It’s been a long, hot summer but with the weather finally cooling down it’s time to take advantage of the milder temperatures and clear blue skies that define autumn in South East Queensland.
Editor’s letter IT’S BEEN A LONG, hot summer but with the weather finally cooling down it’s time to take advantage of the milder temperatures and clear blue skies that define autumn in South East Queensland. At Sanctuary Cove, the first thing that comes to mind is ‘Boat Show’. After more than three decades, this popular event continues to attract bumper crowds as it showcases the very best the marine industry has to offer. With over 300 exhibitors, more than 500 watercraft and a host of entertainment for the whole family, this year’s show is certainly set to shine. In this edition we preview the 2019 event and bring you a sneak-peak at some of the stunning vessels – from jetskis to superyachts – that will be displayed around The Marine Village precinct from 23-26 May. Still on the subject of boats – albeit a much bigger variety – Clare has recently spent a very pleasant 10 days cruising around New Zealand on the amazing Azamara Quest. You can read all about her adventures in the Well Travelled section. New Zealand is also where our wine writer, Tony, takes us as he tastes some extraordinary Pyramid Valley products.

GIVEN THE IMPRESSIVE body of dramatic work that Eric Bana has done in his career – Troy, Black Hawk Down, The Hulk, Munich and The Time Traveler’s Wife – it’s hard to believe that the Australian-born actor got his start as a stand-up comedian. That is until you hear him talk about everything from his love of hitting the open road in his classic cars to how he chooses his roles, and then you see how versatile he can be. You are known to possess a deep passion for motorcycles and cars. Where did that originate? It was just always there, I have a lot of specific memories about certain things like driving a car way too young (Laughs), about always wanting to be behind the wheel, and I was just always, always

interested in anything mechanical, two wheels and four wheels. I remember there was a friend of my grandparents who used to sometimes drive us to school in a one of the early style trucks that didn’t have indicators, but he would pull a lever and the hand would pop up on the right-hand side. There was nothing more exciting to me than reaching across while he was driving and pulling the hand up. I was just always excited about anything to do with cars. Do you like vintage vehicles or racing machines? I mainly prefer old stuff for sure. I’m in awe of modern engineering and what the latest cars can do, and how efficiently they can do them, but I do feel like we are heading into oblivion a little bit with some type of cars and super cars.
I think there is a really interesting conversation to be had about what electric cars are doing to design. So, I appreciate the modern stuff in terms of their engineering, but I always, always hark back to wanting to jump into my old cars to get around for sure. Is the Australian culture and love of vehicles and driving on par with what you have experienced in America? I guess I have experienced it more through the eyes of being a parent, and now having a son who is 19. I think the thing that I really notice is the massive disconnect between the younger generation and the automobile. I know tons of 19-20-year-olds who have absolutely no interest in owning a car, whereas

when I was young, if you didn’t own a car, you just couldn’t get from point A to point B. It was just not a conversation to be had.

You’ve spoken about a mental switch that must happen when you put on your helmet. What do you mean by that? It’s something that I picked up early on in some advanced training which I thought was a really, really good notion; that you must make a mental decision to enter a different headspace, and that if you just continue whatever frame of mind that you are in, you can kind of daydream and think about whatever you were thinking about before putting the helmet on, and you are probably not going to have a great day. I’m not saying you can’t relax while you are riding a motorcycle, I’m just saying that I think it was a great piece of advice to treat the putting on of the helmet as the moment that everything changes in terms of your mindset. >>

If you had to choose, do you prefer riding a motorcycle or driving a car? I’ll definitely ride. Does your wife Rebecca support you riding a motorcycle or is she a worried spouse? (Laughs) That’s a good question. It’s interesting. She never really worried about me racing cars, and I’d say that she probably worries about me riding. But she is quite good. If I go to a track day with my race bike, I don’t think she is overly concerned. I think she is more concerned when I’m commuting, and she’s also a little bit concerned when I go away for multi-day rides on my adventure bike. But, I would say that probably commuting is the one that she would be most concerned about. She is able to identify where the real danger exists verses the ‘he might get banged up a little bit’ danger. In 2007, you had a serious crash at the Targa Professional Road Rally which you did a documentary around (Love the Beast). Is that the scariest moment you have ever had in racing/driving cars or motorcycles? It wasn’t very scary; it was more the fact that I was just really, really, really disappointed that I was hurting the car. I kind of knew it was coming a few seconds before we hit, but I’ve definitely had scarier moments than that. The ironic thing about tarmac rallying is that the scariest moments are the ones where you don’t crash.

