Editor’s letter I WANT TO START my first letter of 2015 by mentioning something that happened late last year, when the team here at Sanctuary Cove Publishing (SCP) won the very prestigious Spirit of the Gold Coast category at the 2014 Gold Coast Media Awards. We were given this honour for Gold Coast Creative, an annual publication which highlights the region’s cultural growth and showcases many of the talented individuals and businesses throughout this creative community. The SCP team worked closely with the Queensland College of Art Griffith University Gold Coast and the City of Gold Coast on this project and we are understandably very proud of both the publication and the accolade. Still on 2014, in December I took a preholiday, holiday and enjoyed a very relaxing week on Turtle Island, Fiji. This amazing resort is the focus of our Well Travelled section in this edition, which also includes a special ‘Holiday Experiences’ feature. The informative 14-page section includes stunning imagery and special offers which are sure to inspire your wanderlust. Speaking of inspiration … James Paspaley is one of those lucky people whose passion and working life are in perfect sync. James is at the helm of our Iconic Brand, the Paspaley Pearling Company, and readily admits that ‘going out to sea to find a wonderful
organic creature that lives in a remote part of the world and creates beautiful gems still has that wonderment to it’. Single shot
Gold Coast-based Stage One Productions hosted its Inaugural One Shot Film Festival at Warner Bros MovieWorld. The festival was conceived by Stage One cofounders Darwin Brooks and Blair Moore after their success of PROJECT: ONE SHOT, a historymaking film shot at Sanctuary Cove in mid2014. The film, funded personally by the cast and crew, consisted of one single, continuous Steadicam shot tracking 35 scenes written by 16 writers, performed by over 150 local actors and co-ordinated by 50 crew.

The past year was a big one for BMW, which extensively refreshed or expanded its model range and launched some genuine innovations. The 2 Series and M4 coupe and convertible, M3 sedan, X3, X4, X5 and X6, 6 Series and 4 Series Gran Coupe were in the news here and in Europe. However, the biggest headlines were for the electric i3 town car and i8 high-perfomance coupe and, on a more prosaic level, the 2 Series Active Tourer. The Active Tourer is BMW’s first front-drive model. Rear-drive has been intrinsic to BMW’s identity but it has the front-drive technology of sister brand Mini to use and thus has been born the Active Tourer, a city-friendly hatchback unlike any previous BMW. Simply Isabella Supermodel, actress and now wildlife filmmaker, there are many faces to Isabella Rossellini.
WORDS PIERS MANNING / THE INTERVIEW PEOPLE
WITH A CAREER spanning over four decades, Isabella Rossellini is an icon and legend – just don’t ever refer to her as such. “Icon, oh please,” she mocks, speaking from her farm in upstate New York. “My mother was an icon. Me, I was simply lucky to find work where I did. But there is nothing special about being Isabella Rossellini. That’s who I am, it’s ordinary. That makes me laugh.” Be that as it may, the 62-year-old Italian is still revered as one of the all-time beauties, just like her mother, Golden Age movie star Ingrid Bergman. Much of this fame is due to her close association with Lancome, starring in their beauty campaigns and advertisements for over 14 years. Countless covers for Vogue, Vanity Fair and Elle led to a move into film, with one of her first major roles – in David Lynch’s controversial Blue Velvet – launching the star in the stratosphere as one of cinema’s domineering femme fatales. But Isabella was always conscious of comparisons to her mother and chose roles carefully, eager not to draw likeness. She went on to appear in Wild At Heart, Death Becomes Her, The Innocent, Immortal Beloved and Infamous before moving onto her latest career chapter, as a wildlife filmmaker with her series of short nature films, Green Porno. Created for Robert Redford’s Sundance Channel, it sees the actress break down the mysteries behind nature’s mating rituals, while dressed as the animals herself. Casual and friendly, the mother of two, who was previously married to Martin Scorsese and engaged to David Lynch, talks openly about her relationships with her mother and father, director Roberto Rossellini, while promoting her latest movie, Enemy with Jake Gyllenhall. She also tackles the discrimination facing older actresses and the crippling insecurities that nearly ended her career.
Enemy is a mind-boggling trip, how did you become involved? I am very good friends with the producer, Niv Fichman, and we worked together on a film called The Saddest Music in the World. It was done by a very Avant-garde filmmaker called Guy Madden and I loved both their taste. They were so daring and interesting. Niv called me when he was doing Enemy. I met the director and the three of us went to dinner together. A few months later, they called me asking did I want to do the film but warned me, ‘it’s a very small part’. But I said, ‘Of course, if I went to dinner with you, it means I like you’. So it was a great opportunity and it was wonderful to work together.
The role really amounts to one critical scene with Jake Gyllenhall but it ultimately proves to be the most important. It plays on the ambiguity that you really never know what’s ahead. I thought that scene was brilliantly written, because it’s a conversation between a mother and son, it feels casual, and yet it can go either way. That’s what I love, it’s potentially a portrait of someone going crazy. Very Kafkaesque [laughs].

Tell me about the idea behind Green Porno? Why go in this different approach away from the traditional nature program? When I was a teenager, I dreamed of working on a National Geographic program or with David Attenborough and I was thinking that I would like to do films about animals when I grow up. At one point I thought I’d work as an assistant on something like this but now I’m too old, I get too tired [laughs] and I’m bossy. I’m not good as an assistant [laughs]. Throughout my life, I satisfied my interest in film, as my family did, but the animal world remained as a hobby. When the opportunity came to write an experimental short film series for the internet for the Sundance Channel, I thought maybe I could do what I always wanted to do, combine film and animals. It makes me laughs, it’s mind-blowing and it’s comical at times. That’s where it came from.
So is much of the reason why you agree to a film these days, based on the relationships you have with the filmmakers? As you grow older, relationships count a lot [laughs]. Maybe if I was younger, I would have said the role is too small. But I’ve had a career, I’ve created my reputation. Now I’m just freer and able to do what I like to do.
You’re continuously referred to as a supermodel – do you appreciate that label? Supermodel is not a term that necessarily refers to me though. It’s used for a group of women like Naomi Campbell, Linda Evangelista, Kate Moss. They were the original supermodels and I think, at a certain point in the Eighties, models became more popular than actresses. >>

