously retains familiar proportions behind the family grill – but the detail is strikingly different. Soft curves now end in sharply-defined lines down the bonnet, along the haunches and across the tail. Strakes behind the front wheel arches and blades in the bonnet vents give an impression of speed and tunnels behind the rear-side window pillars channel high-pressure air over the tail to enhance the aerodynamics. The aero design eliminates the need for anything more than a discreet blade that pops up from the tail at speed; no sign of anything so gauche as a wing to spoil the visuals. This svelte but aggressive bodywork is wrapped around an all-new structure assembled from bonded aluminum. It allows the DB11 to be lower, wider and ride on a longer wheelbase, which means a little more room in the 2+2 cabin. Jokes about the rear perches being suitable only for people of miniscule stature are still appropriate here, but I’ll bet not many would resist an invitation to ride even if their chin was on their knees.

This is, after all, the latest Aston Martin. The first example of what is to come in a string of models in the next few years, the DB11 breaks ground with a new V12 engine of Aston’s own design. Inevitably in this era of chasing lower exhaust emissions and fuel consumption, the engine has been downsized in capacity – from 6.0 litres to 5.2 litres – and power recovered by use of two turbochargers. The most powerful roadgoing Aston Martin punches out 447 kiloWatts and 700 Newtonmetres. These are mighty numbers and blast the DB11 from a standstill to 100 kmh in 3.9 seconds and on to a claimed top speed of 322 kmh. Having driven a current Aston Martin Vanquish with the 6.0 litre non-turbo engine, I’m in a position to compare: the 6.0 litre sounds more shrill and raucous to perhaps exaggerate the impression of speed, while the 5.2’s more refined bass howl accompanies massive, silky pulling power at lower speeds. It’s addictive, but although I was forever seeking a clear stretch of road or an uphill bend to hear and feel that V12 once more, the DB11 is really at the cruising end of the sporty spectrum. It will be best demolishing distances rather than short, twisting jaunts. Effortlessly in charge of its environment and sublimely comfortable. Aston Martin assuages petrol wowsers by fitting its engine with automatic stop-start for urban driving and cylinder de-activation for cruising. This second feature seamlessly shuts down half the cylinders when driving on a light throttle.

There’s an eight-speed automatic transmission. Buttons on the dashboard take the place of the usual central lever and manual control is afforded by two beautifully-crafted fingertip paddles behind the steering wheel. Initially the DB11’s bulk and sense of barelyrestrained brute force take some getting used to. All the driver’s senses are on alert, looking for hazards that could harm this $395,000 thoroughbred. Familiarity gains confidence, yet I couldn’t bring myself to explore anything like the coupe’s potential on the tight climbs in the Gold Coast hinterland. Brakes work as hard as throttle during a swift drive and care is needed to thread past oncoming vehicles on narrow bends. The alternative to all this exertion is to ease back and enjoy the comfort of an interior hand-crafted in a fashion only the Brits can manage. Materials and attention to finish detail are sumptuous. Chrome is real chrome not plastic, covers on the vanity mirrors slide like they’re on ballbearings and the seats, doors and hood-lining are upholstered in soft, dark leather with contrasting coloured panels behind the perforations. Of course, there are other sports cars around the Aston Martin’s price point. But if someone likes the DB11’s elegant front-engined style, long-legged ability and hand-crafted comfort then it’s any easy choice. (What happened to the DB8 and DB10, you ask. The company skipped DB8 in case it implied the car had a lesser V8 engine instead of a V12. DB10 was a bespoke model reserved for the 2015 Bond film Spectre.)

Super series Coming up – Chris Nixon tests drives the McLaren Sports Series BY COINCIDENCE, I had just finished reading a biography of the late New Zealand grand prix driver Bruce McLaren when an invitation landed to test-drive some of the modern sports cars that bear his name. McLaren successfully entered Formula 1 and American Cam-Am racing in the same era as Australia’s Jack Brabham, but died while testing one of his cars in England in 1970. Although he was ambitious, McLaren could hardly have imagined what has become of his legacy – a range of roadgoing sports cars to rival (or surpass) the likes of Lamborghini, one of the most successful Formula 1 teams and a factory headquarters outside London that is a showpiece for hi-technology. So I was well prepared to experience the McLaren Sports Series, represented by the stunning 540C, 570GT and 570S. Read my review in the October/November edition of Cove. Boat show success The best Sanctuary Cove International Boat Show in ten years.