The scariest moments are the ones you have just before the crash, where you thought you were going to crash but didn’t. The car breaking away slightly on a crest that is going a different direction than you thought, or a surface change halfway around a corner … I think that sometimes the near miss can actually be scarier … the couple of small crashes I’ve had have been a lot less scary I would say. Being a father and a husband, did you find that after the Targa accident, or any of the near misses, that the way you viewed or embraced racing changed at all? No, because after that Targa accident … after I repaired the car and got it back on the road, I actually increased the amount of racing I did. I stopped doing the tarmac rallying and just really concentrated on the more serious GT3 sports car racing on circuits, so actually, my participation in competition went up after the period that was covered in that documentary. More recently, it’s sort of abated a little bit for various reasons but no, being a dad never really affected any of that in terms of how much I ride, what kind of riding I do, what kind of racing I did. I guess it’s probably because I’ve been doing all that stuff for so long that it never felt like an activity that you can drop because you’ve known different. Does that make sense? It would never occur to me not to ride a motorcycle. It would never, ever, ever occur to me to stop taking that risk. But if I had started riding at the age of 35, that would be a different conversation I think.
Also, there is that side of you that says, ‘I’ve invested a hell of a lot in this. I’ve invested a lot of skill set. I’ve invested a lot time. I’ve put myself at a lot of risk to learn a lot and I want to back that experience and enjoy myself’, you know? When you were 21, you decided to explore America, travelling for close to six months and over 12,000 miles in a ’79 Mustang. What inspired that trip? It’s actually a pretty standard Australia psyche, that notion of doing extensive travel when young. We are a very travelled population. I don’t know if it comes from being so far away from everything that it’s a given that you must travel and just cop it and not see distance as an impediment to experience. I think part of that comes from growing up in a country that is so big and sparse. The thought of being on a plane for 14 hours or 22 hours, I just don’t think we see that as a reason not to go somewhere. It’s culturally something that is engrained in us. I don’t know what drove me to do that trip. It was extremely lonely, very, very lonely. Generally, I was on my own and without the ability to communicate with back home. I look back on it and the thought of my kids doing that now … that was back when there were no cell phones, there was no internet, there were no emails. I would phone home every three or four weeks just to let my parents know that I was still alive. God knows what they were going through in the time between each call. >>

Were there any key experiences or stories from that trip that made an impression on you? I had one really scary moment in Washington, DC, where I got lost in the middle of the night and I think I was saved by the rain. I ended up in a very, very bad part of town. It was nighttime, and it was raining, and I had zero sense of direction and I just couldn’t get myself out of it. It didn’t matter which direction I turned, I just seemed to be ending up in a worse and worse part of town. It was bad enough that I was genuinely fearful. I was running red lights deliberately trying to get pulled over so I could get directions, and I think I ran one red light in full view of a cop car and not even the police car wanted to stop, so I just kept driving. I think the weirdest thing is that when I finally got myself onto a freeway, I thought ‘I’m out of here, I just need to drive for a few hours to get away from here’, and I spent about three hours on the freeway. I finally succumbed to checking into a cheap motel at whatever time of the morning it was, and I asked the person at the desk where I was and I was about 15 miles from Washington, DC. I’d been, I guess, on the circular route around the edge of the city. I had done a couple laps, kind of like Chevy Chase in Paris in European Vacation.

You began your career doing stand-up comedy,
I was reading that Russell Crowe recommended
what appeals to you about the more serious roles? The acting is what really appealed to me and the comedy was something that I kind of fell into, and once I did, I realised that it could be a kind of interesting alternative route to get to where I wanted to, but that certainly wasn’t my intention when I started doing stand-up. I was encouraged by some of my coworkers to try it and I went and saw some comedy nights and decided that some people were good and some people weren’t very good, and the guys that weren’t very good were getting paid, and so the light went off in my head and I was like, ‘if they are getting paid I’m certainly going to have a crack at it’. I got very lucky, I worked in the right parts of the business at the right times. I worked in television sketch comedy right when Australian sketch comedy was at its peak. I rode the right waves at the right time and when the opportunity came up to get into dramatic acting I just went for it. Initially, when I got my breaks in America I didn’t want to muddy the waters by trying to do comedy as well. I’m sort of glad I did that because it’s hard to change people’s perception of what you do, and I ended up with these two really, completely different careers internationally and in Australia.
you for Black Hawk Down, Brad Pitt requested you for Troy, and Steven Spielberg very much wanted you for Munich. You seemed to very quickly get on the radar of some very talented, respected, powerful people in the industry. I don’t really know how. I tried not to intellectualise it or think about it too much at the time. I guess everyone has their moments in our business. You are either lucky enough to get on board or stay on board, or you miss the bus. I do know that if you miss the bus, it’s unlikely to come again. I’ve seen plenty of examples, the first few steps are pretty precarious, so I always just try to go with my gut and tried to choose what I thought was interesting, and not be too chess game about it. I wasn’t interested in a particular pathway, I wasn’t interested in where I was going to end up. I was just interested in what kind of work I was going to be doing. You sort of end up where you end up, but you just have to make the most of the opportunities, I would not like to be in the position today that I was back then, because the same opportunities don’t exist in terms of the characters and acting roles. The size of movies we have today and the kind of roles that are being offered to young people on the rise are very, very different. I think its much harder for people to create a body of work that shows off what they can do.

THAT'S WEIRD, I thought, as Dr Peter Gartner, Medical Director of Park Igls, pressed his hands against my intestines. Not the intestine pressing – which is standard practice at Mayr-type institutions. Mayr-trained doctors get fantastically excited about distended, swollen and otherwise abused intestines, mainly because they know it's from this, not weight loss, that the big ta-da moment will come at the end of a patient's stay. Yet as we discussed bloat, insomnia, stress, the perils of sugar, the ideal colour and consistency of poo, Feldenkrais (a serious-sounding movement technique that can enhance sporting performance and relaxation, available at the Park), and the jazz
straying back to the truly weird element in all this: where had I seen him before? Dr Gartner and his peers are right to go gooey over the gut. For one thing, Alzheimer's and dementia are thought partly to have their genesis there. That area below the breast, stretching across the abdomen – they call it the Golden Triangle – should be an unpuffy pyramid of serenity. Most people arrive with their puff-to-serenity ratio woefully out of whack, but six days of pure living and herbal teas works wonders. Happy intestines = flatter stomachs = client satisfaction. I've been to other spas. Spas that called themselves boot camps (and
band Dr Gartner plays in part-time, my mind kept
boot camps that called themselves retreats).
Spas where you never get out of your white robe and develop an old-man shuffle by day two. Spas where you dress for dinner. Spas where you live off raw food ('Delicious mashed potato’, you tell yourself as you contemplate a coin-sized portion of grated celeriac that's been 'cooked' at 79 degrees). My favourite spas are undoubtedly the Mayrs. OK, they're obsessed with chewing. Each morsel. Thirty times minimum. But I can do that. Nothing much else to do. And yes, they like you to eat what they laughably call your 'evening meal' (vegetable 'tea') early – around 6pm. But I can do that too (gives me more time to attend the lectures – or slink off to watch Netflix).

