Editor’s letter THE APRIL/MAY edition holds a special place in the hearts of the team here at Cove magazine … not only does it mark the anniversary of our very first print run back in 2007, it also allows us to commemorate one of the nation’s most poignant events, Anzac Day. With this in mind, our profile story focuses on Maryborough in South-East Queensland where the local community are planning to build an evocative World War 1 memorial. The solemn monument includes an 8m high representation of the cliffs of Gallipoli and will be the start of a regional military trail around the Fraser Coast. We look forward to bringing you updates as the project progresses. Now, moving on to the rest of the issue, which just happens to feature some of my very favourite things … shoes, sport and SUVs. Jupiters expansion
The Star Entertainment Group has announced plans for a potential new hotel tower at its Jupiters Integrated Resort on the Gold Coast. Pending approvals and joint venture agreements, the concept allows for a tower of approximately 200 metres, housing around 700 hotel rooms and apartments, to be located on the ocean side of the existing property – taking the overall accommodation supply to almost 1400. Jupiters hotel is already undergoing a full refurbishment of its almost 600 rooms, while a 6-star 17-storey hotel tower, with more than 50 luxury suites, is under construction at the front of the property.

The real Britannia
Some of you may have noticed we misspelt the name of Royal Yacht Britannia in the February/March edition. As former crewmember Andrew Stackpool has advised, most correctly it should be HMS Britannia as she was a commissioned warship, however, she is known simply as Britannia. Andrew has also provided the following information about the historic ship: The promenade deck was fitted with an aerodynamically designed teak railing so that the dresses of the Ladies-in-Waiting would not blow upward. Britannia is the only warship in the world in which the sailor’s uniform aboard included sandshoes – no noise. She was the preferred means of transport for Her Majesty and his Royal Highness as it gave them their own private spaces. The ship was maintained so immaculately that the claim one could eat off the decks was true. Her Royal Highness Princess Margaret once held a dinner party on the engine room plates.

Acting her age Award-winning actress Julie Walters has made us laugh and cry for decades.

THE FIRST THING to be said about meeting Julie Walters is that she is very funny. We know that from her appearances on television, in plays, comedy series and on chat shows. The irrepressible chatter, the gales of laughter – the unblanching asides about the menopause, or needing a loo-break, ‘in case there’s an accident’. The second thing to be said is that she is lovely – genuinely lovely. We know that, too, because mention the name Julie Walters to anybody and the first thing they will say is how much they love her. “Do they?” Julie raises an eyebrow, as if this is the first time anyone has told her this, dissembling, as she does everything, gracefully. “I mean it’s very nice, but they don’t really know me, do they?” We are sitting in the library of a West End hotel. The actress, who, at 65, is petite and elegant, is sitting on a sofa so luxuriant it threatens to swallow her. There is a plate heaped with blueberry muffins, which she ignores. A waiter brings a tray. I pour coffee for myself, and hot water – just hot water – for her. “Has it brewed?” she asks. In a career going back more than 35 years, she has invariably played working-class or middle-class women. “As actors we are at the mercy of what we’re offered,” she says. “And I don’t mind that. I wouldn’t want to play somebody upper-class just for the sake of it. I grew up surrounded by working-class women and I really felt I knew them, and know them, and have a feel for them.” Julie grew up in Smethwick, in the West Midlands. Her father, Thomas, was a builder
and decorator. Her mother, Mary – Irish, ‘tiny and fierce’ – worked as a post-office clerk, and was appalled when her daughter announced she wanted to be an actress. “‘Oh God love us …’” The Irish accent is pitch-perfect. “‘She’ll be in the gutter before she’s 20 ...’ And she was right.” Walters laughs. “She was frightened and insecure, but she had very middle-class values, I realise, looking back. She really had drive, my mother.” Walters’ elder brother Tommy gained a PhD in Theology at Cambridge. “We didn’t have a book in the house, so how he ever achieved it I don’t know to this day.” Having left school with four O-levels, Julie worked as a nurse for two years until summoning the nerve to apply to drama school. “I did my two things at the audition, and [the teacher] said, ‘That was an interesting choice.’ It was a monologue, quite heavy. He said, ‘Why did you choose that?’ I said, ‘Well, I found it really interesting, I understood it.’ He said, ‘Yes, playing a man …’ Oh, it was a man! I had no idea! And then he asked me about the next one, which was from a play by Clemence Dane, and he said, ‘Do you know much about Clemence Dane?’ I said, ‘Well, I know he …’ and I looked at his face ... ‘She ...’ So I’d got the two things completely wrong. I’d found them in a book of audition pieces in a bookshop in Birmingham. I’d never been to the theatre really – only amateur things with my mother and her office cronies. But I got in.” She went on to work at the Everyman theatre in Liverpool – a time, she says, when it was ‘very right-on, and it was popular to be a working-class
actor, and very difficult to be middle-class and especially upper-class actors.’ It is a progression that calls to mind 1983’s Educating Rita, her first film role, in which she played a working-class Liverpudlian housewife determined on self-improvement. “I always felt her story was like a parallel to mine,” she says of a role that defined her. “So many people have come up to me over the years – ‘Educating Rita, that’s why I studied at the Open University, or went to college …’ I think that’s fantastic. And ‘I left my husband’, one or two of those. “I know that myself – watching films, how they affect you, good, bad or indifferent. How they make you realise what’s important in life.” When she first saw the film at a preview screening, she ran to the toilet and wept. “I thought I looked dreadful, false, the acting was awful. I felt so embarrassed.” When she was nominated for an Academy Award for Best Actress, she thought they were joking. (She won a Golden Globe for her performance.) Flying to Los Angeles for the awards was the first time she’d travelled first class. “It was heaven.” In LA, the film company introduced her to a high-powered agent and she was inundated with scripts, but she didn’t like any of them – romantic comedies, mostly. “I just felt, all of that wonderful writing I’d been involved with – Willy Russell, Alan Bleasdale, Alan Bennett – none of it came up to that. No, I just wanted to go home.” >>

