Honouring HonorÉ Each year Montblanc creates a writing instrument which is reflective of the characters within the chosen writer’s novels. think pink Did you hear about the two giant boobs gliding across the Antarctic? While this may sound like the opening line of a joke it is actually the premise behind the challenging and charitable Pink Polar Expedition. words Rhonda Oxnam
One of the first things you learn as a journalist is to always remain impartial, but sometimes stories touch your heart and you find yourself personally invested … this is one of those stories. It involves one very brave lady, a community-minded adventurer and a whole host of support characters with a common goal … to raise $1 million for the McGrath Foundation and to increase breast cancer awareness. The lady in question is journalist and former Hot Tomato News Director, Kate Carlyle, whose experiences with breast cancer were the inspiration behind the Pink Polar Expedition, a treacherous crossing of the Antarctic which fellow Gold Coaster Geoff Wilson will undertake in November (but more about that later). Listening to Kate bravely recall her journey through two bouts of breast cancer, a double mastectomy and the removal of her ovaries, is both heartbreaking and inspiring. “My life changed the day I found that first lump in my breast,” she admits. “But sitting there in the doctor’s surgery being told I had breast cancer was such a reality check.” Kate was just 31-years-old at the time, and while the news was certainly confronting it was also something of a relief. “When I had the first diagnosis I was actually a little bit relieved,” Kate explains. “I know that sounds strange but I’d been going to the doctor for about 12-15 months saying ‘I’m so tired … there’s something wrong’ so it was good to finally have an answer.” Following her diagnosis, Kate underwent the first of many operations to remove the cancer and reconstruct her breasts. “The initial operation revealed five tumours,” she says. “Mentally I was already prepared for a mastectomy, so one month after the first operation I had nine hours of surgery and had both breasts removed. “It was really quite empowering,” Kate says of her decision. “You can’t control cancer or what it does to you but disfiguring my body to save it was one of those moments I’m very proud of.” Sadly for Kate, just two and a half years later, in December 2012, she found another pea-sized lump in her chest and immediately knew the cancer was back. “The chance of a second diagnosis after having your breasts removed is less than two per cent but as soon as I felt that lump I just knew,” Kate reveals. More surgery, chemotherapy and radiotherapy followed, with Kate’s medical team advising her to ‘take a week or two to just go and lay on a beach somewhere’. While the sun and sand held no appeal, Kate did decide to fulfil a long held ambition to visit Antarctica. “At just 34 I certainly wasn’t ready to start ticking things off my ‘Bucket List’ but Antarctica has always seemed so isolated and mysterious and beautiful, and I’ve always wanted to go there.

“I wasn’t strong enough at that time to undertake the ten day journey by ice-breaker to set foot on the ice, so I decided to do the second best thing and fly over it,” Kate explains. “While it was a very expensive journey, it was also something I really, really wanted to do.” Call it fate, call it Karma, call it what you will … but as Kate’s fingers hovered over the key to book the flight her phone rang and on the other end was Geoff Wilson, a local veterinarian with a compassionate nature and a thirst for adventure. Many of you may know him simply as ‘Geoff the Green Cross Vet’ … he has practiced locally for years and his professional advice is often heard on the Hot Tomato radio station. In fact, this is where Kate and Geoff’s paths initially crossed. Away from the surgery Geoff has earned his stripes as an adventurer. He has crossed the Sahara and Simpson Deserts, completed the first kite crossing of the Torres Straight and embarked on a series of challenging journeys in his role as owner of 5th Element Expeditions. Inspired by Kate’s courageous battle, Geoff had decided to devote his next adventure to breast cancer. “When we first talked about it I said I’d be happier if this was about breast awareness rather than breast cancer,” Kate says. “There’s a lot of fabulous work being done with regard to the actual disease but I’m a really practical person and I’d much rather the focus be on awareness.” Which brings us to the mission itself. The Pink Polar Expedition will see Geoff set out on a gruelling 3,000 kilometre, 90-day crossing of Antarctica, using skis and kite power to traverse the ice. In order to promote the charitable aspect of the expedition he will be hauling his supplies on a specially constructed ‘boob sled’ which features a pair of giant Kevlar breasts modelled on that particular part of his wife’s anatomy. >>

While Geoff intends to complete the task solo and unassisted, he will have photos of his family attached to his skis, ensuring they are with him every step of the way. Kate also plans to fulfil her part of the bargain and be there on the ice to see her ‘very dear friend’ off on the start of his journey. While she initially had some reservations about Geoff’s decision, a conversation over a simple Chinese meal one Friday night a few months ago made Kate realise just how important the mission was to both of them. “I was saying to Geoff ‘I get that you can bulk up because you are going to lose so much weight during the journey, I get that you can train hard because you are a determined soul, but how the hell are you going to cope psychologically?’,” Kate recalls. “And he turned to me and said ‘Would you like to tell me what the past three and a half years of your life have been like?’ I said ‘Challenging’ … ‘And?’ … ‘Lonely’… ‘And?’ … ‘Cold’ (the cold of having part of your body removed, the cold of having new implants to try and rebuild your body, the awful icy cold of chemo therapy drugs running through your veins) and that was the moment where I thought ‘OK I’m really meant to be involved in this’. Together Kate and Geoff are a formidable team … determined to fulfil their dreams to increase breast awareness and raise much needed funds for the McGrath Foundation … but they also have an army of friends, family and neighbours running various events such as the Pink Polar Gala (see breakout box for details) to help reach the $1 million target. “There is a very clear line between the expedition costs which will be either self-funded or paid for by corporate sponsorship and fundraising where 100 per cent will go straight to the McGrath Foundation,” Kate explains. “I have been incredibly blessed to have had access to a breast care nurse, privately, throughout my surgeries,. There are over 14,000 women diagnosed with breast cancer in Australia every year and many of them don’t have the

same access, and that’s a terrible shame because I know what a difference they can make.” The Foundation’s other area of focus is education of breast awareness for young women under 40. And, according to Kate, that’s equally important. “I sit here today because I was breast aware. I felt something unusual and I got it checked out. I didn’t get the answers I wanted first time around so I went back … that’s taking responsibility for your health and that’s what the McGrath Foundation is teaching our women.” When asked what she would like to get across in this article, Kate’s response is typically selfless. “We’ve got a great opportunity here to spread the word,” she insists. ”On a personal level this is about the ripple effect of my experience with this disease being a really positive one. “I feel that with my professional background, and my ability to communicate, I can share my story with others … and if by doing so it makes a difference to just one person then it’s all worth it. “As for Geoff and I, we are just two Gold Coasters trying to make a difference by using his love of adventure and my adventures with breast cancer to try and make a positive impact.”

