The annual Friends with Dignity Christmas Drive is in its fifth consecutive year, with the charity calling out to the public to donate new and unwrapped gifts, including gift cards and vouchers, for men, women and children. WORDS KEN SUMMIT / THE INTERVIEW PEOPLE You’re very busy right now with the new record coming out? Yeah, surprisingly busy. I thought I was going to get some time off when touring got cancelled. I am very, very busy promoting the album. How much have you missed the tour bus this year? Oh, I miss touring so much. I’ve always played. Since I was 15, I’ve always played. Maybe the longest I’ve had off was three months. Maybe.

But months and months and months it has turned out to be this year and rolling into next year. I’ve never seen anything like it, of course, so it’s a very strange feeling. The new record is called The Speed of Now Part 1 – so will there be more parts? Is it a conceptual work? I don’t know about that. I wrote a lot of songs and recorded a lot of songs that didn’t make this album, but I’d like them to come out.

So I thought maybe instead of making a 25-song album, I want to separate some of the songs off and put out a ‘Part 2’ at some point. It’s a very diverse album and Out the Cage is quite a pop song? Yeah, well very high energy. I love all kinds of music. I’ve always listened to all kinds of music because I grew up playing other people’s songs in cover bands, Top 40 songs and country and pop and rock and blues and soul, R&B – everything.

So it’s always been a part of my music and I’ve just been able to explore more of that that kind of music in the last three, four albums, where I’ve gotten to work with a lot of different people and have fun and see what music goes together.

We met in 2015 or something, at a recording studio. We started jamming and playing together and we just clicked, there was just a great sense of rhythm that was very compatible with each other. He’s one of the great rhythm guitar players of all time, no question, phenomenal. When I was writing Out the Cage with Breland and two other writers, I said, ‘This is the kind of thing I can hear Nile playing on this. I think he would love it.’ I called him up and I said, ‘I’ve got the song I think you might like. I’d love to hear you playing on it.’ So I sent it to him and he called me up and said, ‘Bro, bro, this song is crazy, man. It’s such a crazy song. I love this song’. And he put some amazing guitar on it and it ended up on the record. You sing ‘every time I get angry that’s when I start runnin’, runnin’ out of your cage’. Is it a good song to let off some steam to? Yeah, a good song to break out of anything, whether you’re sick of lockdown and stay-athome orders or you’re sick of this quarantining and you’re just tired of all of this shut down and you just want to break out and start running.

Or whether you’re in a job that you’re sick of, you know, it’s holding you back, whether you’re in a relationship that you’re stuck and you don’t know how to get out. A life, just unfulfilled life and you just want to break out. We wanted to write this song for everybody in all the different ways we’ve become confined – that’s really what it’s about. It’s quite different to your own life situation. Sure. Yeah. But I don’t just write about my life now, though. That would be a limited kind of thing. I write about my entire life and there’s a lot to write about, infinite things to write about. But also, I get stuck, you know. I get imprisoned of my own making – doubts, insecurity, low selfesteem, whatever it is, I get stuck. And I need to break out of that as well. And sometimes a song will do it. Sometimes you just hear a song and you’re like, ‘Oh, that’s it. I’m done with this’ – you know? So music is therapy? Absolutely. Sometimes the song is the only thing that speaks at a certain time in life. I mean, how many of us have been driving

in a car and a song comes on and you’re like, ‘That’s how I feel right there. That person knows how I feel.’ Yeah. In One Too Many you say ‘I spend all my money drinking on my own’ – what time of your life do you look back on there? [laughs] Yeah, I did a lot of that. And you know, it’s a big part of a lot of my audience’s life. When I go out and play and tour, people can relate to this song. I’m glad that I got to sing with Pink on this. She was somebody I really wanted to do something with and she’s one of the great singers of our generation. She really is – period. Any singer would agree with that. She’s extraordinary. And through a friend of a friend, I was able to get the song to her and she loved it and it ended up on the record. I love this song. It’s a good example of a song that I can’t wait till we tour again to start playing it live. Have those heavy drinking nights long gone for you now – you live quite a healthy life these days don’t you? Yeah – much healthier. But I’m just a work in progress, is what I am. >>

