In our main feature, fashion icon Giorgio Armani opens up his home for a very rare interview. Now in his 80s, the fashion king is showing no signs of slowing down as you will discover in this fascinating read. In other news, Tony heads to the US to taste some revolutionary ‘sour’ beer, Marj pops up to Songbirds at Mt Tamborine to sample their reimagined menu, Jason takes a seat at Paris’s much-loved La Rose de France bistro and I enjoy a quick break aboard Silversea’s new flagship, Silver Muse. We also chat to international soccer star Shane Smeltz as he prepares to don the Gold Coast United colours in 2020 and open the doors to a state-of-the-art waterfront home on Queensland’s exclusive Hayman Island. As I said, we really are showcasing the best of the best, so please sit back and enjoy this latest edition (which reminds me, our new competition prize is a comfortable Togo Fireside Armchair courtesy of Domo. Rolls-Royce Motor Cars is known for its attention to detail, but a recent project for a Swedish entrepreneur with an extraordinary passion for flowers took this to a new level. The patron, with a wife and two of four children named after flowers, challenged the Rolls-Royce Bespoke Collective to envision a car that immerses its occupants in a beguiling floral scene. Designer Ieuan Hatherall looked to the Phantom rose, a flower variant designed specifically for Rolls-Royce and grown only in The Rose Garden at the Home of Rolls-Royce in Goodwood, West Sussex, for inspiration. The result is a sanctuary of true luxury, a vision of flowers, created with a million embroidered stitches.

FASHION KING He’s one of fashion’s true greats: a designer, hotelier and restaurateur with a billion-dollar business to his name. But who is the real Mr Armani?

WORDS JANE MCFARLAND / THE SUNDAY TIMES THE INTERVIEW PEOPLE AHEAD OF HIS OUTSTANDING achievement award at the UK’s ‘fashion Oscars’, Jane McFarland was granted a rare audience at home with the fiercely private man the Milanese call King Giorgio. It’s not wholly exaggerating to compare securing an audience with Mr Armani (as he is known to his inner circle) to arranging a casual cuppa with the Queen. He rarely talks to journalists, even less so the British press, so when I’m finally granted a 15-minute conversation at home with the king of Italian fashion, solo owner of Giorgio Armani SpA, who Forbes estimates to have a personal fortune of £8.26bn, I’m excited to chat. Except, he doesn’t speak much English. It’s more than a little odd to be at liberty in his sprawling Milan palazzo while he finishes breakfast, enjoying a tour with his translator, right-hand woman and all-round head honcho, Anoushka Borghesi. But any hopes of a glimpse into his fiercely private personal life are quickly quashed: first impressions are sparse but serene. >>

FEATURE With few personal effects, it’s a lot like a luxury hotel – of which Mr Armani owns two. It smells utterly divine and the sofas are plumped to perfection. There are animal figurines on some surfaces, from panthers to reptiles – perhaps unsurprising, given his second home, an hour from Milan, has a zoo. Outside, there’s a parked Bentley, doormen and 24/7 surveillance. Across the road are the Armani offices, and nearby, his hotel, the Emporio Armani cafe and the Via Manzoni concept store. Even the hangar at Milan Linate airport bears a giant Armani logo; make no mistake, Mr Armani wields the power in Milan. Now 85, he still epitomises the three Ts – trim, tanned and toned. Despite a severe case of hepatitis in 2009, he remains in good shape, with a permanent sunkissed glow (his eye-watering property portfolio includes houses in St Moritz, the Sicilian island of Pantelleria and Antigua plus a yacht) and a shock of white hair. He works out regularly and fastidiously follows a strict, chef-prepared diet, which he likes to consume alone. Despite his somewhat diminutive stature, it’s clear Mr Armani, who slowly descends a staircase to join us, is the alpha male in the room. The Giorgio Armani Group currently employs 8,000 people worldwide and has more than 12,000 points of sale – the scale of his one-man brand is vast. There are few designers who are as entwined with their brands as he is, meaning he can run his independent business as he wishes. With no shareholders to answer to, in 2019 he added the title of general manager to his existing chairman and chief executive officer roles. It’s 9am and he is already issuing his instructions with alarming intensity. His dedicated team, which grows in number by the minute, spring into action – regardless of the request, it appears ‘no’ isn’t a word often heard at Armani HQ. He loves to work and insists it keeps him healthy. “My happy place, where I feel best, is my office. It’s where I achieve my visions, where what’s in my head becomes real and tangible,” he says. “It’s the most incredible feeling. It fills me with energy and adrenaline every single time.” Dubbed the ‘master tailor’ by The New York Times in the 1980s, Mr Armani has had an undeniable influence on fashion – he dressed men and women in soft, rounded suiting, defining the new working wardrobe of the late 20th century. If you wanted elegant yet relaxed suiting, you went to Armani. >>

“I made ease and sophisticated simplicity a powerful style tool, liberating men and women from many constrictions,” he says of his work. “That’s my achievement. That’s where I want to stand in fashion history.” Mr Armani’s female devotees are numerous – he became the go-to designer for Kate Winslet, Julia Roberts, Cate Blanchett and more, harnessing the power of celebrity long before multimillion-dollar ambassador contracts were the norm. “He was one of the first people to use actors in their campaigns, and I was lucky enough to be one of them,” recalls Kristin Scott Thomas, who first met the designer in 2003. “I have collected some pieces from various collections and wear them 17 or 18 years later.” Winslet has a similar history. “I hate the idea of wearing a dress once, but Armani’s elegance doesn’t go out of style. My daughter has her eye on a few of my gowns, so she’ll wear them one day,” she tells Style. “Stepping out on the red carpet is exciting, but it’s still a bit daunting, even after all these years. “I know if I am dressed in Armani, I’m ready for anything – his gorgeous gowns give me stealth power.” He also counts the Beckhams as fans: they starred in an Emporio Armani campaign more than a decade ago. “His creative flair and eye for detail are legendary,” David tells Style. “He is a great person and a good friend who deserves all the love and admiration he gets

28 covemagazine.com.au

from his industry, and anyone lucky enough to wear his clothes.” Mr Armani admits he fell into fashion almost by accident, working as a window dresser, then a menswear buyer, after studying medicine. “I ended up in this world because I wanted to dress real people and meet their needs, but I don’t come from this environment,” he says. Encouraged by his partner in life and work, Sergio Galeotti (who died in 1985), he founded his brand in 1975. In 1981, he launched the diffusion label Emporio Armani, followed by fragrances in 1984 (a bottle of Acqua di Gio is still sold every minute). In 2000, he brought the celebrity haunt Nobu to Italy, with business partner Robert De Niro. From haute couture to hospitality, the Armani empire now includes hotels, nightclubs, cosmetics and fine jewellery, but it’s fashion that remains his true love. “The main focus is still fashion. It’s stimulating, and every six months you have to do something new, so you have to create. It keeps you alive,” he says. “The fashion system has changed so much, I inhabit a completely different environment compared to when I started. “The pace has become faster and faster, and as designers we are forced to dish out products at an alarming rate, something I do not like that much. “On my end, I never forget that we are here to dress people with something authentic, useful and beautiful.”

The day after our interview, Mr Armani will receive the Outstanding Achievement award from the British Fashion Council at the Fashion Awards, celebrating his long-standing contribution to the industry. Previous recipients include Miuccia Prada and Karl Lagerfeld, neither of whom Mr Armani counts as a close friend. It’s the starriest night of the year for British fashion, attracting Hollywood celebrities and even members of the royal family. A reclusive figure, he admits gatherings of this kind are outside his comfort zone. “I don’t go out in the evenings. When there are events like this, I’m a good actor, so I’m going to participate,” he says, with more than a hint of irony, “but if I could, I wouldn’t do it. “I would like to stay at home with my drawings and with my seamstresses – that’s my life.” Over the years the brand has had an on/off relationship with the British press. Critics – always in search of trends – have said his collections are not modern enough. His refusal to use a stylist or invite outside expertise means he is often accused of repetition, so to be finally acknowledged by the UK feels particularly poignant. “It’s important, because British fashion is known for being quite different or particular. “For me, it’s even more important to have been recognised as somebody who changed fashion for a certain moment.”

COVER STORY

DREAM JOB

The making of the striking Argyle Dreaming necklace and ring set was a labour of love for Gold Coast jewellers, Calleija.

THE STORY OF ARGYLE DREAMING started with a phone call from Rio Tinto and an offer internationally renowned jewellers, Calleija, couldn’t refuse. Argyle had just unearthed what could possibly be its last large diamond rough ahead of the mine closure in 2020, and the 13.43ct rough had been cut into two amazing round brilliant diamonds of 3.55ct and 1.08ct. The task was to tell the story of the iconic mine through design and create a piece of jewellery worthy of carrying such iconic diamonds that have become a symbol of the end of the mine’s diamond-producing life.

