CINDY CRAWFORD never bought into the hype that came with being one of the original ‘supermodels’ who dominated the fashion world in the eighties and nineties. She never overindulged in the partying and frenetic lifestyle of that era or tried to grab headlines with bad behaviour. Growing up in a Midwestern farming town 30 miles from Chicago, she arrived in New York as an aspiring teenage model armed with her looks, ambition and good business sense and was the first top model to turn herself into the kind of brand that is now the ultimate goal of every aspiring supermodel. She was also the definition of the healthy, bodacious, all-American girl who could pose nude for Playboy and still retain that good girl image. Apart from her failed marriage to Richard Gere,
“This book is my way of reflecting on the experiences that have informed my thinking and sharing some of the wisdom and life lessons I’ve learned along the way,” she says. “It’s not an autobiography or tell-all book – I wouldn’t have many dark secrets to reveal, anyway – it’s really about my personal journey and becoming my adult self.” Cindy, who turns 50 in February, offers plenty of insight and anecdotes in the magnificent volume published by Rizzoli, including several of the iconic photos that were part of her trademark natural beauty. Along the way, she learned important life lessons that she is now sharing in her new book – Becoming – that serves as a highly spirited life manual that is part autobiography, part coffee-table book. It offers an inside account of the events that marked her rise as a global cultural icon fabled for her cosmetics and clothing campaigns as well as countless magazine covers and photo spreads not to mention her Pepsi ads. She hosted MTV’s House of Style, built a personal business empire, and devoted herself to raising her son, Presley, 16, and daughter Kaia, 14, both aspiring models.
she became a highly successful businesswoman with multiple pursuits including fitness videos, swimsuit calendars and beauty lines. In person, Crawford is still fabulously beautiful – she remains a size 2 (US) – and looks at least ten years younger. Interestingly, when asked about her marriage to Gerber, Cindy confessed that she thought he was almost too good to be real at the beginning: “In my younger years, I was attracted to the more intense kind of relationships that are very draining. When I was first with Rande, I thought he was so solid, but then I wondered, ‘Wait, where’s all the drama? Maybe this isn’t good. Maybe this isn’t real!’ ... But a husband is the guy who is solid, and you know you want to have children with him and you know he’s going to be there.”
Was learning to embrace your mole part of what helped you advance your career? I was very self-conscious about my mole while I was growing up. And as a girl I wanted to remove it because I was embarrassed by it and I was constantly getting teased about it. Of course, that was the thing that set me apart and later what gave me my distinctive look as a model. It’s what people still associated with me the most. But when it came to getting that recognition as a model it was only thanks to some great photographers like Herb Ritts and others who took so many iconic photos and presented me in a very extraordinary way. That’s when I started to feel beautiful. >>

iconically beautiful women. How did you see yourself when you were starting out as a model? The truth is that I have never seen myself as beautiful. At the beginning of my career I felt very uncomfortable and no one in the business went out of their way to say nice things to me. I had such a bad self-image that it took over a decade to really feel good about myself and self-confident enough to the point where I could smile on command in front of the camera. Still, when I look into the mirror I see a face full of imperfections – I never see myself as having perfect features, not at all.

How do you account for your evolution as one of the original group of supermodels? I was lucky to arrive at a time when the fashion world was looking for a new image of women and a different look from the typical image of blonde and blue-eyed models. Christy (Turlington), Naomi (Campbell), Linda (Evangelista) and me all looked very different and we each had a distinctive look that represented different ways of defining or representing beauty.
You took a chance moving to New York while you were still studying in university. What was that time like? One of the things that made my decision easier was when you’re sitting in a college class and your professors don’t take you seriously. They don’t think you’re smart enough to be taking chemistry or other science classes because they’re making snap judgements about your intelligence based on your appearance. Our culture still judges people on appearances and women are especially subject to that. Even my own daughter Kaia is worrying about her looks and her eyebrows and other things. It’s hard for girls. When I left college to pursue modelling, I saw right away that people assumed I was stupid and that was always a hard thing to handle. It makes you very self-conscious but eventually I was able to overcome that and put those negative assumptions and attitudes in better perspective – that it was really saying more about the people making those judgements than it was about me.
Was it a culture shock arriving in New York? I was very naive at the beginning. Coming from the mid-west, New York was a whole other world. It was much more sophisticated than I was prepared for and it took me a long time before I really felt comfortable being in the company of famous or very accomplished people.

Why did you write Becoming and what do you hope people will learn? I wanted to collect some life stories from my past and explore some key moments that might be helpful to the next generation and help inspire young people to pursue their dreams. I’m a great believer in fairy tales and making your dreams become reality. Half the battle in life is just believing in yourself and not giving up even when things don’t work out at the beginning. You never know which moment or event is going to help you succeed but if you work hard and have faith in yourself the chances are that good things are going to happen to you. >>

What was your look, if you had to define it? My look was more accessible and relatable. In terms of labels, I was what you would call the sexy, all-American girl who lived next door. I had a more athletic body type which gave me an edge and photographers and magazines were looking for that. It was perfect timing. I also knew that I needed to take advantage of my visibility and I worked on some very good (ad) campaigns that just took everything to the next level.

What’s the most important lesson you can offer women when it comes to looking good and being fit? Nothing is better than working out on a regular basis. I still work out three times a week and I eat a very healthy diet. I can’t eat the way I used to and even in my twenties I saw that I had to change my eating habits. I rarely drink wine anymore because it makes my face puffy. Apart from your fashion shoots, what were some of the other keys to your success? The Pepsi commercial was very big. It gained massive recognition with a male audience that was very different from the kind of attention you get from fashion magazines which are targeted towards women.

Jane Fonda’s exercise videos were the thing that inspired me. She started it all but I wanted to move away from aerobics and develop a more intensive, grittier workout like what I was doing on an almost daily basis with my trainer Radu. I wanted to come up with an exercise video for people of my generation who were looking to tone and strengthen their bodies.

