Sure the deadlines come around very quickly and it’s always challenging to decide which stories to bring you each edition … but the upside is I get to work with a great team of talented professionals, meet interesting people who are willing to share their experiences, and attend some amazing events such as the inaugural Brickworks Up Late with Cove magazine evening which will take place on Thursday 10 October. This fun and fashionable event will showcase the fabulous Brickworks precinct and provide shoppers with the ultimate retail experience. Striking out on his own again – this time professionally, Louis established a small workshop and the beginnings of the Louis Vuitton corporation in 1854, but demand for his fine wares proved so strong that expansion into a small factory was necessary after only five years of trading. Having had his innovation recognised by a Bronze Medal from the Universal Exhibition in Paris, Louis later introduced a beige-and-brown stripes design to protect the company from imitators. But the pretenders proved persistent, so in 1888 the Damier Canvas pattern, bearing a logo reading ‘marque L. Vuitton déposée’ (L. Vuitton registered

My daughter says etiquette doesn’t matter anymore. What do you think? Having good manners, being polished and poised always matters, both socially and in business. When we know what to do and when to do it we find it easier to mix easily at functions, make small talk, move from group to group and chat comfortably to people of all ages. Etiquette has recently seen a revival. For many years it wasn’t considered ‘cool’ to be well mannered, but now it’s accepted that success in life is often dependent on good personal and inter-personal skills which is what a knowledge of etiquette provides.

What should we wear when the invitation says ‘smart casual … or worse, casual chic? I agree it’s tricky. Should we wear long and flowing? Short’n’shimmery? (And this is just for the women!) To avoid turning up wearing cut-off jeans and flip flops, even if they are designer flip flops, and have the hostess open the door wearing a slinky shift by Versace, call her when you get the invitation and ask her what she’s wearing. This will be a guide ... but don’t be put off if there’s nothing by Versace in your wardrobe.
My partner is very demonstrative and is comfortable with public displays of affection and I’m not. How affectionate should we be in public? The public display of affection, often referred to as the PDA, is very common in Europe where both men and women seem to be more at ease. Really, it depends on where you are and how ‘affectionate’ his PDA is. If he confines himself to nibbling your ear, you’re OK but of course if he has you in a half nelson and is smothering you in kisses this would be considered poor form and should be avoided. I suggest you encourage him to restrain himself until you get home.

What do we do when it comes time to split the bill? Splitting the bill in a restaurant can be awkward, especially when one couple is quaffing French wine and ploughing their way through three courses as if they’ve just escaped from the health farm, while the other couple has nibbled daintily on a Caesar salad. Try going to restaurants which have a fixed price for a three-course meal, or to a buffet where you know the cost is also fixed. As far as drink is concerned, think of ‘BYO’ restaurants. If your friends don’t like it, go with other people.

pack right – travel light Henrietta Dups has some tips on how to pack the perfect travel wardrobe.

My earliest memories of travelling are of my sister and I at three and five years old, each wearing a backpack and carrying a shopping bag with two shoe boxes filled with photos (Mum and Dad were carrying six of these bags each plus cabin luggage) running through transit to catch a flight to China 4. 3.

Up until my late 20s I ignorantly upheld an instilled belief that travelling is always a chaotic, stressful and back breaking experience. Then one day I had an epiphany – if I actually planned my packing and gave myself adequate preparation time, travelling could be a fun, stress free, and easy process! I have a few policies when it comes to packing clothing which will ensure the process is smooth and simple. • Pack items you love to wear. If you pack tried and true pieces you adore, you will not mind having a streamlined, minimalist wardrobe to wear. • Keep the overall picture in mind. All the separates in your suitcase need to mix’n’match with each other creating a plethora of outfits from just a few well-selected items. • Always leave room in your luggage for a purchase or two (or more). • Where possible, try to opt for natural fibres over synthetic. They are breathable, wrinkle resistant and comfortable, which means you can wear each piece more than once without needing to wash it. Dark colours generally look better upon a second wear as opposed to light colours. Prints are good at hiding wrinkles and minor stains. • Layering. Always remember that two thin items take up less space than one chunky item. • Double duty items. Focus on clothing and footwear that can have more than one role, eg. a swimsuit that can also double as a bodysuit when worn with a skirt or pant, Bleulab’s reversible jeans giving you two pairs in one, Sacha Drake’s Ultimate Dress that can be worn in over 20 ways including as a skirt. • Only pack a maximum of three pairs of shoes. Two pairs in your suitcase and the pair that you are wearing. Brutal as it sounds, it forces you to carefully edit all your potential outfits before packing. • An easy way to start is to pack the universally essential items. First, a gym outfit comprising of one quick dry tank with inbuilt sports bra, one pair of quick dry bike pants or shorts, two pairs of sockettes and one pair of gym shoes. If the destination calls for socks or pantyhose you only need to pack three

pairs (a pair you are wearing, a pair in the wash, a clean pair). Lingerie-wise you only need two nude bras, one convertible and one t-shirt bra. My rule of thumb for knickers is a pair for each day you are away and a spare, with a maximum of eight pairs. All of these items (except the shoes) can be handwashed and will dry overnight in a hotel room. Plus don’t forget to include a set of pyjamas. When travelling it is important to strategically pack your carry-on luggage; if the airline misplaces your check-in luggage, the contents of your carry-on are all you have. Pack your ‘can’t live without’ items in your carry-on including make-up/toiletries bag, reading glasses, sunglasses, medication, travel insurance documents, phone, camera, laptop etc. I also pack a wrap or cardigan in case I get cold during the flight, plus a tee-shirt, a pair of knickers and socks, so I have a clean set to change into. If travelling from one

