CANADIAN SINGER/SONGWRITER Michael Bublé officially retired from music following his son’s cancer battle. In this very personal interview, he talks about family, good and bad times and his latest album, appropriately titled Love. You’ve called your new album Love … You know what? I really struggled with the name. Because obviously I’ve been through a lot … This album, like every album, represents the snapshot of my life and where I’ve been and who I am. I had been so focussed on the theme of this record, on the seriousness of my interpretations of these songs and the first name I had was actually My Romance. The reason I had called it that was because I felt like it was my romance rekindled with the music – my romance with the songs, my romance with the public, my romance with my persona, my romance with my work, my romance with my family, my romance with all of it. Someone was kind enough to say to me, ‘Listen, that’s a lovely sentiment but unless you can tell every single journalist in the world this and they can spread the word for you then people might misunderstand’. Because the truth is I didn’t think the word ‘romance’ adequately described what this record is. And what this record is, is a group of short stories that are my theory of love and the complicated, varied, layered emotion. Love isn’t romantic always, you know, love carries many connotations. It carries sometimes violence and jealously and hatred and, you know, I can say that to you and sell it to you ‘love means all these different things’ but if I go through track by track I can tell you that each one of them is a different kind of study of this emotion. I can start with When I Fall in Love. People say to me, ‘What a romantic song’. I see it, yes, as a romantic song but a very sad song. It’s a very lonely song. When I became the character of the song, I found myself bitterly sitting in a bar after six drinks wishing that I had what that man had with this woman, wishing that I could find someone who loved me too. And knowing that one day if I’m ever lucky enough to find that, OK I’m going to hold on to it, but, for now, it’s only a dream, it’s only an apparition. And so I find it almost depressing but beautiful in that way. The next song, I Only Have Eyes For You, has a sense of focus on the beginning of romance, when the physical matters so much more than the mental. As in this person is everything to you and you could have a million things happening around you but you see nothing else. And that is romantic love. If I go down to the next one, Love You Anymore, the [Charlie] Puth song, to me that is a really complicated song because you’d assume when you hear it it’s about a couple but it’s not, their romance is over. And it’s, I think, the lover looking at his significant other and saying, trying to say all the right things, ‘Well just because I have your picture on my phone, just because when I hear our song my heart breaks, just because I would change everything if you would just take me back. Well that doesn’t mean I love you anymore’. Well I think he’s lying, he’s a liar, he can’t be honest with himself because he’s so in love with her that he might die of a broken heart if he admits to himself that he has lost the greatest thing. >>

Love is the most beautiful feeling, but it can also devastate? Completely. But ever y song, ever y arrangement, I had a clear cinematic concept. Love You Anymore was my American in Paris. It’s me having two cultures, very much like my wife and I. Two cultures coming together and me walking as the ugly American down the street in Paris with this young, beautiful woman and speaking English to her. I’ve written a counter melody so that she could reply to me in French and then we turn and now she starts to sing to me in French and I start to reply to her in English. And then within the solo we have this wonderful dance and we make love and we come out and all of a sudden I’ve assimilated, I’ve completely taken her culture on and now we sing together in French. Then we get to something like Such A Night where I feel that that relationship has ended and she has gone but I have great reverie because it was the hottest, sexiest, most wonderful night of my life and I’ll never forget the electricity. You know? It continues to go on. I think the best for me personally, the one that has the greatest sense of what I’m talking about, is My Funny Valentine because this song counterbalances this beautiful dark, romantic melody, where you’re telling this person that you absolutely love them, their imperfections are what make them so perfect to you and please don’t go, never leave me. And then on the other hand you’re saying to her, ‘Is your figure less than Greek, are you ugly? Is your mouth a little weak, when you open it to speak are you smart?’ You’re questioning her intelligence here. It’s just mean, it’s downright cruel. Who would say that to someone? And in the relationship that is love. This song comes with all of this love and then almost hatred. What’s the word I’m looking for? Almost aggressive, not even passive aggressive. But aggressive kind of resentment towards this person. I can continue, I can go down every song, like I had a small movie in my head. I do that when I arrange but I don’t think I’d ever had it come together as completely and as emotional as it did for this. You’re talking big arrangements, big emotions – would you say this is your most grown-up album to date? Well after what I’ve gone through – yeah. I don’t think I knew how else to do it. You know? I think I took all of my fear and my gratitude and my pain and I just wrote and arranged and – I don’t know – I’m better now at this, I feel like I’m complete as an artist, that I have come to a

