Editor’s letter AS YOU CAN SEE from the cover, this is the 50th edition of Cove magazine … a significant achievement and one we are incredibly proud of. When Clare started the magazine almost a decade ago, she had a very clear vision to create a quality, aspirational publication for the Sanctuary Cove community. Over the years, that vision has evolved and expanded, with Cove now found across a wide and varied distribution base including airport lounges, high-end hotels and selected newsagencies throughout Australia, Asia and the Middle East. However, our original commitment to produce a magazine which showcases ‘Australian living at its best’ remains the focus of each and every edition. While I still recall the excitement and anticipation of waiting for that inaugural copy to come back from the printers, I can honestly say that, 49 editions later, I am just as enthusiastic about both the magazine and the wonderful team who put it together. Which brings me to this, our very special commemorative issue. Gold has long been known as the official symbol of the prestigious 50th anniversary so, as expected, the pages within are shimmering with style.

Golden couple, Gregor and Alice Tait, have both achieved outstanding success in the pool. Now, this dynamic duo have embarked on the next stage of their careers and share with us an interesting insight into life after swimming. Another star who is continuing to shine is Liam Neeson. With a growing number of leading roles to his credit, the Irish actor readily admits: “I still get that rush, that fear, that energy I did when I was in my thirties.” You can read more about this popular action hero in our feature interview. Still on the gold theme, our Iconic Brand in this edition looks at the history of the precious metal and its varying uses in everything from art and architecture to food and fashion. “SOMETIMES I FEEL LIKE I’ve just started out,” laughs Liam Neeson, chatting in a suite at London’s Mandarin Oriental. “I know I’ve been around for donkeys but I still get that rush, that fear, that energy I did when I was in my thirties.” Maybe it’s because the 63-year-old’s astonishing career has assumed distinct and very different chapters.

Enduringly popular on the big screen, the handsome Irishman made his name with leading work in Under Suspicion, Darkman and Woody Allen’s Husband and Wives before an Oscar nomination for Schindler’s List launched him into megastardom.

But after the brilliance of historical epics, Michael Collins, Gangs of New York and Kinsey, Neeson moved into his finest hour with the Taken franchise, a surprise monster hit which heralded his transition into an action star. Since then, he’s taken on a slew of similar roles including his latest thriller Run All Night which saw the actor play an ageing hitman who must take on his boss (Ed Harris) before his son is murdered for a heist gone wrong. Although delighted when named Hollywood’s top action star by Tinseltown experts – placing him over Arnold Schwarzenegger, Tom Cruise and Sylvester Stallone – Liam has retained his down to earth swagger and charm. Sadly, his private life has been rocked by tragedy. Natasha Richardson, his wife and mother of his sons, Michael (19) and Daniel (18), passed away in a skiing accident in 2009 and the actor has admitted his struggles in coping with the loss. But in a frank, honest chat, he talks freely about his sons flying the nest for college, his hopes and dreams for them (including their future wives), what he pines for on a daily basis and how long he has left as an action star.

You’ve become Hollywood’s go to action hero. And, let’s be fair, at a later stage in your career. People keep asking me how long I have left. Which hurts a little [laughs]. I’d imagine it’s quite brutal. It depends on how it’s questioned. If it’s like, ‘Are you REALLY going to do more action movies? Really? You?’ Well how long more do you see yourself doing them? I don’t know. I’d say there’s a couple more right there – I’ll give it two more years maybe. Taken is where it all started. Could you ever have imagined dominating this genre? Never. Never ever. But you can never predict these things. I remember my agent sent me the script [for Taken] and I read it and thought, ‘Oh this will be great to do, but they’re not going to think of me’. And then I was in Shanghai of all places for the film festival and Luc Besson was there and I said to Luc, ‘I’d love to do this. You’re probably not thinking of me, but I was an ex-boxer you know, I’d love to do something physical’. >>

And then it became a hit. I’ve said this before but I thought it would go straight to video. That it would be a good, tight little thriller, and that would be it, a small release. Then Fox studios made a hit out of it. I remember it came out in France first and then South Korea next and then a few days after that I got a call from one of my nephews in Worthing in the south of England. And he said, ‘I just saw your movie’. I said ‘What movie?’ He says ‘Taken’. ‘You couldn’t have seen it, it’s just come out in South Korea’. And he said ‘Oh yeah I downloaded it’. I said, ‘Why’d you download it? You are breaking the law Connor’.

– but this turned out really tight and tense and gripping. So I hope people liked it. You’ve worked quite recently with Jaume Collet-Serra on Non-Stop. Was it such a good experience that you had to go again? That’s exactly it. There was this fantastic collaboration on Non-Stop, which could have been pretty run-of-the-mill hi-jack film but he brings a touch of quality, a real depth and resonance. You only have to look at who he assembled for Non-Stop – Julianne Moore, Lupita [Nyong’o], and Run All Night – Ed Harris, Joel Kinnaman. He attracts class. So when the opportunity came up and I read the script for Jimmy, I loved it.

in the last Taken could I have another family member taken. The audience would have stopped believing in it. So Run All Night, is a different concept; Jimmy’s fighting for his son’s life by taking on his former boss but he’s protecting him, he’s always by his side.

How does it differentiate from Taken. Some say it looks quite similar. There’s a grit, and a lack of sheen. It’s a very grounded story whereas Taken is a little more blockbuster. Although Run All Night is huge too. They’re great films that stand by themselves.

It was even more physical than some of your previous roles too. Mark Vanselow, who’s my fight choreographer, and I have done 16 films together. We always ask, ‘What’s the quickest way to get from A to B when there’s two bad guys in the way, without doing all this shit [does karate moves]’. I don’t do that. Jackie Chan does that brilliantly, so do some of these oriental martial arts guys, but I said, ‘We’re not doing that, so what’s the dirtiest, nastiest way I can get from point A to point B?’ There’s a couple of special forces guys who’ve helped us in the past, one in particular was with us in this film. I can’t use his name, he’s active service. So you learn quite a bit. It’s been an education.

Like Taken though, you’re protecting your family again in Run All Night. But no one is taken [laughs]. I can’t do any more films where someone is taken. Not even

A big element of Run All Night and the Taken franchise is family, which is obviously very important for you. Your youngest son is about to go to college. How are you finding that?

Oh god, that was quite the confession. Well now, I understand because the cinema is quite expensive for young lads. They’ll pay obviously for the big events. The Batmans he’ll go and see, but others he’ll download because he can’t afford to see them. Run All Night was another fantastic action movie where you dominated the screen. Thank you very much. I was happy with this one. I’m happy with all my movies, some probably more than others – we won’t mention any names

They’re leaving the nest. But that’s what you want for your children. You want them to spread their wings and get out there and make something of themselves. So it’s bittersweet. But I want that for them, always have. I want them to see the world, and have fun, have relationships. And settle down if they want. They’re kids though, they have another twenty years before they do that. Twenty years, that long? It’s different for guys. Ladies get their act together emotionally by their late twenties. They know who they are. Guys haven’t a clue until they’re at least 35. I’d say 40. So don’t even think about marriage and kids until you’re at least 37, 38. You’ve been living in New York for twenty years now, what do you miss about Ireland, UK? I come back here and home every year so it doesn’t feel like I’m that detached at all. But do you know what I do miss most? Radio 4. Radio 4 was great when I was living here in the early Eighties. I miss Gardeners’ Question Time, followed by Woman’s Hour, followed by the play of the day which would have someone great like Judi Dench, Charles Dance. And this is all before you get out of bed. >>

But it’s not the same as tuning in the radio. I’m too old and stubborn to get my head around it. So what’s next for you? I’m doing Silence, the Scorsese film, which I’m looking forward to. I haven’t worked with Marty since Gangs [of New York]. And then A Monster Calls, where I play a tree … that’s one to tick off the bucket list … working with Juan Bayona, so I’m looking forward to that coming out. That’s all about the projection. Any more action in the can? Nothing at the minute. But you know, I just respond to good writing. I don’t want to have anything foisted on me like Expendables 8, or 9, or something. And I am not knocking that genre at all. Do you not fancy going toe to toe with Arnie et al? No, no. But you haven’t been asked. No, not as far as I know. Maybe Arnie’s intimidated. Actually, I turned down a film that he ended up doing. I’m so glad I did. What was that one? He’s a sheriff in the desert. The Last Stand? Thank you. Yeah, sorry Arnie – not for me.