climate extreme to the other, I also pack something cooler or warmer to change into when I arrive at my destination. For business trips I always bring my suit-bag with an outfit for my first day of meetings on board. For a beach destination, this season I will be packing a bold print bandeau bikini, great for ensuring a strap free tan, teamed with a monochromatic print short kaftan, a pair of sunglasses, white sandals and beach bag. The perfect ensemble for a day spent lazing on the beach and exploring the beachside

shops and cafés.
For cocktails at sunset, a colourblock swimsuit with detachable straps can double as a stylish bodysuit when worn with either a pair of black linen pants or the Sacha Drake Ultimate black dress worn as a skirt. Complete the look with a statement necklace, a studded lemon clutch and wedge sandals. For a day out sailing or sightseeing, team a pair of shorts with a white cotton tank which can be layered under a lemon yellow vintage silk long sleeve top should the wind get up or the sun get too hot, finished off with a pair of Skechers gym shoes and sunglasses. I always opt to buy a cheap sunhat when I get to my beach destination as I find sunhats cumbersome and bulky to pack. For a winter country getaway the key pieces to pack are a black three quarter sleeve top and black skinny pants, layered with a silk top and silver leather jacket. Accessorise with an orange cashmere scarf, black knee high leather boots, a bright orange leather tote and the final touch, a leather hat. This is the perfect outfit for a jaunt into the local village for a spot of lunch and antique shopping. A brisk nature walk calls for layering a grey cotton tee under a cashmere hoodie, teamed with Bleulab reversible jeans, which can be worn either print side or plain side giving you two totally different looks, and Skecher gym shoes. Co-ordinate a sweater dress over the black skinny pant and silver buckle ankle bootie for dinner and drinks at the local country club. Snug in your log cabin, cosy up with a mulled wine in front of the log fire in a leopard print sweater and sweatpants. When travelling to a capital city I like to pack the perfect city-sights outfit comprising of a chic cotton pale pink blouse, beige linen trousers and neutral cotton cardi, tan loafers, a tan shoulder bag and sunglasses. For a spot of uptown shopping I substitute the pants and blouse for a cotton sundress, as it makes trying on clothes so much easier.
A night at the theatre calls for a stylish black ensemble; silk laser cut top, a silk pleat skirt, longline cardigan and a kitten heel sandal teamed with a colour pop leopard print clutch and monochromatic bangle. Checking out the local trendy nightclubs I turn to my sleek black skinny jeans, with a rose semi sheer silk print top, accessorised with a leopard print clutch, bangle and black sandals. Brisbane designer Sacha Drake’s stylish and practical all black Stretch Solutions clothing range is perfect for business travel. Each garment in the collection can be mixed and matched to create countless looks and several pieces can be worn in more than one way. At business meetings, my outfit of choice is the seamless pant and turnaround tunic top, teamed with a nude trenchcoat, black suede ankle boot and gold handbag. Give a chic twist to your corporate wear by switching the pant and boots for the Sacha Drake Iris LBD layered under the tunic top and strappy studded kitten heels. For dinner with the clients, remove the tunic top and team the LBD with a nude cropped cardigan and add a bit of bling with a chuncky necklace and gold clasp clutch. For off duty catch up drinks with friends, channel rock chic and don a pair of studded black skinny jeans, a gold lace top, black fitted blazer, drop earrings, kitten heels and a black clutch. Armed with this information, you are sure to find packing a breeze, and your carefully selected garments more than adequate for every occasion. 1. 7. JUICE on the run or eat with GRACE If you have a hectic travel itinerary planned on certain days and you’re constantly on the move, your body won’t be in the best place to digest. If there’s no time to sit and enjoy a relaxing meal, it’s much easier to digest a fresh organic juice or a green superfood smoothie. Both will give you optimum nutrients, are easily absorbed and will support more efficient digestion. Eating while the body is stressed or active will create a ‘storage’ problem whereby the body will store food not digested and create belly fat. Make sure you only eat food when you have the chance to sit down for at least 30-40 minutes and allow the time to eat, rest and digest.
8. Remember REM A late night here and there is all part of a good adventure but remember your best REM sleep starts between 9-11pm and is definitely the best time for the body to deeply renew itself. Too many late ones will not only knock your energy flat but cause premature ageing, erratic hormonal shifts and mood swings. If you get up and launch into a full adventurous day, you will be more than ready to surrender deeply by 9pm or soon after.
9. Embrace the natural HIGHS The more you absorb yourself in the moment, tune into your body and feel the awe and power of nature as you travel, the less unconscious you will be regarding food and drink choices. Elevate yourself on the natural highs and euphoria of your trip and you will need less of the artificial versions.
10. HOLISTIC perspective If you feel stuck on improving your energy and wellbeing while travelling, always come back to the holistic perspective: ‘Mind, Body, Food, Nature and Spirit’. Improving your thoughts to be positive and loving, moving your body daily, eating real unprocessed fresh food, spending time in nature and remember to enjoy your own soul time. Sometimes when we travel with others we forget to make sacred time for ourselves. This is an asset to our overall wellbeing, strengthens our spirit and improves our relationships. The camera went into overdrive when Rosanne Bayes visited the picturesque city of Prague. Whether you love to point and shoot, spray and pray or you’re the real deal ‘photog’, you will be off with the pixels in the pretty Eastern European mecca of Prague. A day out in arguably the most romantic city in Europe will have you and your glass moving at the speed of the ambient light, as you click your way through this photographer’s paradise. The castle, the cobble stoned streets, the Gothic clock tower. The alfresco dining, the museums, the gardens. The river cruises, the horse and cart rides, and the churches. So many churches. It all sounds so classically European doesn’t it? And it is, yet Prague also offers a charm uniquely
60
its own. Like a stroll through the Sistine Chapel where the need to look up, down and all around leaves bodies contorting like a Cirque du Soleil performer, the Bohemian capital is a more compact and thereby more cosy model of Europe’s five other more frequented tourist destinations. After London, Paris, Rome, Madrid and Berlin, Prague has emerged as the Mona Lisa of the tourist gallery. Attracting over five million people each year with its striking yet relaxed impression, visitors inevitably become mesmerised by the intimacy of the city’s façade. From any angle around the many beautiful laneways and squares, an onlooker cannot escape the eyes of the omnipresent towers

