Editor’s letter EVERY YEAR, when we put our special anniversary edition together, the team here at Sanctuary Cove Publishing feel a real sense of achievement. In challenging economic times, and with many people in the media lamenting the fact that ‘print is a dying industry’, we continue to grow and excel. Much of this success can be attributed to our very loyal advertiser, readership and distribution base. So, as we celebrate eight wonderful years of publication, I would like to thank everyone who has made that possible. Now, onto the issue itself. One very important, and much more poignant, anniversary that we commemorate this April is the Centenary of Anzac Day. Fittingly, we have a selection of Gallipolibased content throughout the pages … from the very cute ‘Anzac Ted’ who appears in our book section to details of a moving dawn re-enactment that will take place at Tweed Heads this year. We also venture to Turkey, where the original landing took place, and invite you join the Anzac Run, an annual charity event which reinforces the message of mateship, commitment and integrity.

Of course, anniversaries are also a cause for celebration. Anzac Day Gallipoli Landing

In the moments before the first rays of sunlight peek over the horizon on 25 April 2015, Jack Evans Boat Harbour at Tweed Heads will become the stage for a dramatic re-enactment of the dawn landing by the Anzacs. With some 40 years in the business, and nearly 100 film and TV credits, Bill Nighy has enjoyed an illustrious and diverse career.

BILL NIGHY may now be one of the world’s most recognisable actors but he’s under no illusion as to where his big break came from. “Love Actually gave me more opportunity than I could have ever expected,” he remarks of his career-making performance as faded rockstar Billy Mack in the modern classic. “I’ll always be eternally grateful for what it’s given me.” On the back of this spectacular success, Bill went on to land starring roles in the Harry Potter, Underworld and Pirates of the Caribbean franchises, not to mention a stint as an ageing 007 in BBC’s Johnny Worricker series. Now, the reserved actor stars in yet another franchise with the release of the Best Exotic Marigold Hotel sequel. Also featuring fellow mature superstars, Judi Dench and Maggie Smith, the film shows that Hollywood is no longer a slave to youth. Reprising his role as Douglas Ainslie, the action takes off months after the last film, where our hero is struggling to float his new romance with Dench’s Evelyn as they attempt to settle into the chaotic surrounds of fragrant Jaipur. The follow-up, which is primed to do even bigger business than its 2012 predecessor, is a fine example of why Bill Nighy is at the peak of his powers. And, with four movies to come later this year, including a remake of Dad’s Army, it appears he has no designs on retiring anytime soon. In a tapered Saville Row black suit, the 65-year-old actor talks box office draw, a rivalry with Richard Gere and why hen parties are his mortal enemy.

India’s quite full-on. To go back and be more relaxed was satisfying. And a lot of it was the pleasure of having made the first one with many Indian people, we were able to go back and share the success with them. That was a big part of it, we made lots of friends and we had such a good time.

Are you thrilled to be back for a second jaunt to the Marigold Hotel? Definitely pleased to go back and I think as surprised as everyone else that the first made any money. A bunch of old people heading off to India didn’t seem like box office dynamite. But I was pleased, and it was satisfying from every point

Why was the first one so successful? I don’t know. I’ve never seen it, I’ve never seen any of the films I’ve been in. Why not? Because why would I, that would be unpleasant. Would you like to watch yourself for two and a half hours? Yes, out of curiosity. Well, I have no curiosity. As to why the movie did so well, it’s funny, is what I hear from many people. It seems to unlock something in terms of humanity and it may encourage people. According to marketing strategy, you’re supposed to cease to exist at a certain age, your importance as a consumer diminishes. Maybe it’s reassuring to audiences that the date on your passport doesn’t inhibit your activities. So a film like this was a revelation. I’ve made a few films about groups of middleaged people, and young people, if they get to see them, laugh out loud because it’s good to see old people stuff up. There have been a flurry of films like this now, since Marigold, so you figure, there’s an audience. And I’m glad there is and I’m glad the first one did so well, because now I’m getting the opportunity to come back … and I really like Judi Dench. >>

Apart from the obvious, why is that? She makes me laugh. When I went to do the first one, it could have been anywhere, I didn’t mind that it was in India but it had very little to do with my decision. At the end of the day, it doesn’t matter where you are because you’re on a small plot of land and somebody shouts ‘action’ and somebody’s over there but it happens to be Judi Dench. And I’m deeply interested in filming with Judi Dench, from an acting point of view. She is so funny and I really think she likes laughing more than acting. At one point, we had to dance together to Strangers in the Night, which didn’t help because it’s such a preposterous song. We were dancing, and she comes up to about there on me [points to chest]. I said, ‘I’m going to do the next take very tall’. And she says, ‘so am I’.

I had a wet spot right here [points to chest again]. I had to whip her around from the camera because she was weeping with laughter. It was her own fault. What was it like working with Richard Gere? I worked with him when I was 24, but I didn’t make the screen. I did four days improvising in a pretend railway carriage on a John Schlesinger film called Yanks. It was his first leading role, he was probably 26, 25 and he was very easy to work with. And he was mad about being in this film. He’s an old India hand and knows the country very well.

People come up to me on the street and say, ‘every time we turn on the telly, you’re on it’. And I just say, ‘Sorry, I get these calls’. I used to structure my life around work, which a lot of people do. It’s easier. ‘I’m at work, I’m at work. I can’t do life, because I have work’. But I’m very lucky that I get offered very cool things. What am I going to do, not go? I work with writers and people that I know, I work with people more than once and I’m very fortunate that way. I’ve done some terrible stuff too. Such as? Well I’m not going down that road. I’m actually lucky that I’m old enough that most of my bad stuff is pre-video, it’s probably been wiped by the BBC. In the old days, you did anything, well not anything, but you did most things that came along because you had no money and had to feed your family. I had to work, like everybody, like most actors. But when you do get some choice, you try to not be a nuisance. You try to do things, broadly speaking, whether they’re being an octopus or being a vampire.