NO OTHER PRECIOUS METAL OR JEWEL evokes the perennial worth and luxury of gold, which has given rise to descriptors of excellence like ‘gold standard’, ‘gilt-edged’ and ‘golden opportunity’. And its adoption as the official symbol of the prestigious 50th anniversary when, due to shorter lifespans, attaining this milestone was enjoyed by far fewer than it is today was perhaps the ultimate acknowledgement of its preciousness. Throughout history gold has appeared in folklore, fairy tales, art, architecture, popular culture, news, fashion and even in food and drink, and continues to do so in ever more inventive ways.

For this reason it’s a relief to learn that, despite its extensive use to this point in time, it’s believed that the vast majority of the Earth’s gold reserves remain undisturbed, awaiting a glorious incarnation. We may not yet know what that might be, but one thing we can be sure of is that whatever it is, like gold itself, it’ll be precious, beautiful and enduring.

GOLD IN FASHION Ever since Homer fitted The Iliad’s Hector with armour of gold (and quite likely before that), the precious metal has taken a perennial role in the history of fashion, always evoking an air of luxury, status and style. Gold embroidery (an ounce of gold can be stretched into more than 50 miles of thread) has featured strongly throughout history, with famous devotees including Egyptian pharaoh Tutankhamun and his queen, and Tarquin the Ancient, who was said to be the first person to wear a gold-embroidered robe in Rome. Italian cloth of gold, made by wrapping fine gold wire around a silk thread before weaving, later became the ultimate symbol of grandeur for European royalty and people of style and nobility. Despite a period when moralists decried its use for personal adornment while encouraging modest dress in the devout, humankind’s fascination with gold persisted, and it became re-established not only as an element of fashion, but of ceremony – ironically, becoming an intrinsic element of ecclesiastical wear. Richard III was also said to have signified the divinity of his coronation by wearing cloth of gold after being anointed as king in 1483. The Italian love affair with gold has persisted throughout the centuries, with contemporary designers such as Dior, Galliano and Gucci showcasing its allure through their designs. The late Gianni Versace was lauded as ‘loving gold like a Renaissance magnet’ who believed gold lent a spiritual significance to whoever wore it. In more modern times, even more casual, fun fashion has celebrated the beauty of gold – think Kylie Minogue’s hot pants and costumier Lizzy Gardiner’s gold credit card dress, which stole the show at the 1995 Oscars ceremony. The designs themselves may change from time to time but, just like the quality it epitomises, gold never goes out of style. >>

CULINARY GOLD Gold leaf is edible and, although flavourless, it can beautify food and drink by lending a sense of opulence, particularly to desserts and confectionery. A traditional (centuries old) artisan variety of green tea produced in Kanazawa, Japan, contains pieces of gold leaf, and liquors such as Danziger Goldwasser and Goldschlager, which have tiny specks of gold leaf floating through them and were originally believed to be medicinal, have been well known in Europe since the 1500s. Dishes from some Asian countries feature gold in fruit, jelly snacks, coffee and tea, while thin sheets of gold leaf are used as a culinary garnish for festive occasions in India.

GOLD IN ARCHITECTURE Due to its beauty, value and resilience, gold has been an integral element of grand architecture since ancient times from external features like roof domes to the exquisite gold leaf adornment that features strongly in many glorious structures of historical significance. Gold featured strongly in Byzantine and Roman churches and basilicas as far back as 400 AD, with Rome’s Basilica di Santa Maria Maggiore boasting possibly the oldest example of gold mosaics, which were created by backing stone, tiles or glass on to gold leaf walls. The use of gold was embraced globally, but in unique ways from culture to culture and from one continent to another. For example, Peru’s Inca people adorned their Temple of the Sun at Cuzco with pure gold in the belief that gold was ‘the sweat of the sun.’ The Shwe Dagon Pagoda in Burma is a superb example of Buddhism’s widespread use of gold for its temples and statues of Buddha, while the pure gold-plated main dome of St Isaac’s Cathedral in St Petersburg, Russia – the world’s largest orthodox basilica – rises to 101.5 metres (333 ft). Social and economic upheavals saw the use of gold fall from extensive use in Western architecture throughout most of the last 100 years, with the gilding of organic forms in Vienna at the turn of the 20th century being perhaps the most notable recent example. But now there’s a resurgence that has seen the ancient practice of incorporating gold into buildings of beauty applied in a new way – using the ‘less is more’ principle. In this way, wrapping otherwise unembellished designs with stylish gold forms creates visuals that are all the more arresting for their understated simplicity.

OVER COUNTLESS generations and civilisations, gold is a recurring theme in the ornamentation and dress of the elite. From the ancient Greeks, Egyptians, Romans, Aztec, Japanese and other historical peoples, this precious metal is the universal symbol of opulence, affluence, and luxury; its value is tangible, and its complexion truly mesmerising. As for its effect on the eye of the beholder, gold is a metal that many artists are drawn to and inspired by. Gustav Klimt’s infamous Portrait of Adele Bloch-Bauer I was influenced by the 6th century Byzantine mosaics of Ravenna, Italy. Featuring gold-leaf tiling in intricate detail, the effect is almost hypnotic.

Many fashion designers, including Valentino Garavani, Marie Grazia Chiuri and Pierpaolo Piccioli, as well as Vivienne Westwood, Alexander McQueen, Rick Owens and Christian Dior, are known to have been inspired by Klimt’s gilded artworks and progressive interpretation of modern beauty and femininity. From a fashion point of view, since the global financial crisis of the late noughties gold has gone into hiding, and until recently has not been seen on the catwalks. This is all changing. The economy is turning and the haute couturiers are tentatively putting their money where their wardrobe is, by placing gold embellishment and detailing against neutral tones, to let the minutiae take centre stage.

With the recent release of Woman in Gold and that gold dress, we are set to see a revival of gold in fashion in the upcoming seasons. The frock worn by Antje Traue in the movie, though more sumptuous than is seen on the current catwalks, reflects the trends adopted by the high-end design houses in creating pieces which let the gold detailing do the talking. Valentino Garavani kicked off the gold embellishment trend with the now iconic Rockstud collection in 2013. The Rockstud was an instant success and is now a staple in any fashion maven’s capsule wardrobe. Featuring gold studs on neutral toned shoes, bags and wallets, the collections have changed over the years to include brighter colours and diverse studs. The initial and classic best, however, are the black and pink nude pumps with gold studding on the strap. It is effortless chic, rock and roll meets Hollywood glamour. Inspired by the success of the Rockstud line, and perhaps the release of Woman in Gold, the Valentino Garavani Fall 2015 collection featured gold detailing reminiscent of Klimt’s love affair with gold leaf. Designers Chiuri and Piccioli embellish many of their pieces with gold zippers, studs, lace applique and brocade. Geometric design and Asian motifs are glued together with seamless gold detailing, making for a collection of understated glamour. >>

Similarly, gold features in Spring/Summer 2015 (SS15) collections by Ralph Lauren and Marc Jacobs. Marc Jacobs uses oversized gold buttons, studs and metallic fabrics as part of his distinctly military vernacular this season. Metallic gold bags and pocket details break up the neutral tones of the garments; the gold embellishments soften the austere silhouettes, while adding a touch of opulence and femininity to the designs. Ralph Lauren used gold tones and metallic fabrics in his SS15 ready to wear collection which mirrors his signature casual spirit in the high end range, with fitted cargo pants and jodphurs teamed with flowing tops and safari jackets in rich muted golden hues. His pièces de resistance in evening wear saw epaulets and patch pockets on the bodice with flowing skirts, and embroidered organza gowns in the same golden tones. Michael Kors Fall/Winter 15 sees gold lace brocade detailing on dresses and jacket cuffs, as well as a metallic gown reminiscent of Marilyn Monroe’s gold lamé dress in Gentlemen Prefer Blondes, or Sofia Loren’s gold number in Houseboat. Dressing Kate Hudson in top to toe gold at the 2015 Met Gala, his figure-hugging high-neck gown turned heads and made a golden splash on the red carpet. Ladies, gold is making an inevitable comeback this season. Incorporating it into the timeless and elegant wardrobe requires discerning taste and a tight hold on the metallic reins. This season is not about flaunting the opulent hue, but adding touches of its incandescence to your outfits.