Bennett is a close friend. She worked with him on a television play, Intensive Care (1982), which he had written, and in which she played a nurse. The actor cast in the lead role dropped out, and Bennett had to step in at the last moment, which involved a bedroom scene with Walters. “He was so nervous,” she remembers. “He changed the lines from the original script, so in this scene where we go to bed, these two lines were suddenly popped in where I say, ‘That’s a nice shirt. Keep it on!’” Walters laughs. “Why? Why would she say that? Alan was so lovely, I couldn’t help winding him up. Afterwards Gavin Millar, who was directing, brought down a glass of whisky for us to calm Alan down. And Alan said, ‘Let’s have a cigarette.’ It was as if we’d really had sex!” Had she stayed in Hollywood, I say, life would have been very different. “Yes, but I think it would have been a dull life.” So she came home and in 1987 made Personal Services instead, a film inspired by the madam Cynthia Payne. At a screening in America, she says, one woman walked out, saying, ‘There’s something there to offend everybody’. She laughs: “They thought it was awful.” And that was Hollywood over and done with. Walters is a gifted and highly versatile actor whose dramatic roles have run from Mary Whitehouse (2008) to Mo Mowlam (2010). But she is the first to acknowledge that she is best known as a comic actor, not least through her work with her friend Victoria Wood. Mrs Overall, from Acorn Antiques, remains Walters’ favourite character. “She’s definitely the most quoted,” she says. “People come up to me on the street and sometimes they’ll say things and I’ll think, ‘Who are these people? Are they mad?’ because I
don’t recognise the quote. And then there are other sketches of Victoria’s. There’s a woman in a queue in a café who says, ‘You’ve a look of Eva Braun, do you know that?’” Her accent has morphed into a perfect replica of the original TV sketch. “And then her friend says, ‘Have you got prawns?’ and she says, ‘No! Never touch prawns; they hang around sewage outlet pipes, treading water with their mouths open’.” She is hooting with laughter. I’m almost in tears. Walters’ husband Grant is a former AA patrolman who now runs an organic farm. They’ve been together for 30 years – a perfect complement of personalities, it seems. They have a 27-year-old daughter, Maisie. At home on the farm in West Sussex they are much more likely to discuss livestock than her career. “I’m far more interested in talking about the farm anyway, and he needs to talk about it. We do talk about my career, but not as much. I’ll sometimes say to him, ‘Oh God, I don’t know how to do this part’. And he’s great. His anxieties are completely different to mine and he handles that sort of thing in a different way. He’ll say, ‘It’s just a television program. That scene you’re worried about, half the nation will be putting the kettle on.’ And I like that. I love his solid, grounded strength. If we go to the BAFTAs, I have him to hold on to. He doesn’t care what people think – whereas I’m the opposite. We have different strengths and we listen to one another, and I think that’s why we’ve lasted really.” There was a time in the ’80s and ’90s when her work rate was almost maniacal. She remembers in 1984 doing a West End play, Sam Shepard’s Fool For Love, in the evenings ‘and it was a really heavyduty, violent, two-hander’, and in the afternoons
filming the role of Adrian Mole’s mother in a TV series, miles out of London. “I was tired, but I was able to do it. There’s no way on God’s earth I could do that now.” Instead she paces herself, and she’s learned to say no. “I’ve sort of realised at 65 that it’s OK to be me, or say, ‘I don’t agree with that,’ or, ‘I’m sorry, no, I’m not going to do that.’ Because I know I’ll be tired. My memory is different. I still learn lines, but it’s not like in my 30s or 40s or even my 50s. In those days, obviously I’d have read the script, but I could learn it the night before and it would just go in – bonk! Got it! Now I don’t do that. A big speech the night before is a bloody nightmare’.” One reason that people love her, I say, is that she always appears to have been irrepressibly and unapologetically herself, accepting the ageing process gracefully. “Have I?” she laughs. “I don’t think of myself as graceful. In one sense I like getting older because you feel more at home with yourself, your life. But in another sense I don’t want to become incapacitated, who does? And I suppose we all have to go somehow, one way or another.” Five years ago, she shaved off her hair to play politician Mo Mowlam, who died of cancer. It grew back white and she has kept it like that ever since. And she’s never contemplated cosmetic surgery. “I can understand why people do it as the pressures are huge. But it’s not for me. I’d be letting myself down, because I’d be saying to myself – and this is what I’ve been fighting my whole life – you’re not good enough as you are. I’m proud to be 65. I don’t want to hide it. It doesn’t matter if you do surgery or not. It won’t make you 30.” She laughs. “Who wants to be 30 anyway?”

Act of remembrance ‘Gallipoli to Armistice’ – a unique journey through Gallipoli and the Western Front. WORDS NANCY BATES
SOARING 8M in three panels of weathered steel, a representation of the cliffs of Gallipoli will rise in a picturesque park in Maryborough, Queensland over the next year. Beyond it, a trench walk commemorating the Anzac battles of the Western Front will lead to a gaunt, sombre memorial to the battle of Pozieres, a conflict fought on a ridge which was ‘more densely sown in Australian sacrifice than any other place on earth’. A statue of a single soldier stands ready to gaze at the replica cliffs as they take shape in the Queensland sunlight. The bronze image of Lt Duncan Chapman portrays him staring at the cliffs of Gallipoli as they emerged from the predawn darkness 101 years ago. Maryborough born and bred, Lt Chapman was the first Anzac to step on to the Gallipoli shore on the morning of April 25, 1915. He was killed in shellfire a year later at Pozieres. A campaign in his hometown to have his statue raised for the 100th commemoration of the Gallipoli landing was the catalyst for the unique $3.2 million ‘Gallipoli to Armistice’ venture.

It will tell the story of the Anzacs of The Great War, using modern special effects to give visitors an understanding of a cruel conflict that crushed a generation of the nation’s finest young men. The project evolved as a small sub-committee of the Maryborough Sub-branch of the RSL raised the money in four months to pay for the Duncan Chapman statue. A key figure on the committee is Fraser Coast radio and theatre master Greig Bolderrow. Greig orchestrated a sound and light tribute, Dawn of the Anzacs, that unfolded as dawn broke over the statue unveiling in Queen’s Park. Greig said that as plans developed for the statue depicting Duncan Chapman looking at the cliffs, the committee realised it needed to do more. “We started thinking we needed to build a representation of the cliffs for him to be staring at and then we looked at the bigger picture and the story that needed to be told in a way that could be easily, if grimly, absorbed,” he explains. World War I (WWI) has been a grey part of Australian military heritage, confronting to consider
in detail because of the distressing slaughter, and clouded by subsequent events in the 20th Century. Apart from dedicated war historians, few Australians and New Zealanders understand what had happened to the Anzacs in WWI and why historian Charles Bean declared Gallipoli to have defined our national identity. Memories were shrouded in the aftermath of the Great War, with talk of the horrors of WWI avoided by families grieving for sons, husbands, lovers and brothers. Through the 1920s and 1930s, the Depression and WWII pushed WWI back into a darker mist. The austerity of the war years gave way to greater wealth. The privileged baby boomer generation decided to make love not war, rejecting commemoration of the wars in which their parents and grandparents served. Anzac Day attendances dwindled and soldiers who served in Vietnam were treated shamefully. >>