What do you teach your daughter about image and how a young woman should deal with the pressures that come with that? The most important thing is to have a healthy self-image and healthy relationship with your own body. I try to teach that to my daughter Kaia and not have her worrying about her looks. I want her to eat properly and not feel self-conscious and thinking about diet and her weight. As women, we need to understand that we are all different and unique. LIKE THE GOLD COAST ITSELF, Pacific Fair Shopping Centre is constantly in an exciting state of evolution. Beginning as a smallish retail centre in the 1970s, Pacific Fair not only enlivened the Broadbeach precinct but has become a favourite destination for successive generations of Gold Coast residents and holidaymakers. It’s hard to believe the iconic centre’s multimillion dollar locale was once humble – albeit superbly sited – swampland, but that’s what it was. Even the now-neighbouring Jupiters Hotel and Casino, the Gold Coast’s first international hotel, was a few years away when the first incarnation of Pacific Fair Shopping Centre opened its doors back in 1977. With two large anchor tenants and 96 specialty stores, the centre could provide

anything its permanent and visiting population desired. However, the Gold Coast’s burgeoning reputation as a favourite holiday spot, in concert with its increasing popularity as a permanent base, saw it rapidly evolve from a laid-back resort destination to a vibrant regional hub and, as the demographics changed, so did their lifestyle and shopping requirements. After only five years, the Pacific Fair shopping experience and its convenient location saw the centre’s popularity surge to the point where expansion was necessary, so retail giant Myer plus a further 32 specialty shops and a bridge from the Gold Coast Highway were added. If you build it, they will come. And come they did – in increasing numbers that made further expansion essential. >>

Eventually Pacific Fair became a destination in its own right with the addition of a wider range of service outlets, more eateries, a children’s play area and an entertainment precinct that boasted a 12-screen cinema complex which, of course, drew still more visitors to the centre that is now synonymous with the Gold Coast. And by night its iconic facade struck a bold image against the moat-like Little Tallebudgera Creek that became a firm favourite with photographers – amateurs and professionals alike. With connectivity to Pacific Fair further enhanced by the newly-constructed G:link light rail system, the centre is more popular than ever before as the latest phase of redevelopment nears completion.

Commenced in 2014, this mammoth upgrade will add around 50,000 square metres of retail space to the centre, bringing the total to about 155,000 square metres and making Pacific Fair the largest shopping centre in Queensland, the fourth-largest in the whole country and the perfect locale for luxury brands. The redesigned Pacific Fair will herald a bold new experience in high-end shopping by providing an eclectic mix of the most prestigious international labels and new-generation brands. And the unprecedented choice in fashion, giftware and homewares will be perfectly complemented by the Fresh Food Market, which showcases the region’s bounty through the very best in fresh produce.
The relaxed outdoor lifestyle the Gold Coast is so famous for has also been incorporated into the new design with the inclusion of an outdoor leisure and entertainment precinct, an extensive day-night dining area and the abundant use of timber and natural light, luxuriant landscaping and cool, calming water throughout the centre. Due for completion in mid-2016, this exciting redevelopment will carry Pacific Fair through to its next incarnation, whatever that may be. But again as with the Gold Coast itself, whatever it is will be bold, innovative and unique – three qualities that have always been, and remain, synonymous with the wonderful Pacific Fair shopping experience.
PACIFIC FAIR TIMELINE 976 - Construction begins on reclaimed swampland in 1 central Broadbeach. 1977 - Pacific Fair Shopping Centre opens on 23 August, with tenants including McDonnell & East, K Mart, Coles and 96 specialty stores. 1982 - Centre is extended to include an additional 32 specialty stores, a Myer department store and a larger, relocated Coles supermarket. 1989 - A bridge is built across Little Tallebudgera Creek to link Pacific Fair and the Gold Coast Highway. 1994 - Target and Toys R Us begin trading in the former McDonnell & East site. 1997 - An entertainment precinct is established in the centre with the opening of 12 cinemas. 1998 - Renowned international retailer Daimaru begins trading at Pacific Fair in a 14,000 square metre store. 2002 - An injection of homeware and leisure retailing begins with the opening of 22 new speciality stores. 2007 - Application is lodged to expand the centre by 40,000 square metres to accommodate new trading majors and a multi-level car park. 2014 - Extensive redevelopment and redesign works – adding around 50,000 square metres of retail space to the centre – commence. 2016 - Redevelopment works completed, making Pacific Fair the largest shopping centre in Queensland and the fourth-largest in Australia.

As expected, Max Mara’s spring/summer 2016 (SS16) collection – A Sea Tale – delivers high quality contemporary fashion pieces, this time with particular attention to nautical detail. Taking inspiration from the illustrations of Jean Cocteau, and the almost folkloric tales of Sinbad the Sailor and Jonah and the Whale, the collection uses signs, symbols, sailing knots, stripes, and primary colour to evoke maritime nostalgia. Chunky drawstrings on light fabrics, knotted cord ties, starry knits and billowing silhouettes conjure a briny romance. On the runway, prints are mixed boldly; stripes meet stars, and knot printed double-faced pea coats are styled with swallow print ‘J’ bags. Colours clash freely, and block print tees are worn with metallic skirts. Sleeves are long and casually pulled over the hand, reminiscent of breezy coastal bonfires. Canvas matelot pants, rows of shiny buttons, bias cut ankle length skirts, and soft structured blazers marry just enough naval discipline with flowey femininity to make this collection the ultimate in cruise chic. The look is dynamic and unpredictable. Coats are buttoned asymmetrically, and all ensembles are finished with closed flatforms for sure sea-legs.
This is a cruise collection in which the pieces speak of ships and seafarers, love and longing, hazards and hope. A division of the Max Mara group, MAX&Co. dresses the professional woman whose wardrobe must exist outside of the traditional concept of the season. Kiyomi’s kingfish Kiyomi at Jupiters Gold Coast is renowned for its cutting-edge Japanese cuisine including this delicious kingfish recipe. THIS DISH is perfect if you are entertaining, as you can prepare everything (apart from the fish) the day before, and assemble when ready to eat. The recipe incorporates two dressings that can be used on their own.
The ceviche dressing can be used by itself in a prawn or seafood salad, while the den miso partners well with baked eggplant. You will have some left from this recipe, so experiment.
Hiramasa Kingfish, Miso Ceviche & Crispy Potato - Serves 6 CEVICHE DRESSING Ingredients 70ml grapeseed oil 26ml gluten free soy sauce 45ml yuzu juice 5g black pepper Method 1. Put all ingredients, apart from oil, in a blender. 2. Turn on to high speed and slowly add the oil to emulsify. Set aside. DEN MISO Ingredients 900g white miso 500g caster sugar 200ml sake 200ml mirin Method 1. In a pot over a high heat, flame the sake and mirin to burn off the alcohol. 2. Once you can no longer taste the alcohol, take off heat and whisk in the sugar until dissolved. 3. Place the miso in a metal bowl and slowly incorporate the liquid. 4. Place the bowl over a pot of simmering water and cook out until the consistency is similar to warm caramel, making sure you stir occasionally to stop burning. 5. Set aside to cool. MISO CEVICHE DRESSING Ingredients 50g den miso ½ teaspoon rice vinegar ½ teaspoon fresh lemon juice 1 teaspoon ceviche dressing Method 1. Mix all ingredients together. 2. Set aside.