HAVE YOU EVER WONDERED whether frozen veggies are devoid of vitamins? Or if microwaves cause cancer? Nutrition advice can sometimes scare us into misunderstanding the pros and cons of what we put on our plate. Cancer Council puts some common food myths under the microscope. Myth 1: Are fresh veggies more nutritious than frozen? Frozen veggies are usually picked in their prime and snap-frozen very soon after harvesting, which means they are full of nutrients, while fruit and vegetables destined to be shipped to freshproduce aisles can be degraded of some nutrients due to long travel time. That said, growing your own vegetables or buying them fresh from your local farmers markets may offer more health advantages. In contrast, canned vegetables tend to lose a lot of nutrients during the preservation process, which is why it’s important to always read the food label or opt for fresh or frozen veggies as an alternative. Frozen vegetables can be an important part of a convenient and nutritious diet, serving as a handy freezer friend for those busy days when you don’t have time to prepare a nine-course degustation. Verdict: Frozen vegetables are easy to prepare and can provide you with a healthy homemade meal, saving you from the temptation of takeaway. Myth 2: Is chocolate good for you? Chocolate has been found, in some studies, to reduce blood pressure and the risk of stroke, as well as benefitting cardiovascular health thanks to antioxidant and anti-inflammatory agents that protect the inner walls of blood vessels from atherosclerosis. If you crave chocolate, try to go for dark chocolate, with 70 per cent cacao solids and less sugar, with fat derived from cocoa butter and the added benefits of iron and magnesium.

Keep in mind though that if you’re watching your waistline, there are many other better options out there. Verdict: Chocolate is best consumed in moderation and as part of a healthy balanced diet. The best way to up your antioxidants is to munch on a variety of plant based foods. Myth 3: Can your microwave give you cancer? Microwave ovens do not make foods radioactive. Microwaves heat food by producing radiation which is absorbed by water molecules in the food – this makes the water molecules vibrate and produce heat, which cooks the food – they do not make any changes to food that aren’t made in any other cooking method. In fact, microwaving is actually one of the best ways to retain all the healthy nutrients in your veggies. Boiling can leech out valuable vitamins and minerals, but because microwaving heats up food without having to use a lot of water, it helps foods to stay nutrient packed. Verdict: Microwaves are safe. Myth 4: Is coffee bad for your health? Systematic reviews of research judge the current evidence as mostly in favour of drinking coffee. Coffee is linked to a decreased risk of premature death, type two diabetes and some types of cancer, although more research needs to be done. If you’re a latte lover, keep in mind that adding milk and sugar to a few cups a day can significantly increase your calorific load – potentially contributing to weight gain and increased risks of chronic disease. Fashion and flare Suzi McDonald has been at the forefront of fashion in Sanctuary Cove for almost three decades. THERE’S NOT MUCH Suzi McDonald doesn’t know about retail and Sanctuary Cove. The only remaining original trader in The Marine Village, Suzi has seen a great deal of evolution over the past 27 years and is still enthusiastic about the beautiful location and marine village atmosphere. IT’S THAT TIME OF YEAR once again when Brisbane rolls out its carpets and catwalks and invites Queensland and Australia’s most innovative fashion labels to take their collections to the runway for the Mercedes-Benz Fashion Festival Brisbane (MBFF). MBFF has joined the ranks of Fashion Week Australia and Melbourne Fashion Festival as one of Australian fashion’s most respected events, however, this year promises something extra special as the festival marks its 10th anniversary. In celebration of this milestone, The Face of Myer, Jennifer Hawkins, will walk the runway in the Myer parade for the first time. Jennifer will be joined by Myer Ambassador, Kris Smith, who will appear on the Brisbane catwalk for the third consecutive year. With a new home at the John Reid Pavilion, Brisbane Showgrounds, the 2015 MBFF will bring expertise, glamour and featured names to the diverse schedule of events, with the evening catwalk program complemented by a fashionable selection of daytime fixtures. One of the must-attend events is Edwina McCann’s panel discussion on Australian fashion and branding. Ms McCann’s tenure as Editor in Chief at Vogue Australia gives weight to her impressions and opinions of Australian fashion. She will be joined by industry leaders Aje and Oroton, offering behind-the-scenes insights into prominent local design. The QueensPlaza High Tea and Fashion Trends, hosted at the exclusive Tatersall’s Club, will keep your wardrobe choices on point this season with a discussion on the latest trends and how to translate them into your daily wardrobe. Due to previous popularity, this event runs twice, giving you ample opportunity to take advice from local stylists including Kimberley Gardnet. The QUT Art Museum’s Tutu Reimagined brings together a collection of haute couture tutus commissioned by the Australian Ballet in 2003.

Featuring garments by some of Australia’s most recognised designers including Akira, Collette Dinnigan, Alex Perry, Toni Maticevski and Scanlan and Theodore, the exhibition displays an Australian interpretation of the iconic costume of refined performance art. In conjunction with MBFF Brisbane, curator Dr Nadia Buick will discuss the collection with one of the designers at the special Tutu Reimagined: In Conversation event. The grassroots of Brisbane’s fashion scene will pop up at the State Library as the Fleet Fashion Boutique. All in a roe

Commonly known as bottarga, air-dried mullet roe is a seafood delicacy.

DESIRE, I GUESS, is a necessary human condition: the complacency of a comfortable existence is just as powerful as the hunger of a needy one. That’s why an emperor dying of thirst will swap his kingdom for a glass of water and a well-fed librarian will risk his comfort on the roll of a dice. It’s desire, not taste, that makes the likes of caviar and foie-gras so expensive and wanted. I love them both – the salty burst of yolkish liquid and the fat-filled succulence of raised liver – but I reckon I’d walk over hot coals for a roast chook if chickens were as hard to find as a saffron strand, and I’d pawn my mother for a slice of mango (sorry Mum) if it came from the last mango on earth: God knows what I’d do for a hunk of fresh bread, warm from the oven, if wheat was nearly extinct. Yes, humans are strange creatures hiding a burning desire for those things that are most out of reach … which brings me to the whole bottarga – air-dried mullet roe – in front of me. It’s expensive stuff, three or four times the price of a good wagyu steak. Bottarga is one of the luxury foods – alongside white truffles and Brunello di Montaclino – that originate from Italy and it’s pretty damned tasty in a salty, rich, slightly smoky kind of way.

The stuff on my plate was made in northern New South Wales from local fish (well … their innards) by Salumi Australia. It looks like a pair of largish pea-eggplants, or perhaps some kind of mummified sheep-testicles, but it tastes unlike either: it’s good, delicious even, with a texture that is a little more firm than just-set egg yolk and a little more grainy. And it tastes of the sea – not as emphatically as caviar or even salmon roe, but there’s a definite tang – alongside the artifacts of the drying process. The Italians have been playing with bottarga for more than three millennium. It and its like can be found in Spain, France, Portugal, Greece, Croatia, Lebanon and Africa. Even though the mullet roe is considered the best, there are versions using tuna and swordfish roe: same, same but different. Salumi Australia sources mullet roe from Markwell Fisheries within an easy paddle of its kitchens in Billinudgel, near Byron Bay. Markwell have been providing locally harvested and sustainably caught seafood for over 60 years and work closely with Salumi Australia to promote sustainable food production and low food miles. “It must be noted that the majority of Australian mullet roe is sold to the overseas market for

processing and then sold back to Australia as a high end, highly priced product,” explains Michael Dlask from Salumi Australia. “We are aiming at educating the Australian consumer on bottarga to gain greater love of this product and keep the processing dollars in Australia.” This is particularly important given the labour-intensive techniques involved in producing bottarga. “The mullet roe sacks are individually checked, pressed, salted and dried for two weeks until a weight loss of over 35 per cent is reached,” Michael says. “The resulting golden fillet has a delicate, yet distinct, flavour of the sea and is best showcased by freshly grating it over seafood or oil-based pastas and on pizza. It can also be very thinly sliced and drizzled with olive oil and/or lemon juice. A little bit goes a long way!” So, is bottarga as good as the hype suggests? Well my wife won’t try it, my daughter doesn’t like it, my son eats it but would probably prefer an apple and I kind of love it. Am I being wooed by the story? Maybe. But there’s something irresistible in its salty complexities that makes me (against all my inner warnings) keep going back for another slice.

Winning wines Queensland wine dominated the medals at the 2015 Royal Agricultural Society of Queensland Wine Show.

HAVE YOU EVER BEEN STUCK in a rip and fought against the pull that seeks to drag you into deep waters (against, of course, the advice of the lifesavers to go sideways)? And you fight, and fight, and fight until – inch by inch – you notice the shore becoming a little closer and it finally lies within your grasp. Blessed relief! I wonder if the Queensland winemaking fraternity has lived through that same kind of feeling; a rip that lasted decades and only now they might be feeling the solid touch of sand under their feet. If that’s an accurate analogy (and I reckon it is) the only real challenge that remains is convincing the local buyers that Queensland wine is kind of cool … the rest of the country seems to know it. Exactly how slick it is must surely be open to question, but I have a tale that should help to put things in perspective. It all happened a week ago today as I type this, at the Royal Agricultural Society of Queensland Wine Show – a show that attracts wines, made from the Mediterranean varieties, from all across Australia. The near-end result was eight wines fighting each other for the trophies. What wasn’t known at that stage was the fact that four of the eight were Queenslanders.