What is your background? I have a Bachelor of Business in Tourism from Southern Cross University and have worked in hotels since graduating in 1996, joining InterContinental Hotels Group (IHG) in 2002 at Crowne Plaza Coogee Beach in Sydney. My last five years were spent in the Northern Territory, firstly in Darwin where I was Executive Assistant Manager and most recently at Crowne Plaza Alice Springs where I held the post of General Manager for two and a half years. I am living in Sanctuary Cove with my husband Jeff and my children Cooper and Grace. How did you get into the hospitality industry? Right from my first job I knew that I enjoyed working with people and I loved travelling so when the time came to choose a university degree, I chose a Bachelor of Business in Tourism as I thought that would give me lots of options across both the Tourism and Hospitality industries. I worked at my local pub while I was still at school with my first hotel job at Hotel Nikko Darling Harbour as a Banquet Attendant during my university holidays. What attracted you to the role at Sanctuary Cove? This is an iconic Australian resort and a significant addition to the IHG portfolio as we are introducing the InterContinental brand to Queensland and this is our first InterContinental resort in Australia. It is very exciting to have the opportunity to lead the team through this

re-brand and on a daily basis showcase the brand to our guests. What do you love about your position? I really like the variety my role entails. A day might have me revising sales and marketing strategy, reviewing financials, meeting with guests, conducting a risk assessment and holding a coaching session with a colleague and then the next day will look totally different. What is the most challenging? There are not enough hours in a day! How do you balance family life with your position as General Manager? I am very fortunate to live on-site at the resort which means I have no travel time. I try to be home each night to read the kids a story before bed, however, if I have an evening event I am close enough to be able to pop home and see them before the event starts. I also ensure we have some quality time together each weekend, which generally involves a theme park! How have you and the family fitted into the Sanctuary Cove community? We love living here and really enjoy the community feel. It is wonderful to be able to walk through The Village and see so many friendly faces. The children love riding their bikes and scooters around and we love the variety and quality of the restaurants and cafés. I have also recently joined the Sanctuary Cove Running Club which is proving to be lots of fun! How do you relax? My down time is spent with my family or exercising. We love the beach, going for long bike rides and the kids are mad about the theme parks. My husband and I love dining out
together or with friends and I try to fit in a run most mornings. I also play in a mixed netball team with some colleagues from work. You must get to meet some amazing people and see some interesting places? I have had many famous sports people and entertainers stay with me in my Australian properties, however, working on a super yacht in the South of France provided many opportunities to meet famous people such as Valentino Rossi, Bruce Willis, Pierce Brosnan, Kylie Minogue and members of various Middle Eastern royal families. St Tropez is most definitely a celebrity hot spot! Your work involves a lot of travel. Do you have a preferred destination? I have had the opportunity to travel to and experience so many different and diverse countries I would really struggle to name one preferred place! France will always hold a special place in my heart as I met my husband while working in the French Alps. I love Turkey and Morocco for their food and incredible culture, but also find myself being drawn back to South East Asia, again for the food, but also for the landscapes and generous kind-hearted people. I also really enjoy snow holidays and have a trip to Niseko in Japan planned for January with my family. Is there a particular place on your travel ‘bucket list’? I have never travelled in Central and South America and have a burning desire to do so. My children are a little young to appreciate those countries at the moment, so that adventure will have to stay on the ‘bucket list’ a while longer unfortunately!

For the first time in my adult life, I have reached a twofold sartorial dilemma; I feel like I have nothing to wear in my existing wardrobe, and I’m not sure how to update my looks for the coming season? The reason for my dilemma is the exciting news that I am pregnant with my first baby, due in August, which has yielded a catalogue of crazy changes to my figure in the past seven months. Needless to say, these oscillations in figure and weight are definitely not conducive to fashion-savvy styling … or so I thought! I have realised that I simply need to change the focus of my styling from the clothes to the accessories. In the past my garments were meticulously edited to take centre stage with accessories a mere highlight, but now the tables have turned. I now have a wardrobe of classic, wellfitting basics that can accommodate a fluctuating figure and create the perfect backdrop for showstopping fashion-forward accessories. My new capsule wardrobe of pregnancy and post-pregnancy clothing (I cannot stand maternity wear) includes the James Perse lifestyle collection of cotton jersey ruched pencil skirts, tees, tops and dresses in neutral grey and navy and garments from Sacha Drake’s Stretch Solutions range including the adjustable maxi dress, ultimate dress, reversible tunic top and seamless trousers (all in black). With this sartorial paradigm shift I realise that I need to arm myself with a serious accessories arsenal. Who better to consult on the accessory trends for spring and summer than Brisbane’s experts in the field: Lucinda Kokoris, buyer for Jean Brown, Claire Campbell, Owner and Director of Maryon’s, and Shannon Gunn, designer and cofounder of Tom Gunn. With Marilyn Monroe’s famous quote ‘Give a girl the right shoes and she can conquer the world’ fresh in my mind, I fire my first question at the three well-heeled experts. What will be the key shoe trends for Spring/Summer? “Pointed toes are having a revival, which we’ve seen at Saint Laurent, and the success and popularity of Valentino’s kitten heel styles looks set to continue,” Lucinda replies. “Spikes and studs of all shapes and finishes have taken centre stage, and metal detailing is a definite trend. Metallics will be key for summer sandals, moving away from the heavily crystal embellished styles we’ve seen in past seasons. Not to mention, we are all thankful that Spring/Summer 2013 is not all about the sky-
high heel, [this season] there are plenty of chic lower-height heels on offer too.” “Heels are coming down to a very ladylike height and wooden wedges are still on trend for spring and summer,” Shannon confirms. “Beautiful neutrals like biscuit leather paired back with statement colours of reds and electric blues and sumptuous textures, such as ponyskin and snake, will be big this season.” According to Shannon, spring and summer is the time to wear colourful shoes! “One of the key pieces in the Tom Gunn range this season is the Herman loafer made of beautiful Buttercup Yellow snakeskin. I’ll be wearing these back with denim cut-offs, a white silk blouse and a gorgeous colourful silk scarf for off-duty chic,” she says. “Summer is always exciting, because there is something for everyone,” Claire says. “My favourites are the tan Tod loafers (for pure Italian luxury), Robert Clergerie chunky heels, Givenchy stiletto leather peeptoe booties and metallic leathers this season. However, retro prints, Celine’s pointy stilettos, Emporio Armani transparent perspex pump and the forever-loved gladiator sandals are absolute standouts too.” Both Claire and Lucinda believe that statement necklaces are the essential jewellery trend this spring and summer, adding interest, colour and texture to everything from a basic white t-shirt to a striking evening dress – the best part is one