CRISPY POTATO Ingredients 3 potatoes Salt to season Method 1. Thinly slice 3 potatoes on a mandolin and cut into julienne (super fine strips). 2. Wash under running cold water until water runs clean. 3. Strain and dry with paper towel. 4. Heat oil to 145 degrees Celsius. 5. F ry the potato in small batches until crispy. 6. Remove from oil, set aside on paper towel and season with table salt. KINGFISH Ingredients 1 green chili ½ red onion 600g kingfish 1 lime Method 1. Thinly slice 1 green chili into ‘o’ shapes. 2. Wash under running cold water for 5 minutes to remove some of the heat from the chili. 3. Strain and dry. Set aside. 4. T hinly slice half a red onion. Wash under running cold water for 5 minutes to remove the strong raw onion flavour. 5. Strain and dry. Set aside. 6. Fillet and skin the kingfish. 7. Cut down the centre, removing the blood line. 8. Thinly slice into sashimi pieces, about 4cm x 2cm x 2mm allowing 100g per person. Set aside. 9. Grate lime zest using a microplane or fine grater.
TO ASSEMBLE 1. Place your perfectly sliced kingfish in a bowl and season with a small pinch of sea salt crystals, freshly cracked pepper and 2mls of freshly squeezed lemon juice. 2. Add the desired amount of chilies and red onion. 3. Add the miso ceviche dressing. You only want to slightly coat the ingredients. If you add too much, it will overpower the subtle taste of the kingfish. 4. Mix carefully, not being too rough with the fish, and arrange in a little pyramid on your plate. 5. Top with some crispy potato and finish with freshly grated lime zest.

Aussie Mike From simple pickles to complex ‘low and slow’ flavours, Mike Hilburger is a true Aussie Barbecue Hero.

MIKE HILBURGER makes up half (along with Ralph Barnett) of the Shank Brothers, the winning team of Channel Seven’s reality TV show, Aussie Barbecue Heroes. I know Mikey, he’s one of the most affable chaps you are ever likely to meet, always with a grin on his face, good humour stuck to him like a shadow … massive beard. As well as cooking barbecue and working a day job as a photographer, he makes five different pickles under the Picklehead label. They are awesome – briny, fresh and alive with flavour. A fascination with pickles and barbecue reeks of Americana, so it’s no great surprise that it was a visit to the USA that catalysed the affair. “Back in 2012, I did a trip to the States, I was eating a different type of pickle every day, but in the back of my head, I knew I would return home to the same couple of measly brands,” Mikey explains. “I remembered that my Czech mum used to make pickles, so I hit her up for some recipes, tried a couple, tweaked them, hit on a recipe that tickled my taste buds, and away we went. “It was originally just for me, but word soon spread … I guess the barbecue goes hand in hand with pickles, and it was my good mate and fellow Shank Brother, Ralphie, who really introduced me to the whole low and slow world. I can’t believe that was just 18 months ago, it’s been such a journey.”

Mikey trundles along, early, to the Brisbane Markets every fortnight for ingredients, and gets straight into the job of pickling, so whenever you come across a jar of Picklehead, you can be fairly sure it’s within a couple of weeks of production. And that, I reckon, makes a difference. There’s a distinct ‘Picklehead’ character to them that I haven’t seen in other pickles, a sort of complex mélange in which the individual components have melded, but still shine. “I went out to try and capture the flavours of my childhood, flavours of immigrant Europeans,” he says. “You couldn’t buy pickles in Australia in the 70s, you had to make them. I had that taste embedded in me, and I managed to come pretty close to it. It’s such a personal thing, and I am always amazed that other people seem to love that flavour profile as much as I do.” If you feel inspired to have a crack at home here’s a very simple – but distinctly Picklehead – recipe: “I like to make an easy Asian style pickle that’s great with barbecue. Finely julienne equal quantities of carrot, daikon, celery, cucumber and wombok. Add some chilli, garlic and ginger to taste. Mix up a brine to the ratio of 1 tbsp salt, 3 tbsp caster sugar, 200ml rice wine vinegar and 100ml water. Refrigerate overnight, and they’re good to go.”
If that sounds easy (which it does) I guess pickles are a simpler business than the rather more serious and obsession-forming art of barbecue. Not the Aussie version of barbecue that involves sausages on the Weber, or even the amazing, primal stuff that Argentine chef Francis Mallmann does with burning wood and whole animals, but the far more intricate and time-consuming stuff that is something of a cult sport in the southern states of the USA. Fire pits, fatty cuts of meats, rubs, marinades, time and, of course, imagination, as Mikey explains. “Time, passion and quality. I’m a low and slow nut, so ten hour cooks are the norm. We lavish love and attention on that piece of meat; we want to make it the best we possibly can,” he says. “Quality in equals quality out, we love working with free-range produce, we truly believe a happy animal is a tasty animal. I guess what we do is traditional Texas style barbecue, but we aren’t slavishly following US flavours, we love to inject Asian and European flavours into our ‘cue’.” The TV show didn’t make life easy for the contestants; it used all the forms of barbecue from flat-plate grilling to slow ovens. The final – the episode that gave the Shank Brothers the title – had them cooking ‘low and slow’ ribs, seafood and dessert. Dessert … really?