To put it more exactly, less than 30 per cent of the entries came from Queensland but 50 per cent of the Gold Medals were awarded to them. They are batting above the average, at least where the Mediterranean varieties are concerned. Only two white wines actually made it to the trophy taste-off; Ridgemill Estate Pinot Grigio 2014 and Preston Peak Viognier 2013 – both from Queensland and selected by judges with no clue as to their origins from a pack of 46 wines from across our continent. The Viognier snuck ahead. The red wine pool was much bigger … 160 in total. And of that 160 there were close to 30 made in Queensland … maybe 20 per cent. From that pool, six were selected as trophy candidates; two – the judges found out later – were from the Sunshine State, including the wine that went on to win Best Red Wine and Best Wine of Show – Golden Grove Joven Tempranillo 2014. And it kind of smashed the field! Next in line was Ballandean Estate’s Saperavi. It might sound like I’m trying to sell you a life insurance policy that’s too good to be true, but the reality is that Queensland wines – particularly Granite Belt wines – are right at the forefront of the alternative variety wave. And that’s a wave that is still gaining weight so the triumphs of this year are really just a taste of things to come.

Let’s have a closer look at the wines that did well. Ray Costanzo makes the wines at Golden Grove and is the third generation at the property. Where winemaking is concerned he is one of the brightest stars in the state and his wines have won numerous awards across Australia. He is a dab hand with tempranillo (and he’s not the only one in Queensland … the Granite Belt seems well suited to the variety). What makes the 2014 Golden Grove Joven Tempranillo so special is its interplay between the juicy blue fruits that are an inherent trait of the variety and the savoury cut brought by some clever winemaking. It’s an impeccable benchmark from a wonderful grape. The 2013 Preston Peak Viognier is anything but a benchmark, in fact it kind of flies in the face of traditional viogner and that’s what makes it so special. Viognier is a fragrant variety that tends to make quite rich minerally wines but it’s a difficult variety in the winery so most folk don’t toy with it. The Preston Peak has been wild-fermented in barrel, resulting in a rather taut, exceedingly complex wine that sails much closer to top level chardonnay than it does to traditional viognier. There’s something quite thrilling about it.


We have the QUAY to great coffee ...

If tempranillo and viognier sound a little alien, saperavi will come across as quite nonsensical, when in fact it’s a grape that probably outdates the rest of the field by a thousand years or so. In Australia it’s a relatively new and rather rare variety that produces full bodied, densely structured reds. I only know of two being made in Queensland and they are both spectacular. Ballandean Estate is obviously one of those and it manages perfectly the interplay between the grit and power of the grape and some rather plush fruit. It wasn’t all a Queensland-fest. Reillys Wines from the Clare Valley was given a Gold Medal for its 2013 Dry Land Sangiovese; Moppity Vineyards from Hilltops managed a pair of Gold Medals for its sibling shirazs (Estate and Lock and Key) both from 2013 (something special is happening there!); Twisted River from Orange topped the shirazblends class with a Gold Medal and a bunch of others were awarded silver and bronze. But the fact remains; Queensland wine dominated the top medals and stole the show from a field that included some rather hallowed names. To me that’s a very satisfying result, but hardly a surprise: Queensland – more particularly the Granite Belt – does this stuff really well: it’s simply nice to see it recognised. And that recognition has been a long time coming.

The ultimate Aston Chris Nixon gets behind the wheel of the dramatic Aston Martin Vanquish.

WHICH EXOTIC SPORTS CAR would I buy with a spare half-million? For exclusivity, it would be an Aston Martin Vanquish. The new Porsche 911 Turbo might be sportier, the Lamborghini Hurracan more outrageous, the Audi A8 more practical, but the Vanquish has them all covered for sheer class. While most super-sports cars are mid-engined with forward-set cabins, Aston Martin retains a front-engined layout for its ultimate GT that allows a long nose and very streamlined profile. It is knee-weakeningly beautiful, with lines that look like they have been shaped by wind blown over liquid mercury. In the first five months of this year 54 Aston Martins of all models were sold throughout Australia, slightly more than Lamborghini but many fewer than the most famous exotic, Ferrari. And while more Aston Martins than ever before are being sold here, you won’t see one every day like you might some of the alternatives. At $484,995 plus on-road charges the 12-cylinder Vanquish is the most expensive Aston Martin model (although a convertible variant costs more), yet according to Gold Coast dealer Sunshine Aston Martin it’s also more popular than its Vantage, DB9 and Rapide siblings.

I can understand if this is because buyers find it a perfectly acceptable daily driver. It wouldn’t be mine, as the frustration of constantly restraining its considerable performance would drive me mad; but yes, it will get you to the shops for milk and a paper without needing a racing licence.

It is knee-weakeningly beautiful, with lines that look like they have been shaped by wind blown over liquid mercury. Recently, I tested the 2015 Vanquish, which has gained a host of small improvements and one big one, an eight-speed ZF automatic transmission to replace a six-speed unit. The wider spread of gears but tighter spacings are said to cut acceleration from rest to 100 kmh to 3.8 sec, while reducing fuel consumption. Claimed top speed is 323 kmh. Whatever has been done to the engine, driveability is hardly an issue when your right foot controls 12 cylinders, 6.0 litres, 424 kiloWatts

and 630 Newtonmetres. Just floor it and power out of anything. It helps that the Vanquish’s extruded aluminium and carbon fibre body structure keeps kerb weight to 1,739 kg, light for a luxurious supercar with a monster engine. The new auto, mounted with the differential at the rear for better weight distribution, is lighter and so allows stiffer, re-tuned suspension for better cornering ability. It’s smooth plus fast when necessary, though never shifts with the brutal suddenness of twin-clutch gearboxes; the Vanquish is not that kind of car. Short of taking it to a track, no-one is going to experience the limits of this vehicle’s speed, cornering or braking. But its potential is always evident, from the moment in your driveway when you push the starter and the engine erupts into life with a whirr, a bark and then a deep, impatient rumble. And then the excitement meter goes up about 1,000 points when you crack the throttle for a passing move. The noise is loud and thrilling; no wonder plane buffs still romance over the note of that other great British V12 engine, the Rolls-Royce Merlin fitted to RAF Spitfires.

Let me tell you, three four-cylinders will never make a 12-cylinder! After a while, the nervousness of driving such an imposing machine mostly evaporates and one can start to test it more confidently. There are no surprises – it sticks like glue with a 51:49 weight balance and stops consistently with enormous Brembo composite brakes. But the driver better beware as things tend to happen very fast. The Vanquish is described as having 2+0 seating, which means there are back seats but they’re effectively useless. That’s the only compromise in an interior that is otherwise supremely comfortable and handfinished in the best British craft tradition, without a skerrick of bling. I loved the interior, except for a bleary reversing camera image. Some might also point out the Vanquish lacks commonplace systems that would help protect this expensive car and its occupants, such as blind-spot alert, driver fatigue sensing or city emergency braking. But the Vanquish’s power and surefootedness already give it substantial safety resources. You’d hope the driver was up to the rest.

Sporting excellence As a true sports sedan, the Maserati Ghibli simply has no equivalent.

A YEAR after its Australian launch, there can be only one question over the Maserati Ghibli: are there enough to go around? The mid-size sedan that was expected to significantly boost the Maserati’s fortunes here found almost 150 new owners in the first five months of this year, a volume more than six times that of its big brother, the Quattroporte. The Ghibli is an affordable Maserati, though hardly a cheapie. Prices start at $138,900 for a 3.0 V6 diesel version and rise to $139,990 for a ‘base’ V6 petrol and $169,900 for a V6 S petrol. Feature-for-feature, they’re probably more expensive than a BMW 5 Series or MercedesBenz E Class, but they’re very different cars.

The Ghibli was designed from the ground up as a sports sedan, while others get their sports offerings through enhancement of lesser models. It may be the lowest-priced model, but the Ghibli is a true Maserati nonetheless. The twinturbo petrol engines are built by Ferrari and drive is through the rear wheels via an eight-speed automatic gearbox. The exterior styling is sensuously Italian and the interior as swish as a Milan tycoon’s boardroom. The compact Maserati drives as good as it looks. It stays well planted on the road, although the ride can be too firm if the adaptable shock absorbers stiffen or the car is wearing its optional 20 inch wheels and tyres.