point where everything is sort of ... my voice is the best that it’s ever been, I’m able to walk into the song and now become the characters because I understand the emotion involved. I don’t know if I was ever able to do that as well because I don’t think I ever ... I think I had joy but I don’t think I ever understood the level of pain or how to access that. But I wish that this was a shitty record and I wish that I didn’t have any of that. Because I just wish I didn’t. I would never have traded this for that. It’s hard. I don’t explain it very well. I have a difficult time to even ... I know we have to acknowledge it because it’s impossible not to have context because how could it not, do you know what I mean? But I wish that I was light-hearted again because I will never be in my life. And that’s OK because that’s just what it is to be human and that’s part of life. Over these past few years have you changed a lot in the way you look at your career? You know, it’s funny. I didn’t want to let people know but I wasn’t good ... I think I lost my love of all of it. I’m just talking about a sense of the profession. I had lost my perspective, really lost my perspective. And the joy and the ease. I think I started to ... I don’t know how to say it … I was having no fun. None. Zero. When I say no fun, I could enjoy like anything … but my decisions artistically (whether they worked or not has nothing to do with it), were based on fear, the fear of losing it, the fear that it was going to go away, that it wasn’t going to be as big, that I felt like I started to … I cared about what people thought, what they were saying, what the internet was saying, what the critic was saying and I just kind of lost my way a bit. And if I hadn’t gotten the diagnosis, if it all hadn’t stopped, I don’t think it would have ended well anyway. Does that make any sense? I think I was headed for a great downfall. So you were having your own career crisis and then your shock family news came along? Yeah and can I tell you what happened? As I was having this crisis, the diagnosis came and I was sitting in like another dimension and all of a sudden this film that I had over me just popped. And this clarity, I was like, ‘What are you worried about arsehole? You’re worried about this? What the Internet said? Or some f—ing fan? Or how many tickets or if the song is number two or number four on the chart?’ And it embarrassed me. Sitting on my own in a hospital I was embarrassed and in that moment I knew I’ll never go on social media again, I will never look at a critic, I will never read my name.

I know it sounds strange but from that day, which was Halloween, I never again read my name in print. I never will. I never ever post. You were worried because there was a f—king meme of you on the Internet’.

You’ve always come across so cool and relaxed about things? No. I was a liar. I was. But I was cool and relaxed and then I wasn’t. And people around me were worried about me. At the end they could see me starting to … there was no more joy. None of this. None of the light feeling of ... because the things that should be important, you know, it’s the journey, to share, to love and it just became all about, ‘What do you mean the cover of Time magazine? What about People? I’m not on that.’ This crazy thing. I don’t know. In Forever Now you sing ‘I’m always going to lift you up’ – who lifted you up during this period? You [the people]. You did. My faith. Honestly, I’ve said this so it feels like it’s weird when I repeat it, the love that we got from the people all over the world, the way that we were treated by the media gave us faith in humanity. It’s very easy to look at everything cynically and my wife and I, there were days when there were people, we just knew they were praying for us and we knew that they were showing us this kindness and compassion, honestly. Because I never looked anymore, I refused to ever look at myself in the paper but I would have to go to a grocery store and buy stuff and I would see the way that it was covered with such class and dignity. People got us through more than they’ll ever know. And part of my reason for even having this record was that I wanted to be able to say thank you in a my small way and I wanted to be able to put together something beautiful and loving and peaceful and put it out to a world going through difficult times.

Did you keep your optimism throughout the tragic times? No I did not. No. I think that life changes for all of us when we face our own mortality, or when we face the mortality of someone that we love so much. I can’t speak for other people but for me, I asked myself so many times and still do, ‘What’s it all about?’ Because you lose the importance, the things that you used to list as things that were so important to you, all of a sudden … Family has always been important to you though? Oh of course. Always. Absolutely. I always had that. I think what I meant was that you just get to this point where you … and I think more philosophically, I don’t mean, ‘What’s it all about and what’s important? Family or this?’ But, ‘Is it just pain?’ It made my faith stronger. I thought how can we suffer so much? There must be something more than this, this cannot just be suffering and ashes to ashes, dust to dust. There must be a greater reason, what is the reason? I mean we all ask this question don’t we? This is the question. Where are we from? Where do we go? What is this? And I think that’s more what I meant.

But the positivity I have is knowing how important it is to be grateful and that gratitude in the moment and to really remember that when something doesn’t go your way or you have a disappointment in your plan or your business that you can hit yourself and say, ‘Hey remember when it was really bad, well this isn’t so bad’. And I think that’s been a positive. Is Forever Now a song you wrote about your wife? Yeah. No. Of course I couldn’t help but write it about the experience that I was going through but, you know, every song I’ve ever written, I have deeply wanted to leave something open-ended enough for your interpretation. It’s your song, it’s for you. And this song I thought, ‘Man I would love for people to relate to this on the level of parenthood, of loving and taking care and being responsible’ and not just for a child but for an animal, for a pet. Some people don’t have children and their dog and their cat or their lizard is … they feel as much love and as much pain and loss and all of that. And for me I loved writing the song and it’s funny, every time I got stuck lyrically, my co-writer Tom would say to me, ‘But what are we looking for?’
Over and over I kept explaining that this song was about time, I kept saying, ‘No it’s about time, Tom. It’s about time. It’s about how quickly time comes. It’s about this cycle of this life we live where we all suffer the loss and the fear but we also celebrate this love that we have but we all have our time. Time runs out for all of us’. It was funny, the hardest part of the song that I had was the lyric, ‘It wasn’t so long ago, we walked together and you held my hand but now you’re getting too big to want to and I hope you’ll always understand’. But the original words were, ‘Remember when you were little …’ and I hated it. They were these words that I’d sung quickly. Tom is such a wonderful lyricist that he helped me to sort of tell the story. I remember just over and over I kept saying, ‘This is about time. In this song I must have a way to express the journey that we’re going through and how quickly it all goes’. Talking of time, it was Noah’s fifth birthday recently? What did you do? I know it’s crazy. We had two birthday parties. He had one two weeks earlier because all of our relatives from Argentina were in Vancouver. So we went to an indoor trampoline place.