30 covemagazine.com.au

– Issue 77

As such, it seemed fitting to create a piece to represent both the origin and the conclusion of the Argyle Diamond Mine. The result is Argyle Dreaming, a striking piece handcrafted in Callieja’s Gold Coast workshop. The necklace and ring set utilises 673 Australian Argyle White and Fancy Colour Diamonds from the iconic Argyle mine in Western Australia and 237 grams of gold from Rio Tinto’s Kennecott mine in the US. Designer Jenna Dickson and the team of master jewellers spent over 800 hours designing and crafting this piece under the guidance of John Calleija.

Jenna, who has been a designer with Calleija for 16 years, drew her inspiration from the glorious story of the sunburnt lands and snaking rivers of the east Kimberley Region of Western Australia where the mine is located, the place that gave birth to some of the most beautiful diamonds the world has ever seen. Starting the design breakdown on the righthand side of the necklace, there is a 3.55ct diamond featured at the base, signifying the mine itself. To the right of this diamond is a pattern that has been developed taking inspiration from the peaks and troughs of the Kimberley

showcasing the various diamond colours the Argyle mine produces. If you pay close attention, this section curves and moves with the wearer, which is a personal touch to show how we as humans have influence on our landscape and our own story. Running through the centre of the 3.55ct diamond setting, there is a selection of blue diamonds, some of which are from a personal collection from the 2012 Argyle Tender representing the vast waterways of the region, specifically Lake Argyle. Winding around the neck piece are white diamonds, leading towards the left hand side of the necklace where yellow, champagne and pink diamonds are featured, paired with yellow and rose gold, illustrating the stunning colours of the Kimberley sunsets. The inclusion of the 1.08ct white round diamond represents the people, traditions and community of the Kimberley region. This side of the necklace shines light and life onto the right-hand side of the necklace which represents the mine. Because Calleija like to push the boundaries, they decided to also make a ring to accompany this beautiful necklace. The ring itself is an interpretation of the canyons that shape the Kimberley region – a statement to the magnificence of the land. In true Calleija style, there’s more than meets the eye with every single one of their designs. With Argyle Dreaming, the main 3.55ct diamond from the necklace has a mechanism that can be unscrewed and used in the ring. The champagne diamond surrounded by pink diamonds that currently sits on the ring can then be screwed onto the necklace for a different look. When creating a piece with such significance, it was very important for Calleija to utilise responsibly sourced materials. The collaboration with Rio Tinto was an integral factor as their practices align with Calleija’s ethos and commitment to integrity. Both the materials and craftsmanship can be traced, making this an ethically sourced creation. Argyle Dreaming is a poetic rendition to the beginning and the end of the story of the most beautiful diamonds the world has ever seen. It’s a nod to the ancient land that spent over a billion years creating these diamonds and a testament of our natural history that will stay around for many generations to come. LOOKING GOOD

GOING GLOBAL, STAYING LOCAL Alpha-H; a very Australian story.

36 covemagazine.com.au

– Issue 77

NOT ONLY DOES 2020 mark the start of a new decade, but it also marks the beginning of iconic Australian skincare brand, Alpha-H’s 25th Anniversary year – that’s 25 years of clinical skincare made with love right here on the sunny Gold Coast. To better understand how this start-up brand has become the global phenomenon it is today, we need to take a look back to where it all began. In 1995 Alpha-H was a one-woman crusade for former beauty therapist, Michelle Doherty. Working out of her family garage in the northern Gold Coast suburb of Monterey Keys, Michelle would carefully dispense her products from sauce bottles into their packaging, before lovingly wrapping them up and running to the post office to distribute the parcels to their eagerly awaiting recipients. Back then, acids in skincare was a scary thought for many, but Michelle had seen the difference Glycolic Acid had made to her own skin and knew it would disrupt the beauty industry as we knew it. “I understood that I was going to have a hard time trying to convince people that Glycolic Acid was a good idea, but I also knew that these ingredients were going to be game-changers for more people than just me,” Michelle said. The year 2000 saw the creation of the now cult favourite resurfacing treatment Liquid Gold. Originally created as an at-home treatment to maintain the results of professional peels, this ground-breaking exfoliating treatment quickly gained traction and thrust Alpha-H and Glycolic Acid into the limelight. From there things really started to take off; suddenly Liquid Gold was splashed across cabs in London and big-name retailers around the world were asking to stock Michelle’s creations. Rather than being the tiny, niche brand it had once been, Alpha-H and Liquid Gold had rave reviews from beauty editors and loyal fans right around the globe. A quick Google search will return thousands of adoring reviews for this product alone. Today Alpha-H is stocked in more than 30 countries around the world at prestigious retailers including Sephora, Marks & Spencer, Selfridges and Myer, just to name a few. It’s the kind of thing Michelle barely even dared to dream of back in 1995. “Twenty-five years ago, I could never have imagined that Alpha-H would become the globally recognised brand it is today. I still have to pinch myself sometimes,” Michelle said.

“It has been an absolute privilege and honour to help people around the world with their skin concerns while working alongside our dedicated and passionate Alpha-H team and brand partners over the last quarter of a century.” Although Alpha-H has achieved global expansion, they have always valued their local connections. Unlike some other stories which shift away from their roots after success comes knocking, this one remains firmly planted on the Gold Coast. Today Alpha-H’s global headquarters, flagship skin clinic and manufacturing facility is located at Helensvale, just a few short kilometres from the home where it all began for Michelle. The company now employs a team of more than 60 and produces more than 60 products across both retail and professional-only ranges. Besides employing an ever-growing team of locals, Alpha-H also uses local ingredients and sources them from local suppliers where it’s possible; their Lime Pearl, Caffeine, Aloe Vera and essential oils are locally sourced, just to name a few. The Clear Skin range is particularly emblematic of their Australian heritage, harnessing the well-known antibacterial properties of iconic Australian ingredients Eucalyptus and Tea Tree to help calm and clear the skin of teenagers and adults right around the world who are suffering from the effects of acne.

The local connection doesn’t end with ingredients though; Alpha-H also works with local manufacturers for their packaging and marketing collateral. Alpha-H finds so many benefits to supporting local wherever possible, but a major one is the environmental impact. By utilising local suppliers and manufacturing in house, Alpha-H has been able to implement a number of changes which have enabled the brand to lessen their footprint on the environment and become more sustainable. Firstly, the locally sourced packaging has recently been updated to be 100 per cent recyclable and is made using up to 40 per cent previously used and recycled material. In addition, Alpha-H is making the most of all of the sunny weather that is synonymous with the Gold Coast and has added over 195 solar panels to the roof of their factory and head office. These solar panels reduce their CO2 emissions by almost 67,000kg each year and gives the brand the ability to produce up to 10,000 bottles of Liquid Gold in a single day using solar energy alone. Taking it a step further, Alpha-H has also implemented innovative processes which allows them to repurpose any inorganic waste to be turned into high-grade composts, premium soils, soil conditioners and potting mixes which can be used on land rehabilitation projects.

In 2019 Alpha-Hs sustainability efforts were recognised when they were announced as a finalist in the Premier of Queensland’s Export Awards sustainability category. In addition to this recognition, the brand also went home as a winner in the Manufacturing and Advanced Materials category. It doesn’t end there though; the brand is committed to becoming even more sustainable, and bringing about further positive change for the future. “We will never rest on our laurels here at Alpha-H, so we can assure you that in the future we’ll be making even more moves to make our processes and products as sustainable as possible” Michelle said. After 25 years one thing is for sure, Alpha-H is a heritage brand which will be here for the long haul. While 2020 will be a great time of reflection for the brand, it will also be a time to very much look forward to the future and celebrate with everyone who has been a part of the Alpha-H journey so far. “While we can’t give too much away of what we have planned for our 25th Anniversary year just yet, we can disclose that it will be a year filled with special celebrations we cannot wait to share with our customers and brand partners,” Michelle said.

SILVER SERVICE

Experience the essence of style, luxury and elegance onboard Silversea’s newest flagship vessel, Silver Muse.

WORDS RHONDA OXNAM ‘SHE IS SO MAJESTIC’. This is my first thought as I see Silversea’s newest flagship sitting proudly at Brisbane’s Portside dock. ‘I am so lucky’ is my second as we breeze through the check-in process and board the stately Silver Muse for the journey from Brisbane to Sydney. Derek and I have cruised before but never have I experienced the level of luxury, service and wonder we enjoyed during our three nights on board. Let’s start with the stateroom. King-size bed with luxury linens … check. Full bathroom including a bathtub, separate shower and Bulgari amenities … check. Walk-in-wardrobe, comfortable sitting area, verandah views … tick, tick, tick. The only thing missing is a television. But, no, there they are. Not one, but two, large screens discreetly hidden in the mirrors.