WWI became even more densely shrouded in a fog in our understanding of history. Greig says that today Australians want to know more. “Baby boomers are aware of that gap in their knowledge,” he says. “The school children on Anzac Day parades are more conscious of their military heritage and respectful of the sacrifices made so they could live in freedom.” The Duncan Chapman Memorial Appeal Committee set its sights on a memorial that would give a succinct but compelling perspective of the Anzac campaigns in World War I. When construction of Stage 2 is complete, a version of Dawn of the Anzacs will be played nightly with images projected on to the stark outlines of the cliffs where the Anzacs first went into battle. The finished memorial to Gallipoli and WWI will be an evocative experience for Australians, giving them a broad overview of what happened to the original Anzacs who rallied to help the British Empire. “The facts will be offset with personal glimpses of soldiers at the front,” said Greig. “We will be using some conventional information bays with script, etchings and maps

augmented by modern techniques such as movement-activated sound and holograms.” A landing scene behind the statue will feature representations of the three 9th Battalion boats that were the first to crunch ashore. Footsteps already leading to the Duncan Chapman statue are filled with sand from Anzac Cove; ahead are stones sent with the sand as a gift from the Turkish government. The trail from the landing scene through to the cliffs would give New Zealand, Turkish, British and French aspects of the peninsula campaign. The trench trail commemorating Anzac experiences on the Western Front will end at the unique memorial to Pozieres, where Duncan Chapman, then a major, died in August 1916, as he directed troops in trenches below. The stark monument will be a representation of the ruined German blockhouse the Anzacs nicknamed Gibraltar – the only recognisable landmark in the shattered landscape after weeks of shelling. The memorial will also try to convey how Charles Bean felt as he wrote of a scene of desolation where not even a blade of grass survived the carnage that sowed the land so densely in Australian sacrifice.
According to Greig, the Queen’s Park monument will be the start of a regional military trail around the Fraser Coast, with the WWI story continuing at Hervey Bay, where a magnificent Light Horse statue would be the centre of an interpretive centre focusing on the Middle East campaign.

An Italian heritage Ermenegildo Zegna – the man behind the suit.

LIKE LEONARDO DA VINCI before him, there were some who weren’t so sure about Ermenegildo Zegna, founder of the world-famous luxury brand that bears his name. “The citizens of Trivero didn’t know whether to consider Ermenegildo Zegna a madman or a dreamer,” his son Aldo once recalled, “but they all agreed he wasn’t in that category of people said to have their feet on the ground. “In practice, however, Ermenegildo Zegna’s feet were planted far more firmly on the ground than the good inhabitants of Trivero were willing to believe.” Although Zegna’s story officially began in 1910 when the enterprising 18-year-old Ermenegildo founded the Lanifico Zegna wool mill in Trivero, Italy, things actually started a little earlier with

his father Angelo, a craftsman watchmaker who diversified into wool weaving on a small scale. Purchasing his father’s four looms and commencing commercial production, Ermenegildo – despite his youth – already had international aspirations for the new company and a vision to create the finest fabrics from topquality wool. The company’s reputation for excellence and Ermenegildo’s gift for promotion – the company was the first to advertise on trains in Italy – soon led to rapid growth, and by the late 1930s Zegna had become an international exporter, with the Zegna Woollens Corporation being set up in New York and the wool mill’s workforce swelling to 1,000 to meet market demand.
Even the austerity around the time of the Second World War provided a point of difference for Zegna fabrics, whose high quality allowed tailors to remake suits by turning the fabric inside out and giving the suit a second life. Ermenegildo’s sons Aldo and Angelo joined the company in 1942 and growth continued, with the number of countries selling Zegna fabrics reaching 40 by 1945. As the brand developed, other innovations like ready-to-wear and made-to-measure ranges and knitwear and sportswear lines followed. And as global demand increased, so did the number of factories – first within Italy and then abroad in Spain, Switzerland, Mexico and Turkey. >>

Label boutiques sited in fashion capitals including Paris and Milan followed, as did product diversification with the launch of Zegna accessories, fragrance, eyewear and even an exclusive collection of fashion underwear. Another initiative was the Ermenegildo Zegna Wool Awards, an annual event established in 1963 to recognise the finest grower of Australian wool, for which Zegna had been a major customer since the 1920s. A second trophy – the Vellus Aureum, for wool measuring 13.9 microns and finer – was added to the awards in 2002, and today entries are received not only from Australia but also from New Zealand, Argentina and South Africa, with a winner being chosen from each country. But it is the label’s history of corporate social responsibility, conducted in parallel to its extensive international success, that truly sets Zegna apart from its peers. Intrinsic to Ermenegildo’s business acumen was the conviction that preserving the natural environment and individual wellbeing are essential to long-term commercial success,

as is maintaining a positive relationship with the community. This saw Zegna instigate and fund reforestation projects and the building of essential infrastructure, including a medical centre and housing around Trivero and the picturesque Panoramica Zegna, a 14-kilometre road linking Trivero with the alpine town of Bielmonte. “He was an ecologist long before the term even existed!” Angelo Zegna, the current Honorary Chairman of the group, has said of his father, Ermenegildo. “I see four forces acting throughout my father’s life. First of all, he was born in the right environment to develop his business aptitudes. There were various small firms competing in a small area. Secondly, he was always determined to get the better of his British rivals by offering creative Italian fabrics with unbeatable quality. “The third force was an exceptionally open mind, especially regarding the social welfare of the territory and redistribution of value to workers. Lastly, there was his fundamentally important relationship with nature, his awareness that
natural resources are limited and that we must protect them.” Ermenegildo’s philanthropy has expanded widely – to the natural world through extensive conservation programs in Peru and through environmental education programs in Italy; to the arts through the ZegnArt Public project, which commissions local artists and exhibitions; and to education and social structure through the Oasi Zegna, a scholarship program that allows talented Italians to study abroad and return to apply their knowledge for the betterment of Italy and its people. This last initiative is said to incorporate and carry forward Ermenegildo’s core belief – that product quality can only flourish where there is a culture of beauty that also respects the environment and local communities – through the contemporary company’s mission. Or, in the words of Gildo and Paolo Zegna of the fourth generation to run the perennially popular and successful Zegna baton: “Our mission is to look to the future and turn our tradition to good account.”