THE INCREDIBLE SUCCESS of the 29th annual Sanctuary Cove International Boat Show (SCIBS) has sent ripples of optimism through the Coast’s marine industry, with visitor numbers exceeding expectations and exhibitors breaking sales records over the four days of the celebrated event. SCIBS 2017 has been hailed as ‘the best Show in 10 years’ by stakeholders, with strong attendance and sales results translated as yet another sign of industry recovery in the wake of the Global Financial Crisis. Clear sunny skies across each day of the southern hemisphere’s premier marine event saw increased visitors flock through the gates, with total numbers reaching 42,256. Held from May 25 to 28, 2017, SCIBS attracted more than 300 exhibitors, with boats and products on show worth over $200 million, as well as major global, Australian and Queensland debuts by the world’s most respected brands and businesses. SCIBS General Manager Johan Hasser says excellent feedback from exhibitors indicated the overwhelming success of the Show, with renewed buyer confidence evident across all market segments.

“The Show opened strongly, with visitor numbers up and strong sales recorded on the first day, and it improved even more across the weekend,” Johan says. “Our exhibitors have reported some of the best sales results we have seen in years and likewise, have received a great number of enquiries and sales leads, which historically, has shown that many more deals will be made in the months following the Show. “We owe this year’s success to a combination of great product offering, dedicated exhibitors, an exciting Show format and superb weather. We are really pleased with the result,” he says. In 2017, SCIBS saw the return of popular new additions including Supercar Street and The Boatyard – introduced in 2016 to create shows within shows to engage the whole family. The Show, which injects $148 million into the local economy each year, boasted a packed schedule of marine-themed displays, live music, kids’ activities, celebrity cooking demonstrations and hands-on experiences for seasoned boaties and others seeking a fun, family-friendly day out. From first entry till sundown, patrons discovered a lively atmosphere teeming with

colour and energy throughout the Boat Show precincts, with roving entertainment completing the carnival vibe. From opening day, the atmosphere was charged as scores of exhibitors hosted Australian and world premieres of the latest catamaran, yacht, sport and sail models on water, alongside debuts of the hottest luxury and supercar vehicles and newest innovations in marine gadgetry and accessories. And in a major coup, automotive sponsor Bentley Brisbane hosted its first Queensland ‘Be Extraordinary’ roadshow at SCIBS, featuring an interactive experience unveiling the brand’s proud 100-year history while also showcasing its current range. The immersive exhibit included visual stories detailing everything from the process of selecting hides and the length of time it takes to hand-stitch the steering wheel in the Mulsanne, to celebrate the company’s racing success over the century. Among many other Show highlights, official ambassador and Channel 7 fishing and boating guru, Paul Burt, returned to host the winnertakes-all live fishing tournament with more than $3,000 in prize money.


Headlining the slew of sales at SCIBS was resident Sanctuary Cove dealership, Horizon Motor Yachts Australia (HMYA), celebrating the sale of the Horizon RP115 – a 122-foot (37m) oneof-a-kind motor yacht which will be the largest, most highly optioned Horizon Yacht to arrive on Australian shores, scheduled for delivery in early 2019. “It was an awesome Show – the quality of enquiry was incredible,” says Erica Rae, Marketing Manager at HMYA. “We had seven boats on water and were busy the four days of the Show. We have a lot of enquiries on the E84 and the E56XO Sport Yacht, the Australian-specific model, and we are confident of securing more sales. Things are really looking up.” Greg Haines, International Sales and Marketing Manager at Maritimo, says this year’s Show had proven to be the best SCIBS since the GFC. “We are really, really happy,” Greg says. “The feedback from visitors on Maritimo’s new models, the M59 and S59, was entirely positive and we are very happy with sales and leads.” John Cowpe at The Multihull Group was also extremely satisfied to report sales of a new Lagoon 40, Lagoon 50 and Lagoon 42, adding that the Group was also likely to sell two of the brand new Lagoon 630 MY models. “It has been thrilling” John says. “We have loved SCIBS this year – great weather, great people, excellent organisation. It’s the premier boat show in Queensland with international appeal. People travel from around Australia and the region to see the latest on show at SCIBS,” he said. “The feedback from visitors is that everybody is happy. There was a good spread of boats, something for everybody. “What has been interesting for me, was meeting powerboat owners from different brands, now gravitating towards the 630MY. We have really put the cat among the pigeons with this model.” In 2017, SCIBS coincided with three major marine conferences held on the Gold Coast in May as part of International Boating Week. Hosted by the BIA global marine leaders and delegates from the International Council of Marine Industry Associations; International Federation of Boat Show Organisers (IFBSO); and the Australian Superyacht and Marine Export Conference, which was staged at the InterContinental Sanctuary Cove Resort, visited SCIBS during their stay on the Coast.

