Editor’s letter Firstly, I just want to mention the generous response we have had to our lovely ‘Pink’ edition. Breast cancer awareness is a cause very close to our hearts and obviously many of you share those sentiments … so thank you. We have also received some positive feedback about our new promotional video, Shine like Stars, which debuted recently. Now, on to this special Celebration edition of the magazine. As we move from spring to summer it seems fitting that our pages are full of fun, fashion and festivities – from the gorgeous Max Mara designs showcased in our Iconic Brands story to the stunning collection of cars in our At the Wheel section. One person who is celebrating a new season, albeit a fictional one, is Downton Abbey actress Michelle Dockery. With the fifth series of this popular period drama due to air in January 2015, Michelle shares some insider knowledge from the set and reveals what her character, Lady Mary Crawley, is up to. Speaking of actresses, Logie nominee and ARIA Award-winning songwriter Clare Bowditch will be headlining the Gold Coast’s

2015 Bleach* Festival program. We are pleased to feature Clare, along with Australian fashion designer Leona Edmiston and master illusionist Matt Hollywood, in this edition. Out of character English actress Michelle Dockery is best known for her role as Lady Mary Crawley in the drama series Downton Abbey. Words Barbara Binstein / The Interview People

British period drama, Downton Abbey, is one of the most widely watched television drama shows in the world. With the fifth series due to hit screens in early 2015, actress Michelle Dockery gives us an insight into her character and what to expect in upcoming episodes. People are very passionate about your character, either negative or positive. What do you like most about playing her? I love it that she’s a complex woman. She’s a modern woman in spite of the period. I love it that she can be very kind. I love it that she can be very mean. She’s very human. I think she has many qualities that I love playing, and I’m always

Does she really get off on all the attention, or does she just feel entitled? I think both … she likes the attention, and she probably thinks she’s entitled.

Have we reached an era in history where you’re free of the corset? We have. We were free of the corset in season three.

How has Mary grown this season, away from her romances? Well, like I’ve just said, she’s through the grief now and she’s in the next stage of her life which is embracing her responsibilities as a mother, as a co-estate manager with Branson, and she is looking for love …

How has Mary’s wardrobe evolved now that she’s not grieving anymore? This is part of the change for Mary in season five, because she’s really embracing fashion. We see her in colour much more this year.

So she’ll be partying? She’s looking for the next love of her life, I guess, and a father for her son.

What’s your favourite thing that you’ve gotten to wear? It’s just the style more than anything, the style of clothing that I’m really enjoying wearing.

second guessing it with Julian and the writing, and it’s never what I expect it to be. So it’s constantly a surprise and a challenge for me.

One thing that’s really nice about Mary is her relationship with Anna. They seem to be more like friends: Anna is really Mary’s best friend. She trusts her more than anyone, and as the series goes on, that continues. They confide in each other, and it’s very important that they have that faith, that trust in each other.

Tell us about that period accent that you use on the show: Well, actually, the accent that we have in Downton isn’t quite as maybe clipped, as you’d call it, as it would’ve been, because I think Julian [Fellowes] felt that we didn’t want to alienate the audience by having a very queen’s way of speaking. So we kind of tamed it down a little bit. It’s slightly less than what it would’ve been. Can you talk about Mary being emotionally ready to date, and what she enjoys in the various suitors that are pursuing her? I see series five as a very new chapter for Mary because she’s moved on. She’s through the grief now. She’ll never get over what happened, the tragedy with Matthew, but she’s moving on. So she’s embracing the changes and the social climate. She’s getting out more. She’s embracing the fashions and she’s enjoying herself. She comes into her own a little bit more each season: She does, she grows, and I think that’s the same for every character. It’s the same for Edith and Branson. We’re growing up, and I look back at series one and she was very much a spoiled young teenager. And now she’s grown into a woman so she evolves with each series, certainly.

There’s some nice chemistry with Tom Branson (Allen Leech) – could the two possibly get together romantically? I think that rumour, I should kill it now. It’s her brother-in-law. That’s … you know … It’s a soap opera. Next question.

There’s an interesting scene about sex and companionship, and also her marrying for position. Do you think that’s still a concern for her, to marry for social position? I think for Mary, yes. It’s just simply her position within the family. They’re aristocracy … it’s important who she marries. Her son is the heir to Downton Abbey so she can’t just marry anyone. There has to be a certain social criteria, unfortunately. She found out that the rebel guy has a lot of money: Yes, that does make a difference to her. She’s very practical, Mary. She’s rational and she’s practical, and therefore she has to make decisions in that way. They can’t just be emotional, impulsive decisions, and as you’ve seen in the past, when she makes those decisions on impulse, they’re not always the best ones. So she has to be rational.

Is there anyone you’ve gotten to act with this season that you haven’t had much of an opportunity to act with in the past? Branson. Allen Leech. We’ve been doing lots of scenes together, which has been great. I did more scenes with the baby this year, which is lovely. How was that? It’s great. They’re twins and they’re absolutely gorgeous. Do they behave most of the time? Yes, and I think that they understand what they’re doing. They get it, that it’s pretend and it’s been fun. How old are they now? Well, in the show they’re two, but they’re a little older, the boys who play them. So that’s been fun, different. A whole different world, really. >>

I love the pig scene. It’s one of my favourites. Is there anything similar to that this season? What, falling around in mud? I hope not. You’ll just have to see. I’m back on the horse, so that was great. I love doing it. It was really good. It was much more challenging this year, the riding, and I had to have a lot more training. What’s Mary’s relationship with Rose? I think she kind of sees Rose as Sybil, really. It’s like she looks out for her. She’s very young, and she’s cautious of her making any mistakes, so she’s kind of taken her under her wing a little bit. Has it been fun to take Mary on the journey of womanhood in that era because she used to be a passive character and now she’s become more active on her own behalf? Absolutely. Well, she’s evolved and she’s grown up. I see her in the first series as a spoiled, young girl. Everyone is telling her what to do, and she wants to break free of all of that. So now she is a woman and she is a mother, and she is old enough to make her own decisions, and it’s been wonderful to play out that journey with the character. Does she struggle with now having to actually figure out what she wants? Well, exactly, and she’s in a bit more difficult position than ever really because she would never have imagined losing her husband. It was very neatly wrapped up, that storyline. Her and Matthew finally got together and they had the boy, and then suddenly the rug was pulled from under her. So she’s now kind of retracing her steps and trying to find the next thing in her life. Do you still find her challenging to play? Yes, always. I said before Julian always writes things that you don’t ever expect. We as actors do what the audience do, we kind of try and predict what’s coming, and you can never really tell. I’m always finding it a challenge. There’s always a new story to play, or a new side of Mary that I haven’t seen before. Is Allen [Leech] more animated in real life than on the show? He’s really fun to be with. I love working with Allen. Yeah, we have a lot of fun on set. It’s a very funny bunch, everyone. We’re always laughing. Sometimes it’s very hard to keep a straight face when we’re all working together. >>

Is there any particular room on the show that you like? Well, actually the train station. I know we’re not in the abbey, but the scenes at the train station are always very poignant. It’s where Mary left Matthew when he went off to war. It’s where she met Carlisle at the station and they had that scene together. There’s always very poignant moments that happen at that train station and I really enjoy playing the scenes there. The show is still connecting with audiences five seasons in. Why do you think it’s resonated? Who knows? You tell me. We’re asked that question all the time and I really can’t put my finger on it, but something has struck a chord with people and they’re still enjoying it, and as long as they are, I’ll stay on the show. What did you do on your hiatus from the show? I did a film called Selfless, which is what comes out next year. It stars Ryan Reynolds and Ben Kingsley, and I play an American. How do you get an American accent? I have coaching. I think for every British actor, it’s important to know the American accent. There’s a lot of American films and television being made so I think it’s smart to get it down as well as you can.