FOR AS LONG as I can remember, shoes have always been a passion of mine. I can vividly recall my first pair of black patent t-bar Mary Janes with a hole punch motif around the edge, that my grandmother sent me from Sweden as a birthday gift for my third birthday. Living in London, writing and styling for fashion magazines, my shoe wardrobe could rival that of Carrie Bradshaw’s, filled with Louboutins, Jimmy Choos, Manolo Blahniks, Gina’s and Sergio Rossis in every style, heel height and colour. Not a single shoe was perfect, however, either the colour was on point and the heel height was wrong, or the shoe looked exquisite but was excruciating to wear. I also discovered that the business was born out of a mutually shared problem. “I'd always liked shoes, but I never loved them because I couldn't find exactly what I was looking for,” she explains. “Either it wasn't quite the right colour, there was an embellishment I didn't like or the heel height wasn’t ideal. When I was travelling, in the same way that you find someone who will make a custom suit for you, I found someone with whom I could commission shoe designs. “My shoe collection became really exciting, and my girlfriends asked me where I was getting my footwear. When I explained, they asked me to create shoes for them too. Concurrently, my two business partners Michael [Fox] and Mike [Knapp] were at Google and they became really excited about the opportunities in online retail. We all came together and Shoes of Prey was born.” In 2009 the trio launched shoesofprey.com, the world's first website where women could design their own shoes. The company broke even at two months, hit multimillion dollar revenue in under two years and today is a global enterprise. To date shoppers have designed five million shoes on the site. Jodie believes Shoes of Prey has had such success, both locally and internationally, as they fulfil a gap in the market.

IT IS TRUE that we live in a fast paced, hectic world where we never seem to have enough time to complete what we need to achieve, let alone have precious moments for ourselves, family, and friends. This familiar cycle then becomes second nature and we become more susceptible to ongoing stress in various forms. So what exactly is stress? It is defined in many terms and is different for each of us, but effectively it is our perceived belief that our coping strategies will be overwhelmed by the demands of certain situations or circumstances which then threatens to disrupt our ability to function on a day-to-day basis. Stress manifests in various ways including physical (changes in heart rate, breathing etc.), psychological (fear, anxiety, worry etc.) and behavioural (irritation, avoidance, aggression etc.) problems. Long term or chronic stress left untreated can become debilitating both psychologically and physically. Contemporary research indicates that ongoing stress can greatly impact upon our health and well-being, with links to a weakening of the immune system, infectious diseases, cancer, respiratory conditions and cardiovascular disease. Stress will often result in response to a stressor, such as conflict, change, frustration, financial or relationship pressures, loss of a loved one and trauma. It is important to identify how we think about and perceive the stressor, as our negative thoughts cause us to have corresponding negative feelings about the stressor. Our bodies then react to these feelings, and subsequently we behave in certain ways

in response to such thoughts, feelings, and physical reactions. Our body is often the best indicator that stress has been triggered when our ‘fight/flight’ system is activated. This leads to a cascade of bodily responses designed to prepare us to either attack or escape from the perceived threat. However, not all stress is problematic and in fact it can be very beneficial. Mild stress can motivate us to achieve our goals and desires providing these are seen as a positive, rather than negative and insurmountable. These include areas such as work, sport, and private/family goals and projects. The good news is that no matter when or where stress arises or whether the stress is short or long term, we can do something about it. The first step in dealing with stress is in becoming more aware of and identifying our stressors (i.e., change, conflict, pressure, trauma etc.) and how we then react (i.e., psychologically, physically and behaviourally) to these stressors. We may not always have control over the stressors that present in our lives, but we do have the ability to change the way we react and respond to them. Identifying the types of thoughts we have and the unhelpful thinking habits that we unconsciously adopt in order to deal with the stressor is important. Thoughts such as believing the worst will happen, thinking we know what will happen, and noticing only the negative aspects, perpetuate our negative feelings (anxiety, fear and worry). These feelings then cause us to engage in unhealthy responses such as avoidance (i.e.
avoiding conflict, using drugs or alcohol, emotional eating) and withdrawal (i.e. reduced socialisation, absenteeism) to name a few. Once we have identified the stressors and the thoughts, feelings, physical responses and the behaviours we adopt, we can then begin to implement specific strategies to not only reduce and manage our stress, but to also minimise its effect on our quality of life. Such strategies include: • Learning to change, challenge or step back from any unhelpful or negative thoughts and feelings. • C hanging unhealthy behaviours such as avoidance by reducing the excessive use of drugs, alcohol, food etc as a coping mechanism. • Engaging in daily exercise. • R egularly using slow calming breathing techniques. • Progressively tensing then relaxing each muscle group in the body as a form of relaxation. • Using guided visualisation and imagery for relaxation. • Engaging in mindfulness activities to be in the present moment. • Engaging in daily meditation. Toothfish with coconut and lime and beach succulents
Serves 4
SWEET POTATO Ingredients 2 large sweet potatoes 40g cumin seeds 40g coriander seeds Salt (I use Pyramid Sea Salt) Olive oil (I use Joseph First Run) Method 1. Peel and dice the sweet potato into 3cm x 3cm cubes (you will need 6 pieces for each plate). 2. Place the sweet potato into a sous vide bag with the spices, a good pinch of salt and a good dash of olive oil. 3. Cook in a water bath at 74ºC for 45 minutes or until tender (cooking for this length of time tempers the spices and renders them edible). COCONUT & LIME DRESSING Ingredients 300ml coconut cream 2 limes (zest and juice) 3.4g agar agar 0.2g xantham gum Method 1. Place the cream in a saucepan with the lime juice and zest (use hard heat to achieve a slightly scorched, nutty flavour). 2. Once it reaches the boil adjust the seasoning and add the agar agar and xantham gum. 3. W hisk for 2 minutes to hydrate the hydrocolloids, remove from heat and allow to cool completely. 4. O nce cool it should be a brittle firm gel. This needs to be blended until smooth (if it’s not spinning in the blender add a little splash of water to help it along). 5. P lace in squeeze bottle and reserve for plating.