Your guide to buying Real Estate at Auction BUYING A PROPERTY at auction can be a daunting prospect. Many of the conditions that apply to buying a property privately do not apply when a property is sold at auction. Accordingly prospective buyers must do their homework regarding the property prior to attending the auction as a successful bidder for property at auction must sign the contract immediately. There is no time provided after the sale for inspection, for approval of financing or for legal advice on the terms and conditions of the contract. The following should be taken into consideration if you are looking at buying real estate at auction: 1. Organise your finance in advance. Approach your lender to determine how much you are able to borrow. Ensure that you have funds available to write a cheque or transfer payment of the deposit which is usually between 5% and 10% of the purchase price on the fall of the hammer should you be the successful bidder. 
 2. Research the market. Do your homework by researching property values in the neighbourhood.

Inspect other open homes around the area where you intend to buy and gather as much information as you can regarding recent sales of comparable properties. 
 3. Inspect the property more than once and at different times of the day. 
 4. Perhaps most importantly, request a copy of the sales contract before auction day and have a solicitor review it. Have a title search of the property undertaken which will contain details of ownership and any registered interests over the property such as mortgages, easements and the like. 
 5. If a pool inspection certificate and/or a building and pest inspection report is not already available, undertake your own so that you won’t have any unpleasant surprises if you are the successful bidder. You may also consider obtaining an independent valuation of the property. 6. If you are a first time bidder it would be advantageous to visit other auctions to observe the auction process.

On the day of the auction all bidders must be registered in order to bid. The auctioneer will give each bidder a number. Prior to the auction commencing you should ask the auctioneer if any last minute changes have been made to the contract and you may also ask the auctioneer questions about the property. Before the auction starts the seller can set a reserve price or the minimum amount the seller will accept. Note that the statutory five business day cooling-off period does not apply when a property is purchased at auction or sold to a registered bidder within two business days of the auction date. On auction day it is important to have made a plan and stick to it. Be confident, however, set a limit to your bidding and don’t waiver. The soprano

Soprano Natalie Aroyan will take on the title role in Opera Australia’s stunning beachside production of Aida. INTERVIEW RHONDA OXNAM

AN ARMENIAN-AUSTRALIAN soprano born and raised in Sydney, Natalie Aroyan is now a principal artist with Opera Australia. She will make her title role debut in Griffith Opera on the Beach – Aida which will be staged on the golden sands of Coolangatta Beach in September. How did you get into the world of opera? When I was young I always dreamed of being a singer, a pop singer. My idols were Celine Dion, Whitney Houston and Bette Middler. I knew I wanted to perform on stage as I loved the interaction with an audience. After high school, with the advice of my parents, I went to university as a back-up plan in case my singing career didn’t pan out and also to alleviate the pressure of making it in this difficult business. After completing a Bachelor of Business, and a Bachelor of Information Technology, I decided I still wanted to be a pop singer. During that time, a famous Armenian Mezzo and vocal coach, Liliya Ovchiyan, had just moved to Australia and my parents took me to her concert.

That weekend I witnessed opera for the first time, and I thought … wow. This woman’s voice is so voluptuous and voluminous, without a microphone … I have to learn from her. So, we approached her and I sang for her, telling her about my pop aspirations. After just one song, she stopped me and said, “You are not meant to be a pop singer.” At that point my heart sank and I thought my dreams were over; she continued, “You were born to be an opera singer.” A little confused and slightly hesitant I worked with her for a week, training classically, and I fell in love. I knew this is what I wanted to do with the rest of my life. Thanks to the advice and guidance of this accomplished opera singer, I am able to call the Sydney Opera House my home.

