Fittingly, this edition of Cove spans the entire festive season and is brimming with gorgeous fashion (Santa, can you leave the stunning red dress from Henrietta’s story under my Christmas tree please?), exotic travel destinations and great holiday entertainment. Our leading man in this issue is Pierce Brosnan. The handsome Irish actor discusses everything from taking the kids to school to life after Bond in an insightful interview. Of course, James Bond’s car of choice was the Aston Martin. Not only do we showcase this luxury marque on the cover, we also feature it, along with Range Rover and Rolls-Royce, in our motoring section. Beautifully illustrated Montblanc has embarked on an exciting collaboration with renowned Australian illustrator Megan Hess, who has created a series of four limited edition prints for the luxury label. The final print, The Group, will be finalised later this year. “After much initial brainstorming we decided on the focus for the collaboration: four beautiful, original illustrations that portrayed the spirit of Montblanc,” said Megan. Before she put pen to paper, Montblanc sent Megan to New York to participate in their exclusive bespoke service where her handwriting was analysed on a special machine. A tailor-made fountain pen, to suit her own unique style, was then suggested and designed which she has used to create the four print illustrations for the Montblanc collaboration.

While the Anthony Squires style and impeccable quality paved a sure path to success in any part of the world, the way it did so could only have happened in Australia. Like the country itself, the now globally-renowned fine tailoring company drew the best from the rest of the world to create a style that stood apart for all of the right reasons. The post-war migration boom that enriched Australia’s cultural identity also stirred a somnolent economy still recovering from wartime austerity. A new optimism reigned, projects began, and prosperity beckoned ... among others, to the English founding partners of Anthony Squires. Seeking to forge a new life and business in a different country, they chose Australia because of its long list of pluses – sunny weather, a democratic government, English-speaking, a good environment for raising children, an existing skills base and a sense of fashion. So they brought their families, drive and vision – plus a wealth of skills and experience in top-end tailoring – to New South Wales, where they set up Anthony Squires in 1948. These were exciting times for new Australian enterprises. With a public hungry for stylish clothes unobtainable during the war, a burgeoning industry in fine wool production and a government keen to get the economy going again, things were looking seriously promising. So promising, in fact, that the newly-established Anthony Squires company had received substantial orders before they’d even gone into production. It was time to get started – and quickly.
The company’s reputation for uncompromising excellence of quality and design has endured since its earliest beginnings.
Their first factory was set up in a former munitions factory in St Marys, with equipment imported from Britain and a small staff that had been similarly sourced. But demand and production grew so quickly that employee numbers – including many locals who learned new skills through their employment – swelled to 600 in the first ten years. During this time, the founding partners worked closely with their weavers and designers to develop distinctly-styled fabrics better suited to the Australian climate and lifestyle. ‘Why should it be English?’ was the partners’ famous question that heralded a bold new confidence in Australian design, and was carried into the style and cut of the garments themselves. A great innovation was the lightweight suit, essential in the stifling Australian summers that ‘wilted’ heavier suits, leaving them looking tired. Hundreds of yards of cloth and working hours were invested in this quest which, on its success, changed Australian men’s lives forever. The company’s rapidly-increasing prominence meant the original factory soon became too small. So only ten years after starting from scratch, Anthony Squires moved into a new purpose-built head office and manufacturing premises in Sydney – spread across an impressive four acres. The excellence that is synonymous with Anthony Squires has not only carved out a discerning global market, but has drawn a cache of prestigious industry awards over the years – including the Mitam Award, the International Secretariat Golden Ram Award, the International Fashion Council Silver Needle Award, and numerous Australian Wool Corporation and Fashion Industry of Australia Awards. >>