But I wasn’t one of them. My career started a little before the Eighties, and maybe I was given that title because I lasted longer than many others. A modelling career normally lasts five to eight years and I worked for 25, very actively getting covers and advertisements. That was very unusual. I was in a massive advertisement campaign for Lancome. The company wanted to go global and put an enormous amount of resources into this cosmetic line. They just wanted one model and I was so lucky to have been chosen. I did an international campaign, all over the world. It was so successful that Lancome kept me for fourteen years, which is also very unusual because normally the campaign changes every three or four years to maintain the interest with a new model, a new campaign. You were already accustomed to worldwide fame because of your parents but did the attention that came with the campaign overwhelm you at all? In Italy, there’s this phenomenon known as the paparazzi and they rarely left us alone when we were children. We had nothing to do with my parent’s fame or their work but we always had paparazzi following us, wanting to photograph us coming out of school or at a birthday. I live in New York now and New York is really snobbish and you’re not persecuted. Luckily, I never had the sort of fame that stopped me from having a normal life. Because you saw that happen to your mother? She found it very difficult. But it depended geographically. She could walk the street in London and people wouldn’t bother her there. In Rome, she couldn’t possibly go on the streets. Crowds would swarm around her and start following her. So she would come to Rome to visit us, but wouldn’t stay a long time.

Was your mother against your pursuit of modelling, and subsequently acting, because of this? She would have actually been supportive. Both my parents died in my twenties so they didn’t see the grooming of my career. They were there at the beginning. Mama saw the beginning of the modelling, and even the acting, and she was always encouraging. I would say, ‘I don’t want to be an actress, people will compare me to you and maybe I will always be frustrated my whole life’. She would say to me, ‘Well working on a film, with the incredible talent, focus on that. Not the gossip, or what the press would say, or the critics. Just think of it as a wonderful job that can give you a wonderful life’. My father was more protective. He always said, ‘actors are always waiting to be chosen. They’re by the phone waiting for the phone to ring’. I heard him, which was why I was able to evolve my career. If one door closed, I went to another. >>

Presumably you’re referring to modelling? Yes, of course. Whether it was about age, or whatever. Well actually, it was about age. I would happily model today but no one wants a model in their sixties. The very few times I am selected, not enough to make money or support my life or keep me busy mentally, I evolve. That’s why I think the teachings of my father are still in my head, even now.
You lost both your parents at the same time. To lose them in a five year period was excruciatingly difficult. My dad died when I was 23, Mama died when I was 28. But Mama was very sick. And then I had a nanny, and she died too in that period. It was a very tormented time. Especially because those are the years when you’re concentrating on your career and being independent.
Then I did the film with John Schlesinger, who had worked with such esteemed actors before, and there was no reason for him to hire me, or even to like me but when we worked together. I could see the way he directed me, what he liked and what he didn’t like. I knew what to modify, he gave me a lot of confidence in my acting. I felt, ‘well John doesn’t have to, nobody has to hire me, nobody owes me a favour’. And maybe something like that builds your confidence.

Was it your mother’s idea for you to act in her film, A Matter of Time, which was your first role? All her idea. It was a film she came to do in Rome, which she was delighted with because, as you know, most films take you away out of the country. But it was shot in Rome where my brother, sister and I lived and went to school so Mama was delighted to be able to stay there for four months. My sister Ingrid was her make-up artist. Because she was playing a crazy Contessa who was wild looking she didn’t need a professional make-up artist to do an impeccable job, so she just got my sister to do it instead. Then she thought Isabella has to have an opportunity too so she doesn’t feel left out, so she got me a little part.
Easily your most iconic role is that of Dorothy in Blue Velvet but you once said you didn’t consider yourself a real actress till you made The Innocent … It’s not that I didn’t consider myself an actress. I was an actress, I was working as an actress but I had insecurities. I wasn’t very sure that I was good. Even when I did Blue Velvet, which was very controversial, I thought that maybe, I had done something wrong. Not that I don’t think the film was successful, it was successful and it was controversial. David Lynch wanted Helen Mirren, who is a great actress, and I thought, if she had done it, maybe it wouldn’t have been controversial. She would have brought in a weight that would have spared it from all this negative press and attacks.
Has your career slowed down as you’ve gotten older? There are definitely less roles up until you’re fifty and then they go down even more. I’m not the only one. A lot of actresses disappeared. “I THINK HUMANS are fascinated with treasure,” is James Paspaley’s précis of humankind’s historical fascination with pearls. “It’s the notion of an adventure that ends with finding treasure … pearling still has that romantic draw to it.” And as Chief Executive Officer of the Paspaley Group of Companies and grandson of the organisation’s founder, Nicholas Paspaley MBE (Senior), James is better acquainted than most with the spherical gems from the sea. “I have no memories without pearling,” he says. “My mum and dad first took me on pearling boats when I was a few months old, and it was fairly regular from then on. My school holidays were spent at sea with my dad on the pearling boats, and the business was always part of our everyday lives.” In the past 80 years that business has grown to become Australia’s largest and the world’s leading South Sea pearl company, yet it remains family owned and operated. “A lot of the basics are the same [as for nonfamily-run companies],” says James. “There are some strong dynamics there, but it’s really positive. I can sit down at a board meeting to discuss strategic views and figures for the company with up to 11 family members, then we’ll close the door and go to have Christmas lunch together. “As humans we spend so much of our lives at work; so if you don’t enjoy the people you work with, you don’t have much of a life. But I’m really lucky – my colleagues are my cousins and my very best friends.”
“People like the notion of the fact you don’t have to dig a great hole in the ground and destroy nature to get their pearls.” – James Paspaley James’s enthusiasm for pearling spans all of the organisation’s activities – from operation of the pearl farms themselves to the harvesting, to wholesale dealing and the design of pieces to the final point of sale at retail outlets. “Our core business is pearl production and wholesale – culturing pearls at the pearl farms is still the lion’s share of our activity,” he explains. “And because I grew up with it, it feels a bit like home to me out there. I love to get out of my office and spend a few days at sea, to see where the real work gets done. “Waking in the morning and watching the sunrise on Broome’s Eighty Mile Beach is just phenomenal,” he says. “Recently I took some clients up there, and within five minutes of being on the water we had seen a whale. The sea was clear and blue, and it was just fabulous. There’s something about the feeling you get from being in the middle of the hive of activity of dive ships that’s always a bit magic to me. “Going out to sea to find a wonderful organic creature that lives in a remote part of the world and creates beautiful gems still has that wonderment to it,” he says. >>
The Paspaley Pearling Company THE PASPALEY PEARLING COMPANY was founded by Nicholas Paspaley MBE (Senior), who as a boy had fled to Australia from Greece with his family during the First World War. After landing at the port of Cossack in Western Australia, Nicholas’s father Theodosis entered into the pearling industry, blazing a trail all five of his children – Nicholas, Michael, Mary, Katina and Nellie – would follow after he passed away in 1924. Nicholas joined the industry at the age of only 14, and by 19 was at the helm of his own pearl lugger. Moving further north to Darwin, Nicholas expanded his fleet of pearling ships to five and established the Paspaley Pearling Company. The outbreak of World War II saw all Australian pearling luggers impounded and subsequently destroyed, for fear the Japanese army could use them to invade Australia. When resuming his business after the war, Nicholas found things had changed markedly – the advent of the plastic button had reduced worldwide demand for natural pearls – so he ventured into the cultured pearl industry that had been pioneered earlier in Japan. This led to the establishment of Australia’s first two pearl farms – one at Kuri Bay and one at Port Essington – and the emergence of a distinct premier category of cultured pearls: the South Sea Pearl, which fetched prices hundreds of times higher than those of its competitors. His son, Nicholas Paspaley AC, a graduate economist, joined the company in 1969 and, as well as steering the company through times of extensive growth and expansion, he was instrumental in pioneering the founding principles of the cultured pearl process which revolutionised the industry globally. He also established the South Sea Pearl Consortium, a not-for-profit organisation dedicated to promoting and protecting the reputation of the South Sea pearl. Nicholas is now Chairman of the Paspaley Group of Companies, while his son James is Chief Executive Officer and his nephews Peter Bracher and Michael Bracher are Executive Directors and facilitate the worldwide distribution of Paspaley pearls. Today Paspaley pearls appear in the collections of iconic international jewellery brands and the record bid of $2.3 million for a single strand of 23 Paspaley pearls at Sotheby’s in New York in 1992 still stands.