The boys served up Dark ‘n’ Stormy pork ribs with spiced rum and ginger glaze; smoked virgin Mary soup with flame-grilled bugs and poached pears for dessert. “We really tried to ‘push the boat out’ with all our dishes, but for me, it was the grand final where we finally got to let our low and slow skills shine with some killer pork ribs, and an amazing poached pear dessert, all crafted on the barbie.” Obviously the dishes were good enough to get the lads over the line. ‘Low and slow’ cooking runs against the tide of busy families and the fast-prep meal, but there’s something incredibly fulfilling about selecting a suitable piece of meat (Mike reckons brisket is the holy grail; difficult but rewarding), planning and preparing the marinade or rub, then spending a full day letting everything coalesce under slow, low heat. It’s not simply fulfilling … it’s primal, and as far removed from fast-food chains and TV dinners as a symphony is from rap.

THERE ARE MANY waterfront restaurants on the Gold Coast but very few offer the delicious flavours, stunning location and level of service that you will find at Vie Bar + Restaurant. Tucked away in a secluded corner of Palazzo Versace, Vie overlooks a private marina and offers diners front row seats to the Broadwater. I was recently invited to sample Vie’s new summer menu over a relaxed ‘working’ lunch. I’m not a gastronome by any stretch of the imagination but I do get serious food envy when the person next to me is served a dish that looks better than mine. Luckily, this wasn’t a problem as we were treated to a tasting menu featuring many of the restaurant’s signature dishes.

New Chef De Cuisine David Pommier has crafted a delicious selection based around modern Australian flavours with a hint of French flair. While everything we tried was cooked to perfection, my dish of the day would have to be the oven-baked ‘Glacier 51’ toothfish fillet with roasted globe artichokes, whole clams and Dugléré sauce, closely followed by the crumbed bug tails with macerated green paw paw salad and spiced mango sauce. Dessert was always going to be special but the Vie cappuccino plate – a chocolate cup filled with white chocolate and coffee extract mousse and vanilla bean crème anglaise– was exceptional. As was the vanilla bean pana cotta with cannoli pastry shards and warm mixed berry compote.
Another treat on offer over summer is Moet on Ice. While I initially declined to try this (I’m one of those rare people who don’t enjoy champagne), the bubbling concoction of chilled Moet ser ved with lychees, strawberries and mint served over ice proved too tempting. Both refreshing and decadent, this is the perfect drink to enjoy on the deck overlooking the Broadwater as you soak up the ambience of this popular Gold Coast venue. With a new summer lunch menu being launched each fortnight to keep things fresh, guests can enjoy 2 courses for $55 or 3 courses for $65. Family favourites Saint Clair Family Estate is one of New Zealand’s leading wine companies.

AT THE TOP of New Zealand’s South Island sits Marlborough – dissected by rivers, bordered by mountain ranges and the Pacific Ocean and covered, literally, by vineyards. Like most of New Zealand, it is singularly beautiful. And, particularly for wine drinkers, it is also bountiful; its vast patchwork of vines account for three quarters of the country’s total annual crush. Its loudest vinous voice belongs to sauvignon blanc. But there is much more to the region’s wines than that single, popular white variety, and even among sauvignon blancs there is a distinct qualitative hierarchy. Saint Clair Family Estate (Saint Clair) sits emphatically at the top rung of the ladder with just a handful of peers. The estate is owned by Neal and Judy Ibbotson, viticulture pioneers in Marlborough since 1978. Neal’s extensive expertise is complemented by the talent of one

of New Zealand’s leading winemaking teams led by Matt Thomson and Hamish Clark. There is a bewildering array of wines under the Saint Clair banner, but for me it is the Pioneer Block series that holds the most allure. It’s a label reserved for parcels of vineyard with strong, individual expression. The current release includes, in sauvignon blanc alone, eleven Pioneer Block wines of which I’ve tasted just a handful. There’s a sibling similarity in terms of richness and depth – almost alien traits in the general world of Marlborough sauvignons – that mark them indelibly as Saint Clair wines. Sure, they taste exactly as sauvignon blanc should in terms of the passionfruit-heavy, fruit salad characters that put the style on the map. But these are wines with texture, force and much greater concentration than most of their rivals,
Saint Clair and its source-vineyards live in the Wairau Valley, which is a broad stretch of alluvial ground moulded over the centuries by the Wairau River. And they differ remarkably between the different labels. I’ve tasted Blocks 1, 2 and 3 from the 2014 vintage (yes, the Saint Clair wines kind of need a bit of bottle time) and their differences are as remarkable as their similarities. Block 2 is my pick of the three – slightly reductive (that’s the whiff of a cap-gun just fired) and kind of taut compared with its kin. Still it is quite a dense, rich sauvignon blanc, perhaps with more citrus among the passionfruit than the other two. For a grape variety that – within the Marlborough region – has become endowed with an almost homogenous set of characters, this is an eye-opener that speaks as much about