44 covemagazine.com.au

Stepping outside our room delivers even more treasures, with tempting bar areas, comfortable nooks to relax with a book and a coffee, and laidback deck chairs surrounding a full-size pool. I do a quick reconnaissance of the entire ship (more about her amazing attributes later) before determining that the alfresco area outside the La Terrazza restaurant, where we had enjoyed a delicious buffet lunch, is the best spot for our evening departure. Sipping a refreshing cocktail, we take in the stunning views as the Silver Muse makes her stately way along the Brisbane River and under the Gateway Bridge. It is a beautiful, balmy summer’s evening and as the rainbow of reflected lights fades in the background, we make our way downstairs to Atlantide for our evening meal.

Of course, dining onboard is taken to a whole new level. This elegant bar and grill, named in honour of the seven nymph daughters of Atlas, incorporates the best that the sea has to offer, as well as a succulent selection of steaks and an extensive wine menu. Delicious. Next on our agenda, according to the Daily Chronicles newsletter which is left in the cabin each evening, is Showtime in the Venetian Lounge. Tonight’s entertainment is provided by the very funny and very talented Bayne Bacon. He soon has the audience in the palm of his hand with his quirky anecdotes, soulful voice and amazing piano skills. A quick nightcap in the Dolce Vita lounge concludes a pleasant first day onboard. The following day is spent at sea which gave us a perfect chance to try some of the ship’s many amenities.

Sanctuary Resort Shoppe While Derek checked out the fitness centre and Zagara Beauty Spa (both passed with flying colours), I stayed busy doing nothing – relaxing by the pool, taking a couple of gentle laps around the walking track and generally enjoying a break away from technology. Speaking to our fellow travellers we discover many of them are return guests, with one couple on their eighth Silversea cruise. This speaks volumes for both the cruise line and the wonderful experiences they provide. It goes without saying that the level of service on onboard is exceptional, with each cabin allocated their own butler, who takes care of everything from dinner bookings to early morning coffee. LUXURY ESCAPES Monogrammed stationery, personalised greetings at breakfast, lunch and dinner (I suspect face recognition technology is at play here but it’s a nice touch all the same) and a minibar that seemingly replenishes itself with your favourite tipple. Our second night onboard is a Formal evening … gowns and cocktail dresses for ladies and tuxedos, dinner jackets or dark suits for the men. It is easy to imagine that you have taken a step back in time, when dressing for dinner was de rigueur, and as we gather in the bar for a pre-show cocktail it is apparent that everyone has embraced the opportunity to don their finest. Perhaps in stark contrast to our attire, this evening’s onboard show is the Rock Rhapsody, an all-dancing, all-singing extravaganza paying tribute to the music of Queen. Again, it is the little things that stay with you long after you have disembarked, and it was lovely to see the entire staff and crew honoured on stage at the end of the show. Luckily, they quickly returned to their posts and we were able to enjoy dinner under the stars, opting for the Hot Rock offering on the top deck.

As mentioned earlier, our final destination was Sydney. Having lived in the city the for over two decades when I was younger, I wasn’t prepared for the sense of awe I felt as we sailed through the heads and past the iconic pairing of the Sydney Opera House and Harbour Bridge. After taking in the spectacular early morning views from our balcony, we then headed into the city for a long-overdue reunion with some of my Sydney friends. Returning for our final night, we indulged in a delectable fusion of Asian flavours in Indochine restaurant. Again, our English dining companions were very enthusiastic about Silver Muse as they shared details of their journey from her departure port in Singapore. The next morning, we have time for a relaxed breakfast and one more stroll around the deck before heading to the airport for the flight home. Having experienced everything Silversea has to offer during this short but delightful trip, I think we need to take a leaf out of our fellow traveller’s book and plan a much longer voyage in the not too distant future.

BISTRO CHIC

Now popular all around the globe, bistros were initially a bi-product of the social revolution in France.

WORDS JASON MURAKAMI AFTER THE FRENCH REVOLUTION in 1789 Parisian chefs, who once only worked for aristocrats and the social elite, needed new livelihoods as their previous employers found themselves inconveniently dispossessed of their estates, wealth and, for some, their heads. The upheaval had a profound effect on the French social structure heralding a dramatic move away from centuries of autocratic rule to the ideals of liberty, equality and fraternity. An unexpected but welcomed bi-product of this profound social upheaval was the democratisation of food. Democratisation of food meant the ingredients and methods which were once only available to the social elite could now be enjoyed by the common man in the street. The venue for this new freedom was the bistro – a small restaurant, serving moderately priced simple meals in a modest setting using ingredients and methods once only accessible to the social elite.

48 covemagazine.com.au

– Issue 77

Bistros started to appear in great numbers in Paris in the 1890s. They were defined by the foods they served which was typically home-style cooking, and slow-cooked foods like cassoulet, a bean stew, or ragout de lapin, a rabbit stew. Today the bistro is having a resurgence. In a city which boasts more Michelin Star restaurants than any other in the world, it would seem simple, wholesome fare in simple eating houses is now the dining experience of choice for Parisians and the millions of travellers who frequent the City of Light. Paris has an abundance of bistros, but like anything, there are good ones, and then there are the exceptional ones. One such exceptional bistro is La Rose de France located at Place Dauphine. The historic heart of Paris, Place Dauphine is a small island where the city was founded by a Gallic tribe called the Parisii.

It is ‘Kilometer Zero’ of Paris, where Notre Dame was built, where Kings of France lived until the Louvre was built, where the last Templar Knight was burned at the stake and where Marie Antoinette was imprisoned. Located at the very tip of the Île de la Cité, Place Dauphine was built in 1607 at the order of Henri IV, and was named after his son, the Dauphin of France, who would later become King Louis XIII. It was built for the emerging merchant class to purchase rather than the elite classes like Henri IV’s other notable civic project the famous Place des Vosges in the Marais. The properties at Place Dauphine were quickly bought up by scientists and goldsmiths who built laboratories and shops. From the outside, La Rose de France is a quintessential Parisian bistro with quaint tables and chairs looking forward to the street and blackboard menus displaying the day’s special fare.

However, unlike most bistros, the view is something very special, overlooking the gorgeous triangular court which is the centrepiece of Place Dauphine. Once inside the interior is warm, boasting untouched 17th century stone walls with seating for only 25 patrons. The menu is limited but what options are on offer are bountiful in flavour and method. Breaking with tradition, the bistro’s take on escargot is refined, simple but interestingly without shells. Its signature dish, the duck breast, is worth the 22-hour plane trip from Australia and is simply beyond peer in the city heart. The history of Paris can be felt as you stroll through Place Dauphine. It’s the perfect spot to reflect on the dramatic and impressive history of the city that surrounds this now peaceful, relatively unknown jewel in the middle of Paris. As you look out of this quaint bistro sipping a Boudreaux from its modest but superb wine list, you can imagine watching Marie Antoinette or Napoleon strolling through the courtyard where they both may have bought their first watches in the original Piguet shop which was located in Place Dauphine. The limited number of places in this superb bistro means booking is essential. Issue 77 – covemagazine.com.au

TASTE THE DIFFERENCE Under the guidance of acclaimed chef Meyjitte Boughenout, the newly renovated Songbirds offers guests a delicious and unique dining experience. WORDS AND PHOTOGRAPHY MARJ OSBORNE THERE’S SOMETHING SPECIAL about making a journey to the country, especially when a table of food plucked straight from the garden awaits. Songbirds, in the Gold Coast hinterland, has always had that unique destination vibe. There, surrounded by rainforest, you feel a sense of ‘groundedness’; a sense of place, with food ‘in situ’. Under a passionate new owner, the freshly renovated Songbirds invites diners and guests to immerse themselves in the rainforest resort’s hyperlocal paddock-to-plate dining experience overseen by the chef of several Michelin star restaurants, Meyjitte Boughenout.. The addition of acclaimed chef Meyjitte to the iconic restaurant is part of a total renovation of Songbirds retreat, the seven-time hat winner of the prestigious Australian Good Food Guide Awards. “It has been my dream to create a fine dining experience that showcases and celebrates the beauty of the Tamborine Mountain and allows us to serve exceptional, organic food that we are really passionate about,” says Chef Meyjitte. “We want to experiment with flavours and textures, have fun with sustainable ingredients and take our guests on an unforgettable culinary journey. “At the same time, our menu, which includes à la carte and a six-course and eight-course degustation, is ever-evolving, based on the freshly-picked, seasonal food we grow,” he adds, referring to Songbirds’ own gardens and local farms from which the restaurant’s produce is sourced. Food lovers will be familiar with Meyjitte’s culinary reputation. After heading the kitchen of two Michelin star Scholteshof in Belgium, Meyjitte worked at several two and three-Michelin star rated restaurants in France before arriving in Australia in 1995. Initially taking up a position as head chef at the luxury Ritz-Carlton Hotel, Meyjitte went on to work at top Sydney restaurants before heading the kitchen of the historic Franklin Manor in Tasmania, awarded two hats in the Good Food Guide Awards and featured in Food Safari with Maeve O’Meara. It was in Tasmania, Meyjitte says, that he became passionate about the vital connection formed between quality providores and discerning customers; a relationship that is considered essential in Europe, and something he seeks to recreate at Songbirds.