TOOTHFISH Ingredients 4 x 130g pieces toothfish (or any white fish) Method 1. Lightly season the skin and flesh of the fish. 2. Using a non-stick fry pan on a low to medium heat, place skin side down and press lightly so the skin doesn’t curl. 3. Once the skin sits flat don’t touch it until you can see nice golden edges. 4. Turn the fish over and place into a 160ºC oven for 4-5 minutes. 5. Remove and reserve for plating.
TO ASSEMBLE Succulents Samphire* Karkalla* Land seaweed* *These three ingredients grow on the tidal shelves of the coastline. Take only what you need when foraging and be sure to wash everything you pick. Also, be 100% sure you know what you are picking. Method 1. Place 3 cubes of sweet potato at the top and bottom of the plate. 2. Place 3 dollops of the coconut and lime dressing around the sweet potato. 3. Place the succulents in the coconut, building it to resemble coral. 4. Add the fish, skin side up and serve immediately.

Chef profile DAYAN HARTILL-LAW, CHEF DE CUISINE, VANITAS RESTAURANT HAVING GROWN UP in the Blue Mountains in NSW, Dayan began cooking for a living at just 14-years-of-age. He went on to forge an enviable international career, with his travels taking him from Australia to the UK, from the Hunter Valley to the Great Barrier Reef. Dayan’s appointment as Chef De Cuisine at Palazzo Versace’s Vanitas Restaurant will see him push the boundaries of creativity by offering a bespoke dining experience. “My style is playful and whimsical at times and at other times it’s just rich and delicious,” he explains. “My ever-evolving menu will celebrate the best in seasonal and sustainable produce available on the Gold Coast and environs.” A perfect example is the featured toothfish recipe which uses beach succulents picked fresh from the sea. “This dish has been with me for several years now,” Dayan says. “It sold over 1,000 servings during the Melbourne Food and Wine Festival using John Dory and hundreds on the Great Barrier Reef using Barramundi. “I created it on an off chance after having to forage for some ingredients. I was able to make something new with limited resources and I love it … it symbolises a time and place for me as the dish is plated up to look like coral reef.”

Tucker time Tony Harper explores the use of native foods in Australian cuisine.
THERE’S A NEBBIOLO vineyard in the Adelaide Hills with the sort of history that makes it an important piece of dirt. These days its fruit is contracted to Laura and Brendan Carter – the vital, go-get-‘em team behind Unico Zelo wines and Applewood spirits. As I write this, only ten days have passed since I sat on a fallen tree in that vineyard as the Carters emptied a bottle of their Okar – a sort of Australian version of Aperol: luminous orange/ pink – into a jug with ice, soda and bits of bloodlime (a blood-orange version of the finger lime) and riberry (the fruit of the small-leaf lilly pilly). And the Okar is steeped with native botanicals. If ever a drink could evoke the Australian bush, this is it: tart and sweet at the same time with its colour and flavour all pulled from within our shores. It was a drink that got me thinking about bush foods: what is available, where can I get them and why don’t I use more of them? My garden is planted to chilies, sorrel, epazote, rosemary, thyme, fennel, parsley, citrus trees, horseradish and Asian tubers, yet I house native bees. Something is out of kilter. Two hundred and twenty-eight years after the first fleet landed we have regressed rather than progressed in terms of eating true Australian food.

The early settlers were forced to bolster their rations with bush-tucker. Today, aside from a few specialist restaurants, all we really have is macadamia nuts, rosella jam, lilly pilly hedging our yards and the surprise appearance of native foods on the occasional restaurant dish. Things are moving, but it’s a slow train. Noel Joliffe has been peddling native foods through his company Joliffe’s Outback for more than two decades and he is the main (possibly the only) source of native foods for Queensland restaurants and retailers. “It has only been in the last few years that we are hearing chefs constantly talking of locally grown/sourced produce, only about 20 years too late,” Noel says. “There has been much attrition of good establishments and good people that have passed despite being at the forefront of native cuisine (Red Ochre Grill in Fortitude Valley for one …).” Noma – four-time winner of Restaurant Magazine World’s Best Restaurant – showed more native foodstuff during its ten-week stint in Australia than all but a handful of restaurants in our history. But it kind of rankles that a Danish restaurant on a fleeting visit is able to catalyse more interest
in Australia’s culinary birthright than anything that has come previously. Brisbane’s West End is home to Tukka, Bryant Wells’ restaurant dedicated to Australian foods. It has been in the same spot for the past 11 years and on its menu you’ll find crocodile, possum, anisata, yabbies, kangaroo, muntries (native cranberries), emu, finger lime, lemon myrtle, lilly pilly, sea celery, macadamias, bunya nuts, quandongs, damper and native herbs alongside more familiar ingredients. In terms of any serious shift towards using native foods Bryant is sceptical. “I think that there will always be staples like corn, potatoes and other vegetables that will be a mainstay of our food,” he says. “But I do think that there will be a continuation of the increase we have seen for want of native foods and flavours. You have to consider that native foods in Australia usually have very concentrated flavours and health properties that allow you to use smaller portions of each item and get a greater benefit.” And Noel Joliffe is quick to point out that these foods shouldn’t be thought of as alternatives. “We would prefer that the native foods not be used as a substitute but rather used as intended

to complement the rich array of protein available to us all – game meats and seafoods in abundance. “Quandongs, riberries and Illawarra plums marry perfectly with beef and game, lemon aspen berries and myrtle with seafood fillets and the native equivalent of the widely used banana leaves our very own paperbark,” Nathan says. I’m not suggesting that we all radically change our diets to

include only native foods. Nor am I suggesting that you – as I’m about to – reconfigure your gardens to house more true Australian plants and foods. But it would be nice to think that a few of you might put your toes in the water and try. Why not start with a bottle of Okar and a handful of blood-limes and riberries for a startlingly refreshing bush-cocktail.