contemporary winemaking as it does about region and style. The fruit for Block 2 comes from the Lower Wairau Valley, close to the water. It’s cooler (hence the slightly leaner profile and proliferation of citrus notes) than the other vineyards. Block 1 – the Foundation Vineyard – is more lush and full, rather splendidly endowed with all of the tropical fruit characters that have made the style so famous. However, there’s more dimension, complexity and punch than you’ll find in all but a handful, and its generosity is cut to the quick by really zesty acidity. It’s a bold wine. Then there is Block 3 … This sits closer to my vision of typical Marlborough sauvignon blanc in its overt fruit salad notes and sort of sweet, zesty exuberance. Still, there’s plenty of complexity and interest. The Pioneer Block series extends to gewürztraminer, gruner veltliner, chardonnay, pinot gris, Riesling, pinot noir and syrah. I’ve drunk a couple of the pinots … Marlborough pinot has evolved dramatically over the past decade. It has improved, thanks to vine age and suitable vineyard sites and it offers a gentler version than the powerhouses from Central Otago and Marlborough. The region’s pinot vineyards tend to be on warmer, less fertile sites like the north-facing slopes of the southern valley. Saint Clair has nine Pioneer Block pinot noirs listed on its website: what a tasting that would make! I can only talk about Blocks 5 and 12 from the 2012 vintage. Both are sublime. Block 5 is called Bull Block and it comes from a vineyard in the Omaka Valley, which is a small triangular cleft in the mountain range that borders Marlborough to the south. Block 12 (Lone Gum) lies a little more than eight kilometres (as the crow flies) to the west and slightly north. Both are surprisingly dense and muscular for Marlborough pinot and have the bright, toasted vanilla flick of fresh oak and fairly similar dark fruit notes. Their perfumes are delicious. The greatest difference lies in the structure – the tannin – which is more dominant in the Block 12; that’s the one to cellar. There are wines in the Saint Clair family that sit both above and below the Pioneer Block series: the Reserve Chardonnay is spectacular and I can only imagine the pinot would be similarly good. And the black label, Premium range sits below the Pioneer Block in terms of price, but its wines are emphatically in the Saint Clair style of intensity, richness and quality. Family by name and family by nature, these are Marlborough wines grown and made with attention to detail and an eye for the future.

Rule Britannia Terry Hopley invites you to spend a very special evening aboard the Royal Yacht Britannia.
WHEN YOU’RE ORGANISING a dinner party you send out the invitations and wait for the replies. Most of the time you receive a delighted ‘yes’ but there’s always the occasional polite ‘no’ because of other commitments or simply that prospective guests have had a better offer. But there’s one invitation to dinner nobody has turned down for nearly 50 years. That includes the Pope, several Presidents of the United States, Frank Sinatra, Elizabeth Taylor and Nelson Mandela, to name just a few. I certainly wasn’t going to decline the offer. The envelope looked ordinary enough but my heart skipped a beat when I read that my wife and I were invited to join a select group for a very special dinner in the State Dining Room aboard the Royal Yacht Britannia.

My qualification for such a privilege is that I have been admitted into the Freedom of the City of London. But now comes the good part. While relaxing in Her Majesty’s breathtaking private drawing room on board I just happened to mention that I had some wonderful patriotic Aussie mates who would cherish such an experience. And that is how it came about that next year the Royal Yacht Britannia will be put at the disposal of a maximum of 30 guests of mine from Australia. While you are waiting for your invitation to arrive let me fill you in on the experience. Britannia was launched in 1953 by Her Majesty Queen Elizabeth II and for half a century this unique vessel became the symbol of why Great was put in front of the word Britain. She sailed more than one million sea miles after her maiden
voyage in April 1954 when she carried Princess Anne and Prince Charles to Malta in order for them to meet The Queen and Prince Phillip in Tobruk at the end of the Royal couple’s Commonwealth tour. In 1959 Britannia sailed the newly opened Saint Lawrence Seaway en route to Chicago and for part of this cruise President Dwight D. Eisenhower was on board. Presidents Gerald Ford, Ronald Reagan and Bill Clinton were also welcomed aboard the Yacht. It was said that no-one in the world ever turned down an invitation to dinner aboard Britannia and it came as a shock when the Labour Government, led by Tony Blair, announced in 1997 that she would be decommissioned. For the only time in her reign Queen Elizabeth shed a tear at the decommissioning ceremony.

As far as the crew of 250 were concerned, the Commodore was pretty well looked after and the officers had an attractive wardroom where they were often joined for informal meals by members of the Royal Family. The ratings were afforded slightly more cramped quarters but they were all Royal Navy volunteers and happy to serve on board the last Royal Navy Ship where the sailors slept in hammocks. Just about everything on board is original, right down to the Rolls-Royce which still sits in the glass fronted garage. If you’re looking at values, that car alone would buy any super yacht in Sydney harbour. However, it’s the more formal areas of the ship that really capture the imagination. The drawing room has photos and signatures of the Royal children and sitting in one of the sumptuous sofas being served the finest of champagnes is an experience that will last a lifetime. The setting of the dining room is quite breathtaking and being called in to dinner by the immaculate waiting staff justifiably makes you feel like Royalty.

Little has changed in the way dinner is served. Every plate, knife, fork, spoon, napkin and chair is lined up to a millimetre of precision and the amuse-bouche is presented to each guest at exactly the same time. Our menu was a mere five courses, each a favourite of Her Majesty and each prepared in the galley on board. We started with a terrine of Ayrshire ham hough served with crushed peas and pickled carrots (delicious but I’m not too sure about it being a favourite of the Queen). Our main course was a fillet of sea bass, served with potato gratin, saffron and leek and a vine tomato butter sauce. There was something very English about the dessert of warm chocolate ginger pudding served with crème fraiche sorbet. And the petits fours served with coffee were, of course, hand made. The choice of wines for dinner were Terre de Lumiere, Celliers Jean De’Alibert and La Doutelle Merlot. The experience certainly doesn’t end at the conclusion of dinner. The party continues in the drawing room with a much wider selection of
beverages specialising, of course, in a magnificent array of Scottish whiskies. Another wander around the ship, discovering the favourite retreats of the Royal Family, and a stroll (weather permitting) on decks that have welcomed so many of the men and women who have carved out our history and a memorable experience comes to an end. If I could host just one more dinner party before I leave this earth, it would be aboard the Royal Yacht Britannia. There is nothing to compare.