And if further proof was needed – not only of Anthony Squires’ perennial popularity with gentlemen of style, but also on the worldwide political stage – there’s the fact that the company has been ‘suiting’ our Australian Prime Ministers since Sir Robert Menzies. Even former Federal Treasurer Peter Costello was so impressed by this fact that he once quipped it had inspired him to don an Anthony Squires suit as ‘a good luck charm’. Now owned by the Stafford Group and partnered with David Jones, Anthony Squires operates within David Jones stores and through standalone outlets, and maintains an online store. With more than 100 collective years of tailoring tradition behind it, the company’s reputation for uncompromising excellence of quality and design has endured since its earliest beginnings. And it has also been a key player in the social, economic, and cultural evolution that continues in Australia today. Perhaps this sentiment is best summed up by The Next Ten – a poem that appeared in The First Ten, a beautiful limited-edition book produced by Anthony Squires in 1958 to commemorate the company’s first decade of trading:

The ghosts of the pioneer fathers, driving their carts and wagons into the dreaming inland, are part of the texture of our lives and the ashes of their campfires are still warm. Ten years isn’t long by the counting of clocks, but Australia measures time by achievement. Anthony Squires’ “First Ten” has been a part of the great growth of a great, growing nation. As the adage goes, ‘a picture paints a 1000 words,’ and it communicates instantly. Fishtails, sequins and the colour red will never lose their sartorial sparkle and are as glamorous today as they were 60 years ago. Back in August at the annual Mercedes-Benz Fashion Festival (MBFF) in Brisbane I was transfixed by local designer Begitta’s metallic red sequin gown. Redolent of the Gentleman Prefer Blondes gown, it exuded old world Hollywood glamour with a modern twist. Brisbane designer George Wu’s strapless ruby red gown was another favourite on the MBFF runway, reminiscent of the Hubert de Givenchy strapless carmine column gown worn by Audrey Hepburn in the iconic scene from Funny Face when she descends the stairs of the Louvre in Paris holding a red chiffon scarf flying above her head. Keep your skin glowing this festive season. words linette gramstad
Most of us have our own individual skincare routine that we follow daily, but we need to make sure to keep it up during the festive season. A good cleansing routine is especially important. The biggest mistake a lot of women make is to leave their make-up on overnight after a night out. This really is one of the worst things you could do for your skin. I always make sure I wash my face at night and again in the morning. Not only will your skin feel better, you will also prevent possible breakouts and have clearer pores. Use a make-up remover or simply double cleanse the skin, making sure your second cleanse is the longest as you don’t want to be working make-up into the skin. Your second cleanse is purely to clean your skin, so work it in well for at least one minute. If you like to use a toning lotion you can do so now, although this is more important if you are using a milky cleanser rather than a foamy cleanser to remove any residue. If you find your skin gets dry or tight after cleansing perhaps double check the product you are using and its ingredients. Try an eye make-up remover that is specially formulated for the eyes and look for one that is low irritant and perfume free. Moisturise your face after cleansing and preferably use a serum underneath your favourite moisturiser. Find one that is rich in antioxidants or hydrating. Finding an oil-based facial product that is non-comegenic is not only excellent for moisturising but it will nourish the skin and the skin cells. Jojoba oil is an excellent option which is rich in essential fatty acids. It is very similar to our skin’s natural oil flow and is great for any type of skin, even sensitive and oily. Exfoliate your skin a couple of times a week to polish off any stubborn dead skin cells, using either a gentle facial scrub or mild exfoliating solution, especially if you wear make-up daily. If your skin is very fine and sensitive try an aha-based or gommage exfoliant. Remember to exfoliate your body by using a dry body brush all over the skin once or twice a week. It is best to do this after a warm shower as it increases circulation and stimulates the lymphatic system therefore eliminating toxins. Follow with body crème of your choice. This is also suitable for men to do. Drink plenty of water to promote hydration, prevent wrinkle formation and support healthy skin. If you find plain water boring try adding citrus fruits or mint leaves for a bit of flavour. Be mindful not to over indulge and cut out foods high in sugar as well as fatty and salty foods as they impact the skin’s structure and functioning. If the skin is not getting enough nourishment it gets compromised and then the cells won’t do their job effectively. Some vitamins and minerals that are essential for healthy skin include; Vitamins A, B, C, D, E and K, omega 3, 6 and 9, and magnesium. Swap your daily coffee for a herbal tea such as green tea. It has antioxidant benefits and contains caffeine so is a great replacement for regular coffee drinkers. Try to get eight hours of beauty sleep nightly as your skin does a lot of its rejuvenating while you’re sleeping. New skin cells are formed and toxins are removed via the lymphatic system. If you find it hard sleeping try a glass of warm milk before bedtime. It contains amino acid which is sleep inducing. For non-dairy drinkers, chamomile tea is a great option instead. If you’re on vacation try to give your skin a break from make-up, and if you are going to be in the sun be sure to wear your favourite tinted spf moisturiser. A great make-up tip that I have discovered is to mix your favourite face bronzer (which should be a warm matte colour) with a slightly sparkly all over colour or blush, ideally with a pink base. This, used over your favourite foundation base (or without), gives off a subtle radiant glow which is perfect for celebrating all year round.