So do you have regrets? I could have made a lot of money. A lot of money. But I’m not going to tell you which film. There were a couple where I could have made some money but you find there’s line that you don’t want to cross. Do you dread Christmas time, and the inevitable Love Actually transmissions? Well I don’t regret it, that would be churlish because it made everything else possible. It’s a nice movie. I’ve had all kinds of people from all over the world saying, ‘Love Actually helped me get through my chemotherapy’. The only thing I avoid is hen parties because for some reason, I am perfect hen party material. If they spot me, they want me to take my clothes off and sing a song. I have been chased down the street in New Zealand, by a group of girls, wearing bin liners and horns. They went all out. And I really had to run because they would have torn me apart. They are my natural enemy. But I don’t regret Love Actually in the least, long may it reign.

WEDDINGS should be a joyous, celebratory occasion filled with love. As a guest the big day is easy, all you need to do is purchase a gift from the registry, ensure you follow the dress code (looking good without upstaging the bride), arrive on time to the ceremony, and then relax and enjoy the festivities. However, in my experience, a wedding is anything but easy for the bride and groom. Whether it be an intimate party of 15, or an elaborate event for 400, the key to getting hitched without a hitch is in research, meticulous planning, and selecting the right vendors. To uncover the latest trends and top tips for achieving the perfect wedding day, I decided to go behind the scenes and speak with several industry experts including wedding planners

I also chatted to wedding stylist Alera Kingham, Style Director at White Lily Couture, as well as newlywed International Style Coach Caitlin Harrison, and makeup queen Fleur Madden, founder and CEO of luluandlipstick.com. First I asked my experts the all-important question on every bride’s list: the dress? It turns out that brides are no longer trying to emulate Princess Katherine when it comes to their wedding gown. Rather, the sartorial focus is now channelling her younger sister Pippa Middleton’s infamous Sarah Burton-designed bias-cut slinky sheath bridesmaid dress that was responsible for setting male pulses racing globally.

According to Caitlin, sexy yet elegant brides in 2015/16 will be wearing ‘slimmer, more streamlined silhouettes. Dresses that follow your shape, like the mermaid style and the fitted sheath dress, are flattering on any body type’. Alera agrees. “Fitted gowns are big, big, big for the coming seasons with the mermaid and fishtails continuing their popularity,” she says. “Low, detailed back features are the must-have in bridal fashion and we’re seeing this in the form of tattoo lace, sexy backs cut to the base of the spine and illusion tulle detailing.” Lace is making a big comeback too; this time around the trend is to wear it unlined hinting to the bare skin underneath, how much you dare expose is up to you. >>

Local designers, Brad Webb of Darb Bridal Couture and George Wu, both designed very risqué sheer lace dresses this season. The brave can wear them bare, as designed, or for the more conservative, with a silk slip underneath, adding a stole for a church wedding. More demure brides will be relieved to know that strapless styles are out and sleeves are in, albeit in lace. However, the most pertinent factors are that your dress suits your body shape and the theme of your wedding. Just as important as the dress is the makeup. Barely-there makeup is a huge trend for brides in 2015 and 2016. This look is all about dreamy, dewy skin and enhancing what you already have. To achieve this, it’s important to take great care of your skin in the lead up to the big day. Minimal makeup also means your brows need to be on-point as they frame the face. Contouring, which gives shape to your face and enhances your bone structure, is definitely the biggest emerging makeup trend for brides, while lips are also a major focus. Fleur is loving the English rose lip – lips that aren’t

translating into a dressier look when paired with a matching jacket or a smart casual look when worn in a neutral white, beige or tan, sans the jacket. Make sure the boys’ suits fit them, as an untailored suit can look messy. Ensure the sleeves and pant hems are the right length, and that they can actually do up their suit. In recent times, weddings have definitely moved away from mass produced, impersonal, cookiecutter style venue events, with couples wanting to stamp their own personality on their nuptials. There is a budding emphasis on flowers, and almost anything goes! We are seeing a resurgence of floral corsages being featured on the wrists of many bridesmaids, while the floral buttonhole is also gaining momentum for the groom and groomsmen. More money is being spent on flowers in bright colours with flower walls and floral and foliage chandeliers taking centre stage. Another emerging trend is the ‘wedstival’ theme which, according to Erin, is a festival-style wedding set outdoors and popular for its fun and relaxed feel, gorgeous festoon lighting and caravan bars or multiple market-style catering.

When it comes to bridal headwear, the boho look, with long lace veils, loose hair, flower crowns and wild flowers will continue to be big for 2015/2016. As for the attendants … be a trendsetter and go for a bold print with your bridesmaid dresses. I predict this look will be popular with the masses in the next few years. Otherwise the safer dress options that are currently trending for bridesmaids include metallics and lace. As for the groom, they are also moving away from tradition. “This is becoming especially noticeable as men want to express their personality and flair for fashion,” Alera says. “Gone are the days of the black tuxedo as we welcome the more hip and trendy groom wearing coloured suits and printed accessories.” The clean cut navy suit with crisp white shirt and tan leather shoes minus the socks is all the rage, and for the truly sartorially savvy groom, trousers are worn with the pants rolled up to expose the ankle. “Anything but black seems to be the trend! Navy suits are the new black, but many grooms are going pale (stone, cream) too,” says Caitlin, Danielle agrees that ‘Midnight blue rather than black’ is a key trend for grooms, and that bow ties are in. She also mentions that grooms are now changing their jacket to a more relaxed fun style for the reception. I have also noticed that waistcoats are making a comeback on the catwalk. This is

Lots of lace, pearls and old-world accents with a pop of edgy and new,” Alera maintains. “There are so many ways to approach a vintage theme so we’re finding that versatility and timeless quality is really what brides are loving.” My advice … the best course of action to avoid a stressful, chaotic wedding is to employ experts to help you create a seamless, show-stopping event. If you do insist on doing all the planning yourself it is probably wise to invest in an on the day coordinator to ensure all your effort comes to life without you having to manage it. This leaves you free to experience, enjoy and remember your special day.