WHETHER I PHRASE it as Storm Chasing, Storm Photography or Weather Photography … the result is the same – a startling look of shock as the person conjures an image of a reckless, energy-drinking hooligan deliberately speeding into harm’s way. However, they couldn’t be more wrong. Storm Chasing is a technical sport. It demands knowledge, the latest technology and strategic planning. It can also be quite expensive and physically demanding.

Globally, Storm Chasing is big business – especially in the U.S. where tour companies cater to thousands of tourists each year. The process to a successful chase starts days in advance, as hundreds of square kilometres has to be isolated down to just a few. To achieve this, enthusiasts use forecasting models such as GFS or EC to project weather systems into the future. Attention to detail is critical as minor nuances between each model can make a big difference. >>

For example, one model might forecast a change to move through in the morning, the other in the afternoon. Get these details wrong and your target area will be out by hundreds of kilometres. A long drive is often required (nearly always more than 500km, often up to 1,500km), followed by hours on end waiting in the hot midday sun … hopefully with no flies. Thus far, this is not the adrenaline hit our reckless energy-drinking hooligan was expecting. Once you have a storm, tactful decision making is required. You can’t force a storm to move your way, but at the same time you don’t want to be stuck on a mountain range or in a rainforest when a storm is at its peak – not only would this be dangerous, it is useless for photography. In addition to forecasting where storms will be, tactful planning of the road network is required to get yourself in the best position while all the time anticipating the storm’s next move. Get any of this wrong, and days of effort can be wasted … but get it all right and its one of the most amazing 20 minutes you can experience.

One such amazing day was the 28 November last year. We thought Oakey, west of Toowoomba, would be a good spot. We waited patiently there for hours. At about 2.45pm we were ready to give-up and joked if nothing got going by 3pm we would call it a bust. With about five minutes to spare everything changed. We watched blue sky give way and adjusted our position to be under the storm – nothing special yet. Within 50 minutes this storm evolved from zero into a near tornado producing supercell that dumped quite large hail over Oakey – just where we had been waiting all day. What I find so exciting about storm chasing, is marrying the science with the on-the-ground experience. Then there is the adrenaline of dodging the lightning and hail to get that amazing photograph. Because storm chasing usually involves long road trips, I often team up with other enthusiasts. So it’s not all about the weather, lifelong friendships and memories are created as part of the journey. >>

Technology plays a big role in storm chasing, I am always looking for an edge to help put me in the wrong spot at the right time. This year has seen some big improvements, notably; • Himawari-8, a Japanese satellite which now provides high resolution satellite images every 10 minutes compared to hourly previously. Satellite data has become very important to see where storms are forming long before they actually develop into what you see on radar. • 3D radar which allows me to see what a storm is doing on the surface (such as BOM radar data) but also what is happening kilometres above the surface. From this, I can see where the storm will be 15 minutes in the future and adjust my strategy. Storm chasing is not about driving point blank into a tempest. There is a lot of science, strategy and technology involved to take these shots. There is also a community element to it via the Bureau of Meteorology Storm Spotters network. People that are a part of this network report storms that meet certain criteria such as hail over 2cm in diameter or tornadoes. This information can be useful for public storm warnings. Enthusiasts who don’t chase storms but are simply interested in weather are known as ‘arm chair chasers’. Whether you prefer the on-the-ground experience or would rather observe from the safety of your loungeroom, there are a number of resources available to people that would like to know more such as the Australian Severe Weather Association and Bureau of Meteorology Storm Spotters. Head for The Hills Patsy & Bill Rowe discover some hidden gems of Beverly Hills. ALTHOUGH BILL and I have visited Beverly Hills many times it was always ‘on our way to somewhere’ with barely enough time to enjoy bagels and cream cheese at the iconic Nate'n Al’s Deli, let alone polish the credit card at Chanel. But today at 9am (I so detest early starts) we were on the Personalized De-Luxe Tour with Miiles (his numerologist advised him to add an extra ‘i’), a trim little chap with a pencil moustache sporting a bow tie and tartan pants. We were joined by Myra and Joe from Nevada and Mr Itsaga from Japan. With a tele-lens slung around his neck that looked like something you’d launch into space, Mr Itsaga was already photographing the limo, the hotel, the passers-by and the topiary pots. We all expressed an interest in architecture and the history of Beverly Hills, so we headed for The Spadena House (commonly known as the Witch's House). Built in 1921 for a silent film movie studio, the pointy, lopsided roof, tiny windows and stucco look like something plucked straight out of a Hansel and Gretel fairytale. Next, Miiles had booked a tour of the Virginia Robinson Gardens: a superb six acre tropical paradise built in 1911 by the family of Virginia Robinson of the Robinsons-May Department stores.

The ‘First Lady of Beverly Hills’ is legendary for her card games and cocktail parties (which were frequented by celebrities like Fred Astaire and Maurice Chevalier). From there it was over to Greystone Mansion & Park. Celebrated as the largest home in the city, the majestic mansion has an interesting history of murder and mystery as well as having featured in famous movies including Ghostbusters, Austin Powers: Goldmember and Spiderman. All fascinating. However, thinking perhaps we’d overdone our enthusiasm about architecture to Miiles, I mentioned that I’d missed my mid-morning coffee infusion which was essential for the maintenance of my pleasant mood. Wanting to experience some of the glamour of Rodeo Drive we drove to the Luxe Hotel (which used to be the very quaint European-styled Rodeo Hotel) and sat in the sun in the tiny front patio gazing at the Rolls-Royce and Maserati parked directly in front of us. Mr Itsaga’s camera clicked continuously. Coffee morphed into lunch as Miiles regaled us with trivia about Edelweis Chocolate, (apparently Lucille Ball’s favourite) which inspired an episode in the iconic I Love Lucy series and Sugarfina, a candy shop for adults, where a Candy Concierge ‘helps to personalise candy selections’.
I hesitated to probe more deeply into the responsibilities of a Candy Concierge lest I show my ignorance, but it’s clearly an important role. As we relaxed, Miiles launched into a description of the O'Neill House (where he intended to take us had we not opted for coffee). Just steps from the Golden Triangle, the home's facade was inspired by the surreal designs of famous architect Antoni Gaudi and is like stepping into Alice's Wonderland. I felt we’d disappointed Miiles so asked him to give us some hints as to somewhere different we might go after dark. He immediately suggested the exclusive £10 Bar – indeed, it’s so exclusive entry is by reservation only! The bar is tucked inside the Montage Beverly Hills hotel and welcomes connoisseurs to taste the world’s most precious whisky, Macallan Single Malt, some aged as long as 64 years. Mr Itsaka asked if he would be allowed to take photographs. But for me the highlight was a visit to Nic’s Beverly Hills, where the real draw of the lounge is their one-of-a-kind VODBOX – an ‘icebox’ cooler where patrons don animal print faux fur jackets before being escorted into the signature 28°F walk-in, drink-in exhibitionist freezer to sample premier vodkas from all over the world. Mr Itsaka took some great photographs.