necklace can do both jobs. This season Claire will be turning to Tom Binns and Chelsea De Luca statement necklaces as ‘a great and easy way to spice up any outfit’. Lucinda is opting for the Oscar De La Renta stylised bold aquamarine neckpiece and Saint Laurent gold tassel necklace. Equipped with this information I know that I am right on target with the two statement neckpieces I am coveting this season – the playful neon Lasso collar and the elegant Cenote neckpiece both by New York based designer Assad Mounser (available at Samantha Ogilvie). Another emerging jewellery trend Lucinda alerts me to is ‘a focus on metals, and wearing pieces like armour, a great leather cuff with signature hardware detailing as seen from Saint Laurent and Valentino can be stacked as daytime essentials’. However, Claire’s everyday essentials when it comes to wrist adornment are bunched up wristbands (such as Chan Luu) with a sensational watch. “Watches are a passion of mine … they are more important than jewellery,” she says. “Elle MacPherson is still strutting her big Rolex Daytona and boy does she rock it well!” If a new Rolex is out of your price range Claire suggests heading to Brisbane Vintage Watches, as a second-hand vintage watch is ‘totally cool too’. Finally, Lucinda and Claire educate me on the key handbag trends for spring and summer. It seems that the zeitgeist is moving away from voluminous, oversized bags, with a more structured, refined approach taking its place. Miniaturised versions of our favourite handbag shapes are popping up at Celine, Balenciaga and Proenza Schouler, and statement clutches have become more spacious, proving that they can go the distance from day to night. Navy has become the ‘new neutral’ overnight, while monchromatic black and white as well as gunmetal metallics are key hues. Mirroring the shoe trends, metal, stud and chain embellishments are adorning bags and rather than over-emblazoned logos and branding, fashion houses are using this hardware as a signature, which makes for a cleaner, more understated look. So how will these three ladies be accessorising their Little Black Dresses this season?

Lucinda – “The LBD can be taken to new heights this spring season with the fabulous Christian Louboutin Pigalle Spikes pumps in Rose Paris (the name of the colour says it all!) paired with a MAC lipstick in a co-ordinating hue. For some texture and fun, give a nod to the holographic trend by adding the Christian Louboutin Pigalle clutch in a purple glitter leopard print and turn to New York’s Miriam Salat for some elegant arm candy. A spritz of Tom Ford’s new parfum, Café Rose, will never fail you.” Claire – “I’m in love with my high heel leather peeptoe booties by Givenchy. They toughen up a ladylike dress, as do my dark burgundy nails, a metallic clutch and bold jewellery.” Shannon – “My mantra is accessories make the outfit. Fabulous statement shoes, layered strands of turquoise, an orange-red lipstick and a Tom Gunn clutch will make an LBD stand out.” My exciting new journey of impending motherhood has opened up a whole new world to me when it comes to staying on trend. Moreover, this world of trimmings, and accoutrements is not only fabulously fun but also practical and comfortable. spice of life Tony Harper makes the most of the cold winter days by warming up with A flavoursome jungle curry. It’s always seemed a little topsy-turvy to me, how most of the world’s seriously hot foods – curries, moles, and chilli-laden salads, soups and sauces – lie in countries between the two Tropics: hot lands. When I visit Malaysia and Thailand, and if I ever manage to visit India, Sri Lanka, Mexico or any of the other chilli-rich countries, I do and would immerse myself in every possible morsel of sultry fare. But I tend to think a cold beer to be far more appropriate. It’s when the cold weather hits that I really start craving the stuff and midyear is a time when my kitchen is fragrant with the spice of whatever has grabbed my attention; this winter it seems that kaeng pa (jungle curry) is my main obsession: ridiculously hot, pure and energising. Jungle curry is native to the forests of northern Thailand where coconut palms are scarce so, unlike most Thai curries, it contains no coconut milk (great stuff for dieters!). That lack of coconut milk is one of the reasons that the heat of the chillies is so apparent and good examples have a very crystalline quality to their aromas and flavours; each ingredient can be smelled and tasted so there is a real skill to cooking them well and achieving the right balance. David Thompson (a spectacular restaurateur, author of two brilliant books; Thai Food and Thai Street Food, and probably the most authoritative voice on Thai cuisine worldwide) writes “ … the end result should be a sharp, hot, salty and pungent curry.” Which brings me to my inevitable gripe. Jungle curry is a dish that doesn’t sit comfortably with compromise. Its simplicity and transparency don’t leave room for shortcuts or imbalances; without the heat it can seem insipid and plain; if sub-standard stock is used for its liquid the whole dish will be weak. Unfortunately I seem to encounter more sad efforts than good. Perhaps some Australian Thai restaurants feel the need to make more gentle versions in deference to the delicate Caucasian palate. But I reckon it should be served in all its glory, not neutered and tamed, after all if folk don’t like hot food there are plenty of other dishes more suitable. The best I’ve tasted was while sitting in a stilted restaurant sitting high in the jungle canopy overlooking the Andaman Ocean: that was the one that made me fall in love. It was shocking in its heat (compounded by the saunalike atmosphere) – a pain that slowly morphed to a numbing glow – based on a stock that had the delicacy and intensity of a top-notch consommé; the meat was quail. Then there was a modernised but glorious rendition at Sydney’s Sailors Thai; a high point in one of the best meals of my life. And there’s my local. There’s a terrific little Thai restaurant at Holland Park called Thai Country, and they happily whip up a jungle curry whenever I ask. It’s not on the menu, but it’s a worthy diversion. They don’t muck around; it’s hot, balanced, fresh and beaming with vitality. For the guys at Thai Country, jungle curry is a treasured dish. “In Thailand it is very traditional and has been for maybe a century or more. And it’s a dish for everyone, from villagers to the Royal Family. It is very nutritious