Invitation Cove Travel invites you to a special presentation and information event with: Chimu Adventures and Great Train Journeys.

In 2005, Meyjitte established Absynthe at Q1 on the Gold Coast, the eatery later being named as Australia’s top regional restaurant by Gourmet Traveller in 2007, Best Queensland Restaurant for several years, awarded two hats in the Good Food Guide Awards. From his new kitchen overlooking the rainforest and gardens beyond, Meyjitte produces inventive culinary creations that delight and surprise seasoned foodies. His dishes emerge as a delicious parade: sparkling seasonal produce prepared with great technique, presented with panache. If flavour is king, then presentation is queen and we are the fortunate recipients of the gardens’ abundant gifts via the hands of the chef. Described simply on the menu, the food is anything but. ‘Frozen peas’ proves to be an intense sorbet of fresh garden peas and miso set off by the peppery bite of a fresh nasturtium flower. ‘Heirloom tomato/vanilla’ describes only two components of a beautiful dish: two translucent vegan ravioli encasing baby heirloom tomatoes and tomato oil served with cauliflower purée and dehydrated tomatoes; their garden bed boundary set by a ring of vanilla-laced extra virgin olive oil. Songbirds’ menu is complemented by an extensive wine list comprising over 70 labels from both boutique Australian producers and overseas. The cellar includes premium rare boutique Australian wines, sustainable minimal intervention wines, difficult to procure world spirits, whiskeys and cognacs. Pairing of food and beverages is overseen by internationally experienced sommelier Alex Menzies, whose knowledge and tableside service are exceptional. With the restaurant transformed in elegant charcoal-clad hues, the shimmering greenery of surrounding rainforest pops in vibrancy. It’s part of a total renovation for the Tamborine Mountain establishment which will include building two additional villas to enhance the luxury accommodation offering, their standout features including a fully suspended 360-degree fireplace handmade in the south of France. Newly clad in a colour palette that emphasises the surrounding rainforest, Songbirds offers guests serenity far away from city stress. For romance or just for pure indulgence, it’s well worth the short journey to experience Songbirds’ new life. NOTE: Songbirds offers à la carte lunch dining Thursday to Sunday, with dinner Thursday to Saturday including à la carte and degustation menus. Offers include ‘Leave it to the chef’ 3 courses Thursday to Saturday $55. Private dining, including a special 15-course chef’s degustation menu, is available by request. >> Issue 77 – covemagazine.com.au

What made you want to be a chef? The travel opportunities and learning about different food cultures. Tell us about your first memory of a dish that made you dream? In Monaco, Alain Ducasse – rockmelon with beef jelly and Portobello mushrooms. What inspires you? Everything that is around me in general, surroundings in general, hence the on-site garden at Songbirds. Which of your dishes are you most proud of? Venison with raspberry chocolate and foie gras, currently on the Songbirds 8-course degustation menu. In your eyes, what qualities make a great chef? A person who is always willing to learn, if you’re not open to learning new things, this industry is not for you. Being a team player is also essential. What advice would you give to young chefs starting out? Never give up. You will go through some hard times when you want to give up. Don’t Take a break and come back. What meal do you enjoy on your night off? A simple bowl of pasta, generally. It has to be quick and simple. What do you want diners to know about you as a chef? I want them to come and look forward to eating something different. If you could change one thing about the dining scene in South-East Queensland, what would it be? There has been a lot of progress in the past 10 years on the Coast, however it can still improve. I think we still need to understand exactly what is great, well-executed food.

WINE CELLAR

PERFECTING THEIR CRAFT Two American breweries are taking beer to the next level.

WORDS TONY HARPER IT’S WINTER IN CALIFORNIA and, contrary to almost everything I stand for, I’m here to taste beer ... not wine. But there’s method to the madness – even though California is home to some exceptional wines it can also lay claim to catalysing the craft beer movement and the explosion of India Pale Ale (IPA) globally. And, truth be told, good IPA is my go-to drink. My mission is to visit two family-owned, catalyst breweries – Bear Republic Brewing Company and Russian River Brewing. Bear Republic and I have been long-term acquaintances. Every now and again small parcels come into Australia and I pounce, particularly on its mainstay beer – Racer 5 IPA. When the stars align (very occasionally) there is Hop Rod Rye – a high octane red ale ... wow! Russian River Brewing is more like the ghost who walks. It’s a cult, it has never been sold outside America (and rarely outside California), and the only times I’ve tasted it is via the occasional bottle making the trek in someone’s suitcase. It’s the Pliny’s (both the Elder and the Younger) that built the brewery’s reputation, and Pliny the Elder – an 8% double IPA – is the heart of its production.

56 covemagazine.com.au

– Issue 77

Two weeks after I write this, Pliny the Younger (bigger, bolder, much, much rarer) is being released, and beer-nerds will be lining up to buy a bottle or two, which I believe is all any one person is allowed. I’ve never tasted it ... it’s bucket list. Russian River Brewing has the same kind of vibe as wineries like Wendouree and Rockford: it remains small, it’s highly regarded and it dances to the beat of its own drum. Here we have two breweries, both renowned for their IPA’s, and waving that West Coast USA flag quite vigorously. So imagine my surprise when I wander into Bear Republic’s new brew-pub digs to see – amongst all the IPA’s (and Bear Republic produce a wealth of them) – berlinerweisse, kettle sours, farmhouse and wild ales, barrel-aged and even brett-fermented beers (more on that later). Yikes … this is like finding yoghurt on your peanut butter sandwich. Then, two hours later, I’m being shown through Russian River Brewing’s new brewery and ... whoops, there’s a barrel hall that would shame many wineries, a wild-ferment room, a bunch of sours on the tasting board and (wait for it), plenty of brett.

So, let’s talk about that brett thing. Brett is an abbreviation of brettanomyces, a spoilage yeast that is often found in wines when hygiene gets a bit lax. It produces the slightly fecal, sweaty saddle, band-aid character that I’m sure every winedrinking reader will have come across. In wineries it is considered in the same realm as the bubonic plague. It is hard to get rid of once it has got into a winery (and impossible to eradicate from an infected barrel), and the compounds it produces when it infects a wine tend to dominate all the nuances of variety and site that winemakers and wine drinkers hold so dear. It homogenises wine with its stench, hence a bretty wine from France smells and tastes just like a bretty wine from Victoria, or Argentina, or Bulgaria. But progressive brewers love the stuff. Part of the evolution of craft beer, both production and consumption, has been the exploration of traditional styles of beer of Europe. Sours and saisons, gueze and gose, farmhouse ales and Flemish reds – I could go on but the alliteration is getting tiring – are all classic Europeans that New World craft brewers are emulating.

Photo supplied by Russian River Brewing

And many of the Euro examples come with brett as part of their DNA. Which is exactly what happened with wine, but the wine fraternity decided it was an inhibiting factor and still seeks to eradicate the yeast, while the beer fraternity has embraced it. But there is more to sour beers, barreled beers and wild beers than brett. Standard beers are safely and predictably fermented with selected strains of saccharomyces. When brewers start dabbling in the funkier stuff they use various combinations of lactobaccillus, pediococcus and brettanomyces, often alongside the workhorse saccharomyces. It makes for a more beguiling, multi-faceted beer ... at least that’s the hope. The extreme form is a wild-ferment, something very, very common amongst smaller wineries, but less common and far more risky when brewing beer. My goodness, Russian River has a dedicated room – a chapel – with a wide, shallow tank that gets filled with wort, the windows are opened to let in the thousands of strains of micro flora that exist in that part of Sonoma, and the gods decide what happens. It’s risky brewing, but surely the most thrilling, emotive, soulful journey a brewer can make. At worst the sours can seem a little like kombucha – simple and tart, and often stinky. And when that is the case, I’d rather drink kombucha and save the kilojoules. But at best they are intriguing, complex beers that demand time and quiet thought to prise apart their layers and dimensions. As much as I am a stalwart, die-hard IPA drinker (for me beer is for easy pleasure, wine is for contemplation) I dive into the sour pool at both Bear Republic and Russian River Brewing. Fiat Brux – part of the Bear Republic array – is styled on a Belgian pale ale, barrel-aged and brett infected. It’s wonderful ... slightly tart, nicely hoppy, and with the unmistakeable fecal taint of brettanomyces. Surely to would be nicer without? But that’s a wineguy’s opinion, beer folk will love it. At Russian River I try Perdition Biere de Sonoma – a farmhouse style (saison) biere de garde brown based originally on a pale ale. It’s fabulous. And Supplication – another brown, aged in old, brett-infected Pinot barrels, and now I’m starting to see the point. I want to love this beer, to cuddle it, but that niggling stench just keeps me at arms-length. I’m back at my Air-BnB now with an empty can of Bear Republic Racer 5 and a newly cracked Pliny the Elder in front of me, and I’m in my happy zone. Delving into the sour side has been an experience – surely it’s the new frontier of craft brewing – and if I taste the occasional one I’ll be OK, so long as there is an IPA to guide me home. And does IPA get any better than Pliny? Not in my experience ... it is a masterpiece. Issue 77 – covemagazine.com.au

AT THE WHEEL

ALONG CAME A SPIDER Described as a racer-for-the-road, the McLaren 600LT Spider is the ultimate supercar.