“Pearls have always been a critical part of my life, but time and again I have taken people out to the pearl farms for the first time, and within 20 minutes they have become addicted.” Perhaps it’s that element of nature that enhances the romance that’s always surrounded the growing, finding and possession of pearls. “Diamonds are hard and cold, while pearls are smooth, organic and natural,” says James. “Gemstones are dug from the earth then cut and polished – it’s a very industrial process. But pearls come out of the oyster ready-to-wear, and it’s a sustainable industry. People like the notion of the fact you don’t have to dig a great hole in the ground and destroy nature to get their pearls.” Operating with a ‘leave no trace’ environmental policy and under a Pearling Code of Practice designed to minimise environmental impact, the Paspaley farms are treated as flora and fauna reserves, which is reflected in the abundant wildlife that surrounds them. Many of the farms are sited in or adjacent to national parks, marine parks or Aboriginal lands, and Paspaley remains committed to continued research into environmental issues and ecological sustainability. But for all his love of the sea, nature and the romance of taking pearls from oyster, it’s the retail element that excites James the most. “In the end, retail is what it’s all about,” he says. “Someone has to love and want the pearls, and to wear them. As a wholesaler you don’t get to talk to those people, but as a retailer you do. “A lot of the time when people buy jewellery it is for something special – a birthday, an engagement or wedding, or even a promotion. It’s one of those moments when they have decided to spoil themselves or someone they love, and as a retailer you get to share that moment with them. That’s what makes retail really fabulous. “It’s a strong fascination.”
PEARL FUN FACTS Pearl farming is known as ‘periculture’. Every pearl is unique – no two are completely the same. Pearls are the only precious gemstone made by living creatures. Harvesting pearls does not kill the molluscs that create them. The colour of a pearl is determined by the lip of the shell they are growing in. All molluscs can make pearls – saltwater pearls are made by oysters, while freshwater pearls are from mussels. The oldest known fragment of pearl jewellery was found in the coffin of a Persian princess who died in 520BC. Pearls are the traditional gift for a 30th wedding anniversary.

Cartier’s iconic 5th Avenue store stands on land that founder Jacques Cartier traded for two pearl necklaces. Found off the coast of Panama in the 16th century, the La Peregrina pearl (Spanish for ‘The Pilgrim’) was first given by King Phillip II of Spain to his new bride, Queen Mary. It later belonged to Queen Margaret, Joseph Bonaparte and the British Marquis of Abercorn before Richard Burton purchased it for Elizabeth Taylor in 1969. In 2011, the pearl was sold at Christie’s for a record USD $11.8million.

IF YOU ARE anything like me, you will know the excitement and trepidation that summer brings each year. In Queensland, resort collections are the most important of the year as they correspond directly with our subtropical, casual chic lifestyle. With a celebrity following including Beyoncé, Rihanna and Diane Kruger, it is worth paying their range some attention. As we see a global movement towards bespoke design and fashion, it is these smaller local labels that should influence our sartorial choices. All three featured labels design and manufacture their swimwear in Australia. This means your pieces are not mass-made, and you are unlikely to see a parade of the same bikini while you are strutting the beaches. The overriding trend of the resort collections this season is characterised by prints and more prints – from geometrics and stripes to fruit, flora and fauna. For the rest of us, let’s not dwell too much on having a Victoria’s Secret body … and instead focus on emphasising our good bits and skimming over the not so perfect areas through clever styling and choosing cuts and prints that flatter. Vikki Australia introduces a range of relaxed beachwear.