Have you noticed people from different countries will trigger on things about the show that they really connect with? I don’t know. I haven’t noticed. Well, I haven’t spoken to them so I don’t know. I guess for each … it’s a personal thing as well. I think that people relate to the characters on a personal level, in spite of who they are and what period the show is set in. But I think there’s the nostalgia, and I think also with our show, you’re not shocked by anything. I think that’s why the Anna storyline, the rape, was so shocking, because Downton is … it’s kind of harbouring back to a much kind of subtler drama.

Are there any fan friendly Twitter things that you could reveal about yourself? About myself? I love to cook. And I love going out and having a dance with my girlfriends. Are you focusing at all on your music? Not at the moment. It’s hard to find the time to fit that in with filming, but I would love to explore singing again at some point.

What’s the most unexpected place that you’ve been recognised for the show? I was actually in the Middle East, in Jordan. I was doing an appeal with OXFAM, and I had a day to explore and be a tourist. I was at a cathedral, and someone gave me a gift from the gift shop, and I thought, ‘Oh, this is nice. They’re handing out gifts’, and actually it was because they recognised me from the show. I really wasn’t expecting that, but it’s popular. It seems to be all over the world. Something has just clicked with people, and it’s very hard to pinpoint what exactly it is.

Do you have any advice for aspiring actresses? Just maybe patience … having lots of patience, whether it’s waiting for a job or whether you’re on set waiting around all day. Does this show raise the bar on whatever else you’re going to do in the future? I guess, no. I just want to continue to play good roles, and I don’t mind what genre that’s in, or where the character is from. It’s just the story that I look for, and an interesting character that intrigues me.

CLARE Bowditch is sassy, strident, satirical, seductive, a mum and much, much more. Being one of Australia’s finest songwriters, a singer and musician with a number of acclaimed albums and an ARIA Award to her name, her music speaks eloquently to the notion of human beings being human. There is no vanity to her songwriting. Clare is happy to make fun of herself and, as it says on her website, has no qualms about being the scientist or the guinea pig. Her songs explore serious themes but are also cheeky, funny, radical and wrapped in beautifully sung, infectious melodies. Clare says life comprises the passing of mostly small days full of mostly small things. Hopefully most will bring pleasure. While best-known as a fine musician, with lots of side-projects including being a busy mum of three school-age children and filling the role of ‘Rosanna’ on TV series Offspring, Clare believes that ‘work-life balance’ is an elusive beast usually seen only out of the corner of one’s eye. “I have a family as well as a number of careers, all of which are based on doing what I love and what is meaningful for me in the world,” Clare says. “I have a curiosity about the world ... it’s almost a compulsion, a type of escapism I suppose. “I’m curious and I feel that I’m blessed to be able to do what I get to do.” But when it comes to the care of her three children, including twins, Clare has both feet firmly planted on the ground. “It’s totally about the kids,” she says. “There’s never been one doubt in my mind about them being number one – I’ve got that quite clearly in my head.” Having a young family means Clare and husband Marty have to take an entourage of a godmother and mother-in-law with them when they play at various venues around Australia. Once named Rolling Stone Woman of the Year and EN Young Woman of the Year, Clare’s also had time to tour Australia and the world with luminary acts including Gotye, John Butler and the legendary Leonard Cohen. >>

Clare will conduct a series of masterclasses during Bleach* Festival, mentoring and encouraging artists, musicians, singers and songwriters, with preference given to Gold Coast artists. The acclaimed Australian songstress will also perform solo and unplugged during the Festival, which runs from 6-22 March, 2015. Now in its fourth year, Bleach* is the largest arts and cultural festival on the Gold Coast and the 2015 edition will again specialise in site-specific artistic events that respond to the natural environment. Clare’s invaluable music and life knowledge will be perfectly suited the Festival, especially the Big Hearted Business Morning Tea which will reflect all her beliefs. “I aim to teach people to get in touch with what they know, what they are passionate about, and having the courage to talk about it,” she says. “People tend to be scared about changing their lives and their careers." Clare says she doesn’t blame them. “On one hand, it’s not rocket science. It takes an enormous amount of courage and resilience to go against the norm when it comes to defining your own life and making money in a way that makes sense to you. “This will be an intense workshop and I won’t be wasting time slapping on about how awesome I am. Just bring your pen and paper and if you are willing, you will meet some excellent like-minded people from your walk of life. “You will potentially learn more about modern business than they’ll teach you during three years at uni. This workshop is about helping you find a community of people who can be companions on this adventure.” Having started out performing on the Melbourne pub circuit at 17, Clare became known to a wider audience after the release of her independent album, Autumn Bone, in 2004.

Being creatively-minded and observant helped her see that some Australians were struggling to know where to start in the music business. It was then Clare founded Big Hearted Business in early 2013. “The demand to mentor was so immense. Big Hearted Business (BHB) is a movement which supports and educates big-hearted people from all walks of life in the art of making a living doing what they love, while taking care of themselves and contributing to the world in some meaningful way,” she said. “BHB is a love-project built to teach creative people about business, and business people about creativity, in ways that makes sense. “It really is now possible for anyone with an excellent idea to find their audience and build a business based on that. This workshop is for bighearted people who suspect they have something to contribute to the world in ways that make sense. “Of course we all need to make money but it has to be about more than profit. It’s about teaching people to do what they love!” Clare sums up her thoughts on attending the annual 2015 Bleach* Festival in one simple sentence. “If anything I’ve said here sounds like you, just come along, give it a crack.”

Like all men of vision, Max Mara founder Achille Maramotti had his own ideas about

Given Max Mara’s global turnover and reach, it is perhaps surprising to learn that it remains

practising his profession in fashion design and production. At a time when garments were chiefly handcrafted by individual artisans, Achille was among the first to realise how industrial processes could support the manufacture of top-quality designer clothing. Thus he pioneered the concept of ready-to-wear collections that are so intrinsic to fashion today. Setting up in his hometown of Reggio Emilia, Italy, Achille already had his sights set on the international marketplace – hence his naming the fashion house Max Mara. The ‘Mara’ is a shortened form of Maramotti, while the ‘Max’ was added to strengthen the name and to provide global appeal. Max Mara’s first collection embodied the essence of the brand – featuring the clean cuts and precise lines that remain synonymous with the label today, and it met with instant success. Another constant was the company’s philosophy that the visibility of the brand, more than individual names, was what was important. Hence the significant, but low-key, artistic contributions of luminaries like Nanni Strada, Guy Paulin, Jacques Delahaye and Anne Marie Beretta. It was Ms Beretta who, in the 1980s, created the ‘101801’ coat, which proved so perennially popular it has been a part of every Max Mara winter collection since – without modification. That philosophy of placing the designs at front and centre has also flowed into the brand’s advertising campaigns which, with a few notable exceptions, have largely featured relatively unknown models. As the Max Mara empire grew, more ranges were introduced – Sportmax, Weekend Max Mara, Pennyblack and iBlues, to name but a few. Then there’s Marina Rinaldi, named in honour of Achille’s great-grandmother, who ran an haute couture atelier in Reggio Emilia in the 1800s.