And on his birthday, we rented a pirate ship and we all became pirates and we sang, ‘Yo ho ho a pirate’s life for me’ about 87 times. You’ve also had a daughter recently? How is she doing? She’s beautiful. My wife is so happy. My wife is in love. It’s really nice and really beautiful. Her name [Vida] obviously was purposeful because we felt like it was kind of a miracle for us. Out of something so hard, something so beautiful. And we were well aware because we had enough people tell us. Someone told me that 92 per cent of couples divorce and I understand why, because it’s too much. So we’re happy that we didn’t get divorced. So did it all bring you closer together? Closer yes, but, you know, I think you find out who people are when the shit hits the fan and you find out a lot about yourself and the other person and I fell very deeply in love with my wife as a human being, as a mother. As we’re here now, my appreciation for her and all of that but it’s a very different story, not to say that I wasn’t in love, but the stress is … I don’t know. I don’t know … very stressful.

Grand Touring The new Bentley Continental GT Experience offers luxury, quality and refinement. WORDS CHRIS NIXON
BENTLEY has a grand history dating back to 1919, but it wasn’t until new owner Volkswagen introduced the modern Continental GT in 2003 that it became more than a small niche make. The Conti GT marked the beginning of mass production of Bentleys. Now around 12,000 in various models, including the recently launched Bentayga SUV, roll off the lines every year. There are lavish Bentley showrooms on the Gold Coast and in Brisbane, something unimaginable not many years ago and a sign they’re selling well. Showroom traffic surely will pick up with news an all-new Continental GT is on the floor. ‘New’ is an over-used word in the car industry, which constantly churns its products to sustain sales, but this Bentley is unmistakably, genuinely new. Even the W-configuration, 12-cylinder engine is ‘new’, although it still has 6.0 litres capacity and twin turbochargers, now producing 467 kilowatts of power and 900 Newtonmetres of torque.

That’s the kind of power that wouldn’t be unreasonable in a tractor, although the Bentley delivers it in a very different way. The beauty of the 12-cylinder is in its dual nature – docile around town, ferocious when given its head. But all the time, creamy smooth and effortlessly responsive. Coupled to a new twin-clutch transmission – replacing a traditional torque-converter type – the Continental overcomes its 2250 kg kerb weight to rocket to 100 kmh in a claimed 3.7 seconds and on to a top speed of 333 kmh. Not so gently, Bentley. All-wheel drive is still a feature, unusual in this class of luxury-performance car. More new technology features in the form of adaptive chassis control. An intelligent 48-volt system is designed to ensure exceptional handling and refinement in all road conditions. This automatically controls ride comfort and lateral roll, cushioning passengers from excessive movement and making the car feel more precise in the driver’s hands.
What is most different about the latest Continental GT is its styling and interior design. The bodywork’s proportions and profile have changed, giving it a longer, lower, racier appearance. Anyone familiar with Continentals would pick this one easily as part of the family, but it’s very different. The words glamorous and imposing describe it well; it’s definitely more eye-catching than the old car. Inside, it’s what you imagine a hand-crafted Bentley should be. Depending on what the buyer specifies as his or her personal choice, there will be swathes of perfect leather, wool, chrome, piano-black veneer, carbonfibre and aluminium. All this set off by LCD lighting across the fascia and door caps. There’s almost infinite fingertip adjustment for colour. That’s very clever and novel, but once I’d chosen a colour I can’t imagine changing it when my moods shift.
Optional diamond-pattern upholstery with exquisite stitching is an indulgent pleasure. A three-sided rotating instrument panel is another innovation. It’s configurable to display the user’s choice of information and flips at the touch of a button. Imagine the rotating number plate on James Bond’s Aston Martin. One side is veneer-finished, another shows (electronic) analogue-style dials and the third has a digital display. The Bentley Continental GT truly is a Grand Touring car. That means it’s capable of fast, long trips in superb comfort, but doesn’t pretend to be a sports car. Its performance and roadholding are pretty handy, but the driver is reminded this is a substantial car to pilot on narrower roads. Many people wouldn’t know Bentley is a product of the giant Volkswagen Group, albeit still manufactured at Crewe in England. But rather than being a standalone brand, it’s integrated it into a range that also includes Lamborghini, Porsche, Audi, SEAT and Volkswagen. Technology and parts are shared, but the Continental GT remains as individual as ever.

ALTHOUGH VEHICLE MAKERS are powerhouses of technological innovation, what we see on the roads is guided more by market demand. There’s a host of technology in the background, waiting for a sign the market is ready. Clearly, the tide is turning – fast – for electric vehicles (EV). We’ve seen the American Tesla here for several years and a couple of small Japanese offerings. Now the luxury juggernauts Mercedes-Benz, BMW and Audi are about wheel out their firepower and change the game dramatically. But I bet you didn’t expect to be buying an EV from your local vacuum cleaner shop. That might not happen exactly, but vacuum maker Dyson is indeed going into the car business. It’s unveiled proving ground in Wiltshire, England, and secured a manufacturing site in Singapore, from where the Dyson car will appear in 2021.