At every turn and every intersection a different view of the same landmark can be captured in a different light, creating a new sense of wonderment and awe. But if you are visiting Prague to experience its visual sensations, then it would be best not to cloud your vision with an indulgence in one of the Czech’s most noted pastimes – beer drinking! The Czech Republic is the Number One beer-drinking nation in the world with an annual per capita consumption of 156 litres. This could perhaps explain why the number of Australians visiting Prague increased by 36 per cent from September 2011 to the same time in 2012! But, if you are of the belief that ‘When in the Czech Republic, do as the Czechs do’, then for around $AUD2 you can down 0.5l Pilsner Urquell or Budvar starting at breakfast and continuing into the night at any number of very trendy bars, or on one of a host of ‘organised’ beer-crawls! The other favourite drink in the Czech Republic is water. And there’s plenty of that too, especially in the absolutely breathtaking spa town of Karlovy Vary, 130 kilometres west of Prague. The second most popular place for visitors to the Czech Republic, this small and exclusive town is secretly nestled in the valley at the confluence of the Tepla and Ohre Rivers and encircled by lush green forests. From these forests spring more than 60 hot springs of which 12 are used in spa treatments. The mineral water here is used for drinking cures, baths and a number of special treatments, especially disorders of the digestive system, and metabolic disorders. About 130 kilometres of graded walking paths meander through the forests which are dotted with freshwater drinking points along the way. Filling up our special drinking jugs, a must-have when in Karlovy Vary, kept us well-hydrated at all times as we continued through the crisp, clean tracks seeing nothing but greenery for miles. And if the walks through the town (either through the city centre or the forests) are not refreshing enough for you, then a swim in the public thermal swimming pool at the top of the Lazensky Hotel Thermal will most certainly give you an afternoon pick-up like no amount of caffeine can offer. With one third thermal spring water and a year-round temperature of 30°C, plus stunning views of the town centre, it is a most invigorating experience not to be missed. Like Prague, the spectacular views abound in Karlovy Vary. A 453m cable car ride from the very beautiful Grand Pupp Hotel up to the Diana Viewing Tower on the Height of Friendship, will again take your breath away. A 360 degree view of the spa town below and the distant environs made our 150 step climb up the tower fully worth the effort. We could have taken the lift but then we would have missed the photo opportunities through the portholes along the way as we ascended. And if nature didn’t provide us with enough subject matter to focus on, then the Colonnades, architecture, colourful buildings and many statues throughout the town kept our fingers in press mode at all times. None more so than our morning stroll through the town to monitor work in progress for the then upcoming 48th Karlovy Vary International Film Festival, Central and Eastern Europe’s version of Cannes. The annual carnival style event attracts over 850 industry players, 700 journalists and more than 11,000 mostly young film lovers to the otherwise quiet but stylish town. So again, when in Czech, we did as the locals do. Armed with fully automatics, LSRs, iPads and the now mandatory smart phones, we transformed into the professional photographers we had now become! We bought wafers, filled up our thermal mineral water jugs and waited patiently in front of the red carpet. We were ready to shoot on demand. The perfect picture was soon to be ours. And then the battery died.

a place in the sun Portugal’s picturesque Algarve coast is a haven for tourists. Words Terry HOPLEY
The stunning coast of the Portuguese Algarve – one of the sunniest spots in Europe – is regarded by many as the perfect holiday destination. Miles of pristine sandy beaches, exquisite hotels and villas, nearly 40 world class golf courses and temperatures that even in the middle of winter can hit the mid 20s. Some fantastic low season deals have been put together by the prestigious Pestana Group, owners of more than 90 hotels world wide – plus six great golf courses on the Algarve alone. Understandably, their rates increase dramatically during the popular May-September period but there are still great bargains to be had in the Vilamoura area, which includes the luxurious Vila Sol Golf & Resort Hotel, home to two Portuguese open championships. Vilamoura has been developed around a stunning harbour and marina, which is now ringed by dozens of al-fresco cafés where you can enjoy a plate of fresh grilled sardines and salad for less than $A10 (depending on the current exchange rate) or splash out slightly more for a beautifully presented meal in one of the newer glass-fronted gourmet restaurants. A 20-minute drive towards Faro and you find a very different kind of Algarve. There is nothing budget-style about Quinta do Lago with its $A10 million homes spread-eagled around five world class golf courses. Quinta do Lago is very much ‘new money’ with many of the magnificent villas owned by footballers and bankers who took early retirement. Built right on the Atlantic Ocean, Quinta do Lago also boasts beautiful beaches with quaint wooden shacks serving freshly caught fish each day. Pop in for delicious sea bream or cod lunch but make sure your swimmers have deep pockets because even a modest lunch will set you back a bit. There is little to choose between the golf courses and each is in pristine condition with equally immaculate service in the club houses where many of the ‘locals’ seem to spend most of their days, relaxing on the terrace with a bottle or two of Veuve Clicquot. Not so long ago I had the pleasure of playing the magnificent Pinheiros Altos course with former England footballer Paul Ince. We had been