Unlike an increasing number of cars chasing better fuel economy, the Ghibli eschews electronic power steering for traditional hydraulic assistance. The result is a sensitive and well-weighted connection to the road that sporty drivers will appreciate. The diesel, with 202 kW and 600 Nm, predictably is the slowest of the Ghibli trio but still gets to 100 kmh in 6.3 secs and is particularly rapid during overtaking. The V6 S with 100 kW more, cuts the 100 kmh sprint time to just 5.05 sec and has a top speed of 285. It’s expected Maserati will squeeze its Ferrari V8 into the Ghibli at some stage and that will be worth the wait.

THE LEADING LIGHT of the Gold Coast’s annual show calendar for marine craft buyers and boating lovers alike, the 2015 Sanctuary Cove International Boat Show (SCIBS) attracted perfect weather, robust crowds and jaw-dropping vessels. Celebrating its 27th year, the four-day event featured more than 500 boats and a full program of local and national entertainment. Helicopters, planes, luxury cars, marine brands, gear, gadgets and food were also showcased to the almost 40,000 visitors. Local, regional, interstate and international guests mingled in the bustling Marine Village,

WHEN I LIVED IN SYDNEY, the beachside suburb of Clovelly was one of my favourite places … so it was with a touch of nostalgia and much anticipation that I headed to Spicers Clovelly Estate at Montville for a mid-week getaway with my partner Derek. We had driven past this gorgeous Frenchinspired property on our last trip to the Sunshine Coast hinterland and were keen to experience its allure first hand. Suffice to say it didn’t disappoint. Located on the outskirts of Montville, the Estate is an easy drive from both the Gold Coast and Brisbane, and even closer if you are lucky enough to be based on the Sunshine Coast.

As we turned into the property, a corridor of gorgeous autumnal trees greeted us, setting the scene for a romantic couple of days. While we visited in the cooler weather, I can imagine the first impression would be just as enchanting in spring when the foliage is a sea of green, or summer, when the towering jacarandas are in full bloom. This welcoming ambience continued as we entered the main residence. The décor – from the elegant Bordeaux armchairs to the European-inspired artworks – was meticulously elegant, yet warm and comfortable as well.

In fact, it felt just like walking into your best friend’s house … providing they are well versed in the style and sophistication associated with the south of France. Our luxurious spa suite, located on the first floor, was also pleasantly welcoming. Books on the shelf, robes behind the door and luxury linens on the king-size bed. I was immediately drawn to the bay windows which frame the sweeping country views. The sumptuous throws and heated floor in the bathroom were also welcome additions given the outside temperature was hovering around 10 degrees. >>

While our room was perfect for the two of us, the property also has a charming self-contained guest house that can accommodate larger groups. With three bedrooms, two bathrooms and a personal kitchen and living area, ‘The French Cottage’ would be ideal for an adult family or a few friends wishing to spend a long weekend together. As we soon discovered, dining at Spicers Clovelly Estate is a real treat. The property’s restaurant, The Long Apron, has been the recipient of many awards, including two Chef Hats from both the Queensland and Australian 2014 Good Food Guides, and it’s easy to see why. Navigating the five-course tasting menu (which in actual fact included seven dishes thanks to the dainty aperitif and pre-dessert palate cleanser we enjoyed) is like weaving your way through a culinary maze. Fresh, contemporary flavours greet you at every turn, and each plate that appears in front of you leads you in a different culinary direction, until you arrive at the end of the meal, fully satisfied and excited by what you have just experienced. An a la carte menu is available for those who are wanting to revisit a particular favourite (Did someone mention Mooloolaba spanner crab, with roasted, pickled, fried and puréed celeriac, and hazelnuts?) or just enjoy a smaller selection of dishes. Chef Cameron Matthews also runs regular cooking schools for guests interested in creating

their own culinary masterpieces. Something I decided to keep in mind for our next visit, when I have more time. While dinner is an edible adventure, breakfast is more like a relaxed morning stroll. Served alfresco on the terrace, the menu again showcases the wonderful regional produce on offer, and everything is served fresh and delicious, straight from the open kitchen. This leisurely start to the day set the tone for the next few hours as we set about exploring the grounds. With walking tracks, intimate resting areas and a secluded swimming pool, there is a restful ambience that permeates the entire property. This is especially obvious in the spa, where I enjoyed the holy grail of treatments … the Spa Trinity … one and a half hours of bliss which included a 30-minute massage, followed by a petite spa facial and mini botanical barefoot therapy. Derek, meanwhile, took the opportunity to indulge in a therapeutic massage which he assures me was exactly what he needed after a busy period at work. A word of advice, be sure to pre-book your treatments as the intimate nature of the rooms means there are limited times available. While there is plenty to keep you occupied at the retreat, after our relaxing morning we decided to head out and explore the local scenery. >>

Both Montville, and nearby Maleny, are delightful villages with plenty of quaint coffee shops, eclectic boutiques and quirky homewares. I personally couldn’t resist the homemade fudge and sweet smelling soaps … and what getaway would be complete without purchasing at least one pair of (red) shoes. We also took a drive to a couple of the local wineries and visited nearby Lake Baroon, a picturesque body of water nestled in the mountains (if you ask nicely at Spicers they can provide a gourmet picnic hamper for you to enjoy on the shore). Heading further afield, the famous Eumundi markets are worth a visit, as are the spectacular Kondalilla Falls National Park and the beautiful Sunshine Coast beaches. However, for all the welcoming attractions that Spicers Clovelly Estate and the surrounding hinterland offer, I must admit my favourite spot in the entire place was the window seat in our room. Tucked under a traditional dormer, with views over the stunning green valley, it was the perfect place to rest, reflect and read … something that, given the busy lives Derek and myself lead, I don’t usually get time for. So, has this mountain top ‘Clovelly’ charmed me as much as its beachside counterpart? Absolutely. Have I got a new entry on my ‘favourite places’ list? Most definitely. Would I visit again if I had the chance? In a heartbeat.

The key to cruising A cruising novice, Lindsay Bennett has some great advice for like-minded travellers.

IT’S NO SECRET that cruising has become the latest trend for holiday-makers around the world, with a plethora of vessels travelling the open seas and rivers. But the idea has many first-timers asking themselves … ‘is it for us?’. Crowded decks and hallways; excitable family groups all dressed in coloured Hawaiian shirts; silver beards and walking frames; and hoards of people queuing to devour that last prawn cocktail – this is the vision that many of us have. But surely it can’t be all ‘thongs and muumuus’ for an industry that is moving forward in leaps and bounds and enjoying a larger share of the leisure market. Don’t get me wrong, I enjoy the company of others and am as partial to a lavish buffet as anyone else, but the concept of being stuck out at sea with 2,000 or more passengers was a little daunting – or to be totally honest, just downright scary.

Plus, I had this ideal image of leading my partner up the gang-plank for what should be a special milestone in our relationship – so it could all go horribly wrong. So, with a little trepidation and just one chance to get it right, I decided on the spur of the moment to test the waters and surprise my partner with a two-night ‘sampler cruise’ to see what all the hype was about. It all started one rainy day when, dreaming of a sun-splashed holiday, I read an advertisement offering a special deal to travel from Brisbane to Sydney on Queen Mary 2. Wow, what could be better than to be on ‘Cunard’s flagship and the most magnificent ocean liner ever built to take part in the 175th anniversary celebrations’? As a complete novice, I sought the advice from a leader in luxury adventures, Cove Travel, to guide me in the world of cruising. The only experience I had under my belt was catching

the Brisbane cross-river ferry, and even then I have been known to board the wrong boat in my haste. So clearly, I needed help at this stage if my relationship was to prosper. It’s often said ‘you get what you pay for in life’ and travel, especially cruising, is no exception. It was mentioned to me that there is a definite class-system on luxury cruise liners and Queen Mary 2 is a perfect example, with varying sized staterooms and suites (don’t worry, it’s nothing so dramatic as the class systems on the Titanic). With guidance from Cove Travel, we elected to book a Queens Grill Suite with its spacious and opulent décor and large private balcony. As a guest in this category, it also gave us the added benefit of dining in the exclusive Queens Grill Dining Room with its white-glove service. And while we had to pay more for this prestigious class of travel, I hoped it would set us in good stead to enjoy the adventure ahead.