Dyson initially made its vacuum cleaners and washing machines in Wiltshire but transferred production to Malaysia in 2002. In 2004 they opened a manufacturing plant in the country in a joint venture with a Singaporebased investment group, then, in 2013, Dyson opened its digital motor plant in Singapore. According to Britain’s Autocar magazine, Dyson’s long-term automotive plans suggest a diverse range of electric cars will be produced. There will be a three-car line- up, with an SUV almost a certainty, on top of a high-end model already mooted. A sports car will not be part of the range, but a top speed of more than 160kmh for one or more models is suggested. The company recently trademarked the terminology ‘Digital Motor’ for automotive use. Previously used only on its household products, the Digital Motor handle describes
a brushless permanent-magnet synchronous motor – the same type found in many electric vehicles currently on the market. Dyson, a leader in vacuum cleaners and hand dryers, already has 400 employees focused on the project, but is now ‘looking to fill an additional 300 automotive vacancies’. It is working to produce its cars with solid-state battery technology. This advanced battery chemistry, which uses higher energy density cells that are quicker to charge and store more energy than current liquid cells, is predicted to make it to market in time for the brand’s second car, possibly at the start of the next decade. This would place Dyson at the front of the race to bring solid-state batteries to market. If a model branded Dyson doesn’t suck buyers into the concept of electric cars, surely nothing will.

Festive fare Impress your dinner guests this festive season with this delicious pork recipe from the Vue 175 menu. Toowoomba Lavender Pork
(N.B. This recipe needs two days preparation)
LAVENDER PORK BELLY Ingredients 5kg whole pork belly (skinless) 1 bunch lavender 4lt milk (full cream) Method 1. Heat milk and lavender. 2. P our over pork belly, cover with baking paper and foil. 3. Bake at 145ºC for 6 hours. 4. Press and cool overnight. 5. Portion into logs, vacuum seal and label. PORK COLLAR Ingredients 1kg pork collar 80g garlic powder 80g onion powder 3g fresh rosemary 3g fresh thyme 2lt chicken stock (warm) 5g salt 5g black pepper Method 1. Clean the pork collar by removing any excess fat and sinew. 2. Bring stock to a boil and set aside. 3. M ix all remaining ingredients together and rub over collar and seal in a buttery hot pan. 4. Pour stock over pork and place in a deep bain marie. 5. C over with foil, braise for 6 hours at 150ºC. 6. Once cooked remove from bain marie, cool overnight and portion. 7. Reduce remaining liquid to a thick glassy jus. 8. Chill overnight and remove any excess fat on the surface. PORK PUFF Ingredients 300g pork skin 3lt water Method 1. Place skin in a pot and cover with cold water. 3. Bring to a boil then simmer for 4 hours. 4. Strain and place skin on wire racks and dehydrate at 90ºC overnight. 5. Portion and deep fry at 180ºC. 6. Season with salt and pepper.

FIG PEARLS Ingredients 1 punnet fresh figs 500ml apple juice 1 stick cinnamon 6 sheets gelatine 500ml canola oil Method 1. Place canola oil in the freezer (Canola oil is required to be 4ºC). 2. P lace figs, apple juice and cinnamon in a saucepan and simmer for 15 mins. 3. Blitz then pass through a chinois. 4. Place gelatine sheets in ice cold water. 5. S queeze sheets, drop into fig liquid and whisk until dissolved. 6. Cool mixture and place in a squeeze bottle. 7. S quirt drops into cold canola oil to form fig pearls. APRICOT PUREE Ingredients 1kg dried apricot 1lt water 100ml honey Method 1. Place apricot and water in a saucepan. 2. B ring to boil then simmer till apricots are soft (approx. 5 mins). 3. Strain the apricot and puree with honey. 4. Portion and vacuum seal. ORANGE COQNAC SAUCE Ingredients 2lt orange juice 200ml coqnac 100g glucose Method 1. Place all ingredients in a pot and reduce until thick and glassy. 2. O nce cool place in squeeze bottle and set aside. POACHED BEETROOT Ingredients 1 bunch baby purple beetroot 2lt water 200ml apple juice 200ml red wine 50g sugar 1 star anise
Serves 15 Method 1. Place water and beetroot in a pot, bring to a boil then simmer until beetroot is tender. 2. Once tender place in an ice bath and remove skin by gently pulling it off, keeping the beetroot whole. 3. Place remaining ingredients in a saucepan. 4. Bring to a gentle simmer to dissolve sugar, then chill over a water bath. 5. P lace peeled beetroot, red wine and apple liquid in vacuum seal bag. 6. Seal, label and refrigerate. KOHLRABI Ingredients 1 kohlrabi 80g duck fat 4 cloves garlic (peeled) 3g thyme 1g salt Method 1. Peel kohlrabi and cut into 1 cm batons. 2. Place all ingredients into vacuum seal bag. 3. S ous vide at 85ºC for 3 hours until flesh is tender but retains texture. Prior to plating 1. Set sous vide machine at 60ºC. 2. Place vacuum-sealed portions of pork, poached beetroot and kohlrabi in water bath for 8 minutes. 3. Gently remove from bag ready to serve. To serve 1. Gently place pork belly, pork collar, beetroot and kohlrabi in the centre of the plate. 2. Drizzle coqnac sauce over and between ingredients. 3. S queeze apricot puree in dots around the ingredients and drizzle fig pearls over pork and on the plate. 4. To finish, place pork puff on top and garnish with micro celery.

Tasty Tweed An easy drive from the Gold Coast or Brisbane, the Tweed Valley is a popular foodie destination.