challenged by two local residents who surprised us on the first tee by suggesting we played for an enormous amount of money – per hole. Golf not being one of my strong points I picked myself up from the ground and insisted we restricted the bet to a beer at the end. Big mistake. Our hosts were in fact already inebriated and Paul and I (or rather Paul) won every hole on the front nine. At the half way house one of them collapsed on the steps and fell fast asleep. He was still there when we ended the back nine and we had to telephone his wife to collect him and take him home to his multi-million dollar mansion. That kind of sums up life at Quinta do Lago. A bit further down the coast is the other big development of Vale do Lobo, similar yet in so many ways different to its flamboyant neighbour. Vale do Lobo is very much ‘old money’ with many slightly smaller villas that have been owned by the same families for many years. There is also a fairly large time-share development which fits in well with the surroundings. Vale do Lobo also has its own two golf courses, including a cliff-top par three which is probably the most photographed hole in Europe. It’s quite a daunting experience to stand on the edge of a cliff and hit a ball across a deep void with the beach far below and a second cliff some 170 metres away with a flag fluttering on a green which even very good golfers seldom hit. Most balls disappear way down on to the beach. But only temporarily as a young boy invariably appears by your side minutes afterwards to sell it back to you. Both Quinta do Lago and Vale do Lobo boast their own five-star hotels offering magnificent accommodation, facilities and golf. The best time to visit the Algarve is May or September, so you can avoid the heat of the summer and when restaurants and golf courses are not over-crowded. Whether

A 1.5 metre turtle made from stainless steel chain has taken up residency at the gallery, artfully capturing the moment a turtle emerges from the sand after hatching from its egg. The striking sculpture, entitled ‘The Hatchling’, weighs approximately 120 kilograms and is 3.2 metres wide. It is the result of a two-year labour of love from Mike, who is a sheet metal worker by trade.
Luis said he couldn’t pass up the opportunity to display such an amazing piece of art. “‘The Hatchling’ is one of the most extraordinary art works I have ever come across,” he said. “You look at it and think it should be out in a paddock it’s that big. “It has been drawing people in off the street and everybody is in awe of it.” Among Mike’s other works are a 450 kilogram

The Marine Village at Sanctuary Cove has welcomed new owners at the popular gourmet eatery RAW Kitchen and Espresso and RAW Grocer with Coomera Waters couple Peter and Jacki Creamer recently taking over the reins. RAW Kitchen and Espresso caught the couples’ eye when it opened last year and when it became available for sale it presented them with the perfect opportunity to start a family business. The Creamer family acquired the business in July and were quick to lay plans to expand the offering of both outlets. Peter, who previously operated seven Optus stores, said it was the concept behind RAW which really grabbed his attention. “We dine out at Sanctuary Cove a lot and when RAW Kitchen and Espresso opened I was impressed with its branding and menu,” he said. “I said to my wife ‘I’d really like to have something like this’. Then just over a year later it was up for sale at an ideal time for us.” A true family affair, the Creamers have appointed son Dwayne to manage the day-to-day operation of both businesses, while regular customers will still see the friendly faces of existing staff. With customer satisfaction a top priority for the new owners, patrons can expect to see some changes aimed at building stronger relationships with customers. “We want to create a place where people feel very comfortable coming back to, time after time,” Peter said. “There will be greater staff acknowledgement and recognition of customers to foster the enjoyable laidback family atmosphere we want at RAW. “We believe there is great potential to grow our patronage, particularly from within the Sanctuary Cove community.” According to Peter, RAW Grocer will have a greater emphasis on ‘grab and go’ meals with more takeaway coffee and food available. RAW Kitchen and Espresso will still offer breakfast and lunch but will also open for dinner on Thursday, Friday and Saturday nights on a permanent basis. The eatery will also feature more daily blackboard items, some menu changes, extra staff, and a new staff uniform, while retaining its commitment to fresh, simple and local produce. “It will be more about a casual dining experience than five-star a la carte,” Peter said.

Following up on my resolution to spend more time travelling locally, I recently spent a very pleasant few days following a food trail from Brisbane to the Scenic Rim … and back. The weekend started … as many others do … with Friday afternoon drinks. Our venue of choice was Pony Dining at Eagle Street Pier, where the lights of the Story Bridge, the Brisbane River and the city itself provided the perfect backdrop. The canapés were so amazing I can’t wait to go back for a meal. Then it was a short walk along the esplanade to the equally impressive Alchemy Restaurant + Bar where we indulged in a sumptuous five-course degustation menu. My favourite, naturally, was the dessert – Cherry Ripe marquise with coconut rice, cherry puree and Cassis ice cream – but it was all equally delicious. Brisbane is home to many such restaurants including Aria, Jellyfish, Stokehouse and Bacchus to name a few. This growing list is a sign that the city has really come of age from a culinary point of view. And if you are looking for something a little less formal, take the time to explore the various laneways and pedestrian malls that have popped up in the CBD. There is almost a Melbournesque atmosphere to the area and on a busy Friday night you could be forgiven for thinking you are in any cosmopolitan city around the world. The locals have embraced the changes … the bars are full, the cafés buzzing and everyone is dressed for success. My accommodation for the night was the newly refurbished Pullman hotel. This stylish inner city hotel is located adjacent to King George Square, and is just a short walk to many of the shopping and dining precincts. Saturday dawned as one of those perfect autumn mornings … a slight chill in the air but not a cloud in the sky. Our host for this part of the journey was Louise Brosnan from Cambanoora Co.