But only time (and my partner’s reaction) would tell. So with tickets booked, I took to reading some of the many online reviews to make sure we didn’t appear too much like complete novices. The strange thing is that these personal experiences varied considerably and the feedback was quite mixed. In fact, it was as if people were on two very different cruise liners – one on the SS Minnow and the other, a true ‘Lady of the Sea’. As Queen Mary 2 is too large to dock at Portside Hamilton, we had to make our way to the Port of Brisbane – it is such a shame that this Grand Old Dame is docked behind grain silos and working wharves – not what we would have expected. We arrived at the designated boarding time and proceeded through a series of tents as we cleared customs, which all seemed quite surreal and definitely at odds with the imposing vessel towering above. In no time at all we were whisked on board, entering the liner from a deck just above the waterline. We were then ushered to the Queens Room auditorium, where we were issued with our individual photo ID cards before proceeding through the corridor and into a waiting elevator. From there we made our way to our Suite (located on Deck 9 – 9048 mid-ship). Opening the door we were surprised by how large it was, with an entry hall, glass display cases with a variety of glassware, spacious lounge area, walk-in robe, queen-size bed and a large private deck with two wooden steamer chairs, as well as a bathroom complete with spa bath, large sink and separate dressing/make-up table. A welcome bottle of champagne and plate of canapés were awaiting our arrival and it was not long before our doorbell rung and our personal butler, Roger, introduced himself and offered to unpack our bags and arrange alcoholic beverages for our mini bar. After a quick look around our suite we were eager to dine so it was off to Deck 7 to locate the exclusive Queens Grill restaurant. On arrival, we were greeted by our maître-de and shown to our beautifully appointed table – which would remain our table for the duration of the cruise. The wait staff were delightful, presenting us with delicious-sounding menus to select from, and we were soon enjoying carrot and peach chilled soup, followed by baby shrimp cocktail, Marie Rose dressing and pumpkin seed biscuit, topped off with a selection of sorbets and a bottle of wine. Feeling quite relaxed following lunch, it was time to explore the ship. We made our way through the myriad of entertaining spaces, lounges and restaurants before proceeding to the main deck to stroll around the ship, passing several pools and seating areas. >>

Queen Mary 2 conjures the charm of a bygone era of ocean voyages, with authentic afternoon tea, elegant decor and opulent dining, along with an outstanding outdoor Promenade ringing Deck 7. To sit on a deck-chair and sip on tea (or a cocktail) as you read a book beckoned to while the hours away. Deck 7 acts as the vessel’s walking track, where throughout the day and evening guests stroll or even go for a run while enjoying the expansive ocean views. Looking around at our fellow passengers, the average age on-board would appear to be 60+, but everyone seemed to be having a great time – ourselves included – as the calypso band played and guests mingled and enjoyed drinks on the pool deck, waiting for the Queen Mary 2 to pull away from her mooring and head out to sea. At 6pm, the ship's official dress code kicks in and jeans and shorts are discouraged, other than at the Kings Court buffet and the Winter Garden bar. For our passage to Sydney, the evening attire was ‘informal’ but it was lovely to see that most guests dressed for dinner, with women wearing cocktail dresses and men in suits. Something about that just felt right … With endless dining options from 6am to 2am and then 24-hour room service, there is something to suit any desire. Kings Court buffet attracts many guests, but the Queens Grill premiere exclusive restaurant is second to none. Being greeted by name and seated at the same table each time makes for a very personal and memorable experience.

Our sommelier even remembered our preferred wine and made suggestions to celebrate our last night and to complement a perfectly cooked and presented châteaubriand, larded peas and gratin dauphinoise potatoes. As a Queens Grill passenger we also had our own exclusive, private deck. It was not at all crowded and provided a relaxing escape from the other guests and the perfect place to read or simply watch the wake of the ship. The Pavilion Pool & Bar located on Deck 12 was a wonderful covered pool area to escape from the sun and enjoy a dip. Again, there were not many guests lounging or swimming so it was an ideal escape. Another space that we frequented was the Commodore Club located on Deck 9 at the front of the ship, with its sweeping vistas of the ocean. This relaxing area had a well-appointed bar and friendly staff who remembered our names and drinks and made for a welcome respite throughout the cruise. This was an exceptional opportunity to test out whether or not ocean travel was for us. I can say with complete confidence that we are now converts and will soon begin planning our next holiday on-board a Silversea, Seabourn or even possibly the Cunard line. But, the Queen Mary 2 has probably spoiled us – the one piece of advice we can share is that it is a fantastic investment to book a Suite and enjoy the benefits this luxury treatment offers. Even if you only do this once, it’s an experience you’ll always remember.

KEY POINTS I t’s the Grills Experience that made it for us – the ultimate in luxury accommodation, dining and service. Is there a class structure on board? – yes. Is this offensive? – I don’t believe so. There are discreet signs and little by way of questioning. It’s about mutual respect, which all guests complied with. And again, you can tailor your cruising experience depending on what you are willing to pay. The notion of dressing for dinner makes for a special experience, and it’s a lovely excuse to dress up, which added to the old-world charm of Queen Mary 2. I would recommend packing nice evening clothes and making an occasion of dinner. N either of us experienced any motion or seasickness. Will we travel the high seas again? – absolutely. It’s a wonderful experience, and one that we can now appreciate as seasoned travellers do. But in saying this, there would be only a few cruise lines that we would consider and these would be the more prestigious liners – the likes of Cunard and Silversea.

Mediterranean magic Patsy Rowe spent a day exploring the Spanish island of Menorca. OUR SHIP DROPPED ANCHOR in Menorca on yet another crisp spring day of our 21-day western Mediterranean cruise. Within minutes we were on the tender and speeding across the water towards dazzling white buildings gleaming in the morning sun. Upon docking, we were thrilled to be greeted by three horsemen, stunning in striking royal blue jackets and yellow ties. These riders, or ‘caixers’, sat motionless astride what we later found out were locally bred black horses dressed up for the occasion with multi-coloured ribbons and rosettes. Not a muscle moved until we’d all piled out of the tender and then slowly the horses began to move in formation, back and forth, side to side, circling one another in a dizzying display of dressage riding. When we broke into applause the horses lent forward in a full bow and the riders waved small flags. It was a wonderful way to start the day’s exploration of the pretty town of Ciutadella, based at the western end of the island. Mahon, the eastern port city, is 45 kilometres away linked by a first class highway. The architecture reminds us that this is one of the smaller members of the Spanish Balearic islands where both strong Spanish and Moorish influences still prevail. Cafés, restaurants and homes are draped with swathes of crimson bougainvillea trailing from window boxes and lines of washing flap above in the breeze beside

a spaghetti of tangled wires looped haphazardly from house to house. We wandered into the old town with its narrow alleyways and shady lanes between the pretty Plaça d’es Born and Plaça de ses Palmeres, with whitewashed buildings abutting elegant noble palaces and ornate churches. The town has a serene air with children playing happily on the cobblestones and grandmothers sitting in the sun poring over their embroidery and chatting with next door neighbours. The town was absolutely spotless. Even though it was barely 8.30am shop keepers were sweeping their pavements and polishing windows to better show off their wares. There was the usual display of sandals and scarves but a little exploring uncovered beautiful embroidery which is apparently a tradition passed down from mother to daughter. Ciutadella’s main square is a gracious affair, with 19th-century buildings and an obelisk at the centre which was raised to commemorate the men who died trying to ward off the Turks in 1558. It’s certainly the hub of the town and we stopped to take photos at the former town hall. This is now the police headquarters but was once the home of the Moorish governors. After passing many restaurants and smart shops we found ourselves in the Placeta del Roser where we spent the next hour watching the comings and goings in the square and drinking excellent coffee served in tiny glasses.

We then decided we should see a little of the countryside but since neither of us speak Spanish negotiating with the taxi driver was a challenge. As we climbed in I wondered if he’d understood what I wanted: a bird’s eye view … in four hours. Apparently he had, and he gave us just that. Although his ancient car chugged most of the way in third gear, Luis maintained an excitable monologue in broken English with both arms waving in the air as he swivelled to face us. It didn’t take long to realise that Menorca is divided into two distinct geographical zones. In the north there is lush undulating farmland but the southern part seemed to be rock-strewn and quite barren. But interestingly enough Luis pointed out that of the more than 500 prehistoric sites found on Menorca, nearly all of them are located in this southern part of the island, no doubt because there was abundant rock for building material during the Bronze Age. Luis had us back in town in time for a late lunch, dropping us off at a quaint tapas bar overlooking the water where tiny sail boats tacked back and forth and screeching birds soared above hoping for a feed. We ordered the house specials for the day, none of which I recognised but nevertheless enjoyed, and a carafe of what was admittedly a very rough red. A bird’s eye view it was, but it was enough to whet the appetite for a longer, more leisurely visit.

Which city/country is your most travelled to destination? China to visit my mother and six brothers … but I don’t get to go often enough. Is there a particular place on your travel ‘bucket list’? I’d love to visit Prague with my wife and three children. If you could travel in luxury to anywhere in the world, where would you go? Tuscany, to taste the delicious food and wine, and savour the wonderful Italian and European culture. What is your most essential travel item? My iPhone, I’d be lost without it. Do you have any tips for avoiding jetlag? Get onto the time of your destination asap, sleep on the plane and drink plenty of water. Window or aisle seat? Window. Who would you most like to sit next to on a long flight? Bill Gates. I would talk to him about his business success, philanthropic endeavours and ask for his support for Queensland Ballet. How do you pass the time while in transit? Reading and writing.