VIKKI SCOTTS doesn’t do things by halves … when she wanted a job in hospitality she travelled to Switzerland to study hotel management; when she opted for a career change she bombarded Cunard with messages until they gave her a position on the QE2; and when she decided to start a fashion label, she spent months sourcing fabrics, developing designs and meeting with manufacturers before launching an eponymous range of beachwear in 2014. “I wanted to do something beautiful, something creative and something that I enjoy,” Vikki explains. “I originally thought about just designing sarongs but after doing some research I decided that was too limited.” As a result, the Vikki Australia range now includes a line of stylish kaftans, tunics, sarongs and swimwear, as well as shoes and accessories. Having worn some of Vikki’s beautiful pieces on my recent visit to Fiji, I can certainly vouch for their comfort, quality and versatility. Much of the collection was inspired by Vikki’s own extensive travels around the world. The chic, casual designs come in a variety of colours and fabrics and are available in a range of sizes from S to XXL. “I’ve done bigger sizes because I find it so hard to buy clothes,” she admits.
Pricing was another important consideration for Vikki. “It’s holiday clothing so I wanted to make it affordable … buyers these days are very savvy, they want quality, they want choice and they want value for money.” In order to meet this demanding market, Vikki has developed a strong online presence, as well opening a pop-up boutique in Sydney’s Avalon Beach. “I designed a really beautiful website, which is very user friendly,” she explains. “I also engaged award-winning photographer Nick Leary to do a photo shoot for the launch.” A long term resident of Sanctuary Cove, Vikki chose the InterContinental Resort Sanctuary Cove as the backdrop for the stunning shots which feature international Australian model Camille wearing the Vikki Australia range. With the new 2015 collection now available, Vikki is very proud of her achievements. “I’ve done everything myself … the logo, the designs, the garments, the patterns. “And I’ve loved every minute of it … it is very rewarding to create something so beautiful.

Couture kids Discover a world of beautiful things at Sparrow Couture for Kids.
ONE OF SANCTUARY COVE’S long term tenants, Sparrow Couture for Kids has been an integral part of The Marine Village for almost 15 years. Owner Irene Marshall first opened the store in 2000, selling her own brand of children’s fashion. “I have worked in fashion my whole life and I have always loved designing,” Irene says. “So for the first few years of my business I was just selling my own brand Sparrow Couture. “In 2010 I reinvented the business; I moved to a larger space in The Marine Village, and decided to leave the design side and focus on the store. Manufacturing locally at that stage had just become really difficult.” The shift of focus allowed Irene to concentrate on selling beautiful, unique children’s products and saw Sparrow Couture for Kids go on to become one of the Gold Coast’s most loved children’s boutiques.

Part of Sparrow Couture’s appeal is that customers can rely on finding something out of the ordinary. Sourcing quality items is one of Irene’s passions and over the years she has developed a keen sense of upcoming trends whether it be in children’s clothing, accessories or toys. “There was a time when customers would only go for the big names and European brands, but all that is different now, social media has changed the way customers shop,” Irene explains. “I have embraced social media and our online business,” she says. “I find it really complements the store – the two elements work very well together.” According to Irene, when clients see something online they want it straight away, so everything happens a lot faster than it used to, especially when it comes to her customer base, which is made up of a lot of young mothers.
“Customers love something that is original and beautiful and made well. I am a stickler for quality so I am always looking for designers who are not just creative, but also have that quality finish. “In this age of social media, I am able to find ranges and designers who I simply wouldn’t have had access to in the past. We’ve become so obsessed with counting calories over recent years that we’ve lost sight of the basic tenets of healthy eating: consume a good spread of foods, and try to steer clear of the super-processed stuff. It really doesn’t take marine-like discipline and an endless supply of so-called superfoods to give your body all the nutrients it needs to lead a healthy life. In fact, an increasing body of research suggests that instead of agonising over what we eat, we should be focusing on how we eat. Try upgrading your nutritional habits with the following four surprising lifestyle-based tricks and you could find yourself on a fast-track to feeling trim and healthy ...
EAT SLOWLY Remember when your parents repeatedly told you to ‘slow down and take your time’ at the dinner table? Well, it turns out they were on to something. Research that was published in the Journal of Epidemiology analysed the eating patterns of 3,737 men and 1,005 females and found a very strong correlation between people’s speed of eating and BMI (Body Mass Index). Put simply, the faster you eat, the bigger you tend to be. Although an epidemiologic study – ie related to the patterns, causes, and effects of health – the results are supported by objective findings published in the Journal of Clinical Endocrinology and Metabolism. Scientists monitored the hormonal response to different eating speeds and found that ‘Eating slowly favours satiety
through an increased postprandial response of the gut hormones’. Try to make dinner a social event. As mum and dad used to say, take your time and appreciate your food. You’ll find your stomach is better able to assimilate nutrients, and you’ll feel fuller as a result.

RE-HEAT YOUR FOOD Recently, BBC TV series Trust Me, I’m a Doctor conducted an experiment around cooked pasta. Doctors fed either freshly cooked or reheated pasta to their subjects, and then took a succession of blood samples to compare the effects of the food on the body. Their conclusion? Yesterday’s leftovers are healthier than today’s hot-off-the-hob dinner.

The reason appears to be that reheating carbohydrate-dense foods changes their structure, making them more fibrous. As a result, the body processes the pasta more like a healthy fibrous vegetable, without the normal surge in blood sugar levels normally associated with carbs. This is important because that surge in blood sugar is, according to scientists from the Human Nutrition Research Centre, partly responsible for cravings and weight gain. Pioneering this field of research is Dr Denise Robertson from the University of Surrey, who has recently received funding from Diabetes UK to further analyse the impact starch can have on blood sugar. It’s worth noting that the findings are not yet conclusive, but there really might be value in re-heating those leftovers from yesterday’s meal.

However, swinging to the other end of the spectrum appears to offer positive effects. So, a huge, tactical homemade burger or a well-timed mountain of cheesecake can in fact serve to regulate your fat burning hormones and get your metabolism firing correctly. Of course, timing is key here: it’s not something you’d want to do regularly, and exercise should never be far away. The benefits of binging, like skipping breakfast, reheating pasta, and eating slowly, represent relatively new knowledge in the field of nutritional science – an area that is evolving exponentially and far faster than ever before. It’s open to reinterpretation, and prone to contradiction, but slowly we’re unlocking the ‘magic’ of food one ‘trick’ at a time. The key – and it’s always worth keeping this in mind – is that nutrition should not be dictated by checklists and calorie counting. Instead it should be enjoyed and explored. The four suggestions above are a great place to start.