Dr Johanna Dups and her husband Dr Hannes Bergman fully embraced the ‘boho’ theme for their intimate wedding on Valentine’s Day this year. A relaxed affair for 15, the ceremony was held in a local park with vibrant Marimekko print covered hay bales, placed in a semicircle, and citronella-scented bamboo flares decorated in foliage surrounding the perimeter. Johanna wore a loosely woven halo of flowers in her wavy blonde hair, co-ordinated with a silk georgette bias-cut knee length dress with a low back, and featuring customised vintage lace (from her late grandmother) detail at the décolletage. Hannes looked relaxed and stylish in a beige waistcoat and trouser combo teamed with a green and purple shirt and co-ordinating green shoelaces. The bridal bouquet was a collection of flowers gathered by the bride from the guests as she made her way to her groom. A wonderful way of picking up on the current floral trend of oversized bouquets with that just-plucked feel in an array of vivid colours and varying textures. Not a single detail was overlooked at this simple wedding. The months of careful planning culminated in a perfectly carefree, bohemian style ceremony.

These private sessions allow me to understand what my client is looking for so I can assist them in choosing pieces that can be easily incorporated into their lifestyle and wardrobe. “I have a very strong loyal, local client base, and I think that is my favourite part of my business, building those relationships. I also have visitors who come to Sanctuary Cove each year and they always come into the store to say hello and see what we have,” Jill says. A resident of Sanctuary Cove, Jill says there is no other place she would rather do business. “It is a very unique part of the world,” Jill says. “It doesn’t have the hustle and bustle that a lot of other places do, so it makes coming to work a pleasure.

“And of course The Marine Village is such a beautiful location.” Jill and the EEV team are looking forward to the new styles that are arriving in store daily. “We are all very excited that Camilla has started arriving for the new season – the soft silk fabrics and vibrant colours are truly exquisite. “We will also be holding another Camilla workshop soon, where customers can enjoy an evening here in the store while a representative from Camilla discusses the latest garments and how to accessorise them. “The previous workshop was a great success. “LADIES AND GENTLEMEN, your pilot is feeling a bit drowsy and is taking a nap.” Perhaps not an announcement to inspire confidence when you’re whizzing high above the Atlantic in a cylindrical metal tube – which is probably why you’re not likely to hear it. But it does happen. Pilots on long haul flights often have forty winks, but fortunately not at the same time as their copilot. Air traffic controllers even have the odd lie down; and in some companies, napping stations are provided for employees who don’t feel alert enough to continue safely on the production line. So what’s the evidence that napping works? Pretty good, as it happens. As the US based National Sleep Foundation puts it: “More than 85 per cent of mammalian species are polyphasic sleepers, meaning that they sleep for short periods throughout the day. Humans are part of the minority of monophasic sleepers, meaning that our days are divided into two distinct periods, one for sleep and one for wakefulness. It is not clear that this is the natural sleep pattern of humans. Young children and elderly persons nap, for example, and napping is a very important aspect of many cultures.” A short but intentional period of sleep during the day is not only very pleasant, but produces measurable improvements in mood, alertness

and performance ... even in those who didn’t feel tired beforehand. The trick is to limit the nap to an optimal 15 minutes, and certainly no more than 30. Go for longer and you’re likely to experience the grogginess of ‘sleep inertia’ (a fancy term for not wanting to wake up at all). Long naps can also stop you sleeping well at night, whereas a short power nap can do nothing but good (unless you’re behind the wheel of a car or operating heavy machinery). But do we need to learn how to nap? As patronising as it sounds, there’s an art form to just going under for 15 minutes and you get better with practise. There are people out there who are happy to take money off you for nap training (as opposed to nappy training), but if you practise on your own, you’ll soon get proficient. I often perform comedy late at night which gets the adrenalin going (particularly if people don’t laugh) and stops me getting to sleep afterwards. It’s considered poor form to nap on stage, but I’ve perfected the art of a quick kip in the back of a cab, plane or train, and have yet to miss a stop. True, I do occasionally dribble and snore, which isn’t terribly pleasant for nearby passengers, but it’s a small price to pay for arriving refreshed.

Behind the Benz With a history dating back to 1886, Mercedes-Benz continues to set the benchmark for innovation and luxury. WORDS SUSAN LANG-LEMCKERT

THE MERCEDES-BENZ story began with two momentous, but separate, innovations in 1886 – Karl Benz’s invention of the first petrolpowered car, the Benz Patent Motorwagen, and the addition of a petrol engine to a stagecoach by Gottlieb Daimler and Wilhelm Maybach. Daimler and Maybach soon founded DaimlerMotoren-Gesellschaft (DMG) and began producing petrol engines. An approach by German entrepreneur Emil Jellinek to produce a new engine built to his own specifications – and to be named after his daughter, Mercedes – led to a contract to build 36 race cars. The continued success of those race cars saw the commercial release of the first Mercedes model in 1902, and the focus of the company shifted forever. Meanwhile, Karl Benz, a locomotive engineer, had enjoyed a long career in the invention and

production of automated vehicles by 1903, when his company, Benz & Cie., released the Parsifil, which featured a vertical twin engine that achieved a top speed of 37 miles (60 kilometres) per hour. Despite sound management and continued innovation, the success of both DMG and Benz & Cie. was hampered by the economic crisis of the 1920s, leading to the historic merger of the two companies that saw the birth of Daimler-Benz in 1926. The decision was made to name all of the new company’s vehicles Mercedes-Benz to honour both DMG’s most important model – the Mercedes 35 hp – and the Benz family name. A new logo incorporating a three-pointed star (representing the Daimler motto of ‘engines for land, air and water’) and the curved laurels from the Benz insignia, was designed and launched.

Renowned for its seamless blend of luxury, style and excellence, the Mercedes-Benz brand continued to flourish throughout the 20th century, and the innovations kept coming. Automotive heraldry has a rich history, which Mercedes-Benz and its forerunners have been an intrinsic part of – separately, then together. The oldest surviving trademark on a car body is the Daimler badge affixed to the Riemenwagen in 1895. Initially, the brands preceding Mercedes-Benz used trademarks based on the company names, such as the 1897 DMG design that depicts an engine with the name ‘Daimler arched above it.