What has been your best/favourite overseas purchase? Stylish and inexpensive shoes in China.

What is your favourite iconic landmark? The Great Wall of China. It’s majestic and full of intriguing stories.

What is your best/strangest travel story? While I was on a speaking tour in South Africa, we were invited to fly on a friend’s private jet. To my horror, we saw our 8-year-old daughter sitting on our friend’s lap steering the plane. Luckily we arrived in one piece.

What is the best thing about travelling? Learning about different people and their cultures.

What do you recommend as a ‘must-see’ destination? Barcelona and its wonderful Gaudi architecture. Do you have a favourite hotel? The iconic Shangri-La Hotel in Hong Kong. I like the spectacular view, tasteful décor, nice food offerings and marvellous service.

What do you always do before you go? Check if I have my passport, credit card and iPhone. Car, coach, plane or ship? Plane. Where to next? London. Queensland Ballet will be performing there for the first time in 55 years.

What is the most interesting/exotic dish you have tasted? The starfish, both curious and unique. What has been your best overseas dining experience? I took my wife Mary back to visit my family in China one year. A childhood school friend invited us to a small island off Qingdao. We feasted on nothing but live seafood that whole weekend. I was in heaven, but poor Mary, she didn’t like seafood at all. The good thing is that we’re still happily married and she enjoys seafood now.

WHEN LAZ AND MELISSA decided to honeymoon in Australia, little did they realise they would still be enjoying Queensland’s tropical lifestyle 35 years later. The adventurous newlyweds set out from Melbourne to explore the entire east coast of Australia and by the time they reached Palm Cove, in far north Queensland, they’d been smitten with our appealing Aussie way of life. Open garden Developing an awe-inspiring garden has been a labour of love for one Tamborine Mountain couple.

MOST PEOPLE who visit the area know that Tamborine Mountain, west of the Gold Coast, is a gardener’s paradise. As one local wag tells it, ‘leave your spade in the ground overnight and it will sprout shoots’. Wendy and Iain Tait moved to the Mountain about eight years ago but the attraction was not so much the gardens as the environment. That would change dramatically just a few years later. Wendy says the region reminded her of the Dandenongs in Victoria where she grew up. “We visited the Gold Coast for holidays and would often come up to the Mountain for lunch. I fell in love with the area then,” she explains. “It is cooler than the coast and usually less humid.” Iain’s career involved constantly moving home – Victoria, Western Australia, New South Wales to Christmas Island and then to Brisbane – so there was no time to become attached to a garden.

Even when they lived in Brisbane, Iain paved much of the front yard; a pool dominated the back. Newly retired, the couple decided to settle on Tamborine. They bought a property that includes a substantial home on gently sloping land, a comfortable front garden with wide lawns and a border of trees and shrubs. But the back garden daunted them; a large expanse with towering trees and beds of roses and other exotic plantings and shrubs in a formal structure. Iain negotiated a ride-on lawn mower as part of the purchase and, along with general maintenance, mowing the wide lawns was about the extent of their gardening for four years. Instead, they concentrated on renovating the house. Today, it is a very different story. In late September, they will throw their garden open to the public for Tamborine Mountain’s

annual Springtime on the Mountain festival, one of seven spotlight home gardens to feature over the three-day weekend. So what changed? With renovations of the house substantially completed, Wendy and Iain decided on something radical. They would install a three-metre high fountain in the front garden. Iain was in his element. “I like structures,” he says. “I don’t really understand plants, but structures fascinate me.” With the new fountain assembled and plumbed in, the couple realised they had made a substantial change to the way this garden looked and the entire area needed resculpting. “There was a tree and a large camellia that had been carefully pruned into tight blobs,” says Wendy. “I decided the camellia had to go and the tree had to be freed from its constraints.”

So Iain backed up the family vehicle, tied a rope around the base of the camellia and drove off. One camellia out of the way and the couple were committed to gardening. They began by widening and reshaping the front garden beds. Then, emboldened, they tackled the large back garden. Today clivias sparkle their bright orange flowers in the shade of thick trees, a large bed of roses dominates the top of the back garden – Wendy says these have been moved for the third and probably final time – and elsewhere exotic and native plants and shrubs flower happily together. Garden beds flow across the property. Wendy and Iain were pleasantly surprised when the Tamborine Mountain Garden Club approached them to become involved in the festival. >>

“We are bemused that people would want to look over our work,” says Wendy. “But our friends have enjoyed it and we are a bit proud of our achievements. Thankfully we took photographs as we progressed so we can go back and look where we started. It has been a great journey.” Iain continues to deny he is a gardener at all. “I am a garden labourer,” he says. “Wendy has all the ideas about what to plant and where they should go. She decides on garden bed structure and I just build it.” As if proof of the statement, during our visit Iain discovered five potted plants sitting in a garden bed around the fountain. “They weren’t there this morning!” he exclaims. “I was working on this bed just a few hours ago.” Wendy admits she went to the local nursery during the morning to buy ‘three plants’. She came back with a car full of plants and shrubs.

She carefully places them, in their pots, where she wants them to go and Iain discovers them and plants them. One of Wendy’s most pleasing achievements is planting natives to attract birds. “A friend from Switzerland visited a while back,” she says. “He is something of a bird-watcher and spent some time simply sitting at a table above our back garden. In one hour he says he identified more than 20 different species of birds.” The Taits are bracing for many long hours in their garden as they prepare for the Springtime on the Mountain festival. The local Tamborine Mountain Garden Club has offered volunteers to help in the last few frantic weeks as all seven gardens are trimmed, raked, planted, watered and cleaned up in readiness for the thousands of visitors who make the trip to follow the Open Gardens Trail.

MOUNTAIN MAGIC pringtime on the Mountain runs from Friday, S September 25 to Sunday, September 27. T his spectacular annual display features seven diverse open private gardens as well as plant stalls, art displays and live music at the Tamborine Mountain Showgrounds. Private gardens are open from 9am to 4pm each day. Entry for the entire weekend is just $20. Funds raised are used to improve and maintain the 11 hectares of the Tamborine Mountain Botanic Gardens for which the Tamborine Mountain Garden Club is responsible.

ALICE AND GREGOR TAIT are former international swimmers, representing Australia and Great Britain respectively for over ten years. Although their journey to the top was littered with ups and downs, success and failure, they both achieved championship titles at Commonwealth, World and Olympic Level. Hailed a national hero after his success at the 2006 Commonwealth Games, Gregor was subsequently named Scotland’s Athlete of the Year. Alice’s lead-off leg for Australia in the 4 x 100m Freestyle Relay at the Athens Olympic Games earned her an Olympic Gold Medal, a World Record and the honor of an Order of Australia Medal (OAM). Gregor now works as a Personal Trainer and operates his own training and nutrition business, while Alice is a Registered Nurse specialised in operating theatre procedures. Their hard work in the pool instilled a drive to succeed out of it, and their joint experiences continue to inspire and motivate this golden couple. Ok, let’s get this one out of the way, do you ever sleep with your shiny gold medals? Alice: Goodness no! Even the night we won the relay in Athens, Jodie Henry and I had to go straight to drug testing, so we gave our medals to our coach to hold. We didn’t even get a proper look at them until the next morning. Gregor: Haha ... no. Being gold plated it gets pretty cold and who wants anything cold in bed with them! But in all seriousness you don’t get long to relax when competing and you are usually up the next morning for another swim. How long did it take for your gold medal win to sink in? Alice: In some ways I think it is still sinking in. As a professional athlete, success is what you work for and dream of. So, in achieving the ultimate success, it was easy to see it as a ‘normal’ and expected moment. However, with reflection, feeling the weight of the medal around your neck is a very realistic measure of your success, and it was this weight that triggered the realisation that I’d achieved all of my dreams. It took until I retired from the sport in 2012 to really recognise the enormity of winning an Olympic Gold Medal and I appreciate my success more now than I ever did during my competitive career.