Choice chooks A new breed of Australian poultry farmers are raising chickens in true free-range fashion.

ONCE UPON A TIME I had access to the best chickens around. Nothing like the fat white things you find shrink-wrapped at the supermarket – even the free-range versions. These were built a little differently, darker in the colour of both flesh and skin and packed with flavours more complex, more intense and far more satisfying than those we tend to associate with chicken. And there’s a good reason for that. The birds that end up in our butcher shops and supermarkets have been selectively bred, over many, many decades, to yield plenty of meat in a short space of time. It makes sense from an efficiency point of view: bigger chooks ready for the shelves faster. But flavour is built by time and there’s a price to be paid when it comes to shortcuts. The taste – if you’ve ever had a seriously good bird like a Bresse chicken for comparison – is like eating in black and white. Sometime in the mid 1990’s my dad embarked on re-creating the meat chook from heritage breeds … slow growing and full of flavour. And for the following decade his Havenscroft chickens were the best thing you could buy: we began to eat chicken in colour like I presume folk did half a century back. And I was spoilt. But Havenscroft was sold and it has been close to a decade since I ate my last mouthful. In late 2014 I was given the opportunity to buy a few chickens from Sommerlad’s Poultry, and from what I could glean they were raised on a philosophy and farm not too dissimilar from Havenscroft. When I finally got to taste some I was stunned; these were richer, more flavoursome and more decadent than any Australian chicken I’d ever experienced, and not too dissimilar from a Bresse; the most celebrated chicken on the planet. They average ten weeks of age before being readied for the table: twice the lifespan of a regular chicken, and it’s absolutely apparent when you taste them. It’s kind of like a chicken version of pure-breed wagyu in terms of its decadence and intensity. I have a family of four all with healthy appetites and we have leftovers from a size 15: try that with a supermarket chicken!

The Sommerlad’s farm is near Tenterfield in northern New South Wales and its main focus is breeding the chickens. Currently it processes less than 200 chickens each month for the table, but raises many more which are distributed between eight rather special farms around the country. There they are raised in true free-range fashion. What interests me is the different nuances that will come from each farm. I’ve eaten chickens raised at Sommerlad’s and at Walker Farm on the Sunshine Coast hinterland and it’s not hard to spot the difference between the two. And I reckon you could line up chickens from all nine farms and eat nine chickens of similar qualities but different characteristics. Most of the lore on cooking these birds suggests a long, lower-temperature roast. The Sommerlad’s crew suggest around 150 degrees celcius for 45 minutes per 500 grams. So you’d cook a size 15 chicken for two hours and fifteen minutes. And they reckon it should be a moist cooking, ie: water in the bottom of the pan, covered with foil for most of the oven-time and frequent basting. I’ve followed that guide for spectacular results. I’ve also poached a bird in masterstock for 90 minutes and made a gently-smoked number in the Webber. They are versatile birds, but the key is in extending the cooking time to soften the tougher tissue that comes with age. And there’s a world of fun to be had with the cooking juices, bones and leftover meat (of which we always have plenty): stock, soup, pies, stir-fry and the creation of the best masterstock on the planet. Because of the limited production, the Sommerlad’s chickens aren’t easy to find, but the fact that they are being raised in Queensland, New South Wales, Victoria, ACT and Western Australia means that they have a thin but thorough spread over the southern part of the country. Pour, enjoy & repeat Tony Harper explores some options for preserving wine after you’ve opened the bottle. YOU WOULDN’T SLICE AN APPLE, leave it for a day, then expect it to look and taste as fresh and juicy as it did when first cut; nor a banana; nor a pear. The same goes for wine: open a bottle, drink a glass or two and leave it (even in the fridge) and things will change. Usually it’s not for the better. There are exceptions. Nebbiolo seems to love air, building all sorts of complexities within hours – sometimes days – of exposure, even after decanting. But it’s a rare beast (and a wonderful one). And styles like tawny port, vinjaune, Australian muscat and topaque (that’s the politically correct term for what we used to call liqueur tokay), madeira, marsala and some of the sherries can hold for weeks after being opened:

they don’t improve … they simply degenerate very slowly. But pretty much everything else under the wine banner starts to degrade once the bottle has been opened. So what are the options for those of us who don’t polish off a bottle in a setting? There are plenty, and the options (some good, some puerile) keep growing. Your refrigerator is something of a godsend when it comes to preserving open bottles; although whites tend to fare better than reds once that cork has been pulled. Warmer temperatures hasten the effects of oxygen, which is why a decent shiraz can spoil overnight while a $12 sauvignon blanc looks pretty good two days later.
I’ve been known to shove an open bottle of red into the refrigerator to give it a little more staying power; not ideal (you need to think ahead to warm the next glass, and oxygen absorption increases with lower temperatures while oxidation increases with higher temperatures, so the fluctuation can be a killer), but a definite improvement. The obvious ‘perfect answer’ is the half-bottle: just enough for a couple of glasses, but the range available is pretty dismal and there’s quite a hefty surcharge for the privilege. The really canny folk keep a few empty half bottles and simply decant half a freshly opened bottle into one, leaving the other half to be drunk.
For a long time Vacu-Vin was the sole tool for the half-hearted wine drinker, and I must admit I’ve never been terribly convinced. It works by simply removing a portion of the air from the open bottle. But I reckon it fails in two respects: it doesn’t create a complete vacuum so there is still plenty of oxygen in the headspace. And when you are pouring your glass of wine – well before the Vacu-Vin comes into play – the simple action of tipping and pouring floods the wine with air: damage done! Systems – like Winesave, Preservino, Winelife and Vinofresh operate on inert gas. So let’s say you pour a 150ml glass of wine from a bottle of red, you spray inert gas in to displace the air in the headspace, forming a harmless blanket over the wine. The clever systems actually use the gas to force the wine through a pouring tube so there is no contact with air at all. Coravin is one of the most effective machines available for home use. It uses a needle to pierce the cork and flood the headspace with argon, pressurising the wine and allowing it to be poured through the Coravin trigger. You can then retract the needle and the cork expands to fill the wee hole. Clever, but absolutely useless for wines under screwcap. Argon and nitrogen are the two main gases used, and argon does a much better job. But even with argon filling the headspace there is a change of environment for the wine and over a few days the wine kind of stales; it loses aroma and its taste seems to blur. So when you go to wine bars and retailers with bottles of Grange on pour, don’t expect your $50 100ml glass to taste the same as a new bottle, unless you are lucky enough to land on the day it is opened. If we step back in time a couple of thousand years – before bottles and corks – a rather effective system was used. Wine came in clay jugs or amphora with a layer of olive oil floating on the surface protecting it from air: clever and as the jug was slowly emptied and the level of wine fell, the olive oil fell with it. There’s a rather fancy decanter called Savino that plays on this ancient technology, using a glass plumb to cover the surface of the wine and allowing wine to be poured around it. I’ve watched the videos and there’s no escaping the fact that air courses through the wine when the decanter is filled and when each glass is poured. Far less expensive, far simpler and far more effective is Wine Shield – a small, flexible disc that floats on the surface of the wine – just like olive oil – keeping it relatively oxygen-free. None are perfect. The fact is, as soon as you open a bottle of wine you have changed its environment and – over time – the wine will change, rarely for the better. I’d urge you – if you can’t tackle a bottle in one sitting – to tackle it in two. But if you really must hang on to it … do something to keep it in passable condition. Just like you would an apple.