You never seem to age at all though? Good Zoom lenses right now I think! [laughs] I just try and take as good care of myself as I can. I know that touring is the best way I stay in shape and I miss that part of it as well, because I’m not going to go and do two hours of cardio in a gym but we’ll do two hours of cardio on stage every night. How were you raised? With good values? A good work ethic? Yeah, yeah. Good work ethic. My mum and dad both had a very good work ethic. And I was very lucky to have very supportive parents for my music, because I quit school when I was 15 and was playing in a band five nights a week from the age of 15, learning my craft. Looking back now, do you think it was a good idea to leave school at 15? Yep. I would have left sooner if I could. [laughs] I just wasn’t very good at school. I was playing guitar all the time, very distracted. I was in a band and I would play with them on the weekends and then I couldn’t play with them during the week because I had to go to school and they would play without me. I said to my mum and dad, ‘If I quit school, I would be earning good money and learning my craft. And I’ve got a job and I could work a lot more.’ So they agreed and I left school. Did you imagine at 15 you would have the kind of career you have had for the past 30 years or so? No, I didn’t think that far ahead. I just want it to be playing all the time. I knew that was my calling. It was what I was going to do for the rest of my life. I didn’t think about what level I might be able to get to do it at. I wasn’t really writing a lot of songs. I was just playing in cover bands and just trying to get

better and better and better at it and spent gosh, I must have spent the next eight years or so doing that and finally went to America in my early 20s. You’re very lucky to have citizenship of three countries – that’s quite a unique thing? Really citizenship in any country right now where there’s kind of a quality of life. And I feel like I’m very blessed to have that right now where we can travel a little bit. Of course, travelling is not as easy as it was. But I was born in New Zealand, raised in Australia, and of course, I’ve been in America for 27 years, I’ve lived in Nashville. Amazing. What are your thoughts of the political situation in America with the presidential election coming up? You know, it’s complicated. It’s a very complex country. It always has been. But it’s also what makes it an extraordinary place of opportunity. My dad always wanted to live in America. I think he was bitten by the rock’n’roll bug in the 50s. He was a drummer in a band and he played this new thing called rock’n’roll music. Ever since he was a teenager, he wanted to live in America so I really sort of had that dream in me from a very, very young age. You’re living the American dream, let’s say, moving from Australia to Nashville when you when you were 20? Yeah, it’s interesting that I’m following in my parents’ footsteps completely because they were both born and raised in New Zealand, small towns in New Zealand and they wanted bigger, better opportunities so they moved to Australia. And I was raised up in Australia, but I wanted bigger and better opportunities so I moved to America.

And it’s what we do. I mean, my great grandparents came from Germany. Our ancestry is all German. The origin of my name is German – Urban – so it’s in the family blood already to travel to another country at some point. Finally, is it true you’re going to be returning to ‘The Voice Australia’? I literally saw that online. [laughs] A friend of mine sent me this thing, he goes, ‘Hey, do you know anything about this?’ And I read it and couldn’t believe it. I’ve never been asked by anybody. It’s never come up. We haven’t been contacted by them so I was completely shocked to see this. Obviously it’s just rumour so that’s all I know about that. But sometimes rumours come true? Sometimes. But I’m so focused on touring next year in 2021. I hope we get to do that. Fingers crossed.

HOPE FOR THE FUTURE Epigenetic certainty in uncertain times: The ‘High Functioning’ ADHD. WORDS DR ASHAR KHAN COVID has brought us anxieties, stress, exhaustion and above all, boredom. The consequent stagnant rut compels us to find ways for channelling the built-up adrenaline (which drives us) and Dopamine (which makes us seek pleasure). These two brain chemicals also regulate human thought, emotions and behaviours. They are also the primary chemicals involved in Attention Deficit Hyperactivity Disorder (ADHD). Approximately 5 per cent of Australian adults suffer from an undiagnosed ADHD. I refer to a significant cluster of these ‘missed’ ones as ‘high flyers’. Their ADHD diagnosis was missed because they were smart, often brilliant and ‘high functioning’ in the pre-COVID world. They hated and battled the distraction of ADHD driven tendency for ‘boredom’ by indulgence in workaholism, impulsive spending, high risk decision making, and ‘out of box’ disruptive thinking.

Others sought novelty in Freudian ‘pleasure principles’ by binging on alcohol, recreational drugs, gambling and often yielding to irresistible sexual gratification. COVID has eroded such adaptive escapes for these ADHD sufferers. There are no more ‘comfort zones’ on demand. Instead, there is a peaking of drug and alcohol abuse, trauma, domestic violence, generalised anxiety, depression and exhaustion. These ADHD ‘high flyers’ are burning out as their ADHD catches up with them. There is just not enough money to earn and spend, not enough mobile jobs to be ‘hyperactive’, social curfews blocking exit from boredom and a forceful need to comply with new online business and education protocols. The new COVID world is boring and reductionist. It is mundane, purposeless and does not offer much escapism for ADHD ‘high flyers’ to replenish their falling Dopamine levels. COVID forced introspection allows us to take a quick look at the early years of the missed ADHD ‘high flyers’. In school, despite being smart, they were unable to ‘apply’ themselves or show their ‘true’ potential. They thrived on ‘last minute’ cramming because they were smart. They were constantly bored and procrastinated

and procrastinated and procrastinated. Their head was always full of thoughts, often creative and lateral, often irrelevant and distracting. Life was messy and chaotic. It was always intense and exhausting – driven by anxiety, stress and turbulent moods. Trouble would always catch up and relationships would fracture repeatedly. Anger and questioning authority would be deemed as defiance and often lead to feeling excluded. As the ‘missed’ ones would become adults, their drift to boredom will earn them a reputation of being inconsistent and unreliable. They would struggle with impatience and poor frustration tolerance. There would be conflicts in jobs, career plans, friends and partners. Hobbies, plans and life goals would change as quickly as they would be invented. Contrary to their male counterparts, females with ‘high flyer’ ADHD would suffer from severe lifelong anxiety ingrained in self-doubt and identity confusion. They would deal with extreme sensitivity to rejection by guilt, self-blame or by masking emotions. They will cope by ‘people pleasing’ or ‘conforming’, often subjugating to bullying, abuse or violence at work or home.