IN MANY CARS now available in Australia, from the most expensive models right down to $20,000 hatchbacks, scanners constantly check ahead for stopped cars and automatically apply the brakes to prevent a crash if the driver doesn’t react in time. The potential benefit in reducing injuries and insurance costs is easy to imagine. And imagine also the possibilities of the driverless car, a concept rapidly coming to fruition in many car maker’s research departments. A ‘car’ could become a personal transport module, unconstrained by design traditions and controlled through satellite navigation, able to take people who can’t drive at all, such as children, the elderly or those who are sick, safely from A to B. In the latest cars, technology features have become so complex and so comprehensive that owner’s manuals have grown to the size of encyclopedias. The solution? Load them on to the car’s hard drive to be viewed on the in-dash screen, with the added convenience of explanatory videos and interactivity. Technology, therefore, is changing the way we choose our new cars. Luxury car buyers demand high-tech and the growing multitude of safety, comfort, convenience and performance features will influence their decisions as much as looks and horsepower. The list will only get longer but, for now, here’s my summary of the best technology features currently available. Satellite Aided Transmission: GPS reads the road conditions ahead and selects gears accordingly. The 1960s Holdens had a two-speed

Voice control: Managing phone calls, texts and emails by voice control is already common, but the automotive version of Apple’s Siri personal concierge extends the potential for hands-free tasks almost infinitely. Self-parking: Stop beside a parallel or rightangle parking space, push a couple of buttons and lift your hands and feet off the controls. The car will be parked perfectly without a scratch. Night vision: Infrared thermal imaging shows up night-driving hazards such as animals beyond headlight range. Available now, though not widely. Telematics: In a crash, the phone automatically transmits the GPS location coordinates and driver and vehicle information to emergency authorities. Mobile wi-fi: Your own rolling internet hot-spot. Safety suite: Rear-crossing alert, blind-spot alert, lane-straying alert, slide prevention, antiskid braking are among the latest and best crashavoidance technologies. On-board vacuum: The US version of the Honda Odyssey has a built-in vacuum cleaner in the boot, with a hose that reaches every corner of the interior. Or get a rechargeable torch in the boot of a Skoda or Jeep. Hot-stone massage: Seats in the MercedesBenz S-Class have bladders and heaters to simulate a shiatsu hot-stone massage, for the ultimate relaxing experience after a day at the office or a long drive. Hydrophobic glass and paint: Shed water like a duck to save washing and preserve vision during rain. Pre-crash activation: When sensors detect an imminent crash, computers prime the brakes for

automatic; some cars now have nine speeds. Active Cruise Control: Set a safe distance to the vehicle in front as well as your desired speed. If the vehicle ahead slows, so does yours ... right down to a dead-stop if necessary. On a trip from Brisbane to visit a client in Coffs Harbour, I could drive all the way without touching brake or accelerator – if I had the nerve! Front collision avoidance: On many models from Audis to Volkswagens, this system intervenes at speeds up to 30 kmh to stop the following car before a rear-ender. Front collision warning sounds an alert at faster speeds if a crash looks likely. Volvo adapts these systems to avoid pedestrians and cyclists. Subaru’s EyeSight stereo cameras add brake-light recognition and avoidance steering.

Inflatable rear seatbelts: Cushion and distribute crash force on the abdomen. The brolly: For fun, let’s finish with a totally low-tech feature. Your Rolls-Royce has a silverhandled, furled umbrella stored inside each front door. Press a button and the brolly props out to shelter m’lord and m’lady.

Milk it Local producers, Maleny Dairies, have been at the forefront of the local milk industry since 2002. WORDS TONY HARPER

YOU CAN DIVIDE MY LIFE so far into two quite distinct periods – rural and urban. The urban life is now close to 25 years long, and the rural (which preceded) must – if my math is any good – be close to the same. There’s a mighty list of things I miss from the early years – my horses, birds, dogs and assorted local fauna, the endless space, chasing foxes through the dawn, sliding over the local weir and pulling fish from its depths, the noise of the bush creatures and the quiet of everything else: they were magical times. We were also blessed with a nearby dairy that gave us milk, yoghurt and cream on a daily basis. Missing them was a slow-burn and I’m not sure that I noticed their absence until Maleny Dairies crept into the Brisbane market: I tasted real milk again and everything came flooding back. The Maleny Dairies story is an inspiring one in which potential adversity is turned into opportunity, and a little bit of human cunning has developed that opportunity into a thriving business.

In 1999 the Australian Dairy Industry Council approached the federal government to deregulate the production of Australia’s drinking milk, and the plan was rolled out over the following year. I don’t quite understand the machinations and politics terribly well, but suffice to say that quite a number of dairy producers sold up and got out. Harold and Dorothy Hopper had getting out in mind. But their sons – Ross and Keith – had other ideas and by the end of 2002 Maleny Dairies was born with its own factory, brand and package. From rather humble beginnings (somewhere around 5,000 litres a week) the business has grown to a rather more serious 90,000 litres and its products can be found in stores and coffee shops in just about every nook of south-east Queensland, from the Gold Coast to Noosa and west to Toowoomba. But it remains a family business run by both generations and their spouses. What I love most about the Maleny Dairies milk is its sense of place.

If you womble down to the supermarket and grab three litres of milk from one of the major suppliers you are buying an amalgam of milks from sources across Australia, blended for consistency. Buy a bottle of milk branded Maleny Dairies and you know it’s the product of the lush Maleny pastures (ok, there’s a farm in the Mary Valley that supplies some milk) and the handful of folk that tend the cows. And there’s no hiding the seasonal changes: the taste of the milk will ebb and flow along with the paddocks. I think that’s kind of nice. Then there’s the colour – rich, silky cream with a hit of gold. The secret is in the cows. Only the milk from Guernsey cows is used, which is typically more heavily laden with butter fat, protein and beta-carotene. So the milk (and the spin-off products like butter, cream and yoghurt) is richer, tastier and a little more decadent. And apparently the betacarotene thing is good for us.