LET ME just preface this story by saying that my words can never do justice to the beauty of Turtle Island. However, as my partner Derek and I have just spent a wonderful week at this exclusive Fijian resort, I will attempt to do so. Located just a 30-minute flight from Nadi International Airport, Turtle Island is like a tropical treasure chest which has been dropped into the middle of the Pacific Ocean. On the surface, you notice the obvious beauty … the warm golden sand, the clear blue water and the lush green vegetation … Dig a little deeper and you discover another layer of gems … the luxurious accommodation, the private beaches and the fresh island produce. Finally, you uncover the most precious jewel of them all … the ‘Turtle family’, the Fijian men and women whose graciousness and pure enjoyment of life ensure every moment of your stay is truly memorable. The magic began the moment we were carried, like a warrior king and queen, from the seaplane to the shore, where a group of locals welcomed us with a song and a smile.

This warm, friendly greeting set the tone for the entire week and was the catalyst for our love affair with the island and its people. One of the main things that sets Turtle Island apart from its competitors is the welcoming village atmosphere. Unlike some high-end resorts, which can be quite impersonal, this is a real community, where everyone knows your name and you are immediately made to feel at home. Another big difference is the lack of technology … there are no flat screen tvs, no hot and cold running wifi, no emails, faxes or facebook, nothing to disturb the natural beauty and tranquillity (although if you really must keep in contact, you can access the internet in the gift shop). But don’t for one minute think this is some primitive outpost … Turtle Island not only offers award-winning luxury, complete with day spa, water activities and first-class service, it is also one of the world’s leading sustainable tourism destinations with its own solar power station, fresh water reservoir and recycling plant. Within 24 hours of our arrival Derek and I had embraced the laidback lifestyle and reached a state of complete relaxation.
Our spacious, well-appointed bure was a quiet haven where we could rest and recuperate and our personal bure valet, the wonderful Papa Tommy, took care of our every need, from early morning wake up calls so we could witness the glorious sunrise to ensuring the cookie jar was always full of my favourite chocolate brownies. Most days the biggest decision we had to make was whether to unwind on the day bed or the sun lounge; whether to order a Pina Colada or a Mojito; whether to join in the beach volleyball or just watch from the sidelines. We also quickly discovered that Turtle Island’s reputation as ‘the ultimate romantic hideaway’ is very well deserved. Our day on Devil Beach, a long, secluded stretch of sand, with nothing but palm trees, a gourmet picnic and each other for company was truly magical. During our stay Derek also tried his hand at some of the more physical activities – mountain biking, horse riding, deep sea fishing – while I was happy to spend my time lazing in a hammock with a good book, occasionally venturing into the crystal clear ocean to cool down. >>

With only 28 adult guests on the island at any given time you can spend as much or as little time with other people as you choose. We were mostly content with our own company during the day, however, we also enjoyed meeting up with our fellow guests for pre-dinner cocktails. They were an eclectic group, from all corners of the world and all walks of life, making for some very lively and interesting conversation, especially after a few of the aforementioned Pina Coladas. Which brings me to the food … Dining on Turtle Island is amazing, with freshlycaught seafood and hand-grown produce on the menu. (Derek was particularly fond of the ‘lobster eggs’… an exotic take on traditional eggs Benedict.) The island has its own vegetable gardens, bee hives and orchards, as well as a host of highly trained chefs, ensuring every meal is a delicious occasion. The glorious island setting leant itself to romantic dining and Derek and I enjoyed everything from a private candle-lit meal on the floating pontoon to a cliff-top dinner party under the stars. We also joined the rest of the ‘family’ at the communal table, which was placed in different locations each evening depending on the weather and the planned entertainment.

Fijian night, with its passionate dancing and soulful harmonies, was a real highlight, while the traditional kava ceremonies, which took place nightly, allowed us to try one of the popular local customs (although I must admit I much preferred the taste of the cocktails). As the week unfolded, it was the friendly staff who made our stay extra special … the workman who climbed a nearby tree and presented us with two freshly picked coconuts; the maintenance crew who invited us to join in their Christmas celebrations; the kitchen staff who staged an impromptu concert as we ate our breakfast; and the ever-smiling Tommy who, at the end of our stay, presented us with a personalised compendium of photos that captured our time on the island perfectly. Now I don’t want to give away too many secrets about this tropical paradise (such as where you can find the ruins of the Stone God that appeared in The Blue Lagoon movie or what ingredients go into their signature Bahama Mama cocktail), after all, one of the nicest things about Turtle Island is the little, unexpected details that set it apart from other resorts. However, I will say that being a member of the Turtle family is a real honour and we are very much looking forward to going ‘home’ again as soon as possible.
TURTLE ISLAND FACTS Turtle Island, is part of Fiji’s Yasawa Islands. It is approximately 500 acres in size and is just a 30-minute flight from Nadi International Airport. The island was first discovered by Europeans in the 1800s, however, it wasn’t until the current owner, American entrepreneur Richard Evanson, purchased the property in 1972 that development began. Some of the first visitors were the cast and crew of the remake of The Blue Lagoon movie starring Brooke Shields. When the project finished filming, Richard realised how much he enjoyed having people on the island, so he decided to open the property to guests. Since opening in 1980, the development of the facilities has been continuous, however, in order to keep the integrity of the island only 14 couples are welcomed at any given time (although children are allowed at specific times). In addition to employing over 120 local Fijians, Richard’s strong commitment to putting something back into the local communities has seen Turtle Island become one of the world’s leading sustainable tourism destinations.