At social functions is it appropriate to mix ‘business’ with ‘pleasure’? It’s fine to ‘talk shop’ at a social event but there are a few guidelines. Firstly, make sure the other person is as comfortable chatting about business as you are, and check that both your partner, and theirs, is equally as comfortable. Partners may hear nothing but ‘business talk’ at home and be bored so watch for body language. Secondly, if the topic is of a sensitive nature, say the discussion of fees, quotes, a derogatory comment about a colleague or something gossipy, be aware that the walls may have ears. Thirdly, make sure your discussion doesn’t become heated or go on for too long so that you exclude other guests or worse, offend your hosts.
How do you get out of a situation when you know the person but can’t remember their name? It doesn’t matter of course if you’re on your own but it’s really embarrassing if you need to introduce them. The best way around this is to say, ‘Goodness me, for the moment I’ve forgotten your name’. They’ll no doubt say, ‘Smith’ to which you can say, ‘Oh, I remembered your last name, it’s your first name that got away from me!’ That way at least they’ll think you remembered part of their name. This technique can, of course, be reversed if required. I’ve been told I have a weak handshake. Is there such a thing as a ‘correct’ way to shake hands? Absolutely! A firm handshake is taken as an indication that the person is poised and confident, whereas a limp clasping of just the finger tips is often perceived, rightly or wrongly, as the person being socially awkward and unsure of themselves. Take the other person’s hand ‘web to web’, that is, the space between the index and thumb. Smile, and shake gently for about three seconds (you may be delighted to see them but breaking bones is not good etiquette). What is the protocol for first time meet and greets? Focus on them and perhaps say their name as I’ve read that repeating it will apparently help us remember it. Even if you’re not too fussed about meeting them, keep smiling (or at least look interested). Never peer over their shoulder to see if you can spy someone more interesting approaching. Anyone who has ever met President Bill Clinton remarks on his ‘charisma’