60 covemagazine.com.au

– Issue 77

WORDS CHRIS NIXON OMG! For once the abbreviated social media exclamation isn’t an exaggeration, when it describes the spectacular McLaren 600LT Spider. This is an extreme supercar, truly as exciting to drive as it is to see. What you see (in this instance) is a lime-green roadster, decked with an array of carbonfibre aerodynamic wings, foils and diffusers around the bodywork, streamlined flying buttresses behind the seats, scissor-style doors and, most impressively, a pair of thick exhaust pipes emerging not underneath but above through the engine cover. You look at this spectacular car and think, wow. Or, Oh. My. Goodness. The 600LT isn’t a boulevard poseur … it’s all business. There are plenty of more-appropriate McLarens available if all you want is a sporty cruiser. This one is for exclusive track days and spirited early-morning country drives when the car inhales horsepower-boosting cool air and the roads are empty. A twin-turbocharged, 3.8 litre, V8 rear-mounted engine drives this missile. It produces 441 kiloWatts – 600 old-fashioned horsepower – and launches the car from rest to 100 kmh in a blinding 2.9 seconds. Claimed top speed is 324 kmh, or 201 miles an hour. At 1297 kg, it weighs almost as little as a Toyota Corolla, but has six times the power. The engine uses what’s called a flat-plane crankshaft, which results in a shrill and sophisticated exhaust sound completely unlike a typical V8. With the pipes poking up behind your ears, the response to flooring the accelerator is utterly visceral. So too is the rest of the driving experience, as far as we can tell within the limits of public roads. Planted on massive Pirelli tyres designed just for this car, it whips through corners as if on the proverbial rails and perfectly balanced. The aerodynamics help a lot, at 250 kmh adding 100 kg of downforce at the rear, or the equivalent of having a rugby player tucked in the boot (except there isn’t one; only in the front). When it’s time to slow, big carbon-ceramic – not steel – brakes wipe speed in an instant. At town speeds, however, the brakes can be noisy and need practice to modulate smoothly. The steering is like any McLaren I’ve driven, near-perfect. It’s light enough for city driving yet always responsive and tactile. You could feel yourself drive over an ant. Why can’t more cars be so sensitive? And I must praise the ride comfort. Because of its light weight and the rigidity of its moulded, one-piece carbonfibre chassis, this racer-for-the-road rides bumps incredibly well and nothing like a typical hard-core sports machine. Sometimes with high-end cars you pay more for less and that’s sort of the case with the McLaren 600LT, which has a list price just less than $500,000. The cabin is comfortable but verging on spartan. I love it. There are no buttons on the steering wheel and controls are kept to a minimum and simple to use. Again, evidence the 600LT is built for business. This credo includes the seats, which are thinly-upholstered, onepiece moulded buckets. Fine when you’re in and belted, but broad-based occupants might need help to exit. Wider seats are an option. As a rule, McLarens are docile when you need them to be and ferocious when you want them to be. That’s certainly true of the 600LT Spider, though it tends toward the ferocious end of the spectrum. It’s a fabulous car to look at and to drive. When other McLarens become a little run of the mill, this one should be on a pedestal – or a podium. Issue 77 – covemagazine.com.au

ROLLING INTO BRISBANE

Rolls-Royce recently re-located its Queensland showroom to Brisbane.

WORDS CHRIS NIXON THE GRANDLY-NAMED ROLLS-ROYCE Motor Cars Brisbane has been opened in the Fortitude Valley-Newstead luxury car precinct. The state-of-the-art showroom is in highhorsepower company next door to a Ferrari dealership and a few hundred metres from Bentley, Maserati and Lamborghini. Rolls-Royce contends the capital not only has a healthy number of current and potential owners, but also is a better hub for servicing the rest of the State. “We regard Brisbane as a new luxury destination hotspot that has become an increasingly attractive residence for our customers,” said Rolls-Royce’s Asia Pacific Regional Director Paul Harris, who visited from Singapore to help launch the business. “It now competes with some of the world’s wealthiest cities as a most desirable place to live and work.” Current Rolls-Royce prices start from $595,000 with an unprecedented selection of

62 covemagazine.com.au

– Issue 77

models now on offer – Phantom saloon, Cullinan SUV, Wraith coupe and Dawn convertible. (The Ghost saloon has been discontinued, but will be replaced.) The latest optional version of the Cullinan, called a Black Badge, and a stunning specialbuild Phantom graced the showroom for its official launch. In a market packed like never before with super-luxury and super-performance makes, Rolls’ mantle as the ‘best car in the world’ may be less clear-cut than it was, but there’s little room for doubt when you see the cars close-up. They’re magnificent and show what traditional automotive craftsmen and up-to-the-minute engineers can achieve together when money is no object. The Cullinan is the vehicle we’ll see most. Since Rolls-Royce joined the irresistible trend toward SUVs in 2018, the Cullinan has brought to the brand many new owners who couldn’t see themselves in more traditional models.

The ‘base’ Cullinan is listed at $695,000, but Black Badge editions likely to attract younger buyers will cost ... ahem, more. The upgrade includes a more powerful V12 engine, with 441 kiloWatts of power and 900 Newtonmetres of torque, plus chassis changes that deliver a sharper driving experience. Black is the theme inside and outside, with carbonfibre trim highlights, massive blackchrome 22-inch wheels and, most prominently, a black-chrome radiator grille complete with black flying lady mascot. Rolls-Royce imported the left-hand-drive Phantom extended-wheelbase (EWB) saloon just to demonstrate the maker’s bespoke capabilities. After all, when one buys a car like this, who can resist a few personalised extras? A ‘base’ Phantom EWB costs $990,000 before on-road charges in Australia, but this example asked $1.65 million – effectively the price of a second Rolls-Royce just in options.

ACHIEVE FINANCIAL FREEDOM AND AN ABUNDANT LIFE

The luxury, attention to detail and quality are mindblowing. A silver-handled umbrella stowed in a rear door features an air-dryer so it can be put away wet. The cabin hood-lining incorporates 1300 pinhead LEDs that produce a starlight effect at night. Doors open and close with electric motors. The rear cabin, called a privacy suite, is separated from the chauffeur’s pew by a glass partition that changes from clear to opaque at the touch of a button. An intercom connects passenger and driver, window blinds complete the privacy and video screens and a crystal-glass bar provide the ‘entertainment’. In this cocoon, you could arrive at a destination unaware you had even been travelling. The above describes barely half the features of this astounding car. But it’s enough to warrant a visit to the Brisbane dealership.

MODERN SANCTUARY

The owners were so impressed with Romark Design Constructions rebuild of their Sanctuary Cove holiday home, they decided to move in permanently. THE BRIEF WAS SIMPLE: to take an original 1980’s harbour villa and revision it as a ‘modern and minimalist’ millennial home. Located in one of Sanctuary Cove’s most sought-after precincts, the property also needed to make full use of the stunning marina views, be low maintenance and provide functional, familyfriendly entertainment areas. After extensive research, Singapore-based owners Colin and Alison Sampson chose local Sanctuary Cove resident, luxury home builder and renovation experts Romark Design Constructions to undertake the project. “There were two main reasons we chose Romark,” explains Colin. “Firstly, we wanted a bespoke builder and someone who hadn’t done a previous renovation on one of these villas so we could get a fresh approach rather than a cookie-cutter build. “And secondly, because we were so far away, trust was an incredible issue.