THE TWEED VALLEY holds many attractions to explore: Tweed Regional Gallery, home to a fine permanent collection, travelling exhibitions and the magnificent Margaret Olley Art Centre; Mavis’s Kitchen with its own kitchen garden and regular dining events; coffee plantations, Ilnam Estate Winery and the award-winning Potager Restaurant with views from the hills of Carool out to the ocean, as well as craft galleries and farms set in a natural scenic wonderland. Once considered one of Australia’s largest sugar regions due to the rise in sugar prices in the 1960s, the Tweed is fast becoming the food bowl of the South-East corner. An area of fertile red soil due to the volcanic activity of the region, there’s an increasing emphasis on sustainable farming and cooperative practices. The region also has historical significance. For centuries, the heritage-listed Mt Warning has been a site as sacred to local Aboriginal tribes as Uluru. To many, there’s something mystical about the green cauldron; a magnetic stillness and sense of healing gained in the heart of this oasis. Nestled on a mountainside on over 100 acres of rainforest, EcOasis offers guests a choice of six luxury chalets where they can relax in total privacy and comfort.

Arriving in the late afternoon, it’s time to enjoy panoramic views of the forest and sunset behind Mt Warning. As black cockatoos weave their noisy path overhead, Eastern whipbirds bid farewell to the day as the sun’s rays change from white to orange as darkness descends. It’s a rare chance to catch up on ‘together’ time, the privacy of the chalet encouraging champagne on the deck, a hot spa in the clawfooted tub and romance, with dinner delivered to the chalet by your hosts. Refreshed and stress-free, wake up to morning mist across the valley before the birds take up their songs again. At Uki, a 10-minute drive away, Gary Wall has restored the 109-year-old Uki Post Office, founding a community hub including the post office and newsagency, an art gallery corner ‘Art Post Uki’ and a coffee shop. The gorgeous restoration of the heritage-listed building alone is worth seeing, with its open-face hoop pine shelving and timber counters. The gallery sponsors a monthly picnic in the park, held to coincide with an Art Post gallery launch, the area being home to several significant artists. Wine, music, art and coffee … with a roasting room in the making, Gary will launch Bastion Lane Coffee later this year.
After coffee, there’s a whole river to be explored on a cruise with Mt Warning Tours. On board the Spirit of Wollumbin take a threehour cruise up the Tweed and Ruse Rivers as owner-operator Michael Simmons talks about the history of the area. It’s a remarkable area of rainforest on a route travelled by steamers than ran from Murwillumbah to Tweed connecting townships along the river with the railway at a fare of 3/6d return. Prices may have changed, but there are still many natural wonders along the way. En route, you will pass the award-winning Husk Distillery, Australia’s only paddock to bottle distillery, and the heritage-listed Stott’s Island, home to many different species of birds, before heading up the Ruse River to gain a clearer view of Mt Warning. It’s a route used by logging companies sending their timber down river to the mill a hundred years ago. “Food is an essential part of each tour,” Michael says as the crew serve a five-course degustation lunch of fresh local seafood and produce from the area garnished with bush food from local suppliers. Farr out Nick Farr is continuing a family tradition of fine winemaking at his Irrewarra vineyard.

THERE IS SOMETHING very special about the Farr wines – Pinots. Chardonnays and the rest of the stuff – that goes beyond mere place. They are infused with a discernible house style that transcends the maker but not the family: the Bannockburn and By Farr wines made by founder Gary Farr; the current Farr Rising and By Farr wines made by son Nick; and the gorgeous Gippsland wines crafted by daughter Philippa Farr … they are familial (wines and makers). When Gary Farr finished his tenure at Bannockburn Vineyards, the Bannockburn wines changed; they seemed less Farr-like, and his new brand – By Farr – took the style and character along for the ride. The supposed sense of place was firmly skewed by the maker. And even though Philippa Farr makes Gippsland wines, they are unmistakably from the Farr fold. Which isn’t to say that they all taste the same … far from it. The wines certainly do express the nuances and peculiarity of their origins – even the By Farr wines from different blocks – but like the traits of blue eyes and Roman noses, the Farr presence is felt in them all.

Now Nick Farr has just released his second set of wines from the Irrewarra vineyard, nearly 60 kilometres south-west of the Geelong vineyards that are responsible for the By Farr label. It’s a whole new project with the vineyards, soils, climatic conditions and resulting wines far enough removed from the mother ship to be pertinent, but also (and this is the crux) emphatically imbued with the Farr signature. Irrewarra is planted to two grapes – chardonnay and pinot noir – across eight acres (a little over three hectares) with pinot noir taking up threequarters of that space. The vines are now 17-years-old, so right in the sweet spot, ungrafted and clonally diverse. It is a lonely vineyard, surrounded by inland lakes, cattle and sheep. Nick Farr tells me it is dairy country, blessed with steady rainfall to keep it lush. The ocean is a little over 30 kilometres away, so it is a maritime climate – moist and steady. That rainfall has a distinct bearing on the grapes and wines – keeping the soil moist and cool, elevating acidity and adding its own set of complexities to the taste of the wines. And the vines are dry-grown, encouraging them to set deep roots, therefore drawing from a greater wealth of soil and substrata.
“The soils across the slope of the site are a mixture of grey sandy clay loams at the south end to dark brown loams with fragments of buckshot and quartz gravels towards the north. All with underlying brown to yellow clays,” says Nick. “Overall the soils remain very moist throughout the year because of the clay-based soil profile and annual rainfall of 885mm, resulting in the very attractive damp earthiness character in the fruit and wine.” Despite the plantings being dominated by Pinot Noir, Nick reckons it is best suited to Chardonnay. The natural acidity is a big part of the puzzle, and the current release 2017 Irrewarra Chardonnay has a brightness and flintiness that cuts through the more lavish chardonnay notes (and that’s part of the Farr gene: the family has never shied from flavour and richness in their whites, but that richness has always been foiled by mineral acidity). It treads a rambling line between the modern Australian Chardonnays (lean and at times homogenous) and something like the wines of Sonoma Coast – fleshier, richer, more decadent. Oak and malolactic are part of the mix – a nice shoulder-shrug to fashion – but they sit inside the wines … complexing agents.