Griffith Opera on the Beach – Aida is set to be a unique production in a unique location … what can audiences expect? This is going to be a huge spectacle built upon the sands of Coolangatta Beach which will be transformed to the grandeur and mythical world

of ancient Egypt. Audiences can expect to be transported to another place in time and listen to the glorious music of Verdi under the stars, all the while enjoying the casual and beautiful outdoor surrounds with family and friends. This is your first title role … how do you handle the added pressure? Although I have done many lead roles in the past, Aida will be my first title role so this will be a very special and unique opportunity for me. Having the faith and encouragement of Opera Australia’s Artistic Director, my teacher, my company and my colleagues certainly relieves a lot of the added pressure when leading an ensemble on stage. Can you give us a brief insight into the life of a professional diva? As a ‘professional diva’ you get to travel the world, perform in exotic and beautiful locations, meet many interesting people, work with some of the world’s top musicians and sing in the grandest opera houses, the most beautiful being the Sydney Opera House.


You are often made to feel very special and at the end of a hard night’s work, you are applauded by those who adore the art of opera as much as you do. However, getting to the stage and staying there is not without its sacrifices. Over the years it has been a difficult journey at times. Having the support of my family and my friends has been an immense help, especially as they understand my commitment to my singing career. I know others have it harder than me, those with children or those who live far from their families for long periods of time. It’s difficult in different ways for different people. But if this career is everything you dream about doing, if it truly makes you happy, then sometimes great success requires greater sacrifice.

What is the best thing about being an opera star? The worst? One of my favourite things would have to be the applause at the end of a performance. Working so hard all night, pouring my heart and soul out, is all worth that final bow at the end of the show. Illustrating their love Popular Australian illustrator Kerrie Hess and her fiancé Peter Collins celebrated their engagement with a romantic photoshoot at Spicers Peak Lodge. THE STUNNING COVER image for this edition features Brisbane couple Kerrie Hess and Peter Collins. We chatted to Kerrie and Peter about the shoot and their upcoming wedding plans. Where did you both meet? We met through mutual friends one night in Brisbane. Our friends who knew each other were deep in conversation so we were chatting on the side and there was just something there. And the conversation was incredibly easy. I don’t think either of us were really looking to meet someone at the time, but I think that’s usually how it happens. Peter, what is it like being in a relationship with an artist? It is pretty incredible to be honest. Being a dietitian and a senior lecturer at a university and being very much in the clinical space it is refreshing to hear about the projects Kerrie is involved in and seeing all of the fantastic paintings come to life. I am constantly blown away by how talented she is as a creative, a businesswoman and a mother. The Wedding Series team is working with you both on your beautiful wedding. What elements of the planning are you enjoying the most? I think for us, its just about keeping it simple. We want the day to feel romantic but relaxed. We both want my son Marcel as a big part of the celebrations as it’s an important day for him too. The main thing for us is a lovely wedding, where we can both just be in the moment the whole time. Are there any elements of your wedding plans that you are happy to share with our readers? It will just be our favourite things and close family. We both feel like the smaller the better. I love flowers so I am looking forward to planning that element. It will be held close to Byron Bay in a very intimate setting. Romantic and slightly boho is the feeling. I’ll be also adding some personal artistic touches of my own to the invitations too. What does being part of The Wedding Series ‘Love Stories’ mean to you? It’s lovely to be involved. This is the first time that Peter and I have taken photos together so it really just felt like a relaxed enjoyable shoot. We laughed through most of the day and the setting was gorgeous. It was a nice change for me too from being in painting clothes in the studio. Your ‘Love Story’ was photographed at the luxurious Spicers Peak Lodge, on the highest point of Queensland. What was it that you enjoyed most about your stay there?

It was so remote and quiet. I really loved that as I think I sometimes find switching off can be more fun than visits to a destination in the city. The food was beautiful there and we loved the cosy fireplace in our room. And we really enjoyed the four-wheel, very off-road drive to the top of that amazing peak nearby on sunset, shooting with Marcus. That was the loveliest moment ...