A local girl who spent many years in London before returning to her country heritage, Louise operates a selection of 4WD tours in the picturesque Scenic Rim district. Our first stop was the quaint country town of Killarney, just two and a half hours drive from Brisbane. “Killarney was always a very popular destination. In the 1880s people would visit ‘the Rose of the Darling Downs’ to take the water and breathe the cool mountain air,” explains Louise. “It seemed Killarney was an enchanted town. Each time there was an event which attracted many people, the mists drew around the mountains and its beauty was covered.” Now home to an eclectic combination of traditional country stores, contemporary art galleries and urbane coffee shops, Killarney has enjoyed something of a renaissance over the past few years. “Over the decades the realities of life in the bush, limited employment opportunities and the attractions of the city saw many families leave the district,” says Louise. “Now Killarney is beginning to unveil itself again, with tree changers and artists contributing to opening up what has always been an area the locals liked to keep to themselves. But even as we welcome more visitors we hope to keep the charm and hospitality of a small town – to make you feel like you have mates in the bush.” Leaving further exploration of Killarney for another day, we meandered through the countryside, stopping to take advantage of the many photo opportunities, before making our way up the ranges to the charming Spring Creek Mountain Café & Cottages. Operated by Bev Ruskey, one of the tree changers Louse mentioned, the mouth-watering food on offer at the café is equalled by the delightful panorama in front of you. Think decadent chocolate brownies, freshly baked scones and Bev’s special fruit and nut cake (absolutely delicious … but don’t ask for >>

the recipe as it’s a closely guarded secret!) served against a backdrop of lush mountainside and verdant valley views. Bev built the place ten years ago and now welcomes overnight guests as well as day-trippers like ourselves to enjoy her hospitality. Suitably fortified for the next part of our journey, we spent a pleasurable couple of hours exploring the bush tracks, chasing down waterfalls and discovering the true essence of this beautiful area. The next destination on our food odyssey was Melrose Station, where our hosts Peter and Colleen Lindores had set up an alfresco dining experience under the 100-year-old pecan trees. The lunch menu was designed by another local foodie, Jocelyn Hancock. Jocelyn is passionate about utilising fresh produce whose providence can be traced back to regional suppliers. Everything we ate – from the succulent rib eye on the bone to the creamy pink eye potatoes in the salad – was produced within a 15 kilometre radius of the farm … taking the concept of ‘paddock to plate’ to a whole new level. After lunch we travelled further inland to the luxurious Spicers Peak Lodge at Maryvale. As the name suggests, the lodge is built at the very top of the mountain and boasts glorious views, stylish appointments and a very welcoming ambience. Continuing the weekend’s theme of ‘delicious and decadent’ we were treated to another fabulous meal … this time a seven-course degustation menu in The Peak Restaurant featuring delights such as Pork Belly and Veal Tongue. The combination of fresh country air and fresh country produce, along with a glass or two of red, resulted in a restful night’s sleep. The following morning, after a freshly-cooked breakfast, we indulged in a relaxing massage treatment at Spa Anise before rejoining Louise for the final day of our food adventure. Our lunch venue was the Kooroomba Vineyards and Lavender Farm. Once again taking the alfresco option, we ate our meal surrounded by fields of lavender and rows of grape vines.

My choice of Rice wine and Darjeeling tea chicken salad with rocket, cherry tomatoes, crisp prosciutto and water chestnuts was as delicious as it sounds and was a fitting finale to my foodie weekend (or so I thought). Arriving back in Brisbane late on Sunday afternoon, there was one more treat in store with a visit to Albert & Constance, a hospitality complex featuring the White Lightning Tiki Bar, The Vanguard Beer Garden and Restaurant, Alfred’s Café, and the Late Night Dessert Café. Completing the circle, the menu here is also the brainchild of Jocelyn Hancock. The lady herself was on hand to share her culinary vision for sourcing quality local produce … an outlook that, judging by the hip, young crowd in attendance, seems to be attracting a whole new generation of food lovers to the establishment. Of course, this is only a ‘tasting plate’ of the delicious cuisine options that can be found in and around Brisbane. The Savoy Cookbook: somehow it landed in my lap during the eighties and I obsessed about it, flicking its pages endlessly, imagining life in the hotel’s rooms, poring over the photographs and cooking countless meals from its pages (and they were meals that took days of preparation; recipes inside recipes). It was a time before Google, but if things had been different I would have walked the Savoy halls in cyberspace. In 1989 I finally managed to get there; not for a stay in its guest-rooms or even for dinner, but for High Tea: it was quite an experience made somewhat hilarious by the bright orange jackets my mate and I were made to wear because we were underdressed for the occasion. Oops. I loved everything about it, the opulence of the hotel, the stunning art deco façade, the view of the gardens, the food, the tea and the service. If I were a little (or, truly, a lot) more flush I would have paid a visit to either the Savoy Grill or the Savoy (River) Restaurant, the two serious dining rooms in the place. Next time.