64 covemagazine.com.au

– Issue 77

“When we met the Romark team and discussed what we wanted it just felt right.” With Colin and Alison stationed overseas for most of the build, the project became a lesson in logistics, however, Romark owner Mark Settree is not fazed by the process as this is one of the services he has been providing to his international clientele for over 30 years. “Colin and Alison required all services to be provided by Romark – from the architectural and structural design, to the building approvals and the construction itself,” says Mark. “We are renowned specialists for our turn key service, so they didn’t have to worry about anything, we did it all.” Mark also worked closely with the couple to ensure they were in constant contact throughout the entire preliminary process as well as the build. “Mark was available at all times, and we used email, Skype and What’s App to stay in touch right through the project,” says Alison. “We were involved in every, single decision, we understood what was going where and what it was going to look like. “And when we did come to inspect the home, there were no surprises, everything met our criteria perfectly.” While master builder Mark was on hand to oversee the entire project, his son Jason took on the role of site manager. “Jason’s design flair is exceptional,” say the Sampsons. “Whenever he hears the word ‘no’ it just inspires him to find a different way to do something.” Another challenge were the strict body corporate rules in place within Sanctuary Cove. Again, Romark were on hand to guide the owners through the process. “Mark worked incredibly hard to push the boundary to get all the necessary approvals we needed and when we couldn’t be there, he attended meetings on our behalf,” Colin explains. “In many ways we became a test case for the Body Corporate and have paved the way for others who want to do a similar rebuild. “There were a couple of instances where we couldn’t get permission/approval on design elements we wanted, so Mark and Jason came up with alternative solutions on site that actually work better than our original plans and in the end it was a win-win situation.” Now, after meticulous planning and completion of the build, the home is the epitome of minimalist chic. Everything from the stunning floor to ceiling glass concertina doors that bring the outside in to the state-of-theart automation system that can be upgraded and improved as technology advances, meets the exacting standards set by both the owners and the builder. In fact, rather than using the villa as the intended holiday home, the couple are so impressed with the end result they have relocated permanently. “Romark helped us every step of the way, explaining the processes and ensuring the finished project met – and in many cases, exceeded – our expectations,” Colin and Alison insist. “You couldn’t ask for a more professional approach and the fact that they are a local, family-owned business made this build a real labour of love. “We are very grateful for everything they have done to make our vision a reality.”

LONDON LANES Introducing Lane by Mutina Ceramics.

LANE is the result of a conceptual analysis of colour, interpreted through a detailed study of the neighbourhoods and architecture of London, a city that has always been a source of inspiration for designers. Available exclusively to ace stone + tiles, the range is composed of three styles: Base, Poly and Mono. The Base version comprises five colour palettes (White, Black, Grey, Aubergine and Terracotta), each of which is formed by a mix of different tones. Like facades in London, where a number of strong colours stand out against the background shade, added to Poly are a number of elements in contrast to the previous ranges, while Mono is the optical version and is available in White and Black only. The collection comes in the 7.9 x 16cm size and is suitable for indoor and outdoor settings, on both floors and walls. Lane is designed by Industrial Design team Duo Edward Barber and Jay Osgerby, who opened their London studio in 1996. Their multidisciplinary approach pushes the boundaries of industrial design towards art and architecture. “Lane tiles reflect the nuances and shifts in colour typical of London, echoing its atmospheres and with a broad colour range that allows for an endless variety of possible combinations, from delicate to more lively and engaging, leaving plenty of scope to express individuality,” said Edward and Jay. The pair joined the Mutina team in 2013 and designed the Mews, Mistral, Primavera and Puzzle collections. Their work also includes collections for Knoll, Vitra, B & B Italia, Cappellini, Venini and Flos, limited edition pieces and commissions such as the London 2012 Olympic Torch and the £2 coin designed for the Royal Mint. The first extensive monograph on the pair was published by Rizzoli New York in 2011. They are both Royal Designers for Industry (RDI) and Honorary Doctors of Art. Their work is included in the permanent collections of museums around the world, such as the V&A and Design Museum in London, the Metropolitan Museum of Art in New York and Chicago’s Art Institute.

DESIGN DESTINATION Gold Coast-based design company and furniture retailer, Lynton & Forrester, has become the newest retailer to join the Bundall Road furniture precinct.

OFFERING A PERSONALISED design service and an eclectic range of quality merchandise, Lynton & Forrester has quickly established itself as a premier design destination on the Gold Coast. Both owners and partners, Matthew Lynton and Anthony Forrester have a passion for stylish furniture and accessories and have had extensive experience in the design industry. After noteworthy tenures at the most prestigious design firms and retailers, the pair decided to amalgamate and create an Emporium to display their diverse sense of style and flair. Aiming to establish an atelier to work with clients on special commissions and to highlight the glamorous looks both owners love, it seemed an obvious choice to select a prime position in Bundall Road. The flagship store is now the main showcase of the elegant and sophisticated ranges on offer to clients from all over the world. Operating under the philosophy that ‘just one piece can transform a room’, both partners bring to the table different skills and work together on larger projects and individually with clients. Matthew has trained in New York and Brisbane in Interior Design and Architecture. His aesthetic is for individuality, using rare materials, stone and beautiful timbers and sumptuous fabrics. Inspired by the designers of the 20’s and 30’s and classical design, Matthew’s style reflects his appreciation of quality craftsmanship, with a deep understanding of looks that last the test of time. “I aim for the right proportions and that magical ‘look’, however it’s not perfection I seek, it’s charm and strength and rooms that speak of their owners’ style” he says. “It takes artistry, intellect and logic to make it all work.” Anthony prefers to work instinctively, choosing and designing diverse interiors and styling the rooms with his unique flair and knowledge of the latest trends, including furniture chosen and designed by him. With a highly creative eye, he enjoys pairing unexpected materials including metals, gold, chrome, silver leaf and mirror. While discerning about stock, Matthew and Anthony aim to cater to a wide market, choosing items to reflect the diverse population and taste of the Gold Coast. They currently stock Moran Furniture, Maison & Objet, Designer Boys, Deluxe Edition USA and Casa Mobelli Collection, importing direct from the United States, Italy and Spain. Lynton & Forrester are open from Monday to Saturday, with Design Consultations by appointment.

CONCEPTUAL SPACES Tim Roberts Design offer tailored design and construction management solutions. WE ALL LOVE THE FEELING of a well-designed home but we also hear the horror stories of bad layouts, budget blowouts and poor construction. Resolving these issues is why Tim Roberts became a designer and construction manager after many years as a successful builder. Operating under the philosophy to ‘renovate, not detonate’, Tim believes working with an existing structure can be a more cost effective and quicker process while also minimising your footprint on the environment. With a highly detailed portfolio of renovations and new builds under his belt, Tim Roberts Design has a proven record of transforming the appearance and function of existing homes incorporating innovative design without the major groundwork costs of a new home. Now based on the Gold Coast, Tim has worked across the entire east coast of Australia for over 30 years, completing truly individual homes for a select clientele from the Mornington Peninsula in Victoria to Stradbroke Island in Queensland. Starting as a carpenter apprentice at 16 years of age in Sydney, he pursued the craft of designing and building unique bespoke homes and apartments, both renovation and new build. In his 20s, Tim lived in Japan and in his 30’s travelled to Italy and France to further develop his architectural and interior styles. He has also travelled to America, studying the work of Frank Lloyd Wright and Mies van der Rohe. Tim’s one-to-one approach, collaboration philosophy and innovative ideas bring your vision to life. This was perfectly executed in 2019 with the completion of a major waterfront renovation in Sanctuary Cove. The brief to Tim was for the house size to remain, however, the owners wanted to flip the living and sleeping areas while adding two additional ensuites. The result is a modern, light-filled open home with better entertaining areas, all taking full advantage of the panoramic view. On Sovereign Island Tim was brought in to manage the construction of a pool and deck renovation. After viewing the drawings, Tim felt the design was not suitable to what was required. After discussions, the client admitted they fell in love with the original designer’s 3D images but still did not fully understand the plan. Once this was explained properly, Tim revised the design in full, creating a far superior result. “It is all about the spaces and tailoring the perfect solution for the client,” he says.

POSITIVE

MARKET Value gap widens amid a rapid rebound.

WORDS NICK NICHOLS THE NATIONAL PROPERTY MARKET regained some confidence towards the end of last year as Sydney and Melbourne house prices grew at the fastest rate in almost two decades. While the end-of-year boost helped these markets recover some of the ground lost over the previous year, the pace of growth led some analysts to forecast property prices in Australia’s largest cities could hit record highs in the first quarter of this year. Not everyone is convinced, though, with some economists such as NAB’s Alan Oster forecasting that the rebound will temper somewhat in the new year and that record prices may not be achieved until the end of 2021. However, the strength of the latest rebound has raised the spectre of a value gap that has

74 covemagazine.com.au

– Issue 76

been widening between Sydney and Melbourne and other state capitals over the past decade. According to CoreLogic’s head of research Tim Lawless, this could spell more good news this year for cities that have been benefitting from value buying in recent years. “If growth continues across the most expensive capital cities, this value gap will continue to grow, however, as affordability constraints become more apparent in Sydney and Melbourne, other cities where housing values are more affordable are likely to become more attractive,” Mr Lawless says. The recovery in Sydney and Melbourne has been led in part by a shortage of listings. This has been evident on a national scale with Domain reporting a 14 per cent fall in listings across the country last financial year.