I have a hunch the Irrewarra Chardonnay will make its mark over the coming few years. It really is kind of special. The Farr Pinots from the Geelong vineyards – Farr Rising, Farrside, Sangreal, Tout-Pres, and RP – are made with varying amounts of whole bunch. It’s a choice that leaves stems and whole berries in the ferment, adding their own unique complexities to the resulting wines. They are indeed complex wines, but also dense and structured, able to wear the whole-bunch component without it dominating. Irrewarra Pinot is different – too perfumed and fine to benefit from whole-bunch, so it is vinified more traditionally; destemmed completely before fermentation, aiming at a more fruit-pure expression. But there’s also that undergrowth/earthiness that Nick talks about – a product, he thinks, of the damp soils. It’s an alluring character, a nice counterpoint to the fruit component. So, given the differences in site and production, how is it that the Irrewarra wines sit so comfortably next to the Farr’s? I’m buggered if I know, but they do. And even though they are branded separately, marketed separately and packaged in completely different livery, they are – at least in my eyes – a compelling addition to the Farr stable.

IN CELEBRATION of the warmer weather, my husband and I decided to plan a mini getaway to Brisbane. I had attended a friend’s glamorous wedding at Stamford Plaza and wanted to return to explore the hotel and its surrounds further. How delighted I was that we chose this venue to rejuvenate in 5-star comfort. As a lover of nature, I was in my element here. I find some hotels can feel a little clinical, but to me the Stamford Plaza provided the perfect balance of city buzz and natural charm, elegance and warmth. The interior of the room exuded this feeling, decorated with beautifully-crafted wooden furniture and luxurious furnishings. And we had an amazing city view to boot. My husband indulged a little and booked the hotel’s signature Romance and Seduction package.

As we entered our room, we were immersed in the experience with soft music playing in the background, rose petals fashioned in a heart on our king-sized bed, and a single elegant rose as a memento of our stay. Petals led a path to the oversized luxurious bath that was ready to step into, and we let our worries soak away as we relaxed in the candle-lit ambience. Afterwards, we enjoyed bubbles of a different kind overlooking the Brisbane River. Of course, we didn’t want to ignore that French Champagne chilling on the table. Rugged up in our relaxing robes, we revelled in conversation, canapés and champagne. A highlight of our stay would have to be the stunning outlook across the river. We watched the boats go by in the changing colours of the landscape as the sun set and the magenta lights of the Storey Bridge flickered on.
There’s nothing like a picturesque view to add to a romantic getaway. The buffet dinner at The Brasserie on the River certainly did not disappoint with its great variety of food on offer. The staff seemed to move like clockwork; calm, collected and professional and the vibe throughout the hotel was wonderful. In the restaurant, we chatted to two couples seated nearby who were celebrating their wedding anniversaries. It was lovely to share a toast with them when fireworks lit up the sky. The Romance package included breakfast served to the room, but after a sleep-in (that never happens) we decided to wander down to enjoy the elegant ambience of the Brasserie. Once again, there was a fantastic selection of delicious food that catered to dietary needs exceptionally well.

For prime alfresco position, I suggest booking a table as we were a little too late to secure a spot in the glorious sunshine. After breakfast we got our vitamin D fix taking a stroll along the boardwalk to the adjoining Botanical Gardens. There’s a ferry terminal practically on the doorstep, and if we had more time, we would have loved to have gone for a cruise along the waterway. But alas, our break had to come to an end. With the convenience of the location (one road straight to the highway home so no one-way streets to contend with) it was a stress-free departure. I rattled off a list of things I was coming back to try – the Japanese cuisine, the decadent chocolate high tea (of course with the girls in tow), a ‘Stay and See’ package combining a trip to the local theatre, and what a wonderful experience it would be to witness the New Year’s Eve fireworks over the Storey Bridge from one of the best vantage points around.