The Savoy’s tradition of fine dining, begun decades before my visit, is still kicking. The great August Escoffier ran its kitchens between 1890 and 1898 creating, somewhere in between, the Peach Melba and a bunch of other classics. Today Ryan Murphy is in charge, following Anton Edelmann’s 21 years at the helm. The Savoy may well be special, but it is by no means unique: hotel restaurants abound. I’m not talking about the leathery-egg, bad buffet, coffee-in-pot, bainemarie bacon stuff; I’m talking real restaurants that can bang with the best. A few kilometres to the west of the Savoy you’ll find the Mandarin Oriental overlooking Hyde Park. Its top restaurant – Dinner by Heston Blumenthal (that’s the name of the restaurant and, I guess, the experience) – has been called the best restaurant in the world. There you’ll find Blumenthal’s mix of culinary skills and chemical wizardry applied to historic British food: reinvented, magical. One example is ‘Meat Fruit’; it looks like a perfect, unblemished mandarin, but the ‘skin’ is made of mandarin jelly and inside … chicken liver mousse!
In France there is the Hotel Negresco and its restaurant Le Chantecler; Le Meurice (Paris) and Gerard Boyer’s ‘Les Crayeres’ in the intimate, beautiful Chateau Les Crayeres in Riems (I’ve dined there, but not stayed in its rooms: exquisite!). The MGM Grand in Las Vegas has both Joel Rubichon and Wolfgang Puck (American Bar and Grill) within its walls while New York’s Ace Hotel is home to the Breslin Bar and Grill. Asia is awash with them; Hong Kong’s Mandarin Oriental has half a dozen restaurants including the tiny (12 seats), yet stunning, Krug Room that serves freestyle degustations matched with the world’s most iconic champagnes. Also in Hong Kong the Four Seasons Hotel is home to four restaurants, two of which (Caprice and Lung King Heen) have been awarded three coveted stars in the Michelin Guide. As the 20th century came to its close Antony Scholtmeyer was changing the way Brisbane diners thought about food. As Head Chef at Jamesons he created a bunch of extraordinary dishes that fused classic French training with Japanese techniques and ingredients: I can recall an amazing dish of miso broth with scallops and foie gras that still rates among the best few things I’ve eaten ... Today you’ll find him at the Sukothai Hotel in Bangkok guiding a team of chefs and presiding over its four restaurants.

On a very different scale (and in a very different place) the Royal Mail Hotel in the tiny town of Dunkeld, Victoria has one of the best restaurants in our country. Its wine list has won numerous awards and its cuisine – based largely around produce from the surrounding Grampians – has helped net it Three Hats in The Age Good Food Guide. A couple of hundred kilometres away The Lake House Hotel has a Two Hat restaurant that also thrives on local produce. In fact Australia has come a long way with its pairing of serious accommodation and restaurants. It wasn’t that long ago when a buffet breakfast and a bowl of pasta were as much as you could expect at many of our hotels. And those few that did try to rise above the pack tended to do it in a big-hotel, stuffy kind of way peopled by folk well embedded in the hotel system. But take a look at the Hilton chain today: Glass Brasserie in Sydney, Salt Grill in Surfers Paradise and Vintaged Bar and Grill in Brisbane; all stunning, all chiseled and honed to meet their different markets. And then there’s Palazzo Versace. For a long time Vanitas and Vie were oases in an otherwise, in culinary terms, quite desolate town; Vanitas a cosseting, impeccable formal restaurant and Vie more relaxed but still as sharp as a tack. But the Gold Coast has grown up and now they are joined by a host of good restaurants. Fine dining is a waning genre. Fast paced bistros, labour costs, time constraints and an increasing freedom from formalities have all helped to widen the gap between serious dining and our eating habits. But there are still times when we seek something more, something special. It’s not a realm that is solely relegated to large hotels, but eventually, inevitably, they will be the final bastion; the cash flow of the rooms and bars helping to fund the luxury and glam of these very special dining rooms.

The Beenleigh Rum Distillery, Australia’s oldest registered distillery, has a heritage and a history steeped in tradition. The story can be traced way back to 1860 when a tough bush character began a legacy that would filter down through the decades. James ‘The Bosun’ Stewart was impulsive and creative, branching out from the respectable and lucrative milling trade to begin distilling a spirit on the side. the need for speed Lamborghini … a car without compromise. words Chris Nixon
Some time in the late 80s, one of those flash entrepreneurs that Western Australia grew like, er. weeds, arrived in town in a new, red Lamborghini Countach. I boldly asked if I could test-drive it for my newspaper. He said yes without hesitation and gave me the keys for a day. He appeared to be a rich man who could afford a Lamborghini, but not a Lamborghini enthusiast. The interior was littered with more junk than a family people-mover. And who would lend a car like that without wanting to meet me? If the owner didn’t appreciate the car, it was for me one of the best driving days of my motor-writing career. I took it to show friends, I pulled my little son out of Grade 4 for the day so he could share the experience and we high-tailed it for the wide, open spaces – in a Lamborghini! Heaven knows what that latest Countach was worth – far more than I owned; the tyres cost $1,600 each – but we were carefree as we roared back and forth across the countryside searching for quiet roads to give the Raging Bull its head.