But this has been a business strategy that ensures all decisions relating to the company are made by those at the helm, rather than being influenced by shareholders. And – given the Max Mara group’s reported turnover for 2012 was 1.3 billion – it is obviously an effective one. Achille’s lifelong passion for art and aesthetics saw him acquire an impressive collection of contemporary art. Reflecting the evolution of advanced artistic thinking and geared to serving the aesthetic and intellectual appreciation of art, Achille’s collection remains available for public viewing. And 2005 saw the establishment of the Max Mara Art Prize for Women in association with The Whitechapel Gallery, a biennial art prize geared towards nurturing female artists based in the United Kingdom. One year later Max Mara initiated its support of the Face of the Future prize, which is part of the Women in Film awards and was instigated to mentor women in the entertainment industry. Awarded to an actress who is at a turning point in her career, previous Face of the Future prize recipients include Emily Blunt and Hailee Steinfeld. For a company whose history spans only 63 years, the Max Mara group’s achievements have been vast indeed, and always reflective of Achille Maramotti’s central passion for exploring the evolving and interrelated streams of fashion and art. It has been said that, in setting up his fashion house, it was Achille’s aim to restore the accessibility of creativity to women after the austerity imposed by the Second World War – to ‘democratise fashion.’ And his timeless designs have certainly done that … for six decades, and counting. >>

Benefits of booze Is alcohol making you fat? Not necessarily … the link between alcohol and weight gain is far from certain. Words Ross Edgley / The Daily Telegraph / The Interview People

For years alcohol has been portrayed as your waistline’s arch enemy. Considering it’s a close second to dietary fat in terms of its kilojoule density – roughly 30 kilojoules per gram – it’s easy to see why. But alcoholic drinks come in many different forms and each has a different physiological impact on the body that’s far more complex than simply counting the kilojoules on the bottle. Which is why – contrary to mainstream kilojoule-themed dogma — there are studies out there that suggest moderate alcohol consumption and fat loss are not mutually exclusive. It may sound surprising, but you really can lose weight while continuing to consume alcohol. Now, a quick disclaimer: we really are talking about moderate alcohol consumption, defined by the National Institute of Alcohol Abuse and Alcoholism as ‘one drink per day for women and up to two drinks per day for men’. Excessive intake has been consistently linked with all kinds of grisly health issues, and is obviously to be avoided. My point is not that you’re free to binge drink to your heart’s content – you’re not, and your heart really wouldn’t thank you anyway – but that, if treated correctly, that bottle of gin or six-pack of beer in your cupboard shouldn’t be as feared as first thought. So, why does alcohol get such bad press? As far back as 1980, research was published in the American Journal of Clinical Nutrition that dubbed alcohol a non-essential nutrient that contains ‘empty calories’. What this means is that, unlike carbohydrates, fats and proteins, the body has no nutritional need for those shots you had on Friday night. Instead it quickly identifies it as a ‘toxin’, goes into biological overdrive and frantically tries to deal with it. All the time you’re blissfully unaware, but your body is basically on red alert. Next up, scientists from the University of Lausanne in Switzerland proposed the idea that alcohol – and its toxic-like property – is actually guilty of slowing the entire fat burning process. Yet more bad news for ‘kilojoule counters’ who now live in fear that their bodies are taking a double hit of fat burning suppression and fat accumulation from these ‘empty calories’.

Cue the widespread vilification of most – if not all – alcoholic drinks. Countless articles have since been published that compares a glass of wine to several large cookies, or likens a pint of Guinness to an entire roast dinner. But to tar all alcoholic drinks with the same kilojoule-counting brush is wrong. Measuring alcohol – and all food for that matter – by its kilojoule content is a flawed approach. It presupposes that the human body only needs food for energy and kilojoules. Not so: the human body is in fact a complex ‘chemical factory’ that processes different food substances in many different ways. Basically kilojoules and energy are not the only things we extract from food and it’s also not the only thing we extract from certain alcoholic drinks. Let’s take that refreshing glass of gin and tonic you’ve just politely turned down at dinner, on the basis that you’re worried about your waistline. Gin is a distilled spirit, which means that compared to other drinks it’s very low in sugar. Excellent news for the waistline since — alcohol content aside — sugar is readily stored as fat by the body. As the Journal of American Medical Association puts it: “Several studies have found an association between sugar-sweetened beverages and incidence of obesity.” So, you’d be wise to choose a distilled spirit over those colourful, sweetened cocktails that come decorated with fruit to make them look healthy and fresh. Next, one important hormonal factor that determines how prone we are to storing fat is our insulin sensitivity. Put very simply, when a person has poor insulin sensitivity they are more prone to storing fat as their bodies are less efficiently able to process carbohydrates. Interestingly, scientists from the Department of Medicine and Clinical Science at Kyushu University, Japan, have claimed that ‘alcohol improves insulin sensitivity’. If true, it suggests a small glass of gin between courses could actually give your waistline a hormonal advantage in its battle against the bulge. Finally, let’s take red wine as an example. A study conducted in the US back in 1997 found that adding two glasses of red wine had zero effect on the participant’s weight – despite containing

as many kilojoules as two chocolate bars. The sample size was small – only 14 men – but the conclusion has since been reiterated by enough studies to make the scientific community take note. And then there are the other benefits associated with red wine. Our favourite alcoholic dinner drink contains a natural, health-boosting compound known as resveratrol that’s produced when grapes come ‘under attack’ from fungus and disease. It’s believed you ingest these same disease-fighting properties when you drink a glass of red which, to quote scientists from the University of Illinois in Chicago, could have, ‘anti-inflammatory, neuroprotective and antiviral properties’. All these ailments are associated with the ageing process, so the theory goes that a glass of the red stuff can keep Father Time at bay (just look at the Italians). Our relationship with alcohol is complex, and no one would argue that glass after glass of vino is going to do you the world of good. But it is time fit and healthy people stopped worrying unnecessarily about the effect of the odd tipple. We’ve been force fed on fright for too long: in the case of alcohol, high kilojoule content doesn’t necessarily translate into an everexpanding waistline. Where does this leave you, the social drinker who has grown accustomed to counting the kilojoules on a daily basis? It can feel like the science shifts too often on matters of health, but the truth is that we’re still in the early stages of understanding how food and drink affect our bodies. The best thing you can do is become an epistemocrat of food: someone who keeps up to date with the latest advice, but always holds this knowledge in great suspicion. Learn to question the literature, and don’t rely on others to dictate your dietary habits. Read every label thoroughly and not just the kilojoule content. Lastly, and above all else, don’t deny yourself a fine glass of wine and good company just because of the kilojoules. To quote Sir Robert Scott Caywood, “Compromises are made for relationships … not wine.”

True wagyu Tony Harper reveals the secret to enjoying a succulent wagyu steak.

What exactly is wagyu? We all know it’s a type of beef, it’s expensive and it is graded according to the fat marbling; more is better. And there are tales of cattle being fed with sake and beer, and being massaged and coddled like a bunch of rather large, spoiled poodles. We Australians – at least those of us who don’t mind paying for something special – seem content to fork out more than $100 on a properly cooked wagyu steak and quite a bit more for a kilo of top-grade, raw meat. Are we daft? There was a time, not so long ago, when cuts – rump, sirloin, eye fillet etc – were the sole distinguishing feature when it came to ordering a steak or buying beef from the butcher. Now the whole breed, feed, ageing-time and ageing-method are part of that decision. And when it comes to wagyu, things are infinitely more complicated. Peter Cabassi knows more about the stuff than I will in my lifetime. His two butcher shops – Kobe Butcher at Whites Hill and Cabassi & Co Artisan Butchers at Indooroopilly – lead the pack for wagyu in Queensland and Peter has his fingers in all stages of the wagyu lifecycle, from embryo to plate: breeder, wholesaler, exporter, retailer and

restaurateur. He breeds and deals solely with fullblood wagyu. And that’s a point worth exploring. In Peter’s words … “The breeds of wagyu we grow in Australia are Japanese Black (Kuroge), which accounts for more than 90 per cent, and Japanese Red (Akushi), making up the remainder. These cattle are referred to as full blood wagyu (no adulteration of the original genetics from Japan). “So there are a group of full blood wagyu breeders, myself included with my small farm at Kenilworth, that continue this production here in Australia. But there is a much bigger group of beef farmers that use full blood wagyu bulls or semen to cross with their existing cow herds, such as Angus, Hereford, Shorthorn and Brahman. These producers grow crossbred wagyu, which typically has between 50 and 75 per cent wagyu content.” Peter goes on to say that the meat from crossbred wagyu can be very good and that having it available (because it is easier to produce in quantity) has done a lot to make people aware of wagyu and to make the meat accessible. But, he points out, it isn’t true wagyu. And while not too many folk are fretting a great deal about the distinction, enough concern has been raised

for the Australian Competition and Consumer Commission to become involved. Perhaps we’ll end up with an appellated term for crossbred wagyu. Meanwhile Peter and a handful of other guys are intent on keeping things pure and if you step into either of his stores you’ll only find full blood wagyu on the shelves. Fat marbled through the meat is the distinguishing feature of wagyu beef, and each carcass is graded according to the amount of marbling. Much of the fat is monounsaturated … fat that is good for you. And it’s this marbling that gives the beef its unique taste and texture. Cooking with wagyu doesn’t vary a great deal from cooking any other steak, although the beauty of wagyu rests within the meat (not in the accompaniments) so simplicity is paramount. “It is much harder to spoil a wagyu steak because it is less prone to dry out thanks to the marbling fat, and it will not ever become tough,” says Pete. “In fact the most damage you can cause to a wagyu steak is to undercook it. The monounsaturated fats in the marbling are delicious once they reach higher temperatures, not when they are cooler.