HAVING VISITED AMERICA, Europe and Australasia over the past few years, an Asian adventure was next on our list. However, with so many amazing destinations to chose from the decision literally came down to the toss of a coin. The winner was China and – given the vastness of the country and the language barrier – we decided an organised tour was essential. The 11-day itinerary would take us from Beijing to Shanghai with stops at Hangzhou, Suzhou and Wuxi along the way. A strange juxtaposition of East meets West, China was both a revelation and a confirmation of my pre-conceived ideas with high fashion boutiques located just metres away from vendors selling live scorpion skewers and even the most humble homes sporting huge flat screen TVs. In Beijing, we spent several hours wandering through Tiananmen Square and exploring

the Forbidden City, but with the room count somewhere between 8,000 and 10,000 depending on which website you read, this was barely enough time to get a feel for the history of the place and marvel at the ancient architecture. Other highlights from our time in the nation’s capital included a tour of the scenic Shichahai lake district, a rickshaw ride through the narrow 700-year-old ‘hutongs’ and a visit to Beijing Zoo to see the Giant Pandas. The Golden Mask Dynasty show where millions of litres of water was pumped from the outside reflection pools into the theatre to create a twostorey waterfall was spectacular, as was the traditional meal we were served by a local couple in their private home. And we were very amused when the advertised showcase of traditional customs included a ‘Cricket Show’ featuring actual insects rather than a demonstration of prowess with a bat and ball.
Of course, no trip to China is complete without a visit to The Great Wall and my first sight of the age-old structure brought tears to my eyes. Stunning, majestic, breathtaking … there are no superlatives that even go close to describing this man-made wonder. Up close, I was reduced to tears once again as I realised my knees would only allow me to climb a fraction of the stairs and not ascend to the heights I had anticipated. But the view from any vantage point is well worth a few aches and pains on the bus ride back to the city. One thing I wasn’t expecting (but probably should have been) was the endless high rises that stood like sentinels everywhere we went, with rows and rows of identical buildings dominating the landscape in both in the city and country areas. This was particularly evident as we travelled by bullet train from Beijing to Hangzhou with the urban sprawl continuing for the entire six-hour journey.

In stark contrast, the hills around Hangzhou were awash with green as the area is home to the famous Longjing tea. A visit to a local tea house allowed us to wander through this lush landscape and breathe in the (relatively) clean air. Later that day we connected with nature again as we enjoyed a boat ride on the picturesque West Lake – a stunning UNESCO World Heritage site known for the ethereal beauty of its willow-draped islands. Then it was on to Suzhou. With a history dating back to 514BC, the ‘Venice of the East’ was perhaps the closest we ever got to seeing the ‘real’ China. A cruise along the narrow waterways revealed the 1,000-year-old buildings that many locals still call home, while a stroll through the old alleys provided an insight into the market stall economy where you can bargain for everything from local delicacies to electronic goods (and the obligatory souvenirs for the tourists). After the hustle and bustle of the markets, a visit to The Lingering Gardens was a welcome respite. >>

A peaceful oasis with the most exquisite collection of Bonsai trees, it was easy to see why this is also classified as a UNESCO site. Moving on to Wuxi, our first sight-seeing opportunity was a visit to Nanchan Temple. Built during the Nan Dynasty, this is the oldest wooden building still standing today and we were lucky enough to witness some young monks performing their prayer ritual while we were there. A very moving and spiritual experience. Next it was on to another beautiful waterway … Li Lake Park … where we explored Taihu Lake, the second biggest freshwater body in China.
Last stop on the tour was Shanghai. A relatively modern city, the first thing we noticed was the traffic. At 2 o’clock in the afternoon all ten lanes leading in and out of the city were gridlocked and I was reliably informed that peak ‘hour’ lasts from 6 a.m. to 7 p.m. every day (I swear I will never complain about the M1 again). There is so much to do here, it could easily work as a standalone destination. In just two days we managed to stroll along the world-famous Bund, step back in time at the Shanghai Museum, enjoy the panoramic views from
88-storeys above the ground, eat at the popular French Quarter and see a thrilling acrobatic show – ERA: The Intersection of Time. Oh … and we also took an evening cruise on the Huangpu River, marvelled at the stunning neon light show, tasted the local street food and shopped for traditional jade, pearls and silk at the Nanjing Road markets. While we thoroughly enjoyed our time in China, it is such a huge nation with so many amazing sites that 11 days was never going to be enough time to explore all it has to offer … I guess that means a return journey needs to be added to our ever-growing bucket-list.

“We are the middle-man which cuts down on a lot of time, a lot of mistakes and misinterpretation,” says Mark. “We engage the structural engineer, the surveyor, all the consultants and get all approvals.” Even, in the case of a recent project at Sanctuary Cove, spending months getting the by-laws amended to allow work to commence. “The adopted standards for Sanctuary Cove have been rewritten because we fought for it and fought for it,” Mark says proudly. “We never give up on seeing our client’s dreams become a reality.” As the former Gold Coast chairman and vicechairman of the Master Builders, as well as sitting on the State Housing Sector in Brisbane, Mark is well-qualified in his field, however, it is his personal approach and attention to detail that really sets Romark apart from its competitors. Owners Colin and Alison recently engaged Romark for their renovation project and are very satisifed with the result.
“We found them on the internet funnily enough,” says Colin. “We’d interviewed four or five different builders – and of course price and competitiveness and skills are very important – but if we can build a relationship like we have with Mark and his team, based on trust and honesty and reliability I think that is the ingredient for a successful building project.” “I just want to add that it actually feels like you are working with family rather than just a ‘builder’ and that makes a big difference,” says Alison. “You build an incredible relationship and we feel that Romark were exactly the right company for us.” And unlike many in their field, a Romark build is truly bespoke, with no two projects ever identical. “We only work on a few homes at any one time," Ramona says. Property buyers looking for value in regional centres may find it tougher than a year ago with the latest research showing that total returns have eased back to their lowest levels in five years. However, according to CoreLogic’s Total Returns Index, which combines rental returns with price growth, regional markets are still outperforming capital cities and this could continue for some time yet. It also shows that at least one south-east Queensland hotspot, the Sunshine Coast, is emerging as one of the best coastal markets for value investors at the moment. Dwelling values nationally fell 1.6 per cent in the 12 months to the end of July, causing a sharp pull-back in total returns annually to just 1.9 per cent. This compares with 14.2 per cent a year earlier when property prices were peaking. Breaking the statistics down further, the CoreLogic index shows the extent of the capital city slowdown with combined returns slumping to 0.8 per cent in the year to the end of July. This is down from a heady 14.8 per cent a year ago. In comparison, regional markets are travelling much better with combined returns of 6.6 per cent, down from 12 per cent. CoreLogic’s senior research analyst Cameron Kusher says the drop in regional markets is not