Yet they would be highly empathetic, intuitive and intelligent. However, these traits would be their burden as they would be often ‘misunderstood’. Einstein said, ‘if we judge a fish by how fast it climbs a tree, it will spend its life believing that it’s stupid’. We celebrate humanity because of its uncanny resilience which often emerges when crisis strikes. ADHD patients are known to be the ‘life of the party’. Celebrities such as Justin Timberlake, Adam Levine, Ryan Gosling, Jim Carey and Woody Harrelson owe their vigour to ADHD. They are the best ‘first line’ crisis responders not unlike JFK’s suave ‘problem solving’ of the Cuban Missile crisis. Walt Disney’s ‘creative’ genius’, Simone Biles with her four Olympic Golds or Michael Phelps with his ‘hyperactive’ 18 Olympic golds, Ingvrad Kamprad with his ‘hyper focus’ in creating Euro 41 billion IKEA, Richard Branson with his ‘multitasking’ Virgin enterprises, are but a few who celebrated their genius to ADHD . It’s time to celebrate humanity again. Let COVID be an opportunity to turn the tide of stagnancy into fulfillment, impossible into possible, knowledge into awareness and mobilise contentment into brilliance. Let’s rediscover hope again.

Chris Nixon test drives Bentley’s spectacular Flying Spur.

IN THE WORLD of super-luxury and superperformance cars, nothing tops the prestige of 12 cylinders. V8s may perform as well, or even better (and we’ll forget the unique 16-cylinder Bugatti for now), but having 12 cylinders under the bonnet is like owning a Rolex – not essential, but the refined mechanicals deliver a special satisfaction. A 12-cylinder engine combines matchless smoothness, quietness and mountainous power – unstoppable forces of locomotives or battleships come to mind. Unsurprisingly, such engines are for only a fortunate few owners – and come from only a few makers. Bentley is one. Its unusual W12 – not a traditional vee-12, but a W configuration; think about it – is the supreme and sublime power behind its range of grand touring sports cars, luxury saloons and SUVs. It's a perfect complement for the fourdoor Flying Spur, now flagship of the Bentley fleet of sports-orientated gentlepersons’ cars since the recent discontinuation of the ultra-exclusive Mulsanne. With its 2.4 tonne mass, 467 KiloWatt engine and sumptuous accommodation, the Spur is a serious car for serious owners. But it’s no chauffeur barge; it’s a car you can enjoy driving all the time and find easy to do so. The Flying Spur is a very big sedan, but the feeling of size around you fades and confidence comes within a short time behind the wheel.

Then you can guide it imperiously through traffic with barely a sound or vibration intruding into the cabin, or open the taps and demolish highways on a magic carpet capable of an astonishing 333 kmh. That 6.0 litre, twin-turbocharged engine, coupled to eight-speed automatic transmission and all-wheel drive, is key to the experience. It usually needs just a breath of throttle around town, but any time a spurt of acceleration is required a quick stab on the gas sees the tail squat, the nose rise and the car surge forward like a navy destroyer. Through the bends it’s agile, if not exactly nimble, thanks to all-wheel drive, rear-wheel steering that sharpens the turning response, airbag suspension springing and shock absorbers that adjust automatically. Cars this big take some getting used to, but drivers will discover an exceptionally capable machine here. All performed in absolute luxury, of course. While the mechanical perfection is achieved with all the in-house technical sophistication available to Bentley’s owners Volkswagen, the cars are still hand-finished to traditional British standards. I’m sure they’re better standards than ever, given modern Bentley’s ability to build a car to a buyer’s exact personal specification. Thousands of options are available. This means the Flying Spur’s Australian recommended retail price of $469,000 plus

on-roads is merely indicative, as in reality no car leaves the factory in ‘standard’ trim and no two cars are likely to be the same. For example, there are 5000 – yes – choices of interior trim veneer. The veneers in our review car were pianoblack, which contrasted nicely with black-andcream upholstery. Knurled chrome metal knobs and organ-stop vent controls invoke more than 100 years of Bentley craft tradition. Exterior touches are more contemporary, drawn from various option packages such as the Blackline, City and Mulliner Driving specifications. The Blackline finish on ‘our’ car substitutes black chrome for every piece of exterior brightwork from the front grille to the exhaust tips. It’s simultaneously imposing and discreet. Even the famous ‘Flying B’ bonnet mascot is black. As it rises electrically from its cavity, the mascot’s wings spectacularly light up. The Bentley Flying Spur is one of only a handful of super-luxury saloons made today. Bespoke specification makes every example even more exclusive. GRAND ENTRANCE The Rolls-Royce Ghost arrives in Australia.