“The important first step however is to make sure the meat is fresh, that means not wet aged for too long (no more than six weeks) or frozen for too long (no more than 12 weeks),” he explains. “At butchers or restaurants this is often not well understood or managed so communicating with the seller is important. The higher fat content of wagyu steaks and roasts, just like other food sources that are high in oils, suffer from rancidity. And only a slight amount of this can make a fantastic looking steak be very disappointing to taste. Dry aged wagyu is different and I recommend a minimum of six weeks and up to 12 weeks as the optimum period. “The portion size of Wagyu steaks does not need to be as large as normal beef. The flavour and enjoyment comes from all the elements of its production being just right; it is not something you want to be a glutton on. It’s a rich piece of meat. “So … buy the best quality grade you can afford and then buy a smaller amount. My guideline is to reduce portion size by 30 per cent. This means you’ll only ever be paying a meager $25 for a super steak instead of $18 for a regular high class steak, equating to an extra $7 for the best steak in the world!”

Method 1. Slice kingfish to desired thickness. 2. Combine lemon juice, olive oil and sea salt and cover to marinate kingfish for approximately 10 minutes before serving.

Coconut and finger lime dressing Ingredients 2 finger limes (juice and flesh) 1 tbsp Forvm chardonnay vinegar 2 tbsp olive oil 100ml coconut milk Method 1. Combine all dressing ingredients together and whisk.

Masterstock quail Ingredients 4 jumbo quails (boneless) 100ml soy sauce 50ml Shaoxing wine 100ml water 2 star anis 6 cardamom pods 1 cinnamon quill 1 pce cassia bark 1 tbsp dried orange peel 1 tsp dried chilli 1 tbsp fennel seeds 20g knob fresh ginger 3 cloves garlic 50g Chinese rock sugar Method 1. A dd all stock ingredients to a large saucepan and bring to the boil. 2. Add quail meat and then lower heat to simmer for approximately 15 minutes. 3. Remove quail meat and allow to cool. 4. D ust quail meat in plain flour and shallow fry until crispy. 5. S hred and fold through Asian slaw mix once appropriately cool.

The right white Australia is now home to some newer … and more interesting … white wines.

Sauvignon blanc has been the darling of the casual Australian wine drinker for a couple of decades. And New Zealand sauvignon blanc – from Marlborough in particular – has, by a country mile, led the pack for the whole time. It’s not hard to understand; Marlborough sauvignon blanc at its best has all sorts of enticements … aromas like an exotic fruit salad and a fresh crunchiness that makes it great to glug on a hot day and a really good partner to all sorts of foods. But there’s a sting in its tail. The success of the good stuff catalysed a tsunami of rather ordinary wine under the Marlborough banner: concocted, diluted and saved from the doldrums by a bit of sugar. The shelves of our bottle shops are stacked with them, and it’s kind of heartbreaking when you think about the care and passion that forges the serious wines and the greed and nonchalance that forges the dross. So there’s an entreaty here to take a little care about what brands you buy, and to base your decisions on quality rather than merely price and advertorials. None of it is expensive: the very best barely broach the $30 a bottle mark. But there’s a further entreaty in this story and that’s to think about other whites that can give similar pleasures but different experiences: broaden your horizons and travel the globe without leaving your dinner table. Australia is now home to a large, and growing, collection of grapes with their roots in Spain, Italy, Germany, France, Austria, Greece and further afield. Here is just a handful of the ever-growing collection. Riesling has been in Australia for far longer than sauvignon blanc but still remains the drink that we wine-nerds favour, while the greater public tend to avoid it. And that reluctance is all due to a little mis-information causing an image problem. There was a time when Riesling was simply a word used in Australia to describe semi-sweet wines made from all sorts of varieties, and Rhine

Riesling was reserved for wines made from the Riesling grape. But, strangely enough, there’s no Rhine in Australia; it’s a river that threads its path through Switzerland, Germany, France, Austria, Belgium, Luxembourg, Italy the Netherlands and Lichtenstein. It’s no surprise that the EU dug its heels in and the Rhine Riesling misnomer was stopped, by which time our own labeling laws had caught up and makers could only call a wine Riesling if it was made from … riesling. Genius. But the damage was done and even now, a good two decades down the track, most folk think of riesling as ‘too sweet’ while in fact most of it is bone dry. It tastes great, it cellars brilliantly, it’s inexpensive. What’s not to like? Another darling of sommeliers and wine geeks is gruner veltliner – a variety found mostly in Austria but now planted in the cooler parts of Australia. It has bright fruit notes of lime and grapefruit with a line of spice that’s something like white pepper, and very bright acidity: crunchy, refreshing and a little bit quirky. From Austria look for the likes of Saloman and Nigl, or if you prefer to buy a local version try Stoney Rise or Hesketh, they are both terrific. If it’s the exotic fruit-salad of sauvignon blanc that makes it so appealing, then gewürztraminer has the capacity to thrill, thanks to its overt, exotic nature and aromas of lychee and Turkish Delight. The really good stuff comes from Alsace in France, where it makes everything from bone dry to lusciously sweet. And the Kiwis mastered the variety some time ago, with Vinoptima focusing solely on the variety: expensive but delicious. But my favourite two gewürztraminers come from one very special vineyard in the New England Highlands and both are made by a talented chap called Mike Hayes. Topper’s Mountain and Symphony Hill gewürztraminers have both won accolades and awards, and as far as I am concerned they are the best in the country.

Less aromatic and less fruity than sauvignon blanc, but just as zippy and crunchy is a variety with a presence on the Tuscan coast, but its heart firmly in the twin islands of Corsica and Sardinia: vermentino. Australian growers have embraced vermentino because it thrives in warmer climates, yet its wines have the sort of raciness that usually means a cooler climate. Yalumba Y Series is a mere $12; Running with Bulls Vermentino is around $19 and (if you want to get serious) Ulithorne’s Rose Kentish heads to Corsica each year to make world class vermentino that she ships back home to sell. It’s wonderful.

This Champagne is the epitome of style! A glass of Taittinger is a perfect start to any night of celebration. Quite restrained on the nose with buttery brioche rather than full on toast aromas, the palate is fresh and complex with hints of honey on a nice long finish. Highly recommended for parties and special occasions.

Mount Pleasant Lovedale Semillon 2007 One of the most iconic white wines in the country. Still pure and youthful, this wine has lovely smoked flavours of sherbet and lemon. It shows Manuka honey, mandarin, toast and wax cut through with lime zest, combining to give a developing nose on this restrained bottle-aged beauty.

Mount Pleasant Old Paddock and Old Hill Shiraz 2011 An intense dark red brick colour, this wine draws on a rich heritage of Hunter Valley winemaking dating back to 1880. A complex and brooding Shiraz, the 2011 vintage is a medium bodied wine with a perfect balance, velvety finish and a long and persistent length of concentrating flavours.