It's serious, in other words. So serious, I'd never heard of it. No one I knew had been or was planning to go. Ever. Hooray. The thing about unfashionable spas is that they tend to have unfashionable decor. Park Igls is utterly without pretensions. The communal bits are what, to be kind, we could call '80s revivalist. The corridors institutional. The rooms ... clean, comfortable, but school of Ikea. Very inviting beds though. It also has the most fabulously well-appointed gym of any spa I've been to, with wrap-around windows and panoramic views of the nearby mountains. The gym's trainers have enough gadgets and techniques up their sleeves to keep boredom at bay, including a sort of indoor terrace composed of squishy 'Kybun' mats that are apparently amazing for your core and balance. But I'm getting ahead of myself, because you're not encouraged to over-exercise at Park Igls. There are gentle walks. And gentle swims. It's all gentle. There are eight levels of menu, ranging from the most severe – a 'spiritual' fast – to a 1,400-calorie comparative feast, and you'll be prescribed one, based on your initial consultation with your assigned doctor. Dr Gartner put me on level four. I was smug. Level four sounded sumptuous. Excellent, because if I've learnt one thing from my spa odyssey, it's that microscopic amounts of food are all well and good in a controlled environment but can set you up for failure once you get back to real life. That's why I have slightly mixed feelings about the other lovely things you get at a spa: the daily massages, the peace and quiet, the friendly staff who would happily chain themselves to the kitchen doors to stop you sabotaging your stay by sneaking in for another pot of fish pâté. >>

They don't like you drinking water with food. Think I can manage that. And they give you bitter waters three times a day to make you poo all the time (once a day is not enough, apparently). Like toddlers they seem to derive an unfeasible amount of joy from inspecting and analysing poo. Mind you, by the end of a week, you will too. They're also obsessed with herbal teas. Well, so am I. It was at the Mayrs that I learnt to refer to my gut rather than my tummy; became familiar with Epsom salts, aka bitter salts (the ones that make you poo: my advice, approach with caution); kept fierce guard against assailants on my intestinal flora; took up trampolining and tapping (a manual form of therapy that involves gently using your fingers to tap your chest, head and parts of your face while you recite various mantras to combat anxieties); discovered heated liver packs (warm parcels of muslin or towelling wrapped around herbal compresses, which you place on your abdomen while you lie down, relax and pretend you're a character in Heidi); and made 'lifelong' friends with whom I lost contact after about six weeks. So I was intrigued by Park Igls, which follows Mayr principles. It also fits my criteria of being not too far away (no jet

If I'd been a rookie I might have insisted on being put on level one (about 700 calories a day). But if there's another thing I've learnt at spas, it's that going to bed hungry is a sure-fire way to a hopeless night's sleep, and sleep was what I was here to master. We discussed all this, Dr Gartner and I. Then he sent me on my way with my schedule for the week. That's it? I thought, heading for the 90th time in 12 hours to the tea urn (never has hot water seemed so filling) and scanning the timetable he'd given me. And I meant that in a good way. Another thing I've witnessed on Planet Spa is the heavy selling that passes for medical advice at these initial consultations: 'Book in for the drip/the fat-burning/the underwater cranial therapy – it will really enhance the package you've already paid for’. Before you know it your schedule is a stress bomb of appointments for things you do not need at prices you can't afford. “Yes, that's it,” said Dr Gartner. “Don't overload your schedule.” I was by now fully in love with this man. I kept my extracurricular activities to a minimum because yet another thing I've learnt is that the space between the treatments is just as important as the treatments themselves. Your mind and body need time to process the massages, the infusions and the Kneipping (a Teutonic ritual that involves submerging as much
of your body as you can stand in hot, then cold, then hot, then freezing water before you scream, 'What the -?'). Park Igls, being a laid-back, easy-does-it kind of place, only makes you subject your lower legs to this, but even that's amazingly invigorating. The sleep counselling, to be honest, didn't tell me anything I didn't already know from listening to podcasts: avoid blue light for two hours before bedtime; no liquids within two hours of lights out; if sleep really is elusive, stop fretting and get up and do something relaxing. My sleep at Park Igls was terrible throughout. Was it the mountains? The minimal calories (it turned out level four wasn't exactly cup-runnethover quantities, although it was delicious)? The fact that I can't ever seem to turn off? Even Dr Gartner couldn't say. What he did know, after giving me a sleep tracker to wear one night, was that my blood pressure dips so low around 3am that my body probably thinks I'm dead, so goes into hyper-action. He prescribed one espresso with my evening meal, in the hope it would keep my blood pressure on a more even keel. It may well have done, but I still woke at three. For three days I felt diabolical. Wiped out and what is technically known as bleuggggh. I went for long hikes (strolls, really) across the valley, lost 3lbs (I always lose 3lbs and I'm always
thrilled, even though I know 'it's not about the scales'), watched as my Golden Triangle subsided into that perfect puff-to-serenity ratio (even Dr Gartner was impressed), and generally felt lighter, mentally and physically. Five months on, what residual benefits do I have? The chewing comes and goes. So do those 3lbs. But I'm working out differently – more gently, more enjoyably. I ordered one of those Kybun mats from Switzerland to stand on every day for an hour or so while I work at my desk, and can feel it in my core and legs. I have discovered I love the company of others, within reason. I'm even more taken with yoga than I was before: calmer – although I think that's finally the cumulative effects of my spa visits rather than all down to Park Igls. I take time out to count my breath every day. I blast myself with cold water for 30 seconds or more after every shower – it really improves circulation. Thanks to this minor act of bravery, I'm convinced I'm less of a wuss about cold weather. And I also returned to the UK with Dr Gartner, at least in a manner of speaking. The place where I'd seen his face before was on the packets of tea for sale in the lounge area. Yes, Dr Gartner has his very own herbal tea with his picture on it. I bought three packets.