If the full-cream thing frightens you a little, there’s a light version that still captures the spirit of place, albeit in a toned down way. And there’s ‘blue top’ which is homogenised so the cream is neatly distributed through the milk. But for me the best stuff is ‘gold top’ with the raft of silky cream on top that speaks most clearly of the cows and pastures. Anyone who has been to Maleny will know of its rather spectacular beauty and the rich green pastures: it looks like picture-book dairy country. But Ross Hopper – when asked what is special about the place – adds a little more … “There’s high rainfall, it’s picturesque, there’s fresh air, but most of all it has proud locals who supported the project from the beginning,” he says. All you need to do is walk up the main street of Maleny to see the proof: Maleny Dairies is sold in more than twenty stores in the district. As for me, I’m spoilt for choice. Even in the back blocks of Holland Park, my local coffee-shop only uses Maleny Dairies milk in its coffee, and also retails the bottles. It is stocked at my local IGA and even at Coles so we never have to go without. And if I have lost touch with my rural beginnings, it only takes a fresh bottle of Gold Top and its smell of the Maleny pastures to link me instantly with the past.

Simple starter Stokehouse Q has a well-deserved reputation for serving the freshest flavours and ingredients, including this mouthwatering Carpaccio dish.

Wagyu Carpaccio Grissini Dough Ingredients 315g plain flour 195g room temperature water 3.5g dried yeast 4.5g salt 15ml olive oil Method 1. In a mixing bowl, combine flour and salt. 2. In a separate bowl, combine water, oil and yeast and mix until dissolved. 3. Add the water mixture to the flour mixture and mix until a dough is formed. 4. Place in a bowl, cover with cling film and leave to rise overnight in the fridge. 5. Remove from fridge and massage the dough for approximately 30 seconds so there are no air bubbles. 6. R oll through the pasta machine, making sure you are folding it back on itself and placing it through the machine again so it is rolled down to approximately 2mm thick (this process is called lamination and helps the bread puff up into a pillow). 7. Cut into 2x2cm squares and bake at 200ºC for 8-11 minutes. Roast Garlic Dressing Ingredients ½ head of garlic 2 eggs 3 anchovies 1 tsp hot English mustard 1 squeeze of lemon 100ml olive oil Method 1. Roast the garlic bulbs in tin foil with olive oil and salt for 25 minutes at 180ºC. 2. Boil the eggs for 10 minutes then refresh in cold water (peel when still warm). 3. Once chilled, chop finely. 4. Chop the anchovies and roasted garlic. 5. Whisk together the juice of two lemons and mustard and slowly emulsify the olive oil. 6. Fold in the remaining ingredients.

To finish 1. Trim the Wagyu of all sinew and slice thinly (it can be part frozen then sliced – this makes it a little easier). 2. Drizzle the roast garlic dressing over the Wagyu. 3. Serve the trimmed Wagyu with radish, water cress or another peppery leaf, fresh horseradish (finely grated), Grissini and salt and pepper.

Improving with age A special occasion calls for some very special wines.

THERE WAS A CHALLENGE thrown at me recently, to pack a box of six wines to be given as a wedding present (not terribly hard so far) with the idea of opening a bottle for every landmark year: one for the honeymoon, then five, ten, twenty-five, forty and fifty years on … that’s the tricky bit. And I figured that the wines shouldn’t just last the distance; they should be better on the day they are opened than they were when they were given. Just like – you’d hope – the marriage. Here’s what I did … The wine for today was easy: champagne. It’s the ultimate drink for celebrations, it’s been aged carefully by its creators and it’s kind of traditional at a wedding. There’s also nothing wrong with being a little patriotic and opting for good Australian bubbles like Arras, Brown Brothers Patricia, Jansz, Yarrabank or any of the other top wines; there are plenty. But for this box it was Andre Clouet Cuvée 1911 – an amazing and quite rare (only 1911 bottles produced each vintage) champagne that, in this release, is a blend of the 2002 vintage (fermented in sauternes barrels) and a solera of older wines. It has sat on lees for a decade. The five-year mark was tricky only because we are spoilt for choice – pinot noir, a Margaret River cabernet, perhaps one of the new breed of Aussie chardonnay; they are all good candidates

that would look pretty impressive after a few years in the cellar. But I kind of liked the idea of a good Clare or Eden Valley Riesling from someone like Grosset, Peter Lehmann or Leo Buring or perhaps something a little racier from Tasmania. They make awesome wines with age, but the deal-clincher is that you can buy them in the year of vintage, so a box of wines as a gift for a 2015 wedding can contain a wine from the same year. Cunning hey? So, as this wedding was last November I threw in the 2014 Stargazer Derwent Valley Riesling – beautifully packaged and stunningly crafted. After that it’s not so easy. Long-term reds don’t get released until two or more years after vintage so it’s virtually impossible to include red wines from the current year. But right now we have some stellar South Australians from both 2010 and 2012 that will pass the ten-year mark with ease. However I kind of felt I should save them for the twenty-year spot. Margaret River cabernet? Why not? Moss Wood Cabernet Sauvignon and Cullen Diana Madeline are the two obvious choices – both incredible wines that only really hit their straps after a decade or so. But Xanadu has been on fire recently, making some of the best wines (both red and white) in the country. Its top cabernet – Xanadu Reserve Cabernet Sauvignon – will breeze through the decade.