There’s plenty more – fiano, a native of Campania in southern Italy but now well entrenched in Australian vineyards; albarino from Galicia in Spain and a great foil to seafood; savagnin, the variety that for a while we thought was albarino, but is just as good to drink if a little less exotic in name; garganega, greco, muscadelle … it’s a long and expanding list. So, all of you sauvignon blanc die-hards, there’s really no excuse. You have a cornucopia of similarly delicious but subtly different wines waiting like wallflowers for you to give them a whirl. A Mercedes-Benz has always represented the pinnacle of car ownership for many people. But the trademark attractions of quality, advanced technology, safety, comfort and prestige have been available to only a relative few until fairly recently. These days it’s different. The world’s oldest car maker has expanded its range into lower-price categories, diversified with many different vehicle types and variants and amped up its designs, in the process acquiring a younger market. Now it costs from just $35,600 to join the Mercedes family, and the German maker hopes you will then remain loyal for life. Much of the sales action is around the newer A-Class hatch, CLA sedan, GLA SUV and Merc’s bread-and-butter, the compact executive C-Class. Driving Mercedes-Benz to the top of the Australian luxury sales scorecard in 2013, the award-winning C-Class outsold every medium car of any price except the Toyota Camry and Mazda6. So the recent arrival of the W205 series is important news for many current wouldbe owners. To conduct this round-up of some of the latest Mercedes offerings, Cove sampled the mid-range C250 sedan and the perky GLA-Class in 200 diesel front-drive and 250 petrol all-wheel drive variants. For good measure, we also visited the more traditional end of the MB spectrum via the S300 BlueTEC Hybrid limousine. C250 The C250 sedan is bang on target, giving the driver or passenger a true Mercedes luxury experience. The C-Class, also available as a wagon, comes with a choice of two 2.0 litre turbo petrol engines, two diesels and a diesel-electric hybrid (not available in the wagon). Prices start from $60,900. This is significantly more than the Audi A4, BMW 3 Series or Lexus IS range-openers, but seems unlikely to be a problem for the Mercedes given its new-ness and established popularity. The C250 sedan costs $68,900 plus on-roads and comes with the same 150kW/350Nm engine as in the GLA250. The engine is accompanied by the seven-speed, double-clutch auto transmission controlled, as in all other Mercs I’ve driven lately, by a short selector stalk on the right-side of the steering column, plus fingertip paddles for manual over-ride. No more superfluous central gear lever means more space for oddment storage, lack of which is the bane of many European cars. Other technical highlights include a body structure weighing 70 percent less – translating into better performance, economy and roadholding – due to the use of a high proportion of aluminium. >>

Mercedes-Benz S300 BlueTec Hybrid Mercedes-Benz GLA250

Standard features in even the ‘cheapest’ C-Class include LED (bulb-less) headlights, nine airbags, blind-spot sensors, collision prevention control, key-less ignition, parking assistance, interior ambient lighting, idle-stop engine control, five-mode driving dynamic settings and navigation. The in-dash screen can be used for internet access when integrated with a Bluetooth smartphone, navigation and GPS coordinate to anticipate tunnels and close the ventilation flaps and the entire owner’s manual is in the car’s computer rather than a difficult-to-stow printed book. The C250 specification adds a full Mercedes Driver Assist package, electric bootlid operation, radar cruise control, nighttime pedestrian detection and lane-keeping control. Among other things ... At first glance, the C-Class’s styling looks similar to the superseded W204, but in fact it’s quite different and closer to the elegant S-Class. The cabin and dash designs have been cleaned up and exude class On the road, it rides silently and behaves controllably in the corners. Although the engine output is nothing special, it supplies the C250 with

limo to appear with a 2.1 litre, four-cylinder diesel under the bonnet. The difference is, this engine is augmented by a 20kW/500Nm electric motor. At its optimum, the diesel-hybrid pushes the two-tonne S300 from rest to 100kmh in 7.6 seconds and drinks an official average of just 4.5 litres per 100kms. At $195,000 plus on-roads, this is the cheapest car in the S-Class range. It’s difficult to imagine anyone with that money caring much about saving fuel, but it’s probably enticing for corporate fleets and luxury hirers for which economy and image count much more than speed. Performance is adequate, albeit at the cost sometimes of audible diesel clatter. The integration of combustion and electric engines is seamless. The S300 is specified with self-parking, air suspension, wi-fi hotspot, inflatable ‘airbag’ rear seatbelts and every crash prevention or mitigation system you’ve never even heard of. Design, comfort and finish are simply flawless, befitting one of the world’s best luxury sedans.

Unquestionably, it’s efficient and competent. The 200CDI with front-wheel drive, a punchy 300 Newtonmetres of torque and official average fuel consumption of 4.6 litres per 100 kms shapes up as an excellent city car. It’s light and lively around town. Welcome standard features include keyless ignition, blindspot monitoring, navigation, bi-xenon headlights and idle-stop engine control to save fuel in traffic jams. This is an excellent spec for urban use. The 250 ($57,900) with all-wheel drive coupled to seven-speed automatic transmission has 150 kiloWatts of power – 50 per cent more poke for highway driving and light off-road adventuring. It’s not 50 per cent faster, of course, because the GLA200’s diesel has so much smooth pulling power; buyer’s choice should come down to horses for courses. The GLA has tidy Euro styling, without the more garish touches Asian makers love. But the low-roof, high-doorsill design means the interior feels quite … cosy, especially with the dark ambience of the upholstery, dash and other trim. The 200 and 250 both have good ride-comfort and cornering behaviour for SUVs. There would be even more to enjoy in the high-performance GLA45 AMG, which I haven’t tried. But, perhaps inevitably when one is driving a variant at the cheaper end of the price scale, the GLA200 doesn’t quite feel like a Mercedes I’d aspire to.

Medical ship A vessel of a very different kind stopped at Sanctuary Cove Marina in September.

MV Ammari, the new medical ship of Youth with a Mission (YWAM) visited Sanctuary Cove as part of the group’s east coast tour from Cairns to Sydney, giving visitors the chance to tour the ship and learn more about the voluntary humanitarian work the group undertakes. YWAM visit Papua New Guinea (PNG), using ships to take primary medical, dentistry, optometry and ophthalmology services and training to remote regions that otherwise have no access to health care. The trip to Sanctuary Cove was part of an awareness and fundraising tour, raising money to completely refurbish the MV Ammari, which has been acquired by YWAM to replace the now-retired Pacific Link. Anna Scott of YWAM says the stop at Sanctuary Cove was one of the best location visits the tour experienced. “This was the first time we have visited Sanctuary Cove. We had over 2,000 people visit the ship, and we raised just under $20,000,” Anna said. “The team at Mulpha Sanctuary Cove were so helpful and welcoming. We are really grateful to them and to the people of the Gold Coast who came to see us.

“We had quite a few mariners and medical professionals from Sanctuary Cove who expressed an interest in volunteering, which is great,” Anna said. The funds raised at the Sanctuary Cove visit will go toward refitting the MV Ammari to include a dentistry clinic, operating theatre, outpatient’s facility and laboratory. The ship will be used to reach remote PNG communities by river, where the communities have no roads or airstrips. Anna said the work they do is life-changing for both the recipients and the volunteers. “We travel by river through PNG, then send smaller boats out to meet the leaders of these remote communities to assess their needs and let them know what we offer,” Anna explains. “The welcome we receive in most locations is very warm.” There are many uplifting stories that come from the work YWAM undertakes, but one that stands out in Anna’s mind is that of Makasi, a woman from the western province, who was born with presumed congenital cataracts. Makasi was blind by 17. Housebound due to her blindness, she was dependent on her

husband for everything, and had trouble caring for her three children. When Makasi and her husband heard of the YWAM ship, they travelled in a dug-out canoe with their children to see if the team could do anything to help. After being assessed by the ship’s medical team, Makasi underwent cataract surgery and her sight was fully restored. “Witnessing that was incredibly special,” Anna says. “Makasi was able to see her children for the first time – her demeanour completely changed. It really did change her life. It was a great privilege to be part of that.” YWAM still needs to raise $4.7 million of their $6.5 million target to secure the purchase of the MV Ammari, and they are also looking for volunteers. You do not need to be medically trained; there are a variety of roles on-board.