with lots of fresh herbs and the green peppercorns aid digestion,” they insist. Another restaurant that can prepare a great jungle curry on request is the newly opened Coriander Thai Cuisine. Located at Hope Island on the Gold Coast, the Coriander Thai chefs use the freshest ingredients to create authentic Thai flavours … and relish the opportunity to showcase traditional dishes like kaeng pa (even if it’s not on the menu). In essence it is a simple dish to cook … and fast. There’s some work in making the curry paste (and I thoroughly recommend doing that step yourself. Most of the shop-bought stuff is lackluster) but you can make a batch and keep it in the fridge for many months. If you read through David Thompson’s books you’ll find recipes for duck, fish and quail, and he takes things to a whole new level of complexity and interest. Jungle curry is not for the faint hearted. And, as I have discovered, it’s best eaten at home because you sweat, you cry, your nose runs and you can turn the colour of a ripe tomato. But – like hard exercise, bungee jumping and trekking through the mountains – there’s pleasure in the pain and it’s kind of addictive
Jungle Curry recipe Ingredients Fresh green peppercorns (preferably on the stalk) Rhizome (wild ginger/grachai) Green beans (preferably snake beans) Zucchini Thai eggplant Bamboo shoot Lemongrass Fresh birdseye chillies Mushrooms Basil (preferably holy basil) Kaffir lime leaves Red curry paste Fish sauce Choice of meat (preferably beef) cut into bite-sized slivers Stock Method 1. Heat a small amount of oil in a wok, then add the curry paste and cook – stirring constantly – until it smells pungent and hot. 2. Add fish sauce to season and then the stock. 3. Bring to a simmer then add the meat and eggplants and cook for a few minutes. 4. Add the rest of the ingredients minus the lime leaves and basil. 5. Check for balance and adjust if necessary. 6. Garnish with torn lime leaves and holy basil.

Daran is the Executive Chef while Leesa oversees the front of house, administration and marketing operations. Dawn Atkinson manages the front of house with efficiency and a ready smile. Ingredients Spiced quince 6 quince (peeled and quartered) 2 cinnamon quills 4 star anis 6 cardamom pods 4 cloves 6 juniper berries 1 vanilla pod (split and seeds removed) 1 orange 1 lemon 2ltr water 1.5kg caster sugar Ingredients Vanilla custard 1¼ cups full cream milk 3 egg yolks ¼ cup caster sugar 2tbsp plain flour 2tbsp & 2tsp cornstarch 1 vanilla pod (split and seeds removed) Ingredients Pastry 500g good quality puffed pastry Method Spiced quince (prepare pithivier filling at least 24 hours in advance) 1. Place water into a large pot and dissolve sugar. 2. Add peeled, cored and quartered quince. 3. Into this liquid mixture add both the juice and zest of the orange and lemon. 4. Use a knife to remove vanilla pod seeds and add these along with all the other spices into the pot. 5. Slowly bring liquid up to the boil and then reduce heat until the water is no longer moving and sits at approximately 70ºC. 6. Allow to cook for 6 hours stirring occasionally (nb: to ensure the quince is cooked, a sharp knife should move through the flesh quite easily). 7. When the quince is cooked, place pot in the fridge and allow fruit to cool within the liquid to achieve a rich dark colour and full infusion of flavour.

Method Vanilla Custard 1. Warm the milk in a small saucepan over a low heat until it is just hot enough to steam. 2. While the milk is warming, whisk together the egg yolks, sugar, flour and cornstarch until the mixture is smooth. 3. Once milk is steaming, add half to the egg mixture while constantly whisking. 4. Return the milk and egg mixture back into the rest of the hot milk, continue stirring and heat for 1-2 minutes until the custard cream becomes very thick. 5. Remove from heat and stir in the vanilla pod seeds. 6. Chill before adding to the quince and completing the pastry filling. To assemble 1. Roll out pastry sleeve and cut circular shapes approximately 8cm in diameter. 2. Brush with egg wash and place one tablespoon of vanilla custard mixture into the centre of the pastry. 3. Add two quarters of the spiced quince on top of the vanilla custard and then cover with another 8cm pastry lid. 4. Press the edges of the pastry together so that the effect is a free-standing pie shape. 5. Crimp edges to ensure that the filling cannot escape in the cooking process and then brush with more egg wash. 6. Bake at 200ºC for 10-12 minutes or until pastry appears golden brown.
Wild strawberry purée Ingredients
1 punnet of ripe strawberries 50g caster sugar Method 1. Place strawberries and sugar into a heavy based saucepan and bring to the boil. 2. Stir and allow to simmer for 5-10 minutes. 3. Combine the mixture with a stick blender until a smooth consistency is formed. 4. Pass the end product through a fine-meshed sieve and place in the fridge to cool.
Star anis ice cream Ingredients 12 egg yolks 1ltr pouring cream 8 star anis 100g caster sugar Method 1. Whisk together egg yolks and sugar. 2. Add cream and star anis pods together into a saucepan and almost bring to the boil. 3. Whisk into the egg mixture and then return to a clean saucepan over a medium heat. 4. Stir constantly, using a wooden spoon until the liquid thickens and is able to coat the back of the spoon (nb: ensure that mixture does not boil). 5. Strain through a fine-meshed sieve and refrigerate until cold. 6. Transfer to an ice cream machine and churn according to manufacturers’ instructions or until semi-frozen. 7. Complete process in the freezer for a minimum of 6 hours.
To serve 1. Spoon a little of the purée into the centre of your plate and place freshly baked pithivier alongside. 2. Complement with a scoop of churned homemade star anis ice cream and enjoy on a cold winter’s night. Serves 6