The shortage of properties for sale in Sydney and Melbourne has been described in some quarters as acute. Meanwhile, it should be noted that luxury home prices have been leading the rebound in the major capitals, as revealed by the Knight Frank Prime Global Cities Index for the third quarter of 2019. Prestige properties in Sydney rose 2.6 per cent over the year, while Melbourne prices were up 2 per cent. The Prime Global Forecast 2020 report is predicting even bigger gains this year with Sydney and Melbourne expected to rise 4 per cent and 3 per cent respectively. While 2020 forecasts for the top end of the market are not available for Brisbane and the Gold Coast, the Prime Global Cities Index reveals

Queensland’s biggest cities still managed to outperform the global average with growth of 2 per cent and 1.3 per cent respectively this past year. The steady performance puts the spotlight again on south-east Queensland whichm traditionally benefits the most from the value gap phenomenon. While Mr Lawless sees limits to an exodus from Sydney and Melbourne where jobs are more likely to be found, conditions are improving for the rest of the country. “The past five years has seen almost three-quarters of Australian jobs created in NSW or Victoria. “More recently, this trend has started to shift as jobs growth slows across the two largest

states and picks up across some of the smaller states,” he says. Tania Moore, the joint head of Knight Frank Gold Coast, notes a number of positives for the Gold Coast property market in 2020, led by the federal government’s $1.9 billion boost for Queensland infrastructure projects, including the Gold Coast light rail extension. “An uptick in residential values which has been driven as a direct result from a reduction in interest rates and an increase in confidence and has been witnessed across the city, supported an improvement in sales rates,” she says. “While the business community remains cautious, there is a degree of optimism for 2020 largely because of these factors.”

Ms Moore is forecasting an increase in off-the-plan apartment sales this year, supported by the strength of interstate migration. “The trend of downsizing is also something we see gaining momentum in 2021 and 2022 in particular, with people – particularly our ageing population – selling larger homes and moving into quality beachside apartments in retirement.” While the state election looms as a hurdle for the Queensland market in October, Ms Moore says the impact will not be as severe as the federal election proved to be in the first quarter of 2019.

The prestigious property was developed by real estate and hospitality investment company Mulpha, who are responsible for some of Australia’s most significant and celebrated luxury properties and is marketed by Carol Carter of Queensland Sotheby’s International Realty. “If you were to buy land and undertake the build, it would take approximately three years to complete, and cost considerably more. This really is a unique opportunity.” Carol, who has been responsible for selling some of The Whitsunday’s most significant real estate, agrees. "Australia, particularly North Queensland and The Whitsundays, is very well regarded by buyers from all around the world," she says. "This property will undoubtedly garner a high level of interest from the high-end market, from both overseas and Australian buyers. “This is a very attractive destination, and more broadly, Australia is seen as a safe investment. Safe politically, economically and personally. “The Whit sundays of fers endless opportunities to explore the Great Barrier Reef and the islands. LIFESTYLE CHOICE

Queensland Sotheby’s International Realty relocates to a stunning new lifestyle precinct in Brisbane.

FURTHER CEMENTING its position as the leading luxury real estate agency in Australia. Queensland Sotheby’s International Realty (QSIR) has relocated its Brisbane head office to the acclaimed new Lifestyle Centre site at Breakfast Creek Wharf. QSIR joins some of the country’s most exclusive high-end brands at the luxury precinct, including the largest Mercedes-Benz showroom in the Southern Hemisphere. The world-class flagship Breakfast Creek Wharf facility from Hong Kong-based multinational conglomerate, Lei Shing Hong Limited (LSH), sets a new precedent in commercial space, bringing together a host of retail and lifestyle features. Covering an entire waterfront block on the city side of Breakfast Creek at Newstead, the five-level, 32,712-square-metre Lifestyle Centre clearly demonstrates LSH Group’s vision and capability in the development of integrated luxury lifestyle precincts.

Architecturally designed by Cottee Parker, the site has been heralded as a ‘game-changer’ for the Australian retail market and a reflection of how luxury brands of the future will integrate and place a strong emphasis on lifestyle. Paul Arthur, owner and CEO of QSIR, sees LSH Property Australia’s investment in the Breakfast Creek location as a statement about its confidence in the future of Australia and, in particular, Brisbane. It is a confidence he shares. “We have always been very bullish on the Queensland market,” Paul said. “Brisbane, in particular, continues to mature and grow as a city. “This iconic Lifestyle Centre, which is being delivered by one of the world’s most prestigious brands, shows enormous confidence in the city and its luxury market. “QSIR is a perfect fit for the location, where we can align ourselves with other prestige brands, such as Mercedes-Benz Brisbane, to

service a similar clientele so there is a great synergy for us to be in that location, offering us an opportunity to cross-collaborate in a way that I believe has never been done before, certainly in the Australian market. “The traditional real estate shop is dying, customers – especially customers in the luxury market – expect to be serviced in a more contemporary way.” Paul said that in addition to the opportunities the relocation would afford QSIR’s clientele, there would also be a host of benefits for staff. “We aim to be an employer of choice in the real estate market, and this location will only enhance that. “From a business perspective, the location gives our sales executives a significant advantage in the luxury market. “In addition to this, the Breakfast Creek Wharf development has a significant focus on health and wellbeing, which is in alignment with our commitment to our staff.” Issue 77 – covemagazine.com.au

SAFE & SOUND Established in 2009, Sound Property Management now handle all your real estate needs.

SOUND PROPERTY Management licensee Sandy Davies has been at the forefront of the property management industry for over 30 years. As an owner/operator she has a wealth of experience within the real estate sector and has now decided to put that knowledge into practice, expanding her business in to sales. “After three decades of property management I am looking for a new challenge and I really enjoy the prestige sales side of real estate,” Sandy explains. “We have always been a leader in property management so it seemed a logical choice to move into selling as well. “In order to develop this side of the business, I have downsized my rent roll and sold the western division to concentrate on the Gold Coast. “I’ve been living at Hope Island for six years so I know the area and I know the people.” As a boutique agency, Sound Property Management concentrate on marketing one property at a time so the vendor knows they are getting dedicated, personal service. “The clients get 100 per cent of my time and the team generate all our leads into achieving the best result for them,” says Sandy.

96 covemagazine.com.au

– Issue 77

“When they sign with us, they know the sales agent is the owner of the business and they will be liaising directly with the licensee.” Concentrating on prestige homes, Sandy has already had success with a property in COVA selling under the hammer at auction after just 25 days on market. While the team mainly cover the Gold Coast – from Ormeau to Coolangatta – they have a presence in inner city Brisbane and down into New South Wales as well. Sandy also works closely with Queensland Auction Services to ensure vendors receive the best results when selling their property. “Our main goal is selling your home in quickest possible time for a price you’re satisfied with,” says Sandy. “Being a private agency allows us to give you that one-on-one service to manage and sell the property the way you would like us to.” On the property management side, Sandy and her small, experienced team pride themselves on ensuring you achieve the highest market rent for your investment. Again, Sandy personally handles all the inspections and applications, maintaining

impeccable standards so your property remains in peak condition throughout the tenancy. “We have created a specialised service which focuses on executive leasing and prestige property and we are focused on delivering consistent levels of service to both property owners and tenants,” Sandy says. “Many of the rental property owners have been with the agency for 10 years or more which speaks volumes for the service we provide.” With the recent move into sales, Sound Property Management now covers all bases when it comes to real estate, however, their personal approach remains the same. “We are dedicated to our clients' needs and won't stop working until they are completely satisfied,” Sandy says. “We believe in straight forward, honest communication and delivering a pleasant and stress-free journey into the property world. “We have invested heavily to ensure we have the best people, leading edge technology and smart business processes that together combine to continually improve the quality of service,” she says.

FACTS & FIGURES

TRUTH OR FICTION

Andrew Wiltshire, Legal Practitioner Director at Wiltshire Family Law, exposes some common Family Laws myths.