ROLLS-ROYCE consulted a Master Sommelier during the design of its all-new Ghost saloon. As a result, the rear-seat refrigerator operates at two temperatures, one for non-vintage champagne and the other for vintage. It’s details like this that ensure Rolls-Royce retains its status as ‘the world’s best car’. I was able to look into the refrigerator’s deep well between the seats, with its bespoke crystal glassware, but not imbibe its contents, when the Ghost made a flying visit to meet potential customers around Australia. In Brisbane, it landed on the open roof of the Calile Hotel for a glamorous moonlit preview. It was an impressive show with a strong message. The Ghost had been revealed in the northern hemisphere barely three weeks earlier and

already this sample was Down Under, writing business at a minimum $628,000. Or make that $740,000, since the car brought to Australia was the even newer long-wheelbase version. It all showed Australia is a highly-important Rolls-Royce market. The sales pitch says this Roller will be aimed at younger owners who prefer to drive themselves – that’s a typical Australian profile – in a car that’s more wieldy and less ostentatious than traditional luxury limousines. If you imagine yourself in a new RollsRoyce Ghost, you’ll find yourself in a 2.4 tonne four-seater of sublime elegance, loaded with luxury and bristling with high technology. Its physical presence is breathtaking, the hand-finish flawless inside and outside.

Power (although traditionally you’re not supposed to ask this about a Rolls) is 420 kiloWatts, delivered by a 6.76 litre, twin-turbocharged, V12 engine coupled to full-time all-wheel drive. To achieve the requisite serene progress, road-reading cameras help the suspension and transmission make constant, minute adjustments ahead of changes in terrain. While the Ghost won’t be the biggest-selling Rolls-Royce, it easily carries the role of flagship of the motoring world’s most coveted fleet.

Introducing the Maserati MC20. It’s one of Italy’s most fabled sports and racing car makes, but Maserati had lost some of its aura in recent years with a succession of indifferent models made in the shadow of a dominant sibling, Ferrari. Ferrari’s exit has removed the glass ceiling and Maserati has been re-positioned as the group’s premier brand alongside Alfa Romeo, Fiat, Jeep and several other Americans. The MC20 is a stunning breakthrough. Fabulous looks cloak a chassis made of lightweight, moulded carbonfibre instead of steel or aluminium. Maserati has installed a compact but highly-developed engine, with six cylinders and 3.0 litres punching out 470 kW.

LOTUS WILL MARK 20 YEARS and three generations of the Lotus Exige with a specialedition based on the current Series 3. Speaking of those buckets, they come with the same side profile silhouette as the Series 1, while the same motif is used on the dash and front fenders, and the rear wing end-plates get '20' logos. New standard kit includes Nitron three-way adjustable dampers and a set of ultra-lightweight forged alloy wheels, plus a DAB digital radio, Bluetooth, cruise control and an Alcantarawrapped steering wheel. Under its rear boot lid the Exige Sport 410's supercharged 3.5-litre V6 remains unchanged, with the anniversary model producing the same 305kW and 420Nm of torque. That means that with a six-speed manual it can hit 100km/h in 3.4 seconds and top out at 290km/h. Lotus is yet to announce how many 20th Anniversary Exiges it plans to make globally, but has confirmed a ‘limited’ number will be allocated to Australia. With Lotus Cars Queensland the recipient of just two at this stage, time is of the essence if you want to get behind the wheel of this little beauty.

Motivated by the fall of the Berlin Wall on 9 November 1989, the people of the then Czechoslovakia took to the streets in mass protests calling for the sacking of the governing communist regime which was previously installed by the Soviet Union after the defeat of Germany in 1945. Later called The Velvet Revolution because the protests were a non-violent transition of power, the protests from 17 November 1989 to

29 December 1989 saw more than one million Czechs take to the streets demanding the communist government resign and the country move to democracy. The collective power of the people had the desired result and, on 1 January 1993, Czechoslovakia split into two independent democratic states, the Czech Republic and Slovakia. Preserved records confirm this sought-after eatery dates back to the year 1543, making it one of the oldest restaurants in Prague. Emperor Rudolph II. is said to have been among its guests together with presidents, princes and movie stars. The current interior dates back to the early 1930’s when the original wall frescos were painted, complementing the stylish atmosphere which relies heavily on detail and luxury. With its vaulted ceilings, restored frescos, period furniture and traditional Eastern European fare it is no wonder there is a waiting list … but the wait is definitely worth it. The moment one enters this culinary hallowed ground you sense the pervading atmosphere and soon become acutely aware of what is meant by white tablecloth service. The advent of celebrity chefs in past 20 years and their scramble to offer something different to their rivals has been at the expense of the art form of service. This is not a problem for U Maliru. Gold Coast’s Premium Property Market Grows Despite Pandemic Why property values have held up during COVID-19 By Michael Kollosche