Halogen lights have been switched for more energy efficient LED globes, and the factory’s compressor has been upgraded to a screw compressor which hibernates when it is not in use, using some 30 per cent less power than the traditional setup. The brand has also recently updated their packaging, switching to a more sustainable option which contains almost 40 per cent recycled material. All tubes, bottles and outer cardboard packaging are 100 per cent recyclable, allowing consumers to reduce their own carbon footprint as well. Always at the forefront of innovation, Alpha-H has also moved to convert inorganic waste into high-grade composts, premium soils, soil conditioners and potting mixes for use in land rehabilitation projects. In addition, the grey water from the factory is collected and stored in-house, to be later utilised by a third party to soak woodchips for gardening projects. As part of being more socially conscious, Michelle and Dean believe that supporting other locals plays a key role too. The company utilises home-grown ingredients in their formulations wherever possible; their Caffeine Extract, Aloe Vera and Lime Pearl are all sourced from sustainable Queensland growers.

Keep smiling According to one of Australia’s most experienced specialists, dental implants are certainly something to smile about.
AS A REGISTERED DENTAL SPECIALIST who has practiced at Benowa for 25 years and placed over 15,000 dental implants, Dr Niel Latcham shares his views on how to avoid possible pitfalls that can occur with dental implant therapy. Dental implants are, of course, wonderful news for patients with a missing tooth or teeth – especially if they do not want to wear a denture. First and foremost, dental implant surgery should be carefully planned. It should be carried out by an experienced and expert clinician in a sterile environment. Over the years, I have seen many patients who have presented with problems arising from dental implant therapy carried out at other practices. So, the biggest tip I can offer is to find a practitioner who has the requisite experience and skill to perform the dental implant therapy. In order to ensure the long term success of the dental implant surgery, the other teeth and gums must be put in a state of health prior to the placing of the dental implant. Although dental implants do not suffer decay like a natural tooth, they can be adversely affected by gum disease.

I see the three main objectives of implant surgery as being: (a) There should be no pain either during or after the surgery; (b) The patient should be able to smile and function normally by the very next day; (c) A sound, long time prognosis for any dental implants placed. Many of my patients enquire about the ‘All on 4’ implant system which they have seen advertised. As I explain to them, this ‘All-on-4’ system involves having all the teeth removed in either the upper or lower jaw. These teeth are then replaced with four dental implants. This may be a reasonable option in the situation where the patient presents with no teeth (i.e. full dentures), or in very selected cases, where all the patient’s teeth are hopelessly infected. There is, however, in my view, a downside to this approach because some practitioners who use ‘All-on-4’ actually remove healthy teeth. They also drill away a great deal of jaw bone. This mode of therapy requires regular on-going regulation, follow-up appointments and additional expense to ensure a healthy long-term result.
As a specialist dentist whose principal obligation is to preserve and maintain healthy teeth wherever possible, I am ethically and professionally opposed to the use of the ‘All-on4’ system except in the most exceptional cases. Of course, implant therapy involves a not insignificant financial investment, so my final tip is to find a practitioner who stands by their treatment in the long term.

Well enhanced Breast enhancement using fat transfers – what you need to know.
USUALLY, we are trying to get rid of fat, but thanks to new techniques, fat is making itself useful … in our breasts. Dr Dilip Gahankari, of Advanced Aesthetics Plastic Cosmetic Surgery and Laser Centre, says Lipo-augmentation or Autologous Fat Grafting (AFG) is a popular choice among women who are looking to enhance their breasts, but are reluctant to have an implant. “AFG is probably the most practical way to enhance the breasts with minimal surgical invasion,” says Dr Gahankari. “As well as that, fat-graft enhanced breasts often feel softer and more natural compared to implants,” he says. AFG is a great choice for women who want a more modest enhancement, as fat grafting does not normally provide a boost of more than one cup size. For women who want a larger breast increase, AFG can also be used in addition to implants. The advantage is that it can provide a ‘cushioning’ that may help prevent wrinkling or rippling as well as soften the feel of artificial breasts. “This is also thought to reduce the risk of capsular contracture in the longer term as fat

itself has some sort of prohibitive influence on scarring,” says Dr Gahankari. HOW IT WORKS A trained, Plastic Surgeon uses a liposuction cannula to harvest fat from a selected area such as your waist, hips or buttocks. The suctioned fat is cleaned of impurities such as oil and water and is injected back in pre-marked areas in the breasts. Small incisions are often placed in the breast crease and around the areola, and often droplets of fat are injected in a layered fashion. The volume of injection depends on several factors such as availability, size of desired breasts and skin elasticity. The results often take several months to stabilise. IMPORTANT TO REMEMBER Fat grafting is a time-consuming procedure and can take hours to perform. “The first step is the major one then, depending on the retention of the fat, subsequent sessions can be performed at six to 12 months intervals to add a cup size to the breast,” says Dr Gahankari. “As with all surgery, there are risks. Immediate complications can include minor infection, asymmetry, lumpiness, irregularity and the death