JAGUAR XE Many buyers waited a long time for the XE’s arrival last August. It’s an addition to one of the most popular segments in the luxury car market, for compact sedans. The Mercedes-Benz C-Class dominates, but the BMW 3 Series, Audi A4, Lexus IS250 and Infiniti Q50 also compete. There are high expectations for the baby Jag. Still British-built, it’s a rear-drive sedan with a choice of petrol and diesel engines and eight-speed automatic transmission. Its body construction is described as ‘aluminium intensive’, implying that like the XF and XJ sedans, F-Type sports car and forthcoming F-Pace SUV it uses lots of (recycled) aluminium for strength and light weight. This usually translates to higher performance efficiency and better suspension control. Prices start at $60,400 plus on-roads for the petrol-powered 2.0t Prestige and run to more than $100,000 for a high performance V6. The 2.0t provides 147kW of power and there’s a 2.0 turbodiesel that delivers ultra-low fuel consumption. Value comparisons can be misleading in this segment, where detail specifications always vary, but the Jag is a little cheaper than the Mercedes and slightly more than seemingly comparable rivals. Being a Jag, the XE as expected is good value and has a sporty feel from behind the wheel. The 2.0t engine enjoys being pushed hard to give its best and through corners the car responds crisply to the steering, sits flat and hangs on strongly. Inside, the Prestige features seats with part-leather trim and contrasting stitching and Jaguar’s distinctive round gear selector knob that rises out of the centre console when the smart-key ignition is activated. Its head-up info display projected on to the lower windscreen has excellent clarity. There’s low-intensity ambient feature lighting around the cabin and brushed metal trim around the dash and doors. The interior is comfortable and has a cosy, intimate feel. In the back, this translates as more comfort for two passengers than three. The car is well equipped for safety with emergency braking intervention and blind-spot and lane-departure warning systems. In short, everything a buyer in the compact prestige segment expects can be found in the Jaguar, but thankfully it’s the same but different to its established German and Japanese rivals. Handsome too. At last Jaguar has given us a compact car worthy of its famous leaping-cat badge and a genuine alternative to the mainstream. >>

VOLVO XC90 The Volvo XC90 SUV looks like it’s the product of some high-style Swedish design house. The company that created the memorable P1800 coupe and Amazon sedan has re-discovered its mojo after a few forgettable decades in-between. Passengers enter the Rolls’ sumptuous cockpit via rear-hinged ‘suicide’ doors, which are so big
they have power assistance to close. The fabric roof, matched in colour to the paintwork, opens and closes noiselessly in 20 seconds without the Dawn even needing to stop. At this level a Rolls-Royce virtually sells itself. The salesman’s role is to guide the buyer through a myriad of personalisation options, including the choice of hood ornament. It seems no Rolls is sold in merely standard trim and every buyer wants his or her car, just so. The magnificent Dawn proves car making will never be about just utility and economy. While only select few can own it, the rest of us can be inspired by its beauty and quality.

Property market looks positive for 2016. A NEW YEAR has begun and there is no doubt there are many anticipating what we can expect for the South East Queensland (SEQ) property market within the next 12 months. Last year was a big year for Australian property, especially in Sydney and Melbourne where we saw continued solid growth in property value. We also saw the reserve bank drop interest rates to a record low of 2%. However, as investor demand grew – lenders were pressured by the Australian Prudential Regulation Authority (APRA) to make it harder to finance an investment property loan. Ben @ Bleach* Singer songwriter Ben Lee headlines the 2016 Bleach* Festival.
AUSTRALIAN-REARED Los Angeles-based singer songwriter Ben Lee has signed on as the feature artist at Bleach* 2016, the Gold Coast’s signature arts and music festival. Ben will deliver the Bleach* keynote address, teach a free songwriting workshop and perform songs from his latest album Love is the Great Rebellion and a back catalogue of hits. His appearance at Bleach* Festival will provide Ben with an opportunity to share his vision of creativity in a few different contexts which he finds very exciting. “As someone who has loved ideas, speaking and sharing over the course of more than two decades as a musician, I have come to really appreciate sharing my inspiration in a variety of ways,’’ said Ben. In his address ‘Art and the Awakening of Consciousness’, Ben will share insights into his life and career over afternoon drinks. Blank GC’s Sam Morris will host the event on 9 March, presented by Griffith University and QT Gold Coast. The accomplished artist will also helm a free songwriting workshop called ‘Songwriting Towards Virtue’ at Helensvale Community Centre on 20 March. According to Ben, songwriting can be practised as art, craft or even prayer. “Songwriting is simply an exercise. What really separates one writer from another is intention. Some people write with the intention of honing a craft, others to express their feelings. I write as part of the process of my own spiritual progression.” Ben will also headline a free outdoor concert that closes Bleach* Festival at Burleigh headland. The bill includes Sunshine Coast singer songwriter Sahara Beck, punk and blues outfit We All Want To and Paul George’s (Tijuana Cartel) new roots blues band Black Rabbit George. Ben’s Bleach* break follows a big year for the singer songwriter who celebrated 25 years in the music industry by releasing his 11th studio album, Love is the Great Rebellion. He also executive produced another for Los Angeles choir The Lake Chorus and worked hard at his ethical business and philanthropy project and for his favourite charity.