Can’t cook, won’t cook Patsy Rowe and the Saga of the Ceramic Cook Top. BILL AND I did three wonderful cruises last year so when Christmas came round he thought we should stay home. No immigration queues or freezing planes … we’d stay at Edwina’s new beach house on the Sunshine Coast. I was quite happy about the beach house idea – but the one I had in mind was in Bali and came with a butler, cook and daily maid. Bill scoffed. “No need to spend that kind of money. I’ll let Edwina know we’re taking her place.” The discussion seemed to end at that point and a week later we drove in silence to the Sunshine Coast as I sat hot and sweaty, wedged between a box of mangoes we’d picked up en route and the fishing gear, wine, groceries, my favourite gin, satin pillow, sheets, towels, iPad, medication, floaties and togs. We arrived mid-afternoon and were still unpacking at Gin and Tonic time. I suggested we might try one of the interesting little Italian ristorantes we’d passed but Bill pointed out we’d brought a lot of food so we’d better start eating it. I’d intended to keep the meals simple – after all in my vocabulary ‘cook’ was never a verb and we were on holidays – so I peeled the potatoes for a healthy home-made potato salad and put them in a saucepan on the ceramic cook top. The cook top showed a red light with the word ‘LO’. Wondering what that meant I rummaged in the drawers for an instruction book.

When I couldn’t find one I stopped to pour a Gin and Tonic and Google the instruction manual. Google informed me that I simply had to touch the ‘LO’ sign for 10 seconds. I was so pleased it was going to be easy. I touched. Nothing happened. I stroked. Nothing. I pushed. I circled my finger. I changed fingers and repeated the process. Absolutely nothing. I took a long swig of Gin and Tonic. Perhaps my hands were sweaty. I rinsed and dried them and touched the ceramic cook top again. Remaining calm, I stroked, pushed and circled. Nothing. I returned to Google. Perhaps my hands were oily. I took the cut lemon from my Gin and Tonic and immersed my index finger, then I approached the cook top with new determination. I did my Yoga breathing to centre myself and touched. The red light went off. Encouraged, I touched the control that said ‘On’. Nothing. I rubbed my finger around in the half squashed lemon and touched the stove top again. A panel flashed before my eyes. Google mentioned nothing about a panel. I rushed back for further instructions. Perhaps the cook top required explicit instruction for each step of the cooking process. Google informed me that when the control panel comes up I must ‘touch the exact position where saucepan placement is required’.
Gingerly, I lowered the saucepan to the cook top. Nothing. I kept my Yoga breathing going but the fact remained I was fast running out of lemon. I Googled again. It seems I needed to select the temperature. Of course the poor cook top couldn’t be expected to select the temperature. What was I thinking? I had the option of 1-10. I selected 7 as being a good round figure. Nothing. I poured another Gin and Tonic. I Googled again. Yes. I had the panel up. I had temperature selection under control. I checked saucepan placement. I put my finger in the water. Stone cold. I rotated the saucepan gently hoping to activate the cook top. Perhaps that particular area of the cook top wasn’t working. She’d forgotten to tell me the cook top only operated with induction saucepans … which she hadn’t yet purchased since the beach house was new. I abandoned my Yoga breathing. Bill was circling the kitchen. I wondered if he was hungry enough to eat raw potatoes. He’s pretty easy as far as food goes but I felt raw potatoes were probably out of the question. Perhaps Edwina had baked beans. He’s always been partial to baked beans. Or we could drive back to one of those little ristorantes we’d passed.

Back to basics Bellwether wines may come in small batches but they make a big impact. WORDS TONY HARPER

BY NOW it’s a familiar story – high-flying Australian corporate winemakers leaving the glitz for something smaller, more hands-on and … their own. And it makes quite a roll-call: John Duval, Steve Pannell, the irrepressible Kerri Thompson, Samantha Connew, Glenn James, Robin Day. Perhaps not familiar names to all readers, but to folk in the wine game it’s a who’s who. Not so many years ago Sue Bell was Senior Winemaker with what was then Constellation Wines – a giant. Her playground was a sea of
Those vineyards lie in Coonawarra, Tasmania’s Tamar Valley, Heathcote, Wrattonbully, and The Riverland. The Bellwether magic happens at Glen Roy in South Australia. For most of its 140-year history, Glen Roy was a shearing shed. It sits on a property hugged by the Riddoch Highway, the main road between Adelaide and Coonawarra. Sue and her business partner purchased the property in late 2008. Today there are no sheep,
stainless steel and oak barrels, a well-kitted laboratory and countless underlings. The annual crush lay somewhere between 12 and 15 thousand tons. Today she makes tiny batches of wine – under the Bellwether label – in bins, with the help of fellow-winemaker, Steve Brown. This year they might crush 40 tons. There are barrels in the winery, but they are as precious as children, and the laboratory is little more than a shelf with a couple of basics – thermometer and hydrometer. It’s low-tech. Bellwether has no vineyards. Instead – and this is an increasingly common scenario – there are handshake agreements with like-minded growers, long-term allies who value quality and share a view for the future.
but their legacy remains in the lanolin-stained floors and the sorting table Sue has converted for dining: a handful of Scottish Highland Coos has taken their place. There’s a rustic courtyard out near the old pens and a campground – open to the public – in the pasture. The shearer’s board has become part of the cellar door and its surrounds house the fermenting wines and sleeping barrels. There’s a lavish garden of herbs and vegetables at the front, an impressive kitchen in the heart of the building and a new but sympathetic amenities block for the campers. Galahs, kookaburras, sulphur-crested and black cockatoos screech their ownership of the land. Coonawarra cabernet is arguably the linchpin of the Bellwether brand. The grapes come from
Mike Wetherall’s property near the Coonawarra township and from them Sue and Steve craft their flagship red. It is equal parts finesse and generosity, built to age. And as it ages its hallmark blueberry and cassis fruit give way to softer, earthier notes of coffee grounds, chocolate and forest floor. Right now the 2009 is in a great place, neither young nor old, but complex, rich and quite majestic: it has years to go. Chardonnay is sourced from Jan and David Jenkinson’s property in the Tamar Valley southeast of Launceston. It’s cool climate stuff – citruspith, taut lines – with an overlay of winemaking artifact from its wild yeast ferment in barrel: fine, but textural and multi-layered, and it gets better with time in a good cellar. Then there’s the Ant Series. “The movement of ants is an indicator of a change in the weather,” says Sue. “The Ant series range of wines inspired by artist Dan Tomkins is our ‘climate change’ range, a Bellwether of climate change. “Let’s face it, sustainability in terms of the environment, social, economic, and spirit is key to the survival of a business. This range would not exist without the inspiration, foresight and faith of my growers.”