It wasn’t the greatest car on the road then. The gearbox wouldn’t give its best until thoroughly warmed, the interior finish was ordinary and reversing was possible only with the assistance of a guide outside waving his arms. But the thrill of driving something so extreme was unforgettable. Today, Lamborghini remains the Satan of Supercars. There’s nothing subtle about cars named Egoista, Aventador, Sesto Elemento or Reventon, especially when they really do look like stealth fighters. Traditionally, Lamborghini has been a Ferrari rival, the only alternative if you must have an Italian supercar. But their supercar race seems to have taken different tracks in recent times, with Ferrari widening its appeal (though not dropping its performance standards) and Lamborghini veering further and further beyond convention. It’s almost incongruous that Lamborghini these days is owned by the Volkswagen group. VW also owns Porsche and builds sportscars under its Audi and Bentley brands; they’re all as conservative as Lamborghini is outrageous.
Outrageous? Example one, Your Honour, the Egoista. Developed to mark Lambo’s 50th birthday this year, the Egoista as its name suggests is built to be enjoyed by just one occupant. “This is a car made for one person only, to allow them to have fun and express their personality to the maximum,” designer Walter Da Silva explains. “It is designed purely for hyper-sophisticated people who want only the most extreme and special things in the world. It represents hedonism taken to the extreme, it is a car without compromises, in a word: egoista (selfish).” Powered by a 5.2 litre V10 engine supplying 600 horsepower, the Lamborghini Egoista is described as intentionally extreme and unusual. The cockpit is a removable section which, once combined with the rest of the vehicle, creates a technical, mechanical and aerodynamic unit. In recent Lamborghini tradition, inspiration comes from the world of aviation, and, says the maker, in particular the Apache helicopter, in which the cockpit can be ejected in an emergency.
“The cockpit, made completely of carbon fibre and aluminum, represents a sort of survival cell, allowing the driver to isolate and protect themselves from external elements,” Da Silva adds. “We kept an eye on the future when designing the Egoista, with the idea that its cockpit could have been taken from a jet aircraft and integrated into a road vehicle, to provide a different travel option.” The focal point of the cockpit is a head-up information display. The Egoista is the latest in a line of increasingly wild special Lamborghini models and was preceded by the Sesto Elementa (Sixth Element) and fighter-like Reventon. But the company’s main output is the 12-cylinder Aventador and V10 Gallardo. The brilliant little Gallardo is ten years old and will be replaced in 2014, but the Aventador is just hitting its straps. More than 2000 Aventadors have left the Sant’ Agata factory since its launch in 2011. In Australia, we can buy a Gallardo for ‘just’ $409,500, though one imagines the run-out deals will be coming soon. The striking Aventador LP700-4 costs $761,500 with a roof and $795,000 without. It’s easily Australia’s most expensive sports car.
Yet much of Lamborghini’s future in its second half-century may ride with the universal trend to Sport Utility Vehicles. The concept of an SUV with a sports car badge was unthinkable until Porsche introduced the Cayenne, which quickly became its most successful model. Lamborghini recently confirmed it will build the Urus, the concept it showed last year at Beijing Motor Show. There’s little hard information but plenty of speculation about the Urus, which may come with a 600 horsepower V8, twin electric motors, allwheel drive and high-riding suspension. To quote an overseas report that sums up the wild world of Lamborghini: “Lunacy (now) comes on stilts”.

community service The SUNS and Titans are revolutionising the way sporting teams deliver community programs to the gold coast. words Justin Fris
The Gold Coast is known for its beaches, sunshine and bright lights. Sadly for locals, the region has become something of a national sporting graveyard over the past 25 years. Across all mainstream sports, teams such as the Seagulls and Chargers (NRL), Blaze and Rollers (NBL) and Gold Coast United (A-league) have faded in and out. These defunct ventures all have something in common. Along with poor on-field success, they failed to engage the community and provide a solid presence for the Gold Coast youth. Fast forward to 2013, and the landscape has changed dramatically. The community deeds of both the Gold Coast Football Club, better known as the SUNS, and the Gold Coast Titans have clearly won over the region. Awarded with an AFL license in 2007, the Gold Coast SUNS have revolutionised how AFL clubs conduct community programs with officials making a conscientious decision to focus on developing youth in the club’s embryonic years. Under the tutorlage of coach Guy ‘Bluey’ McKenna and captain Gary Ablett Jnr, the players have learned about positive decision making through action and choice both on and off the field. In 2012, club officials and players clocked up over 5,000 hours of community service to the Gold Coast region, with particular emphasis on homelessness and social inclusion among young people. Corey Bell heads the Community Operations

team at the SUNS. The former Brisbane Bears rover ensures that players are comfortable interacting with the community, along with generating a positive message. Corey believes the attitudes of the playing squad is a major factor in the success of the programs. “In 2013, the club is set to achieve 5,000 hours of service for the second successive year, with players like Jarrad Harbrow really embracing community program concepts,” Corey explains. Harbrow was nominated for the Jim Stynes Medal in 2012, which is awarded by the AFL to a player who goes beyond the cause of helping others off the field. In a non-traditional Australian Rules state, the SUNS are steadily winning over the local population with their fresh and honest approach in helping others. “Our programs focus around youth homelessness, domestic violence and also targeted charities in the northern part of the Gold Coast,” Corey says. “These initiatives are all part of the Gold Coast SUNS’ ‘Horizons’ program.” The SUNS also have a solid core of indigenous footballers within the team. Not only talented on the field, they are tremendous ambassadors for local indigenous children off it. “This season some of our indigenous players (including Harbrow) travelled up to Cape York as part of the club’s ‘No Boundaries’ program and spent time with local NAIDOC elders discussing social inclusion and the importance of education in local communities.”
Corey also reveals that the SUNS have an exciting event planned for the end of the year, with the club’s ‘White Christmas’ function at Movie World providing some festive cheer for those who may be finding life tough. “Invitations are received through chosen charities and this event provides a wonderful opportunity for families to spend time with their local heroes,” Corey says. “They can enjoy the night and maybe even go on an amusement ride with their favourite player.” Some other SUNS’ initiatives include Gold Coast SUNS Face Your Fears Day, where 30 young people experiencing homelessness were taken to Sea World to swim with sharks, Gold Coast SUNS SHINE Schools Program which highlights the importance of Healthy Eating & Active Lifestyle and the Gold Coast SUNS Homeless Sleep Out, where over 250 Gold Coasters attended the first ever Homeless Sleep Out at Metricon Stadium. Further down the M1 at Skilled Park, the Gold Coast Titans are also winning the hearts of local families by putting the community and their supporters first, irrespective of ladder position. Former Titans fullback Preston Campbell led the push for the club to have a greater connection in the community. As one of the most dynamic indigenous league leaders of his era, Preston set the bar for others within the organisation to follow. The Titans have based their main community program ‘Titans 4 Tomorrow’ (T4T) around a solid presence in local schools.