The most seminal change in the past half-century of Australian winemaking has surely been the growth in grape varieties. Only two decades ago we were confined to a small range of largely French grapes; today we have a cornucopia of French, Italian, Spanish, Austrian and even Greek varieties that not only add a heap of interest into what’s available to drink, but open up a whole plethora of possibilities for growers in different climates and environments. It’s going to be a lot of fun over the coming decade! Of them all it’s nebbiolo that tugs hardest at my heartstrings. Its spiritual home is Piemonte in the northwestern corner of Italy particularly around the towns of Barolo and Barbaresco, where it makes wines of powerful structure but ethereal, elegant perfume and fine, complex taste. The best can improve with decades of cellaring. Nebbiolo is cold weather wine. It is the sort of stuff that goes hand in hand with game, pot roasts and slow-cooked shoulders of lamb. If I had a haunch of boar in the fridge, or perhaps half a dozen hung partridge, I’d be lining up the nebbiolo bottles. It hasn’t been an easy immigrant. Nebbiolo is a demanding grape variety to both grow and to

And great nebbiolo is an exceedingly savoury wine: Australia, by nature, produces fruity wines and it seems that making that transition from fruity to savoury is both tricky, and a necessary step in the journey. But a few folk have nailed it! Steve Pannell is the master and the nebbiolos he makes under his S.C. Pannell label, from a vineyard near Gumeracha in the Adelaide Hills, are profound. In fact they have been profound since the inaugural 2004 vintage. In warmer vintages they tend to have more muscle and weight, but still with the perfume, elegance and structure that define the variety. In cooler years they are finer and more floral. 2008 is the current release and the product of a warm vintage. It won the trophy for Best Wine of Show at the 2012 Alternative Varieties Wine Show, reinforcing the trophy won by the 2007 for Best Italian Varietal the year before. It’s certainly a chunkier wine than the 2007, but it is quintessential nebbiolo; tasting the two vintages side by side could be compared to tasting Barolo (bigger and fuller) next to Barbaresco (finer). Regardless, the 2008 variety is a smashing wine with oodles of perfume – loads of dark berry fruits, hints of wet gravel and plenty of forest-floor. There’s more of the same on the palate, backed by a great wall of beautifully rendered tannins. Within a stone’s throw of Steve’s nebbiolo source is the Arrivo vineyard. Arrivo specialises in nebbiolo, making a ‘rosato’ (rose), nebbiolo and nebbiolo ‘lunga macerazione’ (long maceration). They differ in style from the Pannell versions, but jostle with them in quality terms. Here the perfume is lighter and brighter – more rose and cherry – and there’s a touch more red fruit on the palate. It’s a more angular wine, but again beautifully structured and complex. There’s more! Protero Wines is also based at Gumeracha, and it also has Steve Pannell crafting its nebbiolo with spectacular results. Gumeracha is obviously a sweet spot. Just out of Beechworth in Victoria, Rick Kinzbrunner makes some of the country’s most prized wines under the Giaconda label: recently he has turned his attention to nebbiolo and it’s stylistically as far removed from the south Australian pack as Beechworth is from Gumeracha. This is a deep, brooding expression of the grape like black leather, cassis and leaf-litter all rolled into a glass. And there is power in its delivery. It is made in tiny quantities (175 dozen of the latest release) and is as rare as baby seats in a Ferrari. Closer to home, Mark Kirkby grows nebbiolo on his Topper’s Mountain estate at Tingha in the New England highlands. There’s one under his own label (Topper’s Mountain) that has captured the delicacy and perfume of the grape beautifully: it’s all rose petal, cherry and wet-rock in a mediumbodied, carefully balanced wine. It’s a gentle expression. There’s something pinot noir-like in the way that nebbiolo creates fanaticism. It’s a variety that takes some getting used to, but once you see its magic it becomes an obsession. And it’s an obsession that seems to be gripping Australian winegrowers at a faster rate than drinkers: expect to see more of it! And next time you are cooking a haunch of boar …

Whincup Motor Sport Pty Ltd is the headquarters of Red Bull Racing Australia driver, Jamie Whincup. The four-time V8 Supercar Championship Series winner has been a resident of Sanctuary Cove for the past two years and says the 24-hour security and relaxed waterfront lifestyle initially attracted him to the resort. “There is a perception that Sanctuary Cove doesn’t have a lot to offer the younger generation but I can be an advocate that that is not the case … I’m 30 years old, I love my sports, I love making the most of life and the Cove really offers that,” Jamie says. “Just to be able to get in the golf buggy and come down to The Village and have a meal at night is fantastic.” When it came to finding office space to take care of the business side of his career, Jamie decided to stay close to home by taking a tenancy on Masthead Way. “I travel a lot with my driving and I don’t have much spare time so being in The Marine Village is perfect. I can walk to the office and not have to worry about sitting in traffic.” The new space is not just convenient, it is also very environmentally friendly. “We run a pretty much paperless office wherever possible,” says Jamie. “There are no filing cabinets or big printers ... it’s all electronic which means we don’t need a big space so this is perfect for us.” Jamie is currently sitting in top position on the V8 Supercar Championship Series ladder and would love to add a fifth V8 title to his impressive trophy cabinet. “We’ve been thrown more challenges this year than we ever have so it’s going to be extremely tough to win,” Jamie admits. “I’m confident we have all the right pieces it’s just a matter of applying them.” One of the key races in the championship is the Armor All Gold Coast 600, and Jamie is looking forward to racing in front of his home crowd in October. “For me it’s a favourite because it’s a home race … I get to sleep in my own bed on a Friday and Saturday night. Then, in the morning, I can just ride my KTM motorbike down the coast and literally drive straight into pit lane and park at the back of the pits,” he says. “It’s a fantastic event for the Gold Coast and it’s very popular with all the teams and drivers so I think we’ll be coming back here for many years to come.”