The traveller Matt Hollywood Master Illusionist If you could travel in luxury to anywhere in the world, where would you go? I would love to travel to Asia with my children. Korea, Japan, China and more. Amazing sights, amazing food, amazing shopping and amazing people. I’m very fortunate that I speak around 15 languages – yes you read that correctly! German, Dutch, Swedish, Polish, Italian, Chinese (Mandarin), Korean, Japanese, Russian and many more. This is light conversational and enough to survive – plus I can count to 10 and do basic greetings in almost every language in the world. What is your most essential travel item and why? Other than my passport or iPhone it would have to be my amazing travel case that I take around the world with me when I’m doing shows. It folds out into a scooter-style skateboard and doesn’t only make getting around quickly a breeze, but it’s really fun too! Do you have any tips for avoiding jetlag? Before travelling I slowly transition into the next time zone. For example, if I’m off to the USA, for three days before I go I’ll start having some early nights like 8pm and get up 4am – then when I get there, it’s an easy transition and I’m straight into their timezone. Who would you most like to sit next to on a long flight and why? I’d love to sit next to Richard Branson. He’s a real leader, entrepreneur and fascinating business guru. I have been fortunate enough to meet him several times in the past and I’m sure I would enjoy a good chat with him. What has been your best/favourite overseas purchase? My snakeskin cowboy boots. I got them in Las Vegas several years ago and they are so comfy and amazing to wear. I think it’s a little bit like having that one amazing pair of jeans you love to wear and that fit to perfection. Plus, they are real head turners and I get lots of comments.

Share your best/strangest travel story: Approximately three years ago, I was in Melbourne and travelling to the Gold Coast. I was sitting in the Qantas lounge and I heard someone walking nearby me say ‘Hey Hollywood’. It was Shannon Noll from Australian Idol. We had worked together several times before and we often ran into each other during our travels. On this day I asked where he was travelling? He said ‘Coolangatta’. I said great – me too. Where are you sitting? He said 1a. I said – hey I’m in 1a and showed him my boarding pass. He showed me his boarding pass and it also said 1a. He then looked over and said – ‘they have checked me in as you’. His boarding pass also stated ‘Matt Hollywood’ on it. Somehow someone had checked him in with the wrong name – and he didn’t even know. The chance of us saying hi, knowing each other and having this happen was certainly out of this world. Fortunately we got it all fixed, but he wasn’t happy when they made him sit at the back of the plane. What do you recommend as a ‘must-see’ destination? Queenstown, New Zealand. It has so much character, it is beautiful beyond imagination, and it has incredible snow skiing and fantastic fishing. It is a very nostalgic little town where it feels great to sit down by the water and watch some time go by while enjoying a hot chocolate or two just think about life and reassess everything. It really has something magical about it. Do you have a favourite hotel? Undoubtedly the Cosmopolitan Las Vegas. It is full of amazing shops and it’s right in the middle of the famous Las Vegas strip which gives you access to wherever you need to go. There’s a pizza shop that’s hidden within the building called the Secret Pizza Place – and it’s so busy in there every night because people are so excited that they know about the hidden wall, that they go back time and time again. It’s also got brilliant pizza. The rooms are mind blowing with an incredible view over the Bellagio water fountains and the Vegas strip.

They have amazing balconies where you can just fall asleep at night on the balcony beds and the massive spas are nothing short of WOW. Pool parties like most people would never see and an experience that will never be forgotten. Plus it’s reasonably new so everything is in great condition What is your favourite iconic landmark? The Pyramids in Egypt. I travelled there approximately 10 years ago and there really is something magical about them. The history and stories behind them, the way they were built, everything they have been through and 6,000 years of weather, looters and wars have not been able to wear them down. What do you always do before you go? Work, work and work. The only thing that comes before my work is my children, so I’ll cram in what work I need to do then jetsetting – here we come. I also love travelling with hardly anything, and if I need something, I’ll buy it there. Toothbrush, some undies and socks, iPhone and wallet – I’m outta there. Car, coach, plane or ship? Typically for me, time is of the essence, so if travelling, I need to get there in the quickest and most effective way. I would love a cruise, but I think I’ll wait until the Disney Cruise comes to Australia, then take my kids on that. Where to next? I’m glad that I will be at Sanctuary Cove for a long time. We have a magic store on site, we are holding magic lessons for all ages where they learn some of the most impressive secrets of magic, we do the full Las Vegas magic show with all the big amazing things like making people disappear, etc and that happens every Friday and Saturday night. So between my work life and my private life, I’m just staying local on weekends and then when I can, I’ll sneak off to Daydream Island, Hamilton Island and the other amazing Whitsunday islands, then fit in a few trips to Los Angeles and Vegas along the way.

Cuba is an evocative word. It simultaneously conjures visions of rich history, balmy salsa, worldclass rum and cigars, communist propaganda, and the glamour of pre-revolution 1950s. Cuba is also synonymous with such names as Che, Fidel, and Guantanamo. To many, Cuba is exotic, difficult to understand, and characterised only by its past affluence. It is true that to see Cuba is to step back in time, history, and culture, it is not touched by modern globalisation as we have come to understand it. Its ties with Spanish Colonialism, as well as its strong links with the African slave trade and religions, followed by Batista’s dictatorship, the tourist boom of the mid 1900s, Che’s revolution, and living, breathing, communism have created an environment for tourism that is at once outlandish and fascinating. The fabric of Cuba’s culture and social psyche is densely woven with political fibre. For many, Che’s revolution is still a current affair, and its ideologies are fiercely protected. Having burned their relationship with the US, the fate of postrevolution Cuba rested with the success of the Soviet Union, to whom they were allied. The USSR’s ultimate fall in the 1990s spelled pecuniary demise for Cuba’s prosperous economy, which became insular with limited opportunity for outside trade. Under communist rule and faced with the collapse of its economy, the upkeep of public buildings and monuments lost priority in favour of social equality and fiscal austerity. Though many of Cuba’s cities, Havana included, have undertaken to restore their crumbling constructions in anticipation of 500th anniversary celebrations, many of their buildings are marked by neglect and disrepair. This is not, however, an aesthetically displeasing phenomenon, and their decay is a gracious reminder of Cuba’s strong culture and political narrative. >>

Start by wandering the Malecón, an esplanade and seawall stretching eight kilometres, which offers unparalleled views of Havana’s harbour, and is a favourite spot for lovers to stroll. Its backdrop of collapsing façades lends an air of nostalgia and humble emotion to the picturesque scene. In the land where rum is cheaper than water and social mobility is not an ideological possibility, there is always a moment for calm consideration; on the Malecón, Cubans muse the simple joys that money cannot buy, like watching the formidable ocean spray, or cherishing the embrace of another.

The glamour of Cuba resides in its golden history, and relics of luxury. Towards the end of the Malecón, Havana’s iconic Hotel Nacional serves indulgent cocktails at its alfresco bar, La Terazza, where you in turn can watch the activity on the long esplanade. Be sure to try their Piña Colada, made with Cuba’s finest rum, fresh pineapple juice, and blended coconut flesh. The Hotel is itself a World Heritage Site, once graced by the presence of the golden days’ who’s who. Frank Sinatra, Errol Flynn, Marlon Brando, Al Capone and Winston Churchill are just some of the Hotel’s previous guests. The opulent lobby is unchanged from its original design, and lends itself to the ambient air of vintage glamour. From the Hotel Nacional commission a tour around the outskirts of Havana in a classic American car, an iconic symbol of Cuba’s politik. Since the US embargo against all export to Cuba was imposed in 1960, the island has become a living gallery of the golden days. The roads of Cuba are akin to a car rally of muscle cars dating to the post-war era; the vast majority of vehicles in Cuba are from this time and the Cubans’ display of care for these automobiles is impressive. With the import restrictions of new cars only just starting to ease, the Chevrolets, Dodges, and Fords of the American elite still reign supreme. As your smooth ride pulls into La Habana Vieja (Old Havana), you will find yourself in an old world of lavish spending. Old Havana is a rabbit warren of hotels, open plazas and monumental architecture all connected by narrow passageways of hole-inthe-wall rum bars and live music. Even during its prime as a holiday destination for America’s high flyers and literati, the more ornate Baroque and Spanish Colonial architecture was inspiring and reminiscent of times gone by. Now, the decorative styles mixed with the charming artefacts of the 1950s provoke an inspired reverie.