The company has set up its third national office in The Marine Village and will initially operate from Ray White Sanctuary Cove’s real estate office before moving to its own premises in the New Year. Ray White Marine, a division of the A$30 billion Ray White Group, has been based at Main Beach for more than three years but also has a shopfront in Sydney’s Rozelle Bay which opened in 2012. Ray White Marine’s Rick Rodwell said the popularity of boating at Sanctuary Cove reinforced the need for a dedicated onsite sales office within the community. “Quite simply it will change the way that Sanctuary Cove residents sell and buy boats,” he said. “Sellers will now be able keep their boat moored at the Sanctuary Cove Marina where viewings and inspections can take place with minimal disruption. “They will also benefit from having a local shopfront as well as exposure to Ray White’s international network. “For buyers, it’s a one stop shop – they will be able to walk through the Marina and see what’s for sale in the flesh.” Rick said sellers from around Australia and overseas could also benefit from having their boats listed at Sanctuary Cove. “There’s a great opportunity for sellers to take advantage of having their vessels displayed at the country’s leading boating community,” he said. The luxury SUV that started it all is still king. As popular as ever with the British royals, the Range Rover glides across our colony with the serenity of a Roller on Pall Mall. The fourth generation ‘Rangie’ has come a long way from the original gamechanging design masterpiece launched in 1970. That one had rubber floor mats so it could be hosed out; this one is the epitome of luxury. The principle of an all-round wagon with excellent ability on and off the highway remains. And, should you dare to risk its immaculate finish, the new model uses high technology to climb mountains the old one could never conquer. The elegant new design on an extended wheelbase is the first SUV with body and chassis made of lightweight aluminium. That’s a technical feat managed by still only a few makers, but the construction is said to save 420 kilograms – half the weight of a small car. The fact this brings overall weight back to a still-substantial 2360 kg says something about the previous model, but there are many gains in fuel economy, chassis rigidity and roadholding. As with most luxury cars, you can have whatever you like if you’re prepared to pay, but the $216,745 Vogue SE I drove already came luxuriously specced. It had height-adjustable air suspension, heated and cooled front seats that truly felt like thrones, 825 Watt audio system, an electric tailgate, electric softclosing doors, auto-dipping headlights and ‘surround-view’ cameras that show the driver on a screen what the track is like on all sides when negotiating tricky terrain. And many more appealing comfort and convenience aids. But the standout feature is of no use at all except for boasting – puddle lights mounted on the underside of the exterior mirrors don’t just illuminate the road, they project the words ‘RANGE ROVER’ in the middle of a crisp circle. That’s one-upmanship! The choice of engines is a 5.0 litre petrol V8 and diesels of 3.0 litre or 4.4 litre capacity. The test car ran the 4.4 and felt powerful enough to tow an aircraft carrier. The Range Rover gets up and goes when commanded. It feels much more composed and glued to the road than the superseded model and has massive brakes. It is magnificently refined – quiet, smooth, powerful, luxurious and with a commanding elegance nothing else can match. Insulated from the real world, it’s hard to not feel superior when sailing past the hoi-polloi. The Range Rover is no Porsche Cayenne on twisty blacktop, but you feel it would leave the German wagon wallowing on a deeply rutted mud track. Off road ability has always been Land Rover’s stock-in-trade and no matter how luxurious a new Range Rover is, it must maintain that DNA. Consequently, it features constant four-wheel drive split 50:50 front to rear, rollover stability control, long suspension travel, the ability to wade to a depth of 0.9 metres and the maker’s Terrain Response system, with which subtle and minute electronic control of the transmission, braking and traction systems can be selected by the driver to deal with mud, sand, rock or other low-grip situations. For a stately carriage, there’s plenty of rugged Cobb & Co. in this supreme machine.

The fun will kick off on December 13, running through the weekend and again from December 20-24. Greenland – where the sun never sets for 12 weeks each year and also never rises for some months during mid winter. Boarding the Sea Adventurer with Arctic Canada – Sherron’s journey commenced in Greenland’s Kangerlussuaq, sailing along the 90 nautical mile Sondre Stromfjord. Those on board witnessed magnificent carvings of some of the many glaciers and caught glimpses of various sea birds and wildlife that inhabit this area. “During our zodiac cruise in Evighedsfjord we were at the end of the fjord facing two glaciers,” Sherron recalls. “On one side was a very high glacier that was obviously not active as it had retreated back from the water’s edge some time ago, however, the other smaller glacier was very active and you could see it extending way down into the water and dropping lots of ice. Suddenly we heard a huge crack and an entire column (serac) calved into the sea – what a wonderful sight – we were quite safe and perfectly situated to witness the phenomenal activity.” Once out of the fjord, the ship turned northwards along the Sisimuit Coast, crossing the Arctic Circle. The itinerary included a visit to the town of Sisimuit, which has a population of approximately 5,500. Fishing is the main industry, and in winter there are many opportunities to join husky teams and venture into the arctic regions for husky treks and winter camps. Cruising further up the Sisimuit Coast the group took advantage of the perfect weather and enjoyed a zodiac ride to visit a deserted settlement – relics of homes, a cemetery and ancient graves remain from inhabitants of times past. There were also a couple of modern dwellings in the area where people live in the summer to fish and hunt. The scenery is quite spectacular, surrounded by snow-covered mountains, glaciers and floating sea ice. The journey continued north into Davis Strait towards Ilulissat (previously Jacobshavn), which has more dog sleds than people and where massive icebergs are born. The nearby ice fjord is just two kilometres from the town and dumps ice at a greater rate than any other glacier in the world. “We were surrounded by icebergs and ‘bergie-bits’ (mini icebergs that have originated from the larger ones),” Sherron says. “The day was truly a photographer’s ‘picnic’ – everywhere you looked there were great photo opportunities … the sky was so blue and the sea and icebergs >> were glistening – perfection!