QUALITY CUSTOM SHUTTERS & BLINDS YEARS The twenty-five year mark is – I reckon – the Silver Anniversary, and it’s a fair span; enough time to bear a couple of children and see them through university: enough time to move from youth to the doddery end of middle age: enough time to test the ageing capability of even the most powerful reds. If money were no object I’d jump at the 2010 Hill of Grace or Penfold’s Grange; both awesome wines. But there’s another South Australian red that’s equally as long-lived, devilishly hard to find and far less expensive: Wendouree Shiraz. The trouble is getting your hands on a bottle, but once that’s done it’s all plain sailing. At forty years of age even the greatest reds are looking like old wines. Often amazing … but still old. And it’s no use even considering dry whites. I’ve tasted champagnes at fifty, sixty, even eighty years of age – curious curios for sure, but pretty wonderful at the same time. The problem is that it needs to be a very special bottle to last that time, and under cork, with the variables of cellaring, I’d call it a long shot. Sweet white wine is another story entirely. I’ll never forget a half-bottle of 1947 sauternes I shared in the mid 1990s: amazing. And I know plenty of folk who’ve drunk them back as far as the late 1800s with thrilling results. The sugar helps preserve wine, and what was once a compote of citrus, peach and nectar turns into a sort of marmalade and treacle thing. So … good sauternes, top-shelf Australian (De Bortoli, McWilliams, d’Arenberg) or even one of the better Kiwis (Pegasus Bay or Craggy Range) would do the trick. I’m a classicist, so 2007 Chateau Coutete Barsac: awesome! Which leaves us with the big one … the 50-year anniversary. By then the kids are hitting middle age and the remaining bottle is hopefully tucked away in a cool corner of the house (who knows; perhaps it will be worth a small fortune and sold to pay for retirement in the Bahamas). Once again there are several options, but the banker is vintage port. And with a vintage like 2007 – especially a bottle from one of the better houses – a fifty-year lifespan is almost guaranteed. I went for Dow’s, but Croft, Fonseca, Quinta de Noval, Taylor and Graham all made stellar wines. I’d really settle for any. So how much did all of this cost? Perhaps not as much as you’d expect. It came in – for the six bottles – a smidge under $600; not bad for a gift that keeps on giving for half a century!

EVERYONE has a particular place in the world that they dream of running away to. For me, it is the beautiful region of Provence. Last year I was fortunate enough to accompany my mother on a business trip to the South of France to take photographs for her website. With its spectacular countryside, gently sloping vineyards, picturesque hilltop villages and fields full of poppies, Provence literally stole my heart. Even the journey from Paris to Provence was exquisite as we travelled at high speed on the TGV through countryside that took my breath away. I was amazed to find out that the TGV was built to travel up to speeds of 550kmph, however, generally only travels at the slower speed of 330kmph! Arriving at Aix en Provence we picked up our hire car. Seeing my mother have her first experience in a left-hand-drive manual vehicle on the opposite side of the road was akin to watching ‘Miss Daisy’ driving. As we wound our way through the villages towards Lourmarin, I could feel a sense of excitement building up inside me and couldn’t wait to explore the beautiful cobblestone streets. The people of Lourmarin were so welcoming and friendly, each stopping to say hello and have a chat. As we walked through the town we came across the Chateau de Lourmarin, a converted 16th century castle. Going through each room took me back to a different era, as the smell of the old furniture wafted through the historic building.

A quick drive following the curves of the mountain brought us to Bonnieux. The incredibly steep, winding roads had my heart in my mouth as yet another car or the odd Winnebago came around the bend on our side of the road. After arriving with all limbs attached and a car still in one piece, the views were astounding to say the least. Narrow laneways led up to a panoramic vista of green and gold fields overlooking a valley where you could see Gordes and Lacoste in the distance. As the days went by I fell more and more in love with this incredible place. Roussillon, with its houses and buildings built using bright shades of red and orange, was a real showstopper and I loved taking photos of the pantone-esque colourings. We also travelled to Gordes, another charming village perched on a rocky cliff. We stopped to capture the awe-inspiring photo opportunity of the town from across the valley before we sat down with a glass of wine to enjoy the view. There was something about watching the sunset that just made me feel at peace as I basked in its beauty. The following day we adventured out to L’Isle-Sur-La-Sorgue, a town built around a river. The photographer in me wanted to capture the uniqueness of the slow moving, moss-covered waterwheels that were mounted to the side of the river. The way the water was pulled through the wheels with utter grace as it flowed down the river was strikingly beautiful. >>

After an amazing lunch and a glass or two of wine, a local friend took us to Fontaine de Vaucluse, a place otherwise unknown to most. The walk up posed a rather difficult challenge, as I was wearing shoes that weren’t designed for cobblestones or climbing rocks. However, the sight of the incredibly clear, rushing water, that ended in a deep pool beside wonderful eateries that dotted the roadside, was truly amazing, especially as the awe-inspiring fountain is yet to reveal its source. As we moved across the region we found ourselves in St Rémy de Provence, another delightful township. We visited the asylum that was home to Vincent Van Gogh, and I was thrown back in time by a re-creation of his bedroom where the walls depicted his life story. As a creative soul, I was left feeling inspired having witnessed replications of some of Van Gogh’s famous artistic works. Following this marvelous experience I travelled to Le-Baux-de-Provence. By this point of the journey I thought I had already witnessed some remarkable highlights, but nothing prepared me for entering the cavernous stone quarry known as the ‘Carrières De Lumières’. It was a place where light and sound took over and the outside world withdrew. I was entranced by the music and pictures portrayed on the walls. Watching as the works of Klimt, an artist most famous for his piece ‘The Kiss’, moved across the stonewalls of the cave was an experience that touched me deeply and I could never forget the feeling of being but a small figure in a cave of vast dimensions. As the journey came to a close, I found myself looking for excuses to stay in Provence and soak up all the beauty and experiences this wonderful region had to offer. While I certainly came up with a bigger list of reasons to stay than to leave, I now have a new appreciation for the world and the beauty waiting to be discovered.

ONE HUNDRED YEARS AGO this April, the ANZAC landing on Gallipoli forged for Australia a patriotic spirit, camaraderie and legacy. We are not, however, the only people to lay nationalistic claim to this corner of the world. There is hardly a nation in the world whom the arm of Turkey’s historical reach does not touch. Literally bridging Europe and Asia, Istanbul and its surrounds were for millennia under a constant flux of attack, occupation and thoroughfare. Its strategic position drew armies from all manner and eras of civilization; from Alexander the Great, the Romans and the Ottoman Empire, to the Soviet Allies of WWI, until its eventual political stabilisation as the Republic of Turkey in 1923. To understand Istanbul as it exists today, you must understand the diverse historical influences on its contemporary psyche.