The Gold Coast’s premium property market has performed strongly this year, even in the face of the coronavirus pandemic. We look at where the top end of our local market is at right now and what’s keeping property prices growing. The Gold Coast property market has been experiencing more favourable conditions than property markets in many other parts of the country. In fact, while property values in Sydney and Melbourne have fallen -3.7% and -1.7% over the past three months according to CoreLogic, it’s not been the same here on the Gold Coast. The real gains have happened in the prestige areas of the Gold Coast. For instance, realestate.com.au data shows the median value of houses in Mermaid Beach lifted from $1.45 million in January 2020 to $1.565 million by the end of September 2020. The median value of a house in Surfers Paradise rose from $1.8 million to $1,992,500 over the same period.

Meanwhile, the median house price in Main Beach lifted from $1.675 million to $1.85 million in just the five months since April 2020. It’s worth noting that prestige property has been performing strongly in other parts of Australia too - often decoupling from other parts of the real estate market. One of the main reasons for this is that the prestige market can be less affected by economic downturns. That’s because sellers are often in a financial position where they can afford to hold off until the right offer comes in. As we speak to buyers and sellers, we’ve observed six key trends driving the prestige market on the Gold Coast right now.

Interstate buyers are looking north As Australia’s premier lifestyle destination, the Gold Coast has always attracted interstate buyers looking for a better life. Many of these

buyers are heading towards the end of a successful career, the kids have left home and they’re looking for the best place to enjoy their retirement. Others, who aren’t quite ready to give up working anytime soon, are looking for a second home they can escape to. Even with border closures, these mature interstate buyers represent one of the main demographics in today’s prestige market. Most are discerning and prefer to be close to, or even on, the water. After all, that’s exactly what they’ve moved to our part of the world for. Technology such as virtual tours, FaceTime and live video walkthroughs has allowed us to engage with these buyers despite any travel restrictions.

Telecommuting professionals have become a market force The COVID-19 pandemic has forced many to


change their work patterns and more people are working remotely, especially in fields such as professional services. As a result, they no longer need to be within a short commute to their workplace. Their jobs have become geographically independent. The Gold Coast has been a real beneficiary of this trend and we’re fielding a lot of enquiries from people currently working in major cities, especially Sydney and Melbourne, who want to relocate here with their families to enjoy a different lifestyle. Often these buyers are quite senior in their roles or run their own businesses, so they have a reasonable budget. However, they recognise that the Gold Coast offers far better value than comparable suburbs in the southern capital cities. For instance, the median price in Bondi is $2.875 million compared to $1.205 million in Broadbeach Waters.

Locals are upgrading At the same time, we’re seeing a lot of locals looking to take advantage of current conditions to upgrade. Even though we’re in the midst of a coronavirus-induced recession, the economic fallout hasn’t hit everyone evenly. There is a large part of the market that has been relatively unaffected to date. For those with stable employment, today’s low interest rates make it cheaper than ever to take a step up the property ladder. These buyers can often afford to be bullish given the RBA has said it intends to keep interest rates at record lows for some time.

Expats are again a factor in the market The Gold Coast generally doesn’t attract the same number of overseas buyers as the Sydney or Melbourne property markets. However, one group of overseas buyers we do see - and are now seeing in increasing numbers - is expat buyers. These buyers are professionals usually based in a global financial centre such as New York, London, Singapore or Hong Kong and they’re looking for somewhere to live when they return home. Given Queensland has escaped the worst of the pandemic, many are eyeing a return home sooner rather than later.

Investor numbers are dwindling One group of buyers we’re not seeing in great numbers right now is property investors. That’s partly because the short-term rental market - which relies largely on tourists - has dried up. It’s also because many investors are taking a ‘wait and see’ approach, trying to figure out what will happen to rents and vacancy rates when JobKeeper and other government stimulus measures end. For our purposes, the prestige market on the Gold Coast tends to be less reliant on investors than other market segments, so we don’t expect this to have a profound effect for our clients right now. Although we are

coming to market, especially in the $1,000$2,500 per week price range.

Stock levels remain very low Real estate prices are ultimately set by the law of supply and demand and low stock levels are having a real impact on the supply side. This is not necessarily COVID-specific but has been a feature of our property market for the past few years. SQM data reveals there were a total of 3,582 listings on the Gold Coast over September 2020 and 3,716 in September 2019. If you were to go back nine years to September 2011, there were 5,063 Gold Coast listings. That means there are now almost 30% fewer properties listed for sale. This lack of supply has been underpinning pricing and, if current market conditions prevail, could put upward pressure on home values.