surprising given the sharp declines in the Sydney and Melbourne housing markets. “I believe regional markets will continue to outperform capital cities, however the expectation is that value growth in regional markets will also slow,” he says. Amid the data, CoreLogic has revealed that south-east Queensland’s key coastal markets are emerging as a tale of two cities. Mr Kusher says while Gold Coast housing returns have ‘slowed significantly’ over the past year, the Sunshine Coast is following its own beat. “The Sunshine Coast is the strongest housing market in Queensland for value growth,” he says. In the year to June 2018, Sunshine Coast property returns increased by 5.5 per cent. This is only slightly down on the 5.9 per cent increase recorded a year earlier. In comparison, residential returns on the Gold Coast edged just 1.4 per cent higher over the past year, down from 6.5 per cent. This is the city’s slowest annual growth rate since May 2013. It could be argued that the Sunshine Coast is playing catch-up at the moment, with relatively weak value growth of 12.9 per cent over the past decade. However, Mr Kusher sees it differently. “I wouldn’t say it is playing catch-up, but rather it’s more a case that growth hasn’t been as strong
and there hasn’t been as much new development as on the Gold Coast,” he says. “Value growth on the Sunshine Coast is slightly lower over the past year. However, values are rising at a relatively fast pace.” Mr Kusher sees subdued conditions on the Gold Coast continuing in the near term. “The market certainly appears to have slowed since late last year,” he says. “With capital city values falling, I would expect this will impede any significant growth in housing on the Gold Coast.” However, with the pressure coming off residential price growth, RiskWise Property Research CEO Doron Peleg sees medium-term opportunities emerging in the SEQ market, particularly for buyers looking to upgrade. “You won’t see a red-hot market with doubledigit growth, but you will see, overall, a balanced market between buyers and sellers with some small pockets leaning towards sellers in highdemand areas,” he says. RiskWise has identified the top 10 suburbs for upgraders in the region. These include Hope Island, Palm Beach and Miami on the Gold Coast, and Mooloolaba and Coolum Beach on the Sunshine Coast. Rounding off the list are Albion, Wavell Heights, Stafford and Sunnybank in Brisbane.

LAST NIGHT I sat down on the couch with my nine-year-old daughter Isabella to read, as we have done after dinner for many years. This time was different though, because instead of reading a school book or a fairy tale I decided I was going to try and teach her about life and we read some of Rich Dad, Poor Dad by Robert Kiyosaki – “What the rich teach their kids about money – that the poor and middle class do not.” I know life means different things to different people. We all have different goals and dreams that we want to achieve. But how could I teach my child about life according to what I have learned over the past 20 years? Upon reflection I thought to myself, isn’t that what I wanted from my mother and father when I was growing up, for them to teach me how to be financially secure, independent and successful? Indirectly by example, I feel this is what most parents try to provide for their children but there is a lot more to learn about life than what we gain from our parents and our teachers. “In this world all we can trust is constant change, and that change is accelerating rapidly,” Robert Kiyosaki writes in his book. I recently attended an international conference in Vietnam and was astonished by what technological advances are on our doorstep. The first is driverless cars, and potentially driverless drones. I thought, how can I teach my daughter about this innovation? Should she own a driverless car, or be an entrepreneur and buy a driverless car to hire out while she is asleep and achieve a return on capital? We need to think deeper about this. If we have driverless cars, do we actually

need our own car, and could this capital be used elsewhere? Won’t there be a driverless car service everywhere? If we have driverless cars, could they become an asset to generate money? And who is responsible if a driverless car has an accident? Secondly, and by far the most concerning, is Artificial Intelligence. The capacity of the computer chip is growing so fast that within the next 15 or so years we may reach a critical point where Artificial Intelligence could make the human brain redundant. Wow, I thought. How am I going to teach my daughter about this? Those that are going to be successful are the children who are able to think independently and take risks both financially in business and in their personal relationships. One thing is for sure, life is going to throw lots of curve balls at our children and it will be the ones that can handle the change in a positive and persistent manner who will come out on top. My job for the past 20 years has been to help my clients document, plan and achieve their business and lifestyle goals by partnering with them on the journey. I have found that dreams don’t happen overnight, and that life never goes according to plan. It’s my passion to be an independent professional who can help with the emotional roller coaster ride when dealing with money and during times of stress.