A wonderful time was spent mixing with the local Inuit people who were happy to share their stories and lifestyles with the visitors.

“We spent hours in the zodiacs, just cruising through the icebergs and floating ice with each scene better than the last. It truly was an experience hard to repeat.” Due to the icy conditions the group ended up landing at a small Inuit whaling town founded on Disko Island in 1773. Originally called ‘Good Harbour’ in Danish, it is home to a Polar Research Station and they visited some of the town’s local fishermen who showed them how an Inuit kayak was used for fishing and hunting. A wonderful time was spent mixing with the local Inuit people who were happy to share their stories and lifestyles with the visitors. As the ship set sail across the Davis Strait toward Arctic Canada those on board were excited to hear the call from the Bridge – ‘Whales at one thirty’. “We were treated to the most amazing visit of about 20 sei whales that just swam around our ship giving us such an amazing experience – sei whales have declined in numbers despite all efforts to save the species so this was a treat for all on board. “The very next day the call came again from the Bridge, ‘Whales off the forward bow’. First we spotted pilot whales in front of the ship. Shooting out of the water in unison with their young calves they gave us a wonderful display of ‘synchronised’ swimming. Then the captain turned the ship in full circle as we tracked the slow feeding of a large group of bottle-nosed whales, a first sighting for the Captain and many of the very experienced crew!” At about 3.30am on day eight, while in Hudson Bay, the group heard ice scrunching along the hull of the ship as they headed for Isaluit – their progress was hampered by sea ice blocking the way into Frobisher Bay and all shipping from Nunavut – so the crew headed toward Kimmirut further up the strait.

Although the weather was beginning to hamper the journey the adventurers were being treated to the most amazing scenery and even some wildlife sightings – including ring-necked seals, which are the favourite food of the polar bear. Bear watching by many of the passengers finally paid off as they got sight of a very large polar bear swimming ahead of the ship. It was all eyes out to sea while everyone moved quickly and quietly to the best vantage points to watch the amazing sight. The very next day the group also had another treat seeing a polar bear and juvenile out to catch their dinner. “As the weather continued to deteriorate and our journey had to be constantly adjusted to avoid getting caught in ice, we were treated to lectures, films, and demonstrations, lessons in various forms of Inuit art and craft and entertainment by the wonderful culturists, historians, and Inuit specialists on board,” says Sherron. “Several photographers recorded our daily adventures and we were privileged to see this on screen while enjoying pre-dinner drinks each evening. Whenever weather permitted and Swedish Captain, Gunar Roos, considered it safe to do so, the group made expedition landings in some of the most scenic and, to date, untouched places such as Qasigisset, where they were able to hike or find a quiet tranquil place to sit and take in the magnificence of the surroundings. They were also given the opportunity to go ashore and visit small villages that did not even have cars, only snow mobiles and boats. “The last day of our adventure took us to the Greenland Ice Cap where we enjoyed an hour walking along the ice cap, taking lots of stunning photos and reflecting at the experience we were having,” Sherron concludes. “It was a privilege to visit such a very special place on this earth and I’m humbled to think how old this ice is and yet how fast it is disappearing right before our eyes.”