Time to relax Angela Oram enjoyed a rejuvenating experience at Retreat Massage and Wellness.
I KNEW THIS WAS THE START of something good when I pulled into Ferry Road Markets and there was a carpark right in front of the Retreat I would be relaxing in for the next hour or so. I promised myself that this was going to be ‘me-time’ so I hastily returned a couple of messages and emails and switched off my phone. When I arrived there were beautiful scents coming from the aromatherapy diffusers and I had a chance to browse the range of soy candles, massage oils, aromatherapy oils, creams, and tea. I could have browsed, aka shopped, for longer but right on time my therapist Giovanni appeared to show me to a beautifully decorated room. Light grey walls, beautiful fluffy, white towels and just the right amount of greenery to create a wonderful haven, I was in a happy place. My favourite part was the cane box sitting on the massage table. Giovanni gave me the rundown, clothes into the box, jewellery into the cute little case and push the buzzer when you are ready.

This was amazing, no rushing to climb under the towel before the therapist knocks on the door, I can push a buzzer when I’m ready. One of five therapists, Giovanni specialises in Myotherapy and spent years performing healing massage in Mauritius. I had noted my problem areas and the treatment I received definitely addressed those, in a way very different from a traditional remedial massage. I could tell Giovanni was tailoring the massage to the areas that needed the most attention and it left me feeling that I was in good hands, mind the pun. Serves 8 entrée or 4 mains (DF/GF)
POACHED CHICKEN Ingredients 1kg chicken breasts, skin removed 25g garlic, crushed 25g ginger, sliced 3 kaffir lime leaves 1 stalk lemongrass, crushed 35ml Megachef fish sauce 50g palm sugar, blonde 2 long red chilli, sliced 20g coriander root 10g cassia bark 650ml coconut cream Method 1. Preheat oven to 160ºC. 2. P lace the chicken breasts (with the tender loin to the base) into a baking dish ensuring they maintain their plump shape. 3. A dd the remaining ingredients to the baking dish. 4. Cover with baking paper and foil. 5. Bake for approx 45min until cooked. 6. Remove from oven and allow to cool in the liquid. 7. T he liquid is to be reserved as the coconut dressing. SALAD WITH CRISPY NOODLES Ingredients 100g bean sprouts 1p unnet red and yellow cherry tomatoes, halved 90g crispy rice noodles 2 green shallots, finely sliced ¾ bunch mint, plucked ¾ bunch Vietnamese mint, plucked ¾ bunch dill, tough stems trimmed 1 bunch watercress, tough stems trimmed 35ml extra virgin olive oil Method 1. Place all vegetables and herbs in a bowl. 2. Drizzle with olive oil and gently toss. GARNISH 10g crispy rice noodles 1 chilli, finely sliced, to taste

To serve 1. Drain the liquid from the chicken and reserve. 2. Pass the liquid (coconut dressing) through a fine sieve and pour into a serving jug. Discard waste. 3. Slice the chicken breasts across the grain. 4. Place slices of chicken onto the base of a bowl then top with salad. 5. Drizzle with coconut dressing. 6. Garnish with crispy rice noodles and slices of chilli to taste.

Cooking with fire The lick of the flame, the coil of smoke … cooking with fire is elemental.

FOR MOST OF THE HISTORY OF HUMANKIND, the use of fire has shaped the food we eat. Primitive hearths date back to the Palaeolithic era, with flames and coals dominating cooking methods for thousands of years. The fire was the centre of social action, the place where story and heritage were shared. In its original meaning, ‘keeping the home fires burning’ was of prime importance: the need to diligently maintain the flame without letting it go out. Fire maintained life. All that changed with the invention of the gas stove 150 years ago. However, an estimated three billion people worldwide still cook their meals over open fires, with various methods of cooking over flames, coals, charcoal and smoke pervading many cultures from South America where gauchos roast meat on fires at the end of a day’s droving to Maori and Polynesian hangis and earth ovens and Asian street food. Fire is where the action is and recently there has been a resurgence of cooking using this method. It’s challenging and mesmerising, demanding our constant attention. It also connects us to the traditions of cooking and the origins of our food. We are beckoned to The Lamb Shop in Broadbeach by the aromas wafting out into the