The new album has been described as a return to pop for Ben after the concept album Deeper into Dreams (2011) and the experimental Ayahusasca: Welcome to the Work (2013). It is also a family affair. Ben’s actress wife Ione Skye and the couple’s daughter Goldie, 6, sing background vocals for the song I’m Changing My Mind. Another, Happiness, features guest vocals by Lee’s father in law, 1960s folk singer Donovan. Ben, 37, launched his career aged 14 in the Sydney thrash band Noise Addict. His albums include Grandpaw Would (1995), hey you, yes you (2002) and the triple ARIA award winning Awake is the New Sleep (2005), while his singles include Cigarettes will Kill You, Running with Scissors, Catch My Disease and We’re All in This Together. His songs feature in many films including There’s Something About Mary and TV series such as Grey’s Anatomy, Scrubs and Packed to the Rafters. He acted opposite his good friend Rose Byrne in the Australian film The Rage in Placid Lake and featured on Joel Madden’s team on the 2013 season of TV talent show The Voice.

Dancing Ancient China Interview with Shen Yun Performing Arts Principal Dancer Jialing Chen.
WHAT IS THE BEST way to tell a story that spans 5,000 years and takes place in a distant land called the Middle Kingdom? The answer – soon to be unveiled on stages in Queensland – is classical Chinese dance. For ten years, Shen Yun Performing Arts has brought the beauty of traditional China to the international stage. From New York to Taipei, from Brisbane to Istanbul, Shen Yun has performed in over 100 cities across five continents. How has Shen Yun, which started as a small non-profit organisation in New York, achieved this scale of success? What is its secret? To find the answer, we spoke to Principal Dancer Jialing Chen, who has been performing with Shen Yun since 2007.

Your performances often depict heavenly scenes and divine beings. Where does this spiritual tradition stand in Chinese culture? China was once known as ‘The Celestial Empire’ and ‘The Land of the Divine’. And Chinese mythology is filled with accounts of semi-divine beings coexisting with humans on Earth. These deities are said to have left a rich culture of music, dance, and other arts. In fact, you could say we attribute all aspects of traditional Chinese culture to divine intervention. This includes Chinese language, attire, medicine, architecture ... Ancient Chinese believed they were living in a land guided by the divine. They were living a lifestyle created by the divine.
Are these beliefs still embraced in China today? Sadly, no. The Communist Party took over 60-some years ago, and many things have been lost. The generations that followed grew up without a true sense of our heritage. It’s a shame, and it’s also a main reason why Shen Yun was established. Our mission is to revive China’s traditional culture and share it with people all over the world. What does it mean to revive a culture? I think the most important aspect of traditional culture is its moral compass and spiritual culture. Everything in Shen Yun revolves around these principles. When we perform, we want to give our
audience more than short-lived excitement. We want to share with them something inspiring, the spirit of traditional China. And classical Chinese dance is the perfect medium.

Why is this art form a good fit? Classical Chinese dance is a perfect representative of traditional Chinese culture because so many aspects of this civilisation are woven into it. It incorporates traditional aesthetics, decorum, and values, which you can see in the dances – things like benevolence and humility, the combination of inner strength and exterior softness, and the idea of circular motion and fluid continuity. Classical Chinese dance was passed down from one dynasty to the next, and today, it’s one of the most comprehensive dance systems in the world. It’s an incredibly expressive art form – giving us the freedom to explore any character or emotion. How does classical Chinese dance achieve this? It all comes down to what we call ‘bearing’ and ‘form’. Form refers to hundreds of unique movements and postures. Seasoned dancers know how to move every part of their body in perfect harmony – down to the direction of the eyes and the movement of their breath. In dramatic dances, classical Chinese dance also includes unique acting elements. Bearing, meanwhile, is the spirit of the dance movement. It’s not as well defined but no less important. When we dance, bearing is just as visible as any surface physical movement. Classical Chinese dance also has an extensive array of techniques including jumps, spins, flips, and difficult tumbling moves. These add to the powers of expression, and heighten the energy level on stage. You perform all over the world. How do different people react to the performance? That’s the beauty of art, and particularly classical Chinese dance – it’s a universal language. Plus, our artistic team has done a great job with the animated backdrops, which really transport you and put you right there on the scene. Of course, the bilingual emcees help bridge any remaining gap. So even though our show presents the traditional culture of China, it’s still something everyone relates to. What stories and legends can we expect this year? Every year, we put on an all-new performance. But we like to keep it a surprise. You’ll have to come and see for yourself. THE REIMAGINING of storybook concepts and bespoke exaggerated sets come together in a unique combination of underwater fine art and fashion photography, as showcased on our cover. Beth Mitchell, a young photographer passionate
All sets were handcrafted, built and photographed underwater by Beth, while Playful label ‘I Found Lucy’ created the striking customised couture designs. Gold Coast based makeup and hair stylist
about inspiring art lovers and collectors, has made impressive tracks in unifying the underwater and fashion genre with her electrifying array of photographic stories and art print editions. Her work has been very well received, both internationally and nationally, and Beth hopes to now focus on progressing the photographic medium in the Australian art community. Beth’s new mini series ‘Loveland’ is currently exhibiting in Melbourne’s Manyung Galleries alongside other underwater pieces. The four images in the series are reminiscent of the Alice in Wonderland tale paired with an exploration of love, heartache and childlike euphoria. The series is a result of a creative collaboration by some of the region’s most talented professionals.
Kylie Eustace from Kylie’s Professional brought her unique flair to the shoot and ‘sweetheart character’ Brittney Brockhurst of Dallys Models braved the cold pre-summer water to dance among giant hearts and flowers in each scene.