It was once called Byzantium, colonised by Ancient Greek traders around 650BC. The city proved an important nexus between Europe and Asia for Alexander the Great during his campaign to conquer Persia and Asia Minor between 335 and 325BC. In 330AD the Emperor Constantine relocated the Roman capital to the site, which was later renamed Constantinople. In 1435 the city fell to Ottoman rule and became the capital of the Ottoman Empire until the Republic of Turkey was established in 1923, and the city renamed Istanbul. Inextricably linked to Turkey’s contemporary identity is Mustafa Kemal Ataturk, whose governance led the nation into the modern age. His vision saw the reformation and secularisation of the government, the Romanisation of the

Turkish alphabet, increased literacy and full women’s suffrage to the state. The name Ataturk means ‘father of the Turks’ and it is in this light that his memory remains. The ages of social, political and religious turbulence have left a pervasive cultural and historical mark on the city. As a consequence, Istanbul’s dynamic and sometimes paradoxical fusion of culture, history and religion packs layer upon layer of old and new into its every nook and cranny. Tackle the city’s oldest quarter – Sultanahmet – by foot; its maze of cobblestoned alleyways and old traditions will convey you to a world of intriguing complexity. It starts with a call to prayer at dawn; large birds circle the Mosques’ minarets and transport you to a medieval view.

They soar above the Bosphorus, the small channel which separates the two continents, and eye the water for their first catch, while small fishing boats make their daily journey north to the Black Sea, or south to the Sea of Marmara. Both reap an abundant harvest of fish, which are best grilled whole with a wedge of lemon from the fresh markets on the banks. A short walk from the piers along the handhewn pathways of old lie the Hagia Sophia Church and the Blue Mosque, both iconic feats of architecture, and the heart of the old city. Built in 537AD, the Hagia Sophia was constructed under the orders of Roman Emperor Justinian and served as an orthodox Christian Church for 900 years. In 1435 the Ottoman rulers converted it to a Mosque, and then in 1935 Ataturk proclaimed it a Museum of the Turkish Republic.

The cultural richness of the building is overwhelming; Islamic plaques hang alongside Christian mosaics and frescoes in a true amalgamation of heritage. Viking graffiti from the Varangian Guard adorns a balustrade on the upper balcony, and one of the columns on the lower porticoes was pilfered from the ruins of Ephesus’ Temple of Aphrodite, one of the twelve ancient wonders of the World. The Hagia Sophia itself is a metaphor for the spirit of the Turkish Nation; what is left of an old civilization becomes the building blocks of its successor. The Hagia Sophia is no longer a place of worship, but one of remembrance. Opposite the Hagia Sophia stands the equally resplendent Blue Mosque. >>

Completed in 1616, it was built under the auspices of the Ottoman Sultan Ahmed I, who took the Hagia Sophia as his inspiration. It is a lavish construction, boasting nine domes, six minarets and more than 20,000 blue tiles on the interior. The effect is nothing short of staggering; it is impossible to wonder at the quality of workmanship without a humbling selfawareness. Its beauty lies in the lofty heights of the domes, lined with hundreds of windows. The light plays delicately on the tulip designs of the Iznik tiles, and creates an ethereal environment for silent contemplation. A quick descent into the Basilica Cistern, just a few hundred metres from the Hagia Sophia, reveals relics of the city’s ancient legacy. The water storage unit was built on top of a 3rd Century Roman basilica of Commerce, Law and Arts. Though it would have been completely submerged when in use, it is now navigable via boardwalks above the natural water level. Typical to the city’s pattern of reusing old artefacts for new purposes, the cavity is home to a number of displays of Early Roman art. Shrouded in the darkness, a weight-bearing column features an intricate head of Medusa, while another sports an unusual ‘hens-eye’ pattern.

Commanding the attention of every visitor, the Grand Bazaar is a warren of thousands of stalls selling authentic (or sometimes not) wares. Bartering is compulsory in these parts, as locals expect to sell their goods for at least half of what they ask for. Any trader worth his salt will invite you in for tea as you haggle. You may not find everyone dressed in the embroidered shoes and Fez hats of your imagination, but the ornate decoration of every stall will have you dreaming with kaleidoscopic vision. Turkish rugs, lanterns, ceramics, fabrics, knock-offs, leather, ‘genuine fakes’ and lots more are sold in this old hub of barter and trade. What the Grand Bazaar offers in sheer scale, the Spice Bazaar gives in sensory marvel. Dating to the 1600s, the covered market place is tucked behind the New Mosque and invites a heightened awareness. The same fragrant smells of rose water, saffron, cumin, nuts and honey have occupied its walls for some 400 years. Locals barter over the price of their wares and smoke aromatic tobacco from their hookah pipes. The scented vapour mingles with the taste of authentic Turkish delight and you discover the bazaars are a tactile realisation of your senses.

It is these same smells, sights, and sounds that have presided over the Bosphorus channel for the past 2000 years. It is the unsettled nature of Turkey’s history which lends Istanbul its air of wisened prescience. Our ANZACS are now an irrevocable part of this world’s history. Nothing grows old in the sphere of repurposed heritage, nothing can fall into time’s amnesia. We cannot forget them, their legacy is now too densely woven into a much larger fabric of historical import.

Generations of talent Lockyer, Ablett, Freeman, Bradman – these are just a few household names that started their careers in a small, dusty backyard stadium. WORDS NATHAN LISTER

CAN YOU REMEMBER the days when you were a smaller version of yourself, calling out the name of your favourite sports star while you only had 45 precious seconds left to finish off the dream play before dinner time? Running fast, ducking right, diving left, weaving in and out of the shadows as they crept across the barren yard. Most of us have great memories about a magical sporting moment we once produced – even if we were the only one there to witness it. While sport plays a major role in most childhood upbringings, it also has the power to help develop great social skills later in life. Many Australian’s you meet on a daily basis are very talented at a sport or have a passion for a team they love to watch, it is something that runs deep within their veins and can change their personality like the flick of a light switch. Yes, the competitive beast that lays within can be a very polarising experience, especially if the

person you thought you knew finds their team two points behind with only three minutes remaining and their adrenaline is pumping. Who doesn’t love to see an underdog beat all odds to finish first – does a certain speed skater come to mind? What a fantastic story for this young boy from Brisbane. A big heart with bigger dreams, and guess what, they all came true on the biggest stage in the world on the biggest night of his life. Olympic gold in one minute and 29.11 seconds to be precise. Gives you goose bumps just thinking about the amount of gruelling training he put himself through day after day, week after week, year after year to be in that magical position, on that icy night in Salt Lake City. Some may say it was a fluke or lucky – and yes, maybe he got a little help from the sporting gods (in fact, Mr Bradbury probably owes them a cold ale or two).