There’s Ant Series Riesling, again from Tasmania’s Tamar Valley, but given the sort of treatment that would send most corporate winemakers into nervous convulsions: wild yeast ferment in large, old oak. Happy days. Vermentino comes from the Chalmers vineyard in Heathcote. In vinous terms, Australia owes the Chalmers family a huge debt, which is only likely to increase as global warming and a parallel interest in Mediterranean varieties gather momentum. The Chalmers are responsible for finding and caretaking a great number of those varieties. Bellwether vermentino is a richer, more textural version than most: still crunchy and bright, but grown and treated with respect.

Then there’s Bianco d’Alessano, a variety native to Puglia – the heel on the boot of Italy – transplanted to Australia’s Riverland; Nero d’Avola (a Sicilian grape), also from the Riverland, is crafted into a pale, dry, savoury rosé; Tempranillo comes from Wratonbully (juicy and bright but also savoury) as does the Shiraz, Malbec blend and Montepulciano, originally from the central east of Italy, is sourced from the Riverland. It’s an eclectic bunch. There’s not a great deal of any of them, but that’s the point. “It takes you back to how wine was made originally. It's a little bit like people making tomato sauce or vegetables, it was something that happened in people's backyards and sheds.” And when you taste the wines you can easily sense that handcrafted, small-batch character. Not that they are in any sense rustic; Sue is far too experienced for that. But they are individuals that talk of their grape, their origin and their maker in equal measure.

MOTORING is in an era of change where Sport Utility Vehicles (SUVs) are increasingly taking the space in our garages once used by traditional sedans, hatchbacks or wagons. Sales figures tell the story of booming SUV popularity in every size segment from small to large. We’re used to premium offerings from Mercedes-Benz, BMW, Range Rover, Porsche, Audi and so on, but further proof of a fundamental trend is coming with the arrival of SUVs from super-luxury or sports makes that once would not have dreamed of putting their badge on a multi-purpose wagon. Could W.O. Bentley, Henry Royce, the Maserati brothers or Ferruccio Lamborghini ever have imagined selling such vehicles? (Well, Lamborghini kind-of did with the Hummer-like LM002 from 1986.) For those who want super-luxury, performance and prestige in a practical all-terrain vehicle, the recent Geneva International Motor Show saw the debuts of three super-SUVs that are headed for a showroom near you during the coming year – the Jaguar F-PACE, Maserati Levante and Bentley Bentayga. And if you can wait a little longer, there will be offerings from Rolls-Royce and Lamborghini. Goodness me, the concept of a Lamborghini luxury off-roader … that excites the senses. In the meantime, here’s what to expect from Jaguar, Maserati and Bentley …

JAGUAR F-PACE The first Jag wagon arrives in Australia during the September quarter of this year, with a range of models priced from $74,340. MASERATI LEVANTE The Maserati Levante wins my approval as the best-looking SUV yet. It incorporates all the key styling cues of its sedan and coupe siblings into an elegant but sporty wagon. Complementing the existing Quattroporte, Ghibli, GranTurismo and GranCabrio models, the Levante is expected to be the most popular Maserati when it goes on sale here next year. Prices should open near $200,000. Maserati says design, exclusivity and performance are the key characteristics describing the Levante. The interior finish includes premium materials from leather to Ermenegildo Zegna silk, made in Italy by the Zegna wool mill with a patented process.

Although it’s a wagon, the body is sleekly styled and has a drag (wind resistance) coefficient of just 0.31 – as good or better than many sports cars. The Maserati SUV is based on the Quattroporte and Ghibli sedan architecture. Sophisticated suspension – double-wishbone on the front axle and multi-link on the rear, combined with electronically controlled damping, four corner air-springs providing five dynamic ride levels – promise genuinely sporty roadholding. It has the lowest centre of gravity in its class, perfect 50:50 weight distribution between front and rear, high levels of dynamic torsional and flexional stiffness and a mechanical self-locking rear differential as standard.
Ride-height adjustment should ensure optimum suspension performance and occupant comfort whether on- or off-road. The Levante is fitted with a 3.0 litre V6 twin-turbo petrol engine with the choice of two outputs, or a 3.0 litre V6 turbodiesel. Maserati’s ‘Q4’ intelligent all-wheel drive system can transfer torque between the axles instantaneously when required and is coupled with an eight-speed automatic gearbox. In terms of performance, the premium Levante S (320hp) covers 0-100 kmh in 5.2 seconds and has a top speed of 264 kmh. >>

BENTLEY BENTAYGA Purists were shocked when Bentley not only announced its SUV project but revealed a dumpy prototype that did nothing for the make’s image. Happily, the production model revealed in Geneva finally looks like a real Bentley, even if a resemblance to the prototype remains. The Bentayga has high ambitions. You’ll see it at the best golf courses and hotel porticos but early reports say it’s genuinely capable of tackling the great outdoors – in supreme luxury. Like the Mulsanne, Flying Spur and Continental models, the Bentayga interior is swathed in high quality materials including quilted leather, fine wood veneers and ankle-deep carpet.

Maximum torque of 900 Newtonmetres would be enough to tow a locomotive over a mountain. Claimed performance – if you must ask – is 0-100kmh in 4.1 seconds and a top speed of 301 kmh. That is some SUV indeed. Expect to pay around $420,000 when this luxury landship arrives here during the June quarter.

MARITIMO After a hugely successful launch of the M65 at SCIBS 2015, Maritimo will launch the first M61 cruising motor yacht at the 2016 Show. Big boat enthusiasts are expected to embrace the new M61 which requires less berthing space than its larger sibling. It has almost all the same features, albeit proportionally smaller, and is priced under $2.5 million. “Like the M65 this is a serious motoryacht and the interest we have had in this new model has been tremendous,” said Maritimo Sales and Marketing Manager Greg Haines. “The boat comes as a three-cabin, three-bathroom configuration or four cabins and two bathrooms or

The decision about where to stay comes next, with all ages, family types and budgets being catered for. There are the beautiful big brand resorts located on the beach at Nusa Dua or perched high on cliffs overlooking the Indian Ocean. There are fun B&Bs for backpackers in Kuta, mid range hotels and villas in Seminyak or healthy spa and yoga retreats in Ubud. The choice is vast. After a twelve-year gap I recently had the opportunity to return to the Island of the Gods and found it completely transformed, full of surprises and thoroughly enjoyable. The first thing that’s changed is the airport. In 2013 Bali airport (Ngurah Rai) underwent a major expansion. Lengthy queues are still the norm on arrival but once through immigration and when leaving the departure lounges, the shopping is great. And more shopping awaits in Denpasar itself. One of the favourite pastimes for visitors is walking the streets of Seminyak discovering lovely fashion boutiques or homeware stores.