And finally... The Gold Coast’s premium real estate market has held up well, even in the face of the current pandemic. We expect as the economy emerges from the recession and Australia begins to open up, prestige property here on the Gold Coast will become more desirable still. We take a look at some of the top distilleries from Byron to Brisbane, each one with its own appeal and point of difference.

BRISBANE DISTILLERY, 99 Jane St., West End Brisbane Distillery is Brisbane's first grain to glass gin distillery, offering tastings and bottle sales, with a cocktail and tasting bar as well as a gin school where customers can create their own gin from a choice of 150 botanicals. The distillery distils vodka and a French Caribbean-style agricole rhum made from locally sourced sugar cane juice. Presently under renovation, a new sustainable venue is due to be launched in the next coming months.

BEENLEIGH ARTISAN DISTILLERY, 142 Distillery Rd, Eagleby The oldest operating distillery in Australia, Beenleigh Rum Distillery began around 140 years ago when a still from the S.S.Walrus washed up on the shores of the Albert River was put to good use by local farmers. Today, this boutique distillery still operates from the original stone building, using molasses from the local sugar mill and still pot distilling using some of their original copper equipment in the Big Red Shed, producing world award-winning rum and vodka.

PANEZSKI ARTISAN DISTILLERY, 7/55 Bailey Crescent, Southport Owned and distilled by Paul and Vanesa Chapman, Panezski is a tribute to Vanessa’s holocaustsurviving Polish grandmother. Making the alcohol from scratch (instead of adding flavour to a prepurchased alcohol base), Paul uses the best grains available, the rye malt grain coming from Germany and the rest of the grain from Australia, in a 100-litre still. Besides one wheat and one rye vodka, the distillery presently makes two beers, a triple sec and two gins, with an aged vodka in the making.

TACOS & TORTILLAS

Of all the countries with great cuisines, the most maligned, most misunderstood – at least in Australia – must surely be Mexico.

WORDS TONY HARPER MEXICO. FIVE TIMES OUR POPULATION, the co-star in so many Cormack McCarthy novels, mariachi bands, mezcal and tequila, and the birthplace of a cuisine we know so well. Or do we? It’s a relatively big country – a smidge larger than Queensland and almost three times the size of Tasmania – with tremendous geographical diversity, coast, desert, hills and plains. And that diversity brings with it a similar diversity in terms of available foods: oceans, hinterlands, meadows and mountains. And it has cultural mix: Mayans and Aztecs, Spanish and American, African, French and Portuguese. Despite which, all most Australians have seen of its cuisine – pre-Guzman and Gomez – is lots of cheese, poorly cooked meat and flavourless tortillas. After Guzman and Gomez, we have a slightly more modern take on a tiny window of what the nation eats. Time travel with me, just for a moment, to my parents' house in late 1982. My family (without me, and that was my fault) has just arrived home having spent a year in America: Manhattan, Kansas.

At some stage they went tripping south and dipped into Mexico. My mother was – and still is – a terrific cook. She came home with a tortilla press, a book of recipes (rustic, hand-typed and stapled down the centre like the Mexican version of a CWA cook book. I reckon she still has it stashed somewhere nearly 40 years on), a desire to reproduce mole poblano, refried beans and ceviche, and a dab hand at turning corn masa into tortillas that still beat anything you can get in the Mexican section of your supermarket, or at any chain Mexican restaurant. The meal she cooked for their homecoming remains my great culinary epiphany. Mole Negro Poblano is native to Puebla, on the east coast of the country. It’s a wonderful dish – hugely popular in parts of the world that really have a grip on Mexican cuisines – that uses myriad spices, pumpkin seeds and a whole range of chilies (most importantly perhaps melato, chipotle and ancho) as well as chocolate. It takes a couple of days to cook properly, a couple more to really hit its straps, and even if you have the patience to try, it takes a few attempts to get things bang-on.

If you are super-traditional, use turkey, but most households and restaurants have made it a chicken dish. I’ve not perfected it, but I reckon I make something passably good as a rendition, and it remains an incredible dish if you ignore the better versions floating around the planet. To me it is the perfect illustration of the divide between what folk in Mexico eat, and what we have been led to believe is Mexican cuisine. And it tastes amazing. The coastal states – there are heaps of them: Mexico has more than 10 000 kilometres of coastline along the Gulf of Mexico and the Pacific Ocean, but in a culinary sense Oaxaca, Veracruz and Yucatan tend to take pride of place – are naturally seafood-centric. It’s little wonder that Mexico has a wealth of great seafood dishes; ceviche, Tampico stuffed crab, tikin-xic, fish and lobster tacos just to list a handful. Veracruz – a beautiful part of the country with pristine beaches, jungle and snow-capped peaks all within its domain – is where Cortez first landed and hence it is a cultural melting pot: Olmecs, Huastecs and Totonacs were the indigenous races, ruined and enriched by the