BUT … Steven Bradbury had to get in the top five in the world to be there for that Final. No small feat – he fought to qualify for that chance and like many of sports famous names, he engaged and committed himself to that path a long time ago. This year, once again, it has been an amazing summer of sport across the globe. From the Australian Open to the Cricket World Cup, we just can’t get enough of watching our elite athletes perform. But where are our future sports stars going to come from? These days, it can be pretty tough to get kids to do something as simple and engaging as playing outside with a bat and ball. Running around with friends will often take second place to video games, TV, Facebook or the internet and many parents despair at the time their kids spend in front of a screen when they, themselves, spent their childhood playing

Lunar new year Sanctuary Cove welcomes the Year of the Sheep. THE STREETS OF SANCTUARY COVE came to life in February with a spectacular four-day Chinese New Year celebration. Residents and visitors alike joined in the fun with lion dancing, fire cracker displays and kung fu demonstrations, as well as entertainment by a traditional Chinese woodwind group, a jumping castle, face painting and much more. One of the highlights of the celebrations were the Chinese-inspired craft workshops. Hosted by Griffith University’s Tourism Confucius Institute, visitors of all ages enjoyed getting hands-on with a range of activities from mask painting to Chinese knot making. No Chinese New Year celebration would be complete without beautiful, authentic Chinese food, and Sanctuary Cove’s Dragon Cove laid out an array of delectable dining with their traditional lunch and dinner banquet menus. Visitors indulged in a huge selection of Chinese dishes including handmade spring rolls, Xiao

Long Bao, steamed fish with ginger and shallot and Peking pork ribs. Dragon Cove owner Jackie Cheng said each dish on their specialised Chinese New Year menu was steeped in tradition, which he and his team enjoyed passing on to the delighted guests. “All of the dishes are homonyms for a particular wish in the upcoming year and hold significant meaning for the 12 months ahead,” Jackie said. “It was wonderful to be able to share these honoured traditions with our guests. “For example, when the Prosperity Toss Salad is served, everyone stands up and tosses the shredded ingredients into the air with their chopsticks while saying various auspicious wishes out loud. It is believed the height of the toss reflects the height of the diner’s growth in fortunes.” Another popular addition to the celebrations were the colourful lion dancers, which wowed the crowd each day with their unique choreography.

Said to bring good luck, the lion dance, where two people inhabit the specially constructed suit and mimic the movements of a lion, is one of the oldest festive performances in Chinese culture. A highlight of the performances was the crowd interacting with the lions. Also, don’t be alarmed if you see residents breaking out a few martial arts moves around Sanctuary Cove, after the popularity of the kung fu demonstrations that were part of the celebrations. Head of Marketing & Events at Mulpha Sanctuary Cove Johan Hasser said the event was a wonderful success. “We created a full event program unlike anything else on offer throughout the Gold Coast and we were very proud to see so many tourists and locals joining in the fun,” Johan said. “The Marine Village is a wonderful location to hold these types of events and we are thrilled that our residents and businesses throw their support behind them.”

Manners are magic Author and etiquette expert, Patsy Rowe, has released the second edition of her best-selling book, Elbows off the Table. HOW OFTEN DO WE HEAR, ‘Children today have no manners!’. Often true, but children can only have good manners if someone teaches them – so it’s up to parents (yes, both of them) and grandparents (who have an invaluable role albeit a background one ) to lead the way. I wrote Elbows off the Table, a book for under 12’s, as I truly believe that having good personal and interpersonal skills is the key to opening many doors throughout life. We need to interact with others in our day-to-day lives; how well we do this determines our success socially, even from the earliest age. This book will help youngsters to be the best they can be. Having taught children over a 30-year period, I found that they are far more open to learning if they know why they need to learn something. Explain that being the smartest person in the class or the best athlete in the school is something to be proud of – but not if the teachers and coaches find you rude and your classmates dislike you. This will send a clear message that manners are like a magic wand that make you popular and successful. In addition, point out to children that if they know what to do, and more importantly, how to do it, they’ll be confident and feel good about themselves. This groundwork is invaluable later in life when so often young adults who are awkward and lack confidence can sadly miss out on career opportunities because they don’t ‘present well’. From the earliest age, children can be taught the five magic phrases: ‘please’ and ‘thank you’ followed closely by ‘excuse me’ ‘pardon’ and the important, ‘I’m sorry’. Children are often shy and have a hard time meeting adults so if they can be encouraged to smile when they’re introduced they’re off to a good start. Encouraging them not to look at their feet and mumble, and as they get a little older if they can manage to also look the other person in the eye, and say, ‘Hi, I’m Jack’ or ‘Hello, Mrs Johnson’ they’re ahead of the game.

From the earliest age, whether they’re participating or watching others play, they should learn to be a good loser. Remind them to congratulate opponents and avoid saying bad things about the other team which only makes them look mean. Say, ‘Nice goal’ if it was. People admire a good loser and a modest non-boastful winner. Especially as adults! Often children are invited to a birthday party or for a sleep over. Remind them to reply promptly to any kind of invitation saying whether they can, or cannot, go. Learning to accept what’s different in another’s home helps youngsters to understand that today many households are different. While they may come from a home with a mum, a dad, a sister and three cats, some families have step parents, step brothers or sisters and some may be single-parent families. Others could be adopted or live with grandparents, so it’s best not to ask personal questions like, ‘Don’t you have a mum?’ or ‘Why does your dad live in the shed?’. We live in an electronic age where often even the youngest children have a mobile phone. Teaching them not to shout and to turn it off or ‘mute’ in the cinema, at a concert or in a restaurant; that it’s rude to have long conversations or text others while neglecting the friends they’re with, is good training for adulthood. If their phone has a camera, point out it’s not funny to take photos of friends or family in awkward situations which could cause embarrassment particularly if someone posts it on Facebook. If children remember to treat others as they’d like to be treated, life will go more smoothly, not only for them but for everyone in the family.