There are competitions where you win small and some where you win big, however, Tony Thurgar and Narelle Raeburn actually won tall. The Sunshine Coast couple were the lucky winners of the Tall Ship cruise competition, which featured earlier this year in Cove magazine, courtesy of Sea Cloud Cruises, Cove Travel and Sanctuary Cove International Boat Show. The wonderful prize was valued at $20,000, and Tony and Narelle had some amazing cruising regions to choose from. They decided on Southern Europe, which would see them sailing on the breathtaking Mediterranean Sea. The journey was to begin in Venice, where Sea Cloud was docked, but the couple added on a little extra sightseeing and instead started their holiday in Paris, France. Tony and Narelle stayed in a beautiful Parisian hotel for one night and then made their way across Italy, to stay in Rome for two nights. They were delighted with their seamless itinerary which was organised by Susan Mallinson at Cove Travel. “From the time we arrived in Paris, we knew exactly where we were headed,” says Narelle. “And our ‘road trip’ was a ton of fun as we navigated our way through the Italian motorways, with Tony loving the no speed limit sections!” Narelle and Tony were thrilled when they first saw Sea Cloud. “We were still in disbelief that we were about to board this wonderful masterpiece,” she says. Tony and Narelle sailed in style, dining at the captain’s table each night, and were very impressed by the excellent service and staff. Many of the other guests were on their second or third Sea Cloud Cruises adventure; with one couple enjoying their 19th voyage. “Watching the staff scurry up the poles and work the winches, sailing the turquoise blue ocean, it was so picturesque words simply cannot do it justice. “From the moment we saw the ship at the dock until we had to get off in Kusadasi, we did not stop smiling,” says Narelle. The pair returned full of stories along with bursting appreciation for Cove Travel, who organised every intricate detail of what Narelle says was the most amazing holiday of their lives.

coffee culture From instant to espresso, lattes to long blacks … Australia’s coffee culture has matured over the past few decades. words Tony Harper
Sitting in front of me, as I tap away on my keyboard, is a cup of coffee. It’s made from beans grown on a single estate in Honduras and roasted by Proud Mary Coffee in Melbourne. It’s good. Really good. There’s an unusual perfume – floral and slightly herbaceous. It’s delicate to taste, but despite that delicacy it has penetration and oodles of complexity. It was brewed at home on an espresso machine that I reckon owes us more money than any other piece of kitchen equipment. It does a great job even in my clumsy hands. Rewind a few decades and the cup in front of me was quite different: bigger for a start; it was a mug. International Roast was my brand of choice – Moccona if I was feeling flush – liberally laced with sugar and softened by 300 mls of milk. It’s a contrast that simply, but clearly, shows how far coffee culture has progressed in Australia. It is still progressing. Powdered and freeze-dried left my pantry when plunger coffee reared its head: that was fancy. These days I can’t abide its acidic attack and coarse flavours: I’m an espresso man. But while researching this story I had a long chat

to Blaine Swanborough from One Drop Coffee – he’s a caffeine artist – who reckons that, done properly, plunger coffee can be terrific. It’s all in the style and quality of the beans. Maybe … The journey from plant to cup is a fairly complicated one. The best quality cherries are hand selected (according to ripeness) and picked. Strip-picking is both cheaper and faster but doesn’t distinguish between ripe and unripe. The cherries are either dried or put through a pulping machine to remove the outer skin and pulp before undergoing a short fermentation that removes a layer of mucilage. Then they are dried. The wet method isn’t practical in arid countries due to the amount of water wasted in the process. Then there’s kopi lewak – I warn you, this is kooky stuff … The Asian Palm Civet is a nocturnal, weasel-like animal that is quite fond of eating coffee cherries. Its digestive system does the job of preparing the beans, putting them through an enzymatic process that makes an exceedingly mild, delicate coffee: the most expensive on the planet. What I’m keen to know is who first decided to harvest civet droppings. Traditionally it was wild civets that carried out the task, but today people farm them, keeping the civets in cages and feeding them cherries. It’s not the sort of stuff that animal lovers will approve of. The end result of all these processes is known as ‘green coffee’, and that’s the stuff that local coffee roasters import. If you buy a tin of Illy beans they have travelled to Australia after roasting, but if you buy the likes of Merlo or
Black Star they have been roasted locally. And even though Illy is an awesome coffee with a great deal of care taken in its packaging, time and distance are tyrannical and a cup made here won’t reach the dizzy heights of one made from fresher beans in Italy. Even green beans are at risk of going stale on the slow trek to Australia. The best roasters work hard to streamline the process, getting the beans here as quickly as possible, keeping them cool and protected on the journey: expensive perhaps, but crucial in the quest for the perfect cup. I drank my first cup of Nespresso last January at a conference where 300 people were seeking a caffeine fix at the same time. Sure, it was nowhere near as good as my Honduras or even a takeaway from the local coffee shop, but compared to the jugs of filter coffee that adorned hotel function rooms for decades it was a revelation. Blaine likens it to putting a chicken parma in the microwave: it will never taste as good as the parma fresh from the oven but, when necessity demands, it’s a pretty good substitute. There’s more: cold-drip, cold-press, vacuum, Napoletana, Aero Press and pods to name just a few, each of which delivers a different style of brew. And we haven’t reached the end of the road. Australia has become a nation of coffee-lovers and the guys behind the ever-growing population of espresso shops are dreaming up new ways to keep us interested. And it’s working: it’s been a long, long time since I’ve opened a tin of International Roast.