The Second-Hand Book Market in the Plaza de Armas is filled with leather-bound early edition copies of the classics (another reminder of the wealth that once presided) as well as countless tomes of Hemingway, Cuba’s most renowned literary export. Hemingway’s oeuvre during his time in Cuba earned him the Literary Nobel prize, and you can easily procure a first edition print of The Old Man and the Sea for as little as $20. Book in hand, find a local to fix you up with an authentic hand-rolled cigar. Though Havana is far from the tobacco fields of the picturesque Viñales Valley, it is the hub of Cuba’s black-market cigar trade; besides, a visit to Cuba is incomplete without some sort of underhanded exchange. Traditionally, Cubans dip the end of their cigars in fragrant honey, which adds a sweet and floral texture to the flavour of the smoke. The rooftop bar of the Hotel Ambos Mundos (Hemingway’s residence) will serve you a crisp Mojito and views of the Bay as you savour the tastes of the tobacco and ponder the symbolism of the old man in the very sea you are looking over. If you wish to relive the footsteps of the author more precisely, then follow his words, ‘my mojito in the Bodeguita de Medio, and my Daiquiri in the Floridita’. These bars are in Old Havana, but more touristic than the locals will deign to frequent. In the late afternoon and early evening, simply walk. Havana Vieja itself is a museum of architecture. Churches and buildings with a distinct Spanish colonial influence mingle with the austere facades of communist era structures. The large plazas become hot spots for live music and salsa. The Plaza de la Catedral is a visual favourite – lined on one side by an imposing Baroque Cathedral, and wide porticos along the others. The traditional Cuban pastimes of peoplewatching, cigar-smoking, and live music prevail. In the evenings locals will let the music take them, and dance. The Cuban Salsa is an improvised expression of fun, and not of skill. Cubans are most willing to show you the steps, and do not understand the idea of ‘dancing badly’. Mojitos flow freely, and everyone is on the dance floor, aged 10-70. The joy in their movement and ability to relish these simple pleasures brings you back to the moment, to everything Cuba has always had. The Cubans have a dignified strength of character, which is reflected in every aspect of their culture. The buildings of Havana are in noble ruin; they wear their history with pride and force you to consider the past as it mixes with the present in this world of both apparent prosperity and decline. The past is the present here. The luxuries of the 1950s are as prevalent as the present reality of the revolution. The glamour of Cuba resides in its golden history, and relics of luxury.

If you, like me, had not given thought to Indonesia as a premium golf destination – or been limited in your thinking to Bali or Rio Bintan as Indonesia’s only sources of world class golf – then you, like me, have been doing yourself a disservice. The country is home to over 150 golf courses and as I would learn, the capital Jakarta is host to an embarrassment of riches of quality golf. Course designs by Jack Nicklaus, Gary Player, Greg Norman, Arnold Palmer, Peter Thomson, Robert Trent Jones Jnr and Ross Watson are dotted around the Jakarta area, sitting alongside many others that may have been produced by lesser known designers, but are of no lesser standard. I was personally aware by name and reputation of the Royale Jakarta Golf Club, host to the cosanctioned Indonesian Masters on the Asian and European Tours and won in consecutive years by Lee Westwood in 2011 and 2012. Emeralda was another that was on the radar as a major tournament host but, beyond that, I had to plead ignorance.

It was therefore, with fascination and excitement that I was provided with the opportunity to visit Jakarta to take in the sights and a few days of golf in September, courtesy of Australian-based golf travel company Luxury Asian Golf Escapes. Luxury Asian Golf Escapes was founded in Brisbane by Nathan McNamara and Marc Keller, who combine a unique array of talents and experiences forged by years in the Australian golf industry, private sector and the Australian Government. As I would soon learn, Marc is also fluent in the Indonesian language through his tertiary studies and several years working in the Australian Embassy in Jakarta. The two golf courses I was fortunate enough to play with the group before they moved on to Bali for the second half of their tour were the Royale Jakarta Golf Club and Rancamaya (pronounced: ‘Ranch-a-maya’) Golf and Country Club in Bogor, to the south of the city. Royale Jakarta features 27 holes and our groups played the combination of the West and North nines. Royale Jakarta is a fun golf course to play, fairly open in design with a good mixture

of short and long holes and ‘risk reward’ short par fours and fives. Two of the Australians in the group were making their first trips to play golf in Asia and were quickly entranced by the quality of course conditioning and maintenance standards at ‘Royale’. The golf course’s undulating greens were of exceptional quality and provide plenty of challenges, as do the strategic location of water hazards that create some thrilling opportunities – such as the carry to the par-five 9th on the West course fronting the clubhouse and the short iron approach from a downhill lie to a sliver of green at the short 3rd on the North course. The Ted Robinson-designed Rancamaya Golf and Country Club is an 18-hole layout located inside a gated residential community in Bogor, approximately an hour to the south of central Jakarta. The layout is more undulating in design than Royale Jakarta and winds its way up hill and down dale between established woodland areas and waterways. >>

Many well-to-do folk have established luxurious properties overlooking the golf course which sits near the base of an extinct volcano – Gunung (Mount) Salak – that dominates the landscape. Like Royale Jakarta, Rancamaya was a joy to play and is wonderfully conditioned. There are ample opportunities to use a driver from most tees or to play more cautiously if you choose. There were several holes where the local caddies pointed out the best line of play as ‘just inside the right hand crater of Salak’, such is its prominence. Off the golf course, we enjoyed the meticulous hospitality of the friendly staff and the first class facilities available in the clubhouse at each course. Save for the private Founders Lounge on the top floor at Royale Jakarta, we were warmly welcomed in all areas of the clubhouse, locker rooms and the restaurants which served exceptional food. For the entire group, the services, the exquisite local and international fare on offer, spa and massage facilities and the charming, friendly staff contributed as much to the overall experience as the golf itself.

Among the generous local hosts and playing companions was Mr Muntoha Nasserie, one of the original founders who put up significant sums of money to establish the Royale Jakarta club, which opened back in 2008. ‘Toha’ joined the group for golf three days running in Jakarta and brought his family to dinner with the group at the 56th floor rooftop Skye Bar in the BCA Tower – a night to remember with spectacular views over the lights of Jakarta – before accompanying the group down to Bali for more golf and perhaps the opportunity to miss a fairway off the tee, just once! We were overnighting at a ‘State-of-the-Art Airport Hotel’ in Bahrain. The hotel was 50 minutes from the airport! I’d begun to think we were driving back to Australia. We were shown to our room by Nadim, a babyfaced young man who bustled around explaining how to set the safe, access the Wi Fi or play a DVD. I thanked him, and Bill tipped him. Judging from his high voltage grin, the tip was good. Unfortunately, he left before we could ask how to adjust the ‘mood lighting’ and air conditioning which was clearly set for arctic conditions. Bill is pretty good at technical things so I pulled on my overcoat and left him to it. While I struggled to open the heavy curtains, he squatted on the floor trying to read the instructions in front of the light shed by the open wardrobe. Meanwhile I searched for the curtain opening. I clambered behind them groping for a cord. Ten minutes later, panting and frustrated, I rang the desk. “I wonder if you could please tell me how to open the curtains?” “Of course, Madame, Nadim will return.” Nadim went straight to the panel beside the bed. “You see Madame, ‘D’ for Drapes.” “What panel? I can barely see my husband the room’s so dark!” I snapped somewhat unpleasantly. Nadim guided me to the bed and to the panel beside it. “You see Madame, ‘I’ for Illumination. He beamed. I foraged in my purse for a tip. In the gloom I couldn’t see what I gave him but his beam was still high voltage. Bill had conquered the air-con so I soaped up my hair and stepped in to the shower. In the ‘mood lighting’ I couldn’t read the markings on the gold-plated bar before me. “Bill, can you bring my glasses?” They didn’t help. Bill joined me in the shower and together we peered and fiddled. No shower. I rang the desk. “Have no worry, Madame, Nadim is on his way.” Shivering in the hotel gown I concentrated while Nadim demonstrated: “The hot and cold he is coming out together, Madame, and to open the water you must first be down-pulling the bar, then out-pulling for hot and cold. For soap you must be quick-making like this.” As he jerked the bar rapidly up and down, liquid soap spurted out