boulevard, meat roasting slowly on a spit over high-grade charcoal. From the 17th century BC, Greeks skewered meat and grilled it over hot coals, the origins of today’s souvlaki. In many areas, meat was a delicacy, with olive oil and herbs flavouring a plant-based diet grown on the hills around them. Terrain and climate dictated the meat available: goat, lamb, chicken and fish rather than beef. The Lamb Shop pays homage to the farm workers, butchers and cooks who brought food to the family table through love and necessity. Farmers. Butchers. Chefs. “Cooking with fire gives you an element of flavour that no other cooking method can,” says The Lamb Shop’s Head Chef Chris Ginley. “We get lots of quality into the meat through the smoky charcoal.” He tells us of the attention put into the fire, using the hot embers from the night before, removing the ash and rebuilding the fire each day with Gidgee hardwood charcoal. After 30 minutes the fire is ready. Shoulders of Junee lamb are marinated for 24 hours, then slow-cooked over charcoal for 4 to 5 hours, basted constantly during cooking to give the textured layers of flavour and smokiness that we love in Greek grilled meat.
From time to time we’ve seen South American style churrascaria on the coast, a Spanish Asador grill at Mavis’s Kitchen and Fire Cue, where whole or half beasts are cooked over coals and several Asian restaurants where hibachi grills are used. Yamagen’s chefs are on display as they work at smoking grills in a glass-enclosed room cooking on the Robata grill. Mouth-watering chicken yakitori, pork belly and locally-sourced haloumi are served as kushiyaki (grilled share dishes), and one of their defining dishes, Master Kobe Wagyu, is the best beef that money can buy. “At Yamagen, we use Binchotan charcoal sourced from Japan,” says Executive Chef Adam Lane. “We have six Robata dishes that we cook over the charcoal on high heat. The flame sears the outside and locks the smoky flavour which gives each dish the most incredible taste.” Barbecuing is another popular way of cooking with fire. We can thank Henry Ford and his friend Thomas Edison for this. With a group of friends called The Vagabonds, Ford and Edison would take off every year on a camping trip armed, among other things, with brickettes to light a fire. However, it wasn’t until the 1950s with the invention of a Weber that the barbecue became popular, and is now a permanent fixture in many backyards.

While many barbecues today are fired by gas, lots of people across the coast are experimenting with coal barbecues, smokers and low and slow cuisine. “Feedback from our customers has changed completely,” says master butcher Ian Farrelly, manager of Westfield Coomera’s Miller’s Gourmet Butcher, who specialise in dry-aged meat. "Talk at the butcher shop used to be about snags and chops. Now people want to buy the best meat they can afford. They want to know whether it's grass-fed, where it comes from, and they talk to each other about how they're going to cook it, what barbecue or smoker they own and how they use it. “Ninety-five per cent of the best steak in restaurants is cooked over charcoal,” Ian says. “Buy the best meat that you can afford to cook, and you’ll get the best results possible.” Ian gives us a few tips on a great home barbecue: Choose a good rib fillet, which breaks down nicely to be tender and flavoursome. (Rump is also good for the budget-minded, he says.) Rub in salt and pepper or a rub if you prefer. Heat your barbeque to 160 - 180 degrees C. Then, cook your steak for 2 - 3 minutes per side on an open grill. Serve with salad. “I absolutely love cooking with fire,” Yamagen’s Executive Chef Adam Lane tells us. “There’s something so primitive about it. At home, we have a wood fire barbecue and it’s an experience for the whole family. I chop the wood myself and build the fire from scratch, which is so rewarding. “There’s an art to cooking with fire and once you master it, it’ll reward and satisfy you time and time again.”

Valley wines New Zealand’s Pyramid Valley vineyard has new owners … but how much has changed? WORDS TONY HARPER
WHEN MIKE AND CLAUDIA WEERSING announced their intention to sell Pyramid Valley, it was – for the wine fraternity – something like a favourite sibling being put out for adoption. They had created a wine brand that tugged at the emotions of the folk that came in contact with it; Pyramid Valley was a cult in the best sense of the word, and all of a sudden it was up for grabs. But it was no ordinary selling process. The Weersings spent time with potential buyers, assessed them, talked about the things that made Pyramid Valley tick – things geological, philosophical, ecological. They didn’t intend the adopter to move the vineyard and its wines along any line far removed from what was in their minds during the painstaking process they began when they founded the vineyard. Perhaps most of the emotionally-invested figured it would end up in the hands of someone a little hobbit-like – small-time farming and biodynamics prized above cash-flow, and the wee plots that comprise the vineyards all untouched. And they would be partially right. In the end the property was sold to Aotearoa New Zealand Fine Wine Estates, a partnership between Steve Smith – the guy who put together the Craggy Range project for the Peabody family – and philanthropic American billionaire Brian Sheth. So there’s nothing particularly hobbit-like about them, but the property is in safe hands when it comes to resources and know-how.