Raspberry SoufflĂŠ Ingredients 200g raspberry puree 20g cornflour (mixed with a little water) 80g sugar 18g egg whites Butter for greasing Caster sugar for coating Method 1. Butter the moulds lightly from bottom to top twice with a pastry brush. 2. Coat the inside with a layer of caster sugar. 3. In a saucepan, add the cornflour mixture to the raspberry puree. 4. Simmer and whisk continuously until the flour has been cooked out, approximately five minutes. 5. Whisk the egg whites in a mixer, gradually adding small amounts of sugar until all the sugar has been incorporated and the meringue has formed stiff peaks. 6. In a large bowl, incorporate the warm raspberry puree with one third of the meringue at a time. Be sure to fold the meringue into the puree to keep the mixture as aerated as possible.

7. Place the meringue mixture into a piping bag and pipe into the prepared moulds. Make sure the moulds are clean on the outside and place in the fridge to set. 8. Place in a pre-heated oven, set at 210ÂşC, for exactly 10 minutes. 9. Serve with white chocolate sauce and your favourite ice cream. Serves 4

Herbs & Spices is both a gardening book and a recipe book. What goes into producing a project like this? We are obsessive researchers – I loved digging into the real effects of herbs on our bodies almost as much as debunking the old superstitions. Some gardeners/cooks may be reluctant to experiment with herbs and spices. How can this book help them? Most Aussies are very adventurous with foods at home. This book gives them the entire kit: wonderful recipes, the details of the herbs and then how to grow them in the garden. This is very empowering. What is your favourite herb/spice and what is your favourite meal to cook with it? Lemon myrtle in Thai steamed barramundi. Use the lemon myrtle sparingly. When researching the health benefits of herbs and spices, were there any that surprised you? No, but the research that I read years ago showing that Turmeric helps stave off dementia astonished me at the time. Are there specific types of herbs that will grow better in certain areas? All herbs grow well in containers and they need full sun all day. They are also excellent in garden beds. Coriander goes to seed in the warm months while basil does best in the warm months. You have been a passionate gardener since you were quite young. Are you still learning new things? Yes, every day and I still make mistakes every day. I am still learning about watering too. How does being an author differ from being a TV personality? Being an author is private and deeply satisfying. Being a TV personality means that you have many friends. Apart from gardening, what are your other interests and hobbies? I breed budgies, rare chook breeds, finches and horses. I write many articles on bird breeding and keeping, especially on genetics. Do you have any tips for people who would like to follow in your footsteps? Always do what you love doing. Life is then fun, easy full of success. What else are you working on right now? New media experiments such as YouTube, an expanded Burkes Backyard website and new books.