young at heart Bryan Matthews has edged past his mid-life crisis.
I like to think I’m a young 56. Mentally, for sure, I operate at a level belying my years. For example, when I’m in meetings I do exactly what I used to do when I was at school i.e. pretend to be listening to what’s going on when I’m actually looking at the window wishing I was playing outside. My fellow grown-ups in the room always seem much more focused on the important stuff at hand. At business functions, the only people I ‘network’ with are the barman and the girl carrying the canapés. And yet, in spite of being a child at heart, I’ve already had my mid-life crisis. It came when I was 50. I wanted a jet-ski. I never got one and I’m over it now. Plus, now that I’ve crunched the numbers, I’ve reached the unavoidable conclusion that I can no longer be statistically considered middle-aged. For that to be the case, I’d have to live to 112. I guess if I moved to a remote Japanese island I could theoretically try to merge into a centenarian demographic. Eventually I’d get found out because – even if I committed from now on to only eating oily fish and seaweed – I don’t believe the retroactive impact would be strong enough to mitigate my dietary past. I’ve scrutinised my pie chart and my bar graph and concluded that I’ve already eaten or visited too many of both. In any case, now that new research has revealed that all that healthy omega-3 actually might contribute to the development of certain cancers, I suspect that a lot of wizened old Japanese blokes will finally be able to make the sensible switch to Big Macs with fries. Another piece of recent research indicates that people get no grumpier after the age of 30 than they were earlier in life. I don’t know who funds this rubbish but even if it annoys the hell out of me, it’s nice to know that it’s now scientifically proven that I haven’t become a grumpy old git. Because clearly, I started out as a grumpy young git. In spite of my overwhelmingly puerile approach to life, I got a bit maudlin about the ageing process recently when, for the very first time, I had an attack of gout which as far as I’m concerned is an old person’s ailment.

By all accounts, it was an unusual flare-up because it only affected one finger of my left-hand. Had I been going to the SuperBowl it would have saved me buying one of those big foam hands Americans like to wave around as they chant ‘We’re Number One’. As it happened, a swollen extended middledigit still came in handy in Queensland as it was permanently at attention to jab in the direction of the speeding, tail-gaiting idiots who – together with the gougers who believe us country folk should pay far more for our rego than posh Sydneysiders – make driving in this state such a joyous experience. [I’m sure those ‘smart’ state plates are a cruel joke about the eye-watering costs of owning a car in QLD.] I try to dress reasonably trendy without looking desperate. I read some fashion guru recently who said that skinny jeans are a no-no for any man over 30. This is a pity because I’m convinced I’ve got an amazing arse. See, I can even talk out of it. I have wisely dropped wearing snug or clingy sweaters; they’re not flattering to my upper torso. If I was an adolescent girl I might be quite proud of what’s developing there. But I’m not so I’m not. I should take solace from the ‘Benjamin Button’ thinking which seems to be bandied around these days. 50 is the new 40; 40 is the new 30 etc, etc. In theory this means that based on diet, medication, fashion sense and general approach to life I’m sort of younger than people the same age were a couple of generations ago. Though taking this clawing back of decades to its logical conclusion would suggest that in a couple of years when our daughter hits ten she’ll actually be back to zero and will revert to newborn crying and crapping all day. Anyway, I’m reasonably easy to please. For now I’ll take small steps. How about 56 as the new 55? There that feels a bit better; now if only I could also drop a cup-size. So though clearly all of the above suggests I’m not old-fashioned, I can’t say I was disappointed with the somewhat predictable choice of name for the latest royal baby. This inevitably will have an impact on the number of Georges in Australia even if clearly this country has gone its own way in naming its offspring in
recent years. In the UK it’s all terribly retro with the boys still predominantly answering to the names their granddads might have had (George, Harry, Jack, Charlie, Alfie, Thomas, James, etc) and the girls primed for posh tea-parties (Charlotte, Lily, Grace, Emily, etc). The stats vary by state but much of Australia seems to have adopted a more ‘Indy/pop culture’ approach for its boys with Ethan, Noah, Lucas, and Cooper rising in popularity. In our daughter’s class there’s an Axel, a Kai and a Rye (I suspect these will be quite cool differentiators when they reach nightclubbing age). Until the future King George VII came along it was left to young Jacks and Williams to stick up for Anglo traditions here. Among Aussie girls, cultured Melbourne and conservative Canberra still favour Charlottes and Isabellas. Here on the Gold Coast we dare to be a little different. Our little girl – herself quite unusually monickered with Murphy recalling her Irish heritage – has classmates including a quite funky-sounding Indiana and an Ekaterina (the latter destined to be a social media star) plus an assortment of names clearly spelled to confuse. There’s an Emmily with two Ms – in addition to the standard single-M version – and a Taylah which I’d assumed till I saw it in writing was Taylor (but which actually is phonetically spot-on for bellowing in trying circumstances). So far I’ve not come across a Paris at the school. It’s actually quite a nice name and I feel for the parents who chose it in homage to a romantic and beautiful city only to find it hijacked by headlines about a permanently partying heiress falling out of nightclubs. I’m not quite so sympathetic towards the mother of the ‘Chardonnay’ I once heard being hollered at in Target. This possibly reprised the choice of beverage that led to mum getting pregnant in the first place. Perhaps the twins – Bundy & Coke – were waiting in the car. Somehow, I can’t see little Prince George choosing a cheeky Chardy for his future bride.