THE AUTOMOTIVE WORLD is in an era of unprecedented excess. It’s hard to imagine a time when the very wealthy had more choice of super-cars. Million-dollar motors are almost common among makes such as Ferrari, Aston Martin, Zonda, Koenigsegg, Porsche and Bugatti. But they’re all sports cars, capable of speeds as

The showroom was officially opened recently by no less than the make’s Chief Executive Torsten Müller-Ötvös, who was appointed in 2010 after more than ten years with parent company BMW. Mr Müller-Ötvös’s BMW time included a stint

For motorists who place roominess and supreme comfort above speed, the choice is negligible and one make stands above the rest, as it has for most of its 100-year history. That’s Rolls-Royce, of course. It’s curious that the ultra-luxury business does not support more manufacturers when clearly it’s not for lack of people rich enough to patronise them. If you want a Roller you’ll have to find roughly $500,000 to $1 million to pay for one (but, as the saying goes, if you can afford one you shouldn’t have to ask the price) but at least local readers of Cove won’t have to travel far to place their order. Rolls-Royce Motors Cars has now appointed a sole Queensland outlet, operated on the Gold
with the Mini brand and a short stay in Melbourne. The latest visit was his first time Down Under since then, and he was pleased with what he found. “We were very much impressed by the data we found in this area and I would say there is even more potential over the years to come,” said the CEO, a youthful, immaculate and scrupulously correct representative of the world’s most famous car make. “For quite some time there has been more and more demand out of this area. “Southport is the 123rd (Rolls-Royce) dealership in the world. They are great people, very enthusiastic and very well connected. The most important thing is the need to be well connected. They made a great impression on us.”
While Rolls-Royce considers the Gold Coast and South-East Queensland region, including its influx of Chinese investors, has strong sales potential, Mr Müller-Ötvös emphasises the company will never aim to be a big seller. (Incidentally, he also noted Australia’s strong economic growth rate when considering the new dealership appointment. “You should be proud of it; don’t talk it down. Many other countries would be thrilled to be doing as well as Australia.”) “Our intention is not to grow into five-digit (sales) volume. We are limited by our production facility in Goodwood (England) and I can’t imagine expanding that,” he says. “It’s an inbuilt guarantee of exclusivity. We are not in the car business, we’re in the luxury goods business. “You don’t buy a Rolls-Royce to go from A to B. It’s about rewarding yourself.” Around 34 Australians had presented themselves with a new Rolls in 2014 (up to the time this article was written). We’re growing and valuable to the company, yet a long way behind its key markets – 1) USA, 2) China, 3) The Middle East, 4) Japan and 5) Europe and UK. Those destinations may give some context to the design of the current Rolls-Royces, the range-topping Phantom saloon ($800,000+), newly-launched Ghost II saloon ($519,000 plus on-roads) and, Australia’s favourite, the striking Wraith coupe (approx $645,000). The interiors of these automobiles offer extraordinary opulence, as Rolls-Royce craftsmen always have. But while the bodies are still big, imposing and elegant, someone expecting a traditional British look with upright, understated lines and dark paintwork might be surprised. Discreet, these cars are not. They remind me of streamlined naval destroyers and make no attempt to disguise their owners’ wealth. This style has set a conundrum for designers working on the next potential Rolls-Royce, an off-road Sport Utility Vehicle. By definition, a SUV must be able to take the less-travelled track. But how does Rolls-Royce create one with the expected all-terrain ability and comfort without it looking ridiculously incongruous? It’s been done before, of course. Lawrence of Arabia commanded a squadron of custombuilt (i.e., armoured) Rolls-Royce Silver Ghosts for his campaigns. Oil-rich modern-day denizens of the desert would surely welcome the modern equivalent.

THE MAXIM ‘LESS IS MORE’ doesn’t often apply to car engines and especially, to something so powerful in character as a Bentley. The bigger, the better – right? But Bentley’s sweet spot is not the monster 12-cylinder with which it launched the Continental range almost 12 years ago, but a compact 4.0 litre V8 boosted by twin turbochargers. And here’s another rule of the car game: nobody buys the base variant in any model – the costlier the offering, the more likely the buyer is to spend more. Who’d want to be seen in the cheapest Bentley? Thus the $405,600 Bentley Continental V8S I tested recently has enhanced power, suspension and body styling to justify an extra $25,000

over an ordinary Continental. Should you want to spend even more, there’s the 6.0 litre W12cylinder GT and the W12 GT Speed. The test car came with options alone worth the price of several ordinary new cars (including bright yellow paintwork), but they would be purely personal choices and don’t alter the fundamental impact of this impressive car. A 389 kiloWatt/680 Newtonmetre engine, re-tuned suspension and some black-chrome body trims give the S more sporty performance, but this is not a sports car. The badge says GT and a Grand Tourer is what it is. Considering the V8’s official average fuel consumption is a modest 10.9 litres per 100 kms, one could indeed make a grand tour
to the southern metropolises or alpine regions without needing a tanker – or a banker – in tow. It would be a glorious trip. The Bentley has abundant power (0-100 kmh in 3.9 seconds is very fast for a heavy luxury car) and aided by permanent four-wheel drive takes fast bends in its easy stride, albeit not with the tenacity of something smaller like a Porsche. The occupants would be cocooned in a cabin built for four but ideally carrying just two. Road noise and bumps are distant sensations barely intruding on the isolated luxury of a lush, handfinished interior. As an elegant, luxurious and exclusive gentleman’s express, the Bentley really has no equal.