champagne tastes THE NAME Bollinger is SYNONYMOUS WITH STYLE, TASTE AND CLASS. words tony harper
Bollinge r. It wasn’t always the champagne of choice for James Bond; I’m sure I can picture Sean Connery asking for the 1953 Dom Perignon somewhere through the Goldfinger film, and I reckon the books toyed with Taittinger and other brands. But Bond has always been a champagne man between the martinis, vespers and Mouton Rothschild, and despite his flirtations with Dom Perignon and Taittinger it has been Bollinger that has sustained him through the past couple of decades, numerous lead actors and a bunch of films. None of us are daft: Bollinger obviously splashes out a heap of cash for the privilege of being seen in the films, but I can’t see the Bond franchise accepting dross. And who isn’t aware of Bollinger’s status as one of the top houses in all of Champagne? Bollinger’s style is unique. It’s a house that relies on pinot noir more than chardonnay; unusual but not singular. The base wine is fermented in barrel – a practice that adds enormous complexity and a multitude of aromatic, flavour and textural facets to the wines. And Bollinger owns 160 hectares of vineyard accounting for more than 60 per cent of its needs. It’s an unusual setup for a major champagne house; most use growers for the bulk of their grapes and only hold a small amount of vineyard. It’s not necessarily a recipe for better wine, but it gives a little insight into the Bollinger philosophy, which is one concerned with style, quality and control of its own destiny. The Bollinger publicity talks about ‘wine’ being the focus rather than champagne (a small but critical distinction) in what I guess is a valid attempt at removing the brand from the frivolous side of sparkling wine and focusing attention on the work that goes into creating the base Bollinger wines from which the champagnes are crafted. Even with bubbles in tow, Bollinger is on the sinewy, vinous side of things: serious wine with loads of complexity and depth. The bubbles are mere window dressing and if you’ve ever had the opportunity to drink Bollinger from a big wine glass you’ll know what I’m talking about: more on that in a moment. Bollinger likes to wear the mantle of a small champagne house: it is family owned and compared to the likes of Moët & Chandon with its 20-plus million bottles each year it certainly is small (ish). But with an annual production of around two million bottles it makes the likes of Jacquesson (350,000) and Krug (around half a million) look like also-rans. Moss Wood produces around 168,000 bottles across its whole range! Hand crafted and family-owned perhaps, but Bollinger is still – in global terms – a relatively big player.

Bollinger, or more correctly Guy de Rivoire – its Commercial Director – came to Queensland this year to launch the 2004 Grande Année and 2004 Grande Année Rosé. He moved around the country hosting tastings for the trade plus a lavish dinner at Palazzo Versace, with local champagne maestro David Donald. The Versace extravaganza was out of my reach in terms of distance, dollars and time, but I managed to get to a trade tasting in Brisbane and everything was served in big glasses. By big I mean the Riedel Vinum Burgundy balloons; wonderful aromafunneling fishbowls that do naught for the bubbles (in fact they quell them) but make everything smell and taste bigger and better. James Bond, take note! A pair of vins claires from 2012 kicked off the tasting. These are the wines that were blended with a bunch of others to make what will become the 2012 Bollinger Grande Année. But at the point we tasted them they had neither bubbles nor the complexities gained from the secondary fermentation and time on lees. One was a sinewy, taut, aldehydic pinot noir from Ay (Bollinger’s home village), the other a floral, pretty oak-fermented pinot from Verzenay. They aren’t the sort of wines you’d drink for pleasure (too mean and acidic) but they are interesting insights into the work that goes into creating good champagne. The main event, of course, was the finished wines beginning with the everbrilliant Special Cuvée. In the big glasses it looked phenomenal with notes of mushroom, brioche citrus and cut apple, oodles of texture and more complexity and generosity than usual. I’ll never drink it from a flute again. 2004 Grande Année was next: deep gold colour and a full rich nose of vanilla, toffee and stewed fruits. It’s a full-bodied, powerfully built wine with more grunt and depth than the Special Cuvée; the sort of champagne you could happily drink with a main course. There was also a pair of rosés, non-vintage and 2004; again the big glasses and again it was a case of the non-vintage wine looking taut and complex next to a bold, sinewy 2004. If pink makes you think frivolous and feminine you are mistaken; these are fuller, fruit-richer wines than their paler kin with enough impact to sit comfortably with the likes of lamb or venison. There is no doubting James Bond’s taste: he likes the best and when it comes to champagne, Bollinger is certainly one of the front-runners. But there’s much more to the wine than the support role in a movie franchise and fizz for the affluent. It is painstakingly made and delivers an extraordinary array of aromas, flavours and textures ... especially if it’s served in big, big glasses.