Themed ‘Boardies and Bow Ties’, exhibitors arrived at the event in a vibrant array of boardies and were given a special 25th Anniversary bow tie to mark the occasion. Among those recognised for their invaluable contribution to SCIBS over the past 25 years, was Sanctuary Cove’s International, Government and Industry Liaison Manager Barry Jenkins and SCIBS Exhibition Manager Harry Davis.

The 25th annual Sanctuary Cove International Boat Show (SCIBS) celebrated the best of the marine lifestyle over four successful days in May. More than 37,500 visitors converged on The Marine Village during the event, which ran from May 23 to 26, with Sunday’s idyllic sunny skies attracting the biggest crowds through the gates. The picturesque Sanctuary Cove Marina saw boats of all sizes on display, with hundreds more exhibitors filling the pavilions and lining the streets of The Marine Village. This year’s SCIBS had a greater emphasis on all things luxury, with a number of high-end brands being integrated into the exhibitor and entertainment programs, highlighted by new official sponsor Maserati and Bentley Brisbane. Clinton Wright of EuroMarque Maserati and Bentley Brisbane said the luxury motor brand sold two Maserati and two Bentley vehicles over the Boat Show including the Maserati GranTurismo MC Stradale and GranTurismo Sports models, as well as a Bentley Mulsanne and a Flying Spur. The EuroMarque SCIBS figures totalled more than $1.8 million, including the sale of the $400,000 Maserati that was on display atop the $9.9 million Horizon P110 superyacht, suggesting a turnaround in the luxury car market sentiment. “You can definitely sense a change in the market,” said Clinton. “The Sanctuary Cove International Boat Show is the premier boat show in Australasia and in a competitive market it is often how premium brands are aligned that differentiate their status. “We felt the Boat Show was a fantastic fit for our premium brand. We were able to incorporate the vehicles into some impressive displays at SCIBS, including floating the Bentley GTC V8 in the Marina thanks to Superior Jetties, positioning our Maserati Stradale on the deck of the Horizon P110 and transferring the Citigold/Maritimo VIP guests in one of two flagship Bentley Mulsannes.”

Sanctuary Cove’s General Manager of Sales, John Hughes, said this year’s SCIBS focused on promoting Mulpha’s complete stable of brands including the enviable lifestyle on offer behind the gates. “We had a greater focus on all of Mulpha’s lifestyle brands on display at this year’s Boat Show, as well as special guest brands that we felt fit the mould,” said John. “We really chose to embrace the opportunity for cross-promotion and the ability to showcase everything from prime land available for sale through to Mulpha’s luxury holiday destinations and affiliated brands.

“The VIP lounge was a great success and gave us a chance to ensure our VIP customers were well looked after and provided a platform for visitors to learn all there is to know about Sanctuary Cove including the unique house and land packages available.” Of course, the boats are the stars of the show and this year’s on and off-water display did not disappoint. Millions of dollars exchanged hands over the four days, with many local and south-east Queensland companies doing exceptionally well. Event organisers and exhibitors wrapped up the 2013 SCIBS feeling confident that the marine industry was on the road to recovery. Mooloolaba based company Multihull Solutions reported $4.65 million in sales over the four days. “Overall the show has been brilliant for us – it feels like the market is returning,” said Multihull Solutions Marketing Manager Kim McKee. “We had a soft year last year, but now it feels like the money is floating back.”
Sanctuary Cove tenant Norman Ambrose, of Ausail Marine, said he hoped to sell in excess of $2 million in sail boats as a result of the company’s involvement in this year’s Show. General Manager, Marketing and Events, Sue Thomson said the feedback from the exhibitors was positive. “Not only were visitor numbers up on last year but we saw some very good sales achieved by various manufacturers, brands and other marine industry exhibitors,” she said. “The overall feeling was that exhibitors were happy with the result of this year’s Show and we’re already looking forward to 2014.” The 25th anniversary Sanctuary Cove International Boat Show was proudly sponsored by Club Marine and Bentley and Maserati Brisbane. Future dates have already been locked in for the next two years, with next year’s SCIBS running from 22 to 25 May 2014 and the 2015 Show running from 21 to 24 May.

“Every architect is – necessarily – a great poet. He must be a great original interpreter of his time, his day, his age,” said Frank Lloyd Wright. And, with a career spanning nearly 70 years, he understood the profession better than most. The man best known for designing New York’s distinctive Guggenheim Museum and the Marin County Civic Center in San Rafael (California), whose prolific portfolio numbered an impressive 1,141 home and building designs, had humble beginnings. But his exceptional drive and passion for architecture saw him ascend to his dream of becoming an architect despite not having finished high school in Madison, Wisconsin. Taking a job with the Dean of the University of Wisconsin’s Engineering Department, Wright also studied civil engineering for a short time before moving to Chicago to work with architect Joseph Lyman Silsbee. Wright’s next employer was Louis Sullivan (of Adler and Sullivan), whom he acknowledged as having significantly influenced his own career. This was most evident in Wright’s unique designs that eschewed European styles and traditions, as – like Sullivan, he believed American architecture should be based on American function. He also declared that American architecture should be based on, and integrated into – shapes found in the natural environment. Thus Wright’s house designs were like no other, following a horizontal plane unencumbered by basements or attics, and featuring vast walls of glass and an open-plan layout. In time, the power of his simplistic approach to design gave rise to the Prairie School – a group of architects inspired by Wright, and whose style became synonymous with Midwestern architecture. His prominence continued to spread across the United States and into Europe, then into Asia when, in 1915, Wright was commissioned to design Tokyo’s Imperial Hotel. This period marked a time of creative growth where his love of incorporating the natural environment into his designs intensified. In 1932 Wright established the Taliesin Fellowship, named after his family home, from where he operated it. As a burgeoning architectural apprenticeship scheme that saw the design of masterpieces like the SC Johnson and Son Wax Company Administration Center in Racine, Wisconsin, the Fellowship frequently outgrew its workspace. As operations grew, so did Taliesin – with extensions being added as and when required. Finding the Wisconsin winters too cold as he grew older, Wright moved to Phoenix, Arizona in 1939, building a new home – Taliesin West – which he also continually extended and modified. Undoubtedly, Wright’s most famous creation was the Guggenheim Museum in New York. Sadly, he didn’t get to see his long-awaited masterpiece officially opened, as he passed away six months earlier. But his prodigious contribution to architecture was posthumously acknowledged by the US Government when his portrait, foregrounding the iconic Guggenheim Museum building, graced a national postage stamp in 1966. And perhaps Frank Lloyd Wright’s enduring artistic vision is summed up best by another of his quotes: “The architect must be a prophet ... a prophet in the true sense of the term. If he can’t see at least ten years ahead, don’t call him an architect.” >>