over my hotel gown. Nadim laughed. “He is very quick Madame.” I thanked Nadim and Bill took care of the tip. Within seconds scalding hot water streamed from the shower head. I squealed, pulled the bar ‘out’ then leapt to the side as icy cold water shot from the jets. I got out and rinsed my hair over the wash basin. Bill meanwhile was going to battle with the fridge door in an effort to get me a calming glass of wine. Swearing under his breath, he felt the top, then the sides. I had two puffs of Ventolin and tried to centre myself. Then I went to the panel beside the bed. What magic letter? ‘R’ perhaps for Refrigerator? Refreshments? Nothing. I rang the desk. “Yes Madame, Nadim is on his way.” I know I sounded testy which was probably because I was testy. Nadim took a card from his pocket and slid it in the front of the refrigerator. “You Sir, and you Madame, you have cards for to enter room? Yes? Is very clever. Card opens refrigerator!” He beamed at his grasp of technology. And hovered. Bill grunted and, rather grudgingly, gave him a tip. Nadim’s beam was distinctly low voltage so I gathered the tip was getting smaller. Grabbing my wine I collapsed on the bed. My head was itchy as I wasn’t able to rinse out all the shampoo and clearly the refrigerator hadn’t been on very long because the wine was lukewarm. Bill offered to venture forth in search of ice. He was back in minutes. “I can’t for the life of me see how you get the ice machine to work and I’m buggered if I‘m going to get Nadim back again! At the rate I’m tipping him I won’t be able to pay the hotel bill!” We joined forces and approached the icemaking machine together. As we did, a youngster of about 10 approached from the other side. I nudged Bill. We waited. The boy inserted the card! The card that opens the door, the card that unlocks the refrigerator! Delighted, we returned to the room to get ours, only to find the door closed and locked. We hovered, hoping a maid would pass by. Finally, Bill rang the desk from his mobile, “Of course, sir, Nadim is on his way.”

Uniquely gifted Decorum Gifts – an eclectic addition to The Marine Village. It was a love of antique gramophones that led David and Michelle List to establish Decorum Gifts, the unique gift and homewares store which has recently opened its doors in Sanctuary Cove. David, an electronics engineer by trade, says he had an idea in his head to open a gift store specifically aimed at men, but it wasn’t until he was searching online for another antique gramophone to add to his collection that he realised the huge variety of unique, high-end giftware available to import. It was then his vision started to take hold. While lunching at Sanctuary Cove with his wife Michelle, the couple saw the opportunity to open their retail store in the picturesque and vibrant waterfront Marine Village. They met with centre management, and the idea became a reality with Decorum Gifts opening for business at the end of August.

“The original idea was that the store be dedicated to gifts for men, but we quickly branched out and realised we didn’t want to limit ourselves to just men; we wanted to bring people the items they simply can’t find in any other retail environment,” David said. The store is a treasure trove of striking pieces, from high-end reproductions, art work and handmade vases, to polished aluminium tableware. David says it is almost impossible to describe the huge range of quirky and eclectic pieces. Many of the items have a marine theme, so the Sanctuary Cove location seemed a perfect fit. “We have all sorts of marine themed pieces, such as old world ship’s barometers, compasses, ship’s bells, old port and starboard oil lamps, a model of Poseidon, and models of sailing ships and yachts,” David said.

“We stock a range of unique items that you just can’t get anywhere else. We have model cars such as a pink Cadillac, Ferraris, and other collectables along with model V8 engines, and we have one of the old Statesman Bars. “I know the saying is a little over-used, but this really is the place to shop for the person who has everything. We take great care in sourcing highquality, unique items that people really respond to.” David says the response from customers has been overwhelming. “The people here at Sanctuary Cove are just lovely, and we have been warmly welcomed,” David said. “Everyone who comes into the store – whether they buy something or not, tells us they love the place. It’s always great to hear.”

A daughter disguises herself as a son and takes her father’s place at war. A magical monkey, an ogre, and a humanoid pig protect a Buddhist monk as he journeys to the western heavens on a quest for true teachings. A folk hero gets drunk, but then saves a village from a vicious tiger. And the Lord Buddha asks the deities in heaven to come down to China and walk among the people, creating a civilization that would last 5,000 years. If you were to break Chinese culture into its building blocks, you would find that it is made up of stories such as these. Some are beautiful fairytales that draw from China’s vast spiritual

culture. Others are moral parables interwoven with history itself. From the time the goddess Nü Wa created the Chinese people from spirit and clay, they have been singing of the exploits of heaven, earth, and humankind. According to one legend, the four-eyed Cang Jie discovered words hidden in the patterns of a tortoise shell, inventing the first Chinese script. From this beginning, a rich catalogue of writings was born, ranging from timeless poetry to dynastic records to Taoist parables and classic novels. To unlock the treasures of Chinese civilization, understanding the language is key; which, of

course, can present something of a challenge for most of the world. Fortunately, though, there is one language that anyone can understand – the language of classical Chinese dance. Much like China’s written language, classical Chinese dance was developed and refined over thousands of years. With a vast and independent system of movements, postures, and gestures, it has deep roots in traditional Chinese ideas about beauty and grace. It is also physically demanding, incorporating dramatic flips and tumbling techniques that share a common ancestry with martial arts. One final element is


essential to classical Chinese dance – yun, which roughly translates as the spirit of the dance itself. Yun embodies the expressiveness of the dancer, the feeling he or she conveys through every movement and facial gesture. Many artists consider yun to be the most important dimension of Chinese dance because, ultimately, the dance is a form of communication. Within the vast system of classical Chinese dance, any character can be portrayed: deity or villain, victorious general or shy maiden. This ability to bring such characters to life makes classical Chinese dance the perfect medium for telling stories. But where can you find classical Chinese dance? At dance schools in Beijing or Shanghai? Perhaps in decades past, but today you need not venture so far afield. Classical Chinese dance is experiencing a global revival, and its new home is in New York. With a name that roughly translates as ‘the beauty of divine beings dancing’, the New York-based classical Chinese dance and music company Shen Yun Performing Arts inevitably holds itself to a high standard. Bringing together dedicated artists from around the world, Shen Yun’s mission is to spur a renaissance of traditional Chinese civilization. The company exclusively showcases two types of dance: classical Chinese dance, and Chinese ethnic and folk dance, revitalising the traditions of the Middle Kingdom’s many peoples. And every season, many of Shen Yun’s classical dances are dedicated to telling stories. In past years, audiences watched in awe as the chariot of the Lord Buddha descended from the skies. They met the ancient heroine Mulan on the battlefield, and journeyed with the Tang Monk and his disciples – Friar Sand, Pigsy, and the marvelous Monkey King – to the western heavens. They watched Wu Song drink far too much wine for anyone about to go toe-to-toe with a man-eating tiger, and they saw the poet Li Bai receive a visit from the fairies of the Moon Palace, if only in his dreams. Shen Yun’s story-based dances form a thread that links past and present, transporting audiences to bygone dynasties and far-off places. Nick Cave will perform a series of rare solo concerts including a show at the Gold Coast Convention and Exhibition Centre. Supported by a small ensemble of musicians Nick will be presenting songs from right across his considerable catalogue, including the 2013 Nick Cave & the Bad Seeds release Push The Sky Away.

Forty-four Australian artists have been selected as finalists in the 2014 Gold Coast Art Prize and will have their work exhibited at Gold Coast City Gallery. The selected works represent many of the key trends in contemporary art such as urban life, landscape and environment, digital technologies and globalism.

The image was shot on a day of photographing Begitta’s 2014 Enchante’ Amour collection.