Spanish, French and Caribbean traders that brought wealth, disease and cultural diversity to the region. Hoja Santa (a local herb) is perhaps the defining point, but Veracruz has a wealth of crosscultural dishes, culminating in baked red snapper (Huachinango a la Veracruzana) along with its fruits, herbs, spices, olives and capers. More Mediterranean you might think, than Mexican. But you’d be wrong. Even the humble taco is nothing like we know it. Anyone with more than a passing interest in food and access to Netflix should watch The Taco Chronicles. Its 13 episodes take you through a wondrous array of tacos, from street stalls to restaurants, well-known versions like carnitas and asada to some totally unfamiliar, exotic styles such as cabrito (smoked goat) and cochinita made from Mexican hairless pigs. Arguably the best episode, and certainly my favourite, is ‘Barbacoa’. Imagine big, deep, brick-lined pits dug into the ground. Fires are laid in the pits each morning to create a bed of coals. Then a pot of stock goes on top of the coals. The pot, in turn, is topped by various cuts of sheep wrapped in agave leaves. The pits are sealed and the sheep cooks overnight, until the meat is as tender as a well-cooked brisket. Barbacoa is traditionally a breakfast taco: tortilla filled with the meat and salsa, soup (from the stock) on the side. Which brings me to the humble tortilla; perhaps the most misunderstood and abused of the Mexican culinary arsenal. Those white, cardboardish abominations you can get at the supermarket are as far removed from a good tortilla as fish fingers are from coral trout. Yet a good tortilla is so easy to make. Corn masa, water, a tortilla press and ten minutes of easy labour will make a stack of rustic, flavoursome, textural tortillas that can turn even a basic chili con carne into a feast. (Leave the cheese alone.) It’s impossible in an article of this size to even skim the surface of Mexico’s incredibly diverse collection of cuisines. Even books need to focus on a state, a style, or a collection of recipes. But perhaps it’s enough to convince a few readers to look beyond the everyday, perhaps try cooking a mole poblano with some authentic tortillas on the side. And ... eat the lot while tuning in to The Taco Chronicles.

NOT DOWNSIZING Downsizers are driving the push for more luxurious apartments.

WORDS NICK NICHOLS DOWNSIZING ISN’T WHAT IT USED TO BE, with new research showing that there is a limit to how small buyers are prepared to go. According to international property group Knight Frank, downsizing to an apartment lifestyle is making way for a new trend known as ‘rightsizing’, which it identifies as a trend towards luxury apartment living. While retirees are typically associated with downsizing, there’s a new demographic driving the rightsizing trend. Knight Frank identifies three distinct and much younger groups – active retirees, entrepreneurs and even families looking to be closer to work or schools. “We see this at a much earlier stage than in previous years given the agile, transient and global nature of our work and play,” says the

report which is authored by Michelle Ciesielski, Knight Frank’s head of residential research. “When working with our clients, many tell us their home is no longer required to provide the lifestyle they once had and, more often, the cost to upkeep outweighs the surplus space once desired. “With this new active retiree lifestyle, they seek simplicity, and to feel the vibe from living close to the action. “Downsizing the living areas is not part of this movement – the yard most certainly – but their new home request is to be the right size for them, with amenities to match their lifestyle. “Large prime luxur y apar tments, with increased number of bedroom configurations, is required to keep up with this growing demand."

The rightsizing trend has been emerging for some time, to the extent that it’s being reflected in an increase in the average size of apartments nationally. At the same time, the size of Aussie homes has shrunk. An Australian Bureau of Statistics report commissioned by CommSec shows that the average house size fell by 1.3 per cent in 2018-19, while new apartments grew by 3.2 per cent. The bare essentials that rightsizers look for in a residence is a minimum of three bedrooms and two secured car spaces. The ‘active retired’ in particular are looking for a smaller property such as an apartment, but they still want one with ‘house-like proportions’.


The Knight Frank research shows that Gold Coast developers are responding quickly to this emerging market trend. As a share of total residences, high-density dwellings on the Gold Coast sat at 41 per cent, just behind Sydney at 42 per cent, according to the 2016 Census. It’s no secret that high-density living is dominating development on the Gold Coast. But when it comes to apartments targeting the rightsizing trend, the Gold Coast beats every other major city. Knight Frank estimates that 70 per cent of medium density dwellings built since 2017 on the Coast were of three-bedrooms-plus configurations. Brisbane came a close second with 61 per cent. “Both city pipelines show a further increase in the portion of total dwellings being built by the end of 2022 to 81 per cent and 87 per cent respectively,” the report says. As for high-density developments, namely high-rise apartments, the research shows that the Gold Coast can expect 19 per cent of its threeyear development pipeline dedicated to threebedroom-plus apartments, up from 14 per cent. If the proportion of luxury apartment sales is any guide, then the Gold Coast again comes out on top as a market that attracts its fair share of rightsizers.