American businessman, art collector, and philanthropist Solomon Guggenheim initially began displaying his collection of modern art in his own New York apartment. With the collection growing, he established the Solomon R Guggenheim Foundation for ‘the promotion and encouragement and education in art and the enlightenment of the public’. In 1939 the Foundation opened its first museum –The Museum of Non-Objective Painting – at rented premises in New York’s East 54th Street, but the collection’s continued expansion meant a larger, and more permanent, solution was needed. Frank Lloyd Wright was invited to design the proposed Guggenheim Museum – a mammoth task that eventually took 15 years to complete. Sited on the corner of 89th Street and Fifth Avenue, New York, the iconic cylindrical building resembles a curled white ribbon – its unique design aesthetically defining it from its numerous geometric neighbours. Despite meeting mixed reviews when the museum opened in 1959, the building is now considered one of the 20th century’s most significant architectural designs. Featuring a concave viewing gallery that gradually spirals towards a central skylight, the Guggenheim Museum not only houses exhibitions of modern and contemporary art, but is also a venue for performances and film screenings, lectures by artists and critics, and educational classes for art enthusiasts of all ages.
The Marin County Civic Center Encompassing a complete campus of civic buildings, the Marin County Civic Center in San Rafael, California, was both Frank Lloyd Wright’s largest public project and his final commission before passing away in 1959. Construction of this extensive project was completed in stages, beginning with the Administration Building in 1960, under the expert eye of Wright’s protégé Aaron Green. Spanning two valleys, the distinctive complex has been named both a California Historical Landmark and National Historic Landmark, and appears on the National Register of Historic Places. The main Civic Center building has also been nominated for the UNESCO World Heritage List, as part of a suite of ten Frank Lloyd Wright designs.

However, Reserve Bank interest cuts earlier this year have had a marked flow-on effect and the housing sector is now showing definite signs of a recovery. E-tailer Donna Irvine has chosen Sanctuary Cove for the location for her first bricks and mortar store after receiving strong support for online venture, Hamptons Style. “I started the website 18 months ago as a homebased business that would allow me to spend time with my children,” she said. “But more and more customers started asking me where the store was and where they could come and look at the furniture, so I realised it was time to open a store.” Donna said she was lured to The Marine Village by its relaxed atmosphere. “I just love the feel and the people are so nice and welcoming,” she said. conquering everest Alyssa Bates takes on the world’s highest peak … and triumphs.
You gasp for breath. The air is thin up here. Your throat is dry and your toes are numb. The wall of ice seems to never end. The person in front of you shuffles forward. Step. You push on, trying not to think about what would happen if your foot were to slip from one of the footholds that have been carved into the snowy incline by our superhero porters. It is day nine of our 14-day trek through the Gokyo Valley to Everest Base Camp (otherwise known as EBC) in Nepal’s Sagarmatha National Park. We have crossed the Ngozumpa glacier, and are ascending into the Cho-La Pass, a daunting gap between two peaks at an altitude of 5420m that once formed part of the old Tibetan trade routes. There is no turning back. 36 hours earlier (on day seven) crossing the pass was merely a dream. The region had received an unseasonal two metres of snow in the two weeks prior to our arrival at the start of the 2013 trekking season. If the pass was still snowed in, our crossing would be slow and there was a risk that we would not be able to reach the nearest teahouse before sunset. No other groups had successfully

crossed the pass so far this season, and we had reluctantly resigned ourselves to the fact that we would not be able to traverse it this time. Instead, to ensure that we would still reach EBC from where we currently were in Gokyo, we had agreed to backtrack down the Gokyo Valley, and race up the Khumbu Valley along the main EBC trail. As we went to bed that evening, our stoic guide, Dan Basnet, made the call. We were going to attempt the pass! We’d received news that another group had left for the pass and had not turned around. That was the sign that we had been looking for. Perched on the side of Cho-La Pass we paused to catch our breath. It was only 10am and we’d already been trekking since 5am that morning. It was only eight days ago that our group of 15 adventurers from Australia had set off from Kathmandu as part of a maiden trek with The Little Big Adventure Company (tlbac.com). only provide treks to sought-after destinations but to enhance the lives of the porters and guides that are employed by them and their community. It’s time to ‘jam-jam’. Our amazing porters, having already dropped their 30kg loads off at the top of the pass hours ago, come back down to lend us a hand. As you take those final few steps, adrenaline surges and relief begins to kick in. Colourful prayer flags floating in the wind herald our entrance into the Cho-La Pass. The view is simply breathtaking. Unfortunately we couldn’t afford to rest for too long. The next seven hours are spent slowly traversing the snowy, glacial Cho-La Pass, before descending into the Khumbu Valley and converging with the main EBC trail. By the time that we finally reach Lobuche, it had been an epic 13 hours since we left Thangnak. We are completely shattered and frozen to the bone. But nonetheless we had conquered the Cho-La Pass, and were the first international group to do so for the 2013 trekking season. This was no small feat. Two days later we made the final ascent to EBC, crossing the tail edges of the world’s highest glacier, the Khumbu glacier. After the challenge and awe of crossing the Cho-La Pass, the achievement of reaching EBC for us was somewhat an anti-climax. However we came prepared. Much to the surprise of other trekkers, we did the Harlem Shake (http://youtu.be/ A4C88_CPXk0) and discovered it’s surprisingly tiring to dance for 35 seconds at an altitude of 5380m! Another excruciating two-hour climb the following morning, and we reached the summit of Kala Patthar (the pinnacle of our trek at 5545m) just in time to see dawn break over Mt Everest. The world’s highest mountain has captivated adventurers from all over the globe, and standing at the base of Mt Everest it’s easy to see why. The view of the Himalayas was simply breathtaking. May 29 this year marked the 60th anniversary of the first successful summit of Mt Everest, by Sir Edmund Hilary and Tenzing Norgay, and their feat continues to provide inspiration to the thousands of trekkers that make the pilgrimage to both EBC and the summit. It’s freezing standing on the summit. After a couple of quick photos and a few moments to absorb the stunning view, it’s time to run back down the mountain to our teahouse in Gorak Shep. A much-appreciated hot cup of lemon tea and breakfast is waiting for us, before we commence the three-day descent back to Lukla and reality. We celebrated our last night in the mountains, and the assistance of our remarkable guides and porters, the only way we could. Nepalese style. We danced the night away to local stomping music, around, and around, and around the teahouse stove. This was a truly unforgettable adventure that literally takes your breath away.