UNLIKE MANY other areas of law, most people have a basic understanding of family law and roughly what it entails. In fact, it’s a pretty safe bet most people have heard of terms such as divorce, property settlement, parenting dispute and pre-nuptial agreement. Family law principles are commonplace in households due to the dramatisation of divorce on TV, in movies and due to the sheer volume of Australians who have been directly or indirectly involved in the family law process. Sadly, everyone knows someone who has been divorced, and because of this, I seldom attend a work function or social event where I do not end up in a conversation with a person about their family law problems or that of one of their friends. These chats always highlight how stubbornly some family law myths have loitered in our community; despite most of them having never been law in Australia in the first place. Here’s a few of the more common myths I hear on an almost daily basis: MYTH 1: You are in a de facto relationship once you have been living together for 6 months. (FALSE)

98 covemagazine.com.au

– Issue 77

A de facto relationship exists as soon as two people are living together as a couple on a genuine domestic basis. Whilst many factors are considered when determining the nature of the relationship, none relate to a specific timeframe. The question of time is only relevant when it comes to establishing if a person has a right to seek a property settlement after separation. Typically, a person can only make a claim after having lived in such a relationship for two years or more. That said, there are several exceptions to this which would allow a person to seek a property settlement well under two years, for example, if there is a child of the relationship. MYTH 2: There is a presumption the children will live with Mum after separation. (FALSE) When determining a parenting dispute, the paramount consideration is the best interests of the children. The Family Law Act sets out a range of considerations when determining what is in the best interests of the children; whilst there are numerous considerations, none relate to the gender of the parent. MYTH 3: The property will be split 50/50 as soon as we get married. (FALSE)

There is no presumption of equality after separation, nor is there a presumption the wife will get more (another common myth). Rather, there is a well-established process for determining a property settlement that takes into account the assets available for distribution, the duration of the relationship and each party’s financial and non-financial contributions and their ability to support themselves taking into account their financial circumstances after the assets have been divided. MYTH 4: The other party can’t touch my property or business because it’s not in my name. (FALSE) I have been involved in numerous cases over the years where people have wrongly believed that their significant other can’t touch their business or farming interests in the event of separation because a company or trust owns them. The fact is property includes anything to which a party has entitlement to, legally or beneficially. In short, don’t think for a second your property is out of reach from your spouse in the event of separation just because it’s not in your name. The only way to protect yourself in this regard is to enter a Binding Financial Agreement (either before the relationship or during the relationship).

SPORT REPORT

KICKING GOALS

One of the Hyundai A-League’s greatest-ever goal scorers, Shane Smeltz, will don the yellow and blue of Gold Coast United again in 2020.

IN A REAL TREAT for local football fans, Shane Smeltz will showcase his goal scoring prowess in Queensland’s National Premier Leagues competition this coming season. The Kiwi international’s decision to come back to the Coast, a place he’s long considered home, has arrived from an opportunity outside of football. His return to the park stems from a hunger and belief that he has a lot still to offer as both a player and mentor. “I’ve been coaching at Sydney FC for the past few years and an opportunity came up for myself and the family outside of coaching which has brought us back to the Gold Coast,” explains Shane. “That’s allowed me the time and opportunity to pull the boots on again. “At heart I’m a Gold Coast boy. I grew up here. I played a lot of my youth football here. “When I think back obviously there’s some fantastic memories here at the club, at Gold Coast United, so it’s a great little story in itself.”

100 covemagazine.com.au

– Issue 77

Having remained close to the game in a coaching capacity since his professional retirement in early 2018, Shane believes that a stringent training and exercise regime has him in good shape to tackle another competitive season in 2020. “I’ve always looked after myself, I pride myself on that,” he says. “It’s something I’ve done all my career. I take great pride in setting and achieving certain standards and that’s served me well.” “This season, I’d like to win the league. It’s that simple. “I always want success. I’m a competitive person,” he admits. The two-time A-League Golden Boot winner and one-time Johnny Warren medalist earned 58 international caps for the All Whites between 2003 and 2017, bagging 24 goals in a stellar international career that included the goal for New Zealand in their famous 1-1 draw with Italy at the 2010 World Cup.

An old-fashioned, predatory No.9, Germanborn Gold Coast-raised Smeltz excelled in a first-rate club career that spanned 18 seasons and saw him ply his trade in 6 countries. He’s probably best remembered though for his exploits domestically where his 92 goals from 190 appearances sees him second on the all-time A-League’s goal scorers list. “I guess the art of scoring goals comes from your journey at the start,” he concedes. “I was a midfielder and it just happened to be I was scoring enough goals to justify being used upfront. “Ever since then I’ve made it my aim to hone that art of scoring goals and it’s something I’ve loved.” A product of Palm Beach Currumbin High, Shane played for several local clubs as a junior before working his way into the QAS, where his professional football journey blossomed. “I would’ve been maybe ten when I started and my first club was Nerang,” he recalls.

“Then I moved around a little bit and had a few different clubs – Broadbeach United was one junior club, Surfers Paradise for one season. Then we moved to the south Coast and I was playing for Palm Beach as well.” For United’s coach Kristian Rees, the chance to reunite with his former teammate is something he’s very happy about. “As a coach, it’s exciting to have someone like Shane involved because he’s not only going to help on the field scoring goals, but the experience he brings to the players around him, especially the young players, that’s what’s vital for me and for the club. “Adding Shane as well as Sam Smith, and we’ve got Justyn Mckay and Michael Thwaite as well, there’s a real solid core of experience there and that’s important if we want to achieve results and provide the right environment for development too. “It’s key that the younger boys see what these ex-pros are about and how they go about things and hopefully a bit of that rubs off on to them.” Shane himself shares the coach’s sentiments. As well as being eager for on-field success, the striker is keen to play a role in mentoring the next generation of budding professional players. “For me it’s about giving back,” he says. “One of the biggest things I’m looking forward to is helping the youth players here at the club,” he admits. “It’s a club and and football community I’m passionate about and I’m keen to be involved.”

AQUARIUS 21 Jan – 19 Feb

Prepare for a more outgoing phase. The Leo full moon on February 9 will open doors to new friendships and collaborations. You may begin a fresh chapter at work that will be more dynamic and potentially more lucrative, too. You may need to commit more to a work or personal project at the end of March to broaden your experience. You may be drawn to let a bad habit go.

This is an ideal time to fix areas of your life you are unhappy with. Finances and your personal life will benefit from a jolt of good energy around the full moon on February 9 and you are best to sort out paperwork before mid-February. While you put your plans in action, the more realistic you are the better. Avoid being swayed by someone’s stubbornness; be flexible.

SCORPIO 24 Oct – 22 Nov

The Pisces new moon on February 24 and the supermoon on March 10 will put the focus on making an agreement with someone you hold dear, or regarding health and work. As Mercury will be retrograde in Pisces from mid-February for three weeks, you are best to complete complex arrangements before mid-February and to review circumstances step by step thereafter.

CAPRICORN 23 Dec – 20 Jan

Your sign’s ruler, Mercury, will be retrograde from mid-February for three weeks, so aim to complete key arrangements for travel or work contracts and paperwork before then if possible. Some interactions may be difficult or even heated towards the end of February and in March, so aim to keep the peace, especially at work – unless you’re willing to burn bridges!

You’ll appreciate the opportunity to establish more stability in your life. But this may involve a contradiction because to find more stability you may need to make changes that will mean an interim lack of stability. Developments in February could help you to find more stability; but in March, circumstances may lead you to consider your options afresh. Be guided by facts.

The Leo full moon on February 9 signals a fresh phase in your personal life. Be prepared to update your looks and to turn a corner in your personal life so that your daily schedule is more pleasing. Look after yourself; accommodate others’ wishes, but also put your own needs on the table. You will gain the chance to boost finances and self-esteem as a result.

You prefer to make choices based on research and rarely make snap decisions. And yet over the next two months you may be tempted to throw caution to the wind and simply follow your heart. The principle areas of change are your home life, work or general direction. The draw to your favourite activities; the chance to travel, explore new ideas and ventures will be hard to ignore.

You’ll feel increasingly reinvigorated over the next two months. If you have felt the need to reinvent your daily life so it is more inspired, this is your chance. You may also get the chance to alter your usual routine to add a spritz of excitement to life. Your home life is likely to benefit as a result. Ensure you are clear about shared duties and finances to avoid debt.

A sense of being stuck needn’t characterise the next few months; if you do feel restricted, try to see circumstances as an opportunity to build a solid base in your life. Be encouraged by new options in February, especially at work and with family. Events in March will enable you to plan ahead. Be inspired but practical and ready to take steps into something new end of March.

As you are such a dynamic person, the next two months may feel frustrating, as the pace is likely to slow down and you may see this as an obstacle. Consider seeing the slower pace as the opportunity to put things on a fresh footing, not only at home but also at work if you feel a change is necessary in your general activities. Above all, avoid gambling – it’s likely to backfire.

You will have four planets in Capricorn from mid-February until March 22, so are likely to be busy. Avoid allowing intense emotions to overcome you, especially at the end of February and early March; be practical and you could make great progress. After March 22, you may experience a fresh take on circumstances, especially in your personal life and financially.

You may find a new way to organise your daily life at the end of February, due to an opportunity to embrace a fresh circumstance. The supermoon on March 10 will shine a light on new options in your career or your general direction in life. Ensure, in the lead-up, that you consider new options carefully, and are ready to embrace something new, but avoid impetuous moves.