Gregor: I never appreciated my achievements until I had retired. When you are involved in sport you are always around other athletes who have either achieved the same or better so you never realise how good you have been till you have walked away. If you could have been a champion at another sport what would that be? Alice: Tennis. I love watching it, but am unfortunately way too uncoordinated to play it. Or surfing, that has to be the most fun sport around (and scary too!). Gregor: I always had a love of football (soccer) and was told I had a football brain. I wish I had been good at it as there is a ridiculous amount of money in it haha. How do you keep in shape now? Alice: I’m currently eight months pregnant, so fitness at this stage of my life is very different from what I understand fitness to be. I walk the dogs 5km every day, and swim 1.5km every second day or so. Prior to pregnancy I liked to run. Gregor: I have been pretty active since stopping swimming in 2008. Being a qualified Personal Trainer I need to keep a certain level of fitness, which has helped me not get fat. I have been

doing crossfit for a year now and really enjoy the different challenges every day. I am also training for a half ironman in September. Is it hard to remain motivated now that you aren’t competing? Alice: I find motivation in different areas. I am not motivated to jump in the pool on these cold mornings and push through a 6km session, but I am motivated to further my professional nursing career through working hard and completing further study. Motivation has never been difficult for me to achieve. Gregor: My main motivation since retiring is to ‘not get fat’ so that has kept me going. I don’t want to be seen as an ex-swimmer who let himself go. How has being a professional sportsperson helped you in your current career? Alice: Being a professional athlete teaches you a number of life skills like time management, commitment, motivation and how to communicate effectively. As a nurse, I am often very busy and physically and emotionally exhausted, but I will always stay as long as necessary to ensure the patient receives more than adequate care and my colleagues aren’t left with excess work for their shift.


Gregor: I think being a sportperson has really helped me in ‘the real world’. There is a certain drive that only athletes have and I feel that pushes me to achieve more and prove I can be a success in the business world or any other field. What is your favourite sporting moment? Alice: I have two … winning my Olympic Gold Medal is an obvious personal choice, but my second is watching the Men’s 4 x 100m Freestyle relay team win the Olympic Gold Medal at the Sydney 2000 games. Little did I realise it would only be four short years later that it would be my turn! Gregor: Mine will always be Melbourne 2006 Commonwealth Games. We only get the chance to represent Scotland once every four years (we compete as Great Britain at the Olympics) so it was taken with both hands. I managed to walk away with two Gold and two Bronze medals and became the ‘most successful Scottish athlete at a single Commonwealth Games’. Was it a difficult transition to mainstream life after you retired from competition? Alice: Not for me. I achieved almost everything I could have dreamed of and had a career to go into after sport, so the transition was less shocking for me. I know a lot of people struggle with the huge alteration retirement brings to their life and lifestyle, but I was really ready for it. Gregor: I guess my transition has been rough and smooth at the same time. I finished swimming and had no qualifications outside of finishing school. But I found my way very quickly when I enrolled in Cert III & IV in Fitness. This helped me hugely and I found success very quickly. Since then I have lost my way a little and found myself searching for the ultimate career. I have become a very good volunteer to get the necessary experience that will enhance my career options. What is the most important skill that you developed from being in competitive sport? Alice: Commitment. Not every day of your life is exciting, some days are just about getting up, getting the work done, and getting home. But committing your life to something brings great fulfilment and I love that no matter what road my life takes now or in the future, I know I will commit to that journey 100 per cent. Gregor: Also commitment. No one ever wants to get up at 4am to go training or put his or her body through the pain of a huge weights session but you commit yourself to your coach, teammates and the ultimate goal of success at a major meet. >>

Who is the most interesting character you have met in your sporting circles? Alice: Just after Athens (2004) I met Steven Bradbury and I loved hearing about his ‘overnight success’ – which wasn’t overnight at all. For his whole life he worked for his Olympic moment, it’s almost offensive to call him an overnight success. Every athlete has an interesting story behind him or her; you just have to take the time to talk. Gregor: After Melbourne (2006) we had a parade in Glasgow to welcome us home. I led the team off the plane and was met by Jack McConnell, our First Minister. He congratulated me and said I was a ‘national hero’ at which point I laughed at him (first time anyone had done that I think), I also found out he put his back out watching me win. Since then we have often chatted and when I went back to Glasgow for 2014 Commonwealth Games he sent me a Facebook message asking if I wanted to catch up for a beer. What is your most treasured possession and why? Alice: My engagement and wedding rings from Gregor because of what they symbolise for us together. My Olympic medals of course rank quite highly too. Gregor: Mine is more a title at the moment. I still hold the title of the most successful Scottish athlete at a single Commonwealth Games and it has survived two more games since.

Have you ever been star struck? Alice: I saw Roger Federer in the dining hall at the Beijing Olympic Games and was too nervous to ask for a photograph. My best friend did though, and I’ve always kicked myself for not being brave in that moment. Gregor: It is always great to see top athletes walking around the Olympic village. I once saw Roger Federer and Andy Roddick having McDonalds together in the village, which I thought was surreal. What is currently stuck in your head? Alice: Parenthood! I wish it came with an instruction manual. Having just started maternity leave, I currently lie awake in the early hours of the morning thinking of things to clean and items I still need to get for the baby. Gregor: I always have random songs in my head. I love music and pick up lyrics pretty quickly so find myself singing or whistling along. Do you have a favourite holiday destination? Alice: We just got back from Hamilton Island, which was a perfect getaway – warm and close. But in all of my years of travelling, I’ve never got to New York, that definitely tops the list. I always love Barcelona too. Gregor: Hawaii is a bucket list holiday for me. Years of watching Hawaii Five-0 have made me desperate to get there and see what all the fuss is about.

If you were stuck on a luxury island for a week who would you love to run into poolside? Alice: Three girls who made my swimming life fun ... Sarah Ryan, Jennifer Riley and Giaan Rooney. We never see each other, so to run into them would be like stepping back in time. Gregor: I am always intrigued by self-made businessmen so the likes of Mark Zuckerberg, Richard Branson or Steve Jobs (before he died) would be interesting. What makes the Gold Coast so special? Alice: Everything. The weather, the beaches, the people and the food. Gregor: Weather. Growing up in Scotland I will never complain about the weather on the coast as it will always be 100 per cent better than back home. Plus I love how relaxed everyone is and it makes living so much easier. What is the one thing you cannot live without besides one another? Alice: My family – the Mills/Tait clan is a big one, and I couldn’t image not having them around. Gregor: I love coming home to the dogs. Even when you have been away for 12 hours they are still so happy to see you. What is on your near future bucket list? Alice: To be a good mother. Gregor: To complete the 70.3 Ironman on the Sunshine Coast in September.

HAVE YOU EVER IMAGINED how it would feel to be locked and shackled, then chained inside an airtight trap, with only 30 seconds to escape before the burning blades come down and cut the supporting ropes? Master illusionist Matt Hollywood doesn’t need to imagine this death defying act … he closes the show with it at every performance. “That trick is dangerous because you are living on the edge every single time,” Matt explains. “As a magician you have to keep lifting your game, it has to get bigger and better and scarier.” While Matt is continually refining his craft and introducing new illusions, there is one special trick that will always remain. “My great grandfather was a well known magician back in the 1910s and 20s,” Matt explains. “When I was about ten he showed me one of my first magic tricks ever – a levitating table – and he made me promise that if I ever got on stage, I would put it in the show. “I’m a big believer in keeping my word so I still include it in every performance.”

With his career now spanning over two decades, Matt has performed for kings and queens, entertained presidents and prime ministers and shared the spotlight with a galaxy of stars … but he readily admits that it is his two ‘gorgeous princesses’ that really bring the magic into his world. “I’ve been very fortunate … I’ve travelled the globe, met some incredible people and made a lot of money performing my magic, but, ultimately, that success cost me my marriage,” Matt admits. “I’ve now realised how valuable family is and I’m determined to spend as much time as possible with my girls, Grace, who is nine, and six-yearold Eva.” Which is why the Australian Entertainer of the Year established a permanent base in The Village Theatre Sanctuary Cove two years ago, becoming the only full time magic show in the country. “Before that I was performing around 300 shows and catching up to 400 flights a year, sometimes eight a day, travelling between corporate functions, television appearances, gala dinners, etc,” Matt explains.

“Now it is such a privilege to be a part of the Sanctuary Cove community and be able to perform here every Friday and Saturday night. “Each show is so different because the audience changes every night. And the illusions vary every few months, so people come back again and again, often flying in from interstate to see the new tricks. “People really love to see the big grand illusions that we do, the ones where they just go ‘wow, how did he do that?’ … but the show is also very family-friendly,” Matt says. “Often the kids become the stars of the show, we make them appear and disappear and they are laughing throughout the whole performance.” So what is about magic that enthralls both Matt and his audiences? “As a magician, the sky is the limit, you only have to think of something … dream of something … and then you make it happen,” Matt insists. “What a lot of people don’t realise is that if you put some magic in your life and do things a bit differently, you can make the impossible happen … you have the ability to achieve anything.”