Knight Frank analysed all prime residential sales over three years from the third quarter of 2016 to 2019. It found the Gold Coast, at 26 per cent, had the highest portion of apartment sales between $3 million to $5 million. Brisbane closely followed with 22 per cent, and Sydney with 21 per cent. In August, Knight Frank’s Prime Global Cities Index for the second quarter of 2020 affirmed the strength of the Gold Coast luxury market globally. The index identified the Gold Coast as the best performing city in Australasia for upmarket residential property in terms of price growth. It was also placed 10th in the world, with a gain of 3.4 per cent for the year. Coupled with CoreLogic’s research showing that regional property markets are thriving despite the COVID-19 pandemic, the Gold Coast luxury property market has fared well over the past year.

2020 HAS BEEN EXTRAORDINARY to say the least. I suspect it will be one of those years we look back upon and easily recall where we were and what we were doing during our first true global pandemic. There’s no doubt we live in the Lucky Country, where our geographical distance from the rest of the world, combined with some good government intervention, has kept coronavirus numbers down. As Queenslanders we seem to be happy with our lot. And why wouldn’t we be? Beautiful one day, perfect the next. Very few case numbers, and an economy that is showing incredible resilience. We are truly in a bubble everyone wants to be in. We have observed Victorians peering into our ‘bubble’ with envy as they have been forced to endure one of the most draconian lockdowns in the world. But they, along with other interstate buyers with no access to Queensland, haven’t been resting on their laurels. Many have been quietly plotting their escape to Queensland, according to many of my development sources. Andrew Bell of the Ray White Surfers Paradise Group speaks of people who have secured

properties for long term rentals without even being able to access the Gold Coast. One agent was telling me of a recently completed townhouse development at Mudgeeraba where people were queuing up to become the lucky tenant – such is the demand for rental properties. We have spoken in past issues of Cove of the extraordinary sight unseen sales being achieved and this continues. New projects are being launched as developers ride the wave of demand coming from the southern states. In the past month we have witnessed the unveiling of the KTQ Group’s $380 million redevelopment of the iconic Kirra Beach Hotel. The first stage of this luxury destination precinct – a game changer for Kirra – will include a selection of 118 luxury apartments overlooking the world-famous north facing Kirra beach. The acceleration of this project by Peggy Flannery’s KTQ Group has been buoyed by the recent sell-out of S&S Projects’ $74 million Flow Residences at Rainbow Bay, also on the southern Gold Coast. Apartment owners across the Coast are reporting commanding prices for short term rentals such as Airbnb in these high demand lifestyle locations.

Some apartments on the beach are securing bookings of more than $10,000 over ChristmasNew Year week. And this to predominantly Queenslanders while our southern friends wait to see if they can access the sunshine state. Imagine what it will be like when the sun-starved Mexicans can get up here? The term pent-up is often an over-used real estate phrase, but it has taken on a whole new meaning on the Gold and Sunshine Coasts. One can only assume from the real and anecdotal evidence I am getting across my desk every day is that we are about to be smashed over the Christmas and New Year period by southerners wanting a holiday in Queensland. And this augurs well for the tourism industry and the property market in general despite the setbacks of COVID which include the absence of international visitors. “We are delighted to announce our plans to push ahead with this project, which we believe to be a game changer for the southern Gold Coast,” said KTQ Group development director Jeremy Holmes. INTERSTATE AND OVERSEAS BUYERS waiting for the Queensland borders to open are among the owner-occupiers flocking to the newly developed Summit on Broadwater apartment project at Labrador. said ‘now I’m allowed to work remotely I’m going to move to the Gold Coast and live the lifestyle that I really want, and I still get to keep my job that I love and earn the money that I have been accustomed to earning’,” Kym says. “It’s been really lovely seeing those people make these lifestyle moves, they are genuinely excited about changing their life and living here because it is what they always wanted to do for their family, their children, their future, for all sorts of reasons.” While it seems like it’s a good time to be in the property industry the couple have some very sage advice for anyone looking to get into real estate. “We are a bit biased and of course we would say that it’s an amazing industry but I always said that the real estate industry is an equal opportunity employer which means you get back exactly what you put in,” says Dane. “And you’ve got to have a real passion … passion for winning, passion for the region, passion for property, passion for people because behind all of the properties and all of the addresses there’s actually real families, and positives and negatives, and great reasons and bad reasons why people move home. “I would say that anyone who wants to give it a go, now is a great time to do it because I think the next period of time for the Gold Coast is going to be very buoyant conditions, so why wouldn’t you want to be a part of that journey.” Having forged a successful partnership in work and their personal lives for the past two decades, Kym and Dane say the secret to their success is to a shared commitment to providing the best possible experience for their colleagues and clients. “I think the reason that it works really well, is we both have tremendous respect for each