Season opener Boaties were decked out for the opening of the summer season. AN AGE-OLD TRADITION was honoured at Sanctuary Cove with the official Opening of the Summer Boating Season. The event, a custom which has been honoured around the world for many years, saw over 30 vessels congregate at the Sanctuary Cove Marina to receive the annual Blessing of the Fleet. A centuries-old tradition said to ensure a safe season for the boats, the blessing was bestowed by Father John Khoai from the Holy Family Catholic Parish Runaway Bay. A firework salute from Gold Coast Waterways Authority Chairman Gary Baildon followed, declaring the season officially open. Boaties, all vying for the chance to win the title ‘best dressed vessel’, decked out their craft for the event. The light-hearted award also came with a complimentary overnight stay and breakfast for two at the InterContinental Sanctuary Cove Resort.

More than just a Will Estate planning, where there is an SMSF, involves much more than simply preparing an appropriate Will. It is a common misconception that your superannuation automatically passes to your estate when you pass away. However, payment of your super benefits are governed by the SMSF deed, so it is important to be familiar with your SMSF deed. There are many matters that a trustee should be aware of when operating a SMSF, therefore a proactive approach to self education is key. Who will run the SMSF after you are gone? There are a range of documents which your advisor can help you prepare during your lifetime that can assist in securing your wishes once you pass. For instance, a binding death benefit nomination (BDBN) allows you to direct a trustee who your super interest must be paid to on your death. Be mindful though, some BDBN’s expire or lapse after three years. An automatically reversionary pension nomination allows a member in receipt of a pension to have that pension transfer on their death to their surviving spouse or a child provided that child meets certain conditions. Additionally, successor director documentation can allow a member to nominate in advance, a director who is to step in to their director shoes in the event of their incapacity or death. There are other documents and strategies that can assist with smooth succession planning. Naturally, such strategies need to dovetail with the individual estate plans of each member.
Take a holistic approach There are many facets to hassle free estate and succession planning. In order for everything to run smoothly in the event of your passing or incapacity, at a minimum, you should ensure all relevant documentation is consistent and available to rely on in court. SEQ Property Market Outlook for 2015 2015 HAS BEEN TIPPED by property commentators to be a strong performer for Brisbane and Gold Coast regions as we see the property market continue to show promising results. High TIDE When a sandbar and the rising tide become serious business, it can only involve Bleach*. AN OFFICE WITHOUT WINDOWS, devoid of a roof, and simply a floor of shifting sand and seawater swishing around your polished business shoes may sound like the stuff of dreams, an impossibility even. Yet this bizarre concept of a workspace without confinements, or even a must-have coffee machine for that matter, will soon become a reality for two determined performance artists. Gavin Webber and Josh Thomson will don their business suits, grab their briefcases, perhaps even straighten their ties, and plant themselves smack in the middle of a sandbar at Currumbin Creek for 48 hours straight at this year’s Bleach* Festival. The pair are part of a collection of talent known as The Farm, the Gold Coast’s first professional dance company, and will be stranding themselves on the sandbar for all to watch as they test their ‘office skills’ in a 48 hour improvisation marathon that swings from funny to breathtaking to challenging.

Gavin admits the plan is a ‘deliberate act of stupidity’. “We really have no idea what’s going to happen – it will be like an endurance test of improvisation!” he laughs. “But the results should be extremely entertaining … especially when the tide rises.” Gavin and Josh’s Bleach* performance is aptly called TIDE. Their chosen sandbank in Currumbin Creek is literally another world away from where Gavin was performing his talents a few years ago – from the Venice Biennale, a major contemporary art exhibition, to the Barbican Centre in London, which is the largest performing arts centre of its kind in Europe. But the lure of home called, so Gavin returned to Australia and settled in Burleigh Heads with his partner Kate, also a dancer, and their 14-monthold son Sam. Now focused on bringing The Farm’s trademark gutsy physicality, arresting choreography, surreal
imagery and wicked sense of humour to the Gold Coast, Gavin disagrees with critics who say the city has little culture. “Culture is alive in any place and you don’t need to live in a capital city in order to ‘get’ art,” he explains. “In Europe you have some of the most famous artists working from small towns. I created a company called Dancenorth, which I started in Townsville, and we were very successful in making work there and selling it all over the world. “I met Josh in 2004 and he was one of the first people I brought up to work with me in Dancenorth and he’s basically been my wingman in a sense ever since. He’s going to move up to the Gold Coast from Sydney soon too, so we can’t wait to get on the ground doing our own crazy stuff and seeing how people respond. “I find a kind of artistic freedom working in a place that has less rules – there is a freshness and a kind of maverick spirit here on the Gold
Coast that really appeals to me as an artist and I find that really motivating, not being tied down by ideas of what it should be or shouldn’t be.” Case in point with TIDE, which is far from a traditional theatre performance. From 13 - 15 March, for 48 hours straight, the audience to this seemingly impossible interactive installation work will be members of the public passing or paddling by, or seated at various vantage points around the shore for a free viewing from Palm Beach Parklands and Currumbin Estuary. Expect everything Bleach* has become known for: brilliance, physicality, dialogue and daring. “Over the course of the tide rising it just means that our duo we have rehearsed will have to change, so even though we’ll be doing stuff we know, it’s actually quite unknowable because we don’t know what the elements are going to do to us and at high tide the sandbar gets completely covered in water,” laughs Gavin again.
“Dance is an important element of the performance, and we want to also invite people into our performance and hope they bring us some food and drink too – so you can watch from the shore but you can also come out to the sandbar and we’ll invite you into the office … you can swim out or grab your paddle board.” The pair do have one backup plan for high tide should their filing cabinet become totally submerged, and it involves another member of The Farm from Brisbane, whom many Aussie indie music fans would remember as Eli from the band Regurgitator. “He’s going to be sitting in a boat and playing guitar and if the tide gets really high he might haul us in – that’s one of our strategies. “But we are basically at the mercy of the public so we may be holding up signs that read COFFEE!!” says Gavin, suddenly realising the performance could also double as a social experiment on public generosity.
“Even if someone rows past and throws Cheezels at us, we’d probably try and catch them!” he says. And watch out for the pair’s Sandy Cracks Beach Dance Class – “The name is pretty self-explanatory,” adds Gavin. It will be held on Saturday 7 March in Coolangatta.