Travellers to the island will also find stunning beaches, wonderful surfing, terraced rice fields and a wealth of historical sites, temples, art and culture that Bali has long been famous for. It is also the perfect place to just relax and unwind. Happily I stayed in the Belmond Jimbaran Puri, a small (maximum 150 guests) five star resort, with traditional architecture situated right in the middle of the best bathing beach in Bali. The accommodation is designed in a typical Balinese village style, ranging from spacious beach cottages to walled villas, complete with their own 6.6 x 5 metre private pools. The villas at the Belmond Jimbaran Puri are huge – 350sq. metres. Cool marble floors, sumptuous teak furnishings and elevated ceilings decorate the living area. A high-tech entertainment system blends subtly with traditional Balinese art. Each bedroom enjoys en-suite facilities so you can soak in your black stone tub or refresh in the powerful indoor rain showers.
The cottages, whether a garden or beach view, are large too – 100sq. metres, with a kingsize bed and a living room with either a private tropical garden or a spacious terrace overlooking the ocean. Belmond Ltd may be an unfamiliar name to many, but it’s a hotel and leisure company that operates high-end hotels, train services and river cruises around the world. Show court Gold Coast tennis coach Nathan Waddell and his mixed doubles partner, Kate Maddock, shared a very special Australian Open experience.

IT’S A BEAUTIFUL summer morning in early December 2015, as we travel up to Caloundra on Queensland’s Sunshine Coast for the Regional qualifier of the Win-A-Wildcard competition. Hosted by Tennis Australia, the mixed doubles event is played in the new International Fast 4 format and features A, B and C grade levels. My tennis partner Kate Maddock and I are eager to win the C grade competition … and the chance to score a trip to the 2016 Australian Open to take on the other winners from each capital city in Australia. After a few hours of serious play we had won the series of matches that we needed to qualify. Yes! We are off the 2016 Australian Open to not only play but to receive an experience that money just can’t buy – the chance to receive full player accreditation and live the life of a touring tennis player for the day. Fast forward seven weeks to late January and we were on the plane to Melbourne. We met all the other players from around Australia at City Entrance on the final Saturday of the event to receive our official player accreditation. Then it was off for a tour of the tournament and player operations where we were shown the inner sanctum that only players and officials can access. From the players’ café, where we saw

the likes of Martina Hingis, Kim Clijsters, Wally Masur, Todd Woodbridge and Roger Rasheed, to the player’s’ change room facilities; from stat central (where it was wall to wall with laptops and miles of computer cables processing all the stats from each match and from the annals of history) to the press area, where the players are interviewed by the local and international media and press after their respective matches. Here we were met by Australian legend, former Davis Cup player and current Channel 7 commentator, John Fitzgerald. It was so gracious of him to give us about 30 minutes of his time, discussing topics from world No.1 Novak Djokovic to upcoming star Nick Kyrgios and Lleyton Hewitt taking over as 2016 Davis Cup Captain. We were also taken down to the players’ entrance to Rod Laver arena. While we were not able to access the court, we managed to do the Walk of Champions, seeing pictures of all the past champions of the Australian Open and walking the same path that players like Roger Federer would have taken when leaving the court and heading for the change room facilities. We had access to the players’ change room facilities too, allowing us to get ourselves ready for our respective matches and being able to store our gear.
Once the tour was over, we all gathered in the players’ café for a bite to eat before receiving our schedules for the day and commencing the matches that we were there to play. We were playing on Courts 11, 12 and 13 at Melbourne Park … ‘You beauty we actually get to live out a lifelong dream of playing at the Australian Open … how amazing’. Kate and I were first on Court 11, warming up against our opponents, the central umpire taking his seat above the action, the lines judges in place and the ball kids ready for action … ‘Waddell/Maddock have won the toss and elected to serve, Play’. I was extremely nervous but it felt like I was at home as the court is the same size as the one we play and train on. Time to serve … BOOM. Ace down the middle to start our match at the Aussie Open… from there the rest was a blur. We went on to play four matches in the Fast 4 format, losing all our matches, two of them in deciding point tiebreakers where the match could have gone either way on the bounce of the ball, oh so close. At the culmination of our matches we were buzzing and on such an incredible high, yet we had more to come.

Tennis Australia graciously gave all who participated in the day two tickets to one of the best ladies finals in a very long time. Serena Williams (outright favourite, World No.1, 21 time Grand Slam champion and possibly the greatest female to have played our game) versus Angelique Kerber from Germany – No.7 seed and in her first ever Grand Slam final. The match was an absolute epic. Kerber took it to Williams and then some. After grabbing the first set and attacking in the second, Serena managed to take the second set in a close tussle, but Angelique wasn’t done with yet. The third set was a fantastic array of shot making and athletism from both players, but there can only be one winner. A new Grand Slam champion, Angelique Kerber. Finally someone had broken the dominance of Serena Williams. What a way to end quite possibly one of the greatest days in my tennis life.

IT MAY SEEM like a huge leap from snapping skateboaders to capturing couples on their wedding day but for photographer Jashan Prasad it was an easy transition. “As a skateboarder myself, I always loved taking photos of my friends skating,” Jashan explains. “A bad knee injury put me out of the sport for two years, so that’s when I stayed behind the lens and photography began to take off for me. “One day my cousin asked if I would shoot her
“If it rains or is really windy, you often have to think outside the box in regards to the way you stage the shot or where you set up,” he explains. “Sometimes what began as a challenge ends up becoming the life of the photograph. “We recently we set up a shoot at the amazing Evergreen Garden Venue on the Gold Coast, using local vendors in the wedding industry. “The resulting series of images, including the shot you have used on the cover, are some of
wedding and as soon as I did I realised that was the type of photography I wanted to be doing.” Jashan then set about gaining the skills to forge a career in this competitive field. “I knew a company in Sydney that specialised in weddings so within a month I moved down there to work for free just to learn the industry. “Eventually I moved back to Queensland and have been concentrating on weddings ever since. I still love to shoot skateboarding whenever I have a chance, although with my business taking up most of my weekends, it has become quite rare to find the time.” Now based mainly in Brisbane and on the Gold Coast, Jashan admits his most creative work is often a result of inclement weather or other challenges.