Susan Mallinson always intended to visit Kenya, which is why she seized the opportunity when it arose. Her experience began on arrival at Jomo Kenyatta International Airport. With a limited number of motor vehicles in the area, Susan was greated by a busy and colourful scene as people travelled on foot to their various destinations. The sheer number of pedestrians was unlike anything she had encountered anywhere else in her travels. After spending the night at Nairobi Sovereign Suites, Susan and her travelling companions were escorted to the world famous Mount Kenya Safari Club. With Mount Kenya in full view, the sight proved to be more magnificent than anticipated. The mountain created a vast and majestic backdrop to the many Marabou storks, egrets, and peacocks that inhabit the area. The evening revealed another delight as the equator line was lit up for Earth Hour with lanterns and candles. It was a beautiful moment with the magnitude of the world’s wonders highlighted by such a simple gesture. The following day, a visit to Sweetwater’s Game Sanctuary and Kenya’s only chimpanzee enclosure proved unforgettable. The rehabilitation centre for mistreated chimps was a genuine refuge for these marvellous creatures. The facility provided large areas for the animals to explore, enabling the freedom they so desperately required. This, combined with the care and dedication of staff, created strong bonds between animal and human. The chimpanzees had developed remarkable

interaction abilities with their caretakers, even recognising and responding to their own names. The dedication of the staff that worked so selflessly to ensure the safety and happiness of these animals was truly admirable. From here, Susan journeyed across the Mount Kenya region and dropped down into the Great Rift Valley to Lake Nakuru National Park. This area was a natural dwelling for flamingos, black and white rhinos, and the endangered Rothschild giraffe. Settling in at Serena Elementaita Luxury Camp for the evening, the travellers dined on an abundance of fresh produce and gourmet delicacies. Taking an afternoon flight, Susan ventured to Masai Mara National Reserve. The reserve is renowned for the wildebeest migration, but also plays host to a vast number of hyena, lion prides, and vultures, among many other plains game and predators. Duncan, a local guide, provided a wealth of knowledge to Susan and her companions. Dressed in full natural costume, he displayed a strong affinity with the Mara Plains, even referring to some of the animals by name. Attuned to the animals, Duncan was a true asset to Susan and her companions as they immersed themselves in the landscape and savoured the sights of the incredible animals in their full glory. Disinterested in their human spectators, the animals provided an amazing show of family unity, survival in the wilderness, and even predator versus prey. With Duncan’s expertise, the group witnessed the antics of lion cubs barely three weeks old, as
their mother hunted for their next meal. Zebras meandered in vast numbers, displaying markings that were unique to each and every individual animal. A close encounter with a leopard sent the observers’ hearts racing as it casually strolled a little too close for comfort. A singular moment provoked a significant response in Susan as she witnessed a leopard stalk, catch, and feast on a water buck. This vision, although foreign and uncomfortable to see, conjured up a newfound respect for the animals and highlighted the necessity of survival in such a raw environment. Mara Plains Toto Camp, Susan’s final destination, supplied accommodation beyond compare. Set against the rugged landscape, the tent-style abode was simply magical. Combining simplicity and luxury, the tents even contained hot showers. The wonderful experiences of the entire journey were made even more enjoyable by this fantastic facility as the trip drew to an end. It accommodated the need to unwind and allow the many amazing experiences that Susan had experienced during her travels sink in. On reflection of her trip to Kenya, Susan is unable to specify a singular highlight. Instead, she asserts that from the second her feet touched Kenyan soil, she was taken on a whirlwind of eye-opening and entertaining moments that will stay with her forever. The accommodation was extreme in contrasts but consistently pleasurable. The wildlife and scenery awakened her senses and mind. She enjoyed an abundance of fresh produce and dining
experiences that were second to none. She found time to explore, relax and unwind. With such a great variety of experiences to speak of, it could be assumed that Susan wouldn’t feel a need to return to this region. On the contrary, she insists that she has merely scratched the surface and is keenly awaiting the opportunity to explore the wonderful landscape further. According to Susan, Kenya is adventure, luxury, phenomenal food, superb accommodation, and delightful personalities, all wrapped up in a raw and fascinating package.

There’s heaps to do in Waikiki without even thinking of driving to the other side of Oahu or visiting other islands. For those of us who have swum, snorkeled, surfed and sunbathed over the years and probably ‘done’ the more traditional sightseeing of the Zoo, Polynesian Cultural Centre, Iolani Palace, a visit to the Arizona or Oklahoma memorial, watched pineapple juice being made and visited the Kualoa Ranch, a beautifully scenic property where an impressive list of movies and TV shows have been filmed, then a Dusk Dinner Cruise is ideal. It was very romantic travelling what the crew assured us was an exclusive route along Oahu’s Kahala Gold Coast. There were cocktails, coconut-dipped jumbo shrimp, delicious Pacific Rim cuisine and a show performed by island entertainers with great dance music which saw us bee-bopping our way into the sunset. However, I can never resist a brush up of my Hula. Unfortunately, my left hip hasn’t fully recovered from venturing down the pyramid last year. I was forced to leave the class half way through so we went next door for a couple of Chi Chi cocktails instead. What a lovely way to end the day.