The plots are, and will remain, intact; the Pyramid Valley home-vineyard wines will maintain their status as some of the most thrilling, Burgundy-meets-Kiwi, site-derived wines in the Southern Hemisphere. We hope. In an effort to maintain the magic of the brand they have engaged Michael Henley – previously at Trinity Hill and potentially the best bloke in New Zealand – and Huw Kinch, fresh from Escarpment, as, respectively, General Manager and Winemaker. I have little doubt that such a talented team can keep alive the things that make Pyramid Valley wines so special. The question is, however, can they convince everyone else that little has changed? Let’s rewind nearly two decades to when Mike and Claudia first took ownership of this unique property. They were looking for somewhere with a particular combination of clay and limestone, and they found it in North Canterbury, on a stunning 80 hectare site, moulded by a hill – shaped like a crescent moon – facing vaguely east, in a cool valley. Then they began mapping the slopes, digging soil samples – thousands of them – in an attempt fathom the patchwork that lay beneath their feet. Next, emulating Burgundy, they formed their vineyards accordingly. So there are no rectangles – the vineyards are random shapes, a child’s scribble; three of them
virtually touching, holding hands like triplets in the middle slopes of the belly of the crescent; a fourth sitting on the crescent’s tail, looking north, well removed from its siblings. In vineyard terms they are tiny – 2.2 hectares in total, and have been farmed biodynamically from the beginning. They are densely planted; 12 thousand vines per hectare, a crowding that belittles even Burgundy’s metre by metre 10 thousand. And these four vineyards have taken the wine world by storm. Field of Fire, Earth Smoke and Lion’s Tooth are the triplets, above-ground occupying the same site, but below ... different. Angel Flower is the loner. Earth Smoke and Angel Flower are planted to Pinot Noir, the other two to Chardonnay. Tasting the four wines is mind blowing, especially after meandering through the very good, but much more conventional, ‘Growers Collection’ (now labelled ‘Appellation’). They haven’t quite shaken the exuberance that comes with New Zealand’s abundant sunshine, and neither they should. They are, after all, New Zealand wines, and exuberance is a big part of what makes them so delicious. But these are, across both varieties, far more gently-fruited; more marked by savoury, mineral complexities than any wine outside Burgundy (or perhaps Piedmont) has any right to possess. It’s a stunning combination.
The Chardonnays (fermented in a mix of oak and amphora) have a mealy edge – sort of chaimeets-porridge – sitting under the white fruit, citrusy notes. And they are pulled taut by some serious, gum-puckering acidity. Field of Fire is finer; Lion’s Tooth more powerful. The Pinots have that same general DNA that has three toes in New Zealand and nine in Europe. But with them, the old-worldliness comes from the savoury, mushroom, forest-floor, antique-store notes. Amongst which is a core of fruit, more red than purple, and tannins ... plenty of them. They are startlingly complex wines. None of the four come cheaply. They retail for around $150; full-tote for a bottle of New Zealand
wine, no matter how good. But if you think about a European of similar quality $150 is a bargain. The current owners will be expanding the vineyard, moving into sites that Mike and Claudia had already identified. One, to the south of the crescent, facing southeast, will be a marginal site planted to Chardonnay – sparkling base perhaps in the cooler years, and table wine in the rest. With global warming flexing its muscles, the vineyard is an investment in the warmer future. And to the rear of the crescent, right where it is fattest, there lies a small valley that follows its curve. The slope beyond, that looks to the back of the crescent – already part of the property – holds a
unique soil profile that will be tested under a patch of Chardonnay vines over the coming few years. So it’s a definite time of flux for Pyramid Valley and its long-term admirers. Amazing Azamara Cove publisher, Clare E. Urwin, enjoyed a short voyage around New Zealand with Azamara Club Cruises.
RECENTLY SEVERAL FRIENDS had told us about cruising on Azamara. In glowing terms I might add. So, when an opportunity arose for my husband Bryan and I to join the Azamara Quest for a short voyage around New Zealand, we jumped at the chance. Boarding the ship in Auckland, we would visit the Bay of Islands, Tauranga, Gisborne and Wellington, before crossing the Tasman to finish in Sydney. Evidently, as far as tourists are concerned, there are cruising people and non-cruising people, with all the cruise lines trying very hard to make the former out number the latter. They are succeeding and it’s easy to see why. Once you have been on a cruise, you keep coming back for more. Bryan and I are fortunate enough to already be cruising people and we wanted to discover how Azamara Club Cruises differentiates itself from the others.

The boutique upmarket cruise line operates three 690-passenger ships, Azamara Journey, Azamara Quest and the recently launched Azamara Pursuit. With them, the destination is the hero. A wide selection of Destination Immersion programs offer guests the opportunity to ‘stay longer and experience more’. Equally, Azamara’s ships are of a size that allows them to enter smaller ports where larger vessels cannot. Therefore, with longer stays in port, more overnights and night touring, Azamara voyages do deliver authentic culture experiences across the globe. Even though destinations are the highlight, what’s onboard keeps guests coming back for more too. For instance, the Azamara Quest is an elegant ship with graceful touches such as wood paneling in the public rooms, some with original marble
fireplaces, an amazing classic-style theatre and a main sweeping staircase with brass and wrought iron decorations. Undergoing an extensive $25 million makeover in 2016, she was totally refurbished, including developing beautiful new spa suites complete with their own spa amenities. These coveted spaces have showers with glass walls giving spectacular views while their outdoor soaking tubs overlook the ocean. Our own veranda suite was compact, attractively decorated and well equipped. There was a comfortable queen-size bed, good seating area with generous desk and the usual hi-end cruise amenities such as mini bar, safe, large TV, comfortable soft toweling robes and good quality linen. The whole ship had a relaxed, unpretentious, country club atmosphere which Bryan and I thoroughly enjoyed. Service was friendly and the staff multinational, pleasant and efficient.
A nice point of difference with Azamara is that you do find yourself having interesting conversations with fellow travellers, intentionally or not. Particularly in the dining areas, where some of the tables are close enough to each other to encourage pleasantries with people you have never met before. Strangely enough we found this often happened after the first glass of wine ‌ for instance we talked to Americans who loved Donald Trump, Americans who loathed Donald Trump, we talked to fitness fanatics, retired doctors, working tradies, people from Switzerland, Kent, Invercargill and Geelong. It was fun and really enjoyable. The food onboard was great. And, as with most cruise ships, the meals seemed never-ending. Overindulgence was hard to resist, so we didn’t. Actually, quietly observing several of our fellow travellers, they obviously enjoyed the atmosphere too. There are lots of various different places to eat on the ship, ranging from barbecues and buffets to a la carte and silver service. >>

The same goes for bars, including a champagne and caviar option and the lovely cabaret lounge on Deck 5. Particular mention must be made of the two specialty restaurants we visited – Prime – a steakhouse – and Aqualina – Italian. They were both superb, with spacious surroundings. Worth noting, they are fully booked very early. A wonderful inclusion with Azamara Club Cruises is their ‘AzAmazing Event’, which takes place at some stage on shore during every voyage. We were fortunate enough to go to an evening Symphony by the Sea at the Wellington Cathedral of St. Paul. This was a concert by Orchestra Wellington – one of New Zealand’s oldest and best professional orchestras – combined with the Signature Choir, a diverse group of hand picked Pacific voices that produce a magical sound in stunning surroundings. We had a memorable night listening to well known and much loved opera overtures interspersed with traditional songs from the Pacific Islands. The organisation of this event was especially efficient. Almost all of the guests onboard wanted to attend, however transporting more than 600 people to and from the Cathedral seemed to occur seamlessly; with much good humour and little delay.

As many of you will know my lovely husband Bryan is slightly disabled following a major back operation, so he has difficulty walking any distance, or standing for any length of time. On this cruise he brought along his new electric scooter – one of those magic ones that fold and unfold by remote control making it easy to wheel around when compacted and to check in as hold luggage on an aircraft. It proved invaluable. The Quest being a fairsized ship, our own stateroom was some distance from the public areas, so the scooter was in constant use and maneuvered the alleyways and lifts with ease. In fact, during an organised visit to the bridge, Bryan was able to drive the scooter onto the bridge area itself, with the only warning being not to bang into any buttons … Non-cruising people often say that they would be bored on a cruise. Not with Azamara. Apart from shore excursions while in port you can play bridge, chess, mahjong, shuffleboard and table tennis, you can do Sudoku, crosswords, jigsaw puzzles and crafts. There are yoga classes, art classes, photography classes and acupuncture seminars if that takes your fancy. The spa onboard is lovely, so you can certainly spend hours in there very easily, even having your teeth whitened if you so desire.
And of course there are the onboard shops, the casino and wonderful nightly floorshows. Boredom will not be a problem. Happily, enroute back to Australia, the Tasman was like a millpond, with no white horses, only occasional dolphins. Because of such good weather we enjoyed some meals on deck or relaxed in the sun by the pool. Inevitably though, our cruise was finishing and to tell you the truth, leaving the Azamara Quest after only eight days seemed rather premature. There was still lots more to do, see and enjoy and we could have easily stayed onboard longer. However, as a highlight to the end of this particular cruise, sailing into Sydney Harbour in the early morning under a clear blue sky was pretty much as good as it gets. Such a stunning sight and a wonderful experience, no matter how practiced the traveller. Overhearing some flattering comments from first time visitors to Australia made our homecoming extra special.

THERE’S A GOOD reason why downsizing has become the dominant buzzword in the property market lately. While the trend has been led by baby boomers cashing in on capital growth from their large suburban homes to chase a bigger lifestyle in an apartment or villa, figures show that the broader market is also going along for the ride. The average floor size of Australian residences, which includes apartments and freestanding houses, fell 1.6 per cent to a 22-year low of 186.3sqm last year, according to research by CommSec. This figure may be a broader reflection of the surge in apartment construction in recent years, but the figures show that the average size of Aussie houses also shrunk marginally to 230.8sqm over the same period. That doesn’t mean that Australians have completely given up on living in ‘McMansions’. Australia still has among the largest homes in the world, second only to the U.S. However, the trend for the better part of the last century has been for smaller living spaces.

Census records between 1911 and 2006 show there has been a near halving in the number of people per dwelling in Australia from 4.5 to 2.4 people. The figure only increased marginally between 2006 and 2013 as millennials delayed moving out of home or moved into shared housing. However, CommSec says since 2014, the trend reversed thanks to an increase in supply of cheap apartments. It says these changes are among the factors that supported the construction boom in the past few years. “An increasing proportion of Australians – especially in Sydney, Melbourne and Brisbane – want smaller homes like apartments, semidetached homes and town houses,” says Craig James, chief economist at CommSec. “As a result, the average home size continues to fall.” Mr James sees the downsizing trend as a consolidation taking place along the east coast of Australia where most apartment construction is occurring.
“Older free-standing houses are making way for apartments,” he says. “Generation Y, Millennials, couples and small families want to live closer to work, cafés, restaurants, shopping and airports and are giving up living space for better proximity to the desirable amenities.” Victoria, Queensland and the ACT are actually defying the national trend, with the average size of houses increasing. However, the average freestanding house built in NSW last year was the smallest in 23 years, and markedly smaller than homes in Victoria which are the largest on average in Australia. “Clearly the changes in housing demand and supply, and the differences across the country, have major implications for builders, developers, investors, building material companies, financiers and all levels of government,” Mr James says. “With the average number of people in homes falling and population rising, there is a need for a greater number of smaller homes to be built.” The reasoning supports the trend towards higher density developments in major cities, especially luxury apartments that cater for downsizers.

Queensland-based developer Sunland Group sees the downsizer market becoming more influential under current market conditions as it has greater access to finance. “The apartment sector has evolved significantly in recent years and Sunland in particular has been designing for owner-occupiers for some time,” says Sunland managing director Sahba Abedian. Downsizers account for more than 70 per cent of the group’s latest development, Magnoli Apartments at Palm Beach. These are mostly buyers from the southern Gold Coast and the Tweed region swapping their family homes for large, luxury apartments. It is a similar story for the now completed Marina Concourse development at Royal Pines, with 80 per cent of buyers classed as downsizers. According to the realestate.com.au Developer Insights Series, downsizers represent one in five apartment buyers in Queensland. Some 57 per cent of these buyers are self-funded while 73 per cent have reported that they are not fazed by tighter lending conditions.
